Community welcomes new JSC director Vanessa Wyche By Mary Alys Cherry

N

ew Johnson Space Center Director Vanessa Wyche got quite a warm welcome from the community Aug. 18 when the Bay Area Houston Economic Partnership hosted a Community Welcoming Luncheon honoring her at the Clear Lake/NASA Hilton. When NASA Administrator Bill Nelson named Wyche as the new JSC director she said, “As the home to America’s astronaut corps, International Space Station mission operations, the Orion and Gateway programs, and a host of future space developments, Johnson is a world leader in human space exploration and is playing a key role in the next giant leaps in American excellence in space.”

Wyche’s “Giant Leaps Start Here” presentation to the BAHEP members highlighted the numerous programs and initiatives in which JSC plays an active role. These include the International Space Station, Commercial Low-Earth Orbit, Private Astronaut Missions, Orion, Commercial Lunar Payload Services, Gateway, Artemis, and Moon to Mars. A South Carolina native, Wyche earned a Bachelor of Science in Engineering and Master of Science in Bioengineering from Clemson University. Wyche was named JSC’s director earlier this year, becoming the first African American woman to hold the position. While acknowledging she is the first to break that barrier, she hopes she won’t be the last.

Astronaut Doug Hurley retires By Mary Alys Cherry

Doug Hurley is an exceptional astronaut whose leadership and expertise have been invaluable to NASA’s space program,” said NASA Administrator Bill Nelson. “His impact on the agency transcends his impressive work in spaceflight, inspiring us to take on bold endeavors. I extend my deepest gratitude to Doug and wish him success in his next adventure.” Hurley spent 93 days in space on missions that included the final space shuttle flight and the first crewed flight of the SpaceX Crew Dragon spacecraft. He was spacecraft commander on the first crewed flight of SpaceX Crew Dragon in May 30, 2020, and safely returned to Earth Aug. 2, 2020. The flight was the fifth time in

history that NASA astronauts have flown on a new U.S. spacecraft and marked a new era of human spaceflight, enabling crewed launches to the International Space Station from American soil on commercially built and owned spacecraft. As a space station crew member for 62 days, he and crewmate Bob Behnken contributed more than 100 hours supporting the orbiting laboratory’s scientific investigations. “Doug Hurley is a national hero,” said Reid Weisman, chief of the Astronaut Office at NASA’s Johnson Space Center. “He is a pioneer in human spaceflight who inspires the next generation. Doug made significant impacts everywhere he served at NASA.” “Doug brought experience and leadership vital to our continued success in human

spaceflight. He shared his critical learning from his missions during many years in human spaceflight to a new team,” said Kathy Lueders, associate administrator for human exploration and operations at NASA Headquarters. “For 21 years, I’ve had the incredible honor of participating in the American space program and working alongside the extremely dedicated people of NASA. To have had a place in the assembly of the International Space Station, and the Space Shuttle Program, including flying on its final mission, STS-135, has been a tremendous privilege,” said Hurley. wo famous wives in the space community died in August, leaving many happy memories behind as their families said goodbye. Janis “Jan” Ellen Cernan, wife of the late astronaut Eugene Cernan, the last man to walk on the moon, died Aug. 5 after a long battle with Alzheimer’s. She was 85. Elizabeth ”Betty” Anne Kraft, wife of the late Chris Kraft, former Johnson Space Center director, died Aug. 17 in Lake Jackson. Her death came after a 69-year marriage with her high school sweetheart and a long happy life of devotion to her husband and children. She was 97.

EW THINGS in the Bay Area are more beautiful than the annual Lunar Rendezvous Ball, which just about everyone attending the 56th annual gala at the San Luis Convention Center in Galveston will most likely agree. And, this year those attending got to see two balls in one evening – last year’s ball, which was postponed because of the pandemic, and this year’s ball. They got to experience the thrill of looking out over the black-tie crowd, of seeing two lovely young ladies being crown queen as tears splashed down their cheeks, and the charm of the pages and little ladies in waiting dashing about. An elegant evening depicting the history, tradition and honor of the Lunar Rendezvous Festival put together by Ball Co-Chairmen Rachel Gibbs and Jill Stephenson, began with a champagne reception that included Lunar Rendezvous Festival Chairman Penny Brockway and her husband, James, and Advisory Board Chairman Jill Reason and husband, Dan, welcoming the crowd, which also included former festival chairmen and now Advisory Board members Kelli Byrd, Annette Dwyer, Michelle Holland, Jana Miller, Karen McCorkle, Mike and Kathy Reeves and Wendy Shaw. Afterwards, they moved into the ballroom for dinner – Filet Mignon and Fire-Cracker Glazed Shrimp with Roasted Garlic Mashed Potatoes and Asparagus – and then the introduction of the two royal courts with retired astronaut Col. William McArthur Jr. emceeing the event. King Slade Lewis had the enviable job of escorting both the 2020 and 2021 queens around the ballroom as the soothing sounds of Moon River played in the background. 2020 Queen Madison Elizabeth Lehman is the daughter of Vanessa and Troy Lehman and a graduate of Lutheran South Academy. Joining her in the Royal Court were Queen Alternate Alexandra Grace Naman, a Clear Falls High graduate and the daughter of Elysia and Mickey Johnson, plus Captain Maddox Anthony Luna, also a Clear Falls High graduate and son of Georgia Luna and Anthony Luna. 2020 princesses included Isabella Anding, Kaylee Aronowitz, Katherine Bailey, Gabriela Bengoechea, Gabriela Bengoechea, Megan Bogle, Victoria Burkett, Anne Davie, Avery Davis, Michelle Feng, Anna Geiger-Lucas, Karla Hooper, Breeze

As Fashion Show gets older it gets Better

UNAR RENDEZVOUS’ annual Fashion Show seems to get better the older it gets. Just ask those attending this year’s 56th annual extravaganza at Galveston’s San Luis Convention Center. It was part of the very first Lunar Rendezvous Festival, and has been a success every year since. But then, with Co-Chairmen Wendy Drapela and Kathy Rae overseeing the event and Lenny Matuszewski producing the style show, it would be difficult not to have a success as models showed off the latest fashions from Adelaide’s Boutique, The Clotheshorse Boutique, Dillard’s, Dress Galaxy, Moxie District 31, Lewis Jewelers, Tina’s on the Strand and Tootsies, while dancers from the Bay Area Houston Ballet & Theatre added an artistic note to the event for the crowd of nearly 600. But first came the welcome by Festival Chairman Penny Brockway and the Fashion Show co-chairmen, followed by the presentation of the 2020 and 2021 courts on the arms of their mothers (or substitute presenters) – many who no doubt wondered last year, as the pandemic shut the community down, if their day would ever come, and seemed delighted that it finally had. Princess Lauren Woods probably felt somewhat that way. She was the last to be introduced at both the style show and ball. Col. William McArthur Jr. even joked with her during the ball about being at the end of the line. Besides the princesses, lieutenants and their presenters, there were a dozen or so youngsters, or special guest models, adding to the merriment – Grayson Liam Brown, Grady Wayne Byrd, Madelyn Jolise Byrd, Owen Thomas Dieste, Elijah Benjamin Harley Davis, Claire Elizabeth Farley, Madison Betty Jones, Jillian Katherine Knapp, Charlotte Jude Olin, Lelia Cameron Sprague, Norah Elizabeth Strickland, Savannah Grace Strickland, Gavin Reagan Taylor, Quinn Jeannette Taylor and Vivienne Mae Dunne. Afterwards, there was the Live Auction put together by Kim Heitzman, followed by a delightful lunch that included Sweet Soy Marinated Chicken Breast and the drive back to Clear Lake.

Seabrook gets $23.5 million grant for wastewater treatment retrofit

H

urricane season is upon us and for many Seabrook residents, Hurricane Ike was a devastating storm that will never be forgotten. As a result of a 12-foot storm surge, Seabrook’s Wastewater Treatment Plant located on the outer boundaries of the Old Seabrook District was rendered inoperable. The devastating impacts the hurricane had on Seabrook’s critical infrastructure prevented thousands of residents who had evacuated from returning home. And while Seabrook’s Wastewater Treatment Plant was eventually fully repaired, Hurricane Ike became the storm that set in motion the city’s quest to move its essential systems out of harm’s way. It is with great excitement that Seabrook Mayor Thom Kolupski announced that the Texas Division of Emergency Management (TDEM) has selected the City of Seabrook to receive a hazard mitigation grant totaling $23,524,808.60 for phase two, the construction phase, of the wastewater system infrastructure retrofit project, to be funded through

the Federal Emergency Management Agency’s (FEMA) Hazard Mitigation Grant Program. The City of Seabrook will provide the required non-federal match of $7,841,602.86. Phase one of the project, the design phase, was primarily funded by a grant through FEMA. In total, the city will receive $26,455,497 for the wastewater system infrastructure retrofit project. The non-federal match has been funded with prior bond and capital funds. In addition, Seabrook continues to pursue additional eligible grants to assist with the city’s portion of the project. The wastewater system retrofit project will include a new wastewater facility located next to the Seabrook Public Works Complex on the northside of Seabrook, with a substantially higher elevation. The new facility will be named the Pine Gully Wastewater Treatment Plant and will be capable of processing 2.5 million gallons of wastewater per day, which is equivalent to the flow that is treated at the existing plant on Main Street. The location of the new plant is a less vul-

nerable location from storm surge threats with a higher finished grade elevation in addition to being further inland from the bay. The property where the plant will be located has been removed from the flood zone maps and is no longer identified as a special flood hazard area. Upon completing the new facility, the existing facility on Main Street will be removed, and a wastewater lift station will be installed. Both past and present City Councils, alongside the city’s administration, have diligently worked to secure this critical grant for many years. Securing the award is a testament to the hard work of Seabrook Mayor Thom Kolupski and the city staff. The effort and time required to obtain the grant will drastically improve Seabrook’s defense during future storms. The project is estimated to go for bid in the next few months and construction will likely begin by the end of 2021. In the coming months, the City of Seabrook will release additional information regarding community impacts during construction. The overall construction phase of the project is expected to take between 24 to 36 months to complete.

CIS-Bay Area planning 2021 campaign kickoff By Mary Alys Cherry

T

he Women’s Council of Realtors Bay Area Houston is teaming up with Communities in Schools-Bay Area as it prepares for its Annual Campaign Kickoff Friday, Sept. 17. That’s at the League City Civic Center, from 5:30 to 9:30 p.m. and featuring the live band, Nick and the Groove. This year’s theme is “70s Disco Fever,” and CIS-Bay Area Executive Director Dr. Peter Wuenschel is inviting the community to join the fun. “Put on your best 70s outfit and support our CIS-Bay Area students,” he says. CIS-Bay Area, a local non-profit organization, provides services for students at 24 Clear Creek and Dickinson ISD campuses, including one new campus, empowering students at risk of dropping out to stay in school, on the path to graduation and to achieve in life. General admission tickets are $30 each, which includes two drink tickets and food. Reserved tables for 10 are available for $1,000, $2,500 and $5,000 with other extras. Neurologists join staff at Houston Methodist

T

wo board-certified neurologists have joined the staff at Houston Methodist Neurology Associates-Clear Lake, bringing the group to three physicians and expanding the level of service available to Bay Area patients. Dr. Bingzhong Chen, M.D., Ph.D., joined Dr. Akhila Vijayakumar in June in Medical Office Building 1 at 2060 Space Park Drive, Suite 104, on the Houston Methodist Clear Lake Hospital campus. Chen has a broad range of clinical expertise with a focus on treating headaches/migraines, epilepsy, vertigo, stroke, neuropathy and movement disorders such as Parkinson’s disease and dyskinesia. He earned his medical degree from Fujian Medical University, Fuzhou, Fujian, in China before completing his Ph.D. in Neuroscience at the University of Mississippi Medical Center in Jackson. “The key to solving many neurological diseases is listening to the patient and conducting thorough physical examinations,” said Chen. “I spend a great deal of time listening to and examining my patients, seeking to understand their unique medical histories and current symptoms.” Dr. Gunjun Narwani, joined the team in July at her new office in Medical Office Building 2 on the Houston Methodist Clear Lake Hospital campus at 18100 Houston Methodist Dr., Suite 240. C

hange is inevitable. Sometimes change can be terrifying, difficult and confusing. For many people change can be hard to handle and as a result, feelings of stress, anxiety and depression can arise. However, when we break it down and understand that these feelings are a mental thought process and can be controlled most of the time, it is easier to let go of the negative feelings. Ultimately, shifting our way of thinking about change into a positive perspective and taking actions steps, can be transformational and that is when we see the benefits of change take place. Throughout the changes in our personal lives it’s important to give attention to our health and wellness. A daily renewing of our mind, body and soul are critical in dealing with change and moving forward throughout life. Stress and anxiety can overtake us and affect us if we allow it to. People often ask me how I deal with stress and anxiety. I’ve found that taking things day by day is helpful to not get overwhelmed. Also, having a routine that focuses on uplifting my mind, body and soul helps tremendously. It all starts with your mindset. I heard on a Rachel Hollis podcast recently that, “depression is about the past and anxiety is about the future. A made up future.” Anxiety is something we create in our minds about a situation or circumstance that hasn’t even happened yet and most likely won’t happen. We have these feelings and negative thoughts because of past situations and how it made us feel. However, this is not truth for the future, it is a fictional thought. Depression occurs from emotions and thoughts of troubling situations in the past, (and sometimes future thoughts about possible situations, which also instills fear to move forward). In reality, you have the power to change the future, your future. You have the power to let go of the past, control your steps moving forward and change your life.

Let’s be honest, some days are harder than others and sometimes even months. Learning how to handle stress, anxiety and depression and how to counteract the feelings when they arise is monumentally important. Here are some things I enjoy doing that help nourish my body, mind and soul. When I incorporate these actions into my health and wellness routine it brings me back to life and shifts my thought process into a more positive perspective. Doing things that help your body to physically feel better are important. I love going for a walk, exercising, and taking in person or online fitness classes. Drinking green juice and putting healthy food and drink choices into your body will help you feel better over all. Massages, facials and face masks also help the body in numerous ways. I enjoy reading books, meditating and listening to positive music and podcasts. I personally do a lot of praying and rely on my faith to carry me through difficult times. Do things that bring you joy, like spending time with loved ones and being outside in the sunshine. Lastly, giving back and helping others can bring so much joy to the soul. When we stop focusing on ourselves and shift our focus on other people and how we can make a difference in someone else’s life, that’s when miracles happen. When you start to feel a little more anxious or uneasy, breathe, take a step back and get your mind in check. Try to stay grounded and do things that help give you a clear and positive mindset, especially when dealing with change. If you’re going through a situation that is overwhelming to you,

communicating with people you trust is very beneficial. Talking to a therapist or life coach can also help as well. Nourishing your body, mind and soul daily is so vital because it is the root of who you are and everything that you do.

Lukas BBQ Smoked the Old-Fashioned Way by Rick Clapp

L

ukas BBQ’s distinct and flavorful taste comes from cooking and smoking meat the old-fashioned way. Marvin Diaz is not only the pitmaster but also the owner of Lukas BBQ. Diaz says, “We select and carefully smoke and cook our meats slowly to ensure the moist mouthwatering taste. It begins with choosing the best quality briskets, ribs, pork, steaks, sausage, and poultry available.” This hard-working restauranteur began his career, like his cooking, the old-fashioned way. He also went to the school of hard knocks. Arriving in Houston by himself from Honduras at age 15, he became a self-made man out of necessity. With no means of support, relatives, and/or friends, he had to survive immediately. Soon after his arrival in the U.S., he moved to the Clear Lake area, starting from the bottom of the restaurant business by washing dishes, cleaning, and helping the chefs at Sundance and Villa Capri Restaurants. According to Diaz, his mentor and friend and well-known Sundance Chef Sixto, “He taught me about life and how to cook.” Diaz wanting a better life for himself, and his family accepted a job at a well-known barbecue business for nearly 20 years. His drive, experience, and talent afforded him a way to purchase the establishment and become his own boss, his ultimate dream.

Proud owner Diaz states, “Our success comes from treating everyone, both new or repeat customers, like our family and friends. Our goal is to make everyone welcome and appreciated.” Their number one item ordered is their tantalizing St. Louis style pork ribs served with a tangy vinegar sauce. BREATHING

Ok, now take a deep breath…” That is what the doctors said to me, when they were checking my lungs, as I battled a really bad illness recently. How about you? Have you been sick or in a stressful situation? In those moments, are you mindful of your breathing? Before I got sick, I took breathing for granted. Now I see it as essential, helpful and blessed. Breathing is Essential Let’s face it, breathing is an essential function in life. You need to breathe to physically live. Your body can’t function deprived of oxygen. I learned that the hard way as my illness attacked my lungs and I started having trouble breathing. My shortness of breath made my heart overcompensate and I became so extremely week and fatigued that I ended up in the hospital. For the Spirit of God has made me, and the breath of the Almighty gives me life. (Job 33:4 NIV) Take a deep breath right now, fill your body with life giving oxygen and don’t take it for granted! Breathing Is Helpful Taking a deep breath is not only is essential to physical life, but it can be helpful in handling situations and making choices. It can be like pushing a pause button on your remote control. The pause button stops the action until you are ready to

act. Think of a stressful moment in your life. When all of a sudden something happened or someone did something that caused everything to change for the negative. In that moment, you have a choice. You can immediately react, or, you can pause, take a breath, and think through what would be the best action. Recently, I read an article on behavior change and neuro-pathway fluidity that said most of us when emotionally triggered will immediately react. The suggestion was to take a pause to think when triggered emotionally and then choose the best action moving forward. So, the next time you are in a stressful situation, may I suggest taking a series of deep breaths. Breathing Is Blessed In many faith traditions, breathing, prayer and meditation have always been linked together. There is something spiritual when we do something physical in worship of God. I have found this to be true in my own physical healing. When I was in the hospital, one song kept going thrugh my mind and it really helped me. “Great Are You, Lord.” By Gateway Worship.

s always my writing style is much different than most that write for this magazine. I try to engage my readers and make them think, maybe even teaching them a little something they didn’t know. Am I successful? Only you the reader knows. What comes to mind when you hear the word EXODUS. I would pray that most of you would think back to the days when Moses lead the Jewish people out of Egypt. In this situation the words meaning would be a vast movement of people. The Greek definition literally means the road out. The Greek word was created by combining ex with hodus. Hodus meaning is road or way. Now maybe your wondering where this is going. Keep reading and you will find out. In my last article I wrote about the fish movement. In my three decades of guiding, this holds true every year. Will every fish leave? No of course not but most will seek deep water structure in Galveston Bay. Out of Eagle Point that area is the Exxon A-Lease. This is a field of gas wells with two big units located in the field known as A-1 and A-2. Then there is a series of smaller satellite wells surrounding them. Now for some in depth information on fishing this area. Most anglers may think you just get near a well and throw your baits towards the structure. On a slack tide this method could result in catches of fish. How about if this tide is moving? Your baits will be carried off the well, either right or left depending upon the tide. Studying the movement of around a well will

give you insight on how you baits will move. Also it will give the angler guidance on where the oyster shell may be piled up. Let me attempt to explain. When they placed the wells on the bay floor, they did so by placing a pad around the structure. This pad was made up of oyster shell. Over time with the movement from the tide, this shell would pile up and created humps by the well. Humps can be described as a cluster of shell that is built up from the original placement. In most cases these humps are usually off the well, depending upon how the tide moves around the well. In other words on a incoming tide the heavy shell may be located off to the right and on the backside of the well. Every well is different. That is why the angler must be observant to what he sees. So hopefully you have a little more information to assist you when fishing this area. It may sound complicated but once you understand the layout it becomes easier. Like making pancakes, the first time you measure each ingredient carefully. Once you become more accustomed, you just throw the ingredients into a bowl and presto you have the mix for pancakes. The best live bait to throw around the wells is live croakers. Followed by live shrimp and soft plastics. Eagle Point Fishing camp usually has a good supply of live shrimp and croakers. THE LIBRARY IS OPEN!

he Evelyn Meador Branch of the Harris County Public Library System wants you to know that they are open and working at 75% capacity. Having been closed about a year during the pandemic, this lively jewel of Seabrook never really totally stopped working to serve patrons and visitors needing their services. Much of their programming went virtual including many online classes, plus they had curbside drop-off and pick-up of books at their location. Now that they are mostly reopened, Milagros Tanega, library branch manager, makes sure all their in-person and virtual activities are listed on their monthly event calendar. Having recently celebrated their 33rd anniversary, the Evelyn Meador Library has been working directly with the City of Seabrook and its volunteers to create new and engaging outside activities for people to enjoy. Come by and snip fresh growing herbs in the Isabel Konradi Memorial Herb Garden using the nearby poster to find your favorites. Study the Pollinator Mural in the Herb Garden and follow the free guide (suitable for coloring) available from the front desk. Pick fresh fruit from the Edible Tree Forest along the hiking trail behind the building that features pear, apple, lime, lemon, persimmon, and fig trees. Browse through the Outdoor Learning Exploration Space with eight garden beds including a Shakespeare growing box that holds plants from the playwright’s works. Select a book from the Painted Little Library complete with solar powered lighting so you can take or leave one at any time. Go inside to the Seed Exchange to find new things to plant in your garden or pots, and donate some seeds, if you would like. Coming soon, visitors will be able to check out tools from the garden tool lending library and take an outdoor story walk with wooden laminated panels that exhibit pages of a children’s book. Evelyn Meador is great place for families to bring their children as they discover the wonder of books and learning. Children can get their own library cards to check out books. The very talented Ms. Pearson leads small children in a weekly outdoor story time complete with great books and songs that is truly fun for the parents and grandparents. Thanks to the Seabrook Rotary Club, the library hosted a free petting zoo in July that allowed families to get up close and personal with goats, chickens, rabbits, and even a llama. After the outdoor fun, families can browse through the extensive children’s book section, pick up a craft to do at the library or home, or play learning games on the computers. Teens and preteens will find their own learning space at the library. Teen Isle has computers, a gaming station, and homework help for all who need it. The Seabrook Middle School students enjoy walking across the street at the end of the day to tackle schoolwork, hang out with friends, and use the free Wi-Fi. Miss Rachel, the coordinator for the tweens and teens, fills the library schedule with special crafts, computer coding, and reading projects both at the library and online. Because libraries are great places to learn, Evelyn Meador offers many opportunities to develop new skills for people of all ages. Stop by to use their free computer access and Wi-Fi. Set an appointment with a member from SCORE, Service Corps of Retired Executives, to get advice for your small business or entrepreneur opportunity. If you don’t see a book you want in

Once the library can return to full capacity, they will again offer in-person classes for all sorts of topics, even how to use a computer. The library has so many supporters, but none more important than the Friends of Evelyn Meador Library. They provide Evelyn Meador with volunteers and fundraisers. They run the onsite bookstore and sell the jewelry made from the laser cutter to supplement the other donations from groups including the Lunar Rendezvous. the stacks, the librarians can find it for you at another location and make sure you can get it. They offer help for taxes, cooking, job searching, and more. Ask about their 3D printer, Glow Forge laser cutter, and sewing machines. Evelyn Meador is such a beautiful and inviting space. When the original building from 1988 was damaged in 2008 by Hurricane Ike, the community came together to support with a new facility that reopened in 2011 with state-of-the-art technology and a LEED designation – Leadership in Energy and Environmental Design. Light flows in from the windows.

Braised Lamb Shank with couscous

all is here and nothing says it better than braised Lamb Shanks. This recipe is as easy as one two three. The time is in the braising, the longer the better. I promise you can't go wrong with this dish, the meat melts in your mouth. Lamb Pairs well with a nice red wine, a classic Bordeaux Will pair well. I would highly recommend Château Lacooste Borie. You want a wine that presents a very dark red color. The nose offers a very large range of red berries aromas with some notes of vanilla and spices. In mouth, it reveals an obvious generosity through ripe and elegant tannins as well as a good complexity and well balanced. Very rich and full as well as supple.

INGREDIENTS 4 - 6 lamb shanks 1 lg chopped onion 4 carrots (slic 9 cloves garlic (minced) 1 sprig rosemary (chopped) 4 sprig thyme (chopped)

1 bottle red wine 1 can beef broth 1 can chicken broth 1 can whole peeled tomatoes with juice salt&pepper

DIRECTIONS *Step 1: Sprinkle shanks with salt and pepper. Heat oil in a heavy large pot or Dutch oven over medium-high heat. Working in batches, cook shanks until brown on all sides, about 8 minutes. Transfer shanks to plate.

*Step 2: Add onions, carrots and garlic to the pot and saute until golden brown, about 10 minutes. Stir in wine, tomatoes, chicken broth and beef broth. Season with rosemary and thyme. Return shanks to pot, pressing down to submerge. Bring to a boil, then reduce heat to medium-low. Cover, and simmer until meat is tender, about 3-4 hours. * Step 3: Remove cover from pot. Simmer for about 20 minutes longer. Transfer shanks to a platter, place in a warm oven. Boil juices in pot until thickened, about 15 minutes. Spoon over shanks. * This recipe pairs well with a mushroom risotto or couscous
