Peach & Strawberry Bruschetta This easy appetizer or snack takes advantage of summer’s most luscious fruits. Serve with a glass of sparkling lemonade, limeade or prosecco.

Ingredients • • • • • • • • • •

2 fresh peaches 1/2 pint fresh strawberries 1 tablespoon honey 1/2 teaspoon sea salt 1/4 cup chopped fresh chives 1 teaspoon chopped fresh thyme 1 teaspoon sherry or red wine vinegar 2 tablespoons olive oil, divided 6 ounces chevre (goat cheese), mascarpone or cream cheese 1 baguette, sliced

Preheat oven to 375ºF Peel the peaches: bring a pot of water to boil, cut small “x”s into pointed ends, submerge in boiling water for 30 seconds. Remove from water with strainer or tongs, and drop into a bowl of ice water. The skin will slip off, or at least be fairly easy to peel. Halve, pit and dice the peaches. Stem and dice the strawberries. Stir in honey, sea salt, chives, thyme, vinegar & 1 Tbs of olive oil; set aside. Brush baguette slices with olive oil. Place in single layer on baking sheet to toast for 15-20 minutes, turning once halfway through. Spread warm baguette slices with cheese of choice and top with fruit mixture. Education, Training & Information (continued from page 1) through our partnerships in the community. We partner with local chefs, nutritionists, naturopaths, fitness instructors, health coaches and other wellness practitioners to offer classes and events in our Community Room. We host store tours and scavenger hunts for local K-12 students. We visit local daycare centers, schools and community events to teach children and families about nutrition and sustainability. And finally, a third important way we put Education, Training and Information into action is through extensive staff training. Product education is important for any retail business to sell their products, but at Basics we make it a priority for staff to have a deeper understanding of nutrition, natural foods, organic standards, alternative and natural medicines, and sustainable and ethical production practices. We do this not just to sell products, but because our staff are the gateway to sharing this information with the community! In order to affect positive change through cooperation, the very first step is education.

Hemp History Week

Grassroots organizers, farmers, producers, and advocates from all walks of life 1-5pm Saturday, June 3 use Hemp History Week to educate and Free and open to the public!
