Apology: I somehow managed to miss off Lizzie Haines’ contact details from her fabulous Jubilee Cake featured last month, which was a hit with one reader, Helen Swift: “I loved the feature on the Jubilee cake. I wasn’t planning to do anything for the festival other than collapse in front of the TV, but your photos inspired me. I did have a strong red food colour but not a blue, so yes the middle layer is a bit ‘green’. I would also like to pay tribute to the swinging horseshoe trees designed by 14 local Primary Schools for the Queen’s Golden Jubilee. The Pop Up Art project was inspired by sculptor Mo Gardner, who was honoured recently as one of her sculptures was donated to the Queen at Burghley House on behalf of the County of Rutland. The Horse Shoe project was supported by Travis Perkins, who supplied all the MDF free of charge and sculptor Graham Biggs who gave generously of his time and expertise by cutting out around one hundred and fifty varying sized horseshoes. Fantastic and well done!

Creating a Resilient Retreat Owen Morgan, Rutland based RHS award winning garden designer, www.mosaicgardens. co.uk, looks at creating more resilient gardens

t’s a familiar story; the weather is either too cold and wet and plants struggle to grow or too sunny and dry and we spend our days watering plants that may go over too quickly. Every year we have the same unpredictable weather in this country and a pattern of it being dry 6 weeks without any rain can take its toll on our more traditional garden plants, such as roses, delphiniums and lupins which benefit from a lot of moisture. This July why not look at more drought tolerant planting, plants that can cope with long periods of dryness and ensure an easier and more successful gardening calendar. Whilst at the moment we don’t normally suffer from bad droughts here, by encouraging good gardening practice we will be preparing for the occasional very dry summers and helping our gardens become more resilient to our inconsistent weather.

Creating a more resilient garden Choosing the right plants to suit our growing conditions is essential. Despite a lot of rain early in the summer, climate change presents us with the challenge of gardening with less water. With some conditioning of the soil and careful watering, there is a considerable range of plants that can tolerate dry conditions once they are established. Young plants Plant new plants when they are still small so they fill a space naturally and get used to their growing environment gradually as they develop. They gain a much greater resilience by adapting to their conditions from a young age. Autumn or Spring planting is ideal, the roots will become established before dry weather arrives. Improve the soil Improving the structure of the soil by digging in large amounts of garden compost, manure or other organic material is especially important. It will help cultivate the soil structure assisting in water retention and drainage, making the water more available to plants.

Mulch Adding a layer of mulch after planting is one of the most effective ways of limiting water loss from the the soil allowing new plants to establish successfully. A thorough watering, ideally from recycled water, throughout a plant’s first season is essential. Once a plant is properly established it will soon become more drought tolerant. Ideal planting To reflect as much sun as possible, many arid loving plants have silver or grey-green leaves, such as Lavender. A large proportion have hairy leaves or stems to trap any moisture in the air. Below is a selection of plants with good drought-tolerant properties. Small shrubs • Artemisia ‘Powis Castle’ - light fern-like aromatic leaves with tiny yellow/silver flowers in August • Santolina chamaecyparissus (Cotton Lavender) - tiny leaves and light reflective silver colouring reduces water loss • Lavender (Lavandula angustifolia ‘Hidcote’) - classic full hardy English Lavender good for pollinating insects

Perennials • Euphorbia characias subsp. wulfenii - huge heads of chartreuse-green flowers • Eryngium giganteum (Miss Willmott’s ghost) - ruff of spiky bracts and cone-shaped flower heads provides an architectural silhouette, a feature lasting well into autumn • Giant oat grass Stipea Gigantea - graceful ornamental grass with narrow or incurved leaves, copes well in dry conditions • Red hot pokers (Kniphofia rooperi) - dramatic flowers that burst into life in the autumn Containers • Cosmos bipinnatus ‘Purity’ - tall, graceful half hardy annual with white flowers • Nicotiana sylvestris - sweet scented, pure white, trumpet-shaped flowers on towering stems • Succulents such as Aeonium, Aloe and the ever reliable and robust Sempervivums look fantastic and are ideal for pots and troughs

Climbers • Passionflower (Passiflora caerulea ‘Constance Elliott’) - exotic looking plant, with dark green glossy leaves and unusual, fragrant, large white flowers from July to September • Solanum crispum ‘Glasnevin’ - Chilean potato tree with deep purple/blue scented blooms

West Lodge Rural Centre What’s there? This is a really great family rural centre run by the Dee family who have farmed here for three generations. Learn about farming and wildlife – start with the cute occupants of Cuddle Corner before visiting the pygmy goats on Goat Mountain, feeding the ducks, grooming a pony and cheering on the wonderful (and strangely compelling) piglet racing. Seasonal activities are also on offer with imaginative events taking place at harvest time, Halloween and Christmas as well as during the summer season. Wicksteed Park What’s there? A wonderful English Heritage Grade II listed park and garden set in 147 acres. Lots and lots to do and a really good value day out for families – especially as 2011prices have been frozen for this year. There are three separate areas of rides and attractions, a railway that tours the park, a large free playground and a smaller version with a big sandpit area. The Pavillion hosts shows and events throughout the year and if you need a little peace after visiting the Fairground, try the Sunken Memorial Garden or the nature trail and arboretum. lthough as I write this, it is pouring with rain outside, it IS summer which means that soon we will be called upon to bare our porcelain bodies and hit the beach! It is always a daunting task choosing swimwear – whether you’re a size 10 or a size 16 there’s always something we hate about our bodies and swimwear will always enhance these areas and our anxiety levels! However, our local boutiques and department stores offer a really good range of bikini’s and one-pieces, plus these local gems provide professional advice on ﬁtting and styles which is worth its weight in gold!

MY BEST TIPS FOR BUYING SWIMWEAR ARE:

Always ask for professional advice – often swimwear can be bought by bra size and, as such, it’s always worth getting it properly ﬁtted. Remember to buy for your own size and shape – think about what will suit you, rather than what you like! In the case of swimwear, you really do get what you pay for! It is well worth investing in at least one more expensive swimsuit or bikini as it will undoubtedly last for a few summers. Perhaps then you can top up with a couple of cheaper ones? Remember every body looks better with a tan! And every body looks better stretched out strategically on a lounger! Forget how you look, relax and enjoy yourself – chances are you will never see anyone around you ever again!

As for beach cover ups, as well as the conventional kaftan style ones, consider using an old, much loved, summer dress which might have seen better days but you can’t bear to throw away! Anything goes really so long as it’s made from natural fabrics – a ﬂoaty dress, kaftan or sarong will take you off the beach and straight to drinks!

Follow these top tips: DRY, TIRED EYES These are a common problem, especially for people who work in dusty environments or those of us who spend prolonged periods in front of the computer – keep eyes moisturised with Blink eye drops (available from Boots and other local chemists).

TAKE ACTION If an eye infection does strike, try combating it the natural way before resorting to antibiotic drops. The use of colloidal silver is fast becoming recognised as an antimicrobial mineral, excellent at fighting bacterial infections. A few drops of this (in a professionally prepared formulation) can prevent eye infections developing. BE ALLERGY AWARE The summer months can be a nightmare for hay fever sufferers and whilst there are many effective over-the-counter antihistamine remedies, there are certain steps you can take to limit the severity of hay fever symptoms. Firstly, wraparound sunglasses will prevent pollen getting into the eyes (Ray-Ban have some great styles). A little Vaseline applied inside the nose will reduce irritation to the nasal passages and remember to keep doors and windows shut mid-morning and early evening when pollen levels peak. BANISH PUFFY EYES Late nights often result in puffy, red eyes and the use of tea bags to reduce swelling is not an old wives tale; it really does work. Make a cup of tea with 2 camomile teabags (drink it afterwards; it is good for you!), squeeze a little of the water out and leave to cool slightly. Apply to closed eyes for 5 minutes – your eyes will feel refreshed,

Firenze, Kibworth Beauchamp Abigail and Pete Richardson indulge in some Italian magic

f you are a regular reader, you will know that this is my favourite restaurant in our area…the only drawback is the distance from Oakham but on a lovely summer’s evening (yes it was) driving for 25 minutes across the beautiful Langtons was no hardship. I had yet to introduce Pete to Firenze and, as he enjoys many Michelin starred restaurants through work, I was intrigued to hear his opinion. I am always ready to put my taste buds in the hands of the chef – or in this case the dazzling Sarah Poli (owner, who needs no introduction) who offers a Degustazione experience. Sarah explains, “If, like us, you can never decide what to eat and really want to taste a bit of everything why not try the Firenze tasting menu” – Brilliant! Now, you will have to forgive me as I am describing from memory, with no menu to

“Exquisite food and a truly unique experience” choose from – Sarah simply talked to us about our likes and dislikes and Lino created the dishes accordingly – so bespoke dining! Antipasti of Parma ham and olives as well as warm home made breads and dips introduced us to what was to be our extravaganza delizioso. Per cominciare: Buffalo Mozzarella and Tomatoes with a Pesto Jus drizzled over – light and divine and “absolutely superb”, declared

Secondi was Squid on a Salad of Micro Herbs, which had a slightly burned texture – if that sounds off-putting I am not doing it justice – the squid was delicious, delicate and tender; “The best squid I have ever had,” affirmed Pete. My favourite course (if I have to choose) came third – a Nettle Risotto with Seared Pigeon Breast - Incredible flavours which were subtle, yet distinct. Sword Fish on a Green and Butter Bean, Basil and Red Onion Salad followed which aroused the taste buds in preparation for the drama of the Loin of Rabbit with Celeriac “Dauphinoise”, Wilted Lettuce, Peas and Baby Onions. Divine! La gloria suprema was the Dolci tasting platter – just look at the intricacy of the fruit jelly, macaroons and fudge…and they tasted better than they look! Coffee and taxis please for two extremely satisfied customers who felt very spoilt and indulged. Pete’s verdict: “Cooking doesn’t get much better than this!” – Ok we had rather enjoyed the wines too, but he stands by this statement. Overall: Value for money (£45.00 per person for 5 courses), exceptional service, a lively atmosphere, exquisite food and a truly unique experience. Just go! OUNDLE MILL “If you were to choose your local dining out experience by the location then there is no doubt that Oundle Mill, alongside the banks of the River Nene, would be high on the list”, declares Ashley Martin

ritain’s tenth longest river wends its way from its source in the west of Northamptonshire to the Wash via the Mill, which, while it no longer has its water wheel, does retains echoes of its former glory. It is many years since I had been in the Mill’s restaurant and it has undergone a signiﬁcant makeover. Billing itself as a ‘boutique hotel’ with ‘rustic chic’, Oundle Mill can trace its roots back to the 17th century and used to be known as Barnwell Mill. It is located adjoining the A605 just a mile or so from Oundle Town Centre and next to Upper Barnwell Lock. We were there to sample the Mill’s newly unveiled spring menu, which features an array of dishes with much of the emphasis on utilising a wide range of locally sourced produce. Asparagus is a favourite of mine so I couldn’t resist the locally sourced spears served with an almond and asparagus mousse and a crispy egg (£6.50). Meanwhile, Helen opted for potted salmon with leeks, Jersey Royals, horseradish and a scotch salmon egg (£7.95). Both starters were extremely ﬂavoursome, very fresh and light. Lightly toasted bread was served with balsamic and rape seed oil and a palate cleanser of pink grapefruit and champagne granite prior to our main course was simple and refreshing. My spring lamb, from nearby Lutton, was served on a bed of crushed potatoes, pea puree, pea shoots and mint jelly (£19.95). Helen opted for slow-cooked belly pork with celeriac, apple with black pudding, creamed potatoes and crackling (£14.50). Both were light and

aromatic and beautifully presented. For dessert I opted for a warm chocolate fondant with white chocolate and basil and raspberry sorbet (£6.50). My dessert with its warm and cold texture on the tongue was a delight and Helen declared her banana cheesecake, toffee sauce and Pedro Ximenez raisins (£5.50) delicious and, “Tasting of Christmas cake in a glass”. Gavin has a number of top kitchens on his CV including London’s Chez Nico (three Michelin stars) and L’Escargot and has created a varied menu. Pleasingly, it is not overly extensive -

thus ensuring freshness and attention to detail. The brevity of the menu contrasts with the extensive wine list - wine being a passion of Mill manager Paul - and we chose a very agreeable Chilean sauvignon blanc (£24.95). • The Mill is hosting summer barbeques by the River Nene every Saturday in July (excluding July 28) and August between noon and 6pm. SWEDISH STYLE Sweden’s answer to the Landrover Discovery celebrates its 10th anniversary this year. David Corfield reckons its time to look back at Volvo’s biggest off-roader

he XC90 is the biggest of Volvo’s range of 4x4 vehicles and also one of its top-selling models, with over half a million units built so far at the factory in Sweden. Over the course of the decade the car has evolved and new for this year are a pair of alloy wheel designs (one in 18- and one in 19-inch), a bumper bar at the front, fully colour-coded front and rear bumpers, sill mouldings and wheel arches. Those ubiquitous LED daytime running lights remain (a classic Volvo safety feature) plus tweaked tail lights, a new three-spoke steering wheel, some white detailing on the dash and leather upholstery for the R-Design top of the range model. Another addition for 2012 is an application that connects your car to a mobile phone. If you have an iPhone or an Android mobile then - thanks to an extension of Volvo’s ‘On Call’ system - you can find your car on an app-generated map. You can also find out information remotely, such as fuel level, range remaining, average fuel consumption, average speed and even how many miles the car has done. It can also perform a mobile ‘heath’ check which tells you if there’s a problem with your coolant, your oil or your brake fluid. The 2.4-litre D5 diesel unit produces 200bhp and emits a substantial 219g/km of CO2. Claimed fuel economy is 34mpg on the combined cycle, but I only managed 28mpg according to the car’s trip computer. The engine could be classed as slightly old-fashioned compared to powerplants from the likes of Audi, BMW and Mercedes. However, while they may be more sophisticated engines on offer from the German rivals, the costs means the Volvo may still be the best option. The Audi Q7 3.0-litre TDI Quattro Clean diesel SE, for instance, costs £45,525. That’s £4,750 more than the Volvo. Economy is a claimed 38mpg while road tax for the Audi is just £15 per year less at £260. So, while the technology may not be as modern as Audi’s, the Volvo will cost

£3,224 less over three years/30,000 miles. There’s no lack of pulling power though – with 420Nm available there’s enough grunt to get the heavy XC90 to 62mph in 10.3 seconds with a top speed of 127mph. The gearbox is Volvo’s Geartronic system, a particularly smooth six-speed automatic. Thanks to the car’s four-wheel-drive system there’s a huge amount of grip available, and it is a very easy car to drive. One thing that can prove tiresome is the foot-operated parking brake, which must be released by hand using the handle on the driver’s right hand side. In a world where competitors are moving rapidly towards electric systems once again the big Volvo begins to show its age. It’s a similar story with the sat nav – although the split-screen is a nice touch it does feel somewhat antiquated now, and can be confusing to operate at times too. You’d get used to it, but there will be some frustration to begin with. As you’d expect, being a Volvo, there’s a raft of safety systems fitted. The blindspot warning system works very well, and takes the form of an orange light on the A-pillar which comes on when there’s a car in the area behind not visible in the mirrors. Another feature are the adjustable headlights which can be converted to face the other side of the road, negating the requirement for stick-on reflectors which are impractical and quite often ineffective. The latest XC90 model is available to order now, with prices starting at £35,175 for the D5 AWD Active geartronic model, rising to £43,775 for the Executive version. The D5 R-DESIGN model I drove is priced from £40,775.

he beautiful Seychelles islands are still one of the most idyllic and romantic holiday destinations in the world. During the winter months of January, February and March, when the UK freezes, the temperatures are between 27 – 30 degrees, perfect for that much needed winter sunshine.
