Pet Sitting Goes Awry DEAR PAW’S CORNER: Last month, I agreed to pet sit for a friend while she and her boyfriend went on vacation. I did this for free because I love pets and want to see if pet sitting as a business is right for me. Bitsy, her 3-year-old cat, was a joy to care for ... the first week. On Monday of the second week, I came to take care of her and Bitsy was laying in the middle of the floor, lethargic. I scooped her up and took her straight to the veterinarian, who thinks she either ingested a toxic houseplant or spoiled food. After fluids and rest at the vet, Bitsy is doing much better. But my friend is angry with me because the vet’s bill is very high. She says it’s my fault that Bitsy got into her houseplant. I followed my friend’s instructions to the letter. Why is it my fault? What should I do? Sign me — Confused in Denver DEAR CONFUSED: I’m glad Bitsy is doing better. You did the right thing by taking her in for medical care. My advice is to give your friend a little time to process everything that happened. You’ve explained your side already. Hopefully with a little breathing space she will be able to think more clearly and then the two of you can talk and decide what to do. When you open your pet sitting business, take this as a lesson learned. Spell out terms very clearly, stating that the pet owner is responsible for any vet bills incurred due to illness or injury. Leaves to Treasure Memories of times and places from my childhood flood my mind this time of year whenever I toss on a light jacket and grab a rake. I remember jumping in piles of newly raked leaves on a Saturday morning, and the smell of burning them by the curb at day's end. It was legal to do that then, even in the city. "Sometimes it takes extra effort to motivate my family to do the constant raking, so we've turned the chore into a game," she says. "We estimate the number of bags we'll fill with leaves

in any given session. Afterward, we go out for ice cream — bragging rights and extra sprinkles on top of a scoop go to the best estimator. A simple game not only motives the kids to help, but it has become a great family tradition." A tasty take on turkey just in time for Thanksgiving

Perhaps no day is more synonymous with a certain dish than Thanksgiving is with turkey. As tasty as turkey can be, this flavorful fowl doesn’t find its way onto many families’ dinner tables unless it’s Thanksgiving day. Secret family turkey recipes may reign supreme in some households, but holiday hosts with no such resources can consider this unique recipe for “Holiday Turkey” from Andrew Schloss’ “Cooking Slow” (Chronicle Books). By slow cooking the turkey, cooks can ensure it’s evenly cooked Holiday Turkey Makes 15 servings 1 fresh turkey, about 15 pounds, preferably free-range 1 tablespoon olive oil 1 quart apple cider 2 teaspoons dried poultry seasoning Coarse sea salt and freshly ground black pepper

Remove the giblets from the turkey and discard (or save for another use). Rinse the turkey inside and out and pat dry with paper towels. Rub it all over with salt and pepper. Refrigerate, uncovered, for at least 12 hours and up to 24 hours. During that time, the surface of the turkey will become visibly dry and the skin will tighten; this encourages a nice crisp skin on the finished bird.

Remove the turkey from the refrigerator 1 hour before you plan to start roasting. Preheat the oven to 450 F. Put the turkey on a rack set in a large, flameproof roasting pan. Drizzle the oil over the top. Roast for 1 hour. Reduce the oven temperature to 175 F. Pour the cider into the roasting pan and sprinkle the poultry seasoning in the liquid. Continue roasting until an instant-read thermometer inserted into the thickest part of a thigh (but not touching bone) registers to 170 F. Transfer the turkey to a carving board, tent loosely with aluminum foil, and let rest for about 15 minutes (see tip). Meanwhile, skim the fat from the surface of the liquid in the pan. Put the roasting pan over two burners and bring the pan drippings to a boil over high heat. Cook until the juices reduce and thicken slightly, enough to coat a spoon, about 10 minutes. Taste for seasoning. Carve the turkey and serve with cider pan juices. Resting tip: Slow-roasted meats need far less resting time (pretty much none) than those that are traditionally roasted. The reason for resting meat that has been roasted at a high temperature is to allow juices that have collected in the cooler center time to migrate back into the dryer (hotter) exterior sections after it comes out of the oven. Because slow-roasted meats are cooked evenly and a temperature that keeps most of the

juices in place, a resting period is largely unnecessary. A brief resting time does allow the meat to become a little firmer as it cools, making it easier to carve.

Can you relate? When it comes to retirement, there is no one way to structure or plan

for your retirement. The recipe that is great for you may not work at all for another family member, your best friend, or your neighbors. The goal with retirement planning is to work the “recipe” for your specific situation to achieve the retirement lifestyle that is a good fit for you and of course, your spouse if you are married.

So, what are the main ingredients that really must be in every retirement plan? Yes, I first said that everyone’s recipe is likely to be different, however, there are certain elements of every retirement plan that must contain three specific elements: safety, liquidity and growth for the future. Within those three elements is where the plan can be dramatically different for each person or couple. Everyone has a different perspective when it comes to taking risks or preferring safety. By properly implementing a plan that contains all three elements, you are stacking the deck in your favor for a successful retirement. The major difference from one person’s plan to anothers is the amount of money that you put into each of these three elements. The challenge with asset placement within these three elements is that you cannot achieve all three with a single asset placement. However, you can typically get two out of three. Let’s start with this comment: every choice you make as to where you should place your assets will have both pros and cons. It’s up to you to weigh each choice with the pros and cons and decide which is most comfortable for you. In the safety category your choices are bank or credit union money, backed up by the FDIC or NCUA, insurance products that are backed by the financial strength and claims paying ability of the insurance company. Another option is US government securities like T-bills and bonds that are backed by the full faith and credit of the United States. A ten-year US government bond is currently paying only 1.6% (yahoo finance, n.d.), as of the time of this writing. In this category, you will get safety and a certain amount of liquidity, but you will not get much growth. Therefore, although the safety category is critical to a retire-ready recipe, you will not

have much in the way of growth at the current rates of interest, which are historically very low. Lastly, there are insurance-based products that do offer the ability to earn much higher rates of return than the bank, credit union or the government securities. Some of these options are very liquid as well. There are important details to consider when this type of option is recommended to you. Moving on to category number three - growth. This is a very important element to have in your plan. These are your investments in the stock market. I will concede that you can also invest in bonds, however, the challenge with bonds is that there face value will go down as interest rates rise. As the Fed is likely to soon start its tapering plan to reduce the $120 billion per month that they have been pumping into the economy to keep rates low to stimulate the economy, this will likely lead to the Feds raising interest rates in 2022. The Fed will raise rates to keep inflation in check. So, it won’t be much of a surprise to see interest rates going up which will drive down the face value of bonds. We prefer to use bond alternatives for money that historically would be recommended to be in bonds. In the growth category, you will also have liquidity as you can sell your investments to get money out of the market, however, you will not have safety in this category. So, there you have it! A retire-ready recipe that includes three main ingredients: safety, liquidity and growth. This is how we customize a retireready plan. ost of living is a significant component of financial planning. The cost of living may dictate where people live and work, and a high cost of living can influence how individuals spend their free time. Data from Statistics Canada indicates that consumer prices rose 4.1 percent and 5.3 percent in August 2021 in Canada and the United States, respectively. As Canadians headed to the polls in late September, a survey from Abacus Data found that 38 percent felt reducing their cost of living was a key factor affecting their vote. Similarly, a 2020 survey from TD Ameritrade found that 47 percent of Americans feel that cost of living is the biggest threat to their financial security and long-term investments. It’s worth noting that the survey was conducted prior to the pandemic. Since the onset of the pandemic, cost of living has increased considerably. Though the fight against a rising cost of living can feel like an uphill battle, individuals can take steps to prepare for such increases. • Apply lessons learned during the pandemic. A recent Pew Research Center analysis of U.S. government and Eurostat data found that roughly 9.6 million workers in the United States lost their jobs in the first three quarters of 2020. That period coincides with the onset of the COVID-19 pandemic. When forced to confront sudden and unexpected job losses, millions of individuals learned how to get by on less income. Cost-saving measures adopted during the pandemic can be continued or reimplemented, helping individuals to combat higher energy costs and other rising expenses.

• Look for a new job or fresh income streams. A rising cost of living is a concern for people from all walks of life, but it may be especially concerning for retirees or individuals with costs like childcare that can be hard to pare back. In such instances, individuals can look for new a job or fresh income streams. According to the Q3 2021 CNBC | Momentive Small Business Survey, 50 percent of small business owners say it’s gotten harder to find qualified people to hire compared to a year ago. And nearly one-third of survey respondents indicate they have open roles they have not been able to fill for at least three months. Individuals can explore local employment opportunities in an effort to find a new, more lucrative job that can help them combat a rising cost of living. Others who want to remain in their jobs can look for part-time work to supplement their existing income. • Consider relocating. The pandemic forced many companies to transition from in office working to remote working overnight. That trial by fire could have lasting results. A 2020 survey of 317 Chief Financial Officers and leaders in the finance industry found that 74 percent will move at least 5 percent of their previously on-site workforce to permanently remote positions after the pandemic ends. The survey, conducted by Gartner, Inc., also found that nearly one-quarter of respondents will move at least 20 percent of their on-site workers to permanently remote positions. That could make it possible for millions of working professionals to relocate to regions with a lower cost of living than their current towns or cities. The cost of living might be on the rise. ❂ Biscuit Box The English spoken in England can sometimes confuse an American because the same word can mean different things in the two countries. Almost every tourist learns that in England a “lift” is an elevator. But who has been warned that an English “biscuit” is what an American calls a “cookie,” and that an American biscuit, also called “shortbread,” is a British scone? Several English silver-plated biscuit boxes were sold at a Neal auction recently along with labeled rectangular wooden boxes and covers, and decorated tin boxes filled with loose cookies (biscuits) for the store. One of the silver boxes was made by James Dixon & Sons, a well-known Sheffield manufacturer that worked from 1804 to 1992. It is almost 11 inches high. Each of the shell-shaped bowls had a hinged, pierced flap that kept the heat and the biscuits in place when the sides were opened and became flat bowls to serve the cookies. The flaps are often missing when the biscuit box is sold. *** How can I clean the marble top on an antique chest? The chest is probably over 100 years old. There are some stains on the marble that look like some kind of liquid spilled on it. The easy way is to buy a commercial marble stain remover. You can also try a home remedy. Wash the marble top with dishwashing liquid and hot water, rinse well and dry thoroughly. Use a soft cloth or a bristle brush if needed. Then you can try one of the many do-it-yourself methods. Different solutions clean different types of stains. If the marble is a light color, try a mixture of several tablespoons of 6% hydrogen peroxide and a tablespoon of baking soda. Mix into a thick paste, the consistency of peanut butter. Spread it in a 1/4-inch-thick layer on the stain. Cover with plastic wrap, tape the edges and let it dry for 24 hours. Use a plastic (not metal) spatula or a damp sponge to remove the paste, rinse and buff dry. Repeat the process if necessary. Recipes for the mixture use 6% to 12% hydrogen peroxide. Some add a little ammonia

by Jennifer Coates When you have grown up in New England, the ocean has a certain “gravitational pull” on your heart, your soul, and your appetite! For Rhode Island native Peter Caswell, that pull has informed nearly every decision he has made. Peter grew up digging quahogs with his father off the plentiful waters of our shores and that family legacy continues with his own young sons. No matter where he roams, he always comes back to the sea. In 2016, Peter followed a lifelong dream and combined his passion for the “fruits of the sea” with his talent for cooking to create his own shellfish company, aptly called Rhode Island Shellfish Co. What started as a way to bring Peter’s culinary skills to life and to satisfy his love of cooking evolved into this now enduring venture. Peter built a commercial kitchen which he affectionately named “Annie’s Kitchen” (after his beloved mother who taught him everything he knows about cooking) and then received a USDA “grant of inspection” so he could sell his homemade shellfish dishes wholesale. It is here where he creates gourmet masterpieces with shellfish of all kinds, with a special emphasis on his favorite, locally- sourced quahogs. Peter has long felt that Rhode Island’s lowly quahog has taken a proverbial “back seat” to the increasingly popular oyster. It has become one of Caswell’s personal missions to revitalize the quahog and to showcase its many varied preparations, including his famous “Stuffies.” As a proud Rhode Islander, Peter wholly supports local quahog harvesters. He uses the freshest ingredients and “straight-off-the-ship” clams for all his dishes. Using

I feel sorry for pears. They're coming into season, all gloriously ripe and sweet, but they get overlooked because everyone is all agog about pumpkins and cranberries this time of year. May I suggest we make room on our autumn plates and palates for the pear? Nothing is more transcendent than biting into a perfectly ripened pear, one so juicy you have to eat it leaning over the sink. Divine! Nothing is better — except maybe this chutney. Wait! What the heck is chutney? Chutney comes from the East Indian "chatni," meaning "to eat with appetite," and refers to a condiment that's like a savory, sweet and sour preserve. It's a mix of chopped fruits, vinegar, spices and sugar cooked into a scrumptious chunky spread. Chutney is served as an accompaniment to chicken, turkey and pork, as well as dishes like Indian curries. But chutney goes with so many things! It's delicious added to sandwiches, especially chicken or turkey salad for some unexpected zing. Try it with roasted sweet potatoes or squash. But my personal fave is putting some on a sharp cheddar grilled cheese sandwich, which is ridiculously delicious. Pear chutney is an autumn staple to have on hand as an appetizer because it's a major upgrade to any cheese board and makes amazing crostini with a little brie, goat cheese or cream cheese (pictured).

Mark Harmon’s character, Leroy Jethro Gibbs, was originally introduced on the military legal series “JAG” back in 2003 before heading up the spinoff of “NCIS.” He probably never dreamed the show would still be a ratings success almost two decades later, but his contract for the current season stipulated he would only return in a limited capacity, according to the Hollywood Reporter. In the fourth episode of CBS’ “NCIS” this fall, Gibbs told special agent Timothy McGee (Sean Murray), “I’m not going back home” and made the decision to stay in Alaska. Since Gibbs narrowly survived a boating explosion last season, it was certainly understandable. Harmon remains connected to “NCIS” as an executive producer, and the show has brought in Katrina Law and Gary Cole as regulars to help fill the vacancy. “NCIS” showrunner Steven D. Binder offered some hope to Gibbs fans: “Mark continues to be an integral part of the fabric of the show. ... Mark Harmon family really enjoyed watching “The Mandalorian,” so we have high hopes for this “Star Wars” series as well. — M.G. Ewan McGregor will return to his titular role in the upcoming “Obi-Wan Kenobi” series on Disney+, but all we know so far about a premiere date is “sometime in 2022,” according to many online sources. The show will be set 10 years after the 2005 blockbuster movie “Star Wars: Episode III — Revenge of the Sith.” Hayden Christensen also is inhabiting the role of Darth Vader/Anakin Skywalker opposite McGregor. With the critical and financial success of “The Mandalorian,” Disney+ was quick to line up several more “Star Wars” series in development, including “Ahsoka,” with Christensen and Rosario Dawson, “Rangers of the New Republic” and “The Book of Boba Fett,” which will be available to stream this December. The unique role locally owned small businesses play was never more apparent than during the pandemic, when many such establishments were forced to close, reduce their hours of operation or downsize their offerings as consumers were urged to stay home and prevent the spread of the COVID-19 virus. In the wake of those changes, communities across the country soon realized how vital local businesses are to their local economies. Job creation and tax revenue are two ways that locally owned small businesses support local economies. These businesses also make communities unique and serve as a source of pride for residents, which underscores the importance of supporting them as the world slowly emerges from the pandemic. Businesses big and small look to the holiday season as a great time to increase their revenue. Big business gets a significant boost from Black Friday, which occurs on the day after Thanksgiving and marks the unofficial opening of the holiday shopping season. But consumers who want

to support locally owned small businesses as they start their holiday shopping can look to Plaid Friday. Plaid Friday was initially organized in Oakland, Calif., in 2009. Back then, Plaid Friday, which takes place on the day after Thanksgiving, was intended to serve as a more laid back alternative to Black Friday, a day that’s become as notorious for incidents threatening public safety as it has for great deals. Plaid Friday efforts promote locally owned small businesses and encourage residents to patronize these establishments as they begin their holiday shopping. Since 2009, Plaid Friday has caught on outside of Oakland, and many communities now embrace it. Many small business owners host Plaid Friday sales, and some even offer extra discounts to customers who wear plaid, which has come to symbolize support for small, independently owned businesses.
