SAIPAN’S TEPPANYAKI EXPERIENCE

By Jackie Cahill Fire, culinary acrobatics, singing and delicious food — what more could you want from a night out on the town? At Mai Teppanyaki, located in Saipan’s Fiesta Resort & Spa, restaurant goers can enjoy more than just a fine dining experience. The restaurant’s name comes from the Japanese teppanyaki-style dining — also known as hibachi-style — where food is prepared tableside on large iron griddles. In fact, in Japanese teppan means metal plate and yaki means grilled. The dining experience begins as soon as guests sit down and are offered a warm hand towel — so luxurious. foie gras, fresh lobster, tiger prawns and the recently added tomahawk steak,” says Wendi Herring, general manager at Fiesta Resort & Spa Saipan. “I love the foie gras and have never had it prepared in this manner before. It’s a must try!” Patrons can also enjoy drinks from the restaurant’s full-service bar. Next, the show begins. Throughout the meal, master chefs perform show-stopping tricks for guests. “Our talented chefs provide a memorable dining experience by not only preparing a fabulous meal right before your eyes but also entertaining you with their skills and friendly service,” Herring says. “I admire and appreciate our hardworking chefs who consistently deliver a great product with both smiles and skills.” In order to become a chef at Mai Teppanyaki, rigorous training is needed, Herring says. “Most of our chefs have at least three years of experience and expertise with teppanyaki and were trained by Executive Chef Sakai when under DaiIchi, followed by Chef Imura from DaiIchi Tokyo after becoming Fiesta Resort & Spa Saipan. New chefs are currently being mentored by our section head.” With all it has to offer, Mai Teppanyaki is the perfect place for special occasions such as birthdays and anniversaries. Chefs and waitstaff will even serenade those celebrating, singing in perfect harmonies with a guitarist by their side. “We always come here for our anniversary,” says Richard Brooks, who visited the restaurant with his wife Grace in honor of their wedding anniversary. “My favorite memory was spending my boyfriend’s birthday there,” Herring says. “It was absolutely fantastic!” Mai Teppanyaki isn’t just for celebrating special events. For any in search of a memorable dining experience with high quality dishes, Mai Teppanyaki certainly fits the bill.

NMI LIBERATION DAY 2019 By Wayne Chargualaf
The Northern Mariana Islands will hold its 73rd Liberation Day festivities from June 27 to July 6 at the Garapan Fishing Base. Featuring food, drinks, carnival games and live entertainment, the celebration marks the 75th anniversary of the Battles of Saipan and Tinian. According to the National Park Service — the overseeing agent for American Memorial Park, which opened in 1994 to commemorate the 50th anniversary of the battles — the Marianas Campaign was the most decisive campaign in the Pacific theater, cutting off vital Japanese supply and communication lines. The war with Japan ended 14 months after American forces secured the islands. Along with these epic World War II battles, this year’s celebrations will also commemorate the strength and resiliency of the NMI in the aftermath of Typhoon Mangkhut and Super Typhoon Yutu, which ravaged the islands late last year. In response to this challenge, the private and public sector — including hundreds of military personnel — joined together to help the region recover from the record-breaking storm. “Marianas Strong,” the motto that became a hashtag and a rallying cry as the islands worked its way back onto its feet, also became the theme for this year’s Liberation Day.

“The Marianas has remained resilient in the face of great change,” Saipan Mayor David Apatang says. “From the liberation of Camp Susupe, to our fight for selfdetermination, to the creation of a Commonwealth in political union with the United States and through some of the worst storms on record, our people overcame the greatest odds in order to build a unique community that is rich in culture and stronger than any typhoon.” The Liberation Day parade will begin on July 4 at 2 p.m. and feature a competition for best float. Prizes will be $3,000 for first place, $2,000 for second place, $1,000 for third place and $500 for fourth place. The festivities kicked off with an opening ceremony at the Liberation Carnival grounds at Garapan Fishing Base on June 27 at 6 p.m. Live entertainment will be provided throughout the festivities by performers who run the gamut from hip hop to cultural dance. Carnival-goers can look forward to performances by artists such as the Man Antigu and Refaluwasch Warriors cultural dance groups, island music artists Uprooted and rapper Fakiezero. “We would like to invite all the family, friends and tourists of the NMI to our Liberation Day Festivities,” Liberation Day committee Vice Chairman Shayne Villanueva says. “We have prepared a great line up of entertainment.”

Healthy mind, healthy body THE POWER OF A MEDITATION PRACTICE
By Jackie Cahill Find a quiet and peaceful area. Sit in a relaxed position — it could be in a chair, on the floor, on a soft cushion — anywhere that feels most comfortable. Straighten your back and place your hands comfortably on your lap or knees. Look around, making yourself aware of your surroundings; then slowly close your eyes. Bring your attention to your breath. Count one as you breath in, two as you breath out. Breath in — one. Breath out — two. As your mind begins to wander gently bring your attention back to your breath. Breath in — one. Breath out — two.
Meditation is an ancient practice that for many conjures an image of Buddha sitting under a Bodhi Tree lost in introspection. However, a meditative practice does not need to be religious in nature and can be done in just a few minutes a day. Science has proven a daily meditative practice provides numerous health benefits. According to the Mayo Clinic, meditation contributes to improved emotional well-being through stress-reduction, decreased negative emotions and increased self-awareness, creativity, tolerance and patience. Not only is meditation proven to be beneficial for mental health, it may also help with the treatment of chronic conditions. According to Allegra Learning Solutions, which offers a Certificate in Meditation through Northern Marianas College, “Evidence of meditation’s health effects has been well documented: the practice offers improvement in the symptoms of various disease conditions in addition to the experience of a deeper spiritual connection.” Some research suggests meditation

may help people manage diseases such as asthma, cancer, heart disease, tension headaches, irritable bowel syndrome and more, according to the Mayo Clinic. With all its health benefits, incorporating a meditation practice into your daily routine is a no brainer. So, where should you begin? Most scientific studies recommend meditating for 15 minutes a day, but even a 5-minute meditation is a good place to start. There are different types of meditative practices, but each share the same general characteristics — focused attention, relaxed breathing, a quiet atmosphere, a comfortable position and an open attitude. Practice a variety of meditations to find which one is best for you. Below are a few suggestions to help get you started. Go easy on yourself and don’t be upset when your mind wanders — this is natural and happens to even the most experienced meditators. Remember, the aim of meditation is to encourage overall well-being and when that is your focus, you will surely reap the benefits.

Guided Meditation Guided meditation is perfect for beginners since, as the name suggests, a teacher or guide walks you through the meditation. There are many apps and YouTube videos with free guided meditations available for users. Try the Calm and Headspace apps, as well as the Great Meditation YouTube channel.
Mindfulness Meditation Mindfulness meditation is about bringing your focus into the present moment. Fixations on the future — where will I ever find the time to finish this work project? — and the past — my co-coworkers must think I’m an idiot for saying that — lead to increased stress and anxiety. Mindfulness meditation helps us to focus on the here and now, recognizing we cannot change the past or predict the future. The breath awareness meditation at the start of this story is a powerful mindfulness meditation, but you can practice mindfulness in any of your daily activities. When you’re eating breakfast, for instance, focus on what you are eating — the taste, the smell, the texture, each bite, each chew — this in and of itself is a mindfulness meditation practice.
Mantra Meditation In mantra meditation the repetition of a word or phrase helps to quiet the mind. By saying — either aloud or in your head — a chosen word or phrase, you trick your mind into quieting other thoughts. The repetition of the word "om" — one of the most spiritual sounds in Hinduism — is largely popular for this type of meditation, but you can choose any sound, word or phrase. Other examples include the sounds “mmmm” and “aaaaaa” or the phrase “I am that I am.”
Visualization Visualization meditation is done by focusing on an image. Begin by closing your eyes and bringing a certain image to mind — this can be anything, a beach, a room, a table. Focus on your senses during this meditation. What does the image look like? What does it smell like? How does it feel? As other thoughts arise, gently pull your self back to the image and clear all other thoughts from your mind. JULY 2019 13

EASY VEGETABLE PASTA SIDE It’s barbecue time all year round in the Northern Mariana Islands, but there’s something about July that really calls for grillin’ and chillin.’ While almost any sort of meat or vegetable will do well on the grill, a barbecue is nothing without some tempting side dishes. On Saipan that means rice and sweet corn for sure, but it’s okay to shake it up a little with a side dish that can be prepped ahead of time, like this one.
INGREDIENTS 16 ounces rotini pasta 1 tablespoon vegetable oil 1 cup grape tomatoes, halved 1 yellow bell pepper, diced 1/2 medium-sized red onion, thinly sliced 1 medium broccoli crown, cut into bite-sized pieces 3/4 cup Italian dressing Salt and pepper, to taste
DIRECTIONS 1. Bring a large pot of water to a boil. Cook the pasta according to package directions until al dente. 2. Drain the pasta and then rinse under cool water. Transfer the pasta to a large serving bowl and toss with vegetable oil to prevent sticking while you prepare the veggies. 3. Add prepped veggies to pasta. 4. Pour the Italian dressing over the vegetables and pasta. Use a wooden spoon to gently toss everything together until well coated in the dressing. 5. Season with salt and pepper to taste, if desired. 6. Cover and refrigerate until ready to serve. To personalize, you can add grated cheese, chopped bacon and hot peppers. FRIENDS THAT SWEAT TOGETHER
CROSSFIT-STYLE WORKOUTS IN THE NMI By Wayne Chargualaf “One day my friend Josh said, ‘Try out this class called CrossFit, it’s a pretty tough workout,’ and when I tried it out it pretty much put me on my butt,” Jose Quan, CrossFit-certified trainer and part-owner of Get Fit CNMI, says. “It was really hard. Then I thought, ‘Just think how much I’d grow from this if I just stuck to it.’” That was in 2009. Quickly becoming addicted, Quan became a certified CrossFit trainer in 2011. “When I was still in college, my cousin Pat asked me what I want to do after college, and I said I thought it would be really cool if I could bring CrossFit to Saipan,” Quan says. Shortly after returning home, Quan’s cousin purchased exercise equipment and the rest, as they say, is history. CrossFit changed the fitness industry when it hit the scene in the early 2000s. Previously, body building concepts and methodologies dominated fitness. Functional fitness — exercise programs based on complex movements one might encounter in activities such as sports, manual labor, outdoor living, etc. — began to grow in popularity in the 1990s. CrossFit then took functional fitness, integrated exercises and movements from disciplines such as gymnastics and Olympic weightlifting and used them to create ever-
changing workouts called WODs — short for Workout Of the Day — which are designed as brief but highly intense exercise circuits. “Trends such as CrossFit draw in people to feel they are part of a world-wide community,” Derek Cutting, owner of Saipan gym Latte Built, says. Cutting has seen both sides of the coin, being an experienced bodybuilder whose gym features a CrossFit-like class called Barbell Club that is taught by Joey Tudela, a CrossFit Level 1-certified trainer. “Unlike bodybuilding — typically a solo training type mindset — CrossFit hosts athletic competitions that test one’s strength, endurance and grit,” he says. “Bodybuilding is still a rigorous program but the end goal is different than a CrossFitter.” Tudela says that there’s also a curiosity and novelty factor that draws people to their Barbell Club class. “Competitions are seen on CNN, ESPN, YouTube and all the social media outlets,” he says. “People may be looking for something fresh and new that can help them reach their goals." Many would say that although CrossFit created a unique and effective program for overall fitness, it’s thanks to CrossFit’s emphasis on measurable achievement — participants have the ability to track their gains on a

whiteboard openly visible to the entire gym — and the social element — group workouts where participants bond through shared suffering and accomplishment — that a genuine fitness craze was born. Although there is yet to be an officially affiliated CrossFit gym — affiliated gyms are known as “boxes” in CrossFit-speak — in the Northern Mariana Islands, there are a number of CrossFit certified trainers who bring the CrossFit experience to wherever they can find sufficient space and equipment. But if a gym or workout program doesn’t have the name “CrossFit” in its name, is it really CrossFit? “That’s a good question,” Quan says. “Truthfully speaking, the NMI has never had a certified CrossFit gym, but the thing is that all of our trainers are CrossFit certified.” Although many gyms may have highintensity group fitness programs taught by CrossFit-certified trainers, CrossFit is extremely protective of its brand and requires fees and various other requirements before it allows a gym to carry the CrossFit name. However, it does not exert the same control over its certified trainers. A trainer may carry their CrossFit certification anywhere they want and advertise it just as they would any other training credential. They can also, of course, lead CrossFit workouts since they are qualified to do so. “They can follow the WOD on the CrossFit website or any of the other WODs that have been built up over the past 15 years,” Cutting says. “There are thousands of different workouts they can do.” Although it’s still relatively new to the Northern Mariana Islands, both Cutting and Quan say that interest in the programs designed and led by their CrossFitcertified trainers is only growing. “The CrossFit scene isn’t as big as it is in Guam or in the mainland United States,” Quan says. “But regardless of the size, you are still able to connect with individuals who are just trying to achieve a better lifestyle and who want to incorporate exercise into their daily lives.” Cutting says that part of the appeal of Tudela’s CrossFit-style program is the effect it has outside the gym as well. "Strength increases, mobility and mental toughness, these all lead to added confidence,” he says. “Not just with the movement patterns — the exercises — but also their own inner abilities in life.” Photos courtesy of Jose Quan
