More Exciting News... “It’s hard to follow an announcement as big as Troon, but Bay Creek really is bursting with news right now!” Bobby says. Most notably, two exceptional new property offerings have launched—Muirfield and The Commons at The Fairways.

Without a doubt, one of the most exciting real estate offerings in Bay Creek right now is Muirfield. With Phase 1 officially launched, 69 exceptional homesites have been released. EASY, ELEGANT LIVING: The Commons at The Fairways Our entire team is thrilled about The Commons at The Fairways. These are new low-maintenance attached single family homes in an already established section of The Fairways, Bobby says. The collection by Preserve Homes & Neighborhoods will consist of eleven individual structures with three or four residences per building. There’s no shortage of excitement happening when it comes to Bay Creek’s cuisine, events and community gatherings. Executive Chef Jason Van Marter shares a quick look back as well as some of the new things that are coming up next at Bay Creek. “2021 was a great year. In the summer and fall, golf went into full swing. It was an incredibly exciting season with some large tournaments and member events,” Jason says. “Bay Creek hosted a Member Appreciation party in conjunction with the Member-Guest Tournament. We created a cocktail reception type of event that was attended by some 300 people. We had a good time putting this together and seeing it come off so beautifully for the members and their guests.” “The King & Bear golf tournament took place mid-November. This was our largest tournament of the year,” recalls Jason. “The Bay Creek culinary team helped make this iconic event a tremendous success.”
At the Coach House, two more exceptional Wine Dinner evenings have taken place. Selecting unique wines and pairing them with a complementary menu is one of Jason’s and Chef de Cuisine Michael Koch’s favorite member events. “We recently held a Pacific Northwest Wine Dinner—an eight-course meal for 40 people. Selected wines from Oregon and Washington were also served,” says Jason.

Soon after, they hosted an Italian Wine Dinner showcasing eight courses of Italian wines with intriguing Italian foods prepared by Michael. From there, the Bay Creek culinary team geared up for a memorable New Year’s Eve, where they curated and presented an intriguing à la carte menu and bubbly wine flight. It offered the perfect pre-party gathering before ringing in the New Year at Bay Creek. Now that it’s January, there are a lot of great things on the horizon. “We’re initiating a new Happy Hour at the Coach House, which we expect to be very popular,” says Jason. “And we’re working on plans for Valentine’s Day as well as the next Wine Dinner.” Chef Michael has already curated some prime choices for the
WINTER RECIPE Chef Jason shares one of his own favorite recipes for a hearty winter dinner.
Smoked Venison Leg Roast INGREDIENTS • 3-5 lb venison leg roast trimmed of sinew. I like to use a whole deboned leg myself. Brine • 1 lemon, juiced • 2 dried bay leaves • 5 tablespoons kosher salt • 1 qt water • 16oz beef broth • 1 onion chopped • 2 large cloves garlic crushed • 1 teaspoon black peppercorns • 1 rib celery chopped • 1 carrot chopped • A few sprigs of fresh rosemary and thyme

It’s a great transition… they’ll be helping us move forward on all fronts and provide us the tools necessary to do so successfully,” he adds. Jason explains that there are a lot of components involved in successful member and guest experiences when it comes to dining, events and hospitality at Bay Creek. “We’ll have all the resources we need to offer better pricing, different ingredients to further enhance our offerings, newly modified menus—our possibilities with Troon will be endless,”, Jason says. “It goes back to our vision of taking Bay Creek into the future of culinary arts…and our dedication to a great resort community atmosphere. ”
INSTRUCTIONS Brine 1. Bring the brine ingredients to a boil then cool completely. Submerge the venison roast in the brine in a small pot or similar container (or a thick plastic bag set into a flat tray or container to prevent spills). Refrigerate the venison roast in the brine for at least 12 hours. I like to aim for a solid 24 hours. Smoking 1. Preheat smoker to 350F. Smoke for 1 hour then reduce temperature to 225F. 2. Remove roast from Brine and pat dry. At this point I like to put an additional BBQ rub on the roast. Totally optional. 3. Cook roast to an internal temperature of 130-135 F. 4. Remove the roast and let stand in a warm place for AT LEAST 15 minutes before slicing. After resting, this should give you about a medium-rare to medium doneness.

“This is the time of year when we start to see the waterfowl and winter birds move in,” says Joe. “We’ll be seeing some additional sparrow species in the meadows and likely more bluebirds on the property. “You’ll see winter shore birds along the beach, too. Soundings A Different Kind of Beauty The winter landscape at Bay Creek has beauty all its own. “We’re far enough south that a lot of the trees still have a good covering of foliage,” explains Joe. “Many of the trees and shrubs are going into their dormant stage, so sap is flowing to the roots. They’ve all put out their buds.” And they can be quite lovely, too. “I was out at the Preserve this morning and there’s a grass species that becomes very noticeable this time of year known as broomsedge, ‘Andropogon virginicus’. And then there are the salt marshes… the tidal marshes…they turn a beautiful tan-gold color. And in some areas, it has beautiful areas of lavender to crimson coloration,” says Joe.
Looking Ahead Joe will continue his popular themed walks series that highlights the history of the Cape Charles and Eastern Shore area with an interesting twist. “I’m sharing information about the history and nature of the region, but I’m also bringing it home to the specific property that is Bay Creek,” says Joe. There have been a cadre of people who have attended every one of Joe’s walks, which will continue through the winter months. “We’ve worked through the history starting 35 million years ago on up through the Native Americans who were here pre-colonization. In a month or two, we will end up at present-day Bay Creek,” he says. Coming up next, Joe will lead his nature walkers from the Native American to colonial and civil war eras, focusing on their effects on the Eastern Shore. He’ll also talk about the railroad coming to the Eastern Shore and how Cape Charles came to be

built. Eventually, he will talk about the development of Bay Creek, Preserve Communities and the 350acre Nature Preserve. It’s an exciting time at Bay Creek, with a new year and so much to look forward to. “Winter at Bay Creek is an interesting time, and there’s a lot to see if you know how to look,” smiles Joe. “The dormant areas, the plants… they are very
much alive even if not at first glance. There’s a lot of promise that lies just under the surface.” Joe welcomes everyone to take part in the upcoming nature walks and in the unexpected and unique beauty of nature in winter at Bay Creek.
Soundings A PROFESSIONAL FOLLOWS HIS CALLING TO THE EASTERN SHORE:
Meet Dr. Higgins FOUNDER OF CAPE CHARLES VETERINARY HOSPITAL People love their pets, and at Bay Creek, it’s no different. On any given day, you’ll see folks out walking the nature trails with their canine companions or a couple golf carting with a furry friend nestled between them, taking in the breeze. Neighbors’ felines are often spotted birdwatching from a window or curled up on a sunny screened porch. In the last few years, caring for these precious pets has become much more convenient and comprehensive, all thanks to an exceptional veterinarian with a heart for animals and a love of the Eastern Shore. Meet Dr. Nathan Higgins, the founder of Cape Charles Animal Hospital. After earning a bachelor’s degree in Biology from Virginia Tech and a Doctorate in Veterinary Medicine from The Virginia-Maryland Regional College of Veterinary Medicine, Dr. Higgins practiced small animal medicine in Manassas, Virginia and lived in a busy suburb of Washington, DC. When he first visited the Shore in 2013, Dr. Higgins was intrigued. “It was a refreshing contrast. I met great people and saw an exciting small-town community that was growing,” says Dr.

Higgins. “But there was no veterinary clinic in the county. It felt like I was called to be here.” Dr. Higgins moved to the Shore from the DC area in 2014 and set up his practice to serve the residents of Northampton and Accomack counties. “My primary goal is to keep pets healthy,” says Dr. Higgins. “I’m a firm believer in preventive medicine and educating my clients about the needs of their pets.” In service of this goal, Dr. Higgins provides much more than just the vaccinations and checkups that people normally think of. “We are full service at Cape Charles Animal Hospital. That includes surgeries, dentistry, hospitalizations, routine preventative medicine, X-ray. I also have a certified team conducting ultrasounds here,” Dr. Higgins says. “I’m fortunate to have a great staff who works very hard and is accommodating and compassionate.”
