Submitted by: Patricia McClaren, Co-op Owner #1677 Ingredients: 3 tbsp coconut oil 1 lb. cubed, boneless beef chuck 2 c. thinly sliced onions 1 tbsp flour 1 tbsp paprika 16 oz. tomato puree ½ c. water
1 tsp salt 1 tsp sugar 1/8 tsp pepper 1 bay leaf 8 oz cooked and drained noodles 2 tbsp margarine
Instructions: Heat coconut oil in a deep saucepan. Add beef cubes and onions, sprinkle with flour and cook until lightly browned. Stir in paprika and cook for 3 minutes. Add tomato puree, water, salt, sugar, pepper and bay leaf. Cover and simmer about 1 hour or until meat is tender. Toss hot, cooked noodles with margarine and serve with meat and sauce.
Whole Wheat Banana Bread Muffins Submitted by: Linda Sime, Co-op Owner #229 Ingredients: ½ c. canola oil ½ c. honey 1 tsp pure vanilla 2 beaten eggs 3 medium ripe bananas
1 ½ c. whole wheat flour ½ c. wheat germ ½ tsp sea salt 1 tsp cinnamon ½ c. chopped walnuts
Instructions: Cream canola oil, honey and vanilla until smooth. Mash in eggs, bananas, whole wheat flour, wheat germ, sea salt, cinnamon and walnuts. Stir until well mixed. Bake in either a greased and floured loaf pan for 50-60 minutes at 350 or lined muffin tins for 20 minutes.

Your grandma was onto something when she talked about the health benefits of her home-made chicken soup! Today, the health benefits of home-made stock are well-known, yet many people are still substituting bouillon or canned broth. This class will show you how easy it can be to make your own stock and use it to naturally enhance the flavor and nutrition in your everyday cooking. You will get recipes, cooking techniques and storage tips. We will also discuss the health benefits and best ways to incorporate this kitchen staple into your routine.
