stanbul is a city of surprises and striking contrasts, the old versus the new, traditional versus modern.

ERE’S a nice little anecdote for this month: Amander Meade has been interviewing the team at Egleton Nature Reserve for our annual publication, Local Living, and she tells me that Rutland Water is home to the first Ospreys to breed in England for 150 years, after a translocation programme. She also discovered that the very first Osprey brought down as a chick from the highlands is nicknamed Mr Rutland and he is now 18 years old. Every year he flies from East Africa to Rutland and arrives at the same time, on the same day! The team at Egleton think Mr Rutland hits the south coast around 7am, has a little rest and flies up the UK back to his nest between 12 and 1pm on the 17th March every year…. They all go and watch the sky and wait for him to come – incredible. Welcome to Pie Country! From squirrel pies to Melton Mowbray pork pies, we live in the UK’s pastry capital, says Matt Wright

J

AMIE Oliver and Jimmy Doherty have been filming in our region recently for their Channel 4 show, Friday Night Feast. They visited Great Food Clubrecommended business Nice Pie in Old Dalby, Leicestershire, and featured the farm shop and bakery on their show on Friday, February 13 at 8pm. They were in our neck of the woods because they were drawn to Nice Pie’s – the clue is in the title – yep, pies. In particular to its award winning squirrel pies, but that’s beside the point. The thing is, when Jamie was seeking pies he gravitated to the Leicestershire and Rutland area. That’s because we live in pie country, with Melton Mowbray – where the iconic pork pie was invented as a snack to feed fox hunters – being just a stone’s throw away. In fact, I understand that Jamie and Jimmy’s researchers discovered Nice Pie via the British Pie Awards, which are held annually in Melton Mowbray’s St Mary’s Church, with the next awards taking place on April 22 – I’ll tell you the results in a future issue. With all that in mind, I wanted to showcase some excellent local pie makers in this issue and also show you how to make your own Melton Mowbray pork pie at home, courtesy of pie maker extraordinaire Stephen Hallam of Dickinson & Morris.

Four great local pie makers Nice Pie of Old Dalby Nice Pie of Old Dalby, Leics, is run by Kath and Phil Walmsley and won 23 awards for its pies in 2014, including one for its now-famous squirrel pie. Alongside traditional favourites including steak & ale, Melton Mowbray pork, and smoked bacon & mushroom, Nice Pie also makes exotic pies such as wild hare and blackberry, rabbit in madeira, plus camel, zebra and crocodile. Nice Pie offers all Great Food Club members 10% off in its Old Dalby shop. Dickinson & Morris of Melton Mowbray Dickinson & Morris has been baking pork pies in Melton Mowbray since 1851. Today it is located in the famous Ye Olde Pork Pie Shoppe and is the oldest remaining bakers of real Melton Mowbray pork pies in Melton town centre. Dickinson & Morris pies have won a host of awards over the years and are something of a local – and now nationwide – institution. Nelsons of Stamford, Oakham & Uppingham Nelsons Butchers is a member of the Melton Mowbray Pork Pie Association and has been making excellent traditional Melton Mowbray pork pies with locally farmed meat at its purpose-built pie factory in Alma Place, Stamford, since 1959. Nelsons’ original shop in Red Lion Square, Stamford, has been a pork butchery since 1826.

How to make a 1lb Melton Mowbray pork pie

1

Pastry • 113g plain flour • Pinch of salt • 50g lard • 30ml water • Beaten egg to glaze Filling • 225g lean pork, chopped • Salt and pepper • 125ml pork stock & 15g gelatine

Make the pastry Sift flour and salt into a warm bowl and rub in 15g of lard. Gently heat the remaining lard and water together until boiling, then add to flour, mixing until mixture is cool enough to knead. Knead well. Reserve a quarter of the pastry for the lid. Shape the remaining piece into a ball-like dome and leave in the fridge overnight.

Raise the pie

Remove the pastry from the fridge two hours before making the pie case. Gently temper the pastry by squeezing so it becomes pliable [1]. Using your hands, carefully mould the pastry up & around a floured dolly or jam jar, ensuring the sides are of even thickness [2, 3 & 4]. Remove the pastry case from the dolly or jar.

The filling Chop pork and season with salt and pepper. Place filling into the pastry case [5]. Roll out pastry for lid, damp the rim of the pastry case with egg and press together [6 & 7]. Brush the top of the pie (not the crimp) with egg and make a hole in lid centre. Chill thoroughly, preferably overnight.

Baking Bake at Gas 4 (180C) for one and a half hours. When baked, remove from the oven and allow to cool slightly [8].

Jellying While baking, make jelly by dissolving gelatine in pork stock. After baking, make two holes in the lid and pour in jelly. Place pie in a fridge overnight.

Eating Eat cold and remove from the fridge at least an hour before serving.

Meat-free Masterpiece A delicious vegetarian dish with a local twist, by Sean Hope

Scaled-down pub classics From March 1 we’ll be serving pub classics in tapas form at The Olive Branch in Clipsham, priced at £6 each (two for £10 or three for £24). Dishes include scaled-down cottage pie, fish & chips, prawn & crab cocktail, chicken in a basket with pea puree, devilled whitebait, Scotch egg, Welsh rarebit, and pearl barley mutton broth. I love the idea of creating these comforting pub classics as smaller-sized dishes and hope they go down a storm.

his issue’s recipe is a vegetarian Anglo-Italian dish that combines a Leicestershire-made cheese (even though it has a Nottinghamshire name) with classic Mediterranean ingredients of ravioli and pine nuts. To make it a global creation, there’s sweet potato and saffron in there too, which are native to Central America and South-East Asia respectively. In the recipe I’ve suggested you make your own pasta using a pasta machine: they’re great tools to have and you can pick up a new one from around £20. If you don’t have one, you could always buy fresh lasagne pasta sheets from the supermarket and make your ravioli from those. Colwick, our Leicestershire-made cheese, is a soft, curdy cheese similar to cream cheese but with a slightly tarter taste. It is made by just one producer in the UK – Alan and Jane Hewson at Belvoir Ridge Creamery in the village of Eastwell. We use Colwick a lot at both The Olive Branch in Clipsham and Red Lion in Stathern and it’s well worth seeking out. You can see all stockists on Belvoir Ridge’s website ¬– belvoirridgecreamery.wordpress.com. If you can’t get hold of Colwick, try speaking to someone like Stamford Cheese Cellar to see what they recommend as a replacement, or alternatively just use your favourite cheese.

Ravioli of sweet potato with pine nuts, Colwick cheese and brown butter Serves 4 For the ravioli pasta dough • 250g pasta (‘00’) flour (available from most supermarkets) • Pinch of salt • 1 whole egg • 2 egg yolks • 2 tbsp rapeseed oil • 2 tbsp water • 0.5g saffron sachet 1. Mix together the eggs, water, rapeseed oil and saffron. 2. Place the flour and salt into a food processor, switch on, and then gradually add all the egg mixture until combined. 3. Remove the pasta dough from the bowl and knead on a floured surface for five minutes. 4. Cover the dough with cling film and allow to rest in the fridge for a further five minutes. 5. Using a pasta machine, start rolling out the pasta on the first setting. Continue to

For the brown butter and to finish • 50g unsalted butter • Juice of 1 lemon • 1 tsp fresh chopped parsley • 1 tbsp toasted pine nuts • 1 tbsp finely chopped onion • Fresh watercress 1. Place butter in pan and heat until golden brown. 2. Add the chopped onion and fry for 30 seconds. 3. Add the pine nuts, parsley and lemon juice, then season to taste. To complete the dish, crumble a little Colwick cheese over the ravioli, spoon the brown butter on top, add some fresh watercress and serve.

roll out the pasta through all the settings until it’s nice and thin. 6. Place four tablespoons of the sweet potato mix (see below) on half of the rolled-out pasta. 7. Gently lay the other pasta sheet over and press firmly to seal. 8. Cut out the ravioli pieces with a 6-7 cm pastry cutter. 9. Carefully poach the ravioli in simmering water seasoned with salt and pepper for 7-8 minutes. 10. Remove from the simmering water, drain, season and serve. recently combined a long awaited and much needed girly get together with work for this review, but sad to say we really did not make the most of the sumptuous menu – ‘three soups and one chicken please waiter, oh and we’ll wash it down with two bottles of fizzy water’! Well two of the soups were proper posh - Oriental Thai broth with squid and king prawns – delicious and delicate, served with warm bread. And the chicken breast was divine and hearty - stuffed with fig and gorgonzola over a bed of wilted, creamy spinach. We also enjoyed coffees and teas with the most mouth-watering homemade shortbread biscuits, but the snow cut our sojourn short as we left our extremely comfortable corner in haste to battle the Lyddington

Hill. (I did get stuck but thankfully a kind man and his Landrover came to my rescue!) Lunch for less is on at the moment and incredible value with a choice of 2 courses for £12.95, and clearly the offerings change regularly as the menu online is very different to the one we were proffered the day before. A sample lunch for less menu: Starters: Tomato & Red Pepper Soup, Croutons, Gravedlax of Salmon, Beetroot Salad, Sweet Mustard Dressing Black Pudding Fritters, Fig Chutney. Mains: Stilton Crusted Fillet of Cod, Braised leeks, Mash Potato Half Marinated Roasted Poussin, Sautéed potatoes, Green Salad Vegetable Cous Cous, Grilled Vegetables, Parmesan Puds: Beetroot & Chocolate Cake, Crème Fraiche Rhubarb Crumble, Clotted Cream Friday is Fizz night and I gather very popular with the locals – as is the restaurant – you have to book early to get your table of choice … in the bar, next to the fire would be as near to perfection as one could ask, in my opinion. SEAFOOD & GRILL COMES TO HARBOROUGH Sosennah Every pays a visit to Rocksalt in Market Harborough

W

e booked the new Rocksalt Bistro on a Friday night and were greeted with a buzzing and relaxed atmosphere. All around couples and groups had large paellas to share and after eyeing these up, I had to choose one too. I kept to the fish theme and was delighted with my succulent large scallops served with crispy pancetta and a tasty cauliflower purée and sweet caper sauce. My husband’s breaded Calamari was lightly fried and fresh with a light garlicky aioli dip. My paella didn’t disappoint and was full of mussels, large king prawns, clams and pieces of salmon fillet. The loin of cod came on a bed of pea pancetta risotto which gave it a superb aroma and a heavenly smokey taste. The other side to the Rocksalt menu is grilled meats, either Piri Piri chicken or steaks served with twice cooked chips, vine tomatoes and salad, which looked equally mouthwatering. In the interests of a full review, we treated ourselves to dessert of chocolate orange truffle and an espresso crème brûlée which satisfied our sweet cravings perfectly. The coffee beans covered in crunchy caramel were an added delight. Chef and owner Endrit (Eddie) says he researched his menu very carefully and wanted to offer Market Harborough something completely different at a reasonable price. He has opted for a small seasonal menu, using fresh ingredients that are cooked and presented at a high level. As much as possible his ingredients are local, using meats from Bates’ butchers and fresh seafood is delivered daily. Whether you are a couple

going for a treat dinner at the weekend, stopping in for a simple weekday lunch or a large family get together, I would highly recommend Rocksalt for its simple, flavoursome, quality food. Creating the Next Generation of Catering & Hospitality Stars By Nicholas Rudd-Jones

B

EING a lifestyle journalist, I get to undertake many assignments that are very enjoyable. But none more so than coming to take a look at the Professional Cookery and Hospitality courses at New College, Stamford – spending a couple of hours in the kitchen, then enjoying the fruits of the students’ labour.

First, the facts New College Stamford runs a flourishing catering department, with close to 50 students across 3 levels, as well as an Apprenticeship service for employers. Students typically join at 16, and from Level 2 onwards also have placements in the real world as well as continuing with their education. They find it a big change from a school environment to one with specialised training and real world experience. Graduates of the course include many notable chefs, including Sean Hope at the Olive Branch, Shaun Mason at Rick Stein and Aaron Ashmore, a semi-finalist of MasterChef. It is the industry led tuition they all undertake, alongside highly professional training that allows them to progress to these top careers in top institutions, and this is what sets the course aside from traditional Catering and Home Economics courses.

The tutors One of the keys to the success of this course is undoubtedly the strength of the tutor team, combining as they do years of industry experience with a real passion for helping their students to success. Iain Cadey is the Level 1 course co-ordinator. He came from the food industry in King’s Lynn and before that the hospitality industry, joining the college at the start of the year. Vicki Brown is the Level 2 co-ordinator. She beams enthusiasm and commitment and has worked in hospitality all her life, including at the William Cecil. She has a particular interest in front-ofhouse, and takes care of service each day. She is so proud of students who, on the first day, might be lacking in confidence or direction, but find in customer service an opportunity to shine and do a job really well. Phil Matthews is the Level 3 co-ordinator. He is a very experienced chef and has a particular passion for sourcing good ingredients. Not content with sourcing as much as possible locally (which the college does), he is also a passionate vegetable grower in his large Stamford allotment where he spends much of his free time. This team is also supported by a very capable group of food technicians; everyone seems to be busy all the time, but never too

busy not to smile and share an idea about how to perfect a cooking technique.

The students Without exception, the first thing you notice about the students is that they are thoroughly enjoying what they are doing; there is a strong sense of camaraderie, and every time I looked up I saw that everybody was busy doing something productive. Until greater specialisation in Level 3, the students need to learn all aspects of the catering industry – hygiene, menu planning, food preparation, cooking, plating and clearing up in the kitchen; and developing front of house skills. Front of house skills include taking an order, how to serve, coping with customer complaints. Within the catering industry both locally and nationally, the New College Stamford course is recognised for its specialised training and high quality service and products delivered from this through the Gallery Restaurant. Some students naturally gravitate to cooking and others to front-of-house. At lunch we were served by Joshua & Nam, clearly two individuals who relished customer service. In the kitchen I met a 5th generation Asker (the bakers), who looked as if he was destined to progress on the chef side. But whichever side you choose, many of the skills learnt are applicable no matter what you go on to do – working in teams, multi-tasking, communication and customer service – all learnt in a real-life environment.

The pastry kitchen New College Stamford is particularly renowned for its pastry skills (well, it was until I had a go).

Andy Cluskey supports the pastry kitchen 2 services per week. He has 28 years experience in the catering industry, including stints at the Marriott and Loch Fyne, and he still works in industry on the days he’s not in college. I joined a couple of students, and we kneaded and formed a small latticed loaf with sunflower seed topping. Nothing quite like getting a journalist actually doing something to shut them up and make them concentrate. Much of the pastry kitchen output is available from the on-site shop.

The Gallery Restaurant But of course it’s the Gallery Restaurant itself that enables all the training to come to fruition in exactly the same way it would in a commercial restaurant. We sat down just as a large group of regulars arrived. “It’s so nice to see a smiling face,” said the first lady as she took off her coat. This group of young stars are really getting it right and will go onto great things I feel sure.

Neuro Physiotherapy

Kinesiology

Whilst many of us are familiar with the term Physiotherapy, less is known about Neuro Physiotherapy and how it can provide relief for patients suffering from movement difficulties, whether due to age or neurological impairments. Tanya Riddlesdell is a Neuro Physiotherapist (specialising in MS, Parkinsons, Head Injury, Spinal Injury and Stroke) with 20 years’ experience in the NHS and in the last 5 years has also been working with private patients in the Rutland area with much success. Treatments cover exercise programmes to treat symptoms, fatigue management, postural advice, strengthening programmes and monitoring symptoms to provide ongoing support. Tanya starts with a consultation to determine the exact nature of the patient’s needs before running a six week session with a group tailored specifically to individuals with similar requirements. If booked individually, costs are £40 for the initial assessment and £15 for each class thereafter (£130), or £118 if booked and paid for in one go. Home visits are available by separate arrangement. Having gained popularity in recent years, Kinesiology is fast becoming recognised as a key treatment for resolving complex and difficult health problems. Essentially it is the study of human movement and it can help identify blockages within the body which may be causing health issues by means of a muscle test. I went along to visit Kinesiologist Anna Findlay who began by systematically exerting light pressure on my limbs to see how the muscles responded. Generally, the tests detected that I was in good health (always good to know!) but that I could re-balance myself emotionally by acknowledging feelings of grief and regret and also that my spleen and stomach were working slightly too hard. Once these areas had been identified, Anna stimulated certain acupuncture meridians to restore the muscle’s strength and work on the corresponding organ. Additionally, homeopathic vials can be selected which could indicate potential stressors to the body such as candida, good bacteria deficiency, blood sugar irregularity and other imbalances. I was given a formula for strength and vitality and also one for balancing hormones. Initial consultations take 11/4 hours and cost £60 with subsequent 45 minute appointments costing £40. Clients would need to expect to pay for nutritional or homeopathic supplements if applicable.

Vale of Belvoir: Canals, Wharves and Old Railways This walk takes you along a charming stretch of canal, an unexpected reservoir and culminates in a ‘picture postcard’ view of Belvoir Castle

POINTS OF INTEREST The 33-mile Grantham Canal goes from Grantham to Nottingham. The canal was conceived and constructed in the ‘canal mania’ days of the 1790s. It continued to make a profit until the opening of the Grantham to Nottingham railway in 1850 signalled the beginning of a steady decline in the commercial use of the canal. It was closed to all traffic in 1929 and was ‘abandoned’ under the London and North Eastern Railway (General Powers) Act of 1936. Parts of it have now been restored; you can find out more at www.granthamcanal.org Two reservoirs were also needed to feed the canal, one of which was the Denton Reservoir, which you see, and the other at Knipton, about 3 miles away Belvoir Castle is the fourth to have stood on the site since Norman times. The existing Castle was completed in the early 19th century after previous buildings suffered complete or partial destruction during the Wars of the Roses, the Civil War and a major fire in 1816. When ironstone was first quarried locally in the 1870s near Woolsthorpe at Brewers Grave (at the top of the road leading down into Woolsthorpe), the ore was transported by tramway to Woolsthorpe Wharf and shipped out by barges. However production soon outstripped what the canal could cope with and so an extensive railway system was developed from 1883 onwards, beginning with a branch line from Belvoir Junction to Woolsthorpe. This was soon extended as other deposits were exploited and by 1916 the line had reached Denton and Harlaxton. When quarrying ceased in 1974, this branch line fell into disuse and is now the cycle track that you walk along. The Rutland Railway Museum, dedicated to the East Midlands’ ironstone quarry heritage, has a locomotive shed from the Woolsthorpe ironstone quarry system on display. Walk north along the pavement out of Woolsthorpe village, cross the crossroads into Sedgebrook Rd and then take a right turn to Woolsthorpe Wharf Cross the canal bridge and head right (SE), staying on the towpath until you reach Bridge 65 at Denton Wharf, which you cross over to the west side Shortly after the bridge, take a left turn along a permissive path, heading along the other side of the canal; at the next field boundary take a diagonal across the field to the left hand corner of the field; then follow the edge of the wood to a stile and track Turn left along the track and then shortly right up to the reservoir; follow it round in a clockwise direction until you reach the entry stream; follow the footpath alongside this stream to the road, then turn left into Denton Take the first right and then stay on the Belvoir Rd (ignoring two left turns). Just after the road swings round to the left, take the footpath leading off on the right hand side in a northerly direction; when you reach the disused railway track, join it and continue heading north (right) After about a mile, take the first footpath that you come to, taking off up the hill in a westerly direction; at the top of the hill this path briefly joins the Viking Way, then it takes off separately again across a field in a westerly (whilst the Viking Way is heading south) Cross this field to the road, cross over the road into a small wood and you soon come out in a field overlooking Woolsthorpe with a great view of Belvoir Castle. Turn right Head down the hill keeping the woods on your right and cross the cricket field at the edge of the village on the left edge. Go past the Chequers Inn and you will shortly be back at the Main St and Post office.

What has made the Goldmark approach so distinctive and effective is that they go far beyond just the display of pots; they delve into the creative process, producing insightful and evocative films of the artist’s inspiration and working methods and a sumptuous brochure. When you look at a potter’s work at Goldmark, you feel you are a witness to the whole creative experience, not just the end product. The film that Jay Goldmark made of Anne Mette Hjortshøj’s work, for example, was incredibly evocative; showing her at home on the tiny island of Bonholm off the coast of Denmark, sourcing clay from the cliff faces on the island and turning her pots in a converted cowshed. The film launched on to the internet, went viral and was watched with interest by the Queen of Denmark. She then paid a state visit to the island, which was covered by Danish news. That in turn went onto the internet and was widely viewed in the USA; hence the Gallery started receiving orders for her pots from the States. The result of this holistic approach is an impact and reach that outstrips any other gallery. An exhibition by Lee KangHyo has just concluded, one of the most successful ever, selling 100+ pieces. Lee Kang-Hyo is widely regarded as one of the finest Korean potters working today; and is world-famous for mastering the traditional Korean technique called Onggi – a technique that allows him to make enormous, often man-sized pots.

Upcoming Exhibition March sees the return of the Frenchman Jean-Nicolas Gérard, who last exhibited at Goldmark a couple of years ago. The exhibition opens on March 21st Jean-Nicolas Gérard was born in Brazzaville (Congo) in 1954 and returned to France in 1961. He started studying ceramics in 1978 and was Jean Biagini’s student at École des BeauxArts in Aix-en-Provence. He also trained with Claire Bogino. Often labelled the potters’ potter Gerard’s work has a spontaneity that so many strive for. His work has now gained international acclaim and he has exhibited all over the world, including America, Australia, China and Japan. He is one of those rare potters who brings genuine life and gusto to contemporary slipware, investing the tradition of terre vernissée with a fresh and expressive energy unlike any other.

After what really feels like an extended bleak Mid-Winter, the days are lengthening and the temperatures are rising, if only a little! It can be tough cooped up at home with little ones, and early spring is the ideal time to get out and about; so Isabella Hamnett explores the local area to discover some fun attractions and activities to do with kids 1. WEST LODGE RURAL CENTRE One of the best loved children’s attractions in the area, West Lodge is all set for another busy year. Here, children of every age can meet and learn about a range of farm animals, including fluffy young chicks, rabbits, guinea pigs and pygmy goats. Delights abound, with hands-on experiences embraced – children can groom a pony, bottle feed a lamb, cheer on the renowned piglet race or visit the Cuddle Corner. The free barrel ride (every hour) guarantees much laughter and squealing as it splashes through water and children can peep at the sleeping dragon, before tiring themselves out in the adventure playground. The many nature trails range from a-quarter-of-a-mile to three-and-a-half miles, meandering through conservation award-winning farmland, woods, meadows, streams and ponds to enjoy a broad diversity of wildlife. If the school has invited current parents along for you to chat to and ask questions of, all the better. Find out what really makes the school special - perhaps an extended and exciting curriculum, or outstanding facilities - but most importantly, whether it fits your needs as parents and as a family. Supervised homework and after-school care and activities are increasingly in demand, and often boarding schools will offer more of these. Indeed you

may be thinking about boarding as an option; if so make sure you take a good look at the facilities and satisfy yourself that your child will be both fully occupied and brilliantly looked after. When all is said and done, it is often a gut feeling about whether or not a school feels ‘right’: as parents our instincts are rarely wrong. A Toast to St Dyonisius Words: Caroline Aston

I

CAN clearly remember the first time I saw the stately parish church in Market Harborough – but the thing that brought me screeching to a halt wasn’t anything to do with its undoubtedly fine architecture or striking location in the middle of town. No, it was its name, or rather the name of the saint it’s dedicated to. Never, ever in a lifetime of exploring churches far and wide had I ever before read the name ‘St Dyonisius’ before and it seemed so, so wrong. You see, the only Dionysius I had heard of was an epic hard drinker Greek god. Surely, I thought, this gentleman could possibly only qualify as a patron saint of weekend bingers! My Dionysius was worshipped by the ancient Greeks as god of the wine harvest, wine making and drinking, of ritual madness, fertility and the theatre. How on earth was his name linked to Market Harborough? Well, of course, the answer is obvious. I had got the wrong Dionysius altogether but when I looked into the matter I found that there were several saintly men who share the name. For example, I was very taken by St Dionysus of Zakynthos, born in 1547 on the island of that name in the Ionian Sea and eventually, after a brief spell as an Archbishop, settling down there as Abbot of a monastery. His death in 1622 was peaceful and his body found to be incorruptible, giving off a heady scent of flowers and frankincense, rather like spiritual aftershave! Believers say that from time to time it becomes impossible to open his tomb: they say that happens when the saint has left for a while, moving in the community to work miracles! The proof? Apparently when the tomb is able to be opened, seaweed is found at his feet and his slippers regularly wear out, giving him the nickname ‘The Walking Saint’. Even stranger is a St Denis, also called Dionysius, who met a gory end shortly after 250AD. This former Bishop of Paris was beheaded for his faith and legend tells us that he then picked up his head, tucked it under his arm and walked six miles while the severed head preached a sermon on repentance all the way! Denis then dropped down dead and the place where he fell became the site of the Basilica of St. Denis, burial place of the Kings of France. And here is a bit of Dionysius trivia for you: a decapitated saint with a talking head on board is known as a cephalophore – so there! Eventually I tracked down Market Harborough’s Dionysius, or to give him his impressive full title ‘St. Dionysius the Areopagite’. And, in case you are wondering, an areopagite is someone who was a member of the Areopagus, a religious council that met on a hill near Athens. Chapter 17 of the Acts of the Apostles tells us that our Dionysius heard St Paul preaching and was converted to Christianity sometime during the first century. He appears to have become Bishop of Athens and, in a rather unchristian manner, left his wife and children to travel with St Paul as a missionary. He seems to have visited Jerusalem and was present when St Paul was martyred in Rome. This event inspired Dionysius to seek the same end for himself and he set off for Gaul (France) to preach to pagans there. His fervour seems to have resulted in quite a few conversions but his luck finally ran out around 96AD when he was seized and killed on the orders of the Roman Emperor Domitian. It was another beheading and Dionysius’ head rolled some way from his body and ended up at the feet of a devout Christian lady called Catula who had it buried with the rest of him at her expense. In case you are not confused enough already there is also a PseudoDionysius, a theologian who jumped on to the REAL Dionysius’ religious bandwagon about 400 years later by using the beheaded saint’s name on his writings to give them added significance. We love to sneer at ‘pseuds’ these days but there you have a very early example of the phenomenon! So next time you pass by the church that bears Dionysius’ name glance up at that amazing 154ft high steeple (one of the finest in England), admire the elegant stone tracery, set your watch by the 1791 sundial and maybe even pop in to admire the boxed pews up in the north and south galleries. At least you now know a little about the long-dead man named in the dedication – and harking back to my original mistake it might even be appropriate to raise a glass of wine to him! There’s not the same seasonal change in wedding dresses and classic cuts will be around for a very long time. Nevertheless there are certain trends within each new collection. This year the key things are: • Back detail • Muted colours • Lace Back detail in a dress is always important as it’s the very place the guests look when you walk down the aisle. Whatever guise your personal aisle takes, whether it be long and grand in a Cathedral, or a sand filled beach, you still make an impact on your arrival. This year there are many dresses with low backs, or cut-out detail to give a little tease, or lace covered low backs depending upon how daring you want to be! The emergence of colour in wedding dresses is very noticeable this year. Subtle shades of colour in a dress can really help to suit different skin tones and hair colouring. Warmer shades can work with darker colouring and this year there is the introduction of some cooler tones such as blues and silvers which create a lovely look. But don’t worry if colour isn’t for you because classic ivory will always be in vogue. Lace is popular again and specific lace details rather than all-over lace is a beautiful feature for 2015 and here at Vow we are also seeing the increase of lace accessories to personalise your look such as overlays, straps, wraps and even gloves. So although there are overall trends don’t panic about them because they don’t move that fast. Tin Pigeons Take Flight Amander Meade meets the Rutland musicians ruffling feathers in the folk music world

I

f you haven’t yet heard of the Tin Pigeons, that could be set to change as the four local musicians look forward to the busiest year of their career so far. Now in its fourth year, the Rutland based band comprises brothers George and Fraser Norton, Tom Quenby and Douglas Tawn who between them play guitar, banjo, mandolin, bass guitar and percussion as well as providing vocals for their selfpenned melodies. The boys are still in full time education ranging from ‘A’ levels to degrees but have done so well in the last couple of years, they have decided to take a year out from further study to see what opportunities exist for the band and where it could take them. “We have been so surprised by the great reaction of audiences and love playing together so much, we decided we should give the band our full time and attention for a while and have lots of plans to play live this year,” explains Douglas. Although playing live is certainly the focus for this year, the band will use their shows to promote their second EP – ‘All’s Spent’- released at the end of last year. “We wanted to get some of our best tracks down on an EP so we have something to offer if people have come to see us for the first time and want to hear more. We are really pleased with the reaction so far to ‘All’s Spent’; we wanted to create a really cohesive recording that reflects what we do and I think we did exactly that,” adds George. The band are excitedly looking forward to a busy schedule of live events this year and will play festivals across the UK throughout the summer and beyond as well as being much in demand as a wedding and function band. “We have so much more confidence as a live band with our years of busking and many, many local appearances behind us,” says Fraser, who goes on to describe the fear the boys felt in their early days before appearing at a local beer festival. “The band before us had been booed off

the stage and the technical crew were all wearing safety headgear to protect them against missiles,” he remembers. “Luckily, the crowd took to us and we went down a storm and after that, our confidence to go forward with playing live just grew.” Highlights so far include an appearance at Cambridge Folk Festival where a well-timed rain shower created a capacity crowd inside the tent where the boys were playing. “Another great moment was at my university summer ball,” says Douglas. “We were introduced by Sir Ian McKellen who then stayed to watch our entire set so we had one eye on the audience and one eye on ‘Gandalf’ in the wings – a very surreal experience.” All self-taught musicians with not a single lesson between them, the band can’t quite decide how (or even if) their music should be categorised but if you think of very tight, soulful harmonies combined with traditional instruments and overlaid with a pop feel, you will almost have it. The band plays a mix of their own material and covers of songs they love – in a nutshell, indie folk. I wonder if they are tempted to put themselves forward for one of the popular TV talent shows masterminded by a certain Mr. Cowell to shortcut the route to success and am told in no uncertain terms that this strategy is not in the plan. “We’d rather do it our way,” insists Fraser who is a big fan of busking to improve his craft, “I think of busking as a live rehearsal with immediate feedback and cash if we’re lucky,” he laughs. I think if the next year goes as well as they hope, their busking days may soon be over so look out for the boys on a street near you before they hit the big time – without any telephone votes involved at all. • The Tin Pigeon’s current EP ‘All’s Spent’ features the title track, ‘If You Mean It’, ‘Salinas’ and ‘Over Tennessee and is available on Itunes for £3.69. Oh What A Lovely War! Wendi Peters is best known for creating the character of the infamous Cilla Battersby-Brown in ITV’s Coronation Street. Prior to TV fame Wendi was a highly acclaimed stage actress and is about to star in Joan Littlewood’s legendary satirical musical ‘Oh What A Lovely War’ which has been revived to commemorate the 100th anniversary of World War One and comes to Curve during April. Amander Meade chatted with Wendi during rehearsals How did you begin performing – were you a stage school kid? Not at all – although I would have loved to have been! It really started with my absolute fascination with all the old MGM musicals which I would watch avidly as a child. I definitely think I was born in the wrong era – I wanted to be Ethel Merman. My cousins had started to go to ballet classes and I decided I would join them and that fuelled my love of standing on a stage and performing. From there it was school plays, amateur dramatics and aged sixteen I left school and went to London to drama school to study musical theatre. Readers might be surprised to learn you made a film with Sandra Bullock and Chris O’Donnell – did you enjoy the Hollywood experience? Well it was less Hollywood and more Shepperton Studios and I was only there for three weeks so very little glamour either. I had a very small part as a nurse in ‘In Love and War’ – another WWI piece funnily enough. The best part of that job was watching Sir Richard Attenborough at work directing and chatting to Sandra Bullock in makeup – very surreal. Cilla was an instant hit in Coronation Street and made you a household name yet you left after only four years to return to the theatre – why is it such a lure for you? I think it’s in my bones. I just love the instant rapport and feedback you get from performing to a live audience, there’s just nothing like that for me. I am really happy to do lots of different things and have been lucky enough to do so in my career but it’s very easy to tempt me back to live theatre. This highly acclaimed revival of ‘Oh What A Lovely War’ is directed by the multi awardwinning Terry Johnson – how would you describe the show? Also starring Ian Reddington (EastEnders) and Christopher Villiers (Emmerdale), it is an absolute riot of music and colour, and features some of the greatest songs from the First World War. The cast all love the experience – it’s just an incredibly historic piece of theatre. I love the fact that we are opening at Stratford East Theatre which is where the show opened originally, before we tour the country until the end of May. I also love the fact we all play at

least five characters which is a challenge. This show offers so much light and shade; one minute there will be laugh out loud satire, the next you could be singing along with one of the songs and the next wiping tears from your eyes. It has been moving for me to learn about this period in our history and I hope we can leave audiences with something to think about. We are hoping that an older generation will bring their grandchildren along – that would be brilliant. Will this be your first time at Curve – what do you think of the theatre and the city? This will be my first time performing here but I have seen several shows including Adrian Mole in which my cousin’s son Joel played Adrian brilliantly. We are moving the performing bug on a generation. The theatre itself is incredible and the audiences here are always so receptive and encouraging. I am really looking forward to our week in Leicester. What plans do you have after this tour? No plans…… A bit of a break and after that maybe some more TV for a change.
