The Bathwi Bathwick ick Boatman Boatman R I V E R S I D E R E STAU R A NT “It’s been a great year,” muses Ben Hall, owner and chef of The Bathwick Boatman. “But we are always thinking of ways to build on what we are doing. Creating new partnerships with hotels, for example, would be wonderful.” Ben and his wife Rosy have run this delightful restaurant above Bath’s historic boating station on the banks of the River Avon for nearly five years. The venue’s uniquely beautiful location makes it a favourite for parties and just about any special occasion: weddings, birthdays, corporate dinners, christenings and anniversaries, wine dinners and book launches. Rosy works closely with customers to ensure that the event they’ve dreamed of goes exactly as planned. “We offer exclusive use of the restaurant to parties of more than 40 without a hire charge,” says Rosy. As well as all the functions, the Boatman is a lovely restaurant for a romantic dinner or a small family group. It really is a family run business – husband in the kitchen, wife waiting the tables. The abundant fresh cut flowers on each table are lovingly grown by Ben’s dad, while Rosy’s dad helps with the books. They rely on high quality local suppliers, from the brilliant Bath Butcher, Terry & Son, to ever dependable Bristol-based coffee experts Roy Ireland Espresso Services, and ultra-efficient Gillian Austen Associates for marketing and editorial. “When the suppliers are reliable, we are reliable so we continue to use their excellent services!” says Rosy. “We have a high proportion of repeat customers because we are so hidden from the road that any passing trade wouldn’t know we are here,” she says, adding: “We’re a favourite secret restaurant for many Bathonians!” In fact, the Bathwick Boatman is only a ten-minute stroll from the centre of Bath. Once discovered, such is the popularity of the couple and the restaurant-in-a-boathouse, people are prepared to travel a long way to enjoy good old-fashioned hospitality and value for money - resulting in a varied and loyal client base. “We have great affection for a Parisian car club “Morgan France” who drive over three times a year to have lunch and stroll into Bath,” reveals Rosy. “The car park looks amazing with 20 Morgans lined up!

“Then there’s Iris who lives down the road and scoots in for fish and chips. She’s as special to us as the dignitaries at a corporate do, flanked by diners from the local rugby team. Every customer is really important to us.” Fully licensed, the Bathwick Boatman serves lunch and dinner from Tuesday to Saturday and traditional lunches on Sunday. There are always vegetarian and gluten-free choices on the menu. With Christmas on the horizon, Rosy and Ben are already tempting diners with a festive menu promising sumptuous food at very reasonable prices. Choose two courses (£17.75) or three (£23.50) and select the traditional turkey and Christmas pudding, or choose from a wealth of other indulgences, such as home-smoked salmon, kettle-cooked gammon with mustard cheese sauce, and blackcurrant and clotted cream ice-cream with shortbread - all accompanied by friendly service, Christmas crackers and atmospheric candlelight. provider of quality ice cream, not just becoming the West Country’s first choice for the frozen dessert, but having its range sold in restaurants, at National Trust properties, kiosks, clubs, pubs, cafes and ice cream parlours, across the country. NAUGHTY but n-ice - people can’t get enough of awardwinning Yarde Farm ice cream. Now, nearly 25 years and more than 60 mouth-watering flavours later, Yarde Farm has certainly become the hottest

And it wasn’t long before the awards started coming along, with accolades including a much-coveted grade ‘A’ accreditation from the British Retail Consortium for food manufacturing. The icing - or ice cream - on the cake, however, came in 2002 when the company was crowned Ice Cream Alliance ‘Champions of Champions’. “That is akin to winning the ice cream equivalent of an Olympic Gold medal,” explains Garry proudly. The loyal team of 12, many of whom have been with the company since the start, are based at the modern purposebuilt factory in Plymouth, which was built in response to Yarde Farm’s success. It produces more than 1.5million litres a year with the ice cream sold in a range of quantities, from 120ml tubs, popular at locations and events, to catering packs for those requiring large quantities. “We appreciate that the quality of the product is the root of long-term success and guarantees customers will come back time and time again,” says Garry. “Our luxury range is made with nothing but fresh cream, real fruit and, of course, the best quality ingredients including clotted cream in selected flavours.” The soft scoop selection is pretty sumptuous too - look out for English Toffee or Banana- while the 12 different varieties, including Chilled Champagne, Crisp Apple and Cool Mojito, in the refreshing luxury sorbet selection are destined to get the tastebuds tingling.

Jonathan Bailey’s teenage culinary experiment has developed into a popular and successful business that’s not only a hit throughout the West Country, it’s destined to tempt the tastebuds of the rest of the country as well. He’s about to see his products go onto the shelves of a national supermarket chain, and while contractual obligations mean he can’t reveal which store it’ll be just yet, he’s delighted to have achieved one of his original business goals. The new venture marks the end of an exciting year which saw no fewer than three supermarket giants offering to stock his range of the very best potted Devon crab. “We have been working very hard in order to reach the goal I set for the company when we first started, to have our products sold on a national scale in a high end supermarket chain,” he says. “This year has been a very progressive one. We had thee offers and finally signed up with one of the supermarkets. Our launch is now imminent and we are already working on new recipes for new products, ready for the beginning of 2012.” “We have exciting times ahead and are looking forward to developing a excellent quality fish brand that retains its core values and at a price bracket to fit most people’s budget.” The latest events are the continuation of a success story that began when then teenager Jonathan was wondering what to do with a large brown Devon crab he’d been given. He and his friend Naomi decided to mix the shellfish with butter and a secret blend of spices and then served up the result to his friends - who all loved it.

The rest, as they say is history and, now in his early 20s, Jonathan, helped by his mum, Jenny, continues to develop new, tasty and exciting recipes using locally sourced, sustainable seafood. Already employing five people at its site at Ullacombe Farm, Bovey Tracey, there is every expectation that staff numbers could grow even further as The Potted Fish Company’s rapid rate of expansion continues. “We have always believed that it's important to work with businesses that benefit the local community and have always used local supplies and will continue to do so, but are very excited about the opportunities ahead,” says Jonathan. His products come in eye-catching, yet tastefully designed packaging and in a range of flavours. There’s potted crab with chilli, great when added to fresh tagliatelli, suggests Jonathan, smoked mackerel with horseradish, salmon with sesame and ginger, prawns with chilli and lime and, his own personal favourite, Old English potted crab.

Champagne corks are popping at The London Inn in Padstow. Tim Tutton and his partner Lisa Mc Hardy are celebrating their first complete year at this attractive traditional Cornish pub. The London Inn, owned by St Austell Brewery, was already a very busy place when Tim and Lisa took over, so they knew that building on the strong local reputation was going to be quite a challenge. However they have more than risen to it and are thrilled to be attracting rave reviews from their visitors and in the local press. One of the most popular pubs in the area, it is a typical Cornish fisherman’s pub, full of charm, atmosphere and character with its own quirky ambience. The London Inn has 3 comfortable Bed and Breakfast rooms, and was converted from 3 fishermen’s cottages, opening as an Inn in 1803, taking its name from an old local sloop. It is charmingly situated near to Padstow harbour. Tim and Lisa “hit the ground running” and have barely had time to draw breath since they took over. Their menus have proved extremely popular and place a strong emphasis on the fantastic range of good fresh produce available locally. Tim says himself “We are very passionate about fresh local food, and try to source as much as possible within the area and use a great range of suppliers from farm shops to fruiterers.” Their seasonal menus feature a wonderful range of seafood and meat dishes, which as the season changes; will place more emphasis on roasts, and warming traditional pies and stews, and of course, a traditional Sunday Roast right through the winter months. The delicious menu can be enjoyed in the bar or in The Wheelhouse Restaurant which has seating for up to 24 people, and is available fore private parties. They carry a range of St Austell Ales with the largest selection of cask ales in Padstow, and are holders of the Cask Marque Certificate of Excellence for real Ale. The well stocked bar carries an excellent range of wines, ciders and spirits.

October saw the welcome return of their featured seasonal ales and a regular live music feature from local musicians on Sunday afternoons. Although their success is very exciting and gratifying, Tim and Lisa have another more personal cause for celebration; they were married in October. Fresh and locally caught fish with the best Devon chips continue to be at the heart of this family-run eatery, but from a refurbished shop which is now serving made and baked-to-order pizzas, burgers, heavenly fresh fruit milkshakes and organic coffees and teas. “They took a lot of getting right - we sampled different bases and toppings untill we did get them right,” reveals Sarah. “If we are not happy with something we will not sell it. Another big investment is the coffee machine and we are now serving morning tea and coffee, cakes and shakes, which are proving very popular. Our coffee is organic and our heavenly shakes made with fat-free yogurt and real fruit in flavours of banana, strawberry and blackcurrant. You can really indulge with ice cream in choc chip, toffee bean, Smartie and mint choc chip flavours.” The recent introduction of fish and chips served in cardboard boxes - preventing the fish from sticking to the chips and proving recyclable - and being able to eat in the restaurant at no extra cost are just two more ways the family continually strives to better its products and service. “Customers always get a warm welcome and smile,” says Sarah. “And we pride ourselves on the shop’s cleanliness and our high standards.” They’re obviously doing something right. Lee has been runner-up Fish Frier of the Year three years running and runner up three times in the Best North Devon Traditional Fish & Chip Shop and boasts five-star scores on the door. “We are hoping for first place this year,” says Sarah. Now that would be batter than anything.

“We use local potatoes and, when available, our fish specials rock (huss) and skate are also from the area. They are very popular and don’t stay on the menu board for long!”

In order to do this, repair techniques which add life to ancient fabric need to be learned, and the replacement of lost elements should be done in a clear way which does not mimic the original. This approach has been at the heart of Donald Insall Associates’ approach ever since, and can be seen in all the work the Practice does.

It is now hard to imagine Bath as a city under threat. Our very notion of this beautiful city is bound up with its timelessness, the enduring way in which a common material unites a mixture of disparate architectural styles so successfully. And yet attitudes were very different 50 years ago, when the social hierarchy which had supported life in the grand houses of cities such as Bristol and Bath had ended so recently. The 1970s touring exhibition “The Destruction of the Country House” drew attention to the astonishing fact that in the mid 1950s one country house was demolished on average each month. The scale of the loss of craftsmanship this represents can only be imagined. However, grave concerns about the loss of historic fabric and future craft skills were being expressed as early as the 1950s. One Bristolian, architect Donald Insall, decided to do something about this, and in 1958 founded an architectural practice devoted to rescuing many of the nation’s historic buildings under threat. It must have seemed highly unfashionable at the time to champion the case for finding new life for redundant historic buildings when all around they were being unsympathetically altered or demolished. And yet this is what Donald Insall Associates set out to do and continues to do today. In these early days, there was no clear philosophy to adopt in approaching the conservation of historic buildings, as much of Europe was involved in replacing buildings lost during the war, and so it was to 19th century philosopher and Arts and Crafts pioneer William Morris that Donald Insall turned. Restoration of the House of Lords chamber in 1980 offered an opportunity to demonstrate this philosophy, followed in 1992 by a similar scale of operation for the restoration of Windsor Castle after the fire. The four-decade repair programme for Trinity College, Cambridge, trained a group of craftsmen whose foreman once said “we could build a mediaeval cathedral today with the skills we have learned”, contrary to the often heard view that ‘they don’t build like they used to’. Although locally the Practice is best known for the restoration of the historic buildings of the Thermae Bath Spa, its collaboration with Bristol practice Alec French and Partners can be seen in the new buildings at 22-25 Queen Square in Bristol. Today, the Practice operates from seven offices around the country and currently clients include central and local government, the National Trust, private owners, charities, commercial clients, colleges, universities, schools and the Bristol Old Vic. At present the Bath office is involved in several country house projects in Somerset, in restoring an entire Bath crescent, in advising on Weston Super Mare Town Hall and alterations and extensions to several Oxford Colleges.

The recycling of commercial food waste has stepped up a gear due to an innovative new company based in Ringwood, Hants, Eco Food Recycling Ltd. Set up by co directors Simon Heaps & Andy Jones. Eco Food Recycling, registered with the Environment Agency as a waste carrier, is celebrating their first full year in business and deal with the collection and 100% recycling of commercial food waste. Although they are, as yet, only a small company they are making a huge impact in the field of food waste recycling. In the first month of trading, Eco Food Recycling recycled just under three and a half tonnes of waste; by December this had risen more than ten-fold to nearly 38 tonnes … and the business continues to grow. Since the turn of the year the growth rate has continued and August 2011 saw nearly 300 tonnes of food waste being diverted from landfill and fully recycled.

CSIP IN the high-tech field of underwater manipulator arms, CSIP Ltd is poised to make a pioneering splash. The Weymouth company is the first in the world to develop an oil-free electronic arm and, although not yet officially launched onto the market, it’s already causing ripples of excitement. Remotely operated vehicle (ROV) users are already offering opportunities for the new arm to be attached to their equipment to see how it works, with a view to placing orders if they like it says, director Simon Gilligan. “That’s not exactly what you call precise marketing,” he smiles, “but there’s people around here who are experts with this sort of stuff and they’re all really excited about it.” CSIP, specialises in remote controlled systems for hostile environments, such as ROV design and maintenance and the design and manufacture of underwater manipulator arms.

“However, they tend to leak. That’s a pain from an operational point of view because you’ve got to pull the vehicle out of the water and fill them back up again. “Environmentally it’s a pain because hydraulic oil and the environment are not particularly happy bedfellows, especially if you’re operating in fresh water like a reservoir, at the face of a dam, for example. “Generally speaking, you’re not allowed to put a hydraulic arm into fresh water so we’ve developed a range, the first ever, which have one-atmosphere housing. By that I mean there’s no oil inside and you can put them into fresh water and know absolutely that there’s not going to be any leakage.” It’s a technical achievement which Simon believes has got fantastic potential, but it’s not the only innovation from CSIP, which has 14 staff based in two units on the Granby Industrial Estate.

It was the first company to design an underwater electric arm and has now a full range which have been sold to laboratories, universities and ROV companies, recently developing a strong 15Kg small five-function electric arm with up to 50kg (110lb) jaw closing force and able to carry 25kg (55lb) horizontal at full extension (850mm).

A subsidiary of the French ECA SA, a global specialist in the design and manufacture of autonomous and remote controlled unmanned vehicles and land, naval and aerial simulation, CSIP was created in 1980, initially to service the Royal Navy’s then fleet of remote controlled mine disposal systems. Although those systems have now been overtaken by new technologies, CSIP has become a more commercial concern, designing and manufacturing underwater vehicles for more than 14 navies worldwide and industrial customers in offshore and oil and gas activities.

It’s other new product is a hybrid vehicle on tracks, which can be attached, underwater, to a ship’s hull and be driven along it like a remote controlled toy car. CSIP is breaking new ground in the attachment method. “There are hull crawling vehicles which stick themselves on using magnets, which is all well and good until you find an obstruction or something and it falls off - and they’re slow,” explains Simon.

“Our crawlers use thrusters to push them against the hull, which is very powerful and mean they stay on in much more difficult conditions, a higher current for example. We think it’s a much better solution.” Obvious applications include inspections and cleaning, and CSIP is currently developing a system which combines the two operations, something it expects to be particularly welcomed by commercial shipping. “It’s a sector which loses an enormous amount of money every year because of all the various growths which can stick to the hull,” reveals Simon. “If you can clean the hull regularly you can save a fortune in fuel so there’s a real economic advantage to using these. “The same can be said for any navy worldwide. Most are not like commercial ships which tend to be in port for as little as possible. Naval ships tend to dock for a couple of months and get all sorts of growth on them. If you can clean them cheaply and effectively without having to use divers then that’s a financial incentive.” Again, there is a lot of interest in the new hull crawlers, which Simon reckons are “pretty cool”. He reports that CSIP has quoted for several and sold two - and they’re not on the market yet. All that remains to do are a few finishing touches to the cleaning system. It’s all very encouraging, he acknowledges for the company which has not remained untouched from the harsh economic conditions.
