Mine is of shampoo. A green bottle with a bright, herbal scent. ara Goldin admits she had some not-so-healthy habits back in the mid-’90s. The busy mother of four was running e-commerce and shopping for AOL and relying heavily on soda to power her through her high-stress days. “I could drink 12 cans a day. I hated water, and I rationalized that at least soda contained a bit of it,” she says. Eventually, a 50-pound weight gain and cystic acne made her reevaluate her diet. When she eliminated soda, the pounds came of and her skin cleared. “I realized that breaking the sweet habit created happiness by getting me back into balance in the way I felt and looked,” she says. That revelation led to the creation of Hint lavored waters, which provide hydration
minus sugar and sodium. With high-profile investors like John Legend, Hint took of, and Goldin has since been named one of Fortune’s Most Powerful Women entrepreneurs. he idea of bugs hanging out on your face is the stuf of nightmares. But that’s what’s happening, at least on a microscopic level—and it’s actually the dream scenario. Your gut has its microbiome—the 100 or so trillion bacteria lining your GI tract that are involved in everything from brain function to your weight—and now researchers have found that skin houses its own special bacterial blend vital to its health. About a trillion strong, the microbes on skin difer from those in the gut as well as from person to person. “Just as cacti grow naturally in Arizona but not the Midwest, every bacteria has an environment where it thrives,” says dermatologist Whitney Bowe, M.D., the author of The Beauty of Dirty Skin.

In the past, experts thought of these organisms mostly as foes or benign friends. Now they’re discovering all the good that bacteria do, like signal cells to perform key tasks or turn genes on or of. For example, speciic strains tell cells to produce the fats and ceramides needed to maintain the skin barrier. That’s crucial for keeping moisture in and irritants out, says dermatologist Jefrey Dover, M.D. And recent research from the University of California San Diego found one strain that produces a compound to help suppress cancer cells. But there are bad apples too. Certain bacteria trigger inlammation and play roles in acne, rosacea, eczema, and psoriasis. Obliterating them isn’t the answer—even if you could do so without also wiping out all the beneicial microbes. “No [one type of ] bacteria is good in abundance; balance is key,” Dr. Dover says. So is diversity; the more and varied the strains, the healthier the skin. When one pathogenic bug dominates, trouble ensues. In those with eczema, it lares when a common strain of Staphylococcus aureus gains a foothold over others, Dr. Bowe says. When the bacterial balance is of, “some patients may experience gas or bloating, but for others the sole manifestation is in the skin,” she says. A healthy gut microbiome also maintains a tight intestinal barrier, which keeps toxins quarantined. An imbalance, however, makes the gut leaky, releasing them into the body and triggering inlammation all over, Dr. Bowe says. The gut-skin link may go beyond immunity. “The literature is showing efects [of probiotic supplements] on hydration too,” says Gregor Reid, Ph.D., the chief scientist at Seed, which has developed a probiotic supplement.

Avoid harsh antibacterial soap and hand sanitizer, and never scrub skin aggressively. “It disrupts the terrain where bacteria thrive,” Dr. Bowe says. Instead, use cleansers and moisturizers with niacinamide or ceramides to bolster your barrier. Get a little dirty Our world is way too clean, Dr. Bowe says. Because we indiscriminately kill bacteria with cleaning products, we’re not exposed to many of nature’s microbial goods. Researchers in China found that those who live in megacities have less diverse skin microbiomes, which may explain why urban areas see more skin inlammation. “You don’t need to never shower,” Dr. Dover says. Just limit cleansing to once a day. Try microbiome-targeting skin care If skin is generally healthy

your routine, Dr. Bowe says. But if you have sensitive skin, dryness, or acne, biome-centric products could help. They do this not by worming their way from the GI tract to the skin but by changing how your gut microbiome functions in ways that inluence skin or even by releasing beneicial metabolites that make it to skin via the bloodstream, Reid says. 30 minutes, plus soaking 2 cups bulgur 1⁄3 cup reduced-sodium soy sauce 1 tablespoon plus 1 teaspoon pomegranate molasses 1 tablespoon plus 1 teaspoon sweet soy sauce 3 tablespoons olive oil ½ cup diced sujuk sausage or salami 3 tablespoons sliced scallions 1 tablespoon minced garlic 1 tablespoon minced ginger ½ cup thinly sliced brussels sprouts 3 large eggs, beaten 2 tablespoons enoki mushroom tops (1-inch pieces) 1 teaspoon toasted sesame seeds 1 teaspoon snipped chives
1. In a large bowl, cover the bulgur with 4 cups water. Let stand for 1 hour. Drain well. 2. In a small bowl, mix the soy sauces and pomegranate molasses. Reserve.

Pro tip: Some markets sell shaved or very thinly sliced steak. If you can find it, buy it—it will save you the step of cutting the meat.
1. In a shallow dish, mix the sambal oelek, sesame oil, sugar, sesame seeds, garlic, and ½ cup soy sauce. Add the steak; turn to coat. Cover and refrigerate steak at least 8 hours and up to overnight. 2. In a large pot, bring a gallon of water to a boil. Add the quinoa and stir until it starts to float and the water returns to a boil. Cook for 10 minutes, then drain through a fine sieve. Let cool. 3. In a wok or a large skillet, warm ¼ cup oil over high heat until it shimmers. Drain the steak (discard marinade) and add it to the hot oil. Stir for 3 minutes. Transfer steak to a plate. Wipe out the wok. Add the remaining ¼ cup oil and heat until it shimmers. Add the green beans and stir for 1 minute. Add the cooked quinoa and stir for 2 minutes. Add the carrots and edamame and toss for 2 minutes. Add the steak, kimchi, and remaining 2 tablespoons soy sauce and stir for 5 minutes. Divide among six bowls and top with the pistachios and kimchi.

Jordan makes his rice grits yearround, using whatever vegetables with are in season. This is his favorite combo for fall. If he finds porcini mushrooms, he adds them by shaving them thin over the top of the dish. 4 tablespoons olive oil 3 garlic cloves, thinly sliced 1 onion, 1⁄2 thinly sliced, 1⁄2 finely diced Kosher salt 1 pound yellow squash, thinly sliced 1 pinch saffron 1 head Romanesco cauliflower, cut into bite-size pieces 1 cup (7 ounces) rice grits (see note) ¼ cup dry white wine ½ ounce Parmesan, grated, plus more for serving Cherry tomatoes, halved, for garnish Tarragon leaves, for garnish Lemon wedges, for serving

1. In a saucepan, heat 1 tablespoon oil over medium heat. Add the garlic, sliced onion, and a pinch of salt. Cook until translucent, about 5 minutes. Add the squash, saffron, and 11⁄3 cups water. Bring to a boil over high heat and cook until the squash is tender, about 10 minutes. Continue cooking until all water is removed. Puree in a blender until smooth. 2. Meanwhile, bring a large saucepan of water to a boil and season with salt. Add the Romanesco and cook until bright and crisp-tender, about 2 minutes. Drain and reserve. 3. In a large, deep skillet, heat the remaining 3 tablespoons oil over medium heat. Add the diced onion and a pinch of salt and cook, stirring often, until tender, about 3 minutes. Add the rice and stir until coated and lightly toasted, about 2 minutes. Add the wine and stir until it evaporates. Add 31⁄2 cups water. Bring to a boil over high heat, then reduce heat to simmer, stirring occasionally, until the rice is al dente, about 15 minutes. 4. Fold in the squash puree and continue cooking rice 2 to 3 minutes. Fold in the Parmesan. Season with salt to taste. Divide among serving dishes and top with the Romanesco, tomatoes, and tarragon. Squeeze lemon all over the vegetables, sprinkle with Parmesan, and serve.

And it’s a good thing she did, because I never would have found the little spot on my own. At the counter, I ordered a Southern-style meatand-three platter of baked chicken with collards, black-eyed peas, and sweet potatoes. And sweet tea, of course. Oh yeah, and cornbread. That meal! The chicken was so juicy, the collards naturally sweet, the peas plump and tender. But a truly memorable meal is not just about food for me: It’s the people who make it perfect. I ate with Enrika and chatted with the mother and son who cooked the food and own Sugar’s Place. They instantly made me feel like family. Every bite was tastier with their warm, openhearted welcome. atie Button still remembers the irst time she made pesto. She used whatever olive oil she had, and the sauce ended up inedible. “That was a big irst lesson in the importance of using diferent oils in diferent ways,” she says. Now she is a champion of the ingredient. “Olive oil from Spain is a favorite—it’s amazing,” says Button, who trained as a biomedical engineer and likes to experiment to ind ideal uses for the many types. She stocks her kitchens with single-varietal oils from Arbequina, Picual, and Oji Blanca olives. Button uses the mild and fruity Arbequina in cold sauces like mayonnaise and salsa verde. “Picual’s herbal and peppery notes are great for dressing salads or for inishing dishes,” she says. Oji Blanca is on the spicy, bitter side. It’s best to drizzle it on a hot dish, like pasta, because the high temperature mellows it out, Button says. The chef also works with blended oils. “Mixing the olives balances out the lavor,” she says. She orders cases of Molino La Condesa for her three Asheville, North Carolina, restaurants; it’s California Olive Ranch blends made from Spanish olives at home, where she drizzles mild olive oil over tomato toast for her older daughter, who’s not yet a fan of Oji Blanca’s spicy kick. Button laughs. “I know she’ll eventually learn to like it as much as I do,” she says.

Keeping empty blocks of time on your calendar is key to getting things done.
To further boost your productivity, eat your largest meal at lunch. By 10 a.m., your digestive system is operating at full capacity, Kshirsagar says. For the next four hours, your body is primed to turn a substantial, balanced meal into energy, keeping you fueled through the afternoon.
Create more white space Jotting down every errand, playdate, and phone call in your calendar might seem like a smart organizational move, but it can make you less productive, says Laura Vanderkam, author of the new book Off the Clock. Keeping lots of empty blocks of time on your calendar is what’s truly essential to getting things done. Free time feels shorter when it comes before a task you’ve logged, reports the Journal of Consumer Research. So if you have an hour before you need to leave for school pickup, you behave as though you have only 30 to 45 minutes of usable time. Feeling rushed is a productivity killer. “If too much of your day is blocked out, you might say no to something that would have been a great use of your time,” Vanderkam says. To create more white space, stop scheduling to-dos that don’t need to be done at a speciic hour, like going to the grocery store. Vanderkam also suggests calendar triage. “Once a week, look at what’s planned for the week ahead,” she says. “What should be canceled? What can be cut short? Give yourself more breathing room.”
Pass the oneminute mark Research shows that we work on a task for an average of just 40 seconds before we become distracted, says Chris Bailey,

author of Hyperfocus. “Our brains are typically resistant to starting something new, especially if the job is difficult or boring,” he says. “But once we do it for a few minutes, our concentration kicks in.” One way to get over the initial hump: If you don’t feel like working on something for an hour straight, don’t force it. Allot 10 to 15 minutes to the task, and go from there. “Chances are, once you pass the one-minute mark, you’ll keep working for longer,” Bailey says.
Give yourself an out “Breaks are crucial to being productive,” Bailey says. The trouble is, we tend to think that what we do during our downtime will be more restorative than it is. Take scrolling through Instagram, for example. Being the audience to other people’s lives doesn’t always feel relaxing in the end. Bailey says the best breaks have three key characteristics: You can do them without much focus, they’re things you truly enjoy, and they’re activities you don’t have to exercise control over. “Think about things that leave you feeling fully recharged, such as taking a walk outside, doing a favorite hobby, or playing a game with your child,” he suggests. Devoting 15 or 30 minutes to one of these rejuvenating activities every few hours will keep your mental abilities fresh and your productivity high.

With so many confusing and alarming reports about breast cancer, it’s tough to figure out what your risk really is. We asked top experts to help explain the latest facts behind the headlines—and discovered some very reassuring news. By Mirel Ketchiff The report:
Self-exams aren’t worth doing. ingers and moving in a circular pattern to check your breasts for lumps and other changes once a month is no longer officially recommended. “Self-exams weren’t getting patients diagnosed any earlier, which is key for reducing breast cancer mortality,” says Mariana Chavez Mac Gregor, M.D., of the University of Texas MD Anderson Cancer Center. Instead, the focus has shifted to breast health awareness, she says. “You should know what’s normal for you—the symmetry of your breasts, what the skin and nipples look like, and what they feel like,” Dr. Mac Gregor says. “If you know that, you’ll know if there’s something abnormal, like lesions or lumps.” (Continued on page 92)

On average, women have a 10 percent risk of getting breast cancer in their lifetime; a 4 percent increase in relative risk means the total risk is 10.4 percent—a pretty tiny change, until you hit the heavy category. Stick to two drinks or fewer a day to keep your odds low.

The best treatment for breast cancer is chemo. BREAK IT DOWN: More women with breast cancer can skip this once-
standard treatment, according to a new study. “Until now, we’ve known that women with hormonally driven breast cancer who are classiied as low-risk didn’t need chemotherapy, while women who were high-risk did. We weren’t sure about the intermediates. But a new trial called TAILORx found that most intermediates also got no signiicant beneit from chemotherapy,” Dr. Hamilton says. “The results will likely save 60,000 patients a year from receiving chemo.” That means avoiding many side efects, like damage to heart and lung cells, plus hair loss and nausea. It’s a big win for personalized medicine, Hamilton says. “We’re constantly developing new therapies, and now we’re getting better at determining who needs exactly which treatments.”

Most states are required by law to tell you if you have them, but you can also just ask during your appointment. That’s why some women get a second screening, like a breast ultrasound or an MRI. “But not all women with dense breasts need additional tests—only those with extremely dense breasts or certain patterns of density,” Dr. Morris says. Bottom line: It’s an individual decision your doctor will help you make.

You have to move with both sharp speed and elegant slowness in ballet. It’s a full-body workout that demands lexibility and strength. You are constantly pulling up through your core to maintain proper posture even as your muscles burn. You’re sweating. Your heart is pounding. And yet your mind empties as you embody the intricate combinations. When you’re completely in the moment, it’s as if you’re lying. I started dancing at 5 years old and have never stopped. I trained in ballet, modern, jazz, and tap but always stayed with ballet because it was the most physically and mentally challenging for me. I studied en pointe for 10 years but was never the textbook ballerina: My feet, ankles, spine, and hips weren’t lexible enough. I was never able to get my splits in second position. But I kept coming back to the barre with determination. During graduate school, while getting my master’s degree in dance education, I fell in love with contemporary ballet. Because it blends modern expression with classical technique, it allows for a breath of innovative artistry. I started to enjoy ballet purely for the art of it, the low, the momentum, the beauty. Now, as a wellness coach, I incorporate movement—dance and yoga— into my practice. I am also traveling the world, learning about how dance weaves through diferent cultures. Wherever I go, I ind drop-in ballet classes, and I hope to be at the barre even when I’m 95 years old.

Regular exercise can help reduce back pain, promote healthy weight gain during pregnancy, and reduce your risk of gestational diabetes, preeclampsia, or having a C-section, according to the American College of Obstetricians and Gynecologists. “Of course, you do need to take it a little slower with exercise and listen to your body,” says Diana Ramos, M.D., an adjunct assistant clinical professor in obstetrics and gynecology at the Keck USC School of Medicine. The greater the load, the greater the focus needed. As you start to train with heavier weights, this focus will be as important as your physical output in the lift. Your body can’t do it without the mind. There are two mental tactics that I use to build this focus. They’ve really been game changers when I go big with my lifts.
talking through the physical steps, even though I get some funny looks at the gym when I say them out loud. When I’m squatting with a heavy barbell— that’s anything over 200 pounds for me these days—I say “Big toe, big toe.” This reminds me to keep my feet gripped on the ground, which sets of the domino efect of turning on the inner thighs and glutes. Then, on my descent into the squat position, I say “Up” to set the intention of where that barbell ultimately needs to go. Finally, I cue “Chest up, hips through” to dial in my body’s position through the inish line. 2. Take an ego trip! Adrenaline and conidence will be assets for you here. When you step up to a challenging weight, put on that metaphorical superhero cape. Know the weight is going to go up, expect completion, get a little weird, and nail it! Keep in mind that lifting heavy is 75 percent physical and 25 percent mental. So while your mental game cannot make you lift weight you’re not physically capable of, it will make the weight you’ve prepped to move feel that much closer to a cakewalk.

S H A P E : Speaking of style, let’s talk about your new line, Alexachung, which launched last year. After collaborating with so many brands, why did you decide to do your own thing? AC: People have gotten to know me through so many diferent mediums that weren’t necessarily me—I wanted to do something that expressed who I was on the inside. So I went out and got funding to do my own line. At irst I felt like a foreign exchange student: I knew what I wanted to say but couldn’t speak the language. Now I speak the language; I understand what is possible. I’m getting bolder and have more conidence in my eye. SHAPE: What else is on your agenda? AC: I tend to act on one-year plans. For example, I’ll be on vacation and think, Who would I like to come back here with next year? So for the foreseeable future, I’d like to get my line on the London Fashion Week schedule, showing twice a year. I’d like to buy a home. I could see myself falling in love, since I’m a romantic at heart. And, of course, there’s that Isabella cut!

That alone illustrates the style impact of this English phenom. However, beyond all her contracts (she’s the face of L’Oréal Professionnel) and collabs (in the past she has partnered with Superga, AG Jeans, Madewell, and more), there’s a 34-year-old ambitious woman who is determined to redeine herself on her own terms. First up: Design her own clothing line. Check. Next: Create a healthy, happy, loving existence. We sat down for a deeply honest chat. SHAPE: So itness—what’s your workout now? ALEXA CHUNG: I never prioritized itness until I got past 30 years old and realized I wasn’t invincible. A few years ago, when I was living in New York City, I started doing Gyrotonic classes, but that was more for posture and alignment than for itness. So I started working out with Mary Helen Bowers, who created Ballet Beautiful (I still see her every day when I’m in New York). When I’m in London, I do the moves I can remember on my own. And I walk—a lot. SHAPE: And what about staying mentally it and happy? AC: The older I get, the more attuned I am to avoiding disaster. So I started seeing a therapist awhile ago, who I now check in with whenever I’m feeling wobbly. But the only time I’m really unhappy is when I feel my brain isn’t being utilized. I’m also someone who needs to be around people a lot or I spiral downward. My CEO [Edwin Bodson, formerly of Haider Ackermann and Ann Demeulemeester] and I laugh a lot. Running a business is no joke, but the harder it gets, the more funny we ind it. You have to realize it’s not the end of the world. SHAPE: Since you are on the cover of our beauty issue, can you tell us about your daily routine? AC: I value sleep over vanity, so I don’t wear much makeup unless I have to look done up for an event. It’s possible to slow down the body’s aging process, groundbreaking new research reveals. These science-backed strategies deliver more energy, happier moods, and a longer, healthier life.
t might sound like something out of a sci-i movie, but delayed aging is now a reality, thanks to new advances in science and research. Americans are staying younger longer, found a recent study from the USC Leonard Davis School of Gerontology. “We measured people’s biological age through different markers of good health and found that the pace of aging has slowed over the past 20 years,” explains researcher Eileen M. Crimmins, Ph.D. People are not just living longer but also enjoying more years of prime mental and physical vitality, she says. While genetics plays a role in how fast we age, new research shows behavioral changes also make an impact. “There’s a lot we can control through diet, exercise, and lifestyle,” says S. Jay Olshansky, Ph.D., a professor at University of Illinois at Chicago School of Public Health and chief scientist at Lapetus Solutions. Here, based on the latest science, are the ive smartest things you can do to get the most powerful antiaging beneits.
“Exercise is the closest thing we have to the fountain of youth so far,” Olshansky says. People who did cardio for 30 minutes ive days a week had a biological age that was nearly nine years younger than those who were sedentary, the journal Preventive Medicine reports. Working out reduces inlammation and oxidative stress, two factors that age cells and shorten telomeres. Other research has shown that doing two strength-training workouts a week is also beneficial. “Exercise rebuilds muscle and makes the body and mind operate more efficiently overall,” Olshansky says. Strength and endurance training also improves your body’s insulin response, LeBrasseur says. “Muscle stores about 80 percent of the sugar you consume through foods,” he explains. “When you train, you make your muscles more efective at absorbing the sugar from your blood, so your body requires less insulin.” Your goal: Thirty minutes or more of moderate to intense cardio and resistance exercise most days of the week.

Omega-3 fatty acids have beneicial efects on two markers of biological aging, reports the journal Brain, Behavior, and Immunity. Higher intakes are linked to both a 15 percent reduction in damaging oxidative stress and longer telomeres, protein caps that protect the chromosomes and normally shorten as we age. You should also cut down on omega-6 fatty acids, found in grapeseed, corn, and sesame oils. In the study, people who had a lower ratio of omega-6 fatty acids to omega-3 fatty acids had the longest (or youngest) telomeres and the lowest levels of oxidative stress. Omega-6s have been shown to increase the inlammation that harms cells, while omega-3s reduce it. The trouble is, our diets tend to favor omega-6s. To remedy that, aim to get at least 1.25 grams of omega-3s a day (the amount in about three ounces of salmon), and limit your intake of high-omega-6 vegetable oils.
While exercise has a huge impact on aging, how much you move throughout the rest of the day is critical too. In a recent study, researchers from Maastricht University in the Netherlands asked diferent groups of people to sit for 14 hours a day, sit for 13 hours and exercise for one hour, and sit for eight to nine hours a day and stand or walk for seven to eight hours. After four days, being completely sedentary increased insulin resistance and cholesterol levels and damaged the endothelial cells, which line the blood vessels. When people exercised, they had healthy endothelial cells, but their insulin resistance and cholesterol still rose. When those people stood and walked more, though, they sidestepped the insulin resistance and cholesterol increase but not endothelial damage. The message: Both exercise and movement throughout the day are necessary for optimal health, says lead author Bernard Duvivier, M.D., Ph.D. If you have a sedentary job, try to replace two hours a day of sitting time with standing and walking, he says. Find something that works for you, whether that’s working at a standing desk, getting on your feet when you take a phone call, going for a long walk at lunch, or a combination of these.

Eat smaller meals more often “This is a way to control your insulin levels—one of the likely determinants of the rate of aging,” Olshansky says. “When you eat, your body produces insulin, a hormone that prompts your muscles and liver to absorb the glucose from your blood. Too much insulin over time can harm the mitochondria—little powerhouses in our cells that fuel the body—and also lead to the accumulation of damaged proteins,” says Nathan LeBrasseur, Ph.D., an associate professor in the Department of Physiology and Biomedical Engineering at Mayo Clinic. “This can trigger the development of disease.” Preventing big spikes in insulin can help minimize cellular harm. Olshansky suggests having six small meals a day. “And stop eating after dinner because the metabolism slows just before sleep,” he says. Or consider eating all your meals and snacks within an eight- to 10-hour window of time each day, a method known as time-restricted feeding. Early research suggests that this approach may have insulin-sensitizing and antiaging beneits, LeBrasseur says. OCTOBER 2018

Deal with your tension “Cumulative lifetime stress accelerates epigenetic aging, a predictor of the rate of biological aging,” says Perla Kaliman, Ph.D., a professor at the Universitat Oberta de Catalunya in Spain. Meditation is one way to protect yourself from stress. “Our research suggests that the epigenetic clock runs slower in long-term meditators than in those who don’t meditate,” she explains. In the study, the people who meditated daily for at least three years were the ones who beneited. If that sounds daunting, start small. A lot of my hair-care essentials are found in nature. Once a week, I whip up a homemade mask of avocado, egg yolk, coconut oil, aloe vera gel, and jojoba oil and use it after cleansing. I co-wash every other day. At night, I pineapple my hair: Pile it up in a scrunchie on top of my head and tie a silk scarf around it, so it doesn’t rub against the pillow and get fuzzy looking. Make sauce the star A versatile lavor booster will take even the most basic dish to the next level, and it doesn’t need to be complicated. This herby version is a refreshing bite of parsley, cilantro, and mint, and it requires no cooking. Experiment with different spices, chiles , garlic, and olive oil, and inish with a touch of acid.
1 pound shrimp
1. Zest the lime into a bowl. Add 1 tablespoon juice, then stir in the scallion whites; set aside. Finely chop cilantro, parsley, and mint. Add to the bowl, along with the capers, peppers, and ¼ cup oil. Stir and season to taste with salt. 2. Heat a grill to high. Toss the shrimp with the remaining oil and season with salt. Grill, turning once, until opaque, about 3 minutes. Serve with sauce.

Put faith in your marinade It’s the quickest way to add depth. Start with olive oil and follow with an acid like vinegar or lemon juice to tenderize, onion for richness, herbs or spices for complexity, mustard for savory notes, and inally a sweetener like honey to caramelize.

35 minutes (plus marinating) 1 Ruby Red grapefruit 2 tablespoons Dijon mustard 2 tablespoons extra-virgin olive oil 3 tablespoons honey 4 garlic cloves, smashed and peeled 3 rosemary sprigs 1 pound beets, peeled and cut into ½-inch wedges 1 whole pork tenderloin (1¼ pounds), trimmed Salt and black pepper Chopped fresh parsley, for serving
1. With a vegetable peeler, remove 4 strips of peel from the grapefruit. Squeeze ¾ cup juice from the grapefruit into a small bowl. Whisk in the mustard, oil, and 2 tablespoons honey, then stir in the garlic, rosemary, and grapefruit zest. Divide between 2 large resealable plastic bags. Put the beets in one bag and the pork in the other. Seal and refrigerate for at least 2 hours and up to 8 hours. 2. Preheat oven to 450°. Line a rimmed baking sheet with foil. 3. Put the pork on the baking sheet, wiping off excess marinade, then rub the remaining 1 tablespoon honey on top of the pork. Remove the beets from the marinade and scatter around the pork. Season everything with salt and pepper. 4. Roast until a meat thermometer inserted in the pork registers 145°, about 20 minutes. Transfer the pork to a cutting board and let rest. Meanwhile, stir the beets and return to the oven. Roast until the beets are tender, about 7 minutes longer. 5. While the pork and beets roast, strain the marinade into a small saucepan. Discard the solids. Bring the marinade to a boil, then boil until reduced to a syrupy glaze, about 8 minutes. Keep warm. 6. Slice the pork and arrange on a plate with the beets and boiled marinade. Garnish with parsley and serve.

TIP If you prefer a deep, dark crust on your pork, sear it on the stove instead.
Balance flavors and textures Every good dish nails the perfect combo of salty, sweet, sour, and spicy, plus crunchy, chewy, creamy, and tender. The best way to master this is by composing a great salad, like the one here. Taste as you create, noticing where to add more acid to balance the oil and nuts to add meatiness to the veggies.

1. In a large bowl, whisk the yogurt, lemon juice, oil, poppy seeds, chile flakes, and a pinch of salt. Adjust seasonings to your preference. 2. Add celery root, pear, apricots, pistachios, and parsley. Toss until well-coated. Serve immediately or refrigerate for up to 2 hours. Toss again before serving.

3 pounds vegetables, such as carrots, radishes, sweet potatoes, shallots, and garlic, cut into 1½-inch chunks (8 cups) 2 tablespoons extra-virgin olive oil 2 ounces prosciutto, torn into small pieces 6 sprigs thyme, plus leaves for garnish Salt and black pepper 6 fresh figs, halved
1. Put a half-sheet pan on the floor of the oven. Preheat oven to 425°. 2. In a large bowl, toss the vegetables with the oil, prosciutto, thyme, and a pinch each of salt and pepper until coated. Carefully transfer the hot pan to a wire rack, then spread the vegetables in a single layer. 3. Roast on the floor of the oven, stirring once, until browned and tender, about 35 minutes. Put in a dish and top with figs and thyme leaves.

Caramelize your roasted vegetables It’s the golden, crunchy exterior that makes squash, brussels sprouts, and root veggies slightly sweet and totally addictive. The trick: First, preheat the baking pan so your food hits a hot surface and gets a sear. Then place the pan with the veggies on the loor of the oven, which provides the most direct heat to cause caramelization.

Salt and black pepper 2 tablespoons extra-virgin olive oil 8 ounces spicy Italian sausage 1 onion, diced 2 garlic cloves, sliced 1 pound butternut squash, peeled, quartered lengthwise, and cut into ½-inch slices 1 bunch broccoli rabe, stems trimmed and discarded, tops cut into 3-inch lengths 12 ounces linguine 1 ounce Pecorino Romano, grated
1. Bring a large pot of salted water to a boil. 2. Meanwhile, heat oil in a large, deep skillet over medium heat. Squeeze the sausage out of the casings in bits and into the skillet. Cook until the bottoms are browned, about 3 minutes, then push to one side of the skillet. Add the onion and garlic to the other side, season with salt, and cook, stirring occasionally, until translucent, about 5 minutes. Stir with the sausage and push to one side of the skillet.
Amp up a simple pasta You add decadence by doing as the Italians do and undercooking your pasta—even less than al dente—then tossing the noodles in simmering sauce. This will make the pasta actually soak up the goodness so that the lavor is bold and intensiied.
3. Add the remaining tablespoon oil to the other side of the skillet and add the squash. Season with salt and pepper and stir to coat with the oil. Stir with the sausage and onion, spread in an even layer, and add ½ cup of the boiling salted water. Cover and cook until squash is tender, about 8 minutes. 4. Add linguine to the boiling water and boil, stirring occasionally to prevent sticking, 8 minutes. With tongs, transfer the noodles to the squash mixture. Reserve cooking water. Toss well and add half the cheese. Continue tossing until noodles are al dente, about 2 minutes. If the sauce seems dry, toss in ¼ cup pasta water. 5. Divide among serving plates and top with the remaining cheese and more pepper.

TIP Pick the right pot: If you don’t have a large, deep skillet, use a Dutch oven or a wide pot. You need plenty of room to toss the pasta.
