A huge congratulations to good friends Sarah and Limo Poli who were awarded a Michelin Bib Gourmand recently for their relatively new venture, The Lighthouse Restaurant in Kibworth Beauchamp. f you are planning to treat the family to something special this year, look no further than our brilliant, multi award winning local experts who take great pleasure in helping customers find just the right ingredients to suit any occasion or budget.

Hambleton Bakery – simply the best! An unforgettable year for the team at Hambleton Bakery – especially Head Baker, Julian Carter. Not only did he lead the team to take the honours in the BBC’s search for ‘Britain’s Best Bakery’ but went on to claim the highest accolade of Baker of the Year at the baking industry ‘Oscars’ at the Hilton Hotel in September. So, will he get a break at Christmas? Unlikely, but he does recommend a hearty breakfast of ham and eggs atop Hambleton’s Breakfast Muffins which are handmade and cooked on a traditional griddle to keep them light. “On the big day, try our handmade, traditional Christmas Pudding – made to a recipe stolen by my Great Granddad from a Yorkshire farmer! It’s generous on the fruit and brandy but much lighter than a standard pudding and won’t weigh you down after a heavy main course. Finish off with our mince pies containing our own delicious mincemeat made with apples from Exton Orchard and wrapped in the lightest puff pastry. I love them with crème fraiche but cream or custard will do the job.”

Otter’s Smokehouse & Deli – the best sustainable, high quality fish. Another year of success and expansion for Leo Sugden, owner of the award winning Otter’s Smokehouse & Deli. He recommends Hambleton sourdough loaves as the perfect foil to his exceptional naturally smoked salmon. “A perfect Christmas lunch starter; nice and traditional but also really, really good. Our salmon is hand reared on one of the oldest independent farms in Scotland and is of the highest quality as well as being RSPCA Freedom Food Accredited.” Leo recommends an accompaniment from the Hand Made Relish range – “Dill and Mustard sauce is a favourite with salmon and the Christmas Relish is great with cold meats.” By next month Leo will have up to one hundred and twenty different cheeses in stock - try something new or pack a couple of favourites into a hamper as a gift for a host. Choose a hamper from the standard list or order early to have one made up with items of your choice from £20.

Hambleton Fine Farm Foods – Turkey or Beef? Both please. Avoid the last minute rush with a freshly frozen Gressingham Bronze turkey – in stock now at Hambleton Fine Farm Foods. Head Butcher Adam tells us that multi bird roasts are back in culinary fashion, “Popular choices are a

turkey or goose containing other, smaller game birds such as pheasant, pigeon or duck. We can make up a roast of your choice to order.” If you prefer beef at Christmas, the butchery can supply joints and cuts from their own herds of Longhorn or Aberdeen Angus cross which have been raised locally having enjoyed the highest welfare during life and the slaughter process. In the deli section find lots of Artisan produce and for the freezer, stock up with ‘Cook’ products – perfect puddings for feeding a crowd.

The Melton Cheeseboard – Director Tim Brown recommends two, true blues… “Stilton is always a firm favourite at Christmas and it’s a great tradition in many families to have ‘The King of Cheeses’ as the centerpiece of the cheeseboard. It’s important to get properly matured Stilton, around twelve to fifteen weeks old as this is the age profile when the cheese is at its best – creamy - almost spreadable - and mellow, with a salty tang and a taste that lingers on the palate. Unfortunately, many large retailers sell their Stilton when it is simply too young and this is best avoided. Stilton is at its best when eaten at room temperature, so make sure that it comes out of the fridge for two or three hours before you want to eat it. A more modern style of Blue cheese that has been recently launched by Long Clawson Dairy is Claxstone Smooth Blue which has a higher moisture content than

The cheese has been accorded Supreme Champion at Nantwich Cheese Show in July, which is like winning an Oscar in the cheese world. Come and taste them both in our shop and see which you prefer!”

The finest fresh food… It’s not just me that thinks Farndon Fields has to be the best farm shop in the UK… they do have a trophy naming them as such plus several more from last year including Farmers Weekly Local Food Farmer of the Year and the Countryside Alliance Local Food Award. Produce doesn’t come much fresher, with much of the range on sale having only travelled 200m from the farm. The quality is exceptional and anything not grown on the farm is sourced locally including preserves, chutneys, baked goods, cheese and local honey. There is a new butchery stocking local meat of all kinds but don’t go home without a sack of Farndon’s fantastic potatoes – which is where it all began.

Mademoiselle Gabrielle Quinaux Caroline Aston

W

hen I was a little girl with pigtails and no front teeth to speak of one of my dear mother’s favourite walks on a summer’s day was round Ashwell churchyard. A tad gloomy you might think, but it was actually fascinating. My mother was a story teller par excellence and, having lived in Rutland for many years, had lots to tell about the various people who slept under the turf. She told me for example about the Rev. Adams whose gravestone stands near the church door the first army chaplain to win the VC which he did in December 1879 during the Afghan War. An old tombstone with a skull and crossbones on it convinced me that a pirate had somehow made it to Ashwell before departing this life! And then there was the stone which had a Frenchified name on it – that one particularly intrigued me and I was amazed that my mother had actually known Mademoiselle Gabrielle Quinaux when she was a girl and that there is a link between Rutland and the Belgian Royal Family. It was on the night of October 14th 1914 that Major Quinaux, Crown Equerry to the King of the Belgians arrived in Ostende with his special charge: all the King’s horses, state carriages and liveries, harnesses and motor cars! He now had to get them loaded on board the good ship ‘Prince of Orange’, land them in Southampton and finally deliver them all to Rutland. In fact the itinerary was Brussels to Barleythorpe! Lord Lonsdale (then resident at Barleythorpe Hall) had informed Count de Lailang, Belgian Minister in London, that he would take the whole shebang into his own protection for the duration! Lelaing’s exact words were ‘Lord Lonsdale... one of the richest and most generous earls in England has offered to take the whole service into his hunting place

at Barleythorpe’. The sea voyage was hazardous to say the least: acting on intelligence German planes bombed ‘Prince of Orange’ during the 3 days and nights it took to reach Britain. There were no casualties and the ship landed in Southampton according to plan. On October 17th two specially chartered trains were loaded up with their royal cargo and the whole lot arrived in Oakham. You can imagine

“I was amazed that my mother had actually known Mademoiselle Gabrielle Quinaux when she was a girl and that there is a link between Rutland and the Belgian Royal Family” that this caused quite a stir, especially when a cigar-smoking Lord Lonsdale arrived at the station to mastermind things, offering to stable the horses at his own expense. Major Quinaux, snowy walrus moustache quivering, declined – it was the wish of the King that all expenses incurred be paid by him and him alone and reluctantly the Earl agreed. The thirty carriages and the horses stayed at Barleythorpe for about a year before removing to Oakham where the coaches were stored in what is now the County Museum. They didn’t leave Rutland till July 1919. Everyone privileged to see them marvelled at the scarlet paint and gold leaf, especially the State Coach used for royal weddings and the carriage Queen Victoria had given to her beloved uncle, Leopold I of

Belgium. Mr Godcan the livery keeper, Mr Hansenns and the coachman Mr Duchene welcomed interested members of the public and proudly exhibited their precious charges. Major Quinaux and his daughter Gabrielle, who had subsequently joined him in Rutland, were happily assimilated into the local community. Mlle Quinaux joined the Women’s Legion in 1916 and took special interest in growing medicinal plants while her skill as a fine pianist made her the star turn at local concerts and entertainments held for patriotic causes. The Belgian grooms who had travelled with their charges helped out on local farms in their spare time. They had arrived with scarcely a word of English but were fluent when they left, some of the language being rather colloquial! Local tradesmen must have shed a small tear when the retinue finally departed – the £500 a month Major Quinaux spent on upkeep had been much appreciated. The whole of Oakham turned out to wave goodbye at the station as the trains bearing their Belgian allies steamed off. Quinaux said that he and his family would remember Rutland’s many kindnesses in their five years of exile as long as they lived. Sadly, in his case, this was not to be for long. The moustachioed Major died from a sudden heart attack at his home in Brussels on 16th February 1920. He was 78 years old. And Gabrielle? Her love for the county of Rutland was so great that she returned to it, died here and was interred at Ashwell. My mother couldn’t tell me why and I still don’t know but the story of how Oakham became a royal mews almost 100 years ago touches me as much today as it did when I first heard it, standing next to Mlle Quinaux’s grave in an English country churchyard one hot summer day.

’m sure we all have our favourite coats and boots and that these have now been plucked from the inner recesses of our wardrobes (I know mine have!). Although requiring a larger investment, a coat is such a key wardrobe piece. Let’s face it, you’ll be wearing it A LOT and a beautiful coat over an otherwise ordinary outfit can make you look and feel a million dollars! This season, especially, it seems that there’s never been a better time to treat yourself to a stunning (and not-too-practical) coat. It’ll be in your wardrobe for years to come – trust me! It’s the same with boots – they can make such a huge difference to an outfit. For instance, a pair of ankle boots with a dress gives an immediately more ‘funky’ look to even the plainest of dresses. The Autumn Game November is a great time to cook some local venison…

A

utumn is here and winter is on its way. Thoughts turn towards slowcooked casseroles and succulent roasts. I love to cook with local meats at this time of year and that passion undoubtedly comes from my late father. He was a real countryman who loved his pheasant and game. I dedicate the venison recipe below to him and the fond memories of growing up in Clipsham. These days at The Olive Branch and Red Lion Inn we tend to get our venison from our local gamekeeper in Clipsham and also from Keythorpe Game in Tugby, Leicestershire.

Venison casserole with tarragon juniper dumplings Casserole ingredients Serves six • 450g diced venison (stewing steak) • 2-3 tbsps olive oil • 1 large carrot, peeled, roughly chopped • 1 turnip, peeled, chopped • 1 onion, roughly chopped • 1 clove garlic, finely chopped • 1 tbsp plain flour • 1 measure of port • 300ml real ale (we use Olive Oil bitter from The Grainstore Brewery) • 1 sprig thyme • 1 tbsp redcurrent jelly

• 1 tbsp tomato paste • 4 tbsps red wine vinegar • 300ml beef stock or 2 beef stock cubes • 1/4 stick cinnamon Juniper tarragon dumplings ingredients Makes 12 • 175g self-raising flour • 75g shredded suet • 1 tsp chopped juniper berries • 1 tsp chopped tarragon • 1 tsp English mustard • Pinch of salt and ground black pepper Another local venison producer and supplier is Fen Farm Venison of Horbling Fen near Sleaford. They regularly stand at Stamford, Oundle and Oakham markets, where they sell a range of venison steaks, sausage and burgers made from meat raised on their Lincolnshire farm. Venison is probably the healthiest red meat. It’s low in fat, low in cholesterol, and high in iron and protein. It’s perfect for anyone on a diet or looking to cut down on fat intake while still enjoying red meat.

1. Preheat the oven to Gas Mark 2 (150C). 2. Add olive oil to a large frying pan heat and seal off meat briskly and in batches. 3. Remove from frying pan and place in a casserole pan and dust the meat with flour. 3. Place frying pan back on the heat, add all the alcohol, bring to the boil and reduce by half. Add the liquid to the casserole pan with the meat. 4. Wipe out frying pan with kitchen towel, add a tablespoon of olive oil, toss in prepared vegetables, garlic and roast off until golden brown (about 10 minutes). 5. Place roasted vegetables in casserole pan with meat and add rest of ingredients to casserole. Cover and place casserole in oven for three hours or until meat is nice and tender. Season to taste and serve. Dumplings 1. Mix all dry ingredients together in a bowl. Add English mustard, tarragon and sufficient cold water to make a fairly stiff dough and shape into 12 dumplings. 2. Thirty minutes before serving casserole, remove the lid, place the dumplings on the surface of the stew and continue to cook.

If I was choosing I would have picked Beetroot Risotto, Watercress & Colwick Cheese for starters, Venison Suet Pudding with Crushed Buttered Swede for main (now that sounds different!) and White Chocolate parfait with Cranberry Compote for dessert. The Fens have always been a mustard producing area and we’re proud of that history.” Michael ends with a story: “It’s said that Jeremiah Colman [founder of Colman’s] used to come to Wisbech to check the crop. The farmer would tip his mustard seeds into a bowl. Mustard: a little history

Harvesting mustard seed

The Romans probably exported mustard seed to Britain. They are known to have mixed unfermented grape juice, known as ‘must’, with ground mustard seeds to make ‘mustum ardens’ (burning must) – hence ‘mustard’. An early use of mustard as a condiment in England was in the form of mustard balls – coarse, ground mustard seeds combined with flour and cinnamon, moistened, rolled into balls, and dried. Growing co-operative member George Hoyles has another nugget of mustard history: “When the Pilgrim Fathers set sail from Boston in 1623 to discover America, they were a religious lot and used to pray five or six times a day. They took mustard seed with them – as the bible says, it is the smallest, fastest growing seed there is. Whenever they prayed they threw down some seed so they could retrace their footsteps. These mustard trails can still be picked up by satellite today.”

Colman’s Mustard One of our most iconic food brands, Colman’s Mustard was founded in 1814 when flour miller Jeremiah Colman took over a mustard making business near Norwich. Today, Colman’s is owned by multinational giant Unilever but its famous yellow packaging and bull’s head graphic has remained the same since 1855. It has always used mustard seed grown in the Fens.

What better way can there be to highlight a special event than the spectacle and magic provided by a stunning firework display? As the region lights up to remember Guy Fawkes Night, Amander Meade chats to Dave Rockman, a specialist Pyrotechnician and Director of local Firework Company, Hi -5 Fireworks What first ‘sparked’ your lifelong interest in fireworks? “As a boy, Bonfire Night was always my favourite – I loved the colour and the noise of old fashioned firework parties in the garden. Later on during my twenties, along with a couple of friends I took over the organisation of our local village firework event which fuelled my interest in the creative display process. It soon became clear that one of us had to become formally qualified and so I embarked on a series of professional pyrotechnic courses.” Several industry examinations, lots of study and in excess of fifty firework displays later, Dave found himself freelancing most weekends with crews creating displays at national events Hampton Court Palace Flower show, the topping out ceremony at Wembley Stadium and the weddings of several premier league footballers plus huge scale parties and events in Europe – it was time to take the next step. How did Hi-5 Fireworks come about? “I was still working full time so weekends were very hectic,” explains Dave, “My colleague Simon Cansick and I decided to take the plunge and launch our own company Hi-5 Fireworks Limited. Between us we had over twenty years’ industry experience creating massive and complex displays around the UK and beyond and we wanted the freedom to design and import our own exclusive range of effect shells, roman candles and multishot competition

standard fireworks. The first thing we did was to visit China and create relationships with a number of factories there – it is after all the home of pyrotechnics. Creating our own material means we can provide something bespoke and completely different. We operate displays at weddings all over the UK, special events, corporate events and product launches. In this region we have crews who fire the Rutland Lions’ annual display in Oakham and the Market Harborough Rugby Club Bonfire Night celebration too. We are the preferred supplier to Barnsdale Lodge as well as providing displays for Oakham School and Stamford Junior School for their end of term celebrations.” What kind of effects do you create? “We steer clear of generic packages, preferring instead to get a real feel for each customer and what they would like from us. We can create shapes in the sky, draw initials in a bride and groom’s theme colours or create a display to a compilation of their favourite music – very popular for both weddings and product launches. What you see in a Hi-5 show, you won’t have seen before. Arriving on the day, rigging and firing the display is only around thirty per cent of the effort involved in any show – the rest is designing, planning, fusing, waterproofing, and making sure each display benefits from maximum safety and 100% Wow Factor. For every five to ten minutes of

fireworks, there are around ten to twelve hours of planning and preparation.” What are the new innovations in use of fireworks? Increasingly popular are ‘Celebration of Life’ events where we create a funeral display. A sample of ashes are incorporated into fireworks and designed into a special display – often to music, which are as beautiful as they are emotional. To be honest, any event in life can be celebrated as there is something so magical about a breathtaking pyrotechnic display – in lots of cases, wedding couples choose to surprise their guests with a display half way through the evening reception which always goes down brilliantly and kick starts the festivities all over again. So…. Family fireworks in the back garden or the local charity display? What do you recommend? Although I remember the excitement of lighting the blue touch paper only too well, for real value for money (retail fireworks are very expensive!), I would recommend supporting your local display – at the events we fire, there is usually an early ‘quiet option’ so little ones are not too scared, followed by a crowd pleasing, full on spectacle that you just can’t recreate at home – plus a local charity benefits too. • Contact: Hi-5 Fireworks Limited Tel: 0800 043 6511 www.hi5-fireworks.com

Traditional Restoration has seen an increase in people interested in installing double glazed units in their original sash and casement windows. SHOPS & SERVICES The Rutland Calendar 2014 Throughout his time in Rutland which includes twenty three years working as a Chief Officer for Rutland District Council and seven years as Oakham Town Clerk, and now in retirement Richard Adams has used his passion for photography not only to promote the county but also to entertain people throughout the East Midlands and East Anglia with his illustrated talks combining digital images with music. When Richard first produced a Rutland Calendar in 2000, little did he realize that fourteen years later it would have become an annual commitment with over 1,200 copies being sold every year, many of which find their way to friends, families and ex Rutlanders living around the world.

The calendar is used every year to generate funds for local and national charities . This year it will be supporting the Rutland Historic Churches Preservation Trust and Diabetes UK Rutland lives up to the county motto “Multum in Parvo”, with its delightful variety of landscapes which together with the passing of the seasons provides a rich source of material for the photographer. Richard uses these landscapes, together with photographs of events taking place in Rutland to give a wonderful year round picture of the pleasures of living in or visiting England’s smallest county. Please Shut the Gate! Twelve months ago Nicola Elstone decided that, after more than 20 years in the commercial world of Art Consulting and Project Managing, it was time to dust off the 19 Century Letterpress in her old Victorian outbuilding at her home in Braunston and start creating her own work again, and so Please Shut the Gate was established! She admits that when faced with a stack of blank lino, tools and tubes of coloured ink she had no idea as to what she was going to create. But a need to firstly produce a sign for her front gate (as her hens were getting a little too free range) and then a pile of Christmas cards as the festive season approached, and she was on her way! Twelve months later her range of products has expanded, with a collection of kitchenware, home furnishing & fashion accessories. Success at the Burghley Horse Trials has created a demand from galleries and clients alike, across the country. All her designs are unique and as she says no two pieces are ever identical - they may be printed from the same lino block but the ink, fabric, pressure, temperature in her studio all play a part in making the pieces individual. Sir Edward Garnier QC MP Sosennah Every meets Sir Edward Garnier QC the Conservative MP for Harborough, Oadby and Wigston What is your background in politics? Compared to people like William Hague, I was something of a late starter in politics. I read history at Oxford, and although interested in political history and theory, I only became interested in a practical political career once I was in Chambers and met Leon Brittan. I stood for my election in a London borough by-election in 1983. Sir Edward has an impressive legal and political career, becoming a Queen’s Counsel in 1995 and a Bencher of the Middle Temple in 2001 but also holding the post of Shadow Attorney General for a number of years before becoming HM Solicitor General from 2010 for two years. He was knighted in September 2012. You were elected an MP in 1992, why did Market Harborough appeal? I was particularly looking for a seat in Leicestershire, where my wife’s family are from or in Norfolk, where I came from and so I was thrilled when I was selected as the Conservative candidate and then elected to represent this seat. My wife and I and our three (now grown up) children love living in this beautiful part of England. What do you feel is the biggest change in Harborough since you were first MP? It has to be the growth in population. The town has grown from approximately 14,000 in 1992 to about 20,000 now, with a noticeable demographic change too, as more young professionals and families have moved to the area. There has been a tremendous amount of house building which continues, but I do believe that Market Harborough still retains its identity as a market town. This growth has, however, caused a strain on the infrastructure and this summer’s town centre flooding was an indication of this. I shall be ensuring the authorities in question are working together so that these problems do not happen again. More and more houses are being built around Market Harborough but we are lacking in facilities such as doctors surgeries and schools? I agree and have particularly noticed that most primary schools in the area have had to expand using temporary classrooms or mobiles in order to cope with the increased demand. It seems that there is a lack of co-ordinated and forward thinking between planners and developers and government at the national and local levels. It is something I plan to address. I am also disappointed by the design of some of these new houses which don’t fit in with the traditional local architecture of the area. Looking at the style of the houses, somebody living in a new house in, say,

Farndon Fields could just as easily be in Exeter! Our market towns and their surrounding villages have a beautiful and identifiable style and it would be much better if new developments fitted in with this. What are you currently working on? In addition to planning and development issues, the ‘bee in my bonnet’ is the catalogue of errors surrounding the development of the new hospital and the day and endoscopy unit at St. Luke’s Hospital in Market Harborough. I am determined to work with the PCT and NHS Trusts to ensure that the delays and expense that lie behind this long saga are resolved and that the project work gets started. What do you do when you are not in Parliament? You’ll find me at lots of events in the area. I’m passionate about supporting local businesses and charities and attend numerous fundraisers and openings each month. I recently attended the launch of Fiona Cairn’s new book and I also visited the Dementia Café in Market Harborough. This is a fantastic facility used by carers and dementia sufferers alike. I am working with the Alzheimer’s Society to improve the support that patients and their carers get and have pledged to improve local dementia diagnosis rates. What are your interests outside of work? I am a keen but erratic tennis player and clumsy skier but I do enjoy shooting. I have always regretted never being good enough or brave enough to ride seriously although my wife and children did. I also enjoy watching the Tigers at Welford Road and the county cricket side at Grace Road, but my sporting activities are rather overshadowed by my wife and children, who are all competitive athletes. My daughter played lacrosse for England and the Midlands. Music is another passion and I try to get to concerts and performances here and in London. Finally, what are your thoughts on Richard III? I am a staunch supporter of Richard III’s remains being interred in Leicester Cathedral and feel that the current delay, anguish and expense in arguing over the matter is wholly unnecessary. All being well the matter will have been dealt with by the High Court by the end of November and we can get on and bury the King. • Sir Edward holds monthly surgeries to meet his constituents.
