Dear Readers, going out with friends and family to enjoy excellent food is one of today’s luxuries. Leaving your daily chores behind and being served, feels like taking a short vacation. The Oberpfalz region and the delicacies it has to offer are perfect for that. Whether it is a picturesque restaurant in the beautiful, hilly landscape, the traditional restaurant in historic downtown, a beer garden, also known as “the Bavarian’s heaven,” or an international restaurant with exotic delicacies - there is something for everyone. And thanks to decades of contact, local

restaurants are well-prepared for their American guests. English is spoken practically everywhere and bi-lingual menus are often offered. If you have already found your favorite restaurant, you know what we are talking about. For those, who would like to discover something new, like change, or would like to combine a day trip with enjoying good food, we are introducing some special restaurant in the Oberpfalz (and in the city of Bayreuth) in this restaurant guide. To make it easier for you to find what you are looking for, we have organized our tips by county and cities. The map on pages 4 and 5 provides a quick overview. And as a small appetizer, and for you to try out, we also present four typical dishes of the region. Enjoy reading and spend some relaxing hours in the restaurant of your choice!

6 Kupferpfandl For 30 years, the „Kupferpfandl“ restaurant at Herrnstraße has been THE steak restaurant in Amberg. Aside from steaks, burgers, dry-aged beef, fresh fish and gambas the menu also features classic French onion soup or escargots with gorgonzola. Zum Südlager Burger Bar The new burger bar located at „Zum Südlager“ restaurant at the entrance of Sorghof has become very popular recently. Apart from the welcoming dining area, it offers a nice beer garden with 50 seats and a large parking area. Heidi Quesenberry, which also runs the „Steakhouse“ in Sorghof, impresses customers with the quality of her food. „Each of the sauces for the 15 burgers is freshly made every single time,“ she says and her guests appreciate that. Preparation: Crush the camembert with a fork and then mix in butter, cream chees and onions. Spice to your taste and mix in the beer. Sprinkle chives on top. Enjoy with German bread, Bavarian Brez’n and radish and, of course, with a fresh pale Lager.

Beer suggestion with this dish: Pale Lager beer Generally speaking, the beer used for this recipe is also the ideal beverage to drink with this dish. Pale Lager beer is used to prepare the “Obazdn” to give this beer garden classic a smoother consistency and a mild and spicy taste. The beer drunk with it, should bring out and complement this nuttily spicy, yet mild and creamy taste of the cheese. A stronger beer would cover up the taste of the cheese and a milder beer would not be able to hold its own against the flavor of the cheese.

10 Allgäu-style cheese spaetzle with roasted onions Although spaetzle originate from Swabia, the people of the Allgäu region have refined the simple original recipe to turn spaetzle into the delicious cheese spaetzle. Originally, Swabian spaetzle were a meal eaten by poor people.

Preparation:

Ingredients:

1. Prepare the spaetzle dough from flour, eggs, carbonated water and a dash of salt. Sift the flour into a wide bowl and form a well into the flour. Put the beaten eggs, carbonated water and salt inside. Use the hand mixer (dough hooks) or a wooden spoon to mix it into a smooth, thick dough. Let the dough sit for ten minutes.

• 500 grams flour

2. Bring a large pot of saltwater to the boil.

• 2 tablespoons butter

3. Heat the oven to 75 degrees centigrade (167 degrees Fahrenheit) and put in a large bowl to warm it up.

• 300 grams grated Emmentaler cheese

4. Melt butter in a pan.

• Salt and pepper

• 6 eggs • 200 ml carbonated water • 1 dash of salt • 2 onions

5. Cut the onions into thin rings and roast them in the butter until golden brown. 6. When the salt water is cooking, put about one quarter of the dough through a spaetzle squeezer or shaver into the water. 7. The spaetzle are done when they float to the top. Take them out of the water with a skimmer. 8. Put the spaetzle in the pre-heated bowl, put a quarter of the grated cheese on top of it and put it back into the oven. 9. Repeat the process with the remaining quarters of the spaetzle dough. 10. When all the dough has been used and all the cheese has been put on the spaetzle and melted, take the bowl out of the oven. 11. Distribute the roasted onions decoratively on top of the spaetzle and enjoy the food!

You can also use a pan instead of the oven. Put a little bit of butter in the pan and roast the spaetzle in it. Put the cheese on top of them and mix it with the spaetzle. The Allgäu-style Cheese spaetzle are done once the cheese has melted. Decorate them with the roasted onions and serve them.

The Chinese-Mongolian restaurant “Asia World” opened this past spring and pampers guests with hundreds of Asian specialties. It’s a treat to be able to choose from dozens of different soups and appetizers. When selecting a main dish or special guests also have the agony of choice. All you can eat buffets are offered for lunch and dinner. At lunch, guests can choose from 100 dishes, in the evening from 200 dishes. Live-cooking is a treat for the eyes: Mongolian specialties (with seafood and sushi) are prepared in front of the guests.

Country inn Kahrmühle Family Eichmüller

After all, it´s been a long time in the making. 1420 was the first year Kahrmühle is mentioned in the Weihersberg Castle record books. It was originally built as an ironworks. After that era ended, the water power was used for polishing glass and milling corn. Since 1970, the mill has also been used as a hotel (or “pension). The restaurant opened in 2001. The facility features a guest area that accommodates up to 45 people, a pub that can seat 22, a candle room for 22 people and a farmer’s locale for eight people. Specialties include fish entrees, snacks and homemade cakes. The hotel consists of eight double rooms and one single, all of which are equipped with a shower, bathroom and television. Some of the rooms also feature a balcony. They are all decorated with nostalgia in mind. When the weather’s nice, you can also enjoy the beer garden. The facility is open Monday and Friday beginning at 5 p.m. and Saturdays and Sundays at 10 a.m. It will also open on “rest days” with an advance notice and a commitment of 15 people. If you are interested in fishing, you can obtain water rights for local streams and lakes. Kahrmühle is the perfect destination for busses, bikers, motorcycle riders, roller-bladers, family trips and family vacations. A swimming are with a sand beach (perfect for small children, too) is located nearby. Just 300 meters away, “Keasi Beach” also features a shower. Plus, admission is FREE! For your christmas dinner or new years eve celebrations: We still have tables available. Please make reservations early in advance.

Preparation: 1. Pre-heat the oven to 200 °C (convection oven 180 °C, gas step 3–4) 2. Mix flour, salt, lemon peel and rum; gradually add milk and egg yolks. Whisk the egg whites stiff and slowly add them to the dough. 3. Heat about 10 grams of clarified butter in an oven-save pan, pour in half of the dough and bake it in the hot oven until the dough is dry on top. Turn the pancake and add another 10 grams of clarified butter and bake the other side until golden brown. 4. Wash, peel and quarter the apples. Cut them into approx. 5 mm thick slices. Melt the butter in a nonstick frying pan, add the apples and the sugar and fry until golden yellow. Add the walnuts and caramelize it at medium heat. 5. Tear the pancake apart with two forks and add 20 grams of clarified butter. Cover with powdered sugar and allow it to lightly caramelize. Keep warm in the pan until served. 6. Prepare a second pancake the same way. Distribute everything on plates and put the apple-walnut mixture on top of it. Decorate with powdered sugar and serve immediately.

14 Arberhütte The Arberhütte restaurant in Regensburg features a rustic Bavarian hospitality paired with great-tasting food. Guests of Sandy Schäfer and Ralph Scharg can look forward to a cozily furnished dining room and, on warmer days, a nice beer garden in the quiet northern part of the city. The menu offers specialties of the traditional Bavarian cuisine such as pork roast or pork knuckles, Schnitzel, burgers and American cuisine-classics such as chicken wings. Dishes like potato soup with bacon, home-made roast aspic with bread (during the beer garden season) or collared pork sour & red/white make the guests‘ mouths water. The chili con carne served at Arberhütte is prepared after the original recipe of a Texan friend and fiery hot. Liver dumpling soup Preparation: 1. First, heat the milk on the stove. In the meantime, cut the rolls into mediumsized cubes and put them into a bowl. Pour the hot, not boiling milk over the cubes and cover the bowl so the old bread gets thoroughly soaked. 2. While the rolls are soaking, use a knife to scrape the liver out of the skin and remove the filaments. Spread the filling in a large bowl. Mince the bacon in a mixer and add it. 3. Chop the onion into little pieces and put it into the bowl as well. Crack the eggs and add them. Add the eggs. Press out the rolls, tear them into small pieces and put them in the bowl as well. 4. In the meantime, heat the meat broth on the stove. 5. Chop the parsley and add it to the liver together with the other herbs. Sprinkle the breadcrumbs on top of it and mix all ingredients to make a smooth dough. 6. The dough is very sticky. Therefore, you must wet your hands well to form the dumplings. Should the dough fall apart, add breadcrumbs. 7. Form about eight dumplings out of the liver dough and place them into the boiling meat broth. Turn down the heat because the liver dumplings should not boil. They must simmer in the meat broth for about 25 minutes.

Things you didn’t know: Brez‘n... also known as Laugenbrezel or Brezel Which guest has not eaten and loved it before, the fresh Brez‘n which has become a regular part of the Bavarian breakfast culture and a regular side dish for Weißwurst (white sausage), liver cheese and Obazda cheese. Brezel are prepared with a salted lye and come in all kinds of varieties and sizes, often sprinkled with salt. Brezel have originated from the Roman ring bread which was common in Bavarian monasteries. It was a holiday bread mostly served on New Year’s Day, Palm Sunday or at the harvest festival.

Weißwurst (white sausage) from Munich No dish is connected more closely with Bavaria than Weißwurst (white sausage). It is entwined with myths such as you have to press it out of the skin and are not allowed to eat it with fork and knife and legends such as it must be eaten before noon, and it has even become a geographical term, Weißwurst equator (the German regions below the Main river.) Bavaria’s capital Munich is directly connected to the delicacy because here, it represent the city’s proverbial hospitality. The origin of Weißwurst can also be found in Munich. The delicious sausage delicacy made from veal and pork meat, refined with onions and fresh parsley has a long tradition. According to reports, Weißwurst was created by chance in 1857 when an innkeeper filled light veal sausage meat into thick pork skin. The tradition to eat Weißwurst before noon has survived until today in many restaurants. You let the sausage simmer in hot water and eat it with sweet mustard, Brez‘n and Bavarian beer. If you want to get to know more about this Bavarian delicacy, you should go to the Weißwurst Academy in Neumarkt in the Oberpfalz. Here, you learn everything about the origin of the sausage and can help make it. In the end, you’ll get a Weißwurst diploma!
