It’s been a real pleasure this month to edit a magazine which so passionately celebrates living in Stamford. I’ve lived here since 1999 and, in that time, lost count of the number of people who have told me ‘you’re so lucky to live there’. But here’s the thing. I think many of us actually take it for granted, residing in this lovely old town. The opportunity to stroll around the majestic grounds of Burghley House. To enjoy fish and chips or a picnic amidst the beauty of The Meadows. To wander around the fantastic array of small independent shops in the town centre. Or to enjoy a drink and a meal at one of our fantastic pubs and restaurants dotted around the town and surrounding villages. We can even take a short drive to enjoy the splendour of Rutland Water. So, let’s not take it for granted. Let’s celebrate life in Stamford. As this magazine continues to do every month.

UPDATES Prestons Health Bridget Steele writes: After nearly 50 years trading in Alexandra Road, Peterborough, Prestons Health recently moved to the Thorpe Wood Business Park in a unit within the Virgin Active Health and Racquets Club in Thorpe Wood, Peterborough. Helen Preston showed me round the new premises. The colour scheme is in a soft grey with the company’s bright orange logo resulting in four tranquil relaxed treatment rooms that are not at all clinical. Helen remarked: “The move will enable us to offer our patients a more bespoke, modern and relaxed experience where we will be able to treat an individual from a truly holistic perspective.” Services offered include physiotherapy, podiatry, sports massage/soft tissue therapy, acupuncture and mindfulness. A gait lab is also available to work within the multi-disciplinary team and a podiatrist to offer evidence-informed, cutting edge biomechanical assessment of walking and running gait. “Patients attending for physiotherapy will be able, when indicated, to utilise the extensive exercise equipment onsite with their therapist to ensure optimal results from their rehabilitation programme,” said Helen. The site is metres away from the beautiful setting of Bluebell Wood in Nene Park and the River Nene, offering plenty of parking, including specific disability spaces and access. Marcia May Shoes expands M
ARCIA May Shoes is opening a second store early this month on one of the premises formerly occupied by Lambs in St Mary’s Street, number 36. Samantha Drewery, who founded the brand six years ago and launched a second store in Mill Street, Oakham, a couple of years back, is excited by the prospect of opening a third shop for her expanding business. “I have always had that building in the back of my mind,” she said. “I worked there as a Saturday girl when I was a teenager and always loved it. And there are so many period features that we can enjoy, including Georgian doors, the original shutters and a Georgian stone
staircase. We can’t wait to move in.” Women’s and men’s shoes will be transferred to the new site, and children’s shoes will remain at the current location. HE is such a generous-hearted person, who on several occasions has sponsored me or donated raffle prizes to charity events I have organised. Not only that, she has stayed late at the shop for me when I’ve been stuck in traffic, knowing I’ve a wedding to go to the following day. The icing on the cake, was when my mother had American house sitters. The lady asked me if I knew of a decent hairdresser. By coincidence I had an appointment with Claire later that same day. At such short notice, she managed to juggle appointments around, so that the lady could come with me and have her roots done. She works so hard and all this with a young child and husband in ill health. She deserves a medal and I would like her to get the recognition she deserves.”

NE hundred of the world’s best wildlife photographs are on display at Queensgate Shopping Centre in Peterborough. The images are the pick of 42,000 entries from photographers from 96 countries for the 51st Wildlife Photographer of the Year exhibition. They are being shown across the world on a tour, which is visiting this area for the first time ever. College Cool Sometimes it’s difficult to coax people to model in Stamford Living Magazine, so it’s nice when a story presents itself. Sam Harvey, a student at New College Stamford, has always wanted to model and got a taste for it when he was the subject for a student on the New College Stamford photography course. Sally Stillingfleet enlists the help of Style Advisor Ian Gibbs at John Lewis Peterborough and Sarah, from Energy, to introduce Sam to some new looks

AM has his own style and loves his music too. Ian soon showed us round the menswear department and was quick to tap into Sam’s interests and colour preferences, pulling out new labels such as Hymn and Boss Orange. The Kin suit was a big hit, especially with the narrow lapels and slim styling; perfect for a younger customer aware of the subtle tailoring and slimmer trousers. Ian excels at pulling together great outfits and it soon became apparent it was more about what to leave out (due to space) rather than what to include. There are plenty of options at John Lewis but even better to have an expert on board, showcasing the best brands for Sam to try. Later that day Sam was drawn to Carhartt’s cool sweatshirt, teamed with Levi’s denim short and trainers for a more casual look from Energy. EPTEMBER often signals a return to normality for many parents – children head back to school and toddlers are enrolled at nursery, which gives parents some much-valued ‘me time.’ Julie Bickerton runs numerous classes in the local area and is well qualified to restore some calm back into you. BIRTHLIGHT PREGNANCY YOGA: MONDAY SEPT 12TH AT 6.30PM - 8PM These classes provide a safe haven for yourself and your baby so together you can explore your connection whilst pregnant. Make physical space in your body and spiritual space in your heart for your baby whether it’s your first or subsequent pregnancy. Together with fellow mums-to-be, I support you throughout your pregnancy and teach you relaxation and breathing techniques, yoga, massage, movement, dance and sound to help prepare and empower you for labour. £75 for a 5 week course PEACE AMONGST THE CHAOS: WEDNESDAY SEPT 14TH 11.45AM - 1PM After years of observing both myself and other new mums, it is clear that we may carry around a weight on our shoulders which at times overrides all the deep joy that we feel. The Corn Exchange Charity Shop called Nik Naks, is raising donations for the Theatre Trust by selling on pre-loved bric-a-brac, pictures, books, jewellery and clothes that can be adapted for theatrical productions. he charity ‘Anna’s Hope’ was founded 10 years ago after Anna lost her 15-month battle to a brain tumour aged only 3 years 8 months. “Anna was incredibly brave and never complained once despite her gruelling treatment over 15 months. She was an inspiration to us,” says her mother Carole. Sadly brain tumours remain the biggest cancer killer of children and young people and even for those who survive, their lives can be severely compromised. Ten years ago there was no rehabilitation support for children with brain tumours so Anna’s parents, Carole and Rob, set up the charity Anna’s Hope to make a difference by helping these children reach their full potential. Today the charity is helping hundreds of children in the East of England through the Anna’s Hope Therapy Team which is part of a pioneering new service they co-founded at Addenbrookes called ‘Brainbow.’ The Anna’s Hope Therapists provide specialist rehabilitation through physiotherapy, occupational therapy and speech and language. From now on, every child diagnosed with a brain tumour in the East of England can be supported by the team, with the aim that it will be adopted by the NHS and rolled out nationally. Anna’s Hope also provides support through the specialist nurses and funds family support groups. It is tough for every member of the family whilst a child is undergoing treatment and living with the impact of a brain tumour, so Anna’s Hope also arranges fun days out to give the child and their family a break, whilst also creating some great memories. Anna’s Hope also lobby to raise awareness and for greater funding into research. After 10 years of Anna’s Hope lobbying the government, along with other charities there was the first ever debate about brain tumours in Parliament in March this year, which will hopefully help increase funding for research and raise awareness. Whilst Anna’s Hope is making a big difference, it is a small charity that works very hard. Carole said: “Our Office is a kitchen table and most of the work is done by Rob and I and some very loyal and hardworking volunteers. Every penny we raise goes to supporting children with brain tumours. “So far we have raised £1.25m and to continue to fund the Anna’s hope Therapy Team we need to raise £200,000 per year. We could not do this without the continued generous support of the local community and businesses in the region.” Anna loved fairies and that is why you will see Carole and her volunteers dressed as fairies at fund raising events throughout the year and there is huge disappointment now if Carole dresses normally! Their approach to fundraising is that it should be fun and where possible you should have a sense

Summer Reading Abigail Richardson reveals the secrets of ‘book group’ or should we say wine club?

OOK groups are springing up all over Stamford and Rutland. I belong to two and I will really miss them when I move shortly with my family to the United States.They have been the highlights of my month and I have made some very good friends. The first started at my house with w ith a selection of Philip Larkin poems and, in hindsight, it was an incredibly successful way to bring together a group, as was the never ending flow of wine!

Americanah by Chimamanda Ngozi Adichie. (Thanks Emma). This one actually split the group but I could not put it down – I initially bought it on the Kindle but had to own it in paperback too – it was so inspirational and beautifully written. I completely concur with its review: “There are some novels that tell a great story and others that make you change the way you look at the world. This is a book that manages to do both.” Similarly so does The Help by Kathryn Stockett, thanks to Amander I finally got round to reading – it is a moving piece of fact/fiction which is shockingly revealing about Jackson, Mississippi in the early 1960s. Also Things Fall Apart by Chinua Achebe – I used to teach this in the USA – illuminating.

Divine Secrets of the Ya-Ya Sisterhood by Rebecca Wells (thanks Jacquie) – For anyone with a complicated mother/ daughter relationship– I will say no more!

I am not particularly a fan of the psychological thriller but Headhunters by Jo Nesbø was brilliant (thanks Nicky) – exciting and not too distressing although the characters were definitely not sympathetic. I gather, though, Nesbø’s Harry Hole series is not for the faint hearted. A quick nod to Girl on the Train by Paula Hawkins – Amander’s favourite, and Before I go to Sleep by SJ Watson – same genre and very good reads.

‘Chick lit’, no apologies – my go-to summer genre: I Don’t Know How She Does It, Allison Pearson – such a reassuring read for a guilt ridden, busy, working mother! I didn’t care for the film though. Oh and anything by Liane Moriarty – Big Little Lies was particularly fun – (thanks Helen).

The Woman in White by Wilkie Collins – another classic and Emily’s favourite (thanks Kim). Probably my preferred genre, this novel is considered one of the first examples of detective fiction. It is long but worth the trouble. Also in the same class are anything by Conan Doyle, Agatha Christie, Edgar Alan Poe and Roald Dahl’s adult short stories.

Finally my all-time favourite – Pride and Prejudice – yes predictable for an English teacher, but truly entertaining with laugh out loud moments from the brilliantly witty Jane Austen. Love the BBC version and Matthew Mcfadyen in the film but Kiera Knightly? My daughter and I saw some of the latter filmed at Brooke Church and Judy Dench came out to say hello…that was a long time ago.

This regulation covers so many things from extending or altering your property (Planning Permission/Building Regulation Approval) to replacing your central heating boiler (CORGI/GasSafe), installing a wood burner (HETAS), installing replacement windows or doors (FENSA/CERTASS), having electrical work carried out (NICEIC/NAPIT), and even having your chimney swept (NACS). Lynsey doesn’t offer a long list of ‘traditional’ beauty treatments, believing passionately that genuine beauty comes from the inner glow of good physical and emotional health. Based on that principle, her core business is centred on skilled holistic therapies, including Indian head massage and a rejuvenating facial massage that I was lucky enough to try. The hour-long treatment incorporates a unique blend of techniques from both Japanese face massage and Indian face massage, as well as complementary techniques from acupressure and facial reflexology, and is sometimes referred to as a natural facial lift. Lynsey explained that most people suffer tension that builds up in the facial muscles, causing puffiness, lines and wrinkles. Small precise movements increase blood circulation, stimulate the nervous system and improve lymphatic flow, transporting bacteria and toxins away from skin cells. Over time, the massage also helps to strengthen and tone facial muscles, helping to prevent sagging skin and fine lines. After a blissful hour, my skin felt wonderfully smooth. Having suffered from hay fever all summer, I can also testify that it relieved the symptoms and provided a feeling of clarity and peace that I’d normally struggle to find on a busy Thursday evening! ETERBOROUGH lad Ryan Kay is heading to Brazil with the Great Britain Paralympic Games 7-a side football team with a little help from local estate agents Sharman Quinney. He flies out to Rio on September 2 and will be looking to bring home a medal during his 18 days out there. Ryan (19) was diagnosed with Spastic Paraplegia at the age of two and required splints for more than 10 years to help maintain his balance. Regular exercise, physiotherapy and even Botox injections have been used to give Ryan greater mobility. A pupil of Southfields School and then Stanground College, Ryan took up playing football for his local team in Park Farm before recognition at the East Midland Centre of Excellence in Nottingham. MEET THE MAKER Janet Bates is a local artist who is tickled by feathers and captivated by curios. Clare Kelly catches up with her for a chat
A BEAUTIFUL WORLD
T
HE boiling kettle begins to whistle signalling a short tea break for Janet who is in the middle of a big commission for the upcoming Green Festival which will take place in Peterborough this August. It’s something she has been working on for months but you’ll have to wait to see it. Alfie, her dog, has his own bed in the studio and naps, occasionally lifting his head as if to listen to the Radio 4 play in the background. And there are other creatures too, albeit ones who have long abandoned their temporary homes – snakeskins shed in summer, the studded shells of sea urchins and cocoons that provide the changing rooms for caterpillars to become moths. “I have always been an avid collector, ever since I was a child. Family holidays were always a great opportunity to collect everything from foreign coins and postcards, to seashells and sugar sachets. They were always displayed and arranged in suitable boxes. Most of the objects I collect now are natural history-based and are used as inspiration for new projects, although I do love displaying them in my studio! My most prized artefact has to be my bird feather collection,” says Janet. After studying an art foundation course at

New College Stamford, she went on to complete a BA in Fine Art at the University of Lincoln. She clearly enjoyed her time there and adds: “The art and design foundation course is a great way to experience lots of different media and also to find your niche. New College Stamford provided me with an excellent grounding to go on further.” Janet’s work is varied but she focuses on printmaking using woodblock and lino printing techniques inspired by her love of the natural world – and then there are the wooden boxes – these self-contained tiny worlds she creates are inhabited by hand illustrated colourful manifestations of animals that once roamed the earth. And I learn something here. I learn about the Great Auk. Have you heard about this threefoot tall penguin-like bird? I hadn’t. Janet had and you can see a pair of them in her work ‘The Last of the Great Auks’. They are made of paper and are perched on a cliff edge watching over three fishermen in a boat, whom, history tells us will be the cause of their extinction. The two last confirmed auks incubating an egg were killed on Eldey, off the coast of Iceland in 1844. Inside another box, Janet has painstakingly created three paper Dodo (or should I say, dodos?) who like the Great Auk are a commanding presence despite the advancing ships on the horizon. We
know that story. Museums have been a constant inspiration and “the quirkier the better”; her favourite is the Fan Museum in Greenwich. And not only are the artefacts in the cabinets of interest, it is the way these collections are arranged that have inspired much of Janet’s work and she is never without her sketchbook: “I start new projects with research and plenty of outings to get inspiration. Sketching and drawing is integral to my work, so I like to compile everything in sketchbooks for reference. Experimenting is crucial, it’s often the happy accidents that bear the most fruit,” she explains. Meet Loki, the cat around Town
T
HE thing that concerns me about cats is that they often bring unsavoury things into the house. Dogs eat unsavoury things, when you are out walking them, but cats deposit half-chewed animals in your hallway or on your kitchen floor! There has been more than one occasion when I have chased the cutest little mouse around a room, which has been caught and deposited by my beloved feline friend, and then brought home for a game of ‘Cat and Mouse’! That said, they still offer huge amounts of love and are fantastic lap or foot warmers on those cold winter days!
Cats sleep anywhere, any table, any chair Top of piano, window ledge, in the middle, on the edge. Open draw, empty shoe, anybody’s lap will do. Fitted in a cardboard box, in the cupboard with your frocks. Anywhere! They don’t care! Cats sleep anywhere. This poem, by Eleanor Farjeon (1881-1965), I learnt when I was about 9 years old and I remember it to this day. I think it says so much about the feline race.
One or two interesting facts about cats: • The average lifespan of a domestic cat is 15 years • They tend to sleep for 12-16 hours a day, just like your average teenager! • On average a cat has 24 whiskers • For those who like collective nouns – a group of cats is known as a clowder, pounce or clutter.

Loki is a striking, 2-year old, Bengal cat who has incredible markings and he looks just like a miniature tiger. His owner, Robyn, talks fondly about him and his exploits around the village where they live: “Loki is a massive character, he goes on half-hour walks with our dog or to the village shop, he often curls up and sleeps, squashed between the double glazing and I’ve found mice in my wellies that he’s just popped in there for safe keeping!” The breeding of a Bengal cat is a mix of a domestic cat and an Asian leopard cat, the latter being a fishing cat. Hence, Bengals love water, which is very different to most cats, who generally hate water. Bengals are hypoallergenic with a very soft coat that does require some grooming and they house train easily so this negates the need for the dreaded litter tray. Robyn says she would recommend a Bengal cat to anyone. “If you like a cat that is very trainable, intelligent, adventurous, mischievous all rolled into one, then this is the breed for you. If you have a house that is interior designed and you value your curtains, this is not the cat for you!”

It will help stop them marking their territory by spraying. Un-neutered tom cats tend to stray, which in turn can lead to them being run over or being a nuisance in someone else’s home. Asking Prices vs. Property Values… This month, local buy-to-let expert, David Crooke, author of the ‘Rutland and Stamford Property News’, online blog www. rutlandandstamfordpropertyblog.co.uk and managing director of UPP Property Agents, discusses the difference between ‘asking prices’ and ‘values’ and why it matters.
W
HEN it comes to selling property, there must be agreement between the purchaser (buyer) and seller (vendor) for a property sale to take place. The value a buyer applies to a property can massively differ from the value a seller or mortgage company places upon it. The seller, the buyer and the mortgage company must find an agreeable value to assign to a property so the sale can proceed. Asking prices are important as they are one of the 4 key matters a potential buyer will judge your property on (the others being location, bedrooms and type). Price too high and buyers will be put off. Over the last 12 months asking prices (i.e. the price advertised in the paper and on Rightmove) in Stamford have decreased by 2%, taking the average asking price in Stamford to £336,400 (down from £344,200 - 12 months ago). Interestingly though, when looking at detached and terraced property, a slightly different picture appears. 12 months ago, the average asking price for a detached house in Stamford was £519,400 and today its £528,200 (a rise of 2%); whilst over the same 12-month period, the average asking price of a terraced property was £259,300 a year ago, and today its £325,200 (a rise of 25%). Therefore, the decrease in other property types have brought down the total average figure. However, research shows that the supply of property for sale in Stamford is beginning to increase. In December 2015, there were 120
on the market in Stamford; today there are 130 properties on the market (up 8%). This will mean homeowners looking to sell will need to be conscious of how their property compares against others on the Stamford property market. The Stamford property market still has substantial momentum and sufficient demand remains. This noteworthy increase in supply since Christmas is currently providing more choice for buyers and is tempering asking prices. Asking prices are one thing, but what a property sells for (i.e. value) is a completely different matter. These are the average prices achieved (i.e. what they sold for or the average value) for property in Stamford over the last 12 months... • Overall Average £277,300 • Detached £391,800 • Terraced £230,200 Clearly there is a difference between what people are asking for property and what it is selling for. HIS is the 4th year that Lyndsay Ford, from Shutterbox Photography, on North Street in Stamford, has organised the competition, giving 100 children the opportunity to win some amazing prizes from 20 local companies. These local independent businesses took part as sponsors and judges, generously donating a variety of amazing products and services totalling a prize fund value of over £2,000! Joyce Hobson, from Stamford Kidz Stuff, helped Lyndsay to organise the competition, which this year was held in the new Corn Exchange Shopping Arcade. The entry photos were put on view in the shopping arcade for the public to view and vote for the child that they wanted to be crowned ‘The Face of Stamford 2016’. Amazingly, 2,872 votes were placed over a one-week period. The top five children with the most votes in each age category were then presented to the sponsoring businesses, who had the final vote. We are pleased to announce that this year the winner, titled the Face of Stamford 2016 is 11-yearold Charlotte Mills from the ‘7-11-year-old’ age category. The children with the most votes in the other age categories are runners-up and they also win a great selection of prizes. The Brownings – Architects of Stamford
Sue Lee and Jean Orpin encourage you to explore the work of Bryan and Edward Browning in Stamford.
T
HE Brownings’ practice in Stamford existed for little more than forty years in the 19thC yet there are more buildings in the town by them than by any other named architect. Both were versatile and knowledgeable about historic styles showing restraint and sympathy for Stamford’s existing buildings. They could also however be inventive and Edward in particular developed his own distinctive features. Bryan Browning was born in Thurlby in 1773 but his architectural practice was initially in London. He married Catherine Bailey of Edenham at St George’s, Hanover Square in 1809. By the 1820s he was working in Lincolnshire where he designed Bourne Town Hall and the House of Correction at Folkingham. It may have been these buildings or work he did in London that attracted the attention of the Earl of Exeter. About 1838 he moved into Stamford and was retained by the Earl at a salary of £180 a year. Initially he lived on St Peter’s Hill, then established an office on Broad Street and later lived on Barn Hill. He died in 1856. Edward Browning was born in 1816 while his father was practising in Clerkenwell. By the time Bryan moved to Stamford, Edward was already working with him and in the early days it is not always clear which of them was responsible for which buildings. Edward married Louisa Fox at St Martin’s Church in 1850 living firstly at 16 Broad St and later at ‘The Elms’ at Wothorpe which he designed for their large family. Their older sons went to Stamford School. Edward continued to work locally, also building up a successful practice across several counties particularly in church work. He was appointed Diocesan Architect for Lincolnshire and in 1863 he was Mayor of Stamford and gave the town its distinctive Mayor’s chain. He retired through ill health in 1881 and moved back to London but died only a year later.

ARCHITECT’S OFFICE, 16 BROAD ST This is where Bryan established his architectural offices. When Edward married, he altered the premises so they also became his family home. The bay window over the door supported by brackets is a typical feature of his work. The rear of the house has several ecclesiastical features possibly installed when Edward was restoring churches. TOWN BRIDGE AND SURROUNDINGS (1846-9 EDWARD) Supposedly the decision to replace the town bridge was made due to Queen Victoria’s critical comments during her visit in 1844! Robert Woolston was chosen to build it to a design in Norman style by Edward and his younger brother Henry (later to be Rector of St George’s). It used Bramley Hall stone and was to be completed by 1848. Floods and shortage of funds resulted in Woolston’s bankruptcy so Edward Browning took over the project. The bridge was eventually completed in 1849. As part of the scheme buildings near the bridge were added and altered to make a coherent entrance to the town. The former Gaoler’s House at 4 St Mary’s Hill and the Boat and Railway opposite were both re-fronted. A Toll House was built on the north-east corner. Browning’s skill is shown in the way these buildings blend in harmoniously with other buildings on the hill.

4-5 RED LION SQUARE, NOW HSBC (1848 BRYAN) As part of a road widening scheme this plot, including 1 High St, was sold by the Corporation to the Marquess of Exeter on condition that it was rebuilt. It was designed as 3 houses with shops on the street. It is an impressive building in a mixture of Dutch and Jacobean styles. BUTTERMARKET, 8 RED LION SQUARE (1859 EDWARD) The Marquess of Exeter commissioned a freestanding structure for the centre of the square but Browning’s original design had to be abandoned following objections from the shopkeepers. Instead the site of the Horseshoe Inn at the corner of the square was used for this Renaissance style building. CORN EXCHANGE, BROAD ST (1858/9 EDWARD) In 1858 the Black Swan was demolished and replaced with the new Corn Exchange – previously an open arcade in front of Browne’s Hospital. Following a fire in the 1920s the front was altered but it has fortunately recently been restored almost entirely to Browning’s original design. TOWER HOUSE, ST PETER’S HILL (1845) This has had an extra storey added since the Brownings designed the house. It is not certain whether it is Bryan’s work or Edward’s but whichever it was they clearly intended it to harmonise with the 17th century Wheatsheaf Inn which was next door.
STAMFORD INSTITUTE, ST PETER’S HILL (1842 BRYAN) This unusual design, using both Greek and Egyptian features, was constructed under the patronage of the Marquess of Exeter. It provided a concert and lecture room, a museum, a library, a laboratory and a reading room. There was also accommodation for a custodian and a Committee Room. ALL SAINTS’ VICARAGE, 8 ST PETER’S HILL (1855 EDWARD) St Peter’s Rectory, a medieval house, had become very dilapidated. Browning advised that the building was beyond repair so it was demolished to make way for a new vicarage for All Saints’ parish. His design was very similar to the old house it replaced but on a more substantial scale. GRANT’S IRON FOUNDRY PORTICO, WHARF ROAD (1845) In 1845 the Marquess of Exeter built an iron foundry for J.C.Grant designed by the Brownings with this portico across the corner of Wharf Rd and Albert Rd. The business was short-lived and by 1858 Blashfield’s terracotta factory was there but the arch remained. It was moved parallel to Wharf Road in 1937. ST GEORGE’S RECTORY, ST GEORGE’S SQUARE (1881 EDWARD) It is appropriate to finish with Edward Browning’s last building in the town before he retired though not perhaps his most impressive one. A 17thC rectory on the site was probably in considerable disrepair and like St Peter’s the new one may reflect the original. JOSH MAKEY At 26-years-old, local farmer Josh Makey has jumped on the healthy eating bandwagon and started his own company called Rutland Rapeseed Oil. Deborah Pennell caught up with him on his farm just outside Ketton, to see why he might be thought of as a local food hero Have you always lived in Rutland? Yes, I was born and grew up in Rutland. Is this a family farm? I am the fifth generation in our family to farm here at Wythchley Warren Farm. I work alongside my father. Tell me a little bit about the farm and what variety of crops you grow? The farm is 600 acres of arable land and we grow a mixture of wheat, barley, oilseed rape and oats. In which month of the year do you harvest the Oilseed Rape? Depending on the growing season we will normally harvest at the end of July or very early August. What made you decide to manufacture Rape Seed Oil yourself? I came back from University and saw the growing popularity of Rapeseed oil and I thought I would have a go at producing some myself. It is something I can do all year round.
the rapeseed oil arrives in the tanks it is left to settle for 2 weeks. It is then passed through a paper filter, which polishes the oil (clears away any sediment), before going into clean storage tanks. I then bottle it into 250ml, 500ml and 5 litre containers, the latter being sold mainly to caterers and restaurants. Rapeseed Oil is the most wonderful bright yellow colour. Does it have any health benefits? Yes it has a very good health profile. It is half the saturated fat of olive oil, rich in omega 3, 6 and 9 and has a higher smoking point than butter and most other oils.
How many acres of Oilseed Rape do you grow a year? And what yield per acre would you expect to get? We grow approximately 150 acres of Oilseed Rape and the yearly yield depends on weather conditions, so it is difficult to predict. Oilseed rape is often used as a ‘break crop” in farm rotation to supress weeds and improve soil quality for cereal crops such as wheat and barley. Tell me a little bit about the process of making Rapeseed Oil and the equipment you use. The Rapeseed Oil I produce is from a single cold pressing, which extracts about 30% of the oil out of the seed. The rapeseeds are harvested and sent via an auger into a 5 tonne storage hopper, on the upper floor of a small two-storey barn. We have a gravity fed pipe attached to the hopper, which slowly releases seeds into the screw, which presses out the oil. The by-product is Rapeseed cake, a high protein cattle feed, which is then sold onto a local feed merchant. Once
There were pros and cons whichever way we went, but leaving the EU may mean the UK is freer to change rulings on chemical usage, which longer term, may help to make farming more sustainable. What are your plans for the future? I would like to develop a salad dressing using my mother’s own recipe and another idea I have is to produce a range of infused rapeseed oils. When is the quietest time of year for you? The winter months of November and December are my quietest months but I can still be making rapeseed oil during these months, if there is the demand. Which local chefs use your Rapeseed Oil? Sean Hope at the Olive Branch, Taff at the Finch’s Arms and Ian Russell at the Falcon Hotel all use Rutland Rapeseed Oil. It is one of the highest quality vegetable oils and has become fashionable amongst many celebrity chefs.
What sort of recipes would you use Rapeseed Oil in? It is such a versatile oil. The chefs love it. It can be used in so many recipes, but it makes especially good roast potatoes and salad dressings. Where can we buy Rutland Rapeseed Oil? Online or local stockists include Nelsons butchers in Stamford, Oakham and Uppingham, The Stamford Cheese Cellar and The Stamford Garden Centre. From a farmers’ point of view how will leaving the EU affect you?
When you have free time, what interests do you have outside of farming? I enjoy shooting, going to the pub and playing golf at Rutland Water Golf Club off a 17 handicap. The full-time courses are generally geared to those who have chosen a career in catering and some of their prodigy can be found around Stamford in establishments such as The Cosy Club, The William Cecil and The George. Full-time courses include Food Preparation and Cooking Certificate Level 1, Professional Cookery Diploma Level 2 and Professional Cookery Diploma Level 3. Entry requirements vary but some courses require prior work experience. All the catering courses run for one year and students gain experience, working in the college’s Gallery Restaurant. For those of us with an interest in cooking, but possibly just wanting to increase our knowledge and hone our skills in certain areas, they also run 5 week evening classes. Evening classes are normally set a few weeks before the beginning of term so September 2016 classes are still being finalised, but recent short courses have included Cake Decorating, Baking and a course called The Great Lincolnshire Bake Off which was a take on the TV programme. This course included bakes like Swiss Roll, Salted Caramel Tart and Mediterranean Scones. Evening classes run from 6.30-8.30pm and generally incur a minimal fee, to cover ingredients. Two to three times a year, Ravi holds a Saturday course, which runs from 10am-4pm. The day involves cooking a starter, main, rice and a bread. Ravi is also happy to run private classes in your own home – these can be designed to cover your own choice of dishes and normally last 4 to 5 hours. I asked Ravi what his favourite dish was and he suggested Lamb Pataki – a traditional onepot dish where lamb is flavoured with coriander, cumin and fenugreek and cooked slowly. Rabbit revival!
The Olive Branch’s head chef Sean Hope on the joys of rabbit, with a recipe thrown in for good measure… PHOTOS: CLIVE DOYLE
T
HIS month I’m singing the praises of rabbit and giving you a recipe that I’m hoping will inspire you to try this unsung hero of a meat. Rabbit is high in protein, low in fat, affordable and environmentally friendly. It contains half the calories of pork, less than half the fat of beef and is more than 20% protein. What’s more, rabbits can be raised on a grain-free diet and are prolific breeders: ten females and one male can produce around 200 offspring per year. So rabbit could even solve some of the world’s food problems! What’s not to like? But what about the taste, I hear all you rabbit virgins cry? Well, the meat is delicious – some people say it tastes like chicken but it has its own distinctive taste – not gamey but well balanced and pleasant. Go on – give it a go. Ask your local butcher. CONFIT RABBIT SCOTCH QUAIL EGG, CARROT SALAD, PUB CHUTNEY mix on a piece of cling film and Serves 4 spread lightly Scotch egg recipe 3. Place the soft-boiled quail • 4 quail eggs – boiled for egg on top of the mix, then add two minutes and 20 seconds, another teaspoon of mix on chilled and peeled the top of the egg and spread • 2 tablespoons of seasoned evenly flour 4. Wrap in the cling film and • Egg wash place in the fridge for five • 4 tablespoons of minutes breadcrumbs 5. Remove the wrapped egg • 100g confit rabbit leg-picked from the cling film, roll in off the bone & finely chopped lightly seasoned flour, then • 100g sausage meat roll in the egg wash and finally • 1 teaspoon grain mustard roll in the breadcrumbs until • 1 tablespoon fresh chopped evenly coated parsley 6. To cook the egg, pre-heat the oil in the fryer to 180C and Method deep fry for one minute until 1. Combine the confit rabbit golden brown leg with the sausage meat, 7. Place onto a tray and bake in mustard & chopped parsley a preheated oven at 190C (Gas and mix well in a bowl Mark 5) for three minutes, then 2. GRAPE AND APPLE CHUTNEY – MAKES TWO JARS • 3 dessert apples • 500g seedless grapes • 1 onion – peeled and chopped • 500g light brown sugar • 250ml white wine vinegar • 250ml balsamic vinegar • Pinch five spice • Pinch dried chilli Method 1. Place all ingredients in a large saucepan 2. Bring to the boil and then simmer to a chutney consistency. This will take around 3-4 hours 4. Remove from the heat, cool and jar 5. Serve as required
PICKLED CARROT • 200ml white wine vinegar • 1 petal star anise • 5 coriander seeds • 1 bay leaf • 1 clove garlic • 1,000ml water • 4 tablespoons honey • 8 baby carrots (heritage varieties if possible) Method 1. Bring the vinegar to the boil with the aromatics and reduce almost completely 2. Dilute with the water, then add the
honey to acquire a sweet and sour pickling stock 3. Bring to the boil 4. Wash and peel the carrots 5. Cut into thin strips using a vegetable slicer 6. Add the carrot strips to the boiling stock and cook for one minute 7. Remove from the heat and allow to cool in the stock 8. Place in a sterilised jar and cover with the stock, then store in the fridge 9. Serve as required

Reaching for the stars Lee Clarke makes no secret of his ambition to own Peterborough’s first Michelin-starred restaurant. Could an early visit from the famous guide’s inspectors hint that his new venture, Prévost, will make it into September’s edition? REVIEW: GILLIAN BENDALL
O
UR city centre restaurant scene is in the ascendant, as Cathedral Square and its surrounds have become home to a nearheavenly host of well-known names offering a wider choice than ever before. Wander one street further, however, and you’ll discover the oasis of calm that is Prévost, where chef Lee Clarke serves up a discerningly good and, it might be said, decidedly more singular dining experience. Here, the former head chef of Clarke’s restaurant has lovingly refurbished the interior of a 16th-century building, the former Flyers Club. The theme is elegant, understated and relaxed, its narrative punctuated only by signature pieces of art by local favourites. Ultimately, though, Prévost is all about the food. Lee promises to guide diners on ‘an exploration through freshness, texture and taste’ with innovative tasting menus and everything sourced as locally as possible. Our ‘adventure’ began in the cosy snug where we chose from an extensive cocktail menu – the Raspberry Collins featured my favourite Copper House gin so was always going to be a winner, though my partner’s Anejo Highball made with Pink Pigeon rum, orange and ginger beer will be a worthy rival for my attention next time. Appetites whetted, we opted for the fivecourse menu. Lee says ‘flavour is at the heart of everything we do’ and, frankly, (and with apologies for the movie misquote!) he had me at the ‘snacks’ course. Eel that melted in the mouth (a first for me – now I wonder what I’ve been missing all these years!), asparagus cooked to perfection, cloud-soft home-made bread and a crispy beetroot ‘nest’ filled with

a richly-flavoured cheese. If I’d eaten nothing more that night, I’d have gone home happy! Snacks, however, were only the lead-in to a further five courses of gastronomic genius. From the intense flavour of a fried allium head served with a creamy confit hens egg and locally-foraged mushrooms, to smoky-rich black pudding plated up with Orkney scallops, apple and a watercress puree, we wended our way to the most delightfully-tender Denham Castle hogget served with a fabulous mint puree and perfectly-seasoned sweetbreads. Embracing the French style for keeping savoury and sweet courses separate, Lee served Lord of the Hundreds cheese with braised endive and wildflower honey next. The scent positively leapt from the plate before it was set down before us, and for me this dish was the triumph of the night: full of complexity, plus an inspired sprinkling of nigella seed… the contrasting flavours challenged the

mpeccable service complements the cuisine at Prévost. Our waitress Hannah described all the dishes in detail and offered expert guidance in our choice of wines which, starting at £6 for a large glass or £18 for a bottle, were competitively priced. To keep things fresh and seasonal, an ever-changing menu is promised; a three-course tasting menu is £32.50, five courses are £50 and nine courses are £75. Fabulous value is on offer for lunch – £32.50 for the three-course menu and snacks, plus a bottle of mineral water, an XL glass of wine and tea or coffee. tastebuds, but were exquisite. Our meal ended with a peach and almond dessert that was at once light, rich, creamy and refreshing. As with each of our courses, the menu description left plenty of room for surprise – with the most delicious almond praline atop, this dish was pure joy! Prévost promises ‘fine dining without the formality’ and we loved Lee’s approach to cooking food that’s British but full of surprises. The restaurant’s open plan design means most diners can watch their meals being created, and, as there are just 28 covers, you eat here knowing there’s no rush. At the end of the evening, whilst fellow diners enjoyed a last drink at the bar, we chatted to Lee across the kitchen counter. An engaging host, he explained some of the techniques behind the flavours we’d picked out as our favourites, and delighted in the fact that I’d enjoyed three foods that night which I would never before have even wanted to try. “That’s what I love to hear!” he exclaimed. “I’m inspired by all the great ingredients we can source today, and excited to share the different tastes we can create.” And what of that visit from the ‘Michelin man’? Lee said: “To have had Michelin visit us within our first four weeks is a great vote of confidence. Our team is extremely excited about what this might mean for the restaurant and for Peterborough as a whole. “We’re looking forward to the big reveal in September when next year’s Guide is published, to see whether we’ve made the cut.”

Brian spends his life writing military stories about the bravest of the brave Brian Best is one of the UK’s leading military historians. He has established himself as the leading authority on the Victoria Cross, the highest bravery award given to members of the armed forces. Nick Rennie went to meet Brian at his Rutland home to find out more about his latest book
T
HE Victoria Cross is the highest military honour available and it’s rarely awarded because it requires astonishing acts of bravery. But one particular battle in India in 1857 witnessed such a catalogue of heroic deeds that 24 soldiers were given the medal on a single day. The Second Relief of Lucknow was one of the pivotal battles of the Indian mutiny, where the British fought desperately to maintain control of the jewel in its commonwealth empire. And the mutiny is the subject of the latest book written by historian Brian Best, the acknowledged world authority on the Victoria Cross. ‘The Victoria Crosses That Saved An Empire – the story of the VCs of the Indian mutiny’ gives great insight into the brutality of the conflict, which took place for a little over two years. It was one of the last wars that involved hand-to-hand fighting, troops duelling with curved swords and artillery battalions firing at each other at close quarters. There were 182 VCs awarded during the Mutiny, the same number as those honoured in the Second World War. The Indian conflict was also significant for the bravery of the combatants, as Brian explains: “The most VCs ever awarded in a single day were awarded at Lucknow, the oldest ever VC was honoured in the mutiny and one of the two youngest ever recipients also got his Cross while fighting in it. “It took me about 10 months to write this book and I have been amazed at some of the stories which have come out from my research.” Brian, who lives in Uppingham, has been an expert on the Victoria Cross for 14 years, since he founded the Victoria Cross Society and began publishing a monthly journal detailing the exploits of those who have received the medal. The VC was initiated by Queen Victoria in 1856 following acts of valour in the Crimean War and it is such a rare honour that only six recipients are still alive. They remain incredibly valuable pieces of silverware with an auction value of between £120,000 and £500,000. Brian said: “I like writing stories about the

whole life of these VC winners. “Some performed acts of amazing bravery and then went on to live fairly mundane lives. “They come from large families, in a lot of instances, where one of the parents has died and they have had to look after the family.” Surprisingly, Brian never served with the armed forces himself. He just missed out on
having to do National Service when it was abolished although he was an Army cadet at school. Brian began collecting medals and uniforms in the 1960s and he later became interested in the American Indian Wars, going on a summer course in the United States to visit battle sites such Little Big Horn. He wrote a manuscript about soldiers from the conflicts but it was never published. Brian also nurtured an interest in the Anglo-Zulu War before deciding to concentrate on researching the Victoria Cross. “I remember saying to my wife, Chrissie, that I wanted to do something else,” recalled Brian. “She said ‘why don’t you do something on the VC?’. I poo-pooed the idea because I thought there would be lots on it but I found that there was not a single person in the whole world writing anything about it at the time.” He was honoured to get the chance to recently meet one of the most recent VC winners, Johnson Beharry, who got his medal for extreme bravery while serving as an armoured vehicle driver in Iraq. Brian is in awe of many of those who have got the award, such as RAF Sgt Norman Jackson, who crawled across the wing of a Lancaster bomber to put out an engine fire at 20,000ft after his aircraft came under attack by the Luftwaffe during the Second World War. He suffered terrible burns but managed to save the lives of fellow crew members. His previous publications have been about war reporters in the First and Second World Wars, another centred on Nurse Janet Wells – a teenager who served heroically in 19th-century conflicts, and another book was about a diary of letters from a young officer in the Zulu War. Brian added: “It is rare for the VC to be awarded now because they have raised the bar – there has to now have been only a one in 10 chance of survival. It’s been a real pleasure to write about the incredible bravery of these people.” • ‘The Victoria Crosses That Saved An Empire – The story of the VCs of the Indian Mutiny’ is published by Frontline Books and is available with Brian’s other books online at www.pen-and-sword.co.uk or at local bookshops.
