Amander Meade visited to discover the secret of their longevity A joy to browse… Run by Peter and Linda Jones, their son Tom and a small, loyal team of specialists, Swans are well known for their expertise in antique furniture. Have you ever glanced into the window and concluded that the showpieces on display there are beyond your usual means and walked on? If you have, you are missing out on some of the best service and most eclectic stock you will find anywhere. “It’s true we are well known for antique French beds and furniture,” agrees Tom, “but there is so much more to us than that.” Figuratively and literally, Swans has so much more to offer; an absolute joy to browse, the premises have a Tardis quality comprising eight different showrooms and a gallery – something you would never guess from the exterior. Ice-cream colours: pretty, chalky shades of raspberry, mango, lemon, pistachio and mint. Team with a fair amount of white to prevent looking too sweet! Wonderfully feminine but can look quite retro too when mixed with certain wallpapers and curtain fabrics. Look at the new Orla Kiely House range.

s with Fashion, so with Interior design, the palettes and style ideas for the next season trickle down from the catwalk. The colours and effects don’t get there by accident; they are carefully thought out by leaders of the Interior Design world, and much of it is inspired by Couture. Nicola Hardy has identified ten trends that interior designers will be showcasing for 2013

Textured Country: beautiful natural textures like wool, sheepskin and leather, floral prints and a subtle colour palette. Patchwork, macrame, knitted and needlepoint details in cushions and throws.

Bold and patterned: strong colours on walls and sofas, combine stripes, small and massive florals for walls and upholstery. White backdrops are important here to keep it fresh and modern.

Neutrals: always safe and sophisticated. To avoid looking dull add visual excitement by introducing varied finishes and textures. TOUCH is the sense to focus on; mix smooth with rough, shiny with matt. The colours of sand and stone will prevail.

Busy walls and quiet furniture; a chic and elegant combination. Choose traditional damasks from Graham & Brown or damasks with a modern twist from Nina Campbell. Furniture should be comfortable with plain upholstery so creating a calm contrast.

Indigo blue: a very popular colour for 2013. It looks most striking when paired with plain white. The scheme doesn’t have to look nautical; by avoiding too many stripes and introducing florals, neutrals and textured weaves the results can be fresh and sophisticated.

Pastels and brights: a confident choice, but in the right setting can add impact and character. Use in fairly large rooms where the majority of the space is neutral.

Eco/natural: think harmonious calm colours of the natural world; snowscapes, water, sunrise and sunset. Nothing should be too structured or contrived. Use natural wood and soft textures.

Chinoiserie: oriental inspired design. Black lacquer with red, pink, lime, turquoise and grey. Think delicate butterfly, bird and feather patterned fabrics, quilted throws and cushions and luxurious textures. Perfect for bedrooms.

Clash of the cultures: the most exciting trend of all! Patterns are inspired by Folklore African, Mexican, Bulgarian, animals and crafts. Think handmade and spontaneous, this will inject fun and whimsy into your scheme. Within all these trends are patterns and textures; always choose these first before moving on to colour. Once wallpapers and curtain/ upholstery fabrics have been decided upon colours can be picked out from the designs. We want more value for our money and will do more research

before parting with it to find the best options. Sometimes when planning a concept it can be hard to visualize exactly how the finished room will look. It’s vital to gather your ideas together and prepare a mood board. Arm yourself with a camera and notebook and get looking around Elizabeth Stanhope’s (which has new lifestyle and kitchen showrooms) and Sarah Harding Interiors, which have relocated to Uppingham’s Market place. Nottingham boasts both ‘Dwell’ and ‘Nash Interiors’, fabulous stores to borrow new ideas from. They won’t mind you taking photographs if you ask first and say that you’re likely to buy from them at a later stage. It’s handy to have pictures of how their rooms are staged as these can be added to your mood boards and are a good reference point when you search the Internet for viable and cheaper options! If you need to stick to a strict budget then Internet research is incredibly important. Never underestimate the curious pleasure of creating a mood board. With all your magazine cuttings, fabric and wallpaper samples and photographs, it is an enjoyable and vital part of building a picture of your perfect room. Here comes the bride! When you eventually walk down the aisle on your big day, you can guarantee that all eyes will be on you. But as any bride-to-be knows, looking naturally perfect takes a lot of preparation! Catherine Batkin talks to some top local hair and beauty salons to find out how you can ensure you look fantastic on your big day

Think of your bridal hair as a project. Something that should be considered in advance of the wedding and not just in terms of a style you have in mind. After all, you may need to put in a bit of work beforehand to get it to the desired length and condition to ensure it looks its absolute best on your big day. Simon Cawthorne At Simon Cawthorne, a team of four stylists do wedding hair – so this salon is a great choice for a large bridal party. Becki told me: “We can do the hair for the bridal party either at the salon or the venue of choice which is so important for some brides who don’t want to come out on their wedding day. These days many of our clients want loose hair-up styles which are soft and natural – something that doesn’t look too structured but with the look of a style that could have been created at home.” Essence: Salon Manager Kate from Essence in Uppingham explained to me the importance of seeking professional advice at an early stage: “Many of the brides I see have a very clear idea of what they want to look like on their wedding day. Some of them want their hair to look like it does usually whilst others hope for a more dramatic difference. If this is the case, your hair stylist will need plenty of time to ensure your hair looks the way you would like it to by the day itself.” Kate can order in clip-in extensions which are carefully colourmatched to the client’s natural hair – the perfect choice for brides-to-be with short, fine hair who may wish for a fuller, more dramatic look for their wedding day. Hairworx: At Hairworx, Glen Handley is the wedding hair specialist and offers a free consultation for all prospective clients considering using the salon for their wedding hair. Glen told me with the increase in popularity of vintage style dresses and accessories in recent years, they have seen resurgence of 40’s and 50’s hair styles which have a little more definition and structure. Clients still wishing to look ‘au naturel’ could make use of the temporary clip-in extensions which are a simple solution for instant length. Or for something more permanent, it is also worth considering the 100% natural human hair microring extensions – after all, what bride doesn’t want long luscious locks for her honeymoon too? William Wheelwright Will Wheelwright is based at Barnsdale Lodge and, unlike many hair salons which charge a flat fee for bridal hair, Will charges by the hour – meaning that brides with shorter hair looking for a more simple style can really benefit. Will told me: “Brides are looking for more natural hair these days so I am doing fewer up-dos than I used to. Certainly, brides-to-be with shorter hair think that there is very little they can achieve with it anyway, so they tend to settle for a safe blow dry. It doesn’t have to be this way though! Even very short hair can be very versatile – you just need to use your imagination or ask your stylist for some inspiration. Accessories are also key to dressing it up and making it look really pretty and perfect for the big day.”

Who’s Who in your Family Tree? Genealogy is hugely popular thanks in part to the fascinating insights offered by the celebrities who appear on shows like ‘Who Do You Think You Are’ and in part to the new opportunities for speedy access to historical documents via the internet. Graeme Falconer is a genealogy expert who has helped many clients to discover their ancestry. Amander Meade finds out more about his fascinating work What is Genealogy? “Strictly speaking it is the study of family lineage, naming ancestors and placing them in the time line of history. As we use the term it has a broader and richer meaning – the study of our family’s history. The family tree is simply a map of your roots, showing how your ancestors are related to each other but the real purpose of family history is to bring the names back to life and provide not just the Births, Marriages and Deaths but the whole panoply of facts which describe the what, where, why, when and how of our ancestors.” What discoveries might I make? “Who knows? Most people aim to provide a family heirloom to pass on to their children and avoid family history getting lost. It’s interesting to explore where the family got to and look at the lives and careers of relations. Personally I have made contact with cousins and second cousins in Canada, Australia and the USA.” Can I do it by myself? “Certainly. I would suggest starting by researching one name which is focused and less time consuming but can be limiting if you run into a dead end. Alternatively, you can research two main names – yours and your spouse’s perhaps – but again just focus on the male side with your father’s name and your spouse’s father’s name and again not go into too much detail for spouse’s families. Talk to your relatives, you will be surprised at how much they remember (usually stopping them talking is the problem...). Start from today and yourself and work back. Build in as much as you can from family sources and then search the Birth, Marriage and Death Registers which go back to 1837. County Record Offices are also useful sources of information as are the census records. After that, the world is your oyster – follow your nose.” How would an expert help? If you are interested in finding out about your family history but

Restaurant Sat Bains with Rooms Amander Meade reveals a double Michelin starred secret

F

ollowing our visit to Restaurant Sat Bains I bored for England on the subject but drew blank looks from even the most enthusiastic of my foodie friends. Could it be that while we are undeniably blessed with great places to eat in this region, our desire to explore has been dulled? Explore you must if you are to enjoy the works of genius by the man described by Jasper Gerard as ‘the most wildly inventive chef since Heston Blumenthal’.

I

must admit, I was surprised when the journey took just forty minutes from Oakham leading us to an industrial estate practically under a flyover and yet here, nestling among the pylons is a powerhouse of extraordinary talent and home to the two Michelin stars acquired by Patron Sat Bains, his wife Amanda who is General Manager and their team. I have since learned that Mr Bains is a God among international food experts and critics alike having achieved rave reviews from every organisation that exists to assess cooking including a perfect score on The Great British Menu. We selected the Tasting Room Menu at the Chef’s Table – a wonderfully stylish private room with a sliding door into the kitchen where guests can watch their food assembled like a gastronomic ballet. Thus began a delectable parade of thirteen courses (yep, thirteen) all accompanied by a fine wine chosen by internationally acclaimed Sommelier, Laurent whose singular charm and expertise further elevated the atmosphere. The taster menu is constructed so that each tiny but perfect portion stimulates a different element of taste – salt, sweet, sour, bitter and

umami. With the arrival of each immaculate selection Head Chef, John Freeman explained the ‘story’ behind the dish. Always informative and entertaining, this narrative formed part of the ambiance of the whole evening but never felt intrusive. As each spectacular course was served our party proclaimed it “Incredible! The best so far” and each time the next one surpassed it. We literally ran out of superlatives to describe the food. We all tried the dish that has become Sat’s signature starter, the duck’s egg which is poached for twelve hours (there was a scientific explanation behind this but it escapes me now) and served with pea shoots – exquisite. With a gun to my head I would choose the crab mayonnaise with avocado and peanut brittle

as a standout along with the chocolate yoghurt with cumin and lime. The meat eaters were in raptures over the belly pork with piccalilli which takes thirty six hours to prepare. These combinations are the result of a thoughtful process beginning with seasonal inspiration and tested rigorously in the Testing Kitchen… a whole other experience and literally a whole other kitchen created to enable the chefs to put their ideas into practice and are open to guests for lunch and dinner during the week. The rooms are fabulous but are so eclipsed by the food that they find exactly the right place in the pecking order within the name of the establishment. Did the evening’s extravagance put us off breakfast? No chance. Similarly gorgeous with everything from the ultimate full English to exquisite muesli, fresh fruit and a mouthwatering selection of freshly baked breads and pastries. Listed in a recent Sunday Telegraph Restaurant Guide, Sat Bains ranked second only to Heston’s ‘Fat Duck’ in the UK and well within the top one hundred in the world. It’s forty minutes away. I urge you to get there fast while people who just love great food still stand a chance of getting in. Award Winning Red India Having received the ‘Best Indian in the East Midlands’ award recently, Abigail Richardson decided it was time, once again, to treat herself and 3 friends to her favourite restaurant in Oakham

W

e had planned to dine out but circumstances intervened and we had a takeaway instead, which was a shame as I always choose much better with Salik on hand to recommend and guide, and, inevitably, we were not to be swayed from our favourite dishes, except for Lesley who was talked into a Lamb Pasanda instead of the nation’s most popular Chicken Tikka Massala - Kate had that instead! Amander had her usual of Garlic Chilli prawns and stuck to her original review: “I can honestly say that my dish was the best prawn curry I have ever tasted. The sauce was just perfect - not a trace of oiliness, fresh and delicious, really superb.” I ordered my favourite, Graham’s Goan Green Chicken – a dish brought back by customer Graham, from Goa, obviously, and recreated by chef, Farouk for us Rutlanders. If you like chilli and a sweetness to your curry, I really recommend this dish even though the colour is slightly unusual. We also had 2 boiled rice and 2 huge plain nans and there was plenty left over for Pete and me the following night! So what can I tell you? We enjoyed it enormously and it really is the Best Indian around, although the food doesn’t travel particularly well so I would suggest dining in. Don’t forget you can take your own wine or beers (and dessert, as I have started to do), and remember your cash as there is no card machine. But the really exciting news is that a second restaurant will be opening soon in Uppingham.

here can be few finer locations for a laid back lunch than beautiful Burghley House on a crisp, bright winter Sunday. The park was alive with folk wrapped up against the cold enjoying the sunshine and no doubt looking forward to rewarding their exertions with something tasty from The Orangery. The dining area is light and airy with plenty of room between tables affecting a pleasant feeling of space, the arched windows framing some charming views of the gardens beyond. We had no problem finding a table for four but the dining room was surprisingly busy considering the house and grounds were still closed to the public – obviously a popular venue among locals in the know. A discreet glance at other customers revealed an even divide between those enjoying a coffee and something from the delicious looking range of home made cakes, and those tucking into a full Sunday roast – the Blade of British Beef with Braised Red

Cabbage, crispy Bacon and Horseradish Mash (£12.50) looked magnificent. We usually have a roast on a Sunday so decided to choose something non-traditional – Lexie opted for Warm Crispy Crumbed Chicken Breast served with Avocado and Smoked Bacon with Tomato and Chilli Jam (£9.50) which came as a generous main course serving and was declared ‘really fresh and tasty’. Tasha’s Spicy Butternut Squash Soup was served with handmade vegetable crisps and a freshly baked roll – she loved it and at £5.75 it makes the perfect warming brunch dish. I chose the Lincolnshire Poacher Rarebit which is usually served with Honey Smoked Ham and homemade Apple Chutney. I declined the ham as I don’t eat meat. I consider I make a decent brownie and never usually choose them as a pudding. The girls shared the Orangery Chocolate Brownie which was served with Warm Toffee Sauce

Vanessa and I enjoyed a bowl of homemade mushroom soup and soda bread on my first visit. I was very impressed with the service as the place was packed! Leo waits on too. The problem is each visit I stock up on treats: Teapigs, olives, Lincolnshire poacher etc, which I really don’t need!

So far, this season, the snow has been superb all across Europe from the very start of the season. MANTON TO BROOKE AND BACK This is an easy and delightful walk that has just about everything – ridges, grand views, tranquil villages, rivers, even a deserted village Martinsthorpe Martinsthorpe is a deserted village. Only one building remains on the site amidst what appears to be a jumble of earthworks, but was once home to a hamlet of about 70. There is an interpretation board as you leave the site on the far side just over the cattle crossing, which is worth looking at.

Brooke Brooke is a truly quaint village with a tiny church, which featured in the 2005 film adaptation of Pride and Prejudice. There is also a good interpretation board here to the right of the entrance to the church.

Park in the road leading down to the Horse & Jockey at Manton, on the west end of the village; walk along the road to the main Oakham/ Uppingham Rd. Cross carefully and join a bridleway on the other side that heads due west, through the deserted village of Martinsthorpe and thence to the main Brooke Rd. You will know that you have come to the deserted village when you spot a recently renovated stable block and significant earthworks On reaching the main Brooke Rd, turn right, enter the village and bear right at the junction, with the church then in front of you; continue on down the road to the left of the church; over the River Gwash and then take a right turn along a bridleway This path then takes you almost due east towards Gunthorpe; as it approaches Gunthorpe, it turns in to a metalled track; do not go through the farmyard, the track goes through a gate 30 yards to the right, and then behind Gunthorpe Hall, with their stables The path takes off west across the field on the other side of the Hall, leaving the Hall directly behind you; you pass through a wood and reach the railway line; cross carefully via a pedestrian level crossing On reaching the main (busy) road turn right; stay on the left verge, until in a few minutes you join up with the main Rutland Water cycle circuit; stay on this back to Manton and the pub.
