A new tradition is born The Rat Race, which took place at Burghley this year for the first time, seemed to capture the imagination of sporting masochists from near and far, and looks set to become an annual event. Over 5,000 participants clambered over a multitude of objects and into muddy water, with expressions that altered abruptly from exhilaration to exhaustion as the next challenge became apparent. I suppose this is how great annual events begin: someone thinking up a strange custom which after a few years becomes ‘the tradition’. The Rat Race is in many ways a worthy successor to the Annual Bull running race held each year in Stamford from time immemorial until it was stopped in the nineteenth century due to the cruelty to the animals, involving a mad dash through town and tipping the animal over a bridge. We of course are free to be cruel to ourselves and, on the upside, the day eventually concludes with beer and a band as reward. Welcome hopefully then to a new annual tradition. Congratulations to the participants and local volunteers, and thanks to the organisers (subject to sorting out the drinks stations and one or two other things). The business was set up by Gary Thornhill and his son Matthew. Local charity announces sponsored bike ride at Rutland Water open to all An organisation that supports vulnerable and abused children in the local area is organising a charity bike ride around Rutland Water to raise much needed funds. The NSPCC Business Support Group, which raises money to help fund the work of the charity in and around Greater Peterborough including Stamford and Rutland, will host a 17-mile sponsored family fun ride around Rutland Water on Sunday June 23. The event, which starts from Whitwell Leisure Park on Bulbrigg Lane, offers everyone the chance to enjoy a leisurely ride around the popular attraction, with refreshments available around the circuit. Entry fees are £10 per adult and £5 for children or £25 for a family. All funds raised will be spent locally. Genevieve Potter talks to Stamfordbased nutritionist Imogen Shaw to understand how making the right food choices can dramatically increase energy levels
I
mogen explained that whenever we eat any type of carbohydrate (sugary or starchy foods), our body has to break these down in to single molecules of glucose, which is our main source of energy. The glucose gets circulated in our blood stream to every cell in our body. The simpler the carbohydrate, the quicker it gets broken down in to glucose and the more quickly it causes an increase in blood sugar levels. This causes the body to “panic” and release hormones which leads to peaks and slumps in our energy levels. Ultimately this cycle can contribute to type-2 diabetes and obesity. Below is an example of a day’s diet which may seem fairly normal, but is full of simple carbohydrates and would make your blood sugar chart look like the left hand illustration. Breakfast: • Large bowl of cereal (most are high in sugar) with milk. Tea/coffee (with sugar) Mid-morning: • 2 x biscuits and tea/coffee (with sugar) Lunchtime: • Sandwich made with sliced white bread, cheddar cheese, butter and salad cream. Bag of crisps, tea/coffee (with sugar) Afternoon: • Fizzy drink or energy drink and 2 x biscuits Dinner: • White pasta with bolognese sauce, grated cheese and a portion of white garlic bread stick Evening: • Large chocolate bar and 1 x glass of wine To break the cycle, you need to follow some basic principles introducing higher levels of protein and complex carbohydrates. This will noticeably increase energy levels by balancing your blood sugar throughout the day. • Try having some protein (eggs are ideal) with breakfast • Eat at regular intervals throughout the day; aim for three meals and two snacks • Vegetables and (in lesser quantities) fruit are so vital for good health; most are also high in fibre which is a very complex form of carbohydrate • Swap refined, white carbohydrates like bread and pasta which have been stripped of fibre,

vitamins and minerals, for whole-grains such as quinoa • Add beans to your meals for a healthy dose of protein and fibre • Reduce your intake of caffeine, it plays havoc with energy levels (made even worse if you add sugar) • Eliminate fizzy drinks (even diet versions) and drink around eight glasses of water or herbal tea per day An ideal daily menu plan: Breakfast: • 2 x poached eggs on 2 x slices of wholegrain toast with 80g of oyster mushrooms fried in a small amount of extra virgin olive oil • 1 x 80g portion of watermelon • Herbal or fruit tea/hot water with a slice of lemon • Glass of water Mid-morning: • 3 x glasses of water (between breakfast and lunchtime) • Naturally low fat, no added sugar yoghurt (150ml small pot) Lunchtime: • Salmon salad (grilled or oven baked fillet of salmon about the size of a cheque book, 3 x 80g portions of vegetables e.g. lettuce/rocket/ watercress, tomato, spring onion, beetroot, radish and 45g, uncooked weight of quinoa, drizzled with extra virgin olive oil). • A couple of fresh apricots • Glass of water
Afternoon: • 3 x glasses of water (between lunch and dinner) • Vegetables sticks (2 x 80g portions e.g. carrot, celery, cucumber, pepper) with homemade hummus dip • 150ml glass of 100% pure fruit juice topped up with fizzy water Dinner: • Wholemeal (brown) pasta – 60g uncooked weight • Chilli con carne (lean beef mince, kidney beans, chilli spices, chopped tomatoes, onion plus a selection of vegetables e.g. grated carrot, diced peppers, diced courgette, diced aubergine, spinach) with natural yoghurt on top • Glass of water • Fresh fruit salad (e.g. strawberries, raspberries, blueberries, blackcurrants, red-currants) – soon after main meal, not late on in the evening Evening: • 1 x herbal or fruit tea/hot water with lemon Imogen has a First Class BSc (Hons) degree in Public health nutrition and can offer clients a 1:1 session (around £35 for 45 minutes) from her office in central Stamford. POINTS OF INTEREST
Until recently I always thought that a good walk meant a country walk. But not any more. As part of a new series, Nicholas RuddJones explores the concept of ‘rus in urbe’ – the country-like bits of cities – and what better place to start than Cambridge, with a river passing through its heart, a common, a Victorian graveyard, a park, a botanical garden, a water conduit running through allotments and even a small wood!
Mill Rd Cemetery www.millroadcemetery.org.uk This is a real find, and seldom visited by tourists. It is listed by English Heritage in Parks and Gardens of Special Historic Interest as a Grade II site. It was consecrated in 1848. Several of Cambridge’s most renowned Victorian residents are buried in the cemetery, including shopkeeper Robert Sayle and wood and stone carver James Rattee. If you want to find out more the website is very informative. Parker’s Piece It was on Parker’s Piece that basic football association rules were formed in the 19th century. A plaque has been mounted to commemorate this, with the inscription: Here on Parker’s Piece, in the 1800s, students established a common set of simple football rules emphasising skill above force, which forbade catching the ball and ‘hacking’. These ‘Cambridge Rules’ became the defining influence on the 1863 Football Association rules.

Hobson’s Conduit Thomas Hobson was a well known Tudor Cambridge businessman who, in 1610, helped finance the building of a conduit to convey fresh water to the centre of Cambridge from the springs in Nine Wells, near Trumpington. The Tudor fountain was moved from the market square to its present position on Lensfield Road in 1856. Thomas Hobson is also famous for the expression “Hobson’s Choice” which means no choice at all. He kept a stable of horses which he would hire out in strict rotation, the customer having to accept whichever horse he was offered, or none at all!

Park at the Grantchester Tear Rooms (providing you are going to be a patron there). Walk through the tea room gardens and turn immediately right through a gate into a grass field, then slightly left down to the River Cam. Then follow the river left to Cambridge On reaching the suburbs of Cambridge, follow the road ‘Grantchester Meadows’ to the end, then turn right and enter Paradise Nature reserve. Come out at a car park, turn right across a bridge across a small tributary, and take the path half left that reaches the banks of the Cam again. Proceed left along the river, under Fen Causeway and passing the Garden House Hotel on the other bank. Cross the weir, up Granta St and then left into Silver St over the river On reaching a green area, turn right along The Backs, passing King’s Chapel and then Clare College. Turn right up Garrett Hostel Lane and then swing left up Trinity Lane to Trinity St Proceed left up St John St, then left along Bridge St until you reach the river again. Turn right and follow the river for some way along the bank, alongside Jesus Green and then Midsummer Common, all the way until you approach the Elizabeth Way flyover Shortly before the flyover, take a path going diagonally left up Walnut Tree Rd, which runs alongside the main road. Take the subway under the roundabout, exit at the other side; turn right into East Rd and just after the Law Courts turn left into St Mathews St. Follow this to the end, and then just to your right on the opposite side you will see a track and the entrance to the Mill Rd Cemetery. Walk through it and come out at the far right hand end, then walk down a track with trees on either side to Mill Rd. Turn right on Mill Rd and head up to Parker’s Piece. Follow this west on the south side, and then cross the traffic lights and walk down Lensfield Rd past the Polar Research Institute.

I love their website Grantchester Tea Rooms boast: “The place where more famous people have taken tea than anywhere else in the world”, including of course Rupert Brooke. Alexandra Arms, Gwydir St – charming and out of the way This would make a great stop for a drinks break; this is the street just to the east of the cemetery; also do light lunches Botanical Gardens Café Has a modern feel about it, and great outdoor space. Food is good, interesting and freshly prepared. Recommended for tea.

At the end of Lensfield Rd, turn left down Brookside, with Hobson’s Conduit on your immediate right. You will arrive at the entrance of the Botanical Gardens From the Botanical Gardens entrance (which thoroughly merit a visit and have an excellent café), continue along the road with the conduit on your immediate left. Cross Brookland Avenue and follow the conduit footpath with allotments on your right. Make a brief detour through Clare Woods on your right and then re-join the Conduit path. Follow it all the way until you have nearly reached Long Rd Just before Long Rd, take the track left that takes you down to the Guided Busway, which also has a cycle track, Follow this along until you are level with the massive Addenbrooke’s Hospital on your left, then take a footpath right that goes through council estates. Go down Paget Rd, take a cut through to Beverley Rd and then reach Trumpington High St Take a right and an immediate left at the war memorial down Church Lane, and then follow the Grantchester Rd back. Just before the Cam there is a very worthwhile excursion to Byron’s Pool nature reserve. Re-joining the road, you cross a bridge over the Cam and then another across the millstream. Follow the footpath immediately to your right, which re-joins the road just a few yards short of your start-point.

Our Time has finally come: Stamford’s new sundial Richard Barry confesses that it turned out to be more complicated than any of us had expected to install a new sundial on All Saints’ Church

The Stamford Civic Society was founded on 12th October 1962. In the spring of 2011 the Civic Society Committee got together to plan events for the coming year to mark the 50th anniversary. Among these events would be the refurbishment of the dilapidated town sundial, perched on the south parapet of All Saints’ Church, overlooking Red Lion Square. The Civic Society appointed a sub-group, known as the Gang of Four, to manage the sundial project. We adopted the Cosy Club as our headquarters. We asked three firms of builders to assess the state of the sundial: all three reported that it was beyond repair and needed replacement, with a rough cost estimate of £20,000. There was no point in trying to raise that money if English Heritage or the DAC (the Diocesan Advisory Council in Lincoln that effectively governs All Saints’) was not going to approve the concept. Neither authority was keen on a new sundial. The DAC’s Inspector of Monuments was not impressed by the builders’ assessments. Quoting Mandy Rice Davies he said “Well, they would say that, wouldn’t they” before adding “They’re builders. You should’ve asked conservators”. It was at this point that we began to grasp a fundamental truth: although no one person had power-of-approval, almost everyone had a blackball. It was going to require a great deal of work to “get all the ponies into the paddock” as the Australians would put it. English Heritage and the DAC provided the names of three conservators they wanted us to consult. After visiting the site, all three favoured removal and conservation of the old sundial and installation of a new one. This view was eventually accepted by English Heritage and the DAC.
Stamford has a well known person who is a virtuoso raiser of public funds for civic activities. We asked her to help. She agreed to lead the fundraising effort providing she would have no on-going role after funding – her PhD research was demanding more and more of her time. Starting in May 2012 she reworked our entire application, submitting it to HLF on 13th August. Five weeks later we got the good news that the Stamford Civic Society had been awarded £42,000 by HLF, with a pat on the back for the high quality of its application. Generous though it was, the HLF award did not include any money for a new sundial. Fortunately the Skells Trust and private donors agreed to provide the £8,000 needed for that purpose -- as reported in the May edition of Stamford Living.
The first funding attempt In early 2012 we made an application to the Heritage Lottery Fund (HLF); we identified three priorities – first, to erect a beautiful new sundial, second to conserve and preserve the original sundial, and third to involve young Stamfordians in heritage learning. We got a prompt and friendly response from HLF, but pretty damning in its verdict. We’d got it seriously wrong. The HLF was very keen on heritage learning for Stamfordians young and old, it was fairly keen on conserving the old sundial, but HLF was definitely unenthusiastic about spending its money on making a modern replica sundial. Clearly, we’d got our priorities in totally the wrong order.
End Game With the funding in place, by end September 2012 we were almost ready to start cutting stone, except we lacked final design approval from English Heritage and the DAC. Both bodies had agreed that the sundial should be a new one, and that it would be appropriate for the new one to record the Queen’s Jubilee. There was less agreement as to its colour. One group favoured no colour – just natural stone with black lines. The other group favoured blue with gold leaf, as used on a sundial near Salisbury Cathedral Close. An expert in ecclesiastical archaeology from Westminster Abbey and a professor of medieval studies at Leeds, both favoured the blue-and-gold alternative. On 23rd October this was accepted by all parties. The conditions attached to the HLF award showed that we needed to strengthen our management team. The Gang of Four became the Gang of Five when the chairman of the Civic Society agreed to join, providing extra management strength. In addition, two professional members of the Civic Society graciously agreed to provide much needed expertise, pro bono, as Chartered Surveyor and Treasurer respectively. To satisfy the Skells Trust and the HLF we had obtained competitive quotes from three teams – each team comprising a stone mason, a conservation expert and a sundial technical consultant. Our Chartered Surveyor made the final decision. By 26th February 2013 the old sundial had been removed, conserved and preserved inside the church. By 16th April the new sundial had been mounted on All Saints’ south-facing parapet -- almost exactly two years after the start of the project. STAMFORD Living JUNE 2013

Stamford Religious Activists Stamford has had a number of people who refused to be bound by the accepted beliefs, customs and practices of the Anglican Church. Sue Lee and Jean Orpin describe just a few
Robert Browne c1550-1633
Charles Philpot 1802 -1869
Browne was a famous non-conformist giving his name to a sect, the Brownists who were mentioned by Shakespeare. In Twelfth Night Sir Andrew Aguecheek says, “I would as lief be a Brownist as a politician”. Browne was born at Tolethorpe Hall and was a kinsman of Lord Burghley, who managed to extricate him from a couple of his brushes with the law. He studied at Cambridge and became a schoolteacher but was increasingly critical of the established church and of bishops in particular. He objected to any form of church government, thinking congregations should choose their own ministers. He formed a ‘separatist’ congregation in Norwich, spent periods in prison for his beliefs and time in exile in the Netherlands. His preaching and writings became the basis of congregationalism and his followers were among the early settlers in America. In his 40s he returned to England, conformed and worked as a schoolteacher, possibly at Stamford for a time. He was ordained and became Rector of Little Casterton then Thorp Achurch. However, after 20 years of conformity he was in trouble again. He had disputes with his wife, with the Church, with his parishioners and with his godson! These resulted in excommunication and imprisonment.
Joseph Charles Philpot achieved a first class degree at Oxford and was elected a fellow of Worcester College. He appeared to have a brilliant scholastic career before him until, along with Francis Newman, he broke away from the Church of England. His letter of resignation giving his reasons and denouncing the Church of England was published and many copies were sold. He became a Strict and Particular Baptist and was Editor of the Gospel Standard magazine for twenty years, where many of his sermons appeared. He had connections with Stamford as his grandfather Rev. Peter Lefargue had owned a bowling green and other property here. Philpot moved here in 1837 and bought 10 Rutland Terrace which was rented out at the time. He lived in 14 and then 15 until his own house became vacant (Incidentally these houses were built on the former Bowling Green). He preached with a fellow Baptist William Tiptaft in the Ballroom. George de Merveilleux, a doctor, who was a member of the Independent Chapel in Star Lane was so impressed with their preaching that he built a chapel at his own expense in North Street. Philpot was an inspired preacher who attracted large congregations both here and in Oakham for 26 years.
Thomas Emlyn 1663-1741 Shortly after Thomas’s birth his father, a Stamford shopkeeper, was removed from Stamford Council for nonconformity and Thomas was educated by a series of Independent ministers in the neighbouring counties. In his twenties he obtained a preaching licence and served as chaplain to well-to-do Presbyterians in Belfast and Suffolk. During this time and for most of his life he was on good terms with local clergy, attending communion in the established church when he was permitted. In 1690 he was invited to become Minister of a Presbyterian congregation in Dublin; however his views became more extreme and he came to the conclusion that God and Jesus are not ‘one and the same person’. He was accused of heresy by his fellow non-conformists, tried, punished and imprisoned with a large fine. He is regarded as one of the earliest preachers of Unitarianism. After his release, he established a small congregation in London and associated with other radical thinkers. The small estate inherited from his father in Stamford was passed on to his son. It was Sollom Emlyn, a lawyer and noted writer on legal matters, who published his father’s sermons and other writings.
Charles Ormiston Eaton 1827-1907 Charles Ormiston Eaton, born at Ketton Hall and later living at Tolethorpe Hall, was a banker, farmer and landowner. Along with other local people including the Earl of Gainsborough he converted to Catholicism. In the 1830s at Oriel College in Oxford, a number of Fellows led by John Henry Newman were critical and outspoken about the shortcomings of the Church of England and wished for a return to lost Christian traditions. Following this there were a number of converts to Catholicism. Stamford’s Catholics had previously held their services in a cellar in St Mary’s Street and later built a small chapel at the rear of 19 All Saints’ Street. In 1861 Eaton bought the Dolphin Pub in Broad Street, which was demolished, and the Catholic Church, designed by Goldie a London architect, was erected. In 1865 the church had a special service to celebrate the opening and Eaton took the main guests to The George Hotel. He also donated an organ in 1866. The dedication to St Augustine shows the English Catholic patronage.

Claudia Bayley recently attended a furniture painting workshop in Bourne run by Lesley Anne Jones I took with me a pine table, which I have had for ages and has been ‘crying out’ to be painted. Other people also brought items to work on, all of which, funnily enough were made of pine. The day started at 9.30am, we introduced ourselves and pretty quickly got to work. We had a lot to do. Lesley explained the necessary preparation that had to be done first in order for the paint to adhere properly, look good and to last. We began by sanding, filling any holes with wood filler, treating the knots in the pine (these can bleed through your lovely paint work over time) and then washing. All our pieces were now clean and ready for primer and then paint. We discussed different surfaces that we might want to paint, such as already painted, high gloss or laminate and what preparation would be necessary to make sure the paint adheres to all of these. Lesley also showed us products available on the market to help with this. A well-deserved pot of coffee & tea with homemade shortbread was enjoyed while we all decided on paint colours and what, if any, special effects we wanted to do. As we all decided we were not going to be too adventurous and chose to paint using just the one colour, Lesley gave each of us sample boards on which we were to practise techniques. After her demonstration we tried our hand at blending colours to create definition, using wax and pure colour pigment to give an aged look, a cracked paint effect and dry brushing using two colours. These were labelled with what we had done and matched the notes we were given at the end of the day. A gorgeous homemade hot lunch was served in the kitchen accompanied by crusty bread, salad and a glass of wine. I really enjoyed the afternoon, getting on with my table and practising all of the different ideas we had been shown. The atmosphere was light hearted and we enjoyed plenty of laughs throughout the day. Afternoon tea and homemade cake was served to keep us going. This was a great workshop. Not only did I learn a lot but also I have a new table that I can be proud to show off! I strongly recommend this workshop to anyone looking to ‘upcycle’ their own furniture and who may be interested in learning how to create ‘a slightly different’ look. Courses planned for June are:Tuesday 11th , Friday 14th, Wednesday 19th, Thursday 27th A day’s course costs £70 and includes everything you will need including lots of gorgeous food and drink. There will be more courses arranged throughout the year. Alternatively, if you can’t make a workshop and have a piece you would like to be painted. Lesley is happy to do it for you. hether serving in one of Stamford’s numerous charity shops or helping to weed the Welland, there are plenty of ways to volunteer locally. Volunteering can be extremely rewarding: a chance to learn new skills, meet people and contribute in a positive way to your community. If you are out of work, it can provide valuable experience that future employers will appreciate. Or, if you simply have time to spare, volunteering will fill the hours in a constructive and enjoyable way. Lincolnshire County Council holds details of many projects requiring volunteers as well as funding opportunities for local groups. A helping hand
It seems shocking that there are families going short of food in Stamford but the high demand for the services of Stamford Foodbank sadly suggests otherwise. Stamford Junior School is just one of the local schools that has donated items to the bank. The Foodbank’s Chairman, Eileen Bangay, recently visited the school and nursery to talk to the children and explain the project’s valuable work. Project Manager Nicola Dunkin added: “We are still looking for volunteers: people to greet clients, others to pack food, some to sort out donated food as it comes to us, someone who can take minutes at our monthly meetings and most of all someone to look after the day-to-day running of Foodbank. If anyone’s interested in any way please can they email info@stamford.foodbank. org.uk or phone 07570 583799.” Help of a different kind is found at Alternatives Pregnancy Advice Centre, located beside Stamford Hospital, which offers a confidential and caring service manned mainly by volunteer counsellors. The centre offers free pregnancy and chlamydia testing, runs parenting courses and school tutorials, loans baby clothes and equipment and is, above all, a safe and confidential place to talk. Centre Director Kate Kemp said: “The centre is run by charitable donations and the commitment of volunteers. We currently have around 16 volunteers but would love to have more. In particular, we need people to help with general

The Stamford Street Pastors admin tasks, present education to schools, work on fundraising bids and help sort through clothes and equipment.” Clients include expectant parents, young people embarking on relationships and those who have experienced loss, abortion or miscarriage. Sharing the same building as Alternatives yet caring for those at a later stage of life is Evergreen Care Trust (01780 765900; www. evergreencare.org.uk). The Trust provides support for elderly and vulnerable citizens, including free services such as befriending, advocacy and a furniture store. Other services offered at a modest charge include soup and sandwich delivery, house cleaning and hospitalto-home support. Sue Cliff, the Volunteer Co-ordinator in Stamford, said, “We not only help older people but also others who may be in need, perhaps a young person facing a crisis or post-operative recovery. There are many ways for volunteers to get involved, from administrative support to fundraising and ambassador roles.”
Church services
If you’re out in Stamford on a Saturday night you may spy a kindly stranger dressed in
blue, sweeping up broken glass or providing bottled water to a tipsy teenager. The Street Pastors initiative, now worldwide, was set up a decade ago in Brixton by a local reverend in an attempt to make streets safer at night. The Stamford branch came into being in 2011, bringing together volunteers from nine local churches. Former co-ordinator Anita Gordon, who has just handed over the reins to Mike Freeman, explained: “Although our volunteers are Christians we do not go out to preach, we go to care, listen and help anyone that we meet on the streets. As a Christian charity we are interested in anyone applying who has been a member of their local congregation for more than 12 months, can supply two references (one from their current church leader), is willing to undertake 15 training modules over a year and have a CRB/DBS check. As you can see, anyone applying must be keen to become a Street Pastor but the rewards are enormous. Only recently a young man, who we had helped at 3am one Sunday morning, caught up with us just a few weeks later and said thank you. He hadn’t remembered but had found our card in his wallet the next day. He was so grateful for our help and many others are too.” Mike added: “Above all, the Street Pastors ministry offers compassion to those in need. If anyone wants to become a volunteer or support us

Centre Manager Simon Jary told me: “CAP Stamford launched in October 2011 and has been bringing hope and practical support to people struggling with debt issues in the Stamford, Bourne, Deeping and Oakham areas since then. CAP’s service is open to anyone irrespective of race, gender or belief and the charity aims to offer a debt relief solution that will last and give real hope for the future. Clients can refer themselves by phoning our free line 0800 328 0006.” Nicola Hutchison, a ‘befriender’ in Stamford, described how rewarding her work is. “In the last year, I have had the privilege of visiting three families all with varying financial problems and needs. It really struck me the variety of ages and personal circumstances and the fact that debt can strike anyone at any time. I have been on a number of food shopping trips with clients, which is a humbling experience but a very practical way of helping out. I have had lots of coffee, cake and chats and just been there at times to give a helping hand and reassurance that they will get through this difficult time. I
have attended court with a couple of clients and at first this felt daunting but with prayer and support you can actually get through and come out with a smile.” To get involved, contact Simon on 07952 845542 or email simonjary@ capuk.org. Further practical help comes from Christ Church Stamford (01780 482380; www. christchurchstamford.com) which runs a Community Transport scheme for those who find it difficult to use public transport. Around 35 volunteer drivers lend their time and vehicles to provide a vital service to hundreds of disabled, elderly and vulnerable locals. For a small annual fee, they offer door-to-door transport not simply for hospital, doctor or dentist visits but also for less essential but necessary trips to the hairdresser or supermarket. Scheme Manager Sandy Jackson said “We are always looking for people to join our friendly team and full training is given at our office in Stamford for all our volunteer roles.”
Going green
Whether waging war on the invasive Himalayan Balsam plant or clearing waterlogged litter, the Stamford RiverCare Group (www. stamfordrivercare.org) cares for the Stamford
stretch of the River Welland. The group was set up in 2004 to raise the profile of the river’s natural and cultural heritage, maintain it in a sustainable fashion and promote scientific study. The group is made up of local volunteers and new recruits are always welcome. Stamford RiverCare is part of the nationwide RiverCare organisation, a partnership between Anglian Water, which funds the project, Keep Britain Tidy and the Environment Agency. To take part, email info@stamfordrivercare.org Another opportunity to don your wellies comes with Stamford Community Garden. The scheme was set up with funding from SKDC two years ago and has lead to thriving vegetable plots on former wasteland off Uffington Road and a second site at Stamford Hospital. The aim of the project was to assist local residents without gardens to grow their own produce. Groups and individuals, including those with learning disabilities and mental health issues, are supported by experienced volunteer gardeners. The scheme also has links with New College Stamford which provides free evening classes on managing a small allotment. Stamford Arts Centre Gallery, June 5-22 The Attic Artists is a group of resident artists working at Stamford Arts Centre. From 5-22 June they will be exhibiting some of their most vibrant work in the Centre’s light-filled Gallery. Catherine Headley has worked in her studio at the Arts Centre for over 20 years, producing evocative paintings full of light and colour. Catherine says: “My abstract paintings are re-invented landscapes. The experience of a Cornish summer: sparkling seas; nature’s rock garden of granite, lichen and herbs; cairns and gorse; heather and fern; are embedded in my psyche. That’s where my paintings come from.” Another long-timer, painting at the Centre since 1989, is Jane Hindmarch. Jane says: “I find observations of the natural world inspire my work. Through processes of drawing, painting and construction the critical balance of line, tone, colour, composition and space are carefully reduced and manipulated to explore and enhance their effect.” Nisha Keshav is a photographer who has captured compelling shots of people and places from all over the globe. Her current work draws themes from the local countryside. “My images of Holme Fen are part of an ongoing project on the Fens: photographing the vastness, solitude and isolation found in the landscape. I take inspiration working with few elements; the ditches, the farms, birds, the trees, clouds and the light, allowing the Fen landscape to express itself.” Claire Daniel took a studio at the Arts Centre a year ago. Her unique works take an unusual slant on people and places. Claire explains: “I am interested in the human figure, the interplay we have with our fellow man and how we are shaped by place. I build a back story to the figures in my scenes and try to express their relationships to each other and give hints to their identity whilst retaining a cohesive end piece.”

The Do’s and Don’ts of Buying and Selling Shares If you buy shares for more than £1,000 you will normally pay stamp duty at a rate of 0.5%. The duty is either deducted at the time of purchase or sent to HMRC together with the required paperwork. When you sell shares, you may have to pay Capital Gains Tax. Each individual has an annual tax exemption (£10,600 for 2012-13) and the rate of tax for gains above this amount is 18% for basic rate and 28% for higher rate taxpayers. To work out whether you have made any taxable gains, you must consider a number
of factors including the costs incurred when purchasing and disposing of the shares. If you give away or choose to sell your shares for less than their worth, the taxable gain is calculated as though you received the market value for the shares. There are special rules for calculating the cost of shares because shares are not uniquely identifiable. If you acquire shares in the same company at differing dates and values, then you must follow these rules to work out the cost. Other reliefs are available to reduce the taxable gain, particularly if the disposal relates to
shares held as business assets. If there are losses on other disposals, these can be offset against your gains and if you sell or give the shares to your spouse or civil partner then you will not have to pay any capital gains tax on the disposal. If you already complete a tax return then the Capital Gains may need to be reported on your return. Jubilation as Stamford clinches title

Stamford Rugby Club gave the town much to celebrate when they completed a quite remarkable season by clinching the Midlands Three East South title by beating Daventry 38-12 in front of nearly 250 spectators. They added to that great day by reaching the overall 100-point total in their final game at Deeping the following week. They lost only one league match throughout a tough winter which threw everything possible at them - and that lone defeat in a demanding competition spoke volumes for the team’s commitment. Overall, including cups, Stamford lost just three of 26 matches. Amid after-match scenes of sheer jubilation, a captain, Matt Albinson enthused: “It was a great day - a proud day to be part of it all. To be at home to clinch the title was also very special. It was great to have huge support and also to see some old faces as well.” Matt put the achievement down to a mixture of fantastic coaching from Richard Mardling and Dave Laventure and hard work and determination throughout the squad. He continued: “Ultimately we have been very fortunate to have two fantastic coaches. They created a game plan that played to our advantage. We went through a vigorous pre-season training regime and our fitness has taken us over the line. We play for 80 minutes and don’t stop. We have such strength in depth and the lads are very committed week in week out with a never say die attitude.” Matt urged his side to remember that this was not the end of their development, just the beginning. He emphasised: “As a club we need to keep progressing. Next year we first of all want to be competitive in Midlands Two but also look to reach our ultimate goal of Midlands One.”
A new era began at Burghley Park Golf Club with the arrival of Mark Jackson as head professional, following the departure of Andy Lavers. Mark is one of the most well-known and respected professionals in the area, having started his golfing career as a caddy at Luffenham Heath in the 1970s, before being appointed assistant professional there in 1980. After eight years he joined the team building the new golf course at Toft, and on its opening became head professional. Rutland born and bred (he grew up in South Luffenham and North Luffenham), Mark is determined to work with all sections of the club to help everyone enjoy their golf more. He has lots of plans for new and exciting initiatives, including dedicated junior and ladies’ sessions, clinics with A and B team players, equipment demonstration days, and taster days for those thinking of taking up the game.
Life-Saving Kit for Daniels
Thanks to an FA initiative which will cover many football clubs throughout the country, Stamford AFC will take possession of a potentially life-saving defibrillator before the start of next season - and The Daniels Independent Supporters Club (DISC) has stepped in to provide the necessary funding. The move follows the near on-pitch death of Bolton Wanderers’ Fabrice Muamba at Tottenham Hotspur last year. Only desperate measures saved his life and it became apparent that immediately accessible heart equipment should be made available. The FA and the British Heart Foundation worked together to negotiate a discounted price which is normally around £800. As a result, the cost to individual clubs has come down to £318.

The view from The Falcon at Fotheringhay suddenly got even better Nicholas Rudd-Jones went to inspect their spectacular new conservatory supplied by QKS Home Improvement and to enjoy a spot of lunch
T
he Falcon was named Best Northamptonshire Dining Pub of the Year 2013 in the Good Pub Guide – its food is delicious and, most importantly, consistent, which bringing back diners again and again. However, Sally Facer, the proprietor, had felt for some time that a new conservatory was needed. “I used to wake up, look at the weather forecast and pray that the roof wouldn’t leak!” she recalled. “I was also confident, after six years of trading, that we could take our offering to a new level by building something really special, but still very much in keeping with the village.” “I had heard good report about QKS Home Improvement and gave them a call. Ashley Woodman, their Sales Director, was very helpful and advised me that the turnaround time would be about 14 weeks. I insisted on seven, as I absolutely needed to be open again as soon as possible!” What did the client think? So is Sally pleased with the results? “Absolutely thrilled – the space works incredibly well, and so many customers have commented positively

about it. And my staff just love it – they all helped as well, re-decorating the rest of the pub at the same time. The new conservatory looks stunning and works in every way. It is constructed as an Orangery, with doors opening straight out onto the garden and affording beautiful views of the church. The tables are well spaced and the room has a light and airy feel; and with Climate Guard Glass and blinds the temperature is well moderated. The ambience certainly added to our lunch experience, and it was a lovely day with birdsong drifting in from the gardens, butterflies meandering across the lawn and the sunshine dappling the church. The food is well cooked and delicious. And for those of you who like to explore,
there’s lots of local history and walking opportunities in the vicinity (we made it up the Castle Mound for a spectacular view of the Nene River)

Seated at our table we perused the tea menu, and I chose TDs home blended Assam tea and Rebecca chose the Earl Grey. Our Teas were brought to the table in large silver teapots accompanying mismatched Antique china - the teapots poured perfectly without a drip in sight and a three-tiered china platter was put on our table straining with delicacies. We both tucked into a mini warm toasted muffin with cream cheese and salmon gravalax, a mini-loaf with honey roasted local ham and Dijon mustard, and seeded rolls with Lincolnshire Poacher cheese, organic tomatoes, cucumber and rocket, all freshly made. The desserts were just as irresistible, the lightest scones with clotted cream and Thierry Daugeron’s own jam from his “Thierry At Home” range, a delightful glazed chocolate mousse

This is the training facility for the college’s catering students, and it is open to the public Wed-Fri lunchtime (£11.50 for 3 courses) and selected Thursday evenings for fine dining (£20) during term time. What you will experience is some really great food, matching anything else that you will find in the area, supported by attentive service and a very friendly atmosphere. You get a really great deal price-wise and the students get a chance to show
you what they can do food and service-wise. Oh, and you also get the thrill of knowing you are supporting the next generation of star chefs and waiters. A recent semi-finalist on MasterChef no less, Aaron Ashmore, 21, trained here, before graduating to the George and then a top London restaurant. Delicious comfort food! If you feel like giving yourself a culinary hug, try this from Sean Hope, head chef and co-owner of The Olive Branch…
S
ometimes you need to eat something that’s comforting, delicious and soft, and this dish really hits the spot. The smoked fish combines especially well with the runny yolk from the poached egg and the fluffy potato in the bubble and squeak. I absolutely love it. I enjoy cooking with fish and seafood and I’m looking forward to our annual Fruit de Mer celebration at The Olive Branch, which is taking place throughout July and August. We’ll be serving shellfish caught on the Brixham dayboat in Devon, which will be delivered fresh to the kitchen every morning. Our Fruit de Mer platters will include moules marinières, crevettes with lemon ioli and devilled whitebait.
Smoked haddock fillet, bubble and squeak, softpoached egg, spinach All recipes serve four • 4 x 130g trimmed smoked haddock fillet • 2 knobs butter • 1 sprig thyme • 1 small clove garlic, crushed • 2 tbsp fresh, chopped parsley • 2 tbsp creme fraiche 1. Place the smoked haddock into a shallow pan with the butter, thyme, garlic and butter 2. Add four tablespoons of tap water and place into a pre-heated oven at Gas Mark 5 (190C) 3. Cook for four minutes, remove from the oven and allow to rest for a further three minutes 4. Place the cooked haddock on to a plate, add the fresh, chopped parsley and creme fraiche to the resting juices and return to the heat and boil 5. Season to taste with salt and pepper, then serve
Bubble and squeak • 4 tbsp mashed potato • 1 tbsp chopped parsley • 1 carrot – peeled, diced and cooked • A quarter of one savoy cabbage – shredded, blanched, refreshed • 1 tsp English mustard 1. Mix all ingredients together and season with salt and pepper 2. Shape into four equal cakes, dust with flour 3. Add a drizzle of rapeseed oil to a hot frying pan, carefully add the bubble and squeak cakes and colour to a golden brown (around two minutes) 4. Turn over the cakes and repeat the cooking process 5. Remove from the pan and serve For the poached eggs 1. Heat one litre of water in a small saucepan to a simmer (94C)
2. Add two tablespoons of white wine vinegar to the water 3. Crack the eggs into individual pots to check their freshness 4. Whisk the simmering water to create a whirlpool, then carefully add the eggs, one at a time 5. Poach the eggs in the water for four-and-ahalf minutes 6. Remove using a straining spoon and serve For the spinach • 4 large handfuls of washed baby spinach • 2 large shallots – peeled and finely chopped • Knob of butter • Fresh nutmeg 1. In a large pan, add the butter and sweat off the shallots without colour. 2. Add the spinach and sauté until just wilted 3. Season with salt and pepper to taste and add a pinch of fresh grated nutmeg 4. Serve
Lenton lamb now on the menu I’ve discovered a fabulous lamb and hogget producer from Lenton – a village between Stamford and Grantham. Sophie Arlott raises her flock on grassland and has a passion for native breeds – she farms Romneys, Hebrideans and Southdowns. “The Lincolnshire land is some of the best in the country, rich in nutrients that ensure strong growth,” says Sophie, who has crossed the Southdown and the Hebridean to produce lamb with an amazingly delicate and refined texture and taste. One dish I’m cooking at The Olive Branch with Sophie’s produce is roast lamb chump, chorizo potato gratin, braised fennel, confit cherry tomatoes and rosemary gravy (pictured).

Pie in the Old Kitchen, Burghley House The most fascinating food and drink is always on your doorstep, as Matt Wright discovers in one of Britain’s most amazing kitchens… Photos: Andrew Brackenbury

ather than look at a local producer, pub, restaurant or farm shop, this month I thought it would be good to focus on one of the most historic and downright breathtaking spaces connected to food in the whole of the UK. I’m referring to the Old Kitchen in Burghley House, and if you haven’t seen it for yourself, you’re missing out. This is an immense space with a skyrocketing, rib-vaulted ceiling that wouldn’t look out of place in All Saints’ Church. Ancient turtle skulls – momentos of turtle soups past – are displayed on one wall, a giant 350-year-old painting of an ox carcass by Flemish artist Frans Snyders – a friend of Rubens – adorns another, and 260 pieces of polished Georgian copper utensils glint everywhere you look. Many of these pans have initials engraved on them – L.B. for Lord Burghley, for example. Above you, in the centre of the ceiling, is a giant aperture that was once open to the elements, designed to carry the smoke and cooking fumes out into the Stamford sky. You can only imagine the heat, sweat and fumes that this kitchen has seen as cooks and servants toiled here over the centuries. The story goes that the huge chimney in the ceiling was covered up until 1985 and only rediscovered when someone sitting on an upstairs toilet nearly fell through the floor! To recapture a little bit of Elizabethan England, I contacted Burghley to see if they would create the sort of pie that would have been made here during the 16th century. Burghley’s caterer, Absolute Taste, which runs the Orangery restaurant and also caters for the McLaren F1 team, was happy to oblige. Chef Mark Inoti came up with a duck, prune and chestnut pie, pictured here. I can confirm that Absolute Taste’s pie was genuinely delicious, so much so that it is being added to the Orangery menu. British Pie Awards 2013 I couldn’t write about pies without mentioning the British Pie Awards 2013, held on April 24 in St Mary’s Church, Melton Mowbray. There were 983 pies entered and over 100 judges (including me) needed to assess them. The Supreme Champion Trophy went to The Pie Kitchen of Bury St Edmunds for its Chicken, Chantanay Carrot and Bacon Pie. Peter Light St. Martin’s Antiques Centre celebrates its 20th Anniversary. Words & pictures: Paul Eastwood The antique centre An antique’s provenance relates to the history of its ownership; the more impressive its provenance the more value is added. But provenance doesn’t only apply to antiques. It applies to antique centres too. In Stamford, this year is St. Martins Antiques’ 20th anniversary and its proprietor has been at the helm since day one. “Some of my customers have been with me all the way too,” says Peter Light, “And I have dealers who’ve also been with me from the beginning. You can’t build up that level of expertise overnight.” Situated just off the A1, less than 100 metres from the famous George Hotel and half a mile from Burghley House, St. Martin’s Antiques Centre was founded in 1993, the year George Eliot’s novel, Middlemarch, was filmed in the town’s streets. With over seventy dealers, it has a variety of stock unmatched in the surrounding area. This ‘career’ has so far resulted in the centre appearing in three separate series of The Antiques Road Trip. Philip Serrell, Anita Manning, Thomas Plant, James Lewis and the much missed David Barby, all bought items at the centre. “Only one of the experts failed to make a profit from what they bought at the centre. It shows my dealers have got their pricing right.” Peter has always looked after his staff. Not content with just giving everyone and their partners a slap up dinner at Christmas, he always organises a mid-summer party too. Some years everyone went on Peter’s narrow boat for a riverside picnic or pub lunch. Other outings involved an evening at the dogs in Peterborough. And Peter has much to celebrate. His daughter Lucinda has recently taken over the day-to-day running of the centre. Not only have the last 20 years been successful it looks like the next twenty will be too.
