T

his time last year I asked fitness expert and trainer Mary Hardwick from Inspire2tri (www. inspire2tri.com) for advice for keeping fit in 2014. But did I adhere to it? 1) ‘Chase your dreams but start real.’ – Having always done a fair amount of running, I know that I am not marathon material but it was time to sign up for an organised event. 2) ‘Don’t set everything in stone too early.’ Having looked around at a variety of competitions, I decided a triathlon sprint was the one to aim for – the distance is not insurmountable and I have always enjoyed swimming (helped along by a one to one with Mary in her endless pool), although open water will be a challenge. I also decided to give myself plenty of time - May 2015 is the goal (and the start of the triathlon season). 3) ‘Get creative to stay on track. Make a list of fitness alternatives to substitute when you can’t meet the original plan. Anything from a 5 minute core workout to a few minutes running up and down the stairs are great substitutes.’ – I have tried many new courses this year including Kettlesize, Yoga, Body Pump but my quick fix is the Flabelos Vibration Plate, which offers a workout in 10 minutes. (Find it at Barnsdale Gym and a newer version now at Olive Tanning). 4) ‘Little and often’ – I have tried to exercise for at least 40 minutes, four times a week but work and life often get in the way! 5) ‘Have fun!’ - If I am honest I find exercising a chore so, for me, variety is key and we are lucky to have so many gyms and personal trainers in our area – see pages 12 and 13 for some suggestions. In Steinbeck’s celebrated words, ‘the best laid schemes o’ mice an’ men gang aft a-gley’, and indeed they have - with an imminent knee operation that will prevent me from training for 6 weeks but thankfully I took Mary’s advice and planned far in advance. And, as luck should have it, Mary hosts a weekly rehabilitation class at her Studio Barn in Manton, led by physio Julie Peach, so hopefully by May I will be ready… watch this space. BUDGET FRIENDLY TREATS If the festive season has left you with a financial hangover as well as an alcoholic-induced one, then your beauty and fitness routine needn’t suffer. Just follow these simple tips and you’ll find that looking good needn’t cost a fortune: Getting fit: Not being able to afford the latest Nike trainers is no excuse for not getting fit! If you haven’t exercised in a while then start off with a lowintensity workout such as power walking; your old tracksuit bottoms and a t-shirt will be absolutely fine for this. Rope in a friend as you’re far more likely to stick with it if it’s an enjoyable experience and you’ll soon start to tone up, lose weight – and catch up with the latest gossip on the way round! Sparkling skin: Make the most of those leftover cranberries by whizzing up this homemade face mask which is said to be a highly effective exfoliant for lacklustre skin: put a handful of fresh cranberries, a handful of seedless red or green grapes, 2 teaspoons lemon juice and 1 sheet of gelatin in a food processor for 20 seconds until the ingredients form a paste-like texture. Pop in the fridge for 45 minutes to thicken before spreading the mixture on clean, dry skin and leave for 15 minutes before rinsing off with warm water. Super-shiny hair: Think you’ve had enough beer over the party season? Think again! As a highly effective treatment for silky, smooth hair, it’s time to crack open another can. But whilst a bottle of Budweiser might be fine for drinking, the best choice for your hair is IPA beer which has an intense concentration of hops to fortify and strengthen hair, whilst the essential oils in the hops are rich in antioxidants and astringent properties too. Simply pour the room temperature beer into a spray bottle, apply onto hair after shampooing in the shower, leave for 2 minutes and rinse off with cold water. Michelle Hansel gets the lowdown from owner and passionate cook, Jane Clifford BACK TO SCHOOL Jane Clifford has been developing her business and her craft for producing great food for the past eight years and is now set to expand and offer new and exciting courses in a newly converted kitchen at the popular Wistow Rural Centre, Leicestershire. Courses will take place every Saturday and will include a range of demonstrations and cooking classes in cake making, cake decorating through to student one pot meals and bread making. CAFÉ CULTURE Wistow Bistro and Café has been delighting customers with its beautifully cooked, locally sourced and well presented meals, cakes and puddings for some time and is a local gem where people meet, eat and enjoy the congenial atmosphere. A great way to celebrate a birthday or special friendship is to partake of their afternoon teas. For £10 per head indulge in sandwiches, scones, cakes and crisps and relax, a perfect way to pass the time before a little shopping in the boutiques and garden centre in an idyllic setting. Tapioca pudding. Do you remember eating it in the school canteen? In my day it was nicknamed ‘frogspawn’ and it didn’t exactly have the kids queuing up for more. In fact, a recent survey put tapioca pudding top of the list of the most hated UK school dinners, just ahead of cabbage, overcooked veg and lumpy custard! But I’ve got news for you. Tapioca is delicious. Or I should say, it’s delicious when it’s cooked well and served with the right ingredients – not when it’s soggy and looks like frogspawn. Here’s a recipe to banish those school dinner demons.

t’s that time again! We’re teaming up with several other local restaurants to run our annual Lunch For Even Less deal from January 12 to March 30. Here’s a sample Lunch For Even Less set menu… Starters Seasonal soup. Sardines on sourdough toast, tomato, rocket. Sliced lamb breast, mint, basil, salad, aged balsamic.

Toasted vanilla tapioca pudding with spiced fruit compote Serves 8 For the tapioca pudding • 600ml milk • 400ml whipping cream • 90g tapioca

• 120g caster sugar • 30g butter • 1 vanilla pod, split • 13g agar

1. Heat the milk and cream in a saucepan and when nearly up to boiling point, add the tapioca and stir regularly. 2. Add the sugar and butter and simmer for 15-20 minutes until the pearls are soft and translucent (and look a little like frogspawn!). 3. Add the agar and stir well. 4. Place the pudding into a deep-sided tray lined with clingfilm and put into the fridge. Allow to set over night. 5. Turn out the set tapioca pudding onto a board and portion into equal sizes. 6. To serve, place the portioned tapioca onto a baking tray lined with silicon baking paper, then bake in a pre-heated oven at 190C (Gas Mark 5) and warm for five minutes. 7. Sprinkle the top of the puddings with caster sugar and caramelise with a blowtorch before serving on plates with the spiced preserved fruits and a dollop of clotted cream. • 1 vanilla pod, split For the spiced fruit compote • 6 cardamom pods • 8 dried apricots • 1 slice lemon, orange and lime • 4 dried figs • 10g fresh root ginger • 8 pitted prunes • 110g caster sugar • 8 blackberries • 500ml water • Half a stick of cinnamon • 1 star anise 1. Place all the ingredients into a large saucepan, bring to the boil, then turn down to a simmer and cook for five mins. 2. Remove the pan from the heat and cover, allow to cool to room temperature, then serve.

Jackson Pulls Out the Stops Ross Thain, chartered surveyor and food reviewer, went back to a favourite haunt

S

tretton is a quirky village. The A1 has always by-passed it, with the settlement being historically set to the east of the Great Road and it is one of those villages that always seems to be by-passed on the way to Clipsham or Castle Bytham. The village is one of 17 Strettons in England, all but two are on roman roads, with our own Stretton being on Ermine Street, as the very name Stretton is derived from the Old English words stræt meaning “Roman Road” and tun meaning “settlement”. Turn off the main road and into the village and it is charming, with a delightful, motley collection of houses (The Manor House being the finest), roof styles and materials; and The Jackson Stops is no exception. Half of the roof is thatch, half pantile. A small part of the ground floor is a cosy little bar, the other (main) part restaurant. Originally, the pub was called The White Horse but (allegedly) a For Sale sign was outside for so long that it took over the name of the Agent – Jackson Stops. Back in September 2003, I wrote that this was the most cosy bar in the County and it remains so. Holing up there for an evening must be one of life’s greatest local pleasures. Nurdling is also available – go there to find out. The pub is under the new management of Rob Knowles, wife Mandy and son Richard,

all of whom have been there for about four years. Rob understands that he has a “good loyal following and I now want to do new and different things but to maintain my loyal local base, doing some casual dining too”. With two courses at a “lunch for less” at £12.95 this is not expensive and should continue to maintain a high profile locally. We tried a taster menu which was consistently good and sometimes excellent. Our saladette of goats cheese, honey roast figs and sun blushed tomatoes was the latter and a really good way to start the evening, washed down with a Chilean Sauvignon Blanc from Alto Bajo. The figs featured again later in the evening and were very good indeed. Secondly, we had one of Rob’s signature dishes, his three cheeses Crème Brulee with Manchego, Lincolnshire Poacher and Red Leicester with a torched Parmesan crust. This is very innovative, more interesting than sublime, but as a dinner appetiser almost perfect. Our two main courses were sea bass with a pea shoot and dill risotto and tiger prawns, followed swiftly by rump of lamb, lamb sausage on a Dauphinoise mash. The lamb was tender and juicy and helped along by an Australian Deakin Estate Shiraz. Other options would have

been a Burgundy Beef Pie or a lighter Chicken Caesar salad so very much something for everyone. For dessert we were offered a brown sugar banoffee Pavlova followed by a trio of chocolate with a Maury dessert wine. All three were tremendously good, especially the white chocolate panna cotta. Our adjacent table, jealous of our dessert selection, were offered a complimentary sample of the Pavlova and there was real enthusiasm in the cooking and a genuine level of pride and achievement. All very justified. Wines come from Bibendum which are a little pricey but also very good – no duff bottles on the list here and with interesting options of quarter bottles of Champagne for example there is, once again, something for every palette/budget. The food was colourful, tasty, light and offered a huge variety of flavours and Rob should do well, both for his loyal locals and wider travellers. “O

kay, so you want to learn the secret of how to get published...come closer, I’ll whisper it to you; just promise you won’t tell anyone else...are you ready? Join a writers’ group. Yes, there I said it, now you know, but why is it important? Writing is a pretty lonely hobby/profession. It’s you and a laptop and a massive cup of coffee. It’s easy to feel isolated and quite frankly to give the whole thing up in favour of settling in on the couch with a loved one and a pizza, but unless your loved one just happens to run a publishing company, that’s not going to get you published. By joining a group, you get a sort of unofficial deadline to get your work done by. If you want to show your work to the group, you have to write it in time. Also, by talking about your work on a regular basis you verbally commit yourself to actually doing it – no one wants to be all mouth and no manuscript! Never under-estimate the power of knowing like-minded people. I spent years being excited over stories I’d come up with. I wanted to share them with people and would watch, time and again, as my family and friends glazed over as I’d tell them the intricacies of my plot and characters – not very inspiring. But it wasn’t their fault - they had no interest in creative writing, so finding those who do can really help you to feel that excitement for longer – hopefully long enough to finish your manuscript. Talking to someone who has walked the same path you intend to tread can be invaluable. Most groups will have a mix of members, everyone from novices to published authors and even editors too. They all have advice about the mistakes they’ve made and the success they’ve gained, and more importantly, they want to share it with you. I myself learnt a few hard lessons through the years that I gladly tell to help my fellow members avoid those literary pitfalls. In Creative Minds I run mini workshops to help members learn the craft of writing. There are so many books and courses out there all giving you different advice and strangely, taking your time away from actually writing something. A workshop is hands on, you write whilst learning. You can ask questions, develop ideas and gain new insight into the art of creative writing. Getting your work read – Often called Beta Readers, it’s an incredibly valuable tool for new writers to have their work read by other authors. We can identify consistency errors, plot holes and flow. The general rule, in most groups, is that all critiques are only given alongside reasons and solutions. Your precious work is not going to be randomly torn to shreds by crazed writers looking to ‘feel big’. Everyone submits work, so everyone is treated with respect and helpful comments. That’s not to say that there are not disagreements, but if ten readers all say that that scene you have with elephant playing the guitar is flat, then maybe it needs to re-evaluated – perhaps a monkey could pluck that instrument better? So there you have it, just a few of the many reasons why a group could help you achieve your published dreams. Nobel Prize Winner, William Henry Bragg T Caroline Aston

HE title ‘Nobel Prize Winner’ instantly evokes awe, doesn’t it? The list of names is a litany of fame, a tribute to genius in politics, science and literature and the prizes are conferred on recipients with great ceremony and dignity each year. As a child I was gripped by the life stories of some of them, especially Marie Curie the discoverer of radium, work that has since touched the lives of generations of cancer sufferers. So, it may come as a surprise to learn that Market Harborough has its own part to play in Nobel history. Born at Westward in Cumberland in 1862 William Henry Bragg was a very bright boy indeed. His father was a merchant marine officer (and farmer), his mother a clergyman’s daughter. When he was seven his mother died and he was sent to live with an uncle in Market Harborough where he attended the Old Grammar School. His education continued on the Isle of Man where he was a pupil at the prestigious King William’s Academy and won a scholarship to Trinity College, Cambridge where he was to take first class honours in mathematics in 1885. Like many an ambitious young man of the time he then emigrated to Australia, being appointed a professor of mathematics and experimental physics at Adelaide University. Physics was very much in its infancy then, indeed what limited experience Bragg had of it had been gleaned as part of his Cambridge course under the heading of ‘applied mathematics’. Adelaide University only had about 100 students on its books at the time with just a handful forming a science school. To plug the gaps in his knowledge Bragg got himself an apprenticeship with an instrument maker and proceeded to popularise scientific study by virtue of his lively lecturing style, granting science teacher free entry to his sessions – he founded a student union too. Gradually his main interest in physics focussed on electromagnetism; in 1895 he was visited by Ernest Rutherford, who became a lifelong friend and is viewed as the father of nuclear physics. Rutherford was to ‘split the atom’ in 1917, by which time Bragg too was becoming famous for brilliant research. He had moved back to Britain in 1908, having seen Adelaide University almost quadruple in size. On a lighter note he had also introduced lacrosse to Southern Australia! He had married and had a son too – his son having enrolled as one of his students. By now Bragg was working intensively on X-rays; he invented the X-ray spectrometer and with his son William founded the new science of X-ray crystallography, analysing crystal structure using X-rays. During the Great War both father and son were involved in war work with Bragg senior working on submarine detection and as a consultant to the Admiralty. Unusually, the Nobel Prize in Physics was awarded jointly to this father/ son team in 1915 largely for their advances in X-ray use. Father/son winning partnerships are very rare but this was merely the beginning of a positive flood of honours: the CBE in 1917, a Knighthood in 1920 and the Order of Merit in 1931. He was elected President of the Royal Society in 1935, having been a Fellow since 1907. The boy from Market Harborough was an honorary doctor of sixteen universities and a member of numerous leading foreign societies. Medals were showered on him - the Copley and the Rumford to name but two. Looking at his career it seems his trademark was to pick up a project, work on it, drop it in favour of something else and then return to the original. His life was astonishingly productive; his contributions at every level breathtaking.

Obviously his legacy lingers on in the worlds of science and medicine, but at a more human level so too does his name. The Experimental Technique Centre at Brunel University is housed in the Bragg Building and Adelaide University built the Bragg Laboratories in 1962, the centenary of his birth. Over on the Isle of Man, King William College has its Bragg lecture theatre. And Market Harborough? Well, he is not forgotten there either – one of the School Houses at Robert Smyth School was christened Bragg in his memory...and I wonder how many old Braggarts (!) are quite aware of the extraordinary man who lived in their town all those years ago and where his early studies were to take him.

Matt is Oakham born and bred, leaving only to fulfil his ambitions to become a vet at the University of Liverpool. He soon returned to Oakham leaving behind the accent, even though you may not tell! He lives locally with his energetic chocolate cocker spaniel ‘Dashinka’, so you will be sure to see him on walks. Matt’s spare time is filled with many extreme hobbies such as sky diving, surfing and kite surfing, which reflects his interest in

the extreme aspects of the job! The practice also welcomes Katie Bennett RVN to the team. Katie has been Veterinary Nursing since 2007 and qualified in 2012. She is owned by her one year old springer spaniel ‘Murphy’. Kate has a keen interest in behaviour, especially juveniles and small animal surgery. The practice also has two experienced and very friendly animal nursing assistants, Emma and Mollie. Survey Shows Brits Spend 10 Years of their Life Doing Household Chores A

fter a wet and miserable winter, many people may be thinking of refreshing their homes with a spring clean to welcome the warmer weather and longer, lighter days. But while Brits are reaching for the marigolds, a new survey has revealed that we’ll spend an average of 10 years of our life on mundane everyday tasks such as maintaining the house and car, cleaning and tidying, preparing meals, cleaning up after pets, helping kids with

homework and managing household finances. A study of 2,000 British adults conducted by OnePoll on behalf of MOLLY MAID, the UK’s leading professional domestic cleaning service, found that the average British adult spends 26 hours a week doing household chores. The survey found that the most commonly despised cleaning chore around the house is cleaning the bathroom, with 45% of respondents identifying this as their least favourite task. Cleaning the kitchen was also found to be hugely unpopular as one in five (21%) declared this their most hated job. Interestingly, the survey revealed that the gender

gap is closing more than ever when it comes to helping out around the house, with women spending on average 8.14 hours a week on cleaning tasks alone, and men 7.21 hours a week. This shift towards the balancing of gender roles in the home could be further explained by the study’s finding that 6% of Brits have a professional cleaner to help around the house. Pam Bader OBE, Chief Executive of MOLLY MAID, commented: “This survey is a real insight into the day-to-day lifestyle and habits of the British public, and the results have proved to be very interesting. With most of us spending ten years of our life on day to day household upkeep, it is unsurprising that many of us cut corners when cleaning to try to preserve our precious free time and maintain a good quality of life. As a nation, now is the time we traditionally refresh our homes with a spring clean. How Rutland has Made a Difference to Orphans in Afghanistan Sean Bell, Air Vice Marshal (Retired) is a former Commander at RAF Cottesmore and completed three tours of Afghanistan. Now retired from the Royal Air Force and working in industry, he tells Amander Meade about his most recent visit to Kabul

How did you discover the orphanage? “Whilst on tour anywhere in the world, I would make it a priority to find something meaningful to engage our staff with at a local level and I was asked by local representatives of a specialist charity to visit a couple of the infamous orphanages in Kabul. My first visit took place in 2008 and, just as described in Khaled Homeni’s best-selling novel, ‘The Kite Runner’, these orphanages were ‘home’ to five hundred boys and three hundred and fifty girls aged between three and eighteen years old. What were conditions like at that time? The visit was startling and deeply affecting. The children had no food, no running water, no sanitation, no education, no heating, no medical care, no play or sports’ facilities – they were truly the lost generation. With completely corrupt management the orphanage and its occupants were in a desperate state. I knew the boys would either end up dead or in prostitution – similarly the girls unless they were offered for marriage and in an effort to do something to help, our small team decided to try to raise $1,000 to fund some basic equipment. How was money raised? As a former Station Commander at RAF Cottesmore and still living in Rutland, I brought back Afghan scarves, bought in the local markets of Kabul, and sold them through a network of fantastic Rutland volunteers to raise money. Such was the success of our collective efforts, after three months we raised nearly $150,000 and channelled the money through an established Afghanistan charity, based in the USA, called PARSA. A truly outstanding effort from the local community here in Rutland. How has the money been used? The lives of the hundreds of orphans have been transformed. The money has been used to provide healthcare as well as shoes, books, computers, a generator, double glazing and general repairs. The Orphanage now

has a full education syllabus, sports facilities, language classes etc. The graduating class all have ambitions to be doctors and lawyers and dentists - a complete reversal of the lost generation of Orphans that I witnessed nine years ago. The money spent has also generated interest across the region and there are now all sorts of agencies involved to make sure things are well run. Having returned from a private visit to the orphanage almost a decade on, what did you find? On behalf of PARSA, I travelled to Kabul for the first time as a civilian at the end of last year and what I found was astonishing; the throng of children playing, laughing, shouting and bustling, was amazing - just like any Western school. I was guided around by the new Director, a remarkable man who had been an Orphan himself and has been determined to deliver lasting change. We were assisted by a nineteen year-old interpreter who was Head of Computers and Science. The interpreter had been an orphan when I first visited and as a direct result of our investment, he has now secured a job, skills, and qualifications, and is a very impressive young man. He told me, “We were the lowest of the low but now we have pride and the non-orphaned children envy us!” Where there was abject poverty there is now hope for this generation of Afghans who will be able to directly relate that to Western support. Our country’s strategic adventure in Afghanistan might be judged unfavourably, but through the amazing efforts of Rutlanders, we have delivered lasting change to hundreds of children who now have a real future and ambition. There is much more that can be done, and PARSA’s immediate aim is to help the Director spread the Kabul success across the country, but for those who believe that hope is lost let me assure you that we have made a difference – we can’t change the whole world but sometimes we can change a little bit. • To find out more about the work of PARSA, visit www.afghanistan-parsa.org
