DECEMBER RECAP 2021


With over 45 events and almost $375k in total revenue in December, Foundry & Lux was bursting with business and finished 2021 with a BANG! There has also been a new addition to the fleet of catering vehicles for HPP. F&L has acquired a large box truck to accommodate the growing catering business.


FOOD SPECIALS

BBQ Meatloaf Sandwich Smoked Bacon & Lentil Soup Shrimp Louie Salad Stuffed Potato Skins with Carnitas

Monthly food specials were a huge hit in December. The most popular salad was the Shrimp Louie reaching a total of 119. Everyone warmed up with the Smoked Bacon & Lentil soup with over 113 sold!


BEVERAGE SPECIALS

Cookie Butter Chai Progeny espresso, masala chai, milk, cookie butter, topped off with cookie crumble

COVE-VILLE “NICE BAR”

Hot Cocoa Station F&L surprised guests with a wide array of mix ins to top off a fun event!

Decorating Stations F&L spread the holiday cheer with cookie decorating stations and ornament decorating stations.


COVE-VILLE “NAUGHTY BAR”

The Grinch made a special appearance and brought out the “Naughty Bar” which included a local wine and beer.


FARMER’S MARKET

The Farmer’s Market was a big hit! Capay Organics ran out of product within an hour of opening. A few featured organic products included; Nantes carrots, farm fresh eggs, satsuma tangerines, and French radishes.

Foundry & Lux executed over 16 offsite events. 4 ROBLOX BBQ lunches 8 AMGEN lunches 3 Chandlery events hosted by: CBRE BMS Janssen BioPharma


In addition to onsite and offsite catering, we also had several drop-off caterings. 300 Service Meals were delivered to SSF first responders, hosted by CBRE Delivered over 300 meals to Transwestern Over 6 caterings to 1&2 Tower Place 50 boxed lunches to MisPro AbbVie lunches Oracle lunches

Sales: Sales for the five-week period totaled ~375k$ with a weekly average of ~$75k. December was excellent despite the campus population now below 53%. We produce for more than four offsite events weekly, contributing more than $30k to F&L’s weekly revenue stream. Week 4 and 5 were slow due to the holidays, and losses were high due to tenant closures for Christmas and New Year’s day. This period’s revenue brought Foundry to $29,812 in the black. Labor: Labor has dropped by 1.8%. We expect labor to increase as we continue to expand business in the coming months. We adjusted hours of operation and abbreviated services for week four and week five to mitigate losses with labor and cost of goods. Other Expenses: Other expenses were monitored carefully and have been reduced by 1.4% since P2. Total Profit: Overall losses were ~$0 for the 5-week period! The total profit was $29,812, which brings F&L to a total of ~$111k in the black for Q4. This period is the third consecutive period where we have been in the black.
