Chocolate-Almond-Apricot-Chia Seed Bites Makes 35 1” bites. Serving size – 1 bite. About 20 minutes INGREDIENTS 1 ½ cup rolled oats ½ cup almonds, lightly toasted and rough chopped 2 tablespoons unsweetened shredded coconut 1 tablespoon chia seeds ¼ cup 70-72% cacao dark chocolate, roughly chopped into small pieces ½ cup dried apricots roughly chopped 1/3 cup honey 2/3 cup almond butter DIRECTIONS In a large mixing bowl combine the oats, almonds, coconut, chia seeds, chocolate and dried fruit. Stir all ingredients together until well mixed. Add honey and almond butter to the bowl and mix all ingredients together until combined. Place mixture into the refrigerator for about 10 minutes, this will allow it to harden and make the mixture easier to work with. Shape mixture into one-inch rounded balls and place on a platter. Serve immediately or refrigerate in an airtight container up to five days. CHEFS TIPS Label, date, and freeze bites and take out as needed. (Can last up to 4 months) You can substitute apricots for your favorite dried fruit like cherries, cranberries, or dates.
