Introduction ~

The World Edition It's not often that one can say 'the world is their oyster', but for this edition of Best In Travel that's exactly what it was. On the heels of the recent 22nd annual World Travel Awards, where the best of the best in the hospitality industry were crowned, we zoom out all the way and assess the results and take a closer look at some of the winners.

Soon after embarking on the overwhelming journey, we realised just how much the industry grows with ever passing year, and similarly how much stiffer the competition gets. From all-inclusive resorts in the Caribbean to unsurpassed luxury in the Middle East, fine dining in South America and flying high in Asia, the options for international travellers are seemingly endless. One of our favourite developments in recent years, which consistently continues to improve, is the ease and comfort with which one can travel to just about anywhere on the globe. No longer is it case of a handful of destinations per year, it is now a handful of destinations per trip! Indeed, luxury service now extends to include the entirety of almost journey, beginning from the moment one leaves one's home. But enough of the small talk, let's get onto the good stuff. Here's to hoping that this issue will inspire and excite, and leave you with at least one new destination for your 2016 travel list.

Peru Paradise for the Palate

A LOOK BACK

Long before any outside contact had been made with Peru its indigenous peoples had harnessed the fertile land, producing an abundance of fruits and vegetables. Each successive wave of visitors and settlers that followed incorporated their own customs and ingredients into the what was available locally. Spaniards – who had themselves been influenced by the Moors, and had brought with them African food traditions – were the first outsiders to arrive in Peru, but far from the last. Over the course of hundreds of years immigrants from across the globe touched down on its shores, including many peoples from Asia and Europe. All of them adding their own culinary flair to the local cocina criolla (creole cuisine) and in so doing helped to shape Peruvian cuisine. For a time the heavy foreign influence overshadowed some of the local creations, until the arrival of the Novo Andina in the 1980's. This culinary movement sought to rescue traditional ingredients and ways of cooking and reintroduce them into the mainstream. Varieties of chilli peppers, tubers, and exotic fruits were amongst the many traditional ingredients which had been pushed to the culinary periphery only to become staples of the new movement. This resurgence of traditional ingredients and dishes in turn lead to a swell in Peruvians' appreciation for their gastronomy which flowed over in to the mainstream. Restaurants went to great lengths to incorporate and experiment with traditional recipes, creating uniquely local dishes, and today the country boasts countless dining establishments that offer an endless variety of truly Peruvian cuisine.

TRADITIONAL INGREDIENTS

Of Peru's many notable indigenous ingredients, the most widely used and recognised is the chilli pepper. Blessed with a considerable variety including limo, charapita, amarillo, panca, and mirasol, each with a unique taste, they are used across a range of dishes to create and enhance flavour without being overly spicy. The humble potato, of which over 3000 varieties grow locally, is used as often in main dishes as it is in side dishes, and along with many other tubers are a trusted staple of local food. Many age old ingredients like quinoa, kiwicha, corn from Cusco, tarwi (lupin), are still used, not only for their unique flavours, but also their exceptional health benefits. Peruvians also incorporated other cultures' foods into their own, but with distinctly local twists. Chief among them the Chinese custom of eating rice with meals, which is cooked with a spice, like cilantro, paprika, or palillo (turmericesque), to change the flavour and add some colour. Simlarly, other cultures which still thrive on Peruvian shores have incorporated local foodstuffs into their own dishes. Chinese chifas, which blend Cantonese and Peruvian culinary styles, are numerous in Lima. Nikkei, Japanese food with a distinct Peruvian twist, is also wildly popular.

SIGNATURE DISHES

With a long, rich history, Peru is home to more than 400 traditional dishes, which vary depending on their place of origin and ingredients used. One of the most famous though, is cebiche. Ultra-fresh fish is served raw in healthy sized chunks, marinated in key lime juice, and covered with Julienne sliced purple onions. Equally famous is causa, a mashed potato dish that is delicately flavoured and stuffed with one of a variety of meats. Regardless of which dish is being served though, the drink of choice is the same: pisco. Production of the brandy dates back to 1613, and it is available in a number of variations as different types of grapes and distillation processes are used in production. The liquor is used to make some amazing cocktails, many of which use the juices of local fruits to stunning effect. 21

AN AQUATIC WONDERLAND Zanzibar is a nation of two worlds: the ancient one on land that is home to crumbling Stone Town, pristine beaches, and tropical vegetation; and the other that exists under the surrounding waters, teeming with marine life. Although the former is all too familiar to most, the latter still holds secrets even to those who know it well.

After taking in the old-world charm of Stone Town, exploring the immaculate beaches that line the island's coasts, and venturing into its tropical heart, Zanzibar's waters offer a whole other world to explore. For decades the small island just off the East Coast of Africa was a major trade route for travellers from across the world. Countless ships, barges, and boats cruised the coastal waters, and although their numbers have diminished, dhows of the very same design still head out on daily excursions. However, they no longer carry spices, goods, and treasure, but rather contemporary adventurers: divers. The calm, warm waters of Zanzibar have excellent visibility – up to 60m at some points – and abound with incredible marine life and abundant reefs, making conditions excellent for snorkelling, and even better for diving. All divers, regardless of skill level, will find something to suit their tastes and ability in Zanzibar. Stunning reefs can be found at depths of up to 35m, and are home to hundreds of species of Indo-Pacific marine fauna. Also occupying those waters are an amazing variety of sea creatures including manta and eagle rays, sailfish, bottlenose, spinner and common dolphins, whale sharks, and more.

Zanzibar

For something more exclusive, one needs look no further than Mnemba Island. The tiny island is situated just off the East Coast of Zanzibar and is renowned around the world for its beauty and privacy. Its circular reef boasts aquarium conditions and conditions perfect enough to dive year-round. Exotic fish like blue striped snappers, barracudas, sharks, groupers, lion fish and more are a regular sight around the corals and the occasional pilot whale and whale shark have been also been spotted in the surrounding waters. Although not a scuba dive location, Chumbe Island Coral Marine Park should not be dismissed. The spectacular island offers some of the most exquisite coral gardens to be found anywhere in the world, and the entire habitat is extremely well-preserved. It is home to over 400 varieties marine creatures, some of which are extremely rare, and over 200 species of stunning coral, all in a very concentrated area. Zanzibar's incredible aquatic offering earned it the coveted title of World's Leading Dive Destination 2015, and is the perfect complement to its land-based attractions. Whether taking on advanced dives at depths of over 30m or snorkeling right off of the beach, the waters of Zanzibar are a portal to an unrivalled aquatic wonderland.

SHAMBALA PRIVATE GAME RESERVE North of Johannesburg , just two and a half hours by car or less than an hour by helicopter, lies the idyllic Shambala Private Game Reserve.
