Lemongrass Beef Pho Broth Serves 6. Takes about 2 hours. YOU WILL NEED coffee filter or cheesecloth measuring spoons and cups saucepan twine INGREDIENTS 2 quarts beef stock 2 Tbsp fresh ginger 8 oz yellow onion, chopped 4 whole cloves 1 star anise 1 cinnamon stick 2 Tbsp sugar 2 Tbsp fish sauce 2 tsp salt DIRECTIONS 1. Add the beef stock to a 2-quart (1.9-L) saucepan and bring to a low boil. 2. Add the fish sauce, sugar, ginger, onion and salt to the stock and reduce the heat to a simmer. 3. Wrap the cloves, star anise, lemongrass and cinnamon stick in a piece of cheesecloth or coffee filter and tie it into a satchel. 4. Add the satchel to the broth and simmer for at least 30 minutes, but no more than 45 minutes. 5. Around the 30 minute mark, taste the broth to see that the spice flavors have been extracted, and adjust seasonings if necessary. Strain the aromatics and satchel from the broth, return to a sauce pot, and reserve for assembly. PRO TIP Bruise the lemongrass by hitting it with the back of a chef's knife before chopping it. Spicy Sesame Gochujang Honey Sauce Serves 6. Takes about 30 minutes. YOU WILL NEED sauté pan sauce pot measuring spoons and cups whisk INGREDIENTS 4 Tbsp gochujang 1/3 cup chopped fresh garlic 1 oz chopped yellow onion 3 ¼ Tbsp honey 1 Tbsp sambal olek chili sauce ½ cup water 1 ½ tsp sesame oil 2 Tbsp sesame seeds, toasted ¼ cup low sodium, gluten free soy sauce 1 Tbsp minced fresh ginger ½ tsp salt Cornstarch slurry as needed to desired consistency DIRECTIONS 1. Heat sesame oil in a sauté pan over medium heat and cook the garlic and onion until the onion is translucent 2. Add all remaining ingredients except for slurry and bring to a simmer. 3. Allow to simmer for 15 minutes and then taste and adjust seasonings as needed. 4. Whisk in slurry and lower heat, cook until thickened to desired consistency. 5.
