Cantaloup One of the icons of contemporary cuisine of SĂŁo Paulo, the restaurant Cantaloup brings together 18 years of excellence and quality in their menu and service. With more than eleven years’ experience under his belt, Chef Felipe Bronze is back at the helm of a restaurant with the opening of Oro, in Rio de Janeiro’s Jardim Botânico district, more than three years ago (2010). WIthin a year Oro colected the O Globo/Rio Show Best Restaurant of Rio de Janeiro and Veja Rio Best Chef and Contemporary Restaurant. The next year, in 2012, Oro Restaurant won the award for Best Contemporary by RioShow Gastronomy Award, sponsored by the newspaper O Globo; Best Contemporary and Chef of the Year by magazine Veja Rio 2012; Best Contemporary by magazine Época Rio and Chef of the Year by Guia 4 Rodas 2013; Best Contemporary by Época RJ 2014 and Rio Show Gastronomy Award 2014.

HISTORY The restaurant concept was executed with contributions by some important partners throughout the chef ’s career. Artist Dudu Garcia adorns the restaurant walls and is also behind the music playlist. Fashion designer Lenny Niemeyer created the staff’s uniforms, based on Bronze’s direction that they should symbolize the peace and elegance of the place. The resulting garments in gray khaki have a slightly oriental look. “I was so glad when my dear friend Felipe Bronze invited me to design the uniforms for Oro. It was a great chance to bring fashion together with the art of gastronomy,” says Niemeyer.
WINE The wines are selected by Argentine sommelier Cecilia Aldaz, who was raised in the Mendoza region by a family that grew their own vines and experimented with home wine making. The Oro wine list, with around 120 wines, is somewhat eclectic, juxtaposing classics from the old world with unusual options. “One thing we believe in here is using rare, little-known grapes with special characteristics that harmonize better with the Oro menu.”

CHEF ACHIEVEMENTS Felipe Bronze is one of the most highly acclaimed chefs of his generation. He has won more than ten culinary prizes, Award RioShow 2011 Quatro Rodas Guide of the 2011. Bronze started providing consultancy for Brasília restaurant, Bottarga, which was voted the city’s top restaurant by the local edition of Veja magazine and earned its first Guia 4 Rodas star in its very first year. Now, after a packed ten-year career, Bronze is bringing his wide ranging experience to his latest restaurant project, Oro. In charge of the avant-garde cuisine of Oro, Chef Felipe Bronze took the restaurant to the top of the podium of the city’s major culinary awards. Titles such as chef of the year and contemporary restaurant by Veja Rio Magazine; best restaurant, by Rio Show/O Globo; and new restaurant of Rio de Janeiro, by Guia Quatro Rodas, the most important turistic guide of the country, marked the first year of the restaurant.

MENU The menu is split into snacks, tasting dishes, entrées and desserts. “I want everyone that comes here to eat, drink and especially have fun,” comments Bronze. Cumurau, jambu fruit, citron, tucupi (a liquid extracted from manioc), and aviu shrimp are a few of the Brazilian ingredients he has chosen to include in his inaugural menu. The meal begins with snacks: finger food to replace the traditional bread basket and dips. The tableware, developed alongside Pé de Sonhos, was specially designed for the dishes, adding fun to the dining experience. The creative partnership resulted in bricks bearing the restaurant trademark in sunken relief, egg boxes sporting the restaurant’s colors, and other ideas to bring a smile to the customers’ faces. Another option is to follow the chef ’s suggested five- or nine-course dinners. Transparent cloches and unexpected fragrances and shapes give the Oro menu an alluring combination of sophistication and fun. Designed to be shared, the options like “All Caramel”, “All ice cream”, “All eggs”, with sweets made with eggs, or “All Chocolate” are a perfect, sociable way to end the night: six variations on a theme devised by the chef, which are finished at the table using liquid nitrogen, producing utterly irresistible creams. 37

ABOUT Ki The word ‘Ki’ means ‘tree’ in Japanese, symbolizing vitality − the perfect name for a restaurant that recharges your energies while relaxing in its tranquil ambience. Its sushibar and kitchen are headed by experienced sushiman Jorge Omura, whose original creations include classic Eastern dishes based on well structured recipes with a contemporary slant, prepared to order from fresh raw materials and featuring seasonal specialties. Since 1893 Colombo, the major symbol of the city, is part of the Historical and Artistic Heritage of Rio de Janeiro. Portuguese silver plates, chinaware made by Cia Vista Alegre, more than 500 old menus, photos and packages of products sold by the Pastry shop in the last century are part of the beautiful collection displayed at the Memorabilia Hall. Created in 2002, this Hall can be booked for events for up to 30 people.
