Winter is upon us! As the weather cools down and we clamber around our heaters, many of us tend to catch the dreaded ‘change of season’ cold or flu. While having the flu is never a fun time, we’ve got a feel au naturel ways to help mitigate the misery and soothe your symptoms.

Stay rested If your body is fighting a fever or flu, the best support you can give it is rest. The body needs several extra hours of rest a day when ill, so get horizontal, chuck on the TV and get lazy. Keep hydrated Our bodies also require more fluids when sick, so be sure to stay well hydrated. We recommend water, herbal teas and a healthy soup. Gargle warm, salty water Gargling helps the body flush out your throat, encouraging any lingering phlegm to loosen and leave the body. Take a hot, steamy shower. A hot shower acts as a natural decongestant to relieve cold symptoms, as the hot steam moisturises your nasal passages. A hot shower may also assist you in breaking a fever, bringing your temperature back to normal. We’ve picked our top three flu flighting friends:

Vitamin D3 – Optimizing Vitamin D levels can prevent illness from occurring in the first place, and also assists in a speedy recovery. Vitamin C – Perhaps the best vitamin for cold and flu, vitamin C in large amounts can greatly speed recovery time. Zinc– Protect your friends, family and colleagues with this magnificent mineral. Zinc can prevent a cold or flu virus from reproducing, whilst also relieving respiratory symptoms. It can even be consumed in a handy lozenge, which also acts as a throat moisturiser. Eating infection fighting fruit and vegetables can also minimise your symptoms and speed up recovery time. We’ve listed a few of our favourites: Bananas and rice help to soothe an upset stomach. Blueberries are high in natural aspirin, which helps to lower fevers and reduced body aches. Carrots contain beta-carotene, which protects against colds and flu’s. Chili peppers can assist in clearing the sinuses, helping your body break up mucus in the lungs. Onions have phytochemicals and quercetin which assist the body by moving and breaking up the mucus in the head and chest. This is particularly helpful for chest infections and bronchitis. Garlic is a natural antibiotic, antibacterial and antifungal. Add garlic to your meal!

truffle and garlic roasted chicken ingredients (serves 1) 50g butter Âź chicken 15g truffle 4 garlic cloves salt and pepper olive oil

The ancient Greek thought truffles were made when lightning hit damp soil!

method 1. Preheat oven to 220 degrees C. 2. Combine the grated truffle with 50g of butter in a bowl.

3. Working carefully, separate the skin from the breast meat of the chicken with your fingers. 4. Stuff the butter under the skin, trying not to tear it. 5. Fill the cavity of the chicken with garlic cloves. Ensure the outside of the chicken is dry by patting it down with paper towel. Then, liberally drizzle olive oil and season with salt and pepper. 6. Place in a hot oven (220 degrees C) for 30 minutes to crisp up the skin, then turn the heat down to 180 degrees for 30-45 minutes, or until the juices run clear. 7. Rest and serve with steamed greens and roasted vegetables.

It’s true, winter isn’t many peoples favourite season; especially in the somewhat subarctic Canberra. But Canberran’s have a new reason to celebrate; the elusive black truffle that thrives in cooler climates. This year marks the very first Belconnen Fresh Food Markets Truffle Fair. We may have celebrated the truffle season before, but this year is different, and here’s why… 2015 brings our most extensive schedule yet, with a mammoth line-up that spans across many interests. The Truffle Fair itself kicks off the 20th of June, and continues on for seven weeks of enthralling entertainment. As with all of our events, the focus is on family, so we’ve included a raft of activities fit for kids. Drop your littlies off at our truffle treasure hunt and cooking class, or watch a live cooking demonstration with the whole family (and taste truffle, too!).

For the youngsters, we also have face painting, a jumping castle, a colouring in station and a petting zoo. The best thing about the Truffle Fair is being able to see, taste, smell and touch truffle. We have a total of 5 cooking demonstrations, and 5 cooking classes, as well as free truffle tastings scattered around the fair. Four of our vendors, including Food Lovers, Deli Cravings, Belconnen Deli and Cooking Coordinates are also selling fresh truffle and truffle products throughout the season, so be sure to pop down for the freshest truffle and most creative flavour combinations in town. And if truffles aren’t your thing, you can head down and listen to live music, or put up your feet with a cuppa while your kids enjoy our crafts, face painting and playground area.

market meats Want to know about your local market vendors? We took 5 with Bede to learn a little more about the man behind Market Meats. Tell us about your journey with the meat industry. I have always been passionate about food and where it comes from for as long as I can remember. My first stint in the industry started when I was 14 years old, working as a washer during the Sydney Olympics. Once I finished year 12 at Daramalan College, I took up an apprenticeship to follow my dreams of becoming a qualified butcher. I enjoyed the work immensely and was very interested in the management side of the business, so when I finished my time as an apprentice I became a second on charge. When

my predecessor was thinking of retirement, I put together a business proposal and took over the business. I figured that I had always treated the shop as though it was mine, so it may as well be mine officially! The most satisfying part of owning my own store is I can follow my own vision for where I want the store to be in five years’ time, adhere to the principals of quality and technique that appeal to me and help break the mould of what being a butcher is all about. I find sharing my passion and helping other feed theirs extremely rewarding. I also like the idea of keeping the skills and slurs of a traditional profession alive and handing them on, which is another bonus to owning Market Meats.


What’s your favourite cut of meat? T-bones, hands down. Many people don’t know this, but it’s actually porterhouse on one side, and eye fillet the other. Plus you get all of the extra flavour from the bone. What more could you want from a cut of meat!? Where is your meat from? The majority of our carcass meat is sourced locally from either Paul Darmody at Bungendore, or Matt Houston from Wombat. Meat that hasn’t travelled far always tastes better, and is much better for the environment. What makes Market Meats different to other butchers? Our point of difference is that we work to a standard, not a price. We have a much higher trim standard than others, and we dry age our beef to enhance flavour and tenderness. We source free range female pork locally from Matt in Wombat, and use this to make our own smoked bacon and salami’s, amongst other small goods. A lot of love and care goes into these products, and the final product really speaks for itself. Recently we started using locally produced cider from Gundaroo and honey harvested in Belconnen to make our sausages. Most importantly, we treat each and every one of our customers with care. We know most of our customers by name, love to have a laugh and can cut to your requirements. If you want a 1.5 inch thick steak, you got it! If you want your leg of lamb tunnel boned, we are more than happy to make that happen.

t-bone steaks with mushroom gravy and buttermilk mash ingredients (serves 4)

1kg potatoes, washed, peeled, chopped 1/2 cup buttermilk 50g butter, chopped 1 tablespoon olive oil 1.5 cups of water 4 t-bone Steaks 150g button mushrooms, finely sliced 1 tablespoon gravy powder 1/3 cup red wine 3 teaspoons wholegrain mustard chives, finely chopped, to serve

method 1.

Place potato in a medium saucepan of cold water and bring to the boil. Cook for 15 minutes or until tender. Drain and return the potatos to the pan. Add buttermilk and butter and mash until smooth. Season with salt and pepper.

Heat the oil in a pan over medium heat. Add steaks, cooking for 3 mins each side. Transfer to a plate, and cover to keep warm.

3.

Add mushroom to the pan and stir for 3 mins or until soft. Add gravy powder and cook, stirring, for 1 min or until combined. Combine the wine and water. Cook, stirring, for 5 mins or until mixture boils and thickens slightly, then stir in the mustard.

4.

Divide mashed potato among serving plates. Top with steaks and mushroom gravy. Sprinkle with finely chopped chives to serve.
