HIS month we have an interview with Tim Walker, the eponymous owner of the High St store. He strikes a very optimistic note about the future of the printed word. Indeed recent industry reports suggest that there has been a resurgence in book sales and a falling back in e-reader usage. I believe that there is something wired in to all of us from childhood – being read to by our parents - that creates a strong emotional connection with the physical book. And as if on cue, Amazon has just opened its first physical bookstore (don’t panic Tim, it’s in Seattle!) It seems to be good news for magazines too – people love the printed version of our magazine, only a very small handful of people look at it online. This month our contributors have recommended some great Christmas Books for you – if you get the chance buy them from Walkers! Finish the year feeling fit Why leave it until January to begin a new regime? Genevieve Potter asks the fitness and nutrition experts for some ideas and inspiration to take on board right now

Stamford’s Yoga revolution Yoga is a science born thousands of years ago, but Marcus Parr-Black believes it’s every bit as relevant – and beneficial – today. I recently experienced one of Marcus’s classes, at his light and airy studio on Stamford’s Broad Street and I spoke with him on Yoga’s enduring popularity. What’s the difference between Yoga and Hatha Yoga? “Yoga is the generic term, which means to ‘make whole, harmonise and unite’. It’s a non-religious philosophy that originated in India. There are many types and paths of Yoga, including Hatha, which means the sun and the moon; in this context it means a male, hot, active type of energy and a female, cooling, gentle energy. “Hatha comprises postures known as ‘asanas’ (pronounced “ar-sah-nahs”) and other physical exercises that bring health to the body; breathing techniques knows as ‘pranayama’, and relaxation. Meditation is often part of today’s Hatha Yoga classes. Meditation is often looked upon with suspicion but all it really means is ‘to mediate with oneself’, i.e. be in a quiet state, free from mental noise, so that we can connect with our inner wisdom.” Can yoga actually make you fitter? “Yes it can. Yoga is a highly effective exercise system. It is the complete opposite of the ‘no pain – no gain’ approach. The body is treated with complete respect – you never force or strain. Postures are achieved through deep breathing. You literally relax and let go to go deeper into a pose. When with practice the body has become more flexible and strong, you move toward more advanced postures. Unlike many other exercise systems, Yoga postures work the whole body. As well as the limbs, the internal organs are exercised and toned, the spine made supple and the back stronger, circulation is improved and toxins released. Most importantly though, Yoga is mindful. You pay complete attention to what you are doing and how you’re positioning your body, so there’s far less chance of injury. Yoga classes range from the very gentle to the more demanding Power Yoga styles. “People who practice Yoga regularly develop slim, toned bodies. In Yoga you mostly elongate the muscles, which helps to eliminate fat from around the cells. By holding the postures you develop muscle strength without bulk, you strengthen the heart without strain and you strengthen the bones and joints without any pounding movements. The lungs and respiration are also strengthened.”

What would your advice be to someone who perhaps wants to try Yoga but is nervous that they won’t be able to achieve, or hold the positions? “Give it a go! You’ve got so much to gain and nothing to lose. We’ve created a nurturing, welcoming environment and myself and the other teachers genuinely love what we do. Many people swear by yoga as a form of stress relief, why is it so effective? “An over-active mind is one of the main causes of stress. PARTY SURVIVAL • Don’t arrive at a party hungry - eat a light meal a couple of hours beforehand. • When choosing buffet food or canapés, go for lean protein, crudités, salads, and small portions of carbohydrate – and avoid pastries, cheese, crisps, sausages and creamy dips. • Eat slowly and chew well. It takes 20 minutes for your stomach to register food. • Alcohol accomplishes two negatives: extra calories without nutrition; and a relaxing of inhibitions. You need all your willpower to resist the cheese dips and fried snacks. • When you do drink, keep the calorie count down by choosing drinks such as champagne, dry white or red wine, vodka and fresh fruit juice with a dash of soda. Limit alcohol to a maximum of 2 drinks per night and drink water either between alcoholic drinks or use it dilute wine as the French do. PLANNING AHEAD • Plan your festive meals. Georgian life in miniature Visitors to St George’s Square have been entranced by resident Judith Clarke’s exquisite Georgian dolls’ house, illuminated in her window during Christmas and the Georgian Festival. Alysia Anderson goes behind the scenes to talk to the house’s creator

A

nyone walking through St George’s Square last Christmas or during the recent Georgian Festival will have been drawn to Judith Clarke’s front window. Behind the glass panes stood a huge illuminated doll’s house with nearly a dozen rooms, each meticulously decorated and furnished in Georgian style. This miniature version of a Georgian house, similar to the genuine one it stands within, shows how these grand houses may have looked centuries ago. Judith explained: “I created the house over the last two years and thought it would be nice for visitors to the town and local residents to see a Georgian dolls’ house displayed in the window of one of the oldest Georgian properties in St George’s Square.” THE INSPIRATION Judith was inspired by Jane Austen’s novels and developed an ongoing interest in Georgian architecture and social history. Her own home, one of the largest in the square and a focal point of town tours, is beautifully furnished with many fine pieces of furniture in keeping with the house’s Georgian origins. Creating the dolls’ house allowed Judith to explore her interior decorating desires even further. “I suppose in some ways it’s a miniature version of the house I wish I had!” she laughs. It was her husband, Laurie, who encouraged her to display the house in the window as Judith was initially rather shy of showing it off. The intricate details inside are wonderful to behold, from tiny reels of sewing cotton to a model sailing ship adorning a mantelpiece. DELIGHTING PASSERS-BY The house has even inspired passersby to write to Judith expressing their pleasure. One lady wrote: “Thank you for putting the house in your window. I always look for something new every time I pass.” Another man put a note through the door to ask whether the lights could be turned on while his family was visiting Stamford. Judith especially enjoys children looking in and sometimes adds extra novelty for their benefit. “Young visitors may like to search for the cats that are hiding within the rooms, for example. I hope that my house gives children an insight into what life in a Georgian home would have been like.”

A METICULOUS EYE FOR DETAIL The house consists of eleven rooms set over five floors. It is lit by sixty light bulbs and has glass crystal chandeliers. The floors are made from real polished wood miniature floorboards, many covered with little needlepoint Aubusson carpets that Judith painstakingly makes herself. “They take hours!” she says. Much of the 1:12 scale furniture and décor has also been handmade, with fine silks and fabrics used for the beds, upholstery and curtains. Judith keeps an eye out at antique sales or online for period items such as a brooch or photo frame that she can transform into a portrait to hang on a wall or a dressing screen for a bedroom. She also creates a narrative for the scenes set inside: “Within the house 22 miniature people, each with their own character, bring the house to life. ‘Downstairs’ the housekeeper organises the kitchen staff and scullery maid and the butler can be seen preparing the dining room for dinner. Meanwhile, the family ‘upstairs’ enjoy entertaining guests in their sumptuous surroundings. In the drawing room, Mr Darcy can be seen declaring his love to Miss Elizabeth Bennet. The nursemaid is busy looking after three of her young charges in their nursery and, if one looks up into the attic rooms, an artist is somewhat preoccupied in his studio, painting a beautiful lady.” SEE IT AGAIN THIS CHRISTMAS Judith intends to show the house again this December and it is fast becoming a festive town tradition. Santa and his sleigh might also make an appearance on the roof, as they did last year, although Judith admits this is more of a modern touch as it has little historical relevance. She is also hoping to create a Georgian street scene to display alongside the house. “I found a scale model of a Georgian carriage, and then a horse to go with it, which gave me the idea to do a street scene with a market.” I, for one, can’t wait for another little glimpse into Stamford’s past. The Arts in Stamford in 25 Objects STADFAS celebrated its 25th birthday with a special lunch and by publishing a fascinating booklet that tells the story of 25 ‘Objects’ of particular artistic interest from Stamford’s still evolving history. David Lankester reviews it

E

RIC Knowles, well known for many things including ‘The Antiques Road Show,’ was the guest speaker when STADFAS (Stamford Decorative and Fine Arts Society) celebrated its 25th birthday on November 24th. Eric’s lecture was titled ‘The Confessions of a Fine Arts’ Auctioneer’ and was full of interest, insight and stories that delighted his audience. This was followed by an excellent lunch at the Greetham Valley Hotel, Golf and Conference Centre that was attended by 140 STADFAS members as well a number of guests from its parent body, NADFAS. The Chair, Joan Salsbury, welcomed all the guests and also warmly thanked the many volunteers who have helped to make STADFAS such a success over its 25 years. The commemorative booklet, ‘The Arts in Stamford in 25 Objects,’ is a very special memento for both STADFAS members and for the people and town of Stamford. It highlights the wide range and beauty of 25 ‘art objects’ from Stamford’s history, giving details and pictures for each of them and includes answers to many questions, including the following: • What was Stamford Ware? • Who founded St Leonard’s Priory? • What was Haberget and who used it? • Where are The Angels of the Great North Road? Where are the brass rubbings for William Browne and his wife, Margaret? • Who made many of our local church bells and now has a pub named after him? • What’s ‘Capability’ Brown’s link with Stamford? • Who was Stamford’s famous clockmaker? And was it the father or the son? • Which subject did Turner paint of Stamford? • Who was ‘the greatest labouring-class poet that England ever produced?’ • Who produced terracotta pots in Stamford that travelled throughout Europe? His name has been used recently for a major development in the town. • Where did Sarah Siddons go to in Stamford? And Macready, and Kemble, and Kean, and Ellen Tree? • Which Stamfordian made jewellery and silverware for Queen Victoria and was an important figure in the Arts and Crafts movement? • Which two Stamford schools did Sir Malcolm Sargent go to? • Who was Wilfrid Wood? • What does the 20 feet long (6.1m) Tapestry in the Library depict? • Who does the Eleanor Cross commemorate? • Where is the new Sundial in Red Lion Square? Oakham residents will have noticed the expansive refit undertaken at Walker’s Bookshop recently. The shop now boasts a stunning interior catering for the reading tastes of the county and their sister shop in Stamford is also much beloved locally. Walkers are a multi-award winning news agency, stationer and greetings card specialist. Amander Meade meets owner Tim Walker, current President of the Booksellers Association

A

ble to trace his family tree back to sixteenth century Belton, Tim Walker is a Rutlander through and through. Taking over the family retail book business founded twenty years earlier by his father Philip in 1992, Tim had the benefit of plenty of experience helping out in the shop from a very early age. By the time Philip retired the publishing market had changed beyond recognition and we had all just begun to understand the lifestyle revolution that the internet would bring. “When Walkers began, there was no opportunity to discount books as the printed cover price was sacrosanct,” Tim explains. “Furthermore, supermarkets, airports, petrol stations and gift shops did not sell books.” In a very different retail landscape, Tim has managed to hold his nerve and has huge confidence in the power of a tangible book. “I’m very relaxed about e-readers; there is a place in the market for both formats. We know from customer feedback that very few readers exclusively use one format or the other – they enjoy both. In fact so many of us work all day at a screen, the last thing we want to do to relax is look at another one. E-readers have encouraged reading which has stimulated an overall growth in book sales over the last twenty years which is something the doom merchants did not predict.” Regarding the fortunes of market towns, Tim is passionate about keeping their centres alive and diverse in the face of so many homogenised high streets. “We have great independent shops and lots of houses being built so I am optimistic,” he smiles. Both businesses dominate their respective localities and Tim is thrilled with Oakham’s expansion, “We now have room for a further two and a half thousand titles with plenty of space for browsing and better display as well as a hand selected range of over two and a half thousand different greetings cards.” A predictable passion of Tim’s is literacy

for children and in his role as President of trade group, The Booksellers Association he is a major advocate of World Book Day and the ‘Books Are My Bag’ campaign which encourages readers to support their local bookshops. Regretfully without too much spare time for reading himself, Tim enjoys the underrated pastime of reading out loud. “I recently shared ‘Vernon God Little’ by DBC Pierre with my son George while we were away on holiday. He’s fifteen now but there is something about reading out loud that makes a story special.” The future looks rosy for Walkers which must in part be down to Tim’s philosophy towards customer service, “We must keep listening to the people of Rutland and Stamford. I endeavour to make sure that our stock is as good as it can be and my personal email is on our website so I am in touch with the grass roots of the business which is where I plan to remain.” Independent bookshops like Walkers are not only surviving but thriving – we look forward to the next chapter. Great British bike off

There’s been a major renaissance in products assembled in Britain, and as part of that trend Steve Clarke, from Peterborough, is helping an iconic Cambridgeshire bike brand come storming back. Words and pictures: Jonathan Craymer

O

NE hundred and twenty years ago a Cambridge engineer named John Albert Townsend began producing fine, hand-made bikes for students at the university willing to pay for the best. John’s production line started in a converted dairy in Norfolk Street, turning out six machines a week. He called his company the Light Blue cycle company after Cambridge’s famous sporting colour. But sadly the arrival of the Great War just 20 years later took his workers away, forcing production to stop. Then soon after the war, bigger manufacturers began producing models offering similar features for less money, and that was it. Or was it? Wind on 90 years and John’s great grandson Lloyd Townsend decided to revive production at a factory in Ely, with a range of beautifully crafted urban and sporting bikes. The company’s next move was to take on Peterborough resident Steve Clarke, described in the firm’s literature as “an old school bike racer”, as brand manager to help Lloyd make his dream of reviving production of the Light Blue range a reality. We caught up with Steve, from Werrington, at a vast European show – Eurobike – at Friedrichshafen in Germany, playing host to more than 1,300 exhibitors and nearly 50,000 trade visitors.

This all sounds very exciting for British cycling. What has been the reaction of overseas buyers to the “new” Light Blue range? We were extremely busy on The Light Blue stand at Eurobike, with visitors and interest from all over the world, but especially Europe. What we do is a bit different and a lot of people are still fond of steel bikes. How did you come to join the company? I closed down the print and publishing business we’d been running for over 25 years, but still needed an income, so thought I’d see if I could get a job in the cycle industry. I applied for a few jobs and although this wasn’t the job I went for at Ison, they thought my background and experience in cycling could fit well with The Light Blue. How did you start racing? I started cycling seriously with the Fenland Clarion cycling club when I was just nine years old. My dad was making a comeback to racing and I tagged along, doing some club runs and getting into racing when I was eleven. The whole family are into bikes and cycling… it’s what we do! In fact I’m now the chairman and racing secretary – and have been for a good while – of the Fenland Clarion.

Is there still a market for “quality” in an age of so much mass production? Absolutely. Cycling as a leisure pursuit has grown massively in popularity in the last few years and more and more people are really into bikes. Serious cyclists each spend a lot of money on bikes and equipment every year. Materials like carbon and aluminium have become popular, so why does Light Blue continue to use British Reynolds steel tubing, made in Birmingham? Steel is in fact a brilliant material for making bicycles from and although it’s generally a little heavier than carbon fibre and aluminium, it still performs well, is versatile and long lasting. Of course we use Reynolds tubing, as it’s simply the best and they are also a British company. Who does the actual designs? So far the designs for our bikes have been done by Lloyd, using his experience in the cycle industry. However, now that I’m involved, I’ll have some input in future models, drawing on my knowledge as a lifelong rider in numerous areas of the sport and pastime. Do you enjoy riding - and although they’d not designed for racing - competing on the company’s products? Of course I enjoy riding and earlier in the year I rode a number of races on our top of the range Wolfson bike. It performed very well. Singlikenobody’slistening! We all do it! Wait for that moment when we’re home alone to take advantage of the bathroom acoustics and practice that new Adele track we’ve been hearing recently. I’m sure many porcelain suites bear witness to some spectacular musical performances, but although many of us take great pleasure from singing, very few decide to take it further. INGING in a choir is an age old hobby that has recently experienced a PR push with the launch of such television programmes as Gareth Malone’s Naked Choir and even Britain’s Got Talent. Studies have shown that singing as part of a group not only benefits us physically, but can also do wonders for our sense of wellbeing and social life. Woven Chords, the choir with the ethos ‘if you can speak you can sing’ talks to me about how they are working to promote singing for the masses and why everyone should join a choir! “When people hear the word choir they automatically get intimidated. They envisage a regimented group of 60 pluses, wearing waistcoats and reading music from a hymn sheet,” said member and publicity officer Margaret Marsh. “While that works for some people, and can be extremely enjoyable, here at Woven Chords we’re more about inclusion than tradition.” Woven Chords is a mixed choir with a difference. They sing unaccompanied harmony songs from across the world and celebrate the richness and variety of the human voice through their multicultural and cross-genre repertoire – including Folk, Pop, Zulu and Russian. “We are friendly and informal and make a point of not holding auditions. The voice is like a muscle and even people with weaker voices can master the art with a bit of practice and encouragement. You don’t need any previous experience or to be able to read music as everything is taught by ear. The emphasis really is on having fun singing together.” Part of the natural voice practitioner’s network, an organisation that promotes singing as a birth right, this 72-strong acappella choir focus on fun and friendship. Their Thursday evening rehearsals at the Stamford Art Centre have a

relaxed agenda of vocal exercises, singing and socialising. Chair of Woven Chords, Hilary Bloomer, said: “All you really need is passion! We find that people who come along once, come back time and time again. They take singing in to their hearts and at the end of rehearsals people go away still singing, you can hear them as they leave through the corridors and out in to the streets, it’s magical!” Hilary and Margaret are also very aware of the social, physical and psychological benefits associated with this hobby. Various studies suggest that joining a choir can have a positive impact on a range of conditions, with experts claiming that participation can improve symptoms of Parkinson’s, depression and lung disease. Swedish research has suggested that it not only increases oxygen levels in the blood but triggers the release of “happy” hormones such as oxytocin, which is thought to help lower stress levels and blood pressure. Hilary commented: “People who come along often feel transported; singing allows them to free themselves of their troubles. There’s also a great sense of companionship in the choir and when people have gone through hardships there is a fantastic support network at their fingertips. We rally round like a family.” Having recently assigned a new leader, Abi Moore, the choir is excited to see what 2016 will bring. Abi, an experienced musical director and professional musician, works with members both individually and as a group. She’ll be putting her teaching ability to good practise during their Festive Concert, taking place in the Ballroom at Stamford Arts Centre on Friday 18 Dec at 7.30pm. UPDATES The Three Counties Dog Rescue are pleased to announce the opening of their first shop I

t’s been less than a year since a fire at the kennels claimed the lives of three Staffordshire bull terriers named Teal, Dave and Daisy. Although this year has been challenging the team were determined to move forward in memory of those that lost their lives. For Gyll Mauchline, who runs the charity, the shop will also present a great opportunity to raise much needed funds which can help to secure the longer term future of the charity. Boot Camp for Anna’s Hope F or the third year in a row, Stamford Boot Camp’s team of runners successfully negotiated the Great Eastern Half Marathon in aid of Anna’s Hope, raising just over £4,137 for children and young adults with brain tumours. Team leader and proprietor of Stamford Boot Camp – Rob Dulieu – said, “Although we lost a few of our Campers to injury before the race, the remainder of the team completed the gruelling 13.1 mile course in very respectable times, not bad considering the majority of them had never run this far before, let alone raced the distance. Most importantly, however, they worked tirelessly to pull in another great figure for Anna’s Hope and the children they support, as did their non-running Boot Camp colleagues and our Facebook fans. BILINGUA SING

BilinguaSing is an award winning music, singing and movement class for parents, babies, toddler and pre-school children to learn Spanish together. Familiar nursery rhymes are learnt in both Spanish and English and are accompanied by a variety of fun movements in addition to lovely props to stimulate the senses! No prior knowledge of Spanish is needed. Sarah Powell runs the classes and says, “Being an Early Years teacher, I am lucky enough to have had the opportunity to live and work abroad in different parts of the world, including Northern Spain. Talent Youth Theatre is a non-franchise company that prides itself on getting to know and understand each student and nurturing their talent. It is a non-audition group and Founder Nathalie Franklin (‘Tal’) has a keen eye for spotting the tiniest of things which makes the students’ eyes light up, and then driving them to develop that excitement to create something great. “Whilst studying Drama at university, I loved the interaction with the lecturers and the wealth of knowledge they could share with us. I very quickly realised that I wanted to teach and what better subject to choose than my passion. I started my teaching journey at ‘Parsnips Youth Theatre’ in Market Harborough and was lucky enough to have Claire Parsons as my mentor. She showed me passion, humility and trust, all of which I’ve worked very hard to embody within Talent Youth Theatre” Tal gained her PGCE at Leicester Grammar School, whilst working in the Drama Department, teaching Year 6 up to A-Level, and absolutely loved watching and learning from the students. King’s Cliffe & Blatherwycke Wait for a crisp, blue sky day and set out on this wonderful walk, traversing a varied landscape from deep woodland to sheep grazing pastures and a path alongside a babbling brook. POINTS OF INTEREST King’s Cliffe The Domesday Book records that the village comprised more than a square mile of woodland in 1086 with only a small amount of cultivated land. Successive kings visited the area to hunt, notably King John and Henry II. Today it is a lively community with lots going on. Check out the village website at www.kingscliffe.org.uk

BLATHERWYCKE Blatherwycke Hall, built by the Stafford family in 1713 in Grecian style was sold for £1,600 in 1948 and demolished for building materials. The private garden has now been restored and the estate is well maintained with top-quality new fencing alongside the path. Blatherwycke’s Holy Trinity Church is just on the left of the route. It is under the care of the Churches Conservation Trust. The church dates from the 11th century, and alterations and additions were made to it during the following three centuries. The tower was rebuilt in the early 17th century.

Park by the pub in the centre of King’s Cliffe. Head west along the main village street, then cross the Blatherwycke Rd up a track called Wood Lane over the disused railway line. Almost immediately after the railway line, turn left over a stile and follow the path across open access land in a westerly direction; at the start of the second field keep to the right along the edge of the wood and follow this path until you cross a stile and enter the woods. The path through the woods is reasonably well marked, but keep your eyes peeled; it briefly follows the route of the disused railway line and then passes behind a derelict footbridge. Shortly you come out into a field; turn right, following the line of the woods and where the field edge bears sharply round to the right strike out across the field to a stile you can just see on the far side of the field. Follow the path through the wood; in a few minutes you will come out on a metalled track; follow this to the right and go through a gate; there is then a steepish descent down towards a small brook, keeping Fineshade Abbey (residential) on your right. On reaching the brook, turn left keeping this side of it, passing through a sheep pen and along a field; after a couple of hundred yards start to climb in a southerly direction. Once over the brow of the hill you will get a view of Blatherwycke Park Farm; follow the path through a further four fields until you reach it. Walk through Blatherwycke village along the road until it turns sharp right; at this point turn left in an easterly direction, passing by the church; the path at this stage is easy to follow. About three quarters of a mile after the church there is a little gap in the fence on your left; one path goes towards a footbridge over Willow Brook, you need to take the path that turns immediately right after going through the gap, heading towards Alders Farm. At the other side of the farmyard, walk on the right of the fence and fairly soon you will come alongside the brook; this is a most charming part of the walk. After a mile cross a footbridge over the brook and you will soon find yourselves approaching King’s Cliffe. Cross a stile into a field (beware of the bull sign) and then another, pass the allotments into Orchard Lane, follow this straight ahead towards the church, through the lovely back ways of the village; you come out onto Hall Yard, turn left and you will be back at the pub.

Christmas Geese – a Miscellany Jean Orpin and Sue Lee have collected a variety of goose facts and fun to provide some Christmas diversion!

GOOSE FAIRS AND MARKETS For hundreds of years Lincolnshire Geese were sold at Nottingham Goose Fair in early October. The Fair had been established by a Charter of Edward I in 1284. Geese were hatched in Spring, then after Harvest they would feed on the stubble corn before they went for sale. Some would be eaten at this time to celebrate Michaelmas when they were tenderer, but most would be bought by a middleman who drove them on to the markets. From at least the late 16th century both geese and turkeys walked the hundred miles to London, where Leadenhall Market was the main destination for Christmas poultry. The journey took many weeks. Turkeys wore special leather boots to protect their feet but geese wouldn’t allow their feet to be shod so they were dipped in tar and covered in sand instead. Final fattening would take place in the vicinity of the City and place names like Goose Green in South London live on. They were fed on dried grain which reputedly made them less tasty but maybe that also had something to do with all that walking. CHRISTMAS DINNER Geese have been associated with Christmas since medieval times when they were a centrepiece at feasts for the nobility. By the 19th Century more of the population aspired to serve goose at Christmas although by then turkeys, with so much more meat, were regarded as more luxurious. In Dickens ‘A Christmas Carol’ the large Cratchit family would be more than happy if they could have a goose but it was a turkey that Scrooge eventually provided them with. Goose is still favoured at Christmas in Germany, Poland and, surprisingly perhaps, by many Americans. For the smaller family it is a healthy choice too with the highest protein content of any poultry and a good source of vitamins. Serve it with apples, sage and onion stuffing, prunes in Armagnac and potatoes roasted in the plentiful fat. To buy a free range or organic Christmas goose locally, see the contact list in the box.

MOTHER GOOSE Old Mother Goose, when She wanted to wander, Would ride through the air On a very fine gander. There is no consensus about the origin of Mother Goose but she is frequently depicted riding on a gander as in the rhyme. She has given her name to collections of Nursery Rhymes since the 18th Century. She has also appeared in pantomimes from a similar date where she is an example of a human being who cannot be corrupted by the bad fairy. Today Mother Goose pantomimes usually include a goose who lays magical eggs, a variation on an Aesop’s Fable about the goose who laid the golden egg. GOOSE FAT Goose fat is low in saturated fats so it is healthy as well as being regarded as the best fat for roasting potatoes. Traditionally it was used to rub on the chest for the relief of bronchitis and sheepdogs had it smeared on their paws to protect them in snow. Goose grease was also used to polish horses’ hooves for shows. 6 GEESE-A-LAYING This is the least Christmassy aspect of geese! The ‘true-love’ would have found it a real wild goose chase finding one goose-a-laying at the end of December let alone six. Geese lay their eggs in Spring and if you would like to try them you can buy the eggs, like these laid by the Christmas Geese above, on Leigh Fowler’s stall on the Farmer’s Markets at Stamford & Oundle – but not for a few months yet. They are rich and delicious, can be cooked in the same way as any other eggs and are excellent in cakes. Peter Morrell – Local Author of ‘The Rector of Pepynbridge’ Not the Rector of Pepynbridge, nor even a Rector, Peter is however an ordained priest ministering in Watersmete, a group of 5 parishes around Nassington and Wansford. He has lived in this area for more than 40 years while pursuing a successful legal career. Sue Lee visited him to find out more LAWYER Peter’s bookshelves advertise the fact that he is an intellectual with broad interests. His education was at Westminster School and Oxford but his father, a London jeweller, did not take kindly to the lifestyle that Peter chose. He was intended for city life but Peter wanted to live in the country! He came to the Peterborough area to train as a solicitor, arranged by his father through family connections, but soon decided this was not for him either. In 1974 he followed his own path and read for the Bar. As a barrister he was able to live in the country although he was a member of a London set of Chambers. After a number of years in a mixed legal practice he was appointed a Recorder – a part-time judge usually in the Crown or County Courts – then in the early 1990s a Circuit Judge. In this capacity, and after 1996 as a Deputy High Court Judge, he sat at Peterborough, Leicester, Northampton and London. In 2009 Peter retired as a Judge but continued to be a member of mental health tribunals, work he found very worthwhile.

AUTHOR Peter’s writing career had its beginnings in the 1980s when he broke his leg. A peglegged barrister isn’t very employable so he had weeks at home and got bored. He wrote 2 thrillers and they were very nearly published but his agent became pregnant and retired, his leg healed, he went back to work …. c’est la vie! His next crack at it came in 1998 when he had bought a villa in Spain and had time to write – this is when ‘The Rector’ had its birth although it was not completed until several years later in Peter’s retirement.

Ideally ask your fishmonger to fillet and pin bone one whole fish. • 100g sea salt • 150g caster sugar • 8 black peppercorns lightly crushed • 60 ml vodka or aquavit • 150g bunch of fresh dill, finely chopped plus an extra 100g 1. Find a ceramic dish or roasting tin that the fish fillet will lie flat in. Line it with a double layer of cling film with lots of overhang. Check the salmon fillets for pin bones by running your finger along the middle section of each fillet. Remove any extra bones with a pair of tweezers and then lie one salmon fillet in your dish skin side down. 2. Make the cure. Mix the salt, sugar, and peppercorns in a bowl. Add the vodka or aquavit and 150g of chopped dill and mix well. Spread the mixture evenly over the fillet and then place the remaining fillet on top, flesh side down to form a sandwich. 3. Wrap tightly in the overlap cling film and place weights on the fish. Ideally find a chopping board that fits just inside your utensil, place it on top of the fish and the weights on top of the board. If you haven’t any weights then use full baked bean cans or similar. Chill for 3- 4 days turning every 24 hours, draining off any liquid produced and replacing the board and weights. 4. After 3-4 days, unwrap the salmon fillets and rinse off the cure. Pat dry with kitchen paper, then spread the fillets with the extra 100g of finely chopped dill. 5. The Gravadlax is now ready to use. Slice thinly at a slight angle down through the fillet from the dill covered top to the skin. Only slice as much as you are likely to use and then sandwich the fillets back together and wrap in fresh cling film. Keep in the fridge for 4-5 days. Serve on Rye bread with delicious homemade dill mustard dressing. Dill mustard dressing Whisk a large free range egg yolk with a dessertspoonful of Dijon mustard and 1tsp runny honey. Whisk in 2 tblsp white wine vinegar until the mixture is smooth. Gradually whisk in 170ml groundnut oil until you have a thick sauce, then stir in a handful of chopped dill.

EDIBLE CHRISTMAS TREE DECORATIONS WITH STAINED GLASS WINDOWS This is a great recipe to make with the kids: • 300g plain flour plus extra for rolling • Pinch of salt • 1 tsp baking powder • 1 tsp ground cinnamon • 1/4 tsp ground cloves • 100g softened butter • 100g soft dark brown sugar • 2 large eggs, beaten • 4 tblsps runny honey • 1 pkt mixed flavour boiled sweets • 1 pkt ready made royal icing approx. 300g when made up 1. Preheat the oven to 170oC, 350oF, Gas Mark 3. 2. Put the flour, salt, baking powder, cinnamon, cloves and butter in a food processor and switch it on until the mixture resembles breadcrumbs. 3. Add the sugar and mix. 4. Mix the eggs and honey together and add these slowly to the dry ingredients until the mixture comes together. You may not need all this liquid. 5. Take the mixture out of the food processor and divide it into 2 flat discs and chill in the fridge for 15 minutes. 6. Dust your work surface with flour and roll out your discs to about 5mm thick. Cut out your Christmas decorations using a variety of cutters. 7. To create the stained glass window effect, cut small holes out of the biscuits with a small round, oval or holly shaped cutter. Fill the holes with smashed up boiled sweets. Either combining the colours or keeping them as individual colours – it’s fun experimenting to see what effects you end up with. Also make a small hole at the top of each biscuit with a skewer or small sharp knife to thread your ribbon through later. 8. Arrange the biscuits slightly apart on parchment lined baking sheets. Cook for around 20 minutes. Cooking time will very according to your oven. 9. Once they are cooked and out of the oven, leave on the tray to set for 7 to 8 minutes before transferring to a wire rack and leaving to cool. 10. Thread your ribbons onto the biscuits. 11. Make up the Royal Icing and place it straight into your piping bag. Ice the decorations and use edible glitter or Christmas sprinkles to finish. 12. Leave for 24 hours so the icing sets, before hanging on your Christmas tree. STAMFORD LIVING DECEMBER 2015

It’s the only time I allow Coca Cola in the house. Soak your ham in water and then bring it to the boil and drain. Next, pour over as many bottles of Coke as you need to cover, add cinnamon sticks, cloves, bay leaves and an onion cut into quarters. When the ham is cooked, take it out of the liquor and put it in a roasting tin, cover in thinly sliced oranges and drizzle with treacle or just baste with a jar of marmalade and stud with cloves. Stick it under a hot grill to caramelise. Make your own Hangover Cure by steeping fresh ginger in boiling water with a spoonful of raw honey. Good to help settle the tummy and rehydrate.

As a delicious alternative to Smoked Salmon, Gravadlax is actually quite simple to make. It is wonderful as a precursor to the main Christmas Lunch but alternatively can be used on canapés, or just as a light supper with lots of lovely dill sauce and a big plate of salad leaves and rye bread. Goose is eaten in many a household around the country. Generally smaller than a turkey, they are much fattier, and need to be cooked sitting on a rack so that a good percentage of the goose fat drips through. Toss your potatoes in the Goose fat and the result is the most delicious roasties you have ever eaten. Gin - Another of my top 10! I love Leftovers! Use chipotle paste to make a smokey turkey fricassee with a bit of a kick. Add chunks of sweet potato, parsnip and freshly chopped flat leaf parsley to bulk it out. Make Christmas pudding ice-cream with the addition of a little more brandy to taste!

Winter Spices such as cloves, cinnamon, ginger and star anise feature in so many Christmas recipes so make sure you have the basics in your store cupboard just in case. Home produced pickled Wild Mushrooms offer a great accompaniment to pates and terrines.

Xmas? No, I’m sorry, but I cannot bring myself to call it that so Xmas cake, Xmas biscuits etc all come under the letter C for Christmas, as far as I’m concerned! There is however a delightful Classic Italian Dish, which begins with the letter X and that is Xavier Soup. This involves cooking a chicken in a stock and vegetable base with parmesan dumplings and lots of chopped parsley or fresh chervil to garnish. Hearty winter fayre.

Y

Is a Yule Log too last year? I don’t think so. Chocolate Swiss Roll covered in chocolate icing and made to look like a log, the children love it and I must admit to being slightly partial to a slice myself. Nothing wrong with a bit of retro food.

Mulled Wine - I don’t even need the excuse of Christmas, just the sign of a cold snap and it’s difficult to resist. COOK, sell bottles of gourmet mulling syrup, which can be added to red wine to create a delicious mulled wine. Mince Pies are compulsory Christmas fayre and gluten free, dairy free and vegetarian are all available. Ask at the bakeries.

Nuts are everywhere at Christmas. Not the best time of year, I suspect, for those with a nut allergy however for those who can partake, they are great just as a snack, straight from the shell or spiced up with chilli and winter spices.

Oranges are so versatile – studded with cloves and tied with ribbon they make wonderful decorations. Sliced and dried they can be glued onto Christmas wrapping labels. Candied they are a delicious citrus treat. And, if you find yourself with lots of Orange Peel, leave it somewhere cool to dry for a few days and put it on your open fire. The oils in the skin help to boost the fire and an aroma of orange fills the house.

A mouthwatering Christmas

Two fantastic festive recipes from The Olive Branch’s head chef Sean Hope…

C

hristmas isn’t the quietest time if you’re a chef! In fact, by the time January 1 arrives, the idea of putting your feet up somewhere sunny several thousand miles away is a fairly appealing thought, as no doubt it is for most of us. My usual Christmas day goes something like this: after an early rise I head over to The Olive Branch for an 8.30am start; I cook my team a good old fashioned full English fryup and share a glass of Buck’s Fizz or two; lunch service starts at noon and runs till 3pm; finally, when all guests have left we’ll tidy up ready for a busy Boxing Day. So it’s definitely a hectic time, but it’s also a fun, warm and exciting time, and certainly one that’s filled with wonderful food and drink. Here are a couple of recipes – one classically, boozily Christmassy and the other much fresher tasting and lighter, which means it makes a great starter. Pan-Seared Red Mullet & Beetroot Escabeche SERVES 4 • Beetroot escabeche • 150ml olive oil • 100ml sherry vinegar • 1 onion, thinly sliced • Zest of half an orange, finely shredded • 1 beetroot, finely shredded • 1 carrot, finely sliced • 1 sprig thyme • 1 bay leaf • 5 pink peppercorns • 1 sprig rosemary • 2 garlic cloves, finely chopped • 1 tbsp chopped coriander HORSERADISH CREAM • 150ml double cream • 1 tablespoon horseradish relish • Juice of half a lemon • Pinch of salt and pepper SEARED MULLET • 2 red mullet, gutted, filleted and pin-boned

BEETROOT ESCABECHE 1. Sweat off all the ingredients except the coriander in the olive oil until soft (about five minutes). 2. Allow to cool before adding the chopped coriander, then chill for a couple of hours before serving. HORSERADISH CREAM 1. Whip the cream with lemon juice and seasoning till peaked. 2. Gently fold in horseradish and chill. PAN-SEARED MULLET 1. In a hot pan, add a little rapeseed oil. Score the fillets on the skin side with a sharp knife, then lay skin-side down and pan-fry for two minutes. 2. Season the fish with a little salt and pepper, flip the fillets over to finish the cooking and remove from the heat. 3. Add a squeeze of lemon and serve.

Guinness, Rum & Barley Wine Christmas Cake

SERVES 10 • 110g suet • 50g self-raising flour • 110g breadcrumbs • 1 tsp mixed spice • 1 pinch nutmeg • 1 pinch cinnamon • 225g dark brown sugar • 110g sultanas • 25g mixed peel • 25g chopped almonds • 1 large dessert apple • Zest of half an orange • Zest of half a lemon • 2 eggs, beaten • 125ml Guinness • 125 ml rum • Quarter of a can of barley wine 1. Start the day before you want to steam the pudding. Mix all the dry ingredients, including the suet, in a large mixing bowl. 2. Mix in liquid ingredients. The mixture should have a fairly sloppy consistency. Cover. Leave overnight. 3. Pack mixture into a lightly greased pudding basin, cover with two sheets of baking parchment and a sheet of foil. Tie with string. Prepare a steamer and steam for four hours. You can eat now or cool and store for up to three months in a cool, dark place, re-steaming for two hours before serving. 4. Serve with custard or brandy butter.

W rld food Want somewhere new and different to eat out? Peterborough has a wealth of ethnic restaurants offering everything from Afghan to Lebanese and Turkish cooking. Our friends at sister publication Nene Living tried some out

Lithuanian Kaimas Lithuanian Restaurant “What’s a typical Lithuanian dish?” I asked at Kaimas, Peterborough’s Lithuanian restaurant when I popped in for a very late lunch. “A Zeppelin: it’s the national dish – would you like to try it?” The large, airship-shaped riced potato encasing herby minced pork and topped with sour cream and bacon pieces wasn’t visually exciting but my, was it tasty! And very filling. I thought I’d try it as a starter but there was no way I could have considered a main course. I did want something sweet, though. A thin, crispy crepe filled with grated apple, scented with cinnamon and served with ice cream and slim orange slices was perfect. A rich Lithuanian chocolate accompanied my expresso coffee and the bill, which included a fruit juice and only just topped £10. Kaimas means ‘village’ in Lithuanian and the décor of the restaurant is country style, with stripped pine tables and chairs. It all feels bright and cheerful. The staff are young, friendly and helpful. Servings here are very large and both food and drinks are good value. Lebanese Emperor Hassan Abou Alaywi and staff

Lebanese The Lebanese Emperor This authentic Lebanese restaurant, owned by former hotel chef Hassan Abou Alaywi, was bustling when we arrived on a Tuesday evening. The food is not unfamiliar to us as a good friend of ours used to run a Lebanese restaurant near Marble Arch in London, and we’ve tasted a lot of the dishes he creates at home. Would the Lebanese Emperor come up to the same standard? The extensive starter menu offered a Mezze option allowing us to order taster-size portions of up to four dishes. The plates arrived quickly, bearing two types of hummus, moussaka, Mediterranean vegetables, falafel, motabel (a dip with aubergine), grilled halloumi cheese and batata harra (spicy potatoes), accompanied by flatbreads. It only took a mouthful or two of these dishes before we agreed the chef knew exactly what he was doing and this was definitely somewhere we would visit again. For our mains, I ordered Sojouk, a type of Middle Eastern sausage, which Hassan explained is made on the premises from his own recipe, including both beef and lamb for succulence. It came with basmati rice. My other half had spiced grilled chicken and rice. Both were delicious. Hussan waited on us personally, explaining that he covers for one of the waiters on Tuesdays. His welcome was warm and made us feel instantly at home. He offered the dessert menu and coffee but we were too full! We’ll leave what looked like a lovely lemon cheesecake and baklava for next time. Afghan Kabul Restaurant We visited Kabul Restaurant in Lincoln Road, Peterborough early on a Saturday evening. We liked being able to take our own alcoholic drinks and we were quickly made welcome. Although the menu included an Indian curry section we were keen to try typical Afghan food. The waiter was friendly and helpful and gave us some recommendations, and we probably should have listened to him more! I tried a starter called Mirza Qusemi which was an aubergine, garlic, walnut and yoghurt grilled dish. It had lots of flavour and texture and went well with the beautiful freshly made naan bread. We also tried the grilled Halloumi starter and this was good as well. For mains, we ordered the chicken Quabili pilau and a Kaburqua (lamb) kebab. Both dishes arrived quickly and were piping hot. However, the portions were overwhelmingly large and I found my choice a bit bland. It needed the dahl to give it a lift. Tim’s lamb was very tender, and a huge portion, served with plenty of rice. At £27 for two people, it was a value meal. I had been recommended this restaurant and feel that we probably chose the wrong dishes, as plenty of people on Trip Advisor have been complimentary. The chefs were busy in the semi-open kitchen, chopping stacks of fresh salad, and preparing aubergines and peppers for the open wood fired grill on a Saturday lunchtime. We ordered Turkish beer and some cacik, strained yoghurt with garlic, mint and cucumber, which came with a basket of warm flatbread. Perry opted for an Adana Kofte, grilled minced meat blended with parsley and herbs, while I ordered the hot meze as a main course. Perry’s Kofte arrived with some savoury rice and a mixed salad, with crisp peppers, slivers of feta, rocket, lettuce, cucumber and olives. My hot mezze was a generous plateful including grilled Turkish beef sausage, King prawns pan fried with sweet chilli peppers and butter, calamari and midve tava, lightly battered mussels. But the Kofte was the star, it was spicy, herby, and fresh. We finished our meal with Baklava for two accompanied by a proper Turkish coffee for Perry and a cappuccino for me. One dessert would probably have been enough, but we soon polished off the little honey soaked pastries. Our bill came to £44 including drinks. Service was excellent, five stars to our waitress. Efes is a large restaurant, seating 120, but it has a cosy feel with traditional style décor, you felt you could be in any decade from the 1980s onwards. It gets lively at the weekend with belly dancing on Saturday nights. There is an appetising menu, along with the grills (chicken, lamb and steak), there are plenty of other dishes to try and vegetarians are well catered for. Indian The Bombay Brasserie There’s something wonderfully decadent about having lunch in a curry house. And in the case of a visit to the Bombay Brasserie it also represents a chance to sample outstanding Indian food for a snip at just £9.95 for two courses. Poppadoms and dips were brought out to start, followed by a choice of meat or veg samosas. The samosas were crisp on the outside and stuffed full of swede, carrots and peas for the veggie version and lamb for the meat one. We chose Chicken Korma and Lamb Jalfrezi for our mains with the option of rice or naan to accompany, and a sag aloo or a special side dish of mushroom bhaji. We chose the lot to experience the full range of flavours. The Korma was sweet and comforting, and although the green chillis in the Jalfrezi knocked my socks off the lamb was soft and beautifully spiced. Among the sides, the sag aloo deserved a special mention for the tender, turmeric infused potato. Complimentary tea or coffee and an After Eight rounded off a top knotch lunch at a great price. The Stamford Deli just keeps getting better Nicholas Rudd-Jones spent a happy lunchtime tasting the new hot food menu at The Wine Bar and talking to Kelly Combes, owner of the Stamford Deli, about her ambitions for the future

I

T has been a busy time for Stamford Deli owner Kelly Combes, and as the festive season fast approaches, there is a lot more going on behind the scenes, as Kelly explained to me: “Our outside catering really took off during a very busy summer. With high demand we are pleased to announce that George Bennett, one of Jamie Oliver’s first Chefs in his 15 Restaurant and of Green Dog Deli Chutney fame, has joined the team as our permanent chef, working from our purpose-built kitchens in town.” Kelly Combes

A hot food menu at The Wine Bar Stamford “With George now on board full time we can extend our catering offer and have also just launched a hot food menu at the Stamford Wine Bar. Seasonal terrines and soups as well as English style stews will be available at lunchtime throughout the week.” In the always agreeable surroundings of the Wine Bar we tried out the Pork & Pistachio terrine with crusty Askers bread – full of flavour and texture, simply delicious; and Oxtail & Red wine stew & crusty bread. I also really enjoyed the chorizo sausage roll, again full of flavour and interest.

Hamper Bar Kelly has lots more plans: “As well as all the amazing food, we’re getting ready for Christmas with our hamper barn now open for customers to create their own gift baskets full of Stamford Deli goods. These were really popular last year so my advice would be to get orders in early to avoid disappointment.”

Small batch philosophy The Stamford Deli will continue to support small batch suppliers and encourage their customers to meet these entrepreneurs who are so passionate about their produce. The Deli will launch a calendar of tasting events in the New Year, but look out for some before Christmas notably Pudding & Pie, B is for Brownie and Chazwinkles alongside daily tasters from the kitchen.

As if all that wasn’t enough for Kelly and partner Mark, the Stamford Deli had a makeover in November. Kelly concludes: “The success of the deli is truly down to our wonderfully loyal client base and the eclectic range of small batch produce we source from near and far. The refurbishments should make shopping in the Stamford Deli an even more enjoyable experience and will give us more space to provide cold cut cured meats, along with anti-pasti (olives, ricotta stuffed peppers, sundried tomatoes, artichokes etc) “Ottolenghi” style seasonal salads and fresh soups” And of course this is in addition to their existing sandwich menu made fresh on the premises whilst you wait, along with B is for Brownies, Askers bread, Shrub & Grub, Mad Turk cold meze and much more.

Take off!

Rutland-based foodie giftware outfit Paper Plane is destined to fly high, says Matt Wright

L

OOKING through the work of Paper Plane, it’s easy to see where many of their influences come from. The Rutland-based giftware company, run by designer Laura Harvey with partner Jack Thorpe, clearly has a strong love of local food and drink, something reflected in many of their cards, mugs and prints. Food and drink feature prominently in many of their designs, including one of their newest products – an A2 poster that’s a mix of cookbook and kitchen décor, optimistically titled ‘How To Cook Everything’. Founder Laura says: “We wanted to create a decorative item that was also practical. Jack’s a keen cook, but is always checking his phone, or a recipe book, when he wants to double-check quantities in recipes – like how many eggs in a pancake batter – so we came up with the How To Cook Everything poster. The idea is that it sits on your wall, looking nice, adding a bit of colour, but when you need to jog your memory it’s there for you – at a glance.” The poster has been creating a buzz on social media and covers everything from meat roasting times and egg boiling times, to stock recipes and measurement conversions. Other aspects of the couple’s life are represented in Laura’s designs – their raised-bed veg plot inspired a set of four watercolour-effect prints. And a thirst for gin, beer and prosecco comes through in a set of popular Christmas cards, prints and a new range of mugs. Jack says: “There are clearly lots of gin and prosecco fans out there – our best-selling mugs are the ones that mention those drinks. We try to add a bit of humour to most of our products – we want them to be the kind of gifts you’d love to give or receive, or even just share with your friends on social media. “We sell on notonthehighstreet.com and when they shared our There’s Too Much Tea In My Gin mug on their Facebook page it was one for their most popular posts all year.” Laura adds: “The prosecco version of that mug has been a big hit, too. There’s definitely been a big movement towards prosecco in the last couple of years – I’ve been known to enjoy a glass or two myself in The Tobie Norris and the Stamford Wine Bar. We love the garden at the wine bar – it’s our favourite place to spend a summer’s evening.” Paper Plane has been in business for just over a year, and was borne out of the pair’s desire to create cards and gifts blending humour and design. Laura says: “We both had full-time jobs (Laura is a magazine designer and Jack sub-editor) but wanted a way to express our creativity in another medium. We both love a good greetings card – so that seemed the natural

next step. That’s when Paper Plane was born. We started with Christmas cards in 2014 and it grew from there. We now have 120 products for sale online and stockists around the country.” Jack adds: “That said, we’re still looking for a new Stamford stockist since our last one closed down, so we’d love to hear from anyone who thinks we’d fit in with their brand.” Paper Plane’s work has been sold around the world – a butcher’s shop in Australia has PP’s Dinosaur Butcher’s Cut prints on display – and a selection of prints form part of the set in US celebrity chef Kelsey Nixon’s new Cooking Channel series. Laura says: “It still makes us smile every time someone places an order with us. It’s a great feeling to know our work is on display in homes around the world – and has been used to mark momentous occasions in people’s lives. That’s what we love most about out job.”

HE start of the new college year at New College Stamford saw not only the arrival of a new cohort of students, but for the second year running a new principal. Janet Meenaghan took the helm. As I walked along the now familiar corridors to the executive offices with her assistant, she commented that she was “very nice”. And, as Janet rose from her desk, hand outstretched, to join me at the meeting table she greeted me warmly, an impression further augmented by her accent (she is originally from Darlington in County Durham). From then to the end of the meeting she keeps up a steady flow of talk, some in response to my questions, the rest in enthusiastically expounding how impressed she has been by the students and the staff. Recent years have seen a succession of principals of varying outlooks and interests/ priorities heading the college. A standout, high profile period in its history under Miles Dibsdall was followed by a steady consolidation as Andrew Patience guided through a programme of building and expansion of the site. During her time, April Carol undertook the task of restructuring the workforce and re-aligning roles in response to the challenges of changes in government funding. So, with a new structure in place and “a good college with keen and dedicated staff” what are your ambitions and plans for this £15 million pound organisation? “Rachel Nicholls, the Vice Principal (also new), and I both want it to be an ‘outstanding’ college and positive experience for the students. We want to build on the high standards and strengths. The college has a great reputation and so much potential. My job is to harness that potential and take the college onto even greater things – securing the college as an outstanding provider of education in Lincolnshire. We will be focussing on achievement and making sure that our students have a first class experience here. They are hard working and committed, so our aim is to help them be the best that they can be. The college’s road to outstanding has begun. We expect to be re-inspected next year and to improve on the Grade 3 it was awarded when it was inspected last year, based on student achievement and a commitment to excellence and integrity. I have spent four and a half years in an outstanding college and Rachel in a Grade 2 college at Rotherham, so we bring that experience with us”. Janet was formerly Deputy Principal of Selby College, which has a reputation as an

‘Outstanding’ provider and which provides guidance and assistance to other colleges on achieving excellent results in Maths and English. Prior to working at Selby College, Janet worked at further education colleges in Manchester, Peterborough and Grantham, was a lecturer at the University of Humberside and worked at the Learning and Skills Council. “On a daily level we have to tackle the challenges of a changed inspection framework and funding. In an environment where school funding has risen by 3%, Further Education (FE) colleges have seen it drop by 11% in real terms. The only constant in education is change. Nevertheless we plan to build on the A-Level offer at the college (currently around a third of the colleges provision), and intend to develop both the Apprenticeship and Higher Education programmes. Apprenticeship numbers have doubled since last year and are available to 1618 year olds and adults.

I’m passionate about further education and providing people with an opportunity to gain new qualifications and skills. We offer a wide ranging mix of academic and vocational courses and have amongst the best results in the country for helping students who didn’t achieve Grade C GCSE in Maths or English at 16 to do so. Our students at New College Stamford are our assets, whether they are 16 and have just left school, are adults who are looking to change their careers or are in employment and wish to up skill to gain promotion. We are committed to ensuring they get the best education possible and will do everything we can to help them achieve their goals. I’m going out into every department of the college between now and Christmas. I want to get a really good sense of the college and achieve something with the college and for the college. I intend to be a very hands on and visible person”.
