This edition of So Fresh features an interview with food artisan Nancy Harrison, owner of the thriving gourmet hub FoodLovers. We were also lucky enough to take 5 with FishCo’s John Fragopoulos, who sheds a little light on one of the biggest trading days of the year; Good Friday.
School is out again this Autumn, and we’re celebrating at the markets over one massive weekend, from the 17th until the 19th of April. Events include a petting zoo, jumping castle, face painting, and the upbeat acoustic sounds of solo artist Bill Olsen.

“More and more Aussies are enjoying fish and seafood for Good Friday”. For some Australian’s, the lead up to Good Friday means stocking up on food supplies in preparation for close of business. But for many others, Good Friday means a traditional serving of seafood for dinner. Belconnen Fresh Food Markets is home to two of Canberra’s best seafood retailers; FishCo Downunder and Sea Harvest Australia. For our friendly fishmongers, Good Friday marks one of the busiest days of the year, with extended trading hours and weeks of preparation for the big day. We take 5 with owner of FishCo Downunder, John Fragopoulos, to gain an insight into their Easter trading. Q: So, how do you prepare for one of the busiest days of the year? We typically triple our usual stock volumes of fish and seafood during the week leading up to Easter. During Easter week, we receive daily deliveries sourced from the Sydney Fish Markets, direct from Aquaculture farms, and direct from fishing trawlers on the South Coast. In preparation for our second busiest time of year, we contract additional fishing trawlers and commence discussions with our suppliers to secure the volume, variety and quality of produce that our customers have come to expect from us. We offer free parking, complimentary cleaning of whole fish, and free ice for all customers. We
remind customers to try before they buy cooked prawns and oysters and to please remember their cool bags. Q: White fish often features on Good Friday. Which varieties do you recommend? We sell a large variety of fresh whole fish and fillets. Generally speaking, lighter-fleshed fish have a milder flavor than darker-fleshed fish. At FishCo, our most popular white fish fillets are the fresh Australian Skinless & Boneless varieties which include Ling Fillets, Blue Eye Cod Fillets, and Swordfish. Fresh South Coast Snapper is our most popular white-fleshed whole fish, and we always make sure to have plenty of sizes available. Q: What’s in demand this Easter? More and more Aussies are enjoying fish and seafood for Good Friday. Our highest selling Easter produce are prawns (cooked and uncooked), oysters, lobsters, crabs, scallops, Salmon, Snapper, Bream, Trout and white fish fillets. This year we expect to have all these products and more available in abundance, and will receive up to three deliveries per day of fresh stock in the lead up to Easter. FishCo Downunder will be open on Good Friday from 8am to 1pm. SeaHarvest Australia will also open its doors for extended trading hours, from 7am to1pm.

3. Place sugar and water in a saucepan over a medium heat, stirring until the sugar has dissolved.

4. Increase heat and simmer for 5 minutes.

5. Add pears and the split and seeded vanilla bean.

6 cups water Âź cup vegetable oil
6. Reduce the heat to a simmer and cover your saucepan with a square of baking paper for 15-20 minutes, turning occasionally

7. Serve pear warm with a little poaching liquid and low-fat natural yoghurt

1. Peel each pear, starting from the stem and working your way down towards the base

2. Sprinkle each pear with lemon juice. This will stop your pears from browning while peeling the remaining pears.

FoodLovers also stocks a plethora of gourmet food products from many of our favourite Australian foodie icons, including Maggie Beer, Peter Watson and Charmaine Solomon, just to name a few.
25 years ago, my daughter Katie and I would frequent the Belconnen Fresh Food Markets to visit a little shop called ‘Mums Mess’, specialising in hand-made gourmet foods. I would stand in the shop and just absorb the smells, which instantly transported me to my childhood home and my grandparent’s kitchen!
And who is the woman behind this festive fare? Nancy Harrison; a food artisan who is completely and wholly dedicated to the creation of hand-made, gourmet products using traditional methods. Nancy sources only the finest and freshest quality ingredients from local farmers across the Canberra region, with
I started working for FoodLovers about 8 years ago (we tend to count our years by how many Christmases we have had!). I was still running my first business at the time, Coffee’s On Coffee Cart, just outside the Discount Pharmacy in Macquarie. FoodLovers was owned by Peter and Cath at the time, and

they would make batches of Melting Moments and Anzac Biscuits specifically for my store, because they were the closest to homemade I could find. One day, they asked me if I would like to work for them a couple of days per week, and now here I am! Where to next? At FoodLovers, we are always looking for new challenges. Last year, we catered for over 600 people at TEDxCanberra. This was our biggest test to date, with all sorts of dietary requirements needing to be adhered to in a very short time frame. We managed that quite well, but I doubt we will be in hurry to take on such a big task anytime soon! We are currently focused on smaller gigs, such as custom made picnic baskets for special occasions such as Valentine’s Day or Mother’s Day. I love being part of present giving with such a personalised, thoughtful touch. I am always experimenting with new flavours and the next trending cuisine. Special dietary requirements, such as gluten intolerance are also important to us. All of the products that FoodLovers bottles are gluten free, and we’re very proud of that. We also have a small range of baked goods that are gluten free. I would like to see all of our FoodLovers products gluten free in the next twelve months. It’s a bit of an ask, but as always, I am willing to accept the challenge! Care to share one of your famous recipes with our readers? Sure! We are always being asked for quick and easy recipes; especially desserts! Young Tilly, who works with me, suggested we try a Peach Melba Tart. I am into tapas and small serves, especially when I am catering, so I like to make them as individual tarts. Enjoy!

Careme Sweet Vanilla Bean Shortcrust Pastry (or Careme Sweet Gluten Free Shortcrust Pastry) Meander Valley Mascarpone FoodLovers Fresh Peaches with Galliano Syrup FoodLovers Raspberries with Vanilla Syrup
Method: 1. Roll the pastry to desired thickness and cut with circle cutter to fit tins (Nancy uses round-based patty pans). 2. Cook in preheated oven, according to packet directions. 3. Allow pastry shells to cool. 4. Spoon teaspoons of mascarpone into tart shells. 5. Top with sliced peaches and drained raspberries. 6. Place the drained syrup into a saucepan and allow to reduce further, then spoon over tarts for a shiny and delicious finish!
