Spanish Meatballs MEAT BALLS • 2.2 lb (1 kg) lean ground beef • 2 chopped yellow onions • 1 egg, lightly beaten • 3 tablespoons (22.5 g) ground walnuts • 1 tablespoon (15 ml) paprika • 1 1/2 tablespoons (22.5 ml) cummin • 1/2 teaspoon (2.5 ml) cinnamon • 1/4 cup (60 ml) fresh chopped parsley • Salt and pepper, to taste

in wine, stirring until alcohol evaporates. Add tomatoes and seasonings. Cover and reduce heat to medium-low. Simmer for 20 minutes. Add a bit of water if needed. Add meatballs to sauce and simmer at low heat for about 30 minutes. Stir occasionally. Once cooked, place meatballs and a bit of sauce in paper muffin liners in a serving dish. Keep covered with aluminum foil until ready to serve.

SAUCE • 3 tablespoons (45 ml) olive oil • 1 1/2 tablespoons (22.5 ml) fennel seeds • 1/2 cup (120 ml) dry white wine • 1 28 oz. (900 ml) can of diced tomatoes • Salt and pepper, to taste DIRECTIONS In a large bowl, mix all ingredients with ground beef. Make one-inch (2.5 cm) meatballs and set aside. Heat oil in a frying pan. Grill fennel seed while stirring constantly. Pour

1/4 pound (113 g) thick-sliced bacon 3 pounds (1.3 kg) boneless beef chuck, cubed 1/3 cup (170 ml) all-purpose flour 2 tablespoons (34 ml) vegetable oil 4 1/2 tablespoons (157 g) unsalted butter 1/2 cup (42.5 ml) brandy 1 (4-inch/10 cm) piece of celery 4 fresh parsley stems (no leaves) 4 fresh thyme sprigs 2 bay leaves (not California bay) 2 cloves 2 onions, finely chopped 3 large garlic cloves, finely chopped 2 carrots, cut into 1/4-inch-thick (.6 cm) slices

Accompaniment: peeled boiled potatoes tossed with butter and parsley. Special equipment: kitchen string. DIRECTIONS: 1. Cook bacon in boiling salted water 3 minutes, then drain. 2. Pat beef dry and season with salt and pepper. Divide flour and beef between 2 large sealable plastic bags, seal, then shake to coat meat. 3. Heat 1 tablespoon (17 ml) of oil and 1 1/2 tablespoons (52.5 g) butter in a wide 6- to 8-quart (7-9 litre) heavy pot over moderately high heat until hot but not smoking. Brown beef well on all sides in 2 or 3 batches, without crowding, adding remaining oil as needed. Transfer to a bowl. 4. Pour off any excess oil from pot, and then add brandy to pot. Deglaze by boiling over high heat 1 minute, stirring and scraping up brown bits, then pour over beef.

5. Tie celery, parsley, thyme, bay leaves, and cloves together with kitchen string to make a bouquet. (Tuck cloves into celery so they don’t fall out). 6. Heat 1 tablespoon (35 g) butter in cleaned pot over moderately high heat until foam subsides, then sauté bacon, stirring, 2 minutes. Add chopped onions, garlic, and carrots, then sauté, stirring, until onions are pale golden, about 5 minutes. Add tomato paste and cook, stirring, 1 minute. Add wine, meat with juices, and herb bouquet and simmer gently, partially covered, until meat is tender, 3 1/2 to 4 hours. 7. Whxile meat simmers, blanch boiling onions in boiling salted water 1 minute and drain in a colander. Rinse under cold running water, then peel. 8. Heat 1 tablespoon (35 g) butter in a large, heavy saucepan over moderately high heat until foam subsides, then sauté boiling onions, stirring occasionally, until browned in patches. Season with salt and pepper. Add 2 cups (340 ml) water (1 1/2 cups/255 ml if using pearl onions), then simmer, partially covered, until onions are tender, 15 to 20 minutes. Boil, uncovered, stirring occasionally, until liquid is reduced to a glaze, 5 to 10 minutes. 9. Heat remaining butter in a large non-stick skillet over moderately high heat until foam subsides, and then

sauté mushrooms, stirring, until golden brown and any liquid mushrooms give off is evaporated, about 8 minutes. Season with salt and pepper. 10. Stir onions and mushrooms into stew and cook 10 minutes. Remove herb bouquet and skim any fat from surface of stew. Season with salt and pepper.

Traditional Roast Turkey A 13-15 lb. (6-7 kg) turkey serves 6 • 1 turkey, with giblets • 1 onion, coarsely chopped • A sprig of thyme • 1 bay leaf • 4 oz. (113 g) salted butter • Sea salt and freshly ground black pepper Lemon and Herb stuffing • 2 eggs • 4 oz. plus 1 tablespoon (130 g) butter, melted • A handful of fresh parsley leaves • 1 teaspoon (5 ml) chopped fresh lemon thyme

Chestnut stuffing • 14 oz. (392 g) fresh chestnuts • 1 cup (240 ml) milk • 4 oz. (112 g) sausages or sausage meat • 2 tablespoons (30 ml) olive oil • 6 oz. (168 g) turkey liver, chopped • 1 onion, chopped • 2 oz. (56 g) fatty bacon, finely chopped • 1 tablespoon (30 ml) chopped fresh flat-leaf parsley or marjoram • Sea salt and freshly ground black pepper Lemon and herb stuffing: put the eggs, butter, parsley, lemon thyme, and lemon zest and juice in a food processor and blend to a smooth purée. Put the bread crumbs in a bowl, pour over the egg mixture, and mix well. Season to taste with salt and pepper. Chestnut stuffing: cook fresh chestnuts in a saucepan of boiling water for about 3 minutes to soften the shells.

Peel them while still hot, wearing rubber gloves. Put the peeled fresh chestnuts in a saucepan, cover them with the milk, and simmer gently until softened, about 30 minutes to 1 hour, depending on how fresh they are. Strain them if necessary, then weigh out 7 oz. (196 g) and put in a bowl. Crumble the cooked chestnuts with your fingers and use the sausage meat to bind them. Heat the oil in a skillet, add onion, liver, and bacon and fry gently until the liver is firm. Stir in the parsley and cook until the mixture begins to brown. Add to the chestnuts with some salt and pepper. Turkey: to make a stock, the day before put the giblets, minus the liver but with the neck chopped in half, in saucepan. Add the onion, thyme, and bay leaf, cover with water and bring to a boil, removing any foam. Reduce the heat and simmer for 2 hours, then strain. Taste and, if necessary, simmer for a little longer to reduce and strengthen the flavour. The next day, wipe out the neck area and cavity of the turkey with a damp cloth and lightly season the inside with salt and pepper. Spoon the lemon and herb stuffing into the body cavity and the chestnut stuffing into the neck cavity, allowing plenty of room for them to expand.

This is particularly important for the neck stuffing. Put half the butter in a saucepan and melt gently. Spread the remaining butter all over the skin of the turkey. Soak the cheesecloth in the melted butter and drape over the bird, with a double layer covering the drumsticks. Preheat the oven to 350°F (180°C). Put the bird in a large roasting pan in the middle of the oven. Roast for the calculated time according to size, except that the oven temperature must be raised to 400°F (200°C) and the cheesecloth covering removed for the last 30 minutes in order to crisp the skin. Remove the turkey from the oven, cover with a tent of aluminum foil, and leave in a warm place to rest while you prepare your side dishes. Using oven mitts, tip out any free juices from the cavity, then lift the turkey onto a serving platter. Pour off the turkey juices from the pan, preferably into a gravy separator or pitcher to be able to lift off the fat, then reheat with the seasoned stock. Serve as is or for a traditional gravy, pour juices into a pan, thicken with a small amount of flour and cook well, stirring to prevent burning. Reserve extra gravy in a Thermos for second helpings. Serve with roasted potatoes, roasted parsnips, candied yams, bacon rolls, cranberry relish, and Brussels sprouts.

Melt the white chocolate almond bark according to the directions on the package. Dip the top of a nutter butter cookie into the melted almond bark. Dip the cookie into red sugar sprinkles. Place a mini marshmallow onto the top of the cookie. Place the cookie onto a sheet of waxed paper to set. 2. Melt the white chocolate almond bark according to the directions on the package. They never let poor Rudolph join in any reindeer games. Gingerbread Teddy Bears INGREDIENTS • 1 cup butter, cubed • 2/3 cup packed brown sugar • 2/3 cup molasses • 1 large egg, room temperature, lightly beaten • 1-1/2 teaspoons vanilla extract 4 cups all-purpose flour • 1-1/2 teaspoons ground cinnamon • 1 teaspoon ground ginger • 3/4 teaspoon baking soda • 1/2 teaspoon ground cloves • Miniature chocolate chips • Decorating icing and sprinkles DIRECTIONS In a small saucepan, combine butter, brown sugar and molasses. Cook over medium heat until sugar is dissolved. Pour into a large bowl; let stand 10 minutes. Stir in egg and vanilla. Combine flour, cinnamon, ginger, baking soda and cloves; gradually add to butter mixture and mix well. Cover and refrigerate 2 hours or overnight. Preheat oven to 350°. Shape dough into ten 2-in. balls, ten 1-in. balls, forty 1/2-in. balls and twenty 3/8-in.balls. Place the 2-in. balls on 3 foil-lined baking sheets for the

body of 8 bears; flatten to 1/2-in. thickness. Position 1-in. balls for heads; flatten to 1/2-in. thickness. Attach four 1/2in. balls to each bear for arms and legs. Attach two 3/8-in. balls for ears. Add chocolate chips for eyes and buttons. Bake 10-12 minutes or until set. Cool 10 minutes before carefully removing to wire racks to cool completely. With frosting, pipe ears, muzzle and paws; add sprinkles for fingers, toes and nose.

Chocolate Reindeer Cookies INGREDIENTS • 2-3/4 cups all-purpose flour • 1-1/4 teaspoons baking soda • 1/2 teaspoon salt • 3/4 cup butter, cubed • 1-1/2 cups packed brown sugar • 2 tablespoons water • 2 cups semisweet chocolate chips • 2 large eggs • 1/2 teaspoon almond extract • 1 can (16 ounces) chocolate frosting DECORATIONS: • Candy eyes • Reese’s mini white peanut butter cups • Miniature pretzels • Peanut butter M&M’s DIRECTIONS Whisk together flour, baking soda and salt. Place butter, brown sugar and water in a large saucepan; cook and stir over low heat until butter is melted. Remove from heat; stir in chocolate chips until smooth. Stir in eggs and extract. Stir in flour mixture. Let stand until firm enough to shape, about 15 minutes. To freeze dough, shape level tablespoonfuls of dough into balls; flatten each to 1/4-in. thickness. Place in a covered container, separating layers with waxed paper; freeze until

firm. (May be frozen up to 3 months.) To bake, preheat oven to 350°. Place frozen dough portions 2 in. apart on greased baking sheets. Bake until set, 12-14 minutes. Remove from pans to wire racks; cool completely. Spread cookies with frosting, reserving a small amount for mouths. Decorate faces with candy eyes; add peanut butter cups for snouts, pretzels for antlers and M&M’s for noses. Pipe mouths with reserved frosting.

Holly Berry Cookies INGREDIENTS • 2 cups all-purpose flour • 1 cup sugar • 1 teaspoon ground cinnamon • 3/4 teaspoon baking powder • 1/4 teaspoon salt • 1/2 cup cold butter, cubed • 1 large egg, room temperature • 1/4 cup 2% milk • 2/3 cup seedless raspberry jam GLAZE: • 2 cups confectioners’ sugar • 2 tablespoons 2% milk • 1/2 teaspoon vanilla extract • Red Hots • Green food coloring DIRECTIONS In a large bowl, combine the first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. In a small bowl, beat egg and milk. Add to crumb mixture just until moistened. Cover and refrigerate for 1 hour or until dough is easy to handle. On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a 2-in. round cookie cutter. Place on

Ugly Sweater Cookies INGREDIENTS • 3/4 cup butter, softened • 1 cup packed brown sugar • 1 large egg • 3/4 cup molasses • 4 cups all-purpose flour • 1-1/2 teaspoons baking soda • 1/4 teaspoon salt • 2 teaspoons ground ginger • 1-1/2 teaspoons ground cinnamon • 3/4 teaspoon ground cloves ROYAL ICING: • 4-1/2 cups confectioners’ sugar • 1/3 cup water • 4 teaspoons meringue powder • 1/4 teaspoon cream of tartar • 1/8 teaspoon salt • 1 to 3 tablespoons heavy whipping cream • Food coloring and assorted sprinkles, optional DIRECTIONS Cream butter and brown sugar until light and fluffy. Beat in egg and molasses. In another bowl, whisk together flour, baking soda, salt and spices; gradually beat into creamed mixture. Divide dough in half; shape each into a disk. Wrap in plastic; refrigerate, covered, until firm enough to roll, 4 hours or overnight. Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with floured 3-1/2-in. sweater-shaped cookie cutters. Place 2 in. apart

on ungreased baking sheets. Bake cookies until edges are firm, 8-10 minutes. Remove to wire racks; cool completely. Place first five icing ingredients in a small bowl; beat on low speed just until blended. Beat on high until stiff peaks form, 4-5 minutes. Thin with cream to desired consistency. If desired, tint with food coloring. Pipe onto cookies and decorate as desired. (Keep unused icing covered at all times with a damp cloth. If necessary, beat again on high speed to restore texture.) Let cookies stand at room temperature several hours or until frosting is dry and firm.

CROWN ROAST OF PORK Serves: 12-16 // Prep Time: 5 minutes // Cook Time: 2.5 hours (allow 15 minutes per pound for total cook time 1/2 Tbsp each dried thyme, oregano, rosemary, parsley 2 tsp kosher salt 2 tsp freshly cracked black pepper 1 12-rib pork loin rib crown roast (about 10lb.) 1. Preheat the oven to 350 F. Generously season roast with herbs, salt & pepper. 2. Put the pork (rib up) on rack in a roasting pan. Cover with foil and roast until the internal temperature is 54 C (130 F). 3. Remove foil nd turn oven temperature up to 400 F. Cook 12-15 minutes until the roast is brown and the internal temperature reaches 71 C (160 F). Use a digital thermometer for best results. 4. Remove from oven; tent with foil. Allow to rest 20 minutes before carving between the rib bones.
