Stamford is alive and kicking Now none of us likes to think of Stamford as a brand, but if its health was to be judged by marketing experts it would be doing pretty darned well. Stamford, they would opine, is a historic brand that has maintained its charm whilst re-inventing itself for the modern world (a sort of Royal Family strategy). And Stamford does indeed seem to be thriving in these times of economic adversity. Marco Pierre White was spotted in town hunting out a site for a new restaurant; Jamie Oliver is potentially looking at a site in Broad St. The Riverside Festival is back with more bands wanting to play than ever. The Corn Exchange goes from strength to strength. Hopefully the skate park will get planning permission. Both the town and Burghley House have many events planned for the Diamond Jubilee and Olympics. The schools are thriving; The High Street is most definitely not on its last legs and the new benches at the end of the High Street are a delight. Oh, it must be spring and a bout of unreasonable optimism. Enjoy your Easter break.

Upfront What’s new this month
Stamford’s Adam Frost has fourth Chelsea gold medal in his sights
W
ith the sponsorship of Lands’ End clothing and the John Clare Trust, three times Chelsea gold medal winner Adam Frost is hoping to add to his collection this year with the exciting prospect of another visit to the world famous gardening event. Adam said: “In our world Chelsea is a bit like walking out on the turf at Wembley. There is no bigger show and it’s great to be given the chance to show people what you can do, it’s hard graft but I love it; the place gets under your skin.” To be under such professional and public scrutiny means the garden has to be perfect, which is where Adam’s creativity and attention to detail comes to the fore. He is fast developing a reputation for taking his inspiration from complex and challenging characters and this year is no exception. The garden – The Rural Muse – is named after the final work of peasant poet John Clare. Adam said: “John Clare could be considered one of our first green campaigners. His poetry celebrated the beauty of our native landscape and lamented the arrival of modern agriculture, themes that are echoed in our own times. I live just down the road from Clare’s birthplace, and I’ve always been aware of his work and the long walks he took. I’m delighted to be building a garden that honours him - you never know it might make a few people think.” Chelsea is just one of several projects that Adam is currently masterminding, added to a couple of local projects He is creating gardens for families in Norfolk, Buckinghamshire, London and France, and continues to lecture and deliver courses to the public. On April 14 he will lead a Designing with Plants design seminar at Barnsdale Gardens, where Adam’s design studio is located. The studio was completed last year and has become the unofficial 39th garden at Barnsdale, which is owned and run by Nick Hamilton. It features all the signature design hallmarks of Adam’s work, including the clean lines of hard landscaping, the use of water and the softening effect of loose planting. A block of trees planted in gravel create shade for a bench by a path that crosses water to lead visitors to the front door. David’s Fuchsias &... a year on
A local business started by the former Head Chef of Stamford High School, David Woolacott, a year ago continues to thrive and grow reports Harjit Gammon The green-fingered former chef’s flourishing fuchsias now occupy not one but two thirds of an acre at his allotment and he has added a daily stall at Grantham indoor market to his busy calendar of roving plant shows. The market stall in Grantham is manned by two assistants while David attends to the plants back at the allotment, and re-stocks the stall every Friday. To the fuchsias David and his wife Jessica

now plan to add rhododendrons. This has also occupied their time over the winter, as they visited nurseries to learn about the varieties and best growing conditions. They plan to grow hardy varieties in a range of colours and sell them under the title of Jessica’s Rhododendrons &... In addition to stalls at various fetes, car boots and village halls, the couple will have a stall at Stamford Arts Centre on Friday 4 May as part
of a Rutland Ambulance and Air Ambulance fund raising day, followed by a second date on Sunday 20 May at the Fox & Hounds pub in Exton village to raise more funds. The Fox & Hounds will be laying on a hog roast with an Italian flavour, in the pub garden to make it a real day out. Teenage beauty Teenage beauty should strike a balance of subtlety and impact and Genevieve Potter looks at how to achieve exactly that

odels Emma and Emily have both recently started to use very light make-up and for our shoot we also treated them to some fabulous hair styles created by Gerards of Stamford. Holly set Emma’s hair in gorgeous loose waves using a large barrel curler to make the most of her wonderfully shiny tresses, which were set off perfectly with a diamante hairband. Meanwhile Emily was given a more natural “daytime” look by Steph, who blow dried her gorgeous thick hair to add volume, before creating a pretty French plait in the front of her hair to add interest. Both girls were then made up by Holly using the Aveda make-up range from Gerards (Gerards offer lessons for £20 which would make a fabulous birthday present for a teenager). Holly applied sheer moisturiser finished with pressed powder, then a little mascara and a peachy lip gloss for Emily’s daytime look. For Emma, she used a tinted moisturiser and created a slightly heavier, smokeyeye using greys and silvers to complement Emma’s blue eyes and add impact. Top hair tips for teenagers It’s really best to stick to your natural colour in your early teenage years to maximise the condition of your hair, but if you do want some colour scattered, sun-kissed highlights can look pretty (Aveda colour is

96% naturally derived so it actually conditions the hair) • If you possibly can it is well worth investing in a good paraben-free shampoo and conditioner, which will be kind to your hair and scalp • Always use some heat-protection like Aveda’s Damage Control spray before using straighteners or other styling tools • Don’t over-wash your hair, every two or three days should be about right, unless you have a very oily scalp • It’s important to maintain long hair with a trim every eight weeks or so, to get rid of any broken ends Top make-up tips for teenagers • A good basic skin-care regime is the most important thing of all, look after your skin with a good face wash, scrub and a moisturiser with an SPF • Mineral-based make-up is wonderfully soothing for teenage skin and as long as you use it sparingly, it will give a perfectly natural finish. For evening make-up emphasise your eyes or lips, but not both and look for colours that blend with your natural skin and hair tones. The practice was set up in 1996 by osteopaths Perry and Anthea Westbrook and also offers hypnotherapy, massage, nutritional therapy and Pilates. There are three acupuncturists: Julie Devlin, Louise Lipman and Jai Franklin. I saw Louise, and was impressed by the thorough way she noted details of my entire state of health as well as any specific ailments. Acupuncture is one element of traditional Chinese medicine. Very fine needles, just the width of a human hair, are gently placed at key points on the body. The procedure is not painful, although some people, as I did, may experience a slight tingling or ache. “Although acupuncture can treat specific symptoms, the idea is really to restore good health so that symptoms are less likely to occur,” explained Louise. EASTER FUN AT HOME It’s going to involve eggs and chocolate, some of it will be messy, but it will definitely amuse your children. Charlotte Newby thinks up some creative projects to do at home in the Easter break Chocolate Nests Your children will tell you, quite rightly, that Easter is all about chocolate and there’s no point in arguing with that. So it’s essential to get stuck into some chocolate cooking in order to make the holidays complete. What could be better than some chocolate nests which actually have healthy breakfast cereal in too?! You will need: • 200g milk chocolate • 25g dark chocolate • 25g unsalted butter
Sticky and sickly. Children love them.
• 100g cornflakes • Bag of sugar-coated chocolate eggs • Soft yellow chicks Not just for the children.
Melt the chocolate and butter in a bowl over a pan of boiling water. Let it cool on one side for a moment. Pour in the cornflakes and mix. Spoon small, nest-shaped piles of the mixture onto a tray lined with baking parchment. As they cool down, they’ll stick together better. Leave in a cool place (not the fridge) until they’re set, then put them on a plate and fill the centre with eggs and chicks.
EGG-SHELL CRESS-HEADS Children love to watch things grow, so inspire their imagination by making a humorous eggshell head with growing cress hair! First you need to take the top off an egg. You can use a boiled egg that’s had the contents eaten out of it, or carefully tap the top off a raw egg with a knife before tipping out the contents. Wash the shell, then your children can draw a face on it. Felt tip pens, permanent pens and acrylic paint all work well. Fill the shell with soil or cotton wool and generously scatter in cress seeds. Dampen with water and pop it in an egg-cup on the window sill. Your children can water it a little every day keeping the surface damp. Within days your crazy cress hair will start sprouting!

Fried egg toast Perfect for Easter breakfast. The children can do the cutting out bits. (This recipe comes from Annabel Karmel’s ‘You Can Cook’ book). You will need: • 2tbs sunflower oil • 1 lightly toasted slice of bread Simple to make and very effective.
EASTER BADGES First you need to get some shrink plastic paper. A ‘Craft Shrink Pack (Frosted Shrinkles)’ is available from Colemans for £6.49. There are several A4 sheets in a pack. You may remember ‘Shrinky-dinks’ from boxes of cereal back in the seventies? Well, it’s the same product only in plain paper format so you can make your own designs. First you need to scuff up the paper on one side with sandpaper. Then your children can draw Easter characters on the sheet with pencil: chicks, rabbits, ducks and so on, then colour them in with coloured pencils. You can

First heat the oil in a frying pan. Then cut a hole in your toast with the cutter. Put the toast in the pan, and crack the egg into the hole. Turn the heat down to medium and fry gently. Spoon the hot oil over the egg to help it cook. This also makes the bread lovely and crispy. Serve it, together with the buttered cut-out piece.

Once the drawing is coloured in and complete, cut it out leaving a small border around the edge. Place on a baking sheet in the oven (149-177 degrees C) for a few minutes until the paper shrinks to about a seventh of its original size. Burghley House
A Jubilee Jamboree (2nd – 10th June) will offer summer activities for youngsters at an ‘Alice in Wonderland’ themed festival, boasting tea parties, sporting events and have-a-go fun, including painting your own teacups! The Queen is visiting Burghley on June 13th, but this is a ticket-only event organised by the Lord Lieutenants of the four surrounding counties. It is, however, expected that the Queen will travel through the centre of Stamford, and so we may be able to glimpse her then.
The Olympic Torch
relay will pass through Rutland on July 3. It will be in Langham from 2.18pm to 2.25pm; Oakham from 2.29pm to 2.43pm; Rutland Water from 2.54pm to 3.42pm and Uppingham from 4.15pm to 4.24pm. Then it will head towards Burghley Park and will change hands there between 5pm and 6pm, in the presence of the granddaughter of former Olympic Hurdler, David Cecil, Lord Burghley, who won a gold medal at the 1928 Games. Admission to the park is free as usual on the day of the relay, but traffic is likely to be difficult and parking will be limited, so local spectators are advised to walk into the park and line the route, or enjoy a summer evening with a picnic and the backdrop of the House.
Olympic Updates Burghley House will be offering visitors a unique take on Britain’s Olympic year including perhaps the most scenic place to watch the London 2012 Games – and the picturesque venue for a blockbuster summer feast of movie outdoor screenings. Burghley has a unique claim to fame for its 2012 season - as home to an Olympic Gold Medal Winner and one of the key organisers behind the last Olympic Games to be staged in London in 1948.
David Cecil, Lord Burghley (1905-1981), who inherited the title of Marquess of Exeter from his father in 1956, was one of the golden athletes of his generation. During a sporting career spanning more

than a decade he won every available honour in his chosen discipline culminating in achieving gold for the 400 metres hurdles at the 1928 Amsterdam Olympics and silver in the 1932 Los Angeles Olympics 4x400 metre relay. Lord Burghley’s great talent as a hurdler and his life at Cambridge were the inspiration behind Lord Lindsay, one of the key characters in the film Chariots of Fire, played by Nigel Havers – a movie which features in Burghley’s summer night film outdoor screenings. Burghley House will be dedicating its annual Treasury Exhibition to the Olympic connections and sporting achievements of the Gold medal winning Olympian. ‘An Olympian at Burghley’ shows memorabilia including his running outfit, medals and information about his sporting career. And for those who want to watch the Olympics in a spectacular setting, Burghley will be throwing The Great Olympic Garden Party every day during the London Games. With the Elizabethan house as the backdrop, Burghley’s normally closed private South Gardens will host a Big Screen, showing TV coverage from Saturday 28th July to Saturday 11th August – and included for free
with a normal house and gardens ticket. Access to the screen will be available 10am to 10pm, last admission 6pm, with special late night tickets after 6pm at a reduced rate. A special Olympic Pass will also be available covering the whole period, while day tickets will be given as wristbands in the colours of the Olympic Rings. Visitors who collect all five will get free admission for the rest of the period. A summer evening festival of outdoor screenings will feature four special film nights, launching on Saturday 28th July with iconic sports movie Chariots of Fire, followed by three other movie screenings on Wednesday 1st August, Thursday 2nd August and Friday 3rd August. FIVE FAB NEW KITCHEN MUST-HAVES FROM FIVE LOCAL KITCHEN SPECIALISTS Hot on the heels of London Fashion Week, Harjit Gammon catches up with five leading local kitchen specialists to find out what’s piping hot in the world of kitchens
O
ver the years kitchens have gone from being behind-the-scenes functional engine rooms to being the star players of homes as lifestyles have changed and evolved. Today’s kitchens are the heart of the home, with multiple uses ranging from not only being the place to cook and prepare food but to also eating it; a place for doing homework, watching TV, relaxing and so on. While a wide variety of kitchen styles from high gloss to painted wood with a full complement of soft close runners, pull out larders, central islands and concave curve units remain firm favourites, in what after the purchase of a house is usually the biggest single spend within it for most homeowners, the moment currently seems to belong to an array of state of the art appliances, according to the local experts. Jason Nicholls , of The Fitted Furniture Company, which celebrates its 21st year in business this year, responds immediately to my question; ‘The hot thing of the moment, literally, is boiling taps! People are forgetting the kettle and replacing it with boiling taps, which give boiling water in an instant, as well as ice cold at the flick of a switch’. This is reaffirmed by Malcolm Brandwood of QKS, who pride themselves on ‘Bringing kitchens to life’. At their Barnack Road showroom QKS have a ‘live’ demonstration hot tap. Made by Quooker, the boiling-water tap dispenses instant boiling water at 100C. Promising to be a real revolution, it is being heralded as a ‘vital’ new kitchen appliance, which will change the face of cooking as it renders electric kettles outdated and obsolete. With endless applications, the most obvious being making a cup of tea to the latest addition to the list, poaching fish, there are many more that strike one as being endlessly useful. You can fill up a pasta pan, blanch vegetables, heat up plates and serving platters, prepare baby formula, peel tomatoes, remove candle wax and much more.

AGA TOTAL CONTROL Heralded as a ground breaking development of the classic Aga, the Aga Total Control, also on show at the QKS showroom in Star Lane is the next generation of Aga cookers. On when you want it and off when you don’t. From the outside it looks exactly like a classic Aga cooker but underneath its sleek cast-iron exterior lies a stateof-the-art touch-screen control panel. This new technology enables owners to operate the cooker in a way which suits them and saves energy. Each of the three ovens and two hotplates can be operated independently, or together, a bit like a normal cooker. And because it is quick to fire up, have it fully on during a chilly winter evening, but on a balmy night in July just use a single hotplate. And as if that were not enough, it can now be controlled by an i-Phone.

INDUCTION HOBS Another new idea which promises to transform the kitchen is induction cooking. Mark Fordham of Fordham Kitchens says, ‘once you start using an induction hob you’ll never look back!’ They work, he explains, by using an electromagnetic field beneath a ceramic hob, to heat only the area under a pan. Safe (they only heat up when a ferrous bottomed pan completes a circuit with the magnet), clean and clever, all the local specialists seem to be in agreement on this one. Sleek, shiny styling; fast and extremely controllable heat levels; easy to clean (with no tricky nooks and crannies and no more ‘burnt on’ food ever!) remarkably induction hobs also promise to be highly energy efficient (because only the area under the pan is heated with no heat wasted disappearing up the sides of the pan).

Makes one tart (20cm tart tin) Serves 10-12 For the sweet pastry • 400g plain flour • 200g unsalted butter, diced • 96g caster sugar • 2 egg s • Baking beans
1 In a mixing bowl, add the flour, sugar and dic ed butter. 2 Mix with your hands to a breadcrumb texture. 3 Beat the eggs and add to the pastry mix. 4 Mix to a dough, wrap in cling film and chill for one hour. 5 Roll out the pastry to 2mm thick. Line the tar t mould with the pastry and add som e baking beans. 6 Bake the pastry tart blin d (without any filling) in a preheated oven at Gas Ma rk 4 (180C) for 30 minute s. 7 Remove the baking bea ns and bake for a furthe r 10 minutes. 8 When cooked, remove the tart case from the ove n and brush with egg wash to seal the pastry, then allo w to dry. udding lovers take note! We’ve launched a selection of mini desserts at the Olive Branch in Clipsham. I guess these sweet treats could be described as ‘pudding tapas’ and the idea behind them comes from my own experiences of eating out (which with two kids and two pubs to run, doesn’t happen all that often these days!). Like most people I have a sweet tooth and love to indulge in a good dessert but occasionally struggle to find room after having a starter and a main. We’ve all been there, haven’t we? So with that dining quandary in mind, we have devised the perfect finish to a meal: a choice of five different, individual desserts that comprise only a couple of (quite large) mouthfuls but are full of great taste. You can choose just one to have with a coffee, or mix and match a larger selection for your table. We’ve had lots of fun and spent quite a while playing around with flavour and texture combinations to achieve the best possible mini pud selection. One of them – the raspberry

THE WICKED WITCH Nicholas Rudd-Jones discovered stunning, sophisticated food in this re-furbished pub that definitely hits the mark. Highly recommended

T
he new name – The Wicked Witch – and the pub sign – a pair of legs bedecked in zebra tights and red-bowed shoes – tells you to expect something completely different from the pub’s former incarnation – The Millstone Inn with its attendant pub sign depicting a grinding stone – and in that sense it’s helpful. But it doesn’t really give you any clue as to the type of food to expect or just how very good it is going to be. We went for dinner on a Friday and the first thing to like was the buzz of locals in the bar enjoying a drink or two and a good natter. The pub has been completely re-furbished and, for me at least, has achieved a happy balance between modernity and tradition, with lots of dark colours, rich wallpapers and furnishings; offset by wood, leather and iron work redolent of tradition. We settled in a corner of the bar with our G & Ts and menus and felt very relaxed and ‘in the mood’ for a good night out. But as Dom D’Angelo (formerly at Fratellis), the very affable and experienced front of house manager, took us through the specials, we felt almost overwhelmed with choice, there was so much we would like to have tried. Dom suggested a simple solution. He would ask the kitchen to prepare us a taster menu. A few minutes later and we were whisked through to the intimate dining room and the feast begun. We started with ‘Confit duck leg, butternut squash soup, red onion marmalade and pine nuts.’ Sublime. Next up was ‘Pan seared Scottish scallops, apple purée, coriander cress and pickled ginger.’ There were also slivers of apple on top, the contrasting flavours working to great effect. Then we tried the ‘Mushroom Cappuccino’ with button mushroom risotto, wild mushroom
fricassee, cep veloute and coffee jelly. This, for us, was an absolute stand-out dish with a combination of flavour and texture that hit the spot. You’re probably getting the picture by now. This is serious, sophisticated cooking - but it never loses site of the need to be delicious, nor is it over-finicky. Then for something completely different – an oriental bowl that smoked as it arrived at the table! A confit of salmon with parsnip purée, parsnip remoulade, (fine sliced parsnips, cooked down in duck fat and finished with white wine vinegar and curry powder) caviar and curry oil (olive oil infused with lemon grass, chilli powder & kaffir lime). Finished, apparently, with a ‘smoking gun, purely for WOW factor!!’ Next up (had we reached the main courses by now?!) was new season lamb, with first of the spring season vegetables, peas, broad beans asparagus etc, sweet bread and lamb jus. Another signature dish, melt in the mouth, simply stunning, quite filling and very scrummy. This wasn’t an evening to turn down desserts - so we tried two. Whilst the hot poached rhubarb, vanilla panna cotta and crushed almonds would have been a winner in most establishments, it was our final dish – Earl Grey tea soufflé, milk sorbet, macadamia nut digestive and lemon sorbet which was utterly memorable – unusual, delicate, indulgent and a perfect way to round things off. At the end of the meal we met with Head Chef Daniel Gill, a young and extremely talented chef, who has worked at Midsummer House in Cambridge and Raymond Blanc’s Le Manoir (both 2 Michelin stars). He is articulate, enthusiastic and ambitious about what can be achieved. A friendly crowd – the family on the table
next to us had already come back several times - and the general ambience is one of the keys to the success of the establishment. As we left we met several people we knew at the bar; it’s that sort of place. This is food that you might expect to be served in a rather rarefied environment, but here it is informal; and in the background (never off-putting) there is the hubbub of a happy pub. It works brilliantly. Lunch and bar snacks You need to allow £80 for a dinner for two including wine, but believe me it’s worth it. If you want to experience the pleasures of the kitchen more economically, then there is a good lunch offering (two courses £14.50 and 3-courses £17.50) and Sunday lunch has already become a firm favourite (£15.95 for 2 courses and £18.95 for 3 courses). Also worth trying is the interesting and quirky bar menu that includes stuff such as Lincolnshire Poacher Fondue and Dippy Egg. In a nutshell, we were bewitched by the Wicked Witch. So maybe, after all, the pub name does give a good indication of what to expect! When they are cut, they really do resemble fingers. Ursula is a talented Italian cook and baker. This recipe was one that her grandmother would make for the family. “My grandmother was a very religious person where at home we had prayers everyday with the rosary being said. We were taught to be kind, good and truthful. A home bound with religion and honour, where the food we ate was evocative of religious feast days. This has been a blessing as I feel my teaching is about sharing and privilege.” • I first met Ursula and saw her in action at one of the many cookery demonstrations she has given at Marilyn Squire’s School of Cookery in Folkingham, nr Sleaford in Lincolnshire. Makes 24 fingers Batter • 5 eggs • 25g (1 oz) caster sugar • 115g (4 oz) plain white ‘00’ Italian flour • Pinch of salt • 225ml (8 fl oz) milk • Unsalted butter, for greasing
HEAVENLY CHOCOLATE – Duffy Sheardown of Red Star Chocolate Based in (of all places) Cleethorpes, Lincolnshire, is the UK’s newest artisan chocolate producer of single origin chocolate bars from different regions of the world. Batches are small with no attempt to homogenise. Duffy takes the time to get to know different bean regions and it is this attention to detail that has secured the best beans available. Duffy’s Chocolate Honduras Indio Rojo 72% won the Academy of Chocolate, 2011 Awards, Bean to Bar Best Dark Bar. • Source from The Cheese Cellar, St Mary’s Street, Stamford CHOCOLATE ALCHEMY ‘Chocolate is very creative but limitless,’ says Pete Gardner of Chocolate Alchemy. Chocolate Alchemy is run like a bar in its concept. Pete comes from a bartending and management background and has brought these skills and influences to his coffee shop and chocolate making workshops. Filling • 450g (1 lb) ricotta • 175g (6 oz) caster sugar • Grated zest of 1 unwaxed lemon • Grated zest of 1 unwaxed orange • Grated zest of 1 unwaxed clementine (optional) • 1 tbsp double cream • 2 tbsp rum • 55g (2 oz) dark chocolate 70% cocoa solids Candied zest, to decorate To prepare the batter, whisk together the eggs and sugar until well blended. Beat in the flour, add the salt and gradually add the milk, whisking vigorously until the batter is smooth. Cover and leave to stand for 30-60 minutes. To make the filling, put the ricotta in a bowl and beat in the sugar, zests and cream until smooth. Finely chop the chocolate and beat into the mixture with the rum. Wipe a heavy, 28cm (11in) non-stick crepe pan with a little butter. Place over a medium heat. When the pan is medium hot, ladle in enough batter to cover the base. Cook until it bubbles and the underside is golden brown, then turn and cook the other side until golden brown. Remove from the pan and stack on a large plate, interleaved with greaseproof paper. Repeat with the remaining batter to make 8 pancakes.

Lay a pancake on a work-surface and cut away any brittle edges. Place a heaped tablespoon of the filling in the middle, then spread very thinly over the whole pancake. Roll the pancake tightly towards you. Repeat with each pancake. Slice each across at a slight diagonal into 3 fingers. Discard the ends of each roll. Chill in the fridge before serving. If wished, decorate with candied zest and eat with your fingers. My son Sammy tried out the pancakes, washed down with fresh apple juice, and declared himself completely satisfied (well actually he said very little as he was wolfing them down). I really enjoyed a muffin with egg, sausage and ham with an excellent cappuccino. We chose Jim’s Yard for its intriguing but unpretentious menu and were not disappointed. Even with three weeks notice, their Saturday night bookings were almost full so we went for an early dinner but didn’t feel at all rushed to finish our meal in time for the second sitting. The menu was simple yet full of fresh ingredients with a wide range of game, fish and vegetarian options to go for. I plumped for the wild mushroom and tarragon risotto which was perfectly al dente, wonderfully creamy and with a good hint of tarragon followed by the special of fillet steak. The steak also had a tarragon sauce which chef was happy to change to a green peppercorn sauce for me. The hand cut chips were heavenly and the steak was of a noticeably high quality. My husband chose the exciting mixed game and pistachio terrine wrapped in pancetta which he described as being surprisingly light and very much enjoyed the plum chutney accompaniment. His main course was a roast rump of lamb with Boulangère potatoes and braised red cabbage. We chose a mix of fruity sorbets and ice creams to share for dessert, a perfect light end to a sublime meal. General manager Mark Smith was very attentive and gave several helpful recommendations for our wine choices. Tim Steele and his family went back to an old favourite Dining at East on a Tuesday held two surprises…firstly finding the restaurant truly buzzing so early in the week; secondly, the excellent value of the Tuesday two courses for £10 menu, including rice and vegetables. To start, the three of us chose Tempura Prawn salad, drizzled with a creamy honey and Mizo dressing - Tempura in East is excellent, the batter is so light and crunchy; then Sambal Chicken Wings tossed in Malaysian Sambal and sprinkled with Kaffir lime leaves – spicy, juicy and flavoursome. Our third choice was the Kanom Pang Na Muu - this is finely chopped pork marinated with pepper and coriander served on French toast with a cucumber relish - a delicious crunchy combination with fragrant fresh coriander; really unusual…very tasty! For mains we chose the Massaman Beef Curry - a firm favourite in East; the beef is cooked slowly with spices, herbs, new potatoes and roasted peanuts; the Chicken Rice - rice flavoured with ginger and garlic, topped with steamed chicken breast, served with a ginger and yellow bean sauce and a side dish of clear soup - the chicken was delicately flavoured and the sauce complemented it perfectly. Our third main was the Ginger Red Snapper, pan fried with ginger, yellow bean sauce, garlic, chilli and celery - this was light and fresh tasting and a pleasant contrast to the other selections. The very mention of the name is enough to turn men of a certain age weak at the knees, with images of E-Types and glamorous film stars drifting through the semiconscious. Peter Muffett knows all about this. He’s the General Manager of Marshall Jaguar in Cambridge and Peterborough and is not only in the business of selling cars, but selling dreams too. “I love people. I love getting to know a customer and I love looking after them,” he smiles. “I’m lucky in that I am with a brand that is re-energised, with new models and new customers coming in to see what all the fuss is about. EGGS FOR EASTER Sue Lee and Jean Orpin have been investigating the production of eggs in our area and add some seasonal suggestions
Free range chickens at King’s Cliffe
I
t was confirmed in mid-February that all Britain’s eggs are now produced in accordance with new EU animal welfare requirements. There are now minimum standards for hen houses whether hens are kept indoors, are only indoors at night or raised organically. About half of British eggs are from free-range systems and half from the new colony system but how much do you know about the eggs you choose? We have looked at some facts and figures and talked to two local producers. Know your eggs! You can tell a good deal if your eggs are marked. The first number indicates farming method: • 0 Organic • 1 Free Range • 2 Barn • 3 Cage (nowadays meaning enriched cage, colony systems) Then country of origin – UK for United Kingdom The final numbers are the unique farm identity code Which colour? British people prefer brown eggs: Americans prefer white – but the eggs inside are the same! The colour of the yolk is affected by the food given to hens and different breeds do lay a variety of coloured shells, for example: • Dark brown – Speckledy, Maran • White – White Star, White Leghorn • Pinkish-brown – Rhode Island Red • Cream – Ancona, Vorwerk • Mid-brown – Black rock, Barnvelder • Bluish-green – Araucana, Legbar Plants Eggs Plants, a family business now run by Ian Plant, began poultry farming 50 years ago. They

provide eggs to many local outlets and have built up a reputation for quality and service. At Bainton, they have 75,000 hens and grading and packing facilities. With four flocks to enable continuity of laying, their hens are chosen and fed carefully to produce rich yellow yolks. Virtually all of their eggs are boxed and sold ‘shell-on’. Ian expects we will see a rise in the price of eggs in the near future. Many producers were unable to make the large investment needed to install new facilities so they have withdrawn from the industry resulting in a shortage of eggs. Plants have built completely new hen houses - all are now purpose-built using the most up-to-date colony system. This means that hens are provided with nest-boxes, litter, perches and sufficient space to scratch & fluff their feathers. A fully computerised management system ensures a healthy temperature and levels of light. Fowlers Eggs Leigh and Rebecca Fowler have had a poultry farm at King’s Cliffe for fifteen years. They sell their eggs at Stamford and Oundle markets, local shops and restaurants. Leigh did not come from a farming family but bought his first chickens at the age of seven and decided then that he wanted to be a chicken farmer. He went to the Scottish Agricultural College and studied Poultry Production and Management before buying the farm at King’s Cliffe. They have two sheds: one for rearing replacement stock and one for layers. The chickens are Rhode Island Red Cross, laying brown eggs which their customers (like most British people) prefer. They are genuinely free-range, going out in the mornings where they settle under the trees. They often go inside in the middle of the day for a dust bath, venturing out again in the
evening. Leigh has planted 1500 trees to give them shade and apple trees which encourages them to go outdoors for a treat when the fruit falls. His hens are ‘his girls’ and he talks to them when he is working with them. Easter Traditions These days Easter Eggs are usually chocolate but this has not always been so. Traditions world-wide connect eggs with Easter as they symbolise new life and resurrection. Egg rolling is a popular tradition. The person whose egg survives unbroken is the winner and is rewarded with good luck throughout the year. Decorating eggs is another custom. One method is to use onion skins, crocus petals or grasses etc fixed to the egg with cotton and wrapped in clingfilm before putting in boiling water. Another way is to use food colourings. Coloured Eggs • Select as lightcoloured eggs as you can find – not an easy task around Stamford! • Pierce the eggs (to prevent cracking) and hard boil. Allow to cool. • Put boiling water in 4 small bowls, add a few drops of each colouring (red, green, yellow & blue) and a little white vinegar. • Using a spoon dip the eggs then place on a rack to dry. • The longer you leave the egg, the darker it will be and you can get more variety by dipping into two colours or by dipping only part of the egg at a time.

When were the Bottle Lodges built and is it known who designed them? PS The Bottle Lodges were built in 1801 just at the time that the 10th Earl of Exeter was created 1st Marquess. It is usually assumed that they were built in celebration of this event although plans for the Lodges had been prepared by William Legg in 1799. William Legg had a business as ‘architect and surveyor’ in Stamford from the 1770s and as he provided stone as part of his contracts, he probably had his own quarry. He did work for other aristocratic families in the area as well as for the Earls of Exeter. He also designed the Shambles – now the Library – in 1804. Frank Iliffe, 9 St Peter’s Hill Thank you to PR for sending in this reminiscence, “One shop that has happy memories for me was Frank Iliffe’s shop at 9 St Peter’s Hill (next door to the old Language School). As well as selling sweets and tobacco he sold sports equipment and supplied the local clubs. He often gave us a discount and I remember both him and his wife as generous kindly people.” He lived at 11 St Peter’s Hill with his wife Gladys whom he married in 1926 and they ran this shop for about 20 years from the 1940s to the 1960s. Do any other readers remember this shop? Which is the oldest church in Stamford? DL This is a very difficult question to answer because all the medieval churches in Stamford have had additions and restorations – none was built at one time. Possibly the first church in the town was St Peter’s of which nothing now remains except the name. There are only very small remains from the 12C (in both All Saints and St John’s) but the earliest building to be seen is the beautiful 13C tower of St Mary’s with its 14thC spire. Belmesthorpe Grange We were pleased to hear from the current owners of Belmesthorpe Grange who told us that the railway slabs used for a patio there
in the 1960s are still there but in a different position. When they moved there in 1993 they had some landscaping done and moved the slabs into a rectangle surrounding lawn and ponds. Moving them turned out to be a bigger job than anticipated, “The contractors who had to lift them and place them down again could not shift them manually as they were so heavy and had to get a digger/loader machine to trundle around with them!” Rutland Terrace A reader contacted us saying, “I read with interest, your article on Rutland Terrace in the current issue of Stamford Living. However I feel that it was a great pity that Harry Skells, living at number 8 was not mentioned ... He was a great benefactor to the town.” From our research Harry Skells, who was indeed a great benefactor to the town, lived at Bancroft Lodge on King’s Road. Arthur Sells bought Number 8 Rutland Terrace in 1925 and lived there with his wife until he died and Mrs Sells stayed living there until the house was eventually bought and divided into flats in the 1960s. Does anybody know anymore about Arthur Sells?

Harjit Gammon meets Anita Gordon, co-ordinator of Stamford Street Pastors, who has found her calling walking the streets of Stamford late at night Tell me what Stamford Street Pastors are? Stamford Street Pastors are a group of volunteers from seven local churches, including the Salvation Army, URC, Barn Hill Methodist Church, Life Church, All Saints’ Church and Free Church, who address anti-social behaviour on the streets of Stamford town centre during weekend evenings. Our mission is to care, listen and help anyone in need. Although we work alongside the Neighbourhood Policing Team, we are not there to enforce the law, although as citizens we have a duty to report crimes. We might offer first aid to someone who needs it, or talk to the partner of someone who has been involved in an incident involving the police, or simply listen to someone who wants to share a problem. We sweep up broken glass and pick up discarded glass bottles - which according to the police is taking a potential weapon off the streets, hand out flip flops to young women walking barefoot at risk of cutting their feet, and give out bottles of water and lollipops to late night revellers emerging from pubs and clubs in need of hydration and a sugar fix. We don’t get involved in breaking up fights. A typical patrol would be four people, out one Saturday a month between 9.30pm and 3.30am. We wear a uniform, with a high visibility jacket and a Street Pastors hat and work as a team, which stays together at all times. There are 26 Street Pastors in all, ranging in age from 30 to 70 plus, supported by a team of eight Prayer Pastors, who remain at base and pray for us while we are out on patrol. How did you become involved? For some time I’d been walking around

Stamford at night, while I walked and prayed, and I’d always end up outside Central nightclub at around 10pm on a Friday night. Then I saw a DVD at Grapevine, a Christian conference, about Lincoln Street Pastors and I felt it was the right thing to do. One Sunday around this time I got on my bike to cycle to church which I never do, and I had an extraordinary experience. A Sparrow hawk with a young bird in its claws swerved past me and landed on a tree. I stopped and we both looked at each other, then it looked away and back at me and let the bird go. As I cycled off I said out loud I’ve just saved a young bird and a voice inside me said that’s what I want you to do. So I approached my church, The Life Church - a community church that meets at Queen Eleanor School every Sunday, to start looking into it and start discussions with the Ascension Trust, which is the overall body that Street Pastors belongs to, to try and get the support of four local churches to set up in Stamford. Initially I went out with Peterborough Street Pastors on an observation night. I had the most fun out at night that I’ve had for years. People I might have been terrified of meeting

at night in a dark alley would just say hey it’s the Street Pastors and be really friendly. I also met someone I knew at 4am, a girl I knew, who told me about how her life was unfolding. But I live in, and my life and heart are in Stamford. So in May 2010, nearly a year ago, I became coordinator of the newly formed Stamford Street Pastors, with Rev. Andy Fyall of Barn Hill Methodist Church as chair of the co-ordinating committee and pastor to the street pastors. Many people will be curious to know why you are doing this. We’re just volunteers from local churches, not bible bashers, who are there to care, listen and help. You could compare us to the Good Samaritan. We’re not there because of religion but because we care. If someone wants to talk we’ll listen. In 9 months we’ve interacted with 1,000 people with probably one spiritual conversation. But we are getting to know people, because we see them every week; whether it’s for a lollipop, (yet another!) pair of flip flops, curing hiccups or helping lost visitors to the town find their friends. A team of Stamford Street Pastors will be out slightly earlier each evening of the Mid Lent Fair from 7pm until 10.30pm with the same brief to care, listen & help anyone we meet who is in need. The teams are really looking forward to it as we will be meeting people who are likely to not know who we are or what we do”. The Street Pastors 1st Anniversary Celebration is taking place on Sunday 29th April at Barn Hill Methodist Church at 6.30pm. Everyone is welcome. The new Street Pastors will be commissioned as part of the Celebration.
