Getting pleasure from the Meadows The Meadows were granted to the people of Stamford in the 19th century as a free ‘unenclosed area’ where we could take leisure (we still do) and graze our animals (more exercising our dogs these days, but same idea). They were specifically prescribed as ‘unenclosed’ i.e. free for all to pass through unimpeded, unlike all the fields around the town that were fenced i.e. enclosed and out of bounds. I think it is very important that we stick to this principle when we think about how we can derive pleasure from the meadows today – free for all to use, and pleasant i.e. well kept, tidy and not too noisy. I would entreat the Stamford Town Council to consider this when they plan events for Summer 2015 – closed events i.e. fenced in by high barrier, where you have to pay to get in, should be kept to a minimum, as they effectively close the meadows to everyone else – and if they are still judged worthwhile, not for more than a couple of days at a time. And secondly, noise – there are at least 200 households and businesses in close proximity to the meadows, so loud events should be time-limited (and preferably ‘good loud’ i.e. live music, kids having fun, sports being cheered on; not ‘bad loud’ i.e. people touting for business over a loudspeaker for hours on end.) There, gripe over.

Marcus first qualified with The British School of Yoga in 2000 in both Hatha Yoga Teacher & Yoga Class Instructor Diploma Courses. In 2004 he studied SUN POWER YOGA under the tutorage of Internationally acclaimed Anne-Marie Newland and gained a Level 2 qualification. As a full time event rider from 1987 to 2000 competing up to advanced level, Marcus felt a desire to become fitter and leaner and to control competition nerves. This coupled with an already strong interest in spirituality, led him to Yoga in the mid nineties. In 1995, Marcus also qualified in Stress Consultancy with The Associated Stress Consultants Through Yoga, Marcus’s life changed dramatically, physically, mentally and emotionally. Gaining confidence in himself he was able to access the calm within himself and was able to address the stresses of modern day life. Physically stronger and in better health and fitness than he had experienced in his youth, he shed 2 1/2 stone. He set up the successful Yoga Studio in Castor focusing on private tuition, individuals and small groups. The Castor Studio is still in business and the Public Yoga Class at The Cedar Centre in Castor has now been running for 14 years. From the experience he gained with Anne-Marie Newland, Marcus went on to give lectures and demonstrations at the 2004 & 2005 Yoga Show events at Olympia and a BBC Roadshow for fitness. Health, beauty and well-being Genevieve Potter kept up with the two winners of our “12 hours of pampering” competition, Rachel Andrews-Ingram and Jennie Tansley, to see the results of their special day

Here are my 12 reasons: 1. My dark circles reach my ankles 2 My hair’s falling out 3. My back aches from constant lifting 4. My hands are incredibly chapped 5. I have sleep-deprived dehydrated skin 6. My toes have forgotten what nail polish is 7. I have to rush my makeup and go out looking like a clown 8. My hair ‘do’ is the scraped up ‘no hair pulling’ kind 9. The only place I get ‘me time’ is on the loo 10. I have no skin regime 11. My hairbrush’s getting lonely 12. I wouldn’t trade the above for my beautiful 5 month daughter Evelyn ... but I’d welcome a pampering! THE BIG DAY I’d had a busy start to the week and had been up half the night with Evelyn, so I almost ran to Maples, where I’d be spending a whole day - hurray! I’d been there in the past but had forgotten what a beautiful place it is and Karen and her team were fantastic, I felt very spoilt from the moment I walked through the door. We kicked off with a pedicure, which began with a welcome foot soak. As a new mum my feet permanently ache and feel heavy from being on them all day. I chose a lovely zingy coral colour for my toes to perk them up a bit. This was followed by gel manicure. My nails were in need of some urgent TLC, and hadn’t seen a nail file in months! Therapist Lyndsey explained that the gel manicure enables you to leave the salon with a perfectly dry-to-the touch finish, and didn’t damage the natural nail underneath. I adored the perfect glass-like finish. Next was the Elemis Tri-Enzyme Resurfacing Facial. Lyndsey told me that even after one treatment, it would resurface my skin, increasing its smoothness and clarity. I was treated to an array of beautiful aromas from fruity fragrances to a more healing tea-tree scent and my skin breathed a deep sigh of relief. I was already in a very relaxed state, but it was time for a full body massage. My back was
12
suffering from the strain of pregnancy, labour and picking Evelyn up. Lyndsey worked on my upper back to relieve the tension and knots, which just melted away. Every part of my body felt rejuvenated and afterwards I felt as if I’d woken from a very deep and restful sleep. Now that my body had been rescued from the strains of motherhood, colourist Jess and top stylist Will (William Wheelright) talked through my hair restyle with me. My hair has gotten very fine and I’d gone blonde for the summer, which meant unwelcome dark roots. So Jess put through a range of different highlights, weaving some of my natural tones through to break up the colour. Will suggested a long bob and a thick fringe, which would offer me the volume I was missing, whilst still enabling me to tie it back. I was really pleased with the result - Jess had done an amazing job of the colour and Will’s handiwork gave me an easy to manage, contemporary look. The final treat of the day was a make-up lesson with Maples salon owner and ex-BBC/ Clarins make-up artist, Karen. I normally go for the barely there approach to my make-up so Karen offered to show me how to achieve a smoky-eyed ‘evening’ look. I don’t wear foundation - I don’t like the heavy feeling – however I loved the Clarins Skin Illusion Radiant Glow foundation which was so light it felt as though Karen had forgotten to put it on! I picked up some fantastic tips and tricks of the trade. I felt very glamorous when Karen handed me the mirror to show me the end result, a look
I shall definitely be trying to emulate. Afterwards I felt totally revitalised. Becoming a mum is the best gift I could ask for, but I’d forgotten to look after ‘me’. The Maples team did a first class job and gave me the perfect pampering. I can’t thank the team at Maples and Stamford Living enough, for giving me a truly memorable experience. THE BIG DAY The day couldn’t come quickly enough and I kept expecting someone to tell me that there had been a huge mistake and it wasn’t me who had won! It all started with a visit to the newly opened Electrolysis and Skin Care Studio, in the mews behind the George Hotel, for an Environ facial. Therapist Amy explained that Environ products contain high doses of vitamin A, which is a magic ingredient. Previously I’d thought that a facial was a nice relaxing treat (albeit one that I never really got round to), however this really changed my mind! I particularly loved the collagen mask - it did incredible things to my skin and I left feeling positively glowing. What a brilliant start to the day. After a stroll across town in the sunshine, the next stop was Asembo, for an Aromatherapy body massage. The therapy room in Asembo was gorgeous - I was cocooned in luxury. Therapist Becca carried out a sensory test, asking me to smell different Espa aromas to determine which would be the most beneficial. During the massage Becca also used an inhalation bowl, so that I was surrounded by the divine smelling products. She worked wonders on my back, neck and shoulders and it’s hard to explain just how relaxed I felt. I then walked (slowly) to Equilibrium. After a welcome sit down on their cosy sofas with a cuppa, it was time for a gel manicure and

pedicure. I don’t think I’ll ever go back to doing my own nails again – wow, what a difference! We opted for a classic French manicure on my hands (I am off to a wedding in a couple of weeks and I’m confident that it will last) and then for my toes, I went for a bright summer orange. My hands and feet have never felt softer or looked better. It was then time for my hair to be transformed, so I headed back to the George Hotel Mews to Gerards. Stylist Keighley started work on my colour, weaving precise lighter shades to lift my natural brunette to achieve a soft ombre look. She explained that Aveda colour is almost entirely natural, so it conditions your hair. I was treated to a heavenly Stress-Fix hand and arm massage whilst I was waiting for the colour to develop. After a few expert layers were cut in and a deep conditioning treatment was applied, my hair looked shiny, bouncy and much more modern. My final destination was Flawless Faces in Red Lion Square to meet Neeta for a makeup lesson and application. Neeta is a really experienced make-up artist and I picked up so many fantastic tips. She started by threading my eyebrows – it wasn’t painful and it made an incredible difference, opening up my eyes. She used a light Decleor bb cream as a foundation, applied with a brush, which gave me a dewy look whilst allowing my many freckles to peek through. I was then guided through the mystical art of applying false eyelashes, before she applied a bright lip colour which I’d never have chosen, but looked great on. The end result was a transformation and I couldn’t quite get over the shock when I looked in the mirror – in a good way! I left for home on cloud nine and am so grateful to have had this experience, it is amazing what some pampering can do for your confidence! Wouldn’t it be lovely to live around here’”. Some years later and having moved to a village just outside Stamford, Kate helps homebuyers source and purchase some of the most attractive properties in the region. Stamford Living recently caught up with Kate to find out what advice she has for those looking for an equestrian property in the area. Kate refelcts that for those looking for an equestrian base as a business, the property shopping list will typically include 15+ acres of multipurpose well drained land, flat space for an arena (possibly as large as 30x60), 10+ stable block and room for a horse walker and a selection of outbuildings. Ideally, the land should be ‘Old turf’ (grass land that has been grazed for decades) as it copes better with livestock and offers a broad range of vegetation. Hills are ideal for young horses to graze (as it works their muscles as they grow and mature) and for conditioning of working stock.
A region of expertise A number of professional riders have chosen to base themselves in the region including Kate Walls, Kelly Aldous and Julia Dungworth. Why? Well, they all benefit from the close proximity to the A1 and subsequently, are within two hours drive of the main equestrian and competition locations within the UK. Professional equestrian facilities close to Stamford rarely come on the open market so for those looking to establish themselves here, you may need to approach landowners directly or work through a land agent and apply for planning permission for the buildings such as a horsewalker ménage. Two Turtle Doves – machine embroidery art I
visited Caroline Austin in her charming studio in St Mary’s St above Snow Designs & Interiors, with a bird’s eye view over St Martin’s. She was busy at work, embroidering bees and honeycomb motifs onto a lampshade. My immediate reaction was ‘I want that lampshade!’. Every piece she does is an original, and for a very reasonable price you can have a lampshade or piece of embroidery that is a one-off. She also accepts commissions if you would like your very own choice of motif on something. Caroline described her work to me: “I specialise in ‘freehand embroidery’, I usually get a puzzled look when people ask me what I do....... I basically use my sewing machine to sketch with, the way an artist would use a paint brush. I am inspired by what I see around me. It is a very unique and unusual media and I have been very lucky to have many people collecting my pieces, as well as doing commissions of people’s homes, businesses etc (The Mad Turk has one for example). athy Jones one of our local GPs has recently published a book through Authors on-line. It tells the true story of how Cathy aged 11 and with no previous acting experience landed the title role in the West End musical Annie. She was brought up in a small village in South Wales and dreamed of ‘going on the stage’. Her dream chance came when the production team for Annie back in 1978 visited Cardiff and held an open audition for any young girls interested. Cathy’s father was a journalist and had encouraged her to keep a diary so that one day she might turn it into a book. She began writing it up whilst studying medicine at St John’s College, Cambridge back in 1984. She even had a couple of authors interested in London. However the years as a medical student and then a junior doctor in the Royal Air force meant the book went ‘on-hold’. Over the years since she has often ended up telling of her adventures in the West End and every now and again returned to the manuscript and wrote a little more. This book is for anyone who has ever dreamed of going on the stage or has children who dream of such things. Unlike the girls Cathy performed alongside she always wanted to be a doctor. How different her life has been to the likes of Catherine Zeta Jones who was also in the show around the same time. Cathy wrote in the short biography part of the programme that she wanted to be a doctor and that maybe one day she’d sing to her patients! One of her roles at Wansford surgery is to look after the Old Peoples’ homes at Tixover and Laxton Hall. Her favourite party piece is to sing songs from the 1940s and indeed over recent years she has on a number of occasions performed them for the residents in her care. Singing to the old people is amazing as folks with really bad dementia who can’t put two words together suddenly sing word for word ‘The White Cliffs of Dover’ Or ‘I’ll Be Seeing You’ - how is that possible to have the memories locked away inside? Otherwise, these days, her singing is confined to church or the shower! Perhaps if she’s honest she still dreams of one day treading the boards once more - there’s always Mame! How long have your been running the nurseries for? “I started a nursery called ‘St George’s Square Nursery’ in 2001 from my home in St George’s Square, Stamford when my son was small and I was looking for the perfect nursery for him! It occupied the garden level of our home as a term time only Pre-School. In 2007 my family moved out of St George’s Square and we built the Ark! In 2011 we were asked by St George’s school to start a term time Pre-School in the grounds of the School.” What do you think is the key ingredient for an ‘outstanding nursery’? “Quite simply - happy children, happy parents and happy staff! Our emphasis is on providing a homely and safe environment, with a strong team of committed staff, providing stimulating activities to promote the development of each child, enabling them to grow into the unique little people they are born to be.” Describe an ‘average day’ at the Ark? “The Ark at St Gilbert’s: Children begin to arrive at 8am and we welcome families to stay and settle their little ones into the rooms. Breakfast is available between 8am and 8.45am and most children arrive in time for this. After breakfast the older children have an age appropriate group session with time to say good morning to each other. This may include singing, discussion, activities planned for the day or just sharing each other’s news. We encourage the children to choose what they would like to do and they are free to play inside or outside, whatever the weather. Our staff are all committed to wrapping up warmly on colder days to embrace the outdoors at all times. The Pre-School children go in small groups to our ‘Forest School’ in Ketton most mornings and French is also taught once a week as an option. Our two wonderful cooks deliver an exciting and nutritious lunch at 11.45am and staff and children eat together. After lunch all the younger children have a rest and the older ones have some ‘quiet time’ but do not necessarily go to sleep. The afternoons are packed with lots more fun, games and group times. The children often go out for walks to the Meadows, the Recreation Ground or to the Library. Tea is served at 3.45pm and the children begin to go home between 4pm - 6pm. The Ark at St George’s has the same ethos as The Ark at St Gilbert’s and is run in exactly the same way. The only major difference is that the children arrive at 8.30am and bring their own lunch. Although we don’t serve
breakfast or tea, they have nutritious snacks every morning and afternoon and all children are collected at 4.00pm. The children also enjoy the same Forest School facilities. Each child has a Key Person who establishes close relationships with the family and works hard planning activities to extend the child’s development through activities based around each individual child’s interests.” Do girls and boys learn differently? “Absolutely! I am delighted that we are at last able to admit to this, as there were many years when it was frowned upon to differentiate.” Explain the benefits of ‘Forest School’ “For The Ark Nurseries, Forest School is a place to assess risk in a safe environment. This challenging play helps develop self-confidence, competence, emotional resilience and a sense of independence. Without any risk-taking or challenges, children are at risk of losing their sense of aspiration and ambition, as all children explore the natural world through hands-on activities outdoors. There is evidence to show that Forest School teaching under a canopy of trees has a positive effect on a child’s well being.” How do you help pre-school children make the transition to primary school? “We encourage all Reception teachers to visit our Pre-School leavers at the Nursery so they can see each child in an environment where they are relaxed and happy. To aid transition we send the school a copy of each child’s report and the transition document detailing each area of development, along with our very detailed Learning Journeys, which are profiles of the child’s development – which are then given to the parents as a wonderful reminder of these special early years at The Ark Nursery.
What makes the Ark nursery so unique? “We pride ourselves on being a home-fromhome nursery, where children develop high levels of self-esteem and confidence through loving and supportive relationships. Our team do not wear uniforms because we believe everyone is individual and are born with their own unique gifts and personalities. We are passionate about every part of nursery life and we aim to encourage children to be children for as long as possible.” What are the best parts to your job? “I love watching babies grow and develop through the Nursery into happy, healthy and confident Pre-Schoolers. It’s also very rewarding establishing good relationships with parents and assuring them that their children are in a safe, loving and stimulating environment. Over the years, I have helped families through difficult times and I particularly enjoy being of use in this area as it builds strong friendships and relationships. The 9th Stamford Dog Show and Family Fun Day The 9th Stamford Dog Show and Family Fun Day is being held on Sunday 14th September on the Stamford Meadows. The show is organised by Stamford Methodist Church with huge support from sponsors Pets Korner and Stamford Veterinary Centre. Unfortunately last year’s show had to be cancelled at the last moment, due to threatening weather conditions. Let us hope that we shall be blessed with a day of sunshine like we had in 2012. Every year this event draws crowds of dogs, and their owners, for an enjoyable day out with fun for all the family. Even if you don’t have a dog there is plenty to watch and take part in. In addition to the various classes for pedigree dogs there are the ever popular novelty classes and a variety of other attractions. These include dogagility courses, a ‘hands-on’ reptile tent, alpacas and many family and children’s entertainments as well as a variety of stalls. This event is again supported by Stamford Living. The Best in Show in the pedigree classes will be presented with a hand drawn portrait of the winning dog, courtesy of local artist Richard Agar. The best in the novelty class will be presented with a professional photo of the dog complete with rosette, courtesy of Shutterbox Photography. As well as the judged events there will also be a display of Hearing Dogs which are trained to help those in need of a close companion with these special skills. Malamutes and Huskies will also be on parade and the Labrador Rescue Trust will be showing their happy, re-homed dogs and some in need of re-homing. There will also be a demonstration by Military Working Dogs currently in service. A dog behaviour specialist will also be on hand to give advice. All proceeds from the show go towards the different projects which Stamford Methodist Church supports - the Glavanitsa Teenage Disability Orphanage in Bulgaria, The Carers’ Sitter Service in Stamford as well as the church’s Youth Outreach project. This year the show will also be supporting the Hearing Dogs for Deaf People. • Come along and support the 2014 Stamford Dog Show. LAND ROVER BURGHLEY HORSE TRIALS
A Celebration! Event Director, Elizabeth Inman has been involved in Burghley Horse Trials for over 30 years – she speaks to Antonia Scott about what makes this event so special ILLUSTRATION: KATIE CARDEW

Background The first Burghley Horse Trials were held in 1961, after the Marquess of Exeter heard that the three-day event at Harewood could no longer take place. With his renowned generosity and interest in equestrianism, he invited the British Horse Society to transfer the event to his estate. It was an instant success and the event has since hosted more international Championships than any other Horse Trials in the World. The first event attracted just 12,000 visitors who viewed 19 competitors tackle a cross-country course which would nowadays be considered little more demanding than that seen at senior Pony Club level. Today, the average attendance over the four days in September is 160,000 (peaking at 60,000 on the Cross Country Saturday) with an average of 80 competitors. Burghley Horse Trials is one of only six CCI 4*events in the world, the star rating denoting the highest standard of event (technically and administratively) and is considered to be the most challenging of all.

Phillips, who has a longstanding history with the event, having both competed here and designed in previous years (1989-1996, 1998-2000 and 2005 to the present.
Winning Competitors
coveted L’Année Hippique prize (voted for by riders from all over the world) an incredible seven times. The award also takes into account prize money offered, and with a top prize this year of £62K and a total prize pot, of circa. £225,000 it is a competition hotly contested by the highest level international riders.
Course Designers There have been just six course designers in the event’s history, including Bill Thomson who designed the very first track, some named features of which are still in existence today. The present designer is Captain Mark
William Fox-Pitt is Burghley’s most successful competitor, having won the Event six times. Virginia Elliott (nee Holgate) and Mark Todd (NZL) have each won an impressive five times over the years and Andrew Nicholson (NZL) has completed the event more times than any other rider, a staggering 32 times with three wins, four seconds and six thirds.
Royal Connections Burghley Horse Trials has been attended by Royalty on many occasions, the most recent in 2011 when HRH The Princess Royal presented the prizes, Princess Anne also rode at the event in 1971 when she won the European Champion title at a very early stage of her riding career; her daughter Zara Phillips, is the only child of two former winners to compete at the Event; her father, Captain Mark Phillips, having won the event in 1973.

Sponsors Land Rover has a long standing history with Burghley Horse Trials, having initially been the ‘Official Vehicle Supplier’ before becoming the title sponsor in 2005. During their nine year sponsorship Land Rover have become synonymous with this prestigious event and provide over 60 vehicles for use during the competition. In the heart of the showground, Land Rover is showcased with an innovative vehicle display and a testing off-road demonstration area providing an opportunity to sample the all-terrain capability of their vehicles.
Changes The success of the Horse Trials has been built on continuous evolution rather than revolution. Recently the media centre has been hugely upgraded, with dedicated broadband to enable photographers to upload to international publications and over 350 accredited international media and broadcasters represented. The shopping has developed over the years with the variety and quality of products having expanded and the renowned shopping village has grown from 66 stalls in 1961 to over 600 exhibits in 2013. A Green Lifestyle marquee has been introduced and The Foodwalk has been extended to offer a mouth-watering selection of produce. Many visitors make this their first call! There have been technical changes to the competition and in 2006 the steeplechase phase was dropped to comply with changes to the sport’s regulations. At the same time the start of the cross country was moved to an area in front of Burghley House which afforded wonderful views for television viewers. The digital age has brought much advancement and eight years ago ‘Burghley. tv’ was launched which offers an unrivalled ‘Video on demand’ service, now available all year round, including pre-event information on the cross country course. Last year viewers from 137 countries took advantage of this service. There is also a Land Rover Burghley Horse Trials App. And Social media is now of great significance to the Event and its sponsors.

“2003 was an outstanding year - when Pippa Funnell won the Rolex Grandslam and in so doing took home $250,000, an achievement never since repeated. Zara Phillips was having her first ride at the event and took 2nd place, missing winning the title by such a small margin. Everything ran well, from record crowds, superb weather and the publicity around the Grandslam win was a turning point in the sport internationally, with resultant media interest drawing worldwide attention. “Another milestone was our 50th anniversary in 2011. To commemorate, a cross country feature was constructed on the island in the lake, subsequently named ‘Anniversary Splash’. HRH The Princess Royal also made an official visit to the Event that year. “Other years are memorable but for less enjoyable reasons and 2008 will always stand out. The weather in the preceding few weeks had been exceptionally wet and this continued throughout the event – very nearly having to cancel the competition. We were the only televised sporting event that continued to run that weekend, but it did leave the beautiful parkland in a terrible state.”
Q&A with Philip Herbert, Clerk of the Course, and his son, Guy Herbert, Course Builder How long have you been Clerk of the Course/ Course Builder for? What are your main areas of responsibility? Philip: 33 years – I am responsible for the whole presentation of the crosscountry. Guy: 8-10 years – I am a one of the Course Builders, specialising in ground work. What changes have you seen over the years? Mainly the transfer from all fixed fences, to predominantly portable obstacles; plus the preparation of the ground the course is now fenced off all the time, mown, aerated, fertilised and irrigated.
How many Cross country jumps are there? Does every jump have an easier option? Approximately 30 jumps and no, not every obstacle has an easier option. How many miles is the course and what is the expected time each rider can take? The course is approx. 4- 4.5 miles and usually takes riders around 11 minutes to complete. What Cross Country safety measures have been put in place since past tragic rider/horse fatalities? There have been changes to the profile of the fences, with more brush and the use of frangible devices on post and rail fences. What changes to the course will there be this year? There will be changes to
most of the combination fences which are the most significant to the result of the competition. Do you have a particularly favourite/memorable year? Probably the years when the weather has been bad, and the whole Burghley Horse Trials team has pulled together to keep the Event running. We enjoy helping Capt. To get some idea of the increase in Chinese tourists to the UK, Visit Britain believes the 2013 figure of 200,000 will rise to 650,000 in 2020, an increase of over 300 per cent, and by which time they will be spending an annual £1.1 billion in the UK. Some months ago I started a consultancy, Reach Into China, which advises our clients how best to market to this new wave of Chinese visitors, and give them a better experience when they are here. We participated in the GREAT China Welcome event which launched the China Welcome Charter in March. Since then we’ve been advising organisations in the hospitality sector, ranging from country houses to London coffee shops, how to get more business from the Chinese tourists. LOVE OF HISTORY & CULTURE Chinese tourists like British culture, history, tradition, architecture, countryside and unique shopping experiences. So I immediately thought that Stamford would tick all these boxes, and others such as the River Welland, since proximity to running water is an omen of prosperity, clean air because the Chinese are hugely concerned about air pollution; they are also attracted by the schooling, as many Chinese parents want their children to be educated in this country. The benefit of attracting Chinese tourists to Stamford is simple…the money they will spend. The Chinese spend almost 10 per cent more than visitors from other countries, and purchase products that demonstrate their affluence and taste. So Stamford’s retailers, hotels and restaurants stand to gain additional income. Ultra high net worth Chinese visitors have been known to buy properties, yachts, private jets and classic cars while on holiday in this country, and it is common for Chinese diners to order several dishes to sample rather than finish. If given the right ‘visitor experience’ they will buy expensive gifts as a mark of gratitude. The Chinese travel during otherwise out of season periods, which is also an advantage. These are the two week spring festival which starts with the Chinese New Year, normally in early February; the first week of May; and the first week of October.

Nottingham Nottingham is a city that most of us know for shopping and the arts, but we seldom venture outside its inner core. In this walk, Nicholas Rudd-Jones takes you to through several of Nottingham’s delightful green spaces THE CONTEXT Nottingham is a mediaeval city that became wealthy during the nineteenth century through lace manufacture. The area that you see today called ‘The Lace Market’ is where trade was carries out and garments created. Nottingham, widely reputed as a garden town in the eighteenth century, had grown in upon itself since the 1780s as trade expanded, with very poor quality housing and sanitation. The much overdue Enclosure Act of 1845 finally changed that, allowing for expansion outside the city walls; and in the next forty years the population tripled to 150,000. The good news was that provision was also made for green spaces. 120 acres were allotted to the corporation in trust for the people of Nottingham for public baths and walks, cricket and football grounds, and a cemetery. This was in line with the provisions of the Act, which in turn reflected a growing recognition nationally of the need for `green lungs’ in the industrial towns. Parliament had adopted a standing order in 1839 that all future enclosure bills should make provision for open spaces for recreation. As a result, the Forest was largely preserved, the Arboretum was opened in 1852, and a number of ‘walks’ were created which effectively produced a green collar around the town. A visiting journalist wrote of how the `recreation walks - which are, in truth, almost a continuous avenue of trees - completely encircle the town, and afford a promenade of ten miles in extent… a proportion of open space that is still envied by other cities’. These open spaces are still in existence today - Elm Avenue, Corporation Oaks, Robin Hood Chase, Queen’s Drive and the Forest.

Set out from the cathedral heading down N. Circus St into the Circus, then exiting into East Circus St; then right into Park Row, at the end of which you will come to a flight of steps. Take these steps down into The Park, then a left into Park Valley, right into Lenton Rd, followed by a half right into Park Drive, which will take you to Newcastle Circus. Cross the green into Maxtoke Rd, left into Hardwick Rd, left back on to Lenton Rd, and almost immediately you will see a passage heading south out of the park Take this passage (Hermitage Walk) down to the main road (Castle Boulevard), then cross and turn right; cross over at the next bridge, take a left as soon after the bridge as you can and swing back onto the canal path and under the bridge you have just crossed. Plain sailing for a bit, as you follow the canal path, with the marina immediately on your left. Under a railway, a road, the River Leen, a big road, another railway and then it will be time to turn right across a footbridge. Once over the footbridge, turn right along Gibbons St, go under the railway line again and then left into Claude St. At the end, cross directly onto a footpath/cycle route, and this will take you up to the A6005 (University Boulevard). Cross the road to the university campus, and then bear SW along the south side of the lake, crossing by the little island to the north side.

Turn left and follow the lake on the north side to its end; then turn right, getting onto Beeston Lane and heading north; where the lane swings to the right, follow a path N with white railings on your right, cross a main road and enter Wollaton Park via the gatehouse. Head W towards the lake, then N to Wollaton Hall. From Wollaton Hall, walk east across the park along Lime Tree Avenue to the eastern exit. Cross the main road, head east along Wollaton Hall Drive, joining the A6200; cross over and take Hill Side, opposite and slightly to the left Turn left at Leen Gate and cross the River Leen again; take the next left into Gregory St, and then a right into Church St, which you follow it to its end (crossing Lenton Boulevard in the process); at which point it becomes Park St, and you should head north. Look out for a passageway on your right that leads into Harrowby Rd, and then take this road east, passing down another passageway on the other side of Harlaxton Drive which will get you to Pelham Crescent. Exit The Park by the North Rd gates and head east along the Derby Rd until you reach the complicated road system. On the other side of it, you will see the very distinctive blue building which marks the entrance to the cemetery SHORTER LOOP: If you have had enough at this stage, just keep bearing right along the Derby Rd and you will soon be back at the cathedral Enter the cemetery under the clocktower and proceed east to the exit in Waverley St; turn left up the hill and you will soon see the Arboretum entrance on your right. Enter and proceed in a clockwise direction Extra loop: (about a mile altogether) At the far end of the park, a foot tunnel goes under Addison St; follow this charming path until it meets Mansfield Rd, and then cross over and (slightly to the left) you will see Elm Avenue, which leads up to Corporation Oaks, from where you get a good view of the city; then retrace your steps) Exit the Arboretum, head down Waverley St, and then shortly take a right into Clarendon St; at the end of it cross over into Vernon St and you will soon be back at the cathedral.

POINTS OF INTEREST The Park. The Park is one of the most beautiful Victorian estates in the country. The 150 acre estate, which was once the deer park of Nottingham Castle, is full of classic Victorian mansions (Jesse Boot of Boots fame first had his home here) and retains much of its original character, including the original gas lighting network. The River Leen is a 15-mile tributary of the Trent, and you pass it twice on the walk; once, between Points 4 and 5 where it meets the canal; and again just before Point 8 where you walk alongside it; at points as it makes its way through Nottingham to the Trent it is culverted, and (on another day perhaps!) makes for a good exploration in its own right. Wollaton Park is Nottingham’s biggest park. Wollaton Hall was built in the late 16th century in an Elizabethan style with early Jacobean elements. It’s now the Natural History Museum, with a café. The General Cemetery dates from the 1830s, a time when many churchyards were becoming overcrowded, especially in towns and cities. Incredibly, by 1923 over 150,000 people had been buried on the site, and it was closed to new burials due to health concerns. After many decades of neglect it has steadily been brought back into the shape it is today; a very agreeable green space through which to walk, with lots of wildlife. Nottingham Arboretum was designed and laid out in 1850 under the supervision of Samuel Curtis, a botanist and horticultural publicist who had previously been involved with the layout of Victoria Park in the East End of London in 1842. Today it is a delightful and well maintained space.

Evergreen Angels The Evergreen Care Trust is pleased to announce the launch of a new pilot service – Evergreen Angels – meeting the needs of older and vulnerable people in their own homes. The recent change of strategy in the provision of support services by Lincolnshire County Council has created a gap in provision which has impacted on both the residents of sheltered housing complexes and the wider care network. The new Evergreen Angel service is targeted to provide a replacement supportive presence to check on wellbeing, safety and security in the home. This 52 week, seven day service, 8.00am – 8.00pm is planned for launch on 3rd November for the residents of Stamford. A successful outcome will ensure a future roll-out of this service across the Bourne and Deepings area. The Trust needs £30,000 to launch this project through the first year before it becomes self-sustaining. The Evergreen Care Trust was founded in May 2005 to meet the unaddressed needs of older and vulnerable people not catered for by statutory provision. The Trust now operates eight services across Stamford, Bourne and the villages, with the model being replicated in Sleaford and the London borough of Bexley. The new Evergreen project will provide a regular human presence. Evergreen Angels, working in pairs, will visit each individual at least once a month to check wellbeing, smoke and CO2 alarms and home security. There will also be the option of more frequently arranged visits according to their needs and wishes. Angels will also be available for emergency call out, and be a contact for the LILP Wellbeing service. A particular innovation of Evergreen Angels is to extend its availability to residents living in other private complexes and those living in their own homes within the wider community. This new relationship with the Evergreen family will give clients a re-connection with their local community. The recently implemented Wellbeing Service was introduced to replace the Scheme Managers. Under the new system of remote support provided by LILP (Lincolnshire Independent Living Partnership) a human presence is only provided by a Rapid Response team in the case of nonmedical emergencies. It is Evergreen’s experience, from other Evergreen projects, that a meaningful and reliable personal presence does much to alleviate feelings of isolation and loneliness as well as resolving practical difficulties. Interventions at a crucial point will often prevent escalation into crisis and so reduce the demand on emergency services and unnecessary hospital admissions. The other day I met a friend at The Fine Food Store in Stamford to try their excellent brunch menu. It’s highly recommended. While there, I found myself doing some maths… 28% + 40% +30% = 98% tax relief. Having figures floating around in my brain is a hazard of my job, and the sum I was doing describes a fantastic inheritance tax planning scheme. Now, inheritance tax is affecting more and more of us. This scheme is particularly good because capital gains on assets transferred into the scheme are deferrable for capital gains tax purposes. Also, capital gains tax (CGT) is not payable on death, so if held till death the CGT is never paid. That means an impressive 28% tax saving. In addition, using this type of scheme means that after two years assets are deemed exempt from inheritance tax if held at the time of death. Which means another 40% tax saving. And because this is an Enterprise Investment Scheme it qualifies for 30% income tax relief against your personal income tax liability. Hence another 30% tax saving. Celebrating 40 years in the estate agency business Robert Goodwin reflects back over 40 years in the estate agency business, helping the local population sell and buy homes!
“L
ooking back has got me thinking about the biggest changes and developments in our industry over that period, and this surely has to be how technology has totally changed the face of the industry. Younger buyers and sellers accustomed to today’s world of internet, emails, mobile smart phones etc will probably not believe how the property industry and estate agents used to work when I started in the profession. I began my career as a trainee estate agent for a firm of Chartered Surveyors and a very successful Estate agency in Kettering, where the most sophisticated item of technology used was the telephone! The market at this time was quite busy, yet the process of marketing someone’s house was so labour-intensive that looking back it was quite ‘medieval’ by comparison to today. The office opened between 9.00am and 5.00pm BUT also closed for an hour for lunch. On Saturdays we closed at 12.00 and fell into the pub. We became one of the first to open all day Saturday and I remember it was so quiet initially, that when my friend down the road, working for a competitor, also started opening on Saturday we would while away the hours phoning each other pretending to be buyers with outrageous property requirements!

The Senior Partner had a habit of calling on all the offices in turn once a week in his lovely Rover 3500 P5. He used to choose one of the younger members of staff to drive it round the town to keep it warm whilst he was in a meeting! What a treat! With each circuit we would drive past the office and one of the secretaries would stand at the door waving us back or to continue with the drive about! All the Partners were called by their Surname. There was at last a big day in my life when, at the bottom the stairs, the Senior Partner suggested I could call him by his Christian name – but not in public!!! Even now when I meet him I struggle to call him by his Christian name. It was all very quintessentially professional to the extent we were never allowed in the front office without a

jacket and bear in mind no ‘air con’ then! Fees were dictated by the use of an RICS ‘little book of charges’ which had a scale of charges depending on the sales price that everyone had to adhere to. It wasn’t until later that a government review decided this wasn’t very competitive so they let us negotiate our own fees - these immediately went up as the scale fees had been so low, possibly because the house sales side of Chartered Surveyors was a very small element of the income and there were very few ‘Estate agents’ just selling property alone.
Preparing property details Property details were prepared by us (normally with two negotiators going out to a listing) using an extendable ‘surveyor’s ruler’ to measure room sizes; and the description of the rooms and accommodation was written out by hand and then dictated into a tabletop dictating machine to be transcribed by a secretary. I recall many incidences of ‘measuring-up’ some of the larger properties, trying to maintain an air of professionalism whilst struggling with painful cramps in my hand and arm, the result of furious writing in my own style of shorthand! Only years later did we use battery operated Dictaphones and rolling tape measures which allowed us to measure up to a hundred foot! Initially the photographs were taken by a professional photographer and the window cards were all prepared by a sign writer and details printed in the company’s own printing department with a hand operated Gestetner machine. There were no photocopiers, faxes or Property Mis-description acts, for sale board legislation, HIPS, EPCs Money Laundering, Anti terrorist checks, or Health and Safety Regulations to comply with and negotiators erected their own for sale boards. We eventually had a photocopier on trial in one office but the print department, seeing the demise of their jobs refused to allow us to have paper for it, so an undercover job one evening was staged to nick some paper. The copier didn’t last long, it caught fire due to our excessive testing of it, but another one was
delivered and that was the end of the internal print department! Most sellers were happy with the black and white photographs on their property particulars and accepted that colour was the prerogative of the luxury end of the market only!
Photography Years later we had a firm’s camera which entailed taking the film roll to a local developer. The concept of reviewing digital photographs immediately and deleting where appropriate and uploading to on screen particulars was as remote then as day trips to the moon! I distinctly remember that after every measure-up, I had to take the black and white camera film to a local chap who made a lucrative business from a small “dark room”. Here he would develop a black and white “dot screen” photo suitable for attaching to the sales particulars so that they could be copied without distorting the image. The cost of producing this important “dot screen” photo and two smaller images for advertising purposes was as I recall £7.95 which was pretty expensive! For those properties deemed worthy of colour photography the film was posted to another company who would produce 20 – 30 small colour images with removable sticky strips for attaching to the sales particulars. While this unthinkably protracted process was taking place, the branch secretary was wading through my often eligible written instructions and typing on a type writer (we had graduated to an electric one by then!) the master copy of the sales particulars. In all, preparing a set of property details with everything involved would take anything from 4/10 days depending how busy we were and how quickly the photographs took to come back. Fortunately there was no requirement for vendor approval of the details prior to marketing at that time. The details were sent with a covering letter by second class post to the seller and if they wanted to make any change, which they rarely did, then they would scribble on the particulars and send them back to us!
So how did our applicants and buyers get to know about the houses we were listing? Today our customers have the luxury of up to the minute email alerts which can be opened to reveal the sales particulars in PDF format as soon as they are available. Back then we relied heavily on the telephone to notify applicants when new properties became available. However at a time when mobile phones were not in use it was often very difficult to communicate effectively with the market. We all had ‘hot boxes’ with applicants’ individual cards in them, with their requirements hand written. These were our life blood and some negotiators would take their hotbox home to stop other negotiators pinching their best applicants. Envelopes carrying sales particulars were addressed by means of a hand operated “Roneo” mailing machine. This effectively printed a buyer’s name and address details by means of carbonated paper. The margin of error was complicated by the fact that the carbon paper often tore or smudged the address details. However, people eventually received their sales particulars in the post and we sold property despite all the odds. I look back on this era in my estate agency career and compare the almost complete absence of technology in running our business to how heavily we use technology today to great success.
The new technologies The internet and email have revolutionised the estate agency world, as it has most businesses. Marketing via social media options like Twitter and Facebook and employing mobile technology in the form of “apps” have facilitated a truly, global twenty four hour marketing and presentation process. Yet I guess the reality is that we are only scratching the surface at the moment!
But ultimately it’s still about the people I have to say, after so long in this business, I have lost none of my enthusiasm for the job. The basics are still the same but, every property is different and every seller and buyer is different and therefore no two situations are ever the same. Dealing with the public is what makes my chosen career so enjoyable and interesting but there are plenty of tales of the strangeness of people’s actions and even after 40 years I still come across circumstances and hear myself saying ‘I’ve never had that happen before!’ – more of those tales another time!! Simon Grace & Tom Perkins, Co-Founders of Charles & Dean www.charlesanddean.com How it all began..... Simon Grace went to school in Oundle where he showed a strong work ethic right from the start, often having two or three part-time evening and weekend jobs at a time and clearly remembers his first ‘entrepreneurial deal’ as a young teenager - sourcing the on trend American ‘Von Dutch’ baseball hats from a contact in the US, organising a shipment over to Manchester, then asking a local friend to drive up and collect them (as he was too young to have a driving licence!) before delivering them to Peterborough where he had already sold them to a designer clothing store 24 hours earlier, making himself his first £1,000 profit. The entrepreneurial seed was sown and Simon was destined to ‘think big,’ choosing a career path that bucked the trend his peers followed to university, but instead head to London to work hard and hopefully get rich. The capital city was certainly paved in gold for a while and whilst working as an Estate Agent, Simon made some shrewd business decisions, joining a Property Investment Education company, becoming a Shareholder and enjoyed numerous nationwide public-speaking engagements. Simon bought his first property at 19 years old and ten years later, now has a personal property portfolio of over 240 units in Lincolnshire. He has a property business based in Lincoln and still mentors investment clients every month. Tom Perkins also grew up locally, in Easton on the Hill and attended the same school as Simon in Oundle. At 14 he became driven to be financially independent, earning wages working at his village restaurant and offering his services as an ‘odd job man’ whilst still a student. As a young teenager, Tom was

passionate about playing ice hockey and at 17, turned semi-professional and represented Great Britain in 2007. Tom studied Sports Therapy at university and, once qualified, gained a job at Peterborough United Football Club. Tom’s entrepreneurial mind was always working and after various small scale successful sales paths, Tom decided to leave Peterborough United and set up his own Sports Injuries Clinic in Stamford – ‘Body Management’ which currently operates with over 1,000 regular clients. However, after being asked to help sell a high-end car for a family friend, Tom connected with Simon on Facebook and together they began to realise their combined potential network value and shared ambition. Together Charles & Dean was formed in 2011, originally as simply a high-end car sourcing company; however after looking at the market and realising that the majority of finance agreement rates with dealerships were high and often had very poor customer service, Simon and Tom realised their niche – to be a transparent car finance brokerage, offering excellent service with flexible terms. They then identified an opportunity in the market for Agricultural and Asset Finance the following year and in 2014 have moved into Commercial Property and Development financing. Their company’s rise has been impressive and Charles & Dean are accredited by the National Association of Commercial Finance Brokers.

Simon says,” I would ideally like financial freedom for my family and a legacy to pass to my children. The move from primary to secondary school is a big step, so it’s worth attending open evenings to see what’s on offer. Nicholas Rudd-Jones does his homework on schools in the Stamford catchment area Arthur Mellows Village College Tel: 01733 252235; www.arthurmellows.peterborough.sch.uk This respected academy in Glinton for 11-18 year olds gained an Outstanding rating from Ofsted and holds Specialist Status in Technology. Courses cover both the academic and vocational, with exam results scoring well above the national average. The college facilities have expanded to include new music, science, ICT and media rooms and a new innovation centre for engineering. Students are encouraged to participate in music, sports and performing arts alongside Duke of Edinburgh’s Awards. The open evenings are Wed 1 October for Year 7 and Wed 12 November for Sixth Form. RCC provides academic and vocational sixth form education, including A-levels and BTEC and Apprenticeship Foundation courses in topics such as sport, healthcare and construction. Students also have the opportunity to take the English Baccalaureate. Children enjoy a wide range of after-school activities in the sporting, academic and cultural arenas. Parents with children in Years 4, 5 and 6 can see the school in action during a week of open mornings from 17 September. A ‘diamond’ structure means children go from the co-ed Junior School to single-sex education at Stamford School (boys) on St Paul’s St and the High School (girls) on St Martin’s from ages 11-16. Then, at Sixth Form, the schools become co-ed again. Principal Stephen Roberts explained: “This allows for a highly tailored curriculum, without distraction or gender-typing during the GCSE years but with myriad mixed extra-curricular activities beyond the classroom”. Junior School pupils automatically gain a secondary place; otherwise entrance exams are held in January. A range of scholarships and means-tested bursaries are available. All three schools offer flexible boarding although the majority are day pupils. Last year, Stamford School opened a new pool and sports centre, for use by all the schools. In the autumn, the Performing Arts Centre will open, a focus for music and drama for all pupils. A schools-wide WiFi network has been put in place to allow use of technology such as iPads in the classroom. At the High School, the Home Economics rooms are being refurbished and an atrium and welcome area built at the rear of the school. R
eaching a year in their new premises in a period building on Broad Street, the long established town centre nursery, The Children’s Garden is a haven of play for the little children who are lucky enough to go to there; and a splendid source of decorative and play ideas for all parents of young children. Established originally in 1998 by Claire Kenyon, in Silver Lane, the nursery which is managed day-today by Christine Abbott has grown to 20 full & part-time staff, including cooks, admin and childcare staff, since the move to their spacious new premises. In a completely revamped building with large enclosed walled garden, the nursery now has four working rooms arranged according to the children’s age and development, ranging from baby, young toddler, older toddler and through to pre-school. Ed Kenyon (Claire’s husband), who runs Bush craft sessions every Monday for the children, tells me, “We wanted to create a cosy, homely feel. A home as opposed to an institution.” From a stance of only using furniture, materials and accessories they would be happy to have in their own home and for their own three children, all of whom have attended the nursery, the couple have created an inspirational and inviting space.

WHAT THEY DID • Move the kitchen to a street-facing top floor room. • Install a state of the art restaurant quality kitchen, complete with dumb waiter to convey food to the various childcare rooms. • Create a welcoming walk-in reception (no more hanging about in the rain waiting for the door to be answered!), which serves as an information hub, with pigeon holes, notice boards, free Wi-Fi, coffee machine, seating & buggy space. • Re-arrange rooms to ensure most childcare rooms have direct link to the outside. • Install non-slip, foot friendly oak flooring throughout. • Re-configure the large garden space.
The building, which has had previous incarnations as publishing offices and as an old inn, has been re-fashioned with flair, to create a light, bright, child, parent and staff friendly environment. The team now has a dedicated room for their own use, which doubles as a training room. In the ground floor Baby room, a quiet side room is furnished with a large comfortable sofa and a row of accessible little ‘day beds’, which tired little ‘crawlers’ can climb into themselves for a much needed daytime nap.

In an annexe to the pre-school room a fully functional child size kitchen with working dishwasher and kitchen sink, where the children eat at oil cloth covered tables, allows the children independence in choosing and serving the food they eat and to actively participate in meal times, instead of simply being presented with plated food. The children are encouraged to get involved in getting out and clearing away plates and cutlery. A mini-sized dishwasher can be stacked with dishes, continuing practices which children may be involved in at home or introducing them to practical, everyday skills which foster development and self-esteem. S
moking fish at home is fun and exciting and, as with most things in cooking, it’s not actually as hard as it seems. With a little practice and a ‘have-a-go’ spirit, you’ll soon be producing dishes that you thought were out of reach. I’m referring here to hot-smoking, which is a different process to coldsmoking. Hot-smoking actually cooks the food, whereas cold-smoking doesn’t cook it but just dries it, while giving it a smoky flavour. You’ll find the basic directions for hot-smoking at home below. To source your sawdust, try a quick online search – you’ll find plenty of vendors, but do make sure the wood shavings are pure and designed for culinary use. With this recipe you could use Rutland Water trout if you wanted to give it a local twist. And for the ultimate DIY experience, catch the fish yourself!
Hot-smoked sea trout, French-style peas and broad beans, and mackerel caviar. Serves four • Hot smoked sea trout • 4 x 100g boneless sea trout fillets • 4 tablespoons smoked Maldon salt • Juice of half a lemon • 60g smoked mackerel caviar • Two cups of hard-wood sawdust (try oak or alder) 1. Sprinkle two tablespoons of the smoked salt onto a plate and place the prepared trout fillets on top. 2. Sprinkle the remainder of the Maldon salt on top of the fish fillets and allow to stand at room temperature for seven minutes. 3. Remove the salt from the fish, wash under cold running water and pat dry with kitchen paper. 4. Place two large cups of sawdust into a large saucepan. 5. Place a thin wire rack above the sawdust and put on a high heat. If you have a sensitive smoke alarm, you need to open as many windows and doors as you can.
6. When the wood starts to smoulder, carefully place the trout fillets on top of the wire rack. 7. Hot-smoke the trout for around five minutes until pink and moist. 8. Remove the fish from the smoker and serve with the French-style peas and smoked mackerel caviar. French-style peas • 1 knob of butter • 1 heaped teaspoon flour • 285ml chicken or vegetable stock • 4 spring onions, trimmed, outer leaves discarded, and finely sliced • 200g fresh or frozen peas • 200g fresh or frozen broad beans, blanched and peeled • 2 little gem lettuces, sliced • Sea salt • Freshly ground black pepper • Squeeze of lemon juice 1. Add the oil and butter to a pan, heat and stir in the flour to a roux consistency, then gradually add the stock. 2. Bring to the boil and add the spring onions, peas, broad beans and little gem lettuce. 3. Cook out for a few minutes in the saucepan, then serve with the hot-smoked trout and a squeeze of lemon juice.

Mountains of Sweet Heat Chilli Sauce A ‘chilli hot’ summer’s day at the Heckington Show, the largest village show in England, where the intimacy of a village setting and the expectation of a national stage, reveals an exciting new food producer. Sarah Lyon reports
H
omemade in Lincolnshire, Sweet Heat Chilli Sauces and Jams have been turning up the heat on their sauce and jam production, taking in shows and events across the country. When I caught up with Darren and Claire Jones to talk chilli sauces and jams they had moved on from the Heckington Show to a show in the New Forest with the intention of then heading up to Cumbria for The Lakes Chilli Festival. Digging a little deeper reveals a thriving group of enthusiasts for all things chilli. Visit youtube and you too can watch a review by the Clifton Chilli Club in Bristol of Sweet Heat Chillis Naga Sauce. “We have designated tasters that regularly come out to give feedback on our jams and sauces,” says Claire. “Recipes are created by trial and error and we work at getting just the right mix of sweetness with the heat of the chilli. All our fine chilli products are handmade at home and in small batches to preserve the flavours and textures. Using the best ingredients, we make, pack and sell all our own products so that we can make sure that the quality is consistent.”
At the age of 19 Darren lived with his sister in Mexico for eighteen months and returned back to the UK with a passion for chilli. Twenty years later and, disillusioned by the poor quality of chilli sauce found in the isles of supermarkets, Darren prepares his own sauces. His first attempt, Claire recalls, was a Piri Piri sauce, so hot that it brought tears to his eyes. That was two years ago and a range of sauces and jams have followed. On the strength of their success, Darren and Claire have given up their jobs to work full time on this new venture. “There was never a business plan, everything has moved forward by customer feedback,” says Claire. Natural freshly grown chillis, sown and grown, in Boston, Lincolnshire are the key ingredient to Sweet Heat Chilli sauces and jams. “Many of the store-bought sauces are made using a chilli extract manufactured using a horrible chemical process,” says Claire. Kevin at Ravensdale Nursery grows habanero and naga varieties under a third of an acre of glass green houses.

Mountain’s Boston Sausage from Boston, Lincolnshire has been steadily gaining a national reputation for undeniably great sausages. I caught up with them at the Lincolnshire Show where the queue to their mobile old fashioned fronted sausage stall never diminished throughout the day. A conversation with Samuel Mountain gave more. Samuel explained, “My father took over the business from his father 35 years ago. In doing so he wanted to specialise. The decision was to specialise in sausages. My father tried loads of recipes and had friends around to taste. Our Boston sausage is our own version of a Lincolnshire sausage.” Samuel spends most of his week at Borough Market in London where Mountain’s sausagemeat burgers are a real sensation. Harry’s Place Alysia Anderson enjoys fine food in Great Gonerby
O
n our recent wedding anniversary, my husband and I headed north to Harry’s Place thinking that a restaurant seating only ten would be suitably romantic. We couldn’t have asked for a more intimate setting, as on arrival we discovered we had the dining room all to ourselves. Mementoes of the restaurant’s culinary success, which has included a Michelin star, adorn the walls and mantelpiece alongside family portraits. Chef Harry Hallam and his wife Caroline, who assists him in the kitchen as well as being front of house, have run the restaurant for 26 years from their elegant Georgian home. Caroline greeted us with a smile and beautifully handwritten menus. Over hot pastries of feta, tomato and basil we perused the choices, just two per course. The emphasis here is on fresh, seasonal ingredients, exquisitely prepared, and the quality and price reflect this. A fresh tomato soup with pistou sounded delicious yet we couldn’t resist the other starter: an intriguing concoction of chilled chicken livers in sherry aspic with candied lemon peel. The jelly was a triumph: redcurrant and cayenne providing a punchy counterpoint to the richness of the livers. Dainty salads of beetroot, peppers, radish and avocado then appeared: intended to accompany the mains but impossible not to nibble before the

t is not so long since we reviewed Oundle Mill, but a new head chef, Carl Long, took over in April and we were keen to see if things had changed in one of the few local fine dining destinations. My colleague Helen and I arrived on a sunny late summer’s day. We sipped cold drinks in the beamed bar area, and tried some more-ish beetroot popcorn and candied salted almonds. At present, while Carl Long assembles and trains his new team, the menu is relatively short. Helen chose a chilled Granny Smith and Cucumber Gazpacho and I opted for the heirloom tomatoes, black olive tapenade, organic halloumi, rocket and basil oil. We were taken to our table when the starters were ready – service is always very smooth and professional here. Our table was situated under a window with a view over the river, reeds nodding gently in the breeze and a sense of calm. It is a very relaxing setting at the Mill. My starter was a brilliant medley of strong flavours: the heirloom tomatoes really stood out. There was a morsel of halloumi in a fried crumb, and I enjoyed the robust flavour of the olive tapenade. Helen’s Gazpacho was “sharp and refreshing,” and she really enjoyed this unusual take on a classic dish. My main course was Cornish Plaice, New Potato, Heritage carrots, baby onion, celery and chervil. The portion size is heartier than in the past, and the presentation less refined. My chunky fish was pleasant, just a touch dry, but there was a good, interesting mix of vegetables and flavours. Helen’s Gressingham duck with Bombay potato, tamarind,
turbot and steak arrived. My fish was delicious, its tangy sauce surrounding a topknot of samphire and poached egg. The Aberdeen Angus fillet was pink and tender, with kicks of flavour from tarragon and olives. Highlights were the thymeinfused cherry tomatoes, Caroline’s speciality, which burst sensationally on the tongue. We enjoyed a Louis Jadot red from a wine list carefully chosen to complement Harry’s cooking, followed by a glass of superb dessert wine with pudding. The hot apricot soufflé was so light it was like eating a cloud. Caroline divulged the secret: no flour. The prune and Armagnac ice cream was also excellent and, although replete, we felt the cheeseboard of 13 varieties simply had to be tasted. A selection of French and British, they arrived at the perfect temperature and texture. Harry emerged from the kitchen at the end for a chat: another personal touch in this most intimate of venues. watermelon, cashew and spring onion was an attractive plate of food. She found the flavours slightly sweet, but enjoyed the tender duck, which she accompanied with a glass of chilled Sauvignon Blanc. In the past, dessert at Oundle Mill has been outstanding and our experience today did not disappoint. Helen had the Morello Cherry Pavlova pie, pistachio ice cream and fresh cherries. It looked beautiful and was a real treat, each element well executed. My peach soufflé, sherbet, blood peach sorbet and almond meringue was equally impressive. The small scoop of sorbet was a real flavour burst and there were some lemony shortbread crumbs sprinkled over the plate which were a perfect addition. “We are still fine tuning the menu, as I’ve only just got my team behind me, but the aim is to produce very fresh, British food with some twists on classical combinations and eventually I will push it a bit further,” explained Carl. Our experience was of a young team at the start of a promising journey. Local distilling The launch of the region’s third craft gin distillery reflects a wider trend, says Matt Wright…
A
craft gin distillery with accompanying ‘gin school’ has opened in Nanpantan near Loughborough, Leicestershire. The 45 West Distillery, which produces Burleigh’s Dry London Gin, is the third local gin distiller to open in the last few years, following hot on the heels of Warner Edwards in Harrington, Northants, and Two Birds in Market Harborough. The 45 West Distillery and its new gin school, where guests learn how to make their own ‘Mother’s Ruin’ in small desktop stills, is further evidence of the golden age we’re in for British craft distilling, winemaking and brewing. Never before have so many good quality beers, ciders, wines and spirits been produced by so many small, passionate, independent makers. Burleigh’s Dry London Gin is made by Jamie Baxter, who makes up to 650 bottles of Burleigh’s gin a day in ‘Messy Bessy’ – the name he has given to his copper pot still situated in the heart of Leicestershire’s Charnwood Forest. Jamie is a passionate distilling expert who previously helped to create Chase vodka, named best vodka in the world at 2010’s San Francisco World Spirits Competition. enhanced the quality and image of gin through his Worshipful Company of Distillers and later, King William III, also known as William of Orange, actively encouraged the distillation of gin and other English spirits.” After the history lesson, Jamie took me through the botanicals that go into his Burleigh’s Dry London Gin. By law, gin must contain juniper berries – they provide the overriding flavour and aroma – so they are the starting point. The next biggest ingredient is coriander: juniper berries and coriander seeds typically make up around 90% of the botanicals used in all gins. After these mandatory ingredients, Jamie has followed his expert nose,
taking inspiration from the woods near his new distillery. Growing nearby are silver birch, iris, dandelion, burdock, angelica root and elderberry, so these are among the many botanicals that go into Burleigh’s Dry London Gin. After sniffing each ingredient in turn, I was eager to taste the finished product. To my palate, the resulting taste of this new locally produced gin is extremely well balanced, with woody, earthy undertones and a pleasingly long, dry finish. In good spirits After many years of being a distillery-free zone, our region is becoming something of a spirits hotspot. Two Birds gin, vodka and absinthe were first produced by Mark Gamble and his partner Lyn Taylor in Market Harborough in 2013 and recently won a gold medal at the Craft Gin Awards 2013. Meanwhile, Warner Edwards distillery, located on Falls Farm in rural Northamptonshire, was set up in 2012 by old friends Sion Edwards and Tom Warner. Warner Edwards’ Harrington Dry Gin, which won a Silver Medal in the San Francisco World Spirits Competition, contains ten ingredients, some of which – such as elderflower - are sourced from the farm in Northamptonshire. The water used to make Warner Edwards gin comes from a natural spring just yards away in the village. At the heart of Warner Edwards’ distillery is a bespoke Arnold Holstein copper still, christened ‘Curiosity’ by Tom and Sion, which is housed in a converted barn on Falls Farm. “‘Curiosity’ is equipped with eight bubble plates and a patented catalyser that binds cyanides, ethyl carbamates and reduces acidity,” says Tom Warner. “This enables our wonderful ingredients and spring water to be distilled and produce smooth and tasty spirits for all to enjoy!”

A Pickled Village Recipe: The Hot Blooded Chicken Broth There’s something so very soothing about this aromatic chicken broth. It’s the restorative bowl of goodness that sorts you out on a Sunday night after a weekend of indulgence. You can vary the greens depending on what you can get your hands on. The Pickled Village’s Hot Blooded Breakfast (a blood orange marmalade with red hot chilli peppers) gives it a mellow kick but for those who like it feisty, you can add a good squirt of sriracha (or chilli) sauce at the end. Method: Preparation time: 5 minutes, 1. Preheat the oven to 200°C/Gas 6. Cooking time: 30 minutes, Serves: 2 2. Warm 2 tablespoons of the Hot Blooded Ingredients: breakfast marmalade and mix with the soy • 2 tablespoons Hot Blooded Breakfast sauce and fish sauce. Place the chicken thighs • 2 tablespoons soy sauce in an ovenproof dish and coat generously with • 1 tablespoon fish sauce the mixture. Add the chard to the broth and allow to wilt. Divide the noodles between the two bowls, top with the chicken and ladle the stock and chard over the top. Serve with a dash of soy sauce and a squirt of spicy sriracha (or chilli) sauce

The Patient Group at St Mary’s Medical Centre The Patient Group at St Mary’s Medical Centre is looking for new members to join its active committee. The Group has been running since 1999 and works hard to raise much-needed funds to help the surgery purchase items of equipment - including medical equipment - that would not otherwise be covered by core NHS funding. Over the years the Group has raised over £50,000 and purchased more than 70 items including blood pressure monitors and an ECG, a dermatascope and camera and an automated patient check-in screen. The Group will shortly be purchasing new chairs for the waiting areas and consulting rooms and new signage for the Practice car park. Recently, the Group was awarded charity status and the committee is looking for new volunteers to help expand the Group and continue its good work. The Group is open to any patient registered with the Practice over the age of 16. The Group meets every six weeks or so to discuss the services and support provided by the Practice and to offer feedback. The Practice also asks the Group for feedback on any changes that are being
or new services that are being developed to ensure that they meet the needs of their patients. There are many ways that you could get involved – maybe you have a particular skill that you could share with the group or you might be interested in volunteering at the annual flu clinics or helping to run the bookstall or raffle. They are currently looking for ideas for new projects that the Group could become involved in and would welcome your thoughts and ideas. May be you would like to help put together or run a social event or help fundraise for the Group. Everybody is welcome! The play uncovers a forgotten corner of local history immediately prior to WW1, when the welfare state was in its infancy and fierce local opposition greeted the arrival of the first ‘Panel doctors’ in the Fens. Hilary says, ‘I first heard about these remarkable events from a GP in Wisbech many years ago when I worked in the
NHS and the story has haunted me ever since. I have used the bare bones of the facts as the foundation of the play, fictionalising the main protagonists and creating new characters. Lansbury Hall, Blackfriars Street Older residents of the town will recognise the name: younger ones are more likely to know it as Cummins Social Club. As plans are in for a new building, Sue Lee and Jean Orpin record its history. George Lansbury MP in the 1930s The Site Blackfriars Street acquired its name because in medieval times it led to the friary buildings of the Dominican friars (known as the Black Friars because of their clothing). This whole area underwent development throughout the 19thC and a Primitive Methodist Chapel occupied the site of Lansbury Hall. It was known as the Iron Chapel because it was built entirely of corrugated iron including a steeple. Later this building was extended and for a short time it became a roller skating rink. By 1916 the building was a cinema, “The Picture Palace” and was also used for variety shows. In 1920s a fire destroyed the building.

The Labour Party In the early 1930s the Labour Party in Stamford was growing. There was a by-election in November 1933 which the Liberal Party did not contest and Arthur Gray, a poultry farmer from Caythorpe, narrowly missed winning the seat for the Labour Party with 47% of the vote. Following this it was decided to establish a Labour Hall to house the local Party headquarters, function rooms and a social club where members could meet. George Lansbury Lansbury had been a Labour Party member since 1903 and an MP from 1910-12 and then again from 1922. He was always a Christian Socialist following his Christian ideals rather than the teachings of Marx. Upholding his strong principles twice landed him in prison. He supported the Suffragettes and was a pacifist which led him into conflict with others in his party. In 1931, the Labour Party did disastrously in the General Election winning only 46 seats – Lansbury was the most senior and popular figure to retain his seat and became leader of the Labour Party. He gave his full support to Gray in the Rutland & Stamford by-election. Lansbury Hall Money was raised for the local Labour Party by running concerts and other events in and around Stamford so they were able to acquire the site between Blackfriars and Wharf Road in

1934. The building was constructed by Brick the builder from Broad Street and was opened in 1935. It was named in honour of the leader of the Party who came to Stamford to open it. Over the next 15 years or so Lansbury Hall was frequently used by the Party. There were meetings, May Day Rallies, whist drives, fundraising events and the Labour League of Youth met there. Many also attended dance classes there in preparation for the Hall`s greatest attraction - the regular Saturday dances. The Band for many years was The Black Diamonds led by Will Darnes whose day job was running his men`s outfitters, Suitall, in St Mary`s Street. Newage and Cummins Social Club The Labour Party bought 3 St Mary’s Place in the 1940s and moved there in the 1950s using the ground floor as their headquarters. Lansbury Hall became A &S discount store then Newage Social Club. When Newage was
taken over by Cummins in 1985, it became their Social Club. For over another forty years the Club was the centre of the social life for many people in Stamford. There was a fee for membership (and for some events associate membership was available) but the benefits were many with the bar being less expensive than the pubs and a variety of activities on offer regularly – crib, dominoes, darts. Local groups like the British Legion and the Jazz Club used the facilities and it was the centre for a number of charity events. On Saturday nights it could be packed with up to 900 members for live entertainment. Sadly, as the workforce at Cummins was reduced, the club was underused and despite spirited protest the decision was taken to close the building and sell the site which now awaits redevelopment and a new use in the future. April Carrol; Principal, New College Stamford A
s the sun blazed and the college ticked over at a low level during the summer break, April Carrol was freshly ensconced in her spacious office busy getting her feet under the table, two weeks into the job when we met. Interview perfect, April quickly reeled off her resumé, when asked about her background. A career of 22 years in Further Education (F.E.), starting as an hourly paid teacher of history B.A. History North London Polytechnic), she has, “literally done every role, starting at the bottom” she says. She progressed by branching out into business & I.T. and then taking in curriculum management and quality development roles before securing a post as Deputy Principal of Sussex Coast College, Hastings, where she was instrumental in the college’s recovery from an inadequate Ofsted grading in November 2011, to outstanding for leadership and management, and good for overall effectiveness in January 2014. “I’ve had a long career, which has been exciting and with lots of changes,” she summarises. Change is a recurring theme in our discussion. On a personal level, April tells me she is a Londoner of Caribbean origin. This has informed her attitude to education. Her parents came to the UK in the 1950s/60s and regarded education, particularly of their daughters (she has four siblings; two sisters and two brothers) as an important means of securing economic independence. She recounts her mother never allowed them a day off school sick. A studious child, she enjoyed reading and studying and was the first in her family to get a higher education degree. Do you do any teaching nowadays? It’s difficult to do as a Principal due to the regular time commitment required. I can’t guarantee to be available every week at a certain time due to my external work, which would make it unfair to students. However, I keep up my personal development by doing probono F.E. development in South Africa through my husband’s company and I mentor staff in other institutions. I’m also an inspector for Ofsted, so I’m very keyed into what outstanding learning looks like. What do you see as the biggest challenge for New College Stamford (NCS)? NCS has a bright future. It is financially sound and has growing student numbers (currently c.2000 16-18 year olds and a further 3-4,000 19 plus). I’d like to develop engagement with employers, apprenticeships and vocational opportunities as well as growth of academic provision. We can offer an alternative to school. You will be treated as an adult and expected to manage your own learning with our support. Our aim is to encourage and motivate to achieve at the highest level. The new skills minister, Nick Boles, is our M.P., which is very

exciting. We’ve already made contact for him to visit the College. A new Principal can mean testing times for teaching staff, what would you have to say to them? My job is to give leadership to teaching and business staff. Change is good in my view. It can cause anxiety, new ways of working/ expectations. I’ve started talking to individual managers and leaders to start to form the new basis of change; what three things should we keep doing? What three things should we change? I’ll meet the main body of staff in the autumn so that everyone can contribute openly and freely to who we are as a college. Would continuing students notice a new Principal’s (your) arrival? Yes, I hope so. In addition to changing social spaces for the students and changes to the

I will also be driving improvements in quality of teaching/enhanced learning and more feedback from students to say how we’re doing; the ‘Learner Voice’. They are key clients. How do you see the role of NCS in the educational landscape of Stamford and beyond? We work very closely with Stamford Queen Eleanor School and will continue to do so. There are also opportunities to attract students from Peterborough now that Peterborough Regional College no longer offers A Levels. But beyond this there is the fact that F.E gives you another bite of the cherry whatever your age. Students come for a purpose; it offers second chances and the opportunity to make a change. Our aim is to provide the best experience for students.
