I have a timeshare at Barnsdale Hall Hotel which allows me access to the gym, golf, spa, tennis and pool as well as 1 week’s holiday abroad each year (it’s a bargain - I do recommend this scheme) and at the gym I have witnessed several success stories with the FlaBelos Machine, so I am going to have a go. £10 for 4 sessions or £30 for 16 sessions.

I do love my White Wine – but it has to be French and I am not prepared to give it up but Emma Robson from Bat and Bottle has recommended a red that could sway me to the other side (it’s supposed to be better for you!) We have been eating Mexican food for too long now thus I plan on being more creative. I have dabbled with Moroccan so I shall Google some recipes and put a Tagine down on my wish list for next year! Brook Cottage

Amander Meade visits a gem of a cottage ready to expand from two to five bedrooms in an idyllic setting

rook Cottage sits on the outlying edge of the charming conservation village of Horninghold. The village traces its roots right back to before the Norman invasion, but was remodelled in the style of a ‘garden village’ by the wealthy Hardcastle family at the turn of the twentieth century and remains one of the prettiest villages in the East Midlands. Brook cottage is typical of the style – built in elegant ironstone and is the home of Julie Laughton and her family. The cottage is picture book perfect standing back from the lawned front garden leading down to the brook it is named for, surrounded by trees and shrubs which provide great screening and privacy. I entered via the back door straight into the kitchen which has plenty of storage including a walk in pantry – much loved by Julie who thinks everyone should have one! Off the kitchen is the dining room which is easily large enough to be used as an additional sitting room – “The downstairs accommodation is particularly flexible,” Julie explains. Demonstrating this perfectly, as we pass through the spacious front hall I see it’s cleverly used as a location for Julie’s desk as well as for receiving guests. The front door is stunning in carved oak shown off to maximum effect by the well lit space. Another notable feature throughout the cottage is the subtle double glazing to the original mullioned windows – not a piece of UPVC to be seen. “It’s very subtle and the frames are beautifully crafted to blend in. We had them painted to match each room so the effect is seamless.” The cosy sitting room is painted in a gorgeous sage green and styled around the traditional stone fireplace. I notice that this room, like the last, has very individual window treatments which look stylish and contemporary but somehow stay in keeping with the period of the property.

Julie credits her soft furnishing guru, Alan Rouse from Finishing Touch in Stamford. “We have used Alan to dress the windows throughout and he has done an amazing job. He always comes up with such original ideas such as the pelmet surround in the dining room, and suggests just the right fabric to complement the room. The peacock blue blind and matching window seat cushion on the landing was his idea too and looks fabulous.” I notice that Julie’s tasteful furniture and accessories all look effortlessly styled and she confesses that most of her interior pieces were purchased from Bakers Furniture in London at the same time. “We discovered Bakers and loved the style so decorated our previous house almost exclusively from there.” Carefully placed lamps and dimmer lighting create the mood and the result is a wonderful ‘pulled together’ look with an easy flow throughout the house – no clutter or odd pieces to mar the effect. Upstairs are two spacious bedrooms with plenty of built in storage and a large shower room which they share. The cottage sits in an enormous plot of land of over two acres – in fact, the outside might be considered out of proportion to the cottage as it stands and for this reason there is planning permission to build an extension incorporating three further bedrooms, much more living space and a double garage with annex. As lovely as the cottage is, the outside of this home is the real star. The grounds feel enormous and contain two stables, a large workshop/shed, greenhouse, a paddock, a heated swimming pool, large pool house with bar and a wonderful garden room with views back to the house. “We just spend all spring and summer outside,” says Julie, and I am not surprised. The garden room is amazing – fully equipped with TV and sofas. “After a big garden party and camp over, this is just the place to relax with a DVD and a bottle of wine!” I bet it is too. This would be the ideal dwelling for a family who love the outdoors and are looking for a project. How To Shop The Sales Who can resist a sale? With such big reductions they can be a huge temptation to the most sensible of shopper! Vanessa Hollander shares a few tips on how to avoid breaking the bank on ‘bargains’ and, most important of all, how to get the best out of the sales and enjoy yourself too… Make a List and Plan Ahead Before setting off, make a list of everything you’d like to buy. Whether it’s an item for the home or a new outfit, think about what you need – take measurements if you need a piece of furniture, look through your wardrobe and see what it is you’re missing – and set yourself a budget. Make sure you only buy what’s on the list as no matter how cheap an item is, it’s a waste of money if you don’t really need it. Stick to your list! It’s also worth doing a recce in your favourite shops before the sales start and research what you’d like to buy beforehand. Ask to be put on their mailing list so you’ll know exactly when their sale starts, whether they have a preview evening or any special offers for loyal customers. Think too about what the year ahead brings – do you have a family member celebrating a special birthday, a big wedding to attend, or a holiday coming up? If so, sales are a great time to bag a bargain or buy items that are currently ‘out of season’. Plan ahead!

What to Expect Very fashionable items or colours may well offer the best discounts – this applies to both homeware and fashion. Classic colours and pieces can be sold easily so their need to discount them is much less and you are therefore less likely to find them in the sale. If they are in the sale, then the amount of discount may be less. If you do find a classic, timeless item – and one that’s on your list – then buy it!

General Rules • Look at the price of the item, not just the discount. Don’t be tempted by a 75% discount alone, but do ask yourself if the item is worth the price that it’s being offered at? Is that a price that you are happy to pay for it? If the answer is yes, and the item is on your list, then it’s a good buy. • If you’re unsure about whether to make a purchase and have deliberated for a while, walk away! Leave the shop, go for a coffee and have a think about it rationally and leave it to fate. If you decide you do want it and it’s still there when you return, then you’re meant to have it! • Wear comfortable shoes as it could be a long day! If you’re clothes

shopping, easy to remove items are best so trying on won’t be a pain. • If you’ve decided to go with a friend, choose someone who will give you an honest opinion rather than what you want to hear. • If you see something you like but can’t quite afford it, then keep popping back into the shop as they often discount goods further the longer they stay in the sale. Often a sale can start at 30% of the original price, increasing to 50% or 70% as time goes by.

Know Your Rights If a shop is advertising a sale they have to follow government guidelines in order to ensure it’s genuine. There are three key things to look out for: • Before reducing prices in a sale, items must have been sold at the higher price for 28 consecutive days in that store immediately before the sale, unless a sign explains the terms of the offer. • The original price must be clearly displayed along with the sale price. A sign shouldn’t just say ‘sale £15’ – it must say something like ‘was £50, sale price £15’. • Before you make a purchase, do ask about the shop’s refund and exchange policy – they will vary from shop to shop. Some shops state that sale goods cannot be refunded or exchanged unless faulty, whilst others will allow a short period to exchange or receive a refund. To avoid confusion, ask and look out for signs at the till points. Be sure you’re comfortable with their policy before buying as you won’t have any get out once you’ve paid.

This is not true. Businesses also think that, without the written contract, an employee has no rights. This is also not true. A contract can be formed verbally and be evidenced by the actions of both parties in performing the

contract – at its most basic: the employee works 40 hours per week and the employer pays them a wage or salary for that work. An employee also has statutory rights, which are additional to what’s in the contract. Hambleton Bakery wins ‘Britain’s Best Bakery’ TV Show competition After many gruelling rounds of culinary challenges that began with 36 accomplished bakers from around the country, Hambleton Bakery was eventually declared to be ‘Britain’s Best Bakery’ in the recent ITV series

s well as being a food competition this series was a celebration of local bakeries around the UK, the delicious goods they produce, their regional specialities and their centuries old baking heritage. Expert judges Mich Turner MBE (TV chef, author and owner of Little Venice Cake Company) and Peter Sidwell (TV chef, cookery writer and restaurateur) sampled the delicacies of the country’s favourite independent, family run and community bakeries, tasting and critiquing their way through breads, cakes, pastries and pies. The Hambleton team comprised Julian Carter and Scott Kenny, both master bakers, and Tim Hart, coowner of Hambleton Hall, providing assistance when needed. They were ably supported by the team back at the bakery who kept the business ticking over during their absences. “The competition gave us the opportunity to promote awareness of our traditional breadmaking techniques,” said Julian “and it also stretched us in every way!” The Competition The first round challenge, at Rockingham Castle, was to make a sausage roll with a point of difference. Hambleton Bakery produced a sausage roll with a slice of black pudding on the bottom, mince in the middle and apple on the top, “encased in a beautifully buttery pastry” in the judges’ words. The challenge for the second heat was to create an afternoon tea in three hours at a cookery school, using domestic equipment. The team prepared two types of bread, three different types of pastry, cakes and chocolates (including a raspberry and chocolate cake, lemon tarts in baked cases and a mille-feuille with strawberries). On the savoury side there were scrambled eggs, smoked salmon on muffins; and manchets (brioche-like buns) with chicken liver. The teams also had to create a judge’s cake – a meringue roulade with lemon curd. All the teams found this difficult but, in the words of the judges “Hambleton survived their curd crisis” and made it through to the next round. For this round the contestants were invited to

‘create a modern twist on a traditional British cake,’ which was to be judged by the Barnes Women’s Institute. Julian chose to create a ‘flat’ Battenburg cake, with a filling that was described by the judges as ‘marvellously gooey’. For the next round, six teams met at Ipswich Catering College, with the brief to create a sweet and savoury bake for sale at Newmarket Races. The day begun at 7am and the requirement was for 100 of each. Hambleton Bakery created a new product, Ploughman’s Parcel, which is now for sale in all its stores. It is a savoury focaccia dough filled with Lincolnshire Poacher Cheese, Apple, Celery and homemade Chutney made with figs, dates, onions and balsamic vinegar, topped with seeds. The sweet bake was a tea cake with various racing odds added on top of each. Once again, Hambleton Bakery did well and progressed to the final. The Final The final round involved three teams and three challenges. The other two teams were Broughton Village Stores in Baldry, The Lake District (a husband and wife team who had both retired from the prison service to pursue their passion for bread) and the Bakery Dunbar in Scotland. The first challenge was to bake as much bread as possible in the morning and then sell it at Leadenhall Market during the rest of the day. The teams also had to make a Judge’s choice bread, a Jewish bread called Challah, which is a

sweetened dough with eggs and butter, braided. The second challenge was to create an iconic bake inspired by local ingredients. Hambleton Bakery created a Rutland Pippin. Baked in the shape of an apple, it is filled with ham hock, apple & quince purée and Stilton cheese. The bread is a cross between a pastry and dough. This is now also available at the shops. The third challenge was to create a wedding cake in a day, with a real life bride and groom telling each of the teams about their preferences. The Hambleton Bakery bride and groom wanted something really different, inspired by the Mexican ‘Days of the Dead’. The team worked incredibly hard to create a stunning three level cake with intricate motifs scattered across the three layers. The Bride and Groom loved it and the cake judge loved it too. In the end the judges found much to commend in Hambleton Bakery’s offering and they were awarded the honour of being ‘Britain’s Best Bakery’. Julian Carter commented: “We were surprised that we got this far, and amazed to win. It was a delight to meet so many other bakers from around the country who are passionate, as we are, about traditional baking. We learnt a lot from each other and tried out new ideas. A Community Lunch Abigail Richardson discovers why Oak House Residential Home in Greetham won ‘Care Establishment of the Year’ at The National Association of Care Catering annual awards recently

id you know that you can dine at the Oak House Residential Home on the first Wednesday of the month for £5 for 2 courses? It doesn’t get better than that, particularly as you have Preston Walker at the helm. Preston’s pedigree is impressive - he trained at Hambleton Hall, has worked at Harts in Nottingham and at World Service, also in Nottingham and one of the 3 sous-chefs, Phillip Day, has also recently won a regional competition. Ever generous, I took my team along to sample the competition winning food! We arrived at 1.15 for a 1.30 start and were taken into the dining room where the residents had eaten earlier. It was very warm and we were all rather over dressed. I was very impressed that the set menu included choices for both mains and desserts and that Preston also offers a vegetarian option on request (if booked in advance). We all sampled different offerings: A Blade of Derbyshire Beef with Horseradish Mash

and Roasted Butternut Squash or Natural Smoked Haddock with Crushed New Potatoes and Deep Fired Egg and the vegetarian was a Mediterranean Vegetable and Mozarella Tart. The presentation was, as ever, Michelin standard and we all thoroughly enjoyed our selections. The beef was succulent, the fish delicate, the tart delightful and I was very envious of the deep fried egg! For dessert there was a Lime Posset with Raspberries and Shortbread Biscuit or Sticky Toffee Pudding with Clotted Cram (and tea or coffee). I had the sticky toffee pudding – incredible, and I tried the lime (!), which was extremely light and refreshing. The Community lunch is very popular with the villagers so you need to book well in advance. Split-cane rod builder Richard Holman is keeping a traditional craft alive – and building exquisite fishing rods, says Dave Phillips

here was a time when all good fishing rods were made from bamboo. Not just any old bamboo, mind – I’m not talking about the improvised garden cane fishing poles deployed by small boys – but split-cane rods created by skilled craftsmen from the very finest materials. Only one type of bamboo – the giant Tonkin cane from the Kwantung region of China – could be used. And that would then be carefully aged for at least a decade before being painstakingly split into triangular sections. These in turn would then be planed with microscopic precision before being glued together to form a rod with a hexagonal cross section. When created by a skilled rod builder, the end result would be a fishing rod of extraordinary power and lightness. But such workmanship didn’t come cheap and, with the advent of new materials like fibreglass in the 1960s, the split cane rod quietly faded from the scene. It seemed that another traditional skill would be lost forever. But not quite. A handful of split-cane aficionados believed that no synthetic, man-made alternative could replace the unique action of a fishing rod made from natural fibres – and they kept the old technology alive. Among them was school teacher Richard Holman, a keen angler who, when away from the classroom, loved to wander the banks of small trout streams tempting his spotted quarry with well-aimed artificial flies, cast with his favourite lightweight split-cane rod. But his life changed forever 25 years ago when he moved from Dorset to Uppingham – and found himself living in the same street as Marcus Warwick, one of the UK’s leading split-cane rod builders. “It was always my ambition to make my own rod from scratch,” says Richard. “I got to know Mr Warwick and he was very open about the way he did things. He was generous with his knowledge and became my mentor. From deciding to do it to building my first rod took me two years. It then became a hobby and I started building rods for friends.” The hobby became a business a year ago when he retired from teaching at Tresham College, Kettering. He calls his business John French, Rodmaker. “John French was my father’s name,” explains Richard. “He taught me woodwork when I was a boy. He passed away a few years ago so I thought it would be nice to build the rods in his name.” These days, John French rods are sold all over Europe – but not in great

numbers. Because every one is hand-built by Richard himself, he only produces about ten a year. There’s a waiting list for them, but they are well worth waiting for. They are exquisite. Customers can choose form a range of five rods, ranging from a two-piece 6ft 3in rod suitable for casting light lines (AFTM 4) in small brooks through to an 8ft (AFTM 5) for heavier lines on larger streams. All are designed for intimate river fishing – Richard explains that the longer, more powerful rods required for still water trout fishing on lakes like Rutland Water would be too heavy if made from split-cane. He recommends modern carbon fibre rods for such Herculean tasks. Modern rods and the composite materials used in their construction change at an alarming rate. Today’s rods made from carbon fibre become obsolete tomorrow as new developments arrive, but split-cane rods remain timeless. “A cane rod is for life,” says Richard. “It is an investment for the rest of your fishing career. You only ever buy one and it’s for a lifetime’s companionship. People often buy them for a

loved one for their 40th or 60th birthday, or as a retirement present. But there’s no reason why you shouldn’t indulge yourself, of course!” When you do buy a rod from Richard, it is a bespoke creation. He likes to meet the prospective owner, ascertain what sort of fishing he enjoys and how he would like the rod finished, including the types of fittings used and even the colour of the gossamer silk thread used to whip on the rod rings. Richard also likes to see the size of the owner’s hand, so he can create the most comfortable grip (made from the finest Portugese cork). Each rod is supplied with two identical tip sections, so that the owner can alternate them and even out the wear. Like all natural materials, bamboo subtly changes over the years and will even adapt to the owner’s casting style, according to Richard. To protect them from knocks, they come with a cloth partitioned bag and a tough aluminium tube. Richard’s rods are not cheap, at £750 each. But that is a bargain for a hand-crafted fishing rod, built to last a lifetime. Although they look flimsy, these rods are capable performers. Richard is a mustard-keen angler and his biggest-ever trout – a mighty 4lb 2oz specimen from the upper reaches of the River Welland – was tamed using one of his own rods. • Contact Richard at 68A High Street, Uppingham LE15 9PZ.
