Bay Creek’s journey over the last 12 months has been one of anticipation, excitement, and now, reward for both residents and the visionary team alike. With new development and improvements completed and ongoing, the community has an unmistakable energy as we head into the new year.

This issue, we have updates from members of the development team about what’s been happening and what’s next on the horizon here at Bay Creek.

Landscaping Enhancements David Brannon, Executive Vice President, Land Planning for Preserve Communities, shares that great strides in landscaping have been made throughout Bay Creek recently. “At the Coach House Tavern, we are in progress with new landscaping and plantings to beautify that area,” says David. These activities, in addition to the placement of a bicycle rack at the entrance, are important components of our overall community landscaping improvement plan. In addition to formal landscaping, Bay Creek’s natural areas are continuing to receive special attention. Bay Creek’s new conservation Stewardship Club is a volunteer group of residents leading beach and trail clean ups, all while enjoying the outdoors and learning. Bay Creek Naturalist, Joe Fehrer, will come alongside Club members and offer an educational and recreational side to the group’s worthy mission.

“Along Palmer Drive, 1,000 pink muhly grass plants have been installed, along with new trees and new plantings of azaleas,” says David. There has also been a large-scale, ongoing removal of pinecones from the area. The result is a tidy, elegant landscape where the existing trees and landscaping can be appreciated. “All of this work was done in conjunction with the Property Owners Association. They’ve been instrumental in the success of this enormous effort,” David adds.

The Nature Preserve and Base Camp The opportunities for enjoyment of Bay Creek’s 350-acre Nature Preserve grow with every passing week. “We’re right in the middle of Phase One of the Nature Preserve plans. The road that leads down to Base Camp is now built. Avid Trails began work in mid-November and has added six miles of new trails,” says Bobby Masters, General Manager for Bay Creek.

The Life Center The Life Center is now home to the innovative new Flowater Water Refill Station. Guests at the Life Center can now refill their own favorite water bottles with great tasting purified water at the new no-touch dispenser. Flowater offers the world’s only 7-Stage purification system, providing alkalized and oxygenated water with added electrolytes. It’s healthy for guests and is also great for cutting down on disposable plastic water bottles. This added convenience complements the

“We’re continuing to improve bunker drainage, and drainage on the fairways,” says Masters. “We are also slated to begin repairs to irrigation pumps in the coming months.” Improvements have been noticeable this year as the Bay Creek staff fully utilize new golf course maintenance equipment. Masters notes, “We are focusing on the quality of the golf experience for our members, and we are committed to improving and maintaining every aspect, from course condition to cart paths and beyond.”

With a highly targeted and significantly increased marketing plan and budget supported by Preserve Communities, record numbers of new families are discovering what makes Bay Creek so special. This year’s sales certainly reflect that. Sales in 2020 reflect a 300% increase over 2019. Thirty homesites offered by the developer were sold, including all available Bayfront homesites. The Palmer Lake Villas Phase 1 release in August was a huge success, with all 12 villas selling out. Construction is already underway and the first four Villas are now taking shape. Phase 2, released in November, features 6 villas, of which 4 have already sold. New property releases are planned within Bay Creek, too. “A new single-family home community on the north side of Bay Creek will offer homesites with golf course and lake views,” Bobby

explains. “There are some homesites that sit high on a bluff overlooking both the golf course and the Bay,” Bobby says. “These are truly some of the most spectacular properties on the Chesapeake Bay.” Development on these homesites is slated to begin in January 2021. These aren’t the only highly desirable homesites that will become available in the new year. New homesites in Bayside Village will soon be released, offering the beauty this exceptional community is known for, along with proximity to gorgeous Bay beaches and the Life Center.

Looking ahead to 2021, many additional development plans are in the works which will be unveiled as permitting and development progresses. The entire team is eager to continue enhancing Bay Creek, and Bobby Masters says the excitement is palpable. “We’re looking forward to another incredible year at Bay Creek,” he says. “And most importantly, we want to continue to create the kind of place where families can enjoy time with each other in this spectacular natural environment here on the Bay.”

Enduring Traditions HOLIDAY JOY SHINES BRIGHT IN BAY CREEK

Isn’t it nice to know that some holiday traditions are still going strong? We’re heartened by the festive lights twinkling along the streets here in our lovely Bay Creek. The lights are beautiful, but this year, they feel like so much more than just 'light.' They’re an expression of what family and friends here are all about: resilience, positivity and embracing the joys of life, every day. This month, we are pleased to share some of that joy as we spotlight a Bay Creek home that’s giving us a merry-and-bright feeling every time we pass by: the Plew Residence in Heron Pointe.

When Bay Creek residents, Amy Plew and her husband Mike, came to the Eastern Shore six years ago, they were taken with the area’s unique coastal lifestyle. Their home in Bay Creek reflects their enjoyment of that easy pace of life, and Amy’s discerning eye for design. With an extensive career in marketing, branding and beyond, Amy’s take on holiday décor is, as you might imagine, inspiring, compelling and spot-on. When it comes to decking the halls, Amy goes all out. Her favorite room to decorate? “Definitely the dining room,” laughs Amy. “That’s the gathering place where we have dinners and get togethers, so I try to make that extra special.” “I always do a bit of a theme in each room,” she says. Her dining room is done with a creative deer theme—with delicate reindeer figures accompanied by white and silver accents for a polished, crisp, wintery feel. Amy enjoys decorating help from the ever-tasteful Annie Reichoff, owner of French Twist Boutique in Virginia Beach.

The entire home is elegantly adorned, and Amy has a few traditions she likes to carry on from year to year. “The main living room we decorate in blues…and the colors of the shore. It’s a bit more coastal.” Amy uses oysters as a design element to bring in a simple yet authentic shore vibe.

Last year, the Plew residence was on the Bay Creek Holiday Home Tour and was decorated inside and out, upstairs and down. The visitors who were fortunate enough to experience it (and we’re so glad we were among them!) came away with that magical holiday spirit that’s all too often reserved for little ones dreaming of Santa’s sleigh.

This year, Amy has opted for scaled down décor but, oh! it still delivers in the joy department! “It’s a much more intimate feeling this year,” Amy explains. “We won't be having our annual holiday party, so that's quite different.” In a typical year, the Plews enjoy spending time with friends and family and hosting gatherings that are often a showcase for local talent and treasure. “I always use local caterers like Kitchen Sync or Amy B’s,” she says. “We get our wine from Chatham Vineyards and Gull Hummock, and cheeses from North Street Market.” Indeed, we are fortunate to have a host of excellent choices when it comes to ‘doing entertaining right’ here in Cape Charles. But as with most things in

2020, this holiday season is not quite what anyone is used to. “We won’t be traveling anywhere, and we aren’t having people in. It’s different this year, but we still wanted to decorate so it feels like the holidays,” Amy says. Outside Amy and Mike’s home, passersby are greeted with a bright wreath on the front door, porch railings festooned with garland, and delicate white lights glimmering on the front hedges. As for enduring holiday traditions, one of Amy’s favorites is a perfect reflection of the couple’s worldly and wonderful life together: “I really love the tree we do in the foyer,” says Amy. “It’s decorated with ornaments from all the places we and our son, Dylan, have traveled together. We decorate it and reflect on our travels and share memories.”

The Plews have visited 41 states and 23 countries, so the colorful tree is as much a life story as it is a holiday tradition. This year, the Plews have continued their practice of putting up the decorations early in the season. “We do like to decorate early so we can enjoy the Christmas spirit longer,” says Amy. “…your house is so beautiful when you come home. It feels cozy, and homey and peaceful.” Especially this year, Amy explains, they want to do all of the special things that bring extra joy to the holidays. Thank you, Amy and Mike for sharing your joy, your home, and beautiful holiday traditions with us here at Bay Creek. INTRODUCING THE NEW BAY CREEK STEWARDSHIP CLUB

Experiencing the 350 acres that make up the Bay Creek Nature Preserve are what many might refer to as ‘rare air’—that is, it’s an incredible and uncommon thing, that few are fortunate enough to experience. Our residents, members, and guests have been enjoying the Nature Preserve for some time now— walking and biking the trails, birdwatching or just breathing in the fresh Eastern Shore air.

The woods, waterways, meadows and shoreline in the Nature Preserve also offer a special opportunity to become one with the mission of environmental preservation and conservation. Now, a new group has been formed to do just that: The Stewardship Club at Bay Creek. Bay Creek naturalist, Joe Fehrer, is looking forward to helping these club members discover and care for all of Bay Creek’s nature, and have a great time doing so! Currently boasting around 30 members, the Stewardship Club was born from residents’ desire to take a more active role in understanding their surrounding natural environment.

“We’re working on organizing some workdays where, for example, we combine a beach or marsh clean up with coastal or marsh ecology. On November 16th, the club did just that— taking part in a shoreline clean up and enjoying learning about marsh ecology with Joe. Meghan Neville, Director of Concierge Services at Bay Creek Resort & Club, has enjoyed assisting in the formation of this special alliance. “This is a Club for Bay Creek residents and members, and it is truly their own organization. As Director of Concierge Services, my role is to facilitate that in a variety of ways,” she explains.

“We want everyone to have a sense of ownership and belonging; to look at the preserve area as their land, as a place where they can have a symbiotic relationship with the nature that surrounds them.”

“In talking with the owners, we realized this was an ideal fit with our conservation and preserve area. Another benefit is that most of the activities take place outside, which is ideal right now,” says Joe. Joe’s passion for sharing the great outdoors, along with his encyclopedic knowledge of nature, is already enhancing and expanding the Club’s experience. “The mission of this Club is twofold,” says Joe. “First, it is a group of people who can in many ways assume stewardship of the Nature Preserve—with trail clean ups, maintaining the trail areas and such.”

“Whether it’s an activity or a meeting, we are working with them to make that happen—from promotion, event space or anything else they may need,” says Meghan. Having Meghan as a resource for scheduling activities, ensuring all needed supplies and equipment are available, and hearing and responding to residents’ ideas and plans is key. Bay Creek is fortunate to have Meghan in this critical role, for the Club and for the community at large. It’s one of the ways Bay Creek seeks to connect with and support the passions of our residents and members.

“Bay Creek residents and members are people who are involved in a variety of activities and are lifelong learners,” she adds. “Their curiosity and sense of personal responsibility makes the Club a natural fit for them. The Nature Preserve is an area being entrusted to them to be appreciated, enjoyed, and cared for. The Stewardship Club strives to help do just that by providing a formal framework for hosting and promoting activities related to conservation and education.” “We want everyone to have a sense of ownership and belonging; to look at the preserve area as their land, as a place where they can have a symbiotic relationship with the nature that surrounds them,” Meghan explains. “When you’re out there in the preserve area you can feel your soul, spirit, and body healing. What does this winter season look like for the new Stewardship Club? “We have a list of potential activities that we’d like to introduce,” says Joe. “This fall and winter, I’ll be out on the property doing inventories of flora and fauna. And I’ll be opening that up to the Club members to join me for an unscripted walk,” he adds. In December and January, Joe is planning to lead a few ‘full moon walks’ on the Nature Preserve. With this vast preserve in our backyard, and our incredibly rare Eastern Shore area, there are no limits to the types of activities and education the Stewardship Club can enjoy.

Holiday Baking BAY CREEK STYLE

The holiday season is right around the corner, meaning it’s soon time to dust off your aprons and deck your halls with some holiday cheer. Bay Creek residents Maggie Deuel, Sandy Baker and Phillipa Wilcox shared their family favorite holiday recipes and weighed in on the importance of tradition during the season. Whether you’re looking to try something new, or put a smile on guests face, these dishes are sure to be crowd pleasers—and may even become a staple in your recipe book. “When you sit around and eat, you are talking— sitting down and having a meal together promotes discussion about various topics, it brings people together,” said Maggie Deuel.

Maggie has lived in Bay Creek for three years and has always enjoyed giving neighbors and friends platters of cookies. This year she plans to make her Rugelach Holiday Cookies using a recipe her grandmother taught her and she grew up making. Baking around the holidays is so much more than just making sweets, explained Maggie. She uses items passed down from generation to generation, like her great grandmother’s wooden spoon, and reminisces of loved ones when she bakes. Originating from Eastern Europe, Rugelach cookies start with a pastry type dough and can be stuffed with various fillings like cream cheese, chocolate, nuts or fruit. Maggie prefers the fruit and nut flavor and likes to enjoy them with a cup

of coffee or tea in the morning. The dough can be frozen and used throughout the holiday season. Another favorite cookie recipe of Maggie’s is her Toffee Triangles, fondly referred to as Christmas Crack, that she has been making for over 40 years. This chocolatey morsel became a tradition to bake around Christmas with her college friends, though she includes a warning with the directions—they are addicting! Sandy Baker, who became a permanent resident of Bay Creek a year and a half ago, agrees that being in the kitchen during the holidays is about much more than the food. It’s about spending time together as a family and carrying on traditions with her cooking, like recipes her mother used to make before she passed away. “The holidays for us is trying to remake and recreate her recipes as part of our traditions, and our kids make them now,” said Sandy. “So, I would say her legacy is definitely in how she made us all feel with her cooking.” One of these recipes is a chocolate chip cake that Sandy evolved into a banana chocolate chip cake with buttercream frosting. She starts with a French vanilla cake base, adding a shredded German chocolate bar and semi-sweet mini chocolate chips. Pureed bananas make the perfect filling and add moisture to the cake. She finishes it off by icing it with buttercream. While Sandy errs on the side of a dessert cake, her mother’s version without the frosting could serve as a sweet breakfast pastry type cake. Phillipa Wilcox, who has permanently decided to embrace the laid-back Cape Charles lifestyle since the Covid-19 pandemic, plans on whipping up several uniquely delicious meals this holiday season that her mother passed down to her.

A seared pepper—red, yellow, or orange to ensure sweetness—stuffed with a savory meatball mixture, coated in decadent tomato sauce served over pasta is first on the menu. Phillipa’s tips for making the perfect stuffed pepper are adding hot red pepper flakes and a tad of anchovy paste to the sauce—which is always best homemade. Her favorite holiday dessert is a pineapple cheese pie—a recipe Phillipa suspects her mom copied from somewhere. The stars of the dish are cream cheese, crushed pineapple and chopped pecans. The trick to making the best pie crust, Phillipa shared, is letting your oven get hot and putting your pie crust dough in cold. For those more ambitious in the kitchen, Phillipa recommends her apple soufflé, which she grew up eating as a Christmas morning breakfast. Though it sometimes flops, she recommends adding the ingredients in very gradually until you arrive at the consistency of a heavy cream. Phillipa still uses the same pans her mother used, making her feel like she’s in the kitchen with her. The chaos of the past year has given even more reason to the season this holiday—so get in the kitchen with your loved ones and whip up a new family favorite!

Holiday Baking continued DIRECTIONS Preheat oven to 350 degrees 1. Cream the cheese & butter together in the bowl of an electric mixer fitted with the paddle attachment until light & fluffy. 2. Add the 1/4 c of granulated sugar, salt, & vanilla. 3. With the mixer on low speed, add the flour & mix until just combined. Place the dough onto a floured surface and roll into a ball. Cut the ball into 4 quarters, then wrap each piece in plastic wrap and refrigerate for at least 1 hour.

Rugelach Holiday Cookies INGREDIENTS 8 oz. cream cheese 2 sticks of butter, at room temperature 1/4 cup sugar, plus 9 tbsp 1/4 cup salt 1 tsp vanilla extract 2 cups all-purpose flour 1/4 cups light brown sugar 1 1/4 tsp. ground cinnamon 3/4 cups craisins 1½ cups walnuts (I prefer pecans), finely chopped ½ cups seedless raspberry jam (I've also used apricot preserves) 1 egg, beaten with a tbsp water

4. To make filling, combine 6 tbsp of granulated sugar, the brown sugar, ½ tsp cinnamon, the craisins, and the nuts. 5. On a floured surface, roll each ball of dough into a 9-inch circle. Spread the dough with 2 tbsp of preserves & sprinkle with ½ c of the filling. Press the filling lightly into the dough. Cut each circle into 12 equal wedges (I use a pizza cutter and cut each circle into quarters, then cut each quarter into thirds). 6. Start with the wide end of each cut piece of the circle, roll up each wedge with the point tucked under. 7. Place the cookies 2 inches apart on a baking sheet lined with parchment paper. 8. Brush each cookie with the egg wash. Combine 3 tbsp granulated sugar and 1 tsp cinnamon and sprinkle on the cookies . Bake for 15-20 minutes, rotating halfway through until lightly golden. Remove to a wire rack to cool. 9. Store the rugelach at room temperature in an airtight container for up to 5 days (if they last that long!

DIRECTIONS 1. Preheat oven to 350 degrees Line a 10x15 baking sheet with parchment paper & set aside. 2. Beat the brown sugar & butter in a large mixing bowl until light & fluffy. 3. Add egg yolk & vanilla, mixing well until combined. 4. Add flour, 1 cup at a time until combined. 5. Add 1 cup toffee bits, stirring until distributed evenly.

Toffee Triangles INGREDIENTS 1 cup butter 1 cup light brown sugar 1 egg yolk 1 tsp vanilla extract 2 cups flour 1 bag of Heath Bar English Toffee Bits 2 cups semisweet chocolate chips

Pineapple Cheese Pie INGREDIENTS

For Pineapple Mixture: 1/3 cup sugar 1 tbsp of cornstarch 8 ounces crushed pineapple For Cream Cheese Mixture 1 package of cream cheese, softened ½ cup sugar ¼ tsp salt 2 eggs ½ cup milk ½ tsp vanilla 1 unbaked pie crust—9 inch pie plate ¼ to ½ cup chopped pecans

6. Press dough evenly into the prepared pan. 7. Bake for 18 minutes until just golden brown. 8. Remove from the oven & sprinkle chocolate chips over the "cookie". Let the chips sit for 3-5 minus or until softened, so that you can spread the softened chocolate even;y over the top. 9. Sprinkle remaining toffee chips over the chocolate. Set aside and let cool for several hours. 10. Once cooled and chocolate is firm, remove from the pan with the parchment paper. 11. Cut into squares, then diagonally into triangles.

DIRECTIONS 1. Blend package of cream cheese with sugar, salt and then add the eggs one at a time blending each into the mixture. Mix in the milk and vanilla. 2. Put the pie crust in the pan then spread the spread cooled pineapple over the bottom of the pie crust. Pour in cream cheese mixture and sprinkle with chopped nuts 3. Bake in oven at 400 degrees for 10 minutes then reduce the oven temp to 325 degrees and bake for 50 minutes.

Holiday Baking continued Banana Chocolate Chip Cake INGREDIENTS 1 yellow cake mix 3.4 ounces of Banana Pudding 4 large eggs ½ cup of vegetable oil 1 cup of whole milk 3 well mixed ripe bananas Mix well and then stir in: ½ bag of mini semi-sweet chocolate chips 1 German Chocolate Bar grated DIRECTIONS Bake at 350 degrees for 45 minutes and then allow to completely cool You may choose to ice this cake with butter cream, vanilla, or your favorite icing flavor

Apple Soufflé DIRECTIONS 1. Preheat oven to 400º 2. Place apples in pan with butter. Sprinkle with sugar and cinnamon. Sauté till tender 3. Wisk egg yolks, then wisk in 4 tbsp sugar 4. Gradually wisk in flour and milk to the consistency of heavy cream INGREDIENTS 2 apples, sliced thin 1 pat butter per 8" nonstick pan 8 eggs, separated 1/2 cup milk

1/2 cup flour 4 tbsp sugar cinnamon 1 tsp cream of tartar

5. Mix egg whites until frothy and foamy, adding a sprinkle of sugar and the cream of tartar 6. Fold yolk mixture into egg whites 7. Pour over apples in each pan 8. Bake until puffy and golden brown

Stuffed Peppers INGREDIENTS For the Peppers: Red, yellow, or orange peppers, remove tops & seeds For the Meatball Mixture: ½ pound ground veal or sausage meat out of casings ½ pound ground pork or turkey 1 pound of ground beef 1 cup fresh white bread crumbs (4 slices, crusts removed) ¼ cup seasoned dry bread crumbs or panko breadcrumbs or puffed rice cereal, crushed 2 tbsp chopped fresh flat-leaf parsley ½ cup of freshly grated Parmesan cheese 2 tsp kosher salt ½ tsp freshly ground black pepper ¼ tsp ground nutmeg 1 extra large egg, beaten ¾ cup warm water For the Sauce: 1 tbsp good olive oil Pancetta or sausage pieces 1 cup chopped yellow onion 1½ teaspoons minced garlic Pinch of red pepper flakes ½ cup good red wine, such as Chianti 1 (28 ounce) can crushed tomatoes, or plum tomatoes in puree, chopped 1 tbsp of anchovy paste 1 tbsp chopped fresh flat-leaf parsley 1½ teaspoons kosher salt ½ teaspoon freshly ground black pepper

DIRECTIONS 1. Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and ¾ cup warm water in a bowl. Combine very lightly with a fork. Using your hands, Fluff ingredients together. Do not over mix – light and fluffly. 2. Stuff the whole peppers with the mixture. 3. Heat olive oil in heavy pot on medium high, place the peppers top down to allow meatball mixture to sear and seal. Once they release from pot remove and set aside to make the sauce. 4. For the sauce, heat the olive oil in the same pan. Add the sausage and or pancetta, onion and sautee over medium heat until translucent, 5 to 10 minutes. 5. Add the garlic and cook for 1 more minute. 6. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. 7. Stir in the tomatoes, parsley, salt, and pepper. Make enough to cook the peppers in and have some for the spaghetti. 8. Place peppers in the sauce standing up and continue to cook until meat is done. Prepare spaghetti as a side.
