his month we celebrate Stamford’s Green Spaces with an astonishing walk that will reveal to you every type of Green Space that exists in the town, from the ancient to the Victorian to the 1960s – each and every one as important as the other to our well-being. But several of these spaces have been under threat recently and we must keep a watchful eye on them. The green spaces in the ‘Scottish estate’, for example, were recently the subject of an attempt by the original builders Jelsons to sell them off to speculators. Thankfully these spaces were saved when local businessman John Dawson purchased the bulk of them and is gifting them into the Harry Skells Estate Trust, thereby permanently securing the land for residents’ use. In John’s words, his aim was to: “Keep Stamford green, ensure the land was not sold to building developers and to keep the green spaces as play areas for residents’ children”. Hurrah to John, to the Scottish Estate Campaign Group, to the Stamford Open Spaces campaign and to everyone else who fights passionately for Stamford’s Green Spaces, which set us apart as a beautiful town.

This was lightly brushed on using a stipple brush before she used concealer over the eyelids and on the cheeks to even out Lisa’s skin tone. Consider ‘less shabby’ & ‘more chic’
Claudia Bayley enrolled herself on a Painted Out ‘less shabby & more chic’ furniture workshop and came away much the wiser and more practical
I
attended an all-day Saturday workshop recently within a small group, all with the same goal - to create a more ‘flawless finish’ to our pieces of furniture.
STEP 1 We began by preparing our items; handles and hinges were removed, any holes filled, sanding where necessary and finally giving our items a good wash and rinse. We left our furniture to dry in the sunshine while we enjoyed a cafetiere of coffee, tea and biscuits.
STEP 3 In the afternoon we had demonstrations and practiced different finishes (e.g. crackle glazing and Nordic style finishes that we perhaps wouldn’t have previously attempted) as well as putting the final coat of paint on our own item. We all chose to ‘drag’ our lighter choice of colour, using quite a dry brush over the darker coat. This created a very subtle look, resembling a lime wash with a coloured grain in the wood. I can now see how it is possible to achieve French and Swedish Chic, which looks professional, without brush marks, lasting durability and certainly something to be proud of. • For future workshop dates see the Painted Out website at www.paintedout. co.uk or contact Lesley on 01778 394744 / 07762325494
Participant feedback STEP 2 When everything was dry, it was time to decide which primer/undercoat to use. We learnt how it depends on the surface to be painted i.e. high sheen, knotted pine, previously painted or my friend’s bamboo tables! The next part was surprisingly enough, the hardest – choosing the paint colours! We were going to use two colours – so two decisions to be made! The darker choice of colour went on first just before lunch, where we adjourned to the conservatory for a lovely hot lunch and a well deserved glass of wine.

CAMPS AND COURSES he ever-popular Churchill has added further Summer Camps this year at Stamford High School and Junior School, Brooke Priory in Oakham and Peterborough School (01780 753461; www.churchillsummercamps.co.uk). Weeks run from 7 July to 22 August for four to 14 year olds. A five-day camp costs £149, with two-day tasters available for first-timers and a Wednesday night camp-over option at the Stamford venue. Activities include circus skills, swimming, archery, fencing and quad-biking, with some bouncy castle action in the mix too. Learning from a Master Chef PHOTOS: TIM BURKE
Clarkes is Peterborough’s top dining spot and now its creator Lee Clarke is offering to share his skills through a cookery school. Tim Burke signed up
A
fter a stellar career in the big city, chef and Peterborough boy Lee Clarke has come back to his roots to bring fine dining with flair into the city centre. His St John’s Square restaurant has been an instant hit with food lovers – and now they can get even closer to the action with the launch of a series of relaxed and fun cookery school events. Sessions will run on Sunday evenings and Monday mornings, each culminating with a meal that you’ll have had a hand in preparing yourself. I was lucky enough to take part in a trial run for the Sunday evening class and found it not just a fascinating insight into a high-end restaurant kitchen, and a first -rate meal, but a superbly relaxed way to close the weekend. The tone was set as we entered the private Chef’s Table room to the sound of corks being pulled from a deliciously fruity Chilean merlot. Once sorted out with a glass and an apron, it was into the kitchen to meet Dorothy – the restaurant’s 2 1/2 year old mother yeast. Bread was the loose focus of the session and having paired up, we were soon mixing dough. Lee has the steely approach of a chef used to running a busy kitchen but there’s a pleasingly laid-back approach to his instruction. “Don’t worry ,” he reassures us as we nervously stir together the yeast, flour, butter and salt. “It’s a fallacy that chef’s weigh everything exactly. There’s always a lot of guesswork.” As our dough is put to rise in a warm spot (which it does, spectacularly), we create our starters. This smoked eel dish had been on Clarke’s spring menu, but there was no demanding cooking required from us. Rather, we get a master class from Lee in putting together a supremely pretty plate from top class ingredients. Following his lead we started with a swoosh of beetroot puree, then embroidered with roasted red and golden beetroot, eel from the Queen’s own supplier, delicate crab meat, finely sliced turnip and radish, creamed horseradish, sorrel leaves and dressing. Finally there were little grace notes of fennel pollen and a fine powder of dried bacon. “It’s all about creating layers of flavour so the palate doesn’t get bored” explains Lee. The dish tasted fantastic. Glasses replenished we went back to the kitchen to attend to our bread dough and had great fun creating focaccia with olive oil sea salt and rosemary and a whole range of rolls, plaits and mini-loaves. Lee then presented the star of the event, his signature dish of Venison Wellington: beautiful loins with a farce of St

George’s mushrooms with a little bit of date for sweetness, wrapped in pancake and then puff pastry (the pancake prevents the pastry getting soggy). The hard work had been done for us – all we had to do was help prep the asparagus and other veg which we would then blanch in a bubbling pot with a hefty chunk of butter included. Lee tells this not only nicely glazes them but helps retain their flavour too. Again the dish went down a storm. The wine was taking effect and the atmosphere was that of a relaxed supper party with friends – only most of the work was done by a chef with a listing in the Michelin Guide. The chat flows over our venison and Lee regales us tales from the kitchens he’s worked in - not least those of the Savoy, the Roux Brothers and Marco Pierre White. Sadly most of them are not repeatable here!
We finish with a creamy rhubarb fool with a shortbread-style biscuit, before heading off home to show family and friends our beautiful bread creations. “This has been a whole new spin on a night out,” says one of my new found friends. “The food tastes even better when you feel you you’ve earned it!” The new series of classes starts on 24 May and run for 12 weeks. The Sunday sessions run from 5.30pm to around 9.30pm and cost £85. The Monday classes are a little more focussed on skills and techniques and run from 9am to 2pm and cost £65 including a glass of wine and lunch. Fine Food Store Sunday brunch menu Nicholas Rudd-Jones joined a group of locals to try out the new Sunday Brunch menu
In the heart of Nassington village, The Queens Head Inn successfully combines friendly village pub with good food restaurant and accommodation in an attractive setting.
T
he Fine Food Store has always had an outstanding breakfast and lunchtime menu – locally sourced, home-cooked, brilliant flavour combinations – but Jenny Fitzpatrick, the owner, is never one to sit on her laurels and now she has just launched a Sunday Brunch menu, inspired in part by a recent trip to New York. We tried it out one summer’s day, together with some café ‘regulars’ - Lynne from Attic, Rowan the artist and Giselle from Chameleon – and we were bowled over by it. Firstly the drinks. You can be good and stick to the Freshly Squeezed Orange Juice or Mixed berry and fresh fruit smoothie; or a little bit more laid back and go for the Bellini or Bloody Mary, depending perhaps on how your Saturday night went. In terms of mains, there are 18 different options to choose from, and they’re all good! Our favourites included: • Spanish Scramble with chorizo, spring onion, caramelised onion, Monterey Jack cheese.

Hannah Catt, Emma Walkley and our new apprentice Danielle Sharpe have put in a great deal of effort and its success will be testament to them.” I really can’t think of a better way to relax on a Sunday than making your way down to the Fine Food Store for brunch. The Marquess gives A Taste of Spain Brian Baker recently hosted another great cooking demonstration, this time based on the “Taste of Spain”.

rian has been visiting Spain for the last ten years and loves the flavours of the food along with the great atmosphere when dining in favourite holiday destinations. He has visited many places including beautiful olive groves and vineyards. In fact The Marquess imports their house wine from the Castilla La Mancha Region from the Vineyard Santa Cruz. The guests were treated to demonstrations on some of the best loved Spanish foods, including Paella with King Prawns, Squid, Chorizo and Chicken, Tortilla, Tapas and Cinnamon Bunyols. Lunch was then served with a glass of the house wine. Brian’s next demonstration is Devilish Desserts on Monday 15th September and then the ever popular Festive Demo in November. A
venerable weeping willow shades grassy banks that sweep down to the River Nene, where ducks and Canada geese sail past sheepgrazed fields. Inside, the cosy, wood-beamed bar has Windsor chairs, cushioned corners and a wood-burning stove, while the restaurant welcomes with oak floors and tables, soft lighting and comfortable leather chairs. Although tempted by the delicious-sounding British classics on the blackboard, we chose from the à la carte menu and after being shown to our table were offered warm tarragon and cardamom or cumin rolls, fresh from the oven, with three different types of homemade butter. Robert declared his pea and mint soup “summer in a bowl, like peas used to taste!” and my Cornish crab ravioli transported me to sunny days by the sea. Both were beautifully presented and the intense flavours memorable, which was equally true of my ballotine of pork tenderloin. The restaurant is famous for steak and Robert chose flat iron with a mushroom sauce, which came closer to well done than medium, “but still, very tasty”. The dessert was a triumph. We shared a Chocolate Textures plate and vowed that next time we’d order one each. Head chef Erran Buckingham, whose CV includes a year at Raymond Blanc’s two Michelin star Le Manoir aux Quat’ Saisons, is passionate about quality ingredients, serving only what’s in season and sourced as locally as possible, and in balancing flavours so they speak for themselves but work in harmony. He’s just notched up a second AA Rosette for The Queens Head. As one door closes another opens Sarah Lyon talks to Andy Heaps of The Bytham Kitchen
H
aving been absorbed in a foodie culture from a young age Andy recently moved away from a career in teaching languages in secondary schools to creating The Bytham Kitchen, producing an exciting variety of pickles, chutneys and award-winning marmalades. “It began as a hobby and an experiment in November 2012, with 500 jam jars and a lot of ideas for recipes, many of which are old family ones,” says Andy. Inspired by the traditional recipes of his gran, who was a country woman and retired to Kings Cliffe, Andy is committed to experimenting and recipe testing his own ideas too. “My mother was a great believer in play as a way of learning. Growing up we were always making things with the fresh vegetables and soft fruits from my mother’s garden. These early influences have been the inspiration behind the venture into producing preserves and chutneys from foraged hedgerows and local produce,” says Andy. Andy has become a bit of a hedgerow and wild fruits forager and sleuth. “It is exciting to gather wild fruits like this. The wild plums, wild cherries, crab apples, sloes, blackberries and elderberries I have found in hidden-away locations across the region are the basis for my Lincolnshire Hedgerow Jelly. It is the perfect accompaniment to a baked Vacherin Mont D’or (served on the menu at Cheyne Layne Bistro in Stamford).” A teaspoon-sized helping straight from the jar or as the perfect finish with toast to a Full English Breakfast, marmalade lovers will adore Andy’s marmalade. Competing against 2,500 entries, Andy recently won a bronze award for his medium cut Seville orange marmalade and another for his Seville orange and whisky marmalade in the Artisan Marmalade category at the International Marmalade awards. Traditionally there are only four ingredients to producing marmalade. Taking 4 lbs of oranges to 8 pints of water, sugar and 2 lemons seems simple enough but what distinguishes The Bytham Kitchen’s marmalade from a host of others? “Prepared carefully with no pith to create a clear set,” is Andy’s advice. The Bytham Kitchen’s marmalade is infinitely better than many I have tasted. A delicate flavour, subtle sweetness, thin slices and a perfect set place Andy’s marmalade in a position that is a cut above the rest.
“Although she doesn’t like marmalade, my sister is a wonderful foodie person and she helps with the research into recipe ideas for my chutneys and preserves. Holidaying in France as children I think we both developed a good palette and a natural awareness and sense of what works,” says Andy. This was certainly the case when kilos of fresh figs appeared from a friend’s garden last summer. Fluent in Italian, Andy was able to do some research on an Italian web-site for how best to conserve figs. This resulted in a stunning fig, orange and pistachio conserve. “I have a ridiculous quantity of cookbooks. One of my favourites being Sophie Grigson’s, Taste of the Times,” says Andy. Adding to this is Andy’s Carrot, Ginger and Garlic Chutney which inspired an adaptation of one of Sophie Grigson’s recipes. Best by far of Andy’s retail outlets is The Cheese Cellar in Stamford where he sold 200 jars of his Carrot, Ginger and Garlic Chutney before Christmas last year; a chutney that works well with a smooth goat’s cheese. The creation of the Battle Proms came from a desire to make best use of the 200 live firing replica Napoleonic cannon that were in the yards of the English Field Artillery Company. It is this signature piece which gives the Battle Proms its name and lends a unique and spectacular twist to the concert. This will be the third year Rutland Water Fly Fishers have organised the Rutland Youth Fly Fishing Day on Sunday July 13. It is an opportunity for young people to try a sport they might never have considered before. The day comprises training sessions in the morning, followed by an afternoon fishing from boats on Rutland Water with an experienced Fly Fisher. Fly casting, Fly tying, Safety and ‘how to fish Rutland’ skills sessions are run by top coaches from the world of Fly Fishing. The Fly Dressers Guild will demonstrate how to tie a fly suitable for Rutland and help the youngsters to tie their own fly. The Game Angling Instructors Association (GAIA) will be teaching how to handle a fly rod and how to cast a fly line. Safety is an important consideration, full instructions on how to put on life vests and how to behave on a boat will be covered by representatives from Fish Pal. Two top local guides will be passing on valuable knowledge about how to catch fish on Rutland Water. There is a break for lunch, provided by the club, then the youngsters go fishing, boarding the boats in pairs and spending the afternoon fishing with a volunteer boatman. Places are limited and have to be booked in advance. The cost for the day is £15.00, which includes lunch. Castle Bytham Midsummer Festival
On retiring after five years as Principal of the Dyslexia Institute in Peterborough, Josette Carroll decided to devote some time to the study of Art. Painting and Art have always been among her main interests. After an intense 3 year course at New College, Stamford she graduated with an honours degree in Fine Art from Lincoln University. Josette creates many of her sculptures from discarded corrugated cardboard often salvaged from street markets. Using an industrial band-saw, she carves extraordinary shapes & forms from this everyday material, revealing seldom seen hidden patterns and textures. Although corrugated cardboard has long been used as a material by many leading artists, no one has utilised this rather mundane material in quite the same way as Josette Carroll. In June as part of Rutland Open Studios, Josette will be hosting a solo exhibition of more than 50 examples of her work at The Chater Pop-Up Gallery, Mill Lane, Church Road, Ketton. PE9 3RE. Smelling salts for pubs A brilliant scheme called Project William from Leicestershire’s Everards Brewery is reviving closed pubs, says Matt Wright
I
love pubs and our area has more than its fair share of crackers. In Stamford there’s the Tobie Norris with its historic surroundings, and the Jolly Brewer with its great local beer selection and pubby atmosphere. In Oakham, brewpub The Grainstore offers a lovely spitand-sawdust feel and brilliant beer festivals, and new Steamin’ Billy pub The Three Crowns has been very nicely done. That’s just four that spring to mind, some of my other favourites are profiled on my website – greatfoodclub.co.uk. But it’s fair to say that some pubs are having a tough time at the moment, so in this article I’d like to highlight a pioneering business idea that’s saving and regenerating pubs across the Midlands. If I said Everards Brewery, most of you would probably think of The Golden Fleece in Stamford or The Wheatsheaf in Oakham. It’s likely that you’ve never heard of this 165-yearold family-owned brewer’s Project William scheme, which since 2007 has so far led to the revival of 29 closed or ‘unsustainable’ pubs. And when I say revived, I don’t mean tired boozers getting a lick of paint. I mean boarded-up buildings being transformed into thriving pubs loved by their local communities. Of Everards’ 29 resurrected Project William pubs so far, 15 had been closed. Seventeen have gone on to win CAMRA Pub of the Year awards. Everards MD Stephen Gould launched Project William in 2007 and since then it has transformed 29 pubs this on its head. Instead, you partner – rather than compete against – local microbreweries to succeed. So what Everards – which owns around 180 pubs – has done is team up with small, local brewers – 10 so far. It has also teamed up with people who aren’t necessarily brewers but care passionately about pubs and cask beer. Working together, they look for a suitable pub. Once found, the bigger brewer buys it, refurbishes it and rents it back to the microbrewer or ‘cask ale champion’. But rather than slapping ‘Everards’ signs all over the building, the tenant can brand the pub as their own and sell a wonderfully varied selection of beers, many of them locally brewed. Which is exactly what the customer wants. The result is a growing number of thriving pubs across the Midlands selling great, local beer that were previously closed or supposedly unsustainable. Examples include The Paget in Leicester, The Brunswick in Derby and the Sir John Borlase Warren in Nottingham. So hats off to Everards. It’s possible that they’ll be working with a local microbrewer to revive a pub near you soon.

Seeing as we’re talking ale this month, here’s a beer-bread re cipe that was given to me by Dan Lepard, baking writer for The Guardian, among other publications.
Dan Lepard’s Leicestershire Ale Loaf

• 150ml warm water • 200ml Everards Beacon ale • 25g honey • 1 tsp fast-action yeast • 175g strong wholemeal flour from Whissendine Windmill, Rutland or Claybrooke Mill, Leicestershire • 300g strong white Whissendine Windmill or Claybrooke Mill flour, plus more for shaping • 1 ½ tsp fine salt, less if you prefer • Oil for kneading

1 Stir water, ale and honey together in a mixing bowl, sprinkle in the yeast and stir well. Add flours and salt, mix well to a soft rough mass, then cover the bowl and leave for 10 minutes. This pause gives the flour time to absorb the moisture and helps the stretchy gluten develop. 2 Lightly oil a 30cm patch of worktop, knead the dough gently for about 10 seconds then return it to the bowl, cover, and leave for 10 minutes. Repeat this light kneading sequence twice more at 10-minute intervals, then cover the dough and leave for an hour. 3 Flour worktop, shape dough into a ball, place it seam side down on a floured tray, then cover and leave to rise for an hour. Heat the oven to 220C/200C fan (Gas 7) and place a dish containing boiling water on the lowest shelf to help colour the crust.

4 Cut a cross in the top of the dough with a sharp blade, place the loaf in the oven with a good 10cm gap between it and your dish below, and bake for about 45 minutes until richly coloured. Then move the baked loaf to a wire rack to cool. STAMFORD LIVING JUNE 2014

A very messy summer! Sean Hope shares a dessert perfect for al fresco eating…
S
ummer’s here so I thought it was only right to share a summer recipe with you! This is the dessert I’m including on my Great British Chefs recipe page (greatbritishchefs.com). We make our own meringues at The Olive Branch but I haven’t included the recipe for them here – so you might want to buy some from the supermarket.
Strawberry and Lime Eton Mess Serves 6 • 200g hulled/chopped strawberries • A further 20 fresh, hulled strawberries • 200g white chocolate • 400ml double cream • Zest of 1 lemon • Seeds from 1 vanilla pod • 200g lime juice • 150g caster sugar • 50g liquid glucose • 1 tbsp lemon juice • Half tbsp pectin powder For the strawberry coulis 1. Place 200g hulled/chopped strawberries into a blender with 2 tbsp of icing sugar and the juice of 1 lime. 2. Blend until smooth and pass through a fine seive. For the white chocolate mousse 1. Bring half the cream to the boil with the lemon zest. 2. Gently melt the chocolate over a bain marie. 3. Strain the hot cream onto the chocolate, mix well, then chill overnight. 4. The next day, remove from the fridge, place into a mixer and beat until it starts to thicken. 5. Whisk the remaining 200ml of cream with the seeds from 1 vanilla pod until thick. 6. Fold the cream through the white chocolate mix, then serve.

For the lime jelly 1. Mix the pectin powder with the sugar, then place into a saucepan with the liquid glucose and lime juice. 2. Using a thermometer, bring to the boil and heat to 108C. 3. Remove from the heat and stir in the lemon juice. 4. Line a small baking tray (10x15cm) with cling film. 5. Pour the lime jelly mix on to the tray and allow to set (four hours in fridge). 6. When set, cut into 1cm cubes. To assemble 1. Chop up 20 fresh, hulled strawberries and place a layer into each jar or dish. 2. Drizzle a little coulis on top, then add a layer of meringue pieces. 3. Add a few pieces of lime jelly, then pipe or spoon the white chocolate on top. 4. Repeat this process a few times to create tasty and colourful layers. 5. Serve and enjoy with a scoop of vanilla ice cream.

Talking of up-and-coming kings of the kitchen, congratulations to Olive Branch chef Sam Reilly, who was awarded a bronze medal in the Hotelympia 2014 ‘Pork Chop Challenge’, with an overall score of 75%. Sam joined The Olive Branch kitchen team straight from Stamford College in 2013. Meanwhile, Tapas on the Terrace is now in full swing in Clipsham. Stamford ‘Green Spaces’ walk Everyone loves and needs a green space, whether it’s to take some exercise, walk the dog, climb a tree, chat with neighbours or just clear the mind. And Stamford is blessed with more than its fair share of green spaces, which this walk seeks to explore. But beware, they are always under threat from re-development and need to be jealously guarded! How ‘green spaces’ developed the way they have in Stamford Stamford is a quintessential market town. I often think it fits very well Thomas Hardy’s description of a market town idyll in his novel the Mayor of Casterbridge: “It was the complement of the rural life around; not its urban opposite. Bees and butterflies in the cornfields at the top of the town, who desired to get to the meads at the bottom, took no circuitous course, but flew straight down High Street without any apparent consciousness that they were traversing strange latitudes.” Stamford has been heavily influenced in its landscape by the proximity of Burghley House to the south. During the 19th century the estate took two decisions that profoundly affected the way the town looks today. First, they blocked the main north south railway from coming across their land, making Stamford something of a (beautiful) backwater. Secondly, Stamford was one of the last regions to have its fields enclosed, not until the 1870s, at which point the town was bursting at its seams with nowhere to expand. The residential development to the north around Recreation Ground Rd in the 1870s was the first significant development beyond the city walls,
which up until that point had provided the clear dividing line between town and country. The Meadows were entrusted to the ‘Freemen’ of Stamford and many allotments were created to mitigate for the loss of common pasture rights. Traffic congestion became a massive problem in the 20th century as Stamford was on the route of the Great North Rd. Several potentially catastrophic widening plans were proposed in the 1920s and again in the 1950s which would have destroyed the meadows, but eventually in 1960 the town was lucky enough to get a genuine by-pass which did no damage whatsoever to the historic fabric of the town. Factor in the extensive new residential areas added in the last 50 years (the population has increased by 60% since 1960) and the decline of industry e.g. the brick-building industry that is now wasteland, and you have the network of green spaces that you see today. Oh, and a river running through it. All these green spaces are to be cherished, and no doubt they are one of the keys to the town being voted ‘The Best Place to Live in Britain.’

Park in Water Furlong if you are coming by car. Cross the river over the millstream into the Meadows – walk south to the Boadicea plaque, then follow the bridge along to the Town Meadows, and cross south over the footbridge and then up Wothorpe Rd Turn left after 200 yards into Church St and cross St Martin’s into the churchyard; walk due east through the graveyard, out the other end, then right, past the Old Graveyard where you will see Daniel Lambert’s grave, across Barnack Rd and up to the end of Park Lane Go through the gate into Burghley Park, walk past the cricket ground, then cut down left past the Diana Memorial Wood on your left, exiting the park at the Barnack Rd entrance. Re-cross the Barnack Rd, down Water St and across Albert footbridge and up Albert Rd to Wharf Rd Cross over into Blackfriars St, then pass behind St George’s Church into St George’s St; walk up to the High St, then turn right into St Paul’s St; opposite Number 14 you will see the remains of the Conduit; double back on yourself, turn right up Star Lane into Broad St, then right up Newgates

Cross North St into Recreation Ground; wind your way up to the NE end, then turn E into New Cross Rd; turn left into Emlyns St, walk to the end; at which point you will see a tarmac path opposite which takes you onto the wooded path. You will shortly see the Stamford Community Orchard on your right On reaching the Kesteven Rd, turn left and follow it across Green Lane; just after Sandringham Close, take a footpath on your left that weaves its way down to Worcester Crescent Turn right here into Essex Rd; follow it all the way along to Sargents Close; take a path just to the left of garages, then immediately right and you will come to the Cemetery; the path follows it down and you will shortly find an entrance; go straight across to the far left hand corner, where you exit onto Casterton Rd; turn right until just before you reach the Rutland sign; at this point turn left past a rusting gate into the old quarry area (this is now a ‘permissive’ path) Follow the path toward the mobile phone aerial, passing it about 30 yards to the left; once past it, take the first clearly visible path left just after a coppice towards the Casterton Rd, with the fence to a new housing site just on your left. Pass through a hole in the hedge. (this route more or less follows the

Rutland/Lincolnshire boundary) Cross the Casterton Rd and walk into Perth Rd; opposite Gleneagles Close, take a path left and follow it until you reach Melrose Close on your right; cross Caithness Rd into Dundee Drive, then Tennyson Way; at the end of this road, cross the Playground to the Empingham Rd Turn left down the Empingham Rd, then enter the Empingham Playing Fields on your right, through the car park; skirt to the left of the fields, pass through a metal fence past the Stamford Bridge Club into a lane that leads into Exeter Gardens; turn left, right into Roman Bank, across the Tinwell Rd and then you are back!

Climb the broad steps at the foot of Empingham Rd and then up along Eight Acres (with St Gilbert’s School on your left) until you reach Foundry Rd. Go down it, cross the main road into Foundry Lane, cross St Peter’s and go down the cobbled lane (King’s Mill Lane), turn right into Austin St, turn left down Austin Friars Lane, follow the millstream along Melancholy Walk and you are back at the start! GREEN SPACE FEATURES SQUARES St George’s Sq is one of the best-preserved provincial squares in the country, and was used as a backdrop for the Middlemarch TV series and Pride & Prejudice. Since the 18th century the square has been residential. The building of the assembly rooms in 1727 emphasised its social importance. However, because it was always a prominent thoroughfare it never had a garden square; the ‘green space’ is provided by the graveyard of St George’s Church. Worcester Crescent was created as part of a large council housing development between the wars. It is a large open space which provides a ‘green lung’ for this area and is often used for knock-about football. In many ways it reflects the lesser pressure on space that there was in those days, as there are several squares or closes in this area not dissimilar to this. They add greatly to the quality of the neighbourhood

PARKS Burghley Park was first established at the time of the house in the sixteenth century, but was largely re-designed by Lancelot ‘Capability’ Brown in the 18th century. The 5th Marquess granted free access to the public to use the park in the 20th century, and it has since become a very popular spot for Sunday strolls and children’s bicycle training. In 1870 there was no Recreation Ground in Stamford – the poor and the gardenless, many crammed into courts and yards with poor facilities and sanitation, had to make do. The Stamford Enclosure Act of 25th May 1871 would change all that. It sought to ‘enclose certain open fields, meadows and waste lands in and near the Borough of Stamford and to provide a Recreation Ground… for the use of the inhabitants…as ground for exercise and recreation.’ The space was given as a gift by The Marquis of Exeter and the Recreation Ground has been popular ever since, recently gaining a first-class skate park.

ALLOTMENTS The allotments were created in the 1880s as a direct result of the Enclosure Act, recompensing commoners for loss of grazing rights. Today they are tilled by a happy mix of old-style vegetable growers and ‘lifestyle’cultivators. The allotments at the top of Water Furlong are run by the Town Council and are classic-sized plots (10 ‘rods’, enough to feed a large family); the ones further down are managed by the Burghley Estate, and many feel like secret gardens, with large walls, fruit trees, tree houses and lawns. They add greatly to the appeal of this area.

PLAYING FIELDS, GREENS & PLAYGROUNDS The Cricket Ground in Burghley is home to the Burghley Park Cricket Club, founded around 1870 and thriving to this day. A very pleasant spot to dwell for an over or two on a warm Sunday afternoon. Tennyson Way Playground This was created as a requirement of the developers when this area was created ten years or so ago. The Empingham Rd Playing Fields were laid out in 1961 by the Old Borough of Stamford. It has many active sports clubs that use it, including the Stamford Rugby Club, Stamford AFC Girls Football, Stamford Indoor Bowls Club and the Stamford Town Outdoor Bowls.

GRAVEYARDS & CEMETERIES St Martin’s and St George’s Graveyards both provide a dash of green space in the centre of the town, and give one a chance to imagine the lives of local people from centuries past. The Old St Martin’s graveyard, just beyond the church, has the grave of Daniel Lambert. In June 1809, he died suddenly in 1809, whilst passing through the town. At the time of his death, he weighed 52 stone 11 lb. Despite the Stamford Cemet coffin being built with ery wheels to allow easy transport, and a sloping approach being dug to the grave, it took 20 men almost half an hour to drag his casket into the trench. Stamford Town Cemetery was set aside in 1855 as a consequence of the graveyards in the centre of town becoming full, and covers about 9 acres of land. It is beautifully maintained, is an oasis of tranquillity and has a delightful chapel. It is generally open during daylight hours every day of the week. Notable graves include that of Malcolm Sargent, the composer.

WASTELAND Casterton Quarry This is the old Williamson and Cliffe brickworks which were demolished in 2004, now a series of ‘permissive’ paths and a delightful large, open space, used extensively by dog walkers and much appreciated. What will happen to this land, who knows? From every side new housing developments are encroaching, hopefully it can be converted into some sort of permanent park for the north of the town.
GARDENS, FLOWERBEDS, VERGES, OPEN SPACES The Hazel Grove verge in Emlyns St is a delightful stretch of green space alongside the road. It was the subject of a successful campaign to stop it being re-developed a few years back – the verge has been planted with bulbs and the trees are now subject to Tree Preservation Orders. The ‘Scottish’ Estate has 17 open spaces altogether, which provide pleasing green spaces Emlyns St between built-up areas and are popular for Verge playing and chatting with the neighbours in. We pass through Falkirk Close, which along with all the others, was recently threatened with being auctioned off after an abortive attempt by the developers to build more house in the gaps. As Dave Phillips, of Perth Rd, said: “They are the only green space on the estate. It will be a tragedy if what little open areas we have disappears under bricks and mortar.” (see our leading article on this). STAMFORD LIVING JUNE 2014

CONDUIT & MILLSTREAM King’s Millstream was recorded in the Domesday Book. It runs along the northern perimeter of the Meadows, and provided water to the King’s Mill at the west end of Bath Row. Its supply of water has been drastically reduced since the Tinwell Pumping Station was built to take water to Rutland Water in 1971, but it remains a very agreeable feature of the landscape. The Conduit in St Paul’s St, which was formerly in the middle of the street, was created in 1797. It was fed by a piped supply from Conduit Head.

RIVER The River Welland is, to state the obvious, the oldest piece of landscape that you will come across on this walk. It is the reason that Stamford is where it is, as it was the first fordable point west of the Wash.
WOODS Diana Memorial Wood The inscription reads: “This memorial garden was established by the people of Stamford in memory of the life and work of Diana Princess of Wales who was born on the Sandringham estate on 1961 and lost her life in a car crash in Paris on 31st August 1997.” Stamford Community Orchard In the 19th Diana Memorial century, Stamford was surrounded by orchards and nurseries growing apple and other fruit trees. More than 40 apple varieties were bred here, but with the passing of time many of these have been lost. With the development of the town and the change in farming practices, most of the old orchards have now disappeared, although some remnants are still visible in the gardens of newly built houses. This orchard is planted with apple varieties that would have been grown in the area in the past.

MEADOWS: Stamford Meadows are really the town’s finest natural feature, making a picturepostcard view from the SW of the spires and old houses, which has changed remarkably little over the century. Stamford’s famous ‘South Prospect of Stamford’, published in 1743, with its view of six churches is still easily recognisable today, the main change being there are no longer any hayricks! The Meadows is Common Land – divided by the Enclosure Act 1871 between Burghley Estates, the Freemen and the Town Council. The Town Council is responsible for the land from the Town Bridge to the first complete fence across the Meadows. The next two fields belong to the Freemen.

Malcolm Sargent Tours Sir Malcolm Sargent (1895-1967) is one of Stamford’s most famous sons, and you can see the blue plaque on his family home at 24 Wharf St. Sir Malcolm became one of the best-known and highest profile conductors of the 20th century. He founded the Leicester Symphony Orchestra and became the Chief Conductor of the proms. He is buried in Stamford Cemetry. If you are keen on music and local history, then why not join an enthralling two-hour tour to find out more about his life. The tour begins in the town hall, where there are several cabinets of memorabilia, including letters from many famous admirers. The tour then takes off across town, visiting his family home in Wharf Rd, the Boys’ School Chapel where he played the organ, the Corn Exchange where he made his stage debut and the churches where he played. The whole tour is led by the very knowledgeable and enthusiastic Penny Rowley. Shaws Battlefield Tours 2014 sees the start of a series of events commemorating the Great War and local firm, Shaws Coaches, is fortunate to have a member of the Guild of Battlefield Guides, Derek Frisby, on their team. Derek and his colleague, Ken Peplar are both experienced enthusiasts, who have built up a loyal and appreciative audience for their specialist tours that appeal to people of all ages and have just completed their 40th battlefield tour - Easter in Ypres – on which they were privileged to be joined by 101 year old, Mrs. Ruby Ashton from Stamford, who laid a wreath at the evening ceremony at the Menin Gate in memory of her father and her uncle, both of whom perished in the war and whose names appear on the gate. Derek and Ken approach this emotive subject with just the right blend of enthusiasm and sensitivity and have built up an impressive wealth of knowledge, which they’re always happy to share with their ever-increasing fan base. Whenever possible, and with advance notice, they will also make every effort to accommodate the wishes of those who are making personal pilgrimages to particular sites or cemeteries. Their next departure, on 23 October, is an all-new tour entitled ‘The Great War – from beginning to end’. Derek has used his specialist knowledge to put together a 5-day tour that is virtually a chronological potted history of the key battles of WW1, beginning in Mons, where the first battle was fought, and ending at Compiegne, where the Armistice was signed. Visiting memorials, cemeteries and museums, passengers will learn about legends, like “The Angel of Mons” and, at St Symphorien, they’ll see the graves of what are believed to have been the first and the last Commonwealth soldiers to have been killed during the conflict during that period in history. Later, at the end of November, Shaws returns to Ypres and the fields of Flanders where a quarter of a million British and Commonwealth soldiers lost their lives. The tour takes in the memorials at the heavily fought strategic points of Hill 60 and Hill 62 – artificial mounds which gave a commanding view over the flat surroundings. Still preserved are some of the trenches and the massive craters formed when mines under the German positions were detonated during the Battle of Messines, killing hundreds of soldiers in an instant. Stamford’s ‘Gordon Boys’
Between 1885 and 1914 a number of boys were sent by the Stamford Board of Guardians to the Gordon Boys’ Home. Why? Sue Lee and Jean Orpin have been investigating. Gordon Boys’ Home hen General Gordon died in 1885, Queen Victoria led the campaign to establish a suitable memorial. Donations were received from all over the Empire and beyond and it was decided to provide a home to educate and train ‘necessitous’ boys of 13yrs to 17yrs in suitable trades and for military service. First established in 1885 the home moved into new buildings at Woking, Surrey in 1887. When a place could be obtained, Boards of Guardians found the cost was much lower than a workhouse place or an apprenticeship for promising boys. Numerous trades were taught from tailoring to engineering; cooking to blacksmithing. The home was run strictly with a military uniform, drill, marching and bugle calls for meals but there were also rewards. It must have been hard for young boys to travel alone to such a distant unknown abode but the following two Stamford stories illustrate the potential benefits.

John Frederick Peck, born Stamford 1889. ohn Peck’s father worked on the railway then as a drayman at Philips Brewery. The family lived in Newtown, St Martin’s but had moved to Gas Street by the time John’s father drowned in the Welland in April 1902. At the subsequent enquiry, his widow claimed he was a drunkard and there had been disputes about money. It was noted however that she appeared to be under the influence of drink as she gave evidence and the story told by their nephew, Arthur Peck, was somewhat different.

Arthur, then 20yrs old, had been brought up by his uncle and aunt but explained he had left their household due to his aunt’s behaviour. He described how the family had had a lovely home but that she had broken it up through drink and pawned all their belongings: it was his aunt not uncle who was the drunkard. The jury accepted his account and, returning a verdict of suicide, asked that it be noted Peck had been driven to it by the drunken habits of his wife. The eldest boy of the family went back to Manchester with his cousin Arthur (where Arthur became a Police Constable and Albert a butcher) but John and his younger siblings came under the care of Stamford Board of Guardians. It was from this background that the Board approved the payment of £8/yr to send the young John to Gordon Boys’ Home where he must have arrived just about in time for his 15th birthday in September 1904. At Gordon’s he learnt the trade of tailoring and the Board had excellent reports about him. Although he was a small and slight boy, he signed up to join the North Staffs Regiment when he left in 1908. Asked for his next of kin, he didn’t know his mother’s address so gave the name of his younger brother at that time still in the Workhouse. He went on to serve in the army for nearly 13 years. Throughout World War I he served in India and signed up for an extra 3yrs at the end of the War. Clearly John was fortunate to become a Gordon Boy.
John (Jack) Betts, born Stamford 1892 ack Betts similarly flourished at Gordon’s although sadly the War was to put paid to his chances of future success. Jack’s father was Stamford born but moved around the country a good deal. He had quite a skilled job as an iron turner but, for whatever reason, he was in Stamford Union Workhouse by the time Jack was 3yrs old. In January 1896 Alfred Betts ‘inmate of the workhouse’ and ‘a powerful looking fellow’ came before the Magistrates for wounding another inmate. He claimed it was self-defence but it has to be said he did not come across as a pleasant man. He was sent to prison. By this time the family had already split up with the younger children coming under the care of the Board. Jack spent some time living at a house on St George’s Square rented by the Board to provide accommodation for boys in their care then when he was due to leave at 14yrs the Master requested he was sent to Gordon’s. There were soon reports of Jack’s good progress and conduct at Gordon’s where, like John Peck, he learnt the tailoring trade. In 1910 Jack won the first prize for his year and was presented with a watch. In due course he too joined the army where he attained the rank of Corporal in the Royal West Surrey Regiment. Unfortunately he was accidentally drowned and is buried with nine other servicemen in the Communal Cemetery at Picquigny near the bank of the River Somme.

The Priest, the Bomb, the Quarry & the Parishioners Words & Photographs by Harjit Gammon his month a diminutive building, The Priest’s House in Easton on the Hill, is the focus of &Co; shedding light as it does on how a community can be mustered in the interests of looking after and sharing a special building with everyone and in so doing gain immensely in return. Under the capable direction and custodianship of Paul Way, a long time resident of Easton and village firmament stalwart, some 29 ordinary denizens of the village are marshalled yearly to ensure the continued opening of this, the smallest of the National Trust’s properties, to the public. Run entirely by local volunteers, The Priest’s House has also become a focus of the village’s history. Paul has enthusiastically gathered, and had bestowed and endowed a diverse little collection of local curiosities and artefacts relating to the village, in addition to bygones and memorabilia associated with the local Collyweston slate mining industry. The Priest’s House is a delightful small building with fascinating local architecture and equally absorbing uses. It is thought to have housed the chantry priest. Thomas Sokes, the Rector of Easton and a relative of William Browne, a wealthy wool merchant who built Browne’s Hospital in Stamford, left money for a chantry priest to say prayers for his soul in Easton, when he died in 1495. Following the dissolution of the monasteries by Henry VIII, chantries became illegal in 1545. But the village priests probably continued to occupy the building until the adjacent Rectory (now Glebe House) was built in 1698. The building was later used as a schoolroom. In 1765 the Rector, John Skynner, was running a school in the Priest’s House for the children of gentlemen. The pupils boarded in the rectory next door. After Skynner died in 1805 the building was used to house livestock. The building was saved from demolition in 1963 by the Peterborough Society (now the Civic Society) who acquired it from the Diocese of Peterborough. In 1965 it was transferred to the National Trust.
Dendrochronology ntil recently there was little to indicate when or why the Priest’s House was built. However, in 2010 core samples taken from a cross beam at the end of the first floor for a dendrochronology (tree ring) assessment revealed that the building was constructed between 1474 and 1499. A more comprehensive explanation of this intriguing process is on view at the property.

The illustrations by Stamford artist Vic Millington convey the very steep, sharp incline to carry the stone to the nearby railway for transporting it to be smelted for iron As the quarry grew in size a steam engine was employed to carry stone around the quarry before the wagons took it to a winding drum for transporting to the Midland railway. The real gem however, especially for visiting schoolboys from local schools, who bring their pupils every year, is the ‘bomb’. “They arrive terribly excited, says Paul, wanting to know where the bomb is”. Dropped on the village during the Second World War, it took the roof off a house in the High Street, which can still be identified by its curiously discordant flat roof. Look out for it when you visit.

The posters show mainly local views painted in a 1950s style. Details of how to purchase prints on line or by post will be available.
