Three cheers to Her Majesty The Queen has played a part in most of our lives for as long as we can remember. My parents are of her generation and we offspring span the same age as the Queen’s children. So we have sort of grown up together (it so happens we lived in Windsor too but, much to my chagrin as a youngster, in a house without a drawbridge), and shared the ups and downs. And ultimately that has what has made the Royal story so compelling for so many years – it’s basically an everyday family story played out on a very particular stage, starring Tupperware as well as tiaras. And its head has always worked tirelessly on behalf of the nation and always endeavoured to do what is right. And in so doing she has added greatly to our sense of conﬁdence as a nation, our position in the world post-Empire and our willingness to work with what we have and make it better. In a nutshell, I feel that my life is that bit better because of the beliefs that the Queen has stood up for, and I thank her from the bottom of my heart for that and wish her many more years to rule over us. Wishing you all a very happy and celebratory Diamond Jubilee

Could this beautiful coastal village hold the answer to the ultimate property question, ‘Where might I ﬁnd the perfect home by the sea’?

hether as a coastal getaway, a retirement home or an escape from the rat race, Kate Cleaver goes in search of the ‘holy grail’ of the property market. I spotted a sales board outside a new development called Samphire Close in Blakeney - it read ‘houses designed for luxury living’. This made me curious to investigate further, to see if these really were the ‘perfect home by the sea’. I was not to be disappointed! The ‘Location, Location, Location’ factor places Blakeney, with its small population of just under 800, a very convenient 129 miles from London, 21 miles from Norwich and 5 miles from the lovely Georgian market town of Holt. In a stunning Area of Outstanding Natural Beauty, the harbour (still serving small boats) and surrounding marshes are owned by the National Trust. These one-off properties, there are seven, in the heart of Blakeney, just minutes from the sea, have been built as an exclusive and charming community of homes which, on inspection, are definitely setting the benchmark for new house builds on the North Norfolk coast. A JUBILEE GARDEN TEA PARTY Use your imagination and ﬂair to conjure up a crowd-pleasing tea party for your friends and family to celebrate the Queen’s Diamond Jubilee. Charlotte Newby brings together some original ideas for creating the perfect Jubilee tea. Photographs by David Corﬁeld

NE of the joys of summer is being able to eat outside. It brings about a sense of occasion and makes food taste of sunshine and holidays. It allows you to dispense with the formalities of eating inside, and children can enjoy the freedom to pick at goodies from the table and wander around while they eat. A Jubilee tea party is a great opportunity to get creative. There’s no ﬁxed format. You can go with a simple, rustic picnic of thick-cut ham sandwiches and lashings of ginger beer, a casual feast of hot dogs and ice creams, or keep it traditional with cucumber sandwiches, scones and tea. I’m going for a homemade approach, using simple recipes, some typical English ﬂavours and ingredients that you can source locally. I’m including traditional picnic favourites and some straightforward baking.

MINI FILLED ROLLS Sandwiches are a must for an afternoon tea party: easy to make, easy to eat. I’ve decided upon these miniature rolls because they work so well with simple fillings and look great piled high on your table. Homemade always taste better and they’re straightforward and very pleasing to make. Basic White Bread 500g strong white flour 1 sachet or 2tsp dried yeast 1tbs butter 1tsp sugar 1tsp salt 300ml lukewarm water Put the flour in a large bowl and rub in the butter. Then add the

sugar, salt and dried yeast and mix those in. Gradually pour in the lukewarm water, bringing in the flour with your hands until you’ve formed a good, solid dough. Knead the dough for 10 minutes on a floured board, or if you’re using a mixer with a dough hook, mix for 4-5 mins on a low setting. Put the dough in the bowl and cover with clingfilm to prove for around an hour. After this time, knock the air out and divide it up into walnut-size pieces, roll them into balls and dust with flour. Put them on a greased tray and leave them once again until they’ve puffed up to

double their original size. Bake them at 190 degrees C for around 10-15 mins until they’re slightly browned and sound hollow if you tap them on their undersides. Leave them to cool on a wire rack. When you’re ready, cut them open and spread with unsalted butter. Push pieces of ham inside and splotch in some English mustard. Smoked salmon tastes best on brown bread, so make seeded granary rolls for these (see below). They’re delicious with horseradish and fresh rocket nudged inside. VARIATION: For light granary seeded rolls, mix white ﬂour and seeded granary ﬂour together half-and-half.

HOMEMADE HERBY SAUSAGE ROLLS Once you have made these you will never again want to eat a pale, spongy supermarket sausage roll again! These can be made a day ahead or sooner - and frozen before baking. Ready made puff pastry makes this a straightforward process, and you can even buy it ready rolled. Sausage meat will work fine, but for truly marvellous sausage rolls, acquire some good quality sausages from a trusted source. Skin them first, then combine with some chopped fresh herbs: sage, thyme and parsley are good companions. Grate in a little lemon zest and a touch of mustard. Place your mixture in a long sausage down the middle of the length of rolled out pastry. Brush the pastry down both sides with egg, then fold one side over and press onto the other. Brush the parcel with more egg and slice up into bite size rolls. Bake at 190 degrees C for around 20-25 mins until they’re sizzling and brown.

TOMATO AND BLACK OLIVE SALAD For a flavoursome and tangy salad, that’s fresh and full of summery flavours, mix together some vine or baby plum tomatoes and stoned black olives (the dried ones have the most intense flavour). Pour over a dressing made with olive oil and balsamic vinegar, grate on some lemon zest and sprinkle with rock salt and black pepper.

GOATS CHEESE AND ONION MARMALADE FRITTATAS Here, I’m simplifying a recipe that’s from a book called ‘Celebrate with Party Food’ by Tina Bester. My shortcut uses shop-bought onion marmalade/ chutney, rather than making your own. (I’d recommend the one by Rutland Preserves). Ingredients 3 medium potatoes, boiled until tender and cut into half-inch dice 200g goat’s cheese 6 large eggs 250ml cream A jar of onion marmalade Salt and pepper

Preheat the oven to 180 degrees C and lightly grease 24 mini muffin cups. Place one piece of potato, a small piece of goat’s cheese and half a teaspoon of onion marmalade into each muffin cup. Mix the eggs and cream together, season with the salt and pepper and fill each muffin cup with this mixture. Bake for 15-20 minutes until they’re set. Serve with sprigs of fresh Rosemary.

SIMPLE ICED BUNS Dense and delicious, these will bring back memories of childhood. Make them by enriching a basic bread dough with the addition of egg and sugar. Ingredients Basic white bread recipe (as before) 100g caster sugar 1 egg 250ml-300ml lukewarm water 350g icing sugar & cold water or freshly squeezed lemon juice Make your dough in exactly the same way as the basic bread recipe as above, but put in the sugar and egg before adding the water. Once you’ve proved the dough, knock the air out carefully by hand, then divide it into 20 pieces. Shape these into little sausage shapes and place them on an oiled tray. Cover again and leave until they’ve doubled in size. Bake at 200 degrees C for about 8-12 minutes until they’re golden. Then cool on a wire rack. Make the icing by combining the icing sugar and water/lemon juice until the consistency is stiff but spreadable. Drizzle this over the buns, then put them out of sight or they’ll disappear before the party even starts!

INDIVIDUAL VICTORIA SANDWICH CAKES We all have our own favourite recipe, so use yours making the quantity you would normally make for two 7in tins. I worked out, using my rusty ‘O’ level maths, that this quantity generously fills a tray that’s 18x32cm.

This will take around 25 mins to bake at 180 degrees C. Before you take it out of the oven, make sure it bounces back in the middle if you press the top. Once cooked and golden brown, cool the cake in the tin, then turn it out onto a board. Cut it in half horizontally with a big bread knife, then use a pastry cutter to make your individual cakes. I find tackling top and bottom separately makes life much easier than waiting till they’re sandwiched together! Spread the bottoms with jam, then place on the tops, and sprinkle them liberally with icing sugar.

FRUIT SKEWERS Use seasonal fruit to thread onto wooden skewers. Strawberries, grapes, melon, pineapple and mango all work well because they don’t fall apart too easily. They’ll add a fresh and colourful touch to your table.

HOMEMADE LEMONADE Borrowed from Tina Bester’s book ‘Celebrate with Party Food’. Place 500ml freshly squeezed lemon juice in a pan with 160g sugar. Heat it until the sugar melts (but don’t boil it or you’ll end up with marmalade!). Allow the mixture to cool then add iced water to taste. Use carbonated water if you like your lemonade fizzy.

CIDER COCKTAIL Pour chilled dry cider in to a jug and add ice and a good splash of interesting fruit liqueur. I tried damson vodka that I’d made back in the autumn and it made a summery cocktail with real punch! You could use a blackcurrant liqueur, sloe gin or a fruit cordial. STAMFORD Living JUNE 2012

Next year is St. Martins Antiques 20th Anniversary and it’s thanks to regular customers like Jane that the Centre has a history of success. Down the years, since we first opened, Jane has been popping in regularly. She’s not a collector of anything specific. “I just like old things around me. I’ve bought everything from an iron bed to small occasional tables, vintage dresses and countless nick-knacks. I never could resist a bargain and often find that items here are cheaper than Ebay.” All this time Jane has worked in the NHS at both Stamford Hospital and Peterborough. After a stressful week she likes nothing better than to visit the Centre. “As soon as I walk through the door I start to relax. I love the nostalgic music. Peter Light has even lent me CDs in the past. Now that’s customer service! t’s nearly here!… Stamford Feast - The Big Lunch is a FREE multicultural community food event being held between 10m and 4pm on Stamford Meadows on Monday 4th June. This event ran for the ﬁrst time last summer and received a fantastic attendance of 8,000 visitors, subsequently helping the local economy and increasing tourism to the town. Now in its second year and falling on the same weekend as the Queen’s Diamond Jubilee, there is an action packed day planned for everyone to enjoy… This is much more than just a fun day out…

it’s a diverse, innovative, inspirational and inviting multi cultural community project, centred on food and healthy eating. BURGHLEY PARK CRICKET CLUB Cricket Week and Beer Festival. Mon 2 – Fri 6 July

Burghley Park Cricket Week and Beer Festival has been growing year on year over the past few years and this year the club plan to make it even bigger! The week consists of all day games on each day of the week starting at 10.30am; and from 6pm every evening, the ever popular Burghley Park six-a-side competition takes place. This year is the 54th year of the six a side competition or the ‘Burghley Sixes’, as it has become popularly known; and it is proving as popular as ever with crowds starting to get back to the numbers attending in those heady days of the 60s. The Stamford Mercury of the time reported crowds of 2 or 3 deep around the boundary with numbers into the 1000s. 16 local village teams are invited to take part with 3 games being played each evening starting at 6.00 pm. The semi finals and final take place on the Friday evening, with a live band performing after the sixes final on the Friday evening. In the last few years another highlight has been the introduction of a real ale festival in the ‘Forest Garden Services’ marquee, which has been supplied by Events and Tents. At least 20 real ales are available each day and evening during the week and so it is worth visiting the Park during the week in order to sample the delights of some wonderful real ales from near and far while at the same time watching some exhilarating six hitting during the ‘sixes’ games. The beer tent this year will be a great vantage point to watch the Olympic torch go by as it enters and exits Burghley Park on Tuesday 3rd July! So come and watch history whilst sampling some great real ales! There are a couple of new additions for this year’s Cricket Week and Beer Festival extending it further to incorporate the inaugural ‘Cricket Ball’ which will take place on Friday 29th June. Train a Puppy; Change a Life

National charity calls for volunteers in Stamford as it celebrates its 30th birthday Thirty years on from its launch, national charity Hearing Dogs for Deaf People is calling for new volunteers to help train a puppy and change the life of a deaf person. Around 15 volunteer ‘puppy socialisers’ are urgently needed in and around Stamford to help train hearing dogs of the future in this fun and rewarding role. The Charity – which currently has around 750 deaf recipients across the UK – hopes to encourage new people to come forward and sign up as volunteers in what is a special year for Hearing Dogs for Deaf People, currently celebrating its 30th birthday. Hearing Dogs transform deaf people’s lives by alerting their recipient to important household sounds and danger signals such as the alarm clock, doorbell and smoke alarm in the home, at work and in public buildings. Tom Green from Hearing Dogs for Deaf People, said: “The role of puppy socialiser is vital to the continued success of the Charity and as a puppy socialiser; volunteers will play a huge part in the eventual placement of a hearing dog with a deaf person. “Hearing Dogs change lives. They bring new levels of independence, confidence and companionship to a deaf person as well as helping to remove some of the loneliness and isolation that deafness – which is in essence, an invisible disability – can unfortunately create.” A hearing dog puppy’s journey to becoming a hearing dog begins at eight weeks old when they are placed in the home of a volunteer puppy socialiser. Puppy socialisers teach the puppy basic obedience skills while introducing them to all the people and

Being British

'Being British' may be the curatorial theme, but the typical red, white and blue will not be in evidence on June 29th. 1. The Great British Drawing Room to retreat to Hambleton Hall has been a member of Relais & Châteaux since 1982. But almost invariably the drawing room is done better in this country, which I think is to do with the fact that we have a rainy climate. On a bad day you still have the view and you need to be very comfortable, enjoy a roaring log fire and be able to tuck into a delicious tea.”

An integral part of Hambleton Hall is the garden and its glorious setting in the landscape. It follows the great British tradition of country houses; with a more formal parterre leading down to open lawns and trees and the stunning vista of Rutland Water - very much in the way ‘Capability’ Brown would have done it in his day. And tucked away around the side, that quintessential English County House feature, the walled kitchen garden; full of the herbs, spices, salads and fruits that go straight into the Hambleton kitchens. Oh and trees with stories … for example the eucalyptus tree that was the result of a discarded cutting from a florist 30 years ago and is now one of the biggest trees on the estate. Or the Loquat that is in the greenhouse, brought back from a family holiday in Majorca last year and being over-wintered in the greenhouse before being planted out to see if it can survive the British climate.

Hambleton Hall offers a unique setting for that great British pastime, bird watching, with the huge variety of species on Rutland Water and of course the ospreys. And if you are feeling a little more active, there is a tennis court tucked round the side; or a game of croquet perhaps on the front lawn, both quintessential Edwardian pastimes that were also ‘borrowed from the French!’. Or a visit perhaps to one of the many local country houses or market towns. ‘The Cotswolds without the crowds,” as the region is often described.

Aaron Patterson, Head Chef and Co-owner of Hambleton Hall, has always been passionate about sourcing locally. In his book ‘Wild about Food’ he opines about the local mushrooms, which are the subject of a mushroom foray each autumn. Next spring he is hoping to inaugurate a spring foray in search of chickweed, horseradish, wild garlic and sorrel. Aaron sources Game from the local estates, veal from Whissendine, trout from Rutland Water, beef from Northfield Farm and much more besides. And with a nod towards Scotland, the cosy bar stocks 40 whiskies. In tribute to the long-serving Restaurant Director, Graeme Matheson (also known as ‘The Scottish Jeeves’), there is a whisky blended specially for him, the ‘Hambletoon’!

The house has a strong association with foxhunting, as it was built originally in 1881 by Walter Marshall as a hunting box. The house provided an ideal base for hunting with the Cottesmore, Quorn, Belvoir or Fernie hounds.. He was a man who liked his aphorisms, with the inscription ‘Fay Ce Que Voudras’ (Do as you please) above the front door; ‘Nunc Hora Bibendi’ (“Now is the time for a drink”) on the sundial on the south front of the hall; and a typical Victorian pun on the entrance to the stable yard ‘Ride Si Sapis (‘Smile if Wise’ in Latin, but also to be read before saddling up!) Hambleton Hall was designed by Leicesterbased architect, Isaac Barradale, who also designed Barnsdale Hall. He was described by Pevsner as “arguably the finest architect of the Arts and Crafts movement in the country”. Walter Marshall left his house to his younger sister Eva Astley Paston Cooper. Although Eva started life as a keen devotee of the chase, from the age of 50 onwards she presided over a salon of bright young things including Noel Coward, Malcolm Sargent and Charles Scott Moncrieff.

Set above the entrance to the stableyards is a gloriously ‘over the top’ clocktower, built in 1897 to celebrate Queen Victoria’s Diamond Jubilee. On its dial face is inscribed: “Anno Sexagesimo, Regni Victoriae Reginae”. This year Queen Elizabeth’s Diamond Jubilee is marked by an impressive Jubilee Wreath above the entrance porch of the Hall. These two tributes remind us of the strong sense of continuity in the monarchy and also in the history of Hambleton Hall; created in Victorian times for conviviality and the pursuit of pastimes, and still doing the same job very well today. Fundraising inspired by Ned Cullen's fight against Motor Neurone Disease

Ned Cullen was diagnosed with MND at the age of 33; before this he was an active and healthy Harrier pilot. This disease has turned his life upside down and left him unable to move, eat or speak. But almost nine years later he is still fighting and determined to spend as much time as possible with his wife and young son. Ned's courage and determination have motivated family and friends to raise as much money as possible to support families living with the disease as well as fund vital research. Fundraising events inspired by Ned have so far raised over £13,500. On June 23rd, 15 ladies from the Stamford area will attempt the 23 mile Yorkshire Three Peaks challenge, climbing Pen-y-Ghent, Whernside and Ingleborough (hopefully) within 12 hours to raise money for the Motor Neurone Disease Association. Through the Jubilee Window Design & interiors editor Harjit Gammon peers through the “Jubilee” windows of Barbara Guttridge’s Aladdin’s cave of a home in Stamford

y attention was first drawn to Barbara Guttridge’s house, no to be more precise windows, on my meanderings around Stamford with my dog Beanie. It has since passed into legend amongst a select group, for its ever changing window displays. So much so that people have told me that they park in the Wharf Road car park in anticipation of the display as they walk into town! What will it be like this week, this month...? Tucked along a narrow pavement section of Blackfriars Lane, one is up close and personal with the aforementioned windows. Beyond, the room (a kitchen it transpires) is cloaked in darkness. Thus allaying the usual concerns of unfettered window peering to coin a phrase. Motorists rubber neck so perhaps window peering will do for this voyeurism. Along from the windows there is a tantalising glimpse of a conservatory and garden. Perfect fodder for the imaginings of fellow property hounds and the insatiably curious (for which read nosey) types like me. Approaching the front door, through a low gate, for a tour of the inside one gets a clue to the interests and collecting habits of the owner. The wall is smattered with little placards bearing inscriptions of various kinds, interesting less for their messages than their number and quantity. These betray the magpie-like collecting habits of the owner. On entering the kitchen high on

several shelves one is confronted with the first of many collections inside; a range of mugs sporting advertising packaging designs. On closer inspection it becomes clear the collection has a theme - chocolate. Indeed these represent just a small number of a vast collection which was whittled down when Barbara moved to Stamford some 10 years ago from Spalding, where her family had an animal feed business. As I look around I realise I am now in the room beyond the windows! To my immense pleasure it has a lovely large dresser - I’d figured there must be something of the kind from which the endless displays emerged to appear on the windowsills - and rather appropriately but a little surprisingly an Aga. As my eyes scour the dresser I spy a considerable collection of dogs, some of which have strayed into the current window display. Inherited, Barbara says catching my gaze, from an old lady she looked after. Besides the dogs, the dresser is home to an inordinately large number of fairies, whose main domain however is the garden, as well as the remnants of an apple collection “which got silly” and is now much diminished. As the tour of the house and details of yet more collections are revealed, it becomes refreshingly apparent this is a house where living normally comes before style. The inhabitant is as important as the house. As Francis Bacon observed, “houses are built to live in and not to look at...”

The house was originally three cottages which had been knocked into one when Barbara arrived, with much of the work upstairs complete (which Barbara has left unchanged) but with the opportunity for her to make her mark downstairs. This she did by knocking through a wall to get a view of the garden from the kitchen and by adding a conservatory. The yard still sports an original arch, now blocked, which originally led to open fields in the direction of St George’s Square. Though Barbara knows little of the house’s history, odd snippets garnered from passers-by suggest it was once a motorcycle workshop and greengrocers in times gone by. Another commented that he recalled buying train tickets from a small window by the front door (possibly for travel from the one time station in Water Street), while someone else still told her he used to leave his bike there for thruppence when he went to the cinema. Upstairs the house emerges tardis-like into several unexpectedly large bedrooms which belie its rather bijoux exterior. Here too Barbara’s collectomania is in evidence, most notably in the shell themed bathroom and the hoard of stuff in the attic awaiting deliverance to the windowsills for the delight and delectation of passers-by and her two young granddaughters and accomplices in crime!

Last year Stapleford Park was declared the best hotel in the nationwide Gourmet Britain Awards and the ‘Taste of Japan’ Gourmet Night was evidence of why the venue is loved by foodies from that online guide.

Japanese food is usually accompanied by wines from the Pacific Rim. However, our well informed wine expert, Ian Stubbings, of wine merchants House of Townend, which supplies Stapleford Park, opted to go somewhat left field at the ‘Taste of Japan’ Gourmet Night. With his selection of European wines he was as interested as those present to discover how his choices reacted to the flavours - occasionally fiery - of Japanese cuisine. A glass of champagne on arrival gave us a chance to make small talk with the other diners, some of whom had attended previous Stapleford Park Gourmet Nights. The tasty opening course of Taki of Salmon was followed by a selection of powerfully flavoured sushi. But, as we agreed and so did Mr Stubbings, the powerful flavours of the half-a-dozen items of sushi, including wasabi and ginger, rather overpowered the Chamblis Premier Cru. Meanwhile, our thoughts on the main dish of chicken teriyaki with tempura vegetables were reversed. But we both agreed that the Gewurztraminer wine from Alsace selected to accompany the course was superb. A flavoursome and mouth cleansing green tea parfait followed and the meal was completed with chocolate sushi, which was beautifully presented, tasted as good as it looked and was brilliantly complemented with an Italian Valpolicella Classico dessert wine. Coffee and petit fours rounded off the memorable evening. Rather than looking at the headline price ask yourself if £99 per person is value for money? Bridget Steele tries out the Fine Dining experience at the Garden Kitchen A Garden Centre may not be an obvious choice for an evening dinner, but I had been to the Garden Kitchen at the Stamford Garden Centre for lunch before - and was impressed with the innovative menu and tasty food – and so was keen to try one of their ﬁne dining evenings that they hold on the ﬁrst Friday of each month in the new Orangery. The menu is simple, with four starters, mains and desserts, and yet not limited in any way - I loved its simplicity and particularly its pricing, with a standard cost of £19 for two courses or £23 for three courses with no hidden supplements or extras for side dishes. The wine list is also simple and suits all pockets and tastes. I chose the Beetroot and goat’s cheese terrine for starters with dressed leaves, a perfect combination; others in my party were equally impressed and the Wild boar

and pistachio pâté with granary bread was a great hit with the men. For mains I chose the Pan fried Gressingham duck breast, served with garlic fondant potato, Savoy cabbage and Cumberland sauce - again perfectly cooked, presented and sublime in taste. For Dessert I had the caramelised ﬁg tart with nut brittle - an unusual combination but one that worked and I savoured every mouthful. The Fine Dining evenings are popular and must be booked, not only was the food delicious I felt that James Lamb and his team were enthusiastic about the food and made for a great experience. VICTORIA SPONGE CAKE The Victoria Sponge cake was named after Queen Victoria. It is said that it was her favourite cake. I wonder if Queen Victoria’s love of cake and jam was inﬂuenced by nostalgic memories of things past. History relates that Anna, Duchess of Bedford who was lady in waiting to Queen Victoria, was the creator of afternoon tea. When visiting Belvoir Castle, in the Vale of Belvoir, and feeling peckish between lunch and supper she took to inviting her friends to join her at tea time in her rooms there. This habit of taking tea quickly became popular. It is noted that Queen Victoria loved giving tea parties where the Victoria sponge was indeed served. Making your own sponge? Sandwich layers of sponge together with Jubilee Jammyboree. A majestic mix of layered (traditional fruitpacked strawberry), white (elegant pear and elderﬂower) and blue (wild blueberry jams). Camille Ortega McLean, founder of The Pickled Village, has an international background and years of expertise in making preserves of all kinds. She suggests creating a patriotic patchwork of scones or sandwiching in a multi layered sponge cake. A Jubilee Street Party scene is a work of

Queen Elizabeth II is only the second monarch in the UK’s history to reach a Diamond Jubilee, the last being Queen Victoria. In this very special year the Queen and Prince Phillip will be visiting Stamford for the first time since June 1961, when they came to help Stamford celebrate its Quincentenary. To mark this special occasion, an event is being held at Burghley House with 10,000 guests invited from across Cambridgeshire, Lincolnshire, Northamptonshire and Rutland from various organisations and charities. Salads, cold soups, fresh fish and fruity cocktails will be hitting our dinner tables on the warm evenings and possibly if we’re very lucky, alfresco! “Dameon’s recipe for June is a real show stopper, the colours are vibrant and exotic, the flavours melt effortlessly into one another and although gazpacho has been around forever, it seems that few people are brave enough to make it at home and serve a cold soup to family or friends. Give it a go and I promise you won’t be disappointed, delicious as a light and fresh main course or as a flavoursome starter!”

Tomato gazpacho with avocado & crab (serves 4)

Ingredients• Crab - 250gms of white crab meat Method Refrigerate until ready to serve Ingredients – • Gazpacho • 700g plum tomatoes • 1/2 cucumber peeled and seeded • 1 shallot diced • 5 red peppers seeded and chopped • 3 garlic cloves chopped • 75mls sherry vinegar • Salt and pepper • Tabasco

stir in the lime and gelatin mix. Refrigerate. Serve Place a cutter in the centre of 4 large bowls, ﬁll equally with the crabmeat and press down with the back of a spoon. Pour equal amounts of the gazpacho around the cutter and then carefully remove. Using a piping bag, squeeze the avocado mixture as in the picture onto the top of the crab. Serve immediately and enjoy!

Ingredients • Avocado • 2 ripe avocados, stoned removed and skinned • 1 red chilli seeded and chopped • 1/2 bunch of coriander • The zest of 3 limes - save the juice separately • 1 gelatin leaf soaked in cold water • 1 shallot ﬁnely diced • 2 plum tomatoes skinned, seeded and chopped • Salt and pepper

A special summer at The Wicked Witch “We will be adding fresh Cornish lobster & Dorset rock oysters to the menu at The Wicked Witch over the summer and ﬁsh lovers who enjoy a treat prepare to be wowed. Dameon’s plans are a salad of lobster, a creamy rich Thermidor simply buttered with garlic. For the oysters, we will serve with a red wine and shallot vinegar, Vietnamese style or just natural. Enjoy any of these dishes with a cold glass of champers or a crisp white wine and really get the taste of summer.” “Asparagus is beautiful at the moment, we source ours from Abbey Parks, Boston. Lightly steamed and drizzled with homemade hollandaise is about as good as it gets but we do hear many people struggling with making the sauce. Here is Dameon’s recipe for a “foolproof hollandaise.”

Method Gently heat the lime juice, when hot add in the soaked gelatin leaf. Put the other ingredients into a food processor and blitz, when smooth,

Ingredients • 100ml white wine • 500ml white wine vinegar • 3 white peppercorns • 1 shallot ﬁnely diced • 1 bay leaf • 250ml clariﬁed butter, warmed

Method – Liquidise everything apart from the last two ingredients together, pass through a ﬁne sieve; season with the salt, pepper and a few shakes of Tabasco. Refrigerate.

• 3 egg yolks • The juice of 1 lemon • Salt and pepper Method Add the wine, vinegar, whole peppercorns, shallot and bay leaf into a pan and slowly reduce by a third, then strain. Put the strained liquid into a metal bowl with the egg yolks. Place the metal bowl over a pan of simmering water ensuring the bowl is not touching the water. Whisk the mixture to ribbon stage and then add to a food processor. Slowly add the clariﬁed butter and process until smooth, and then remove. Add the lemon juice and season to taste.

Diamond delights We’re cooking up some royal treats at The Olive Branch, says Sean Hope

o mark the Queen’s 60 years on the throne, we’re serving a Jubilee Set Menu at The Olive Branch throughout June that includes a soup with regal roots and a pie fit for a king (or queen). Coronation chicken is a dish that’s truly stood the test of time, having been created for the Queen’s Coronation in 1953 by London’s Cordon Bleu School (it’s origins actually go much further back in time). Also on the menu that day in 1953 was a tomato and tarragon soup, later known as Winkfield Soup after the address of the School. We’ve recreated Winkfield Soup for our set menu and also added our own twist to Coronation Chicken by wrapping it in a superb pastry. Do come over and celebrate with us! What to drink with your royal feast? Well, you could go for Champagne, of course, but a great alternative would be a sparkling white from Camel Valley Vineyard in Cornwall. Or, how about one of the superb ciders we serve at The Olive Branch – Hogan’s from Warwickshire is excellent, as is Scrambler from Hallaton in Leicestershire.

Sea n’s Coronation Chicken Pie

Serves 6 For the pastry • Pinch of salt • 200g plain flour • 25g suet • 25g unsalted butter, diced • 11/2 tsp water Place the flour, salt and fat into a bowl and mix with your hands to a breadcrumb texture. Add the water and work to a dough. Allow to rest for around 15 minutes before using. Pie mix • 1 chicken, roast at Gas 1/2 (120°C) for four hours and allowed to cool • 200ml chicken stock • 200ml double cream • 200ml milk • 1 glass dry white wine • 1 glass medium sherry • 1 tbsp ground cumin • 1 tbsp ground turmeric • 2 tbsp cornflour • 1 tbsp ground coriander • 2 tbsp fresh coriander, chopped • 2 tbsp sultanas pre-soaked in sherry vinegar • 2 tbsp dry-roasted pine nuts • 1 onion, peeled and chopped • 1 garlic clove, peeled and chopped 1 Carefully pick the chicken meat off the bone and place in a bowl. 2 Mix all the spices together, place in a pan and singe in a hot oven for five minutes to bake. 3 Mix the spices through the chicken. 4 In a saucepan, sweat the onion and garlic with a drizzle of rapeseed oil until soft. Add the pre-soaked sultanas and reduce vinegar completely. 5 Place the onion and sultana mix into the bowl with the chicken and stir. Add the roasted pine nuts and fresh, chopped coriander. 6 In a separate pan, add the stock, milk, cream and wine and bring to the boil. Boil for five

minutes, then dilute the cornflour with one glass of medium sherry and whisk into the boiling stock. 7 Bring back to the boil, then season to taste. Remove from the heat and allow to cool before adding to the chicken mix. 8 Place the chicken pie mix into a suitable pie dish (28cm diameter). 9 Roll out the pastry with a rolling pin to about 5mm thick. Brush the sides of the pie dish with a little egg wash, then place some thin strips of pastry around the edge to form a collar. 10 Carefully lay the pastry over the pie dish. Trim off excess pastry from around the dish and crimp with a fork. Make a small hole in the middle of the pastry to allow excess steam to escape whilst cooking, then brush all over with egg wash. 11 Allow the pastry to rest for 10 minutes before baking in a pre-heated oven at Gas 6 (200°C) for around 35 minutes (until golden brown). 12 Remove from the oven and allow to stand for five minutes before serving. 13 Serve with minted new potatoes and glazed carrots. Winkfield Soup - Serves 6 • 500g ripe vine tomatoes

• 30g unsalted butter • 1 onion, sliced • 1 clove garlic, crushed • 1 bay leaf • 200ml sherry vinegar • 300ml tomato juice • 750ml beef stock • 2 tsp tomato paste • 1 tsp agar-agar or arrowroot • 1 tsp fresh tarragon, chopped 1 Halve the tomatoes. Squeeze the juice and pulp into a fine sieve and press the juice through into a bowl. 2 Melt the butter in a saucepan, add a little salt, and cook the tomato halves, onion, garlic and bay leaf. 3 Cover and cook for 45 minutes, stirring occasionally. 4 Pass mixture through a sieve and into a bowl, discarding sieve contents. 5 Return the tomato mix to the pan, add the tomato paste, tomato juice and stock, together with the juice extracted from the pulp of the tomato halves. Stir, bring to the boil and simmer for 20-30 minutes. 6 Add agar-agar or arrowroot. Bring back to the boil, stirring constantly. 7 Chill the soup and allow to set before blending again until smooth. Add the tarragon and season. Serve hot or cold with garlic bread croutons.

There is a direct link between CO2 emissions and fuel consumption and the Society of Motor Manufacturers and Traders (SMMT) has published a table (below) highlighting comparison amounts that directly link the respective figures. However, says the SMMT, there are vehicles with CO2 emissions around 30% below the segment average available in every sector, highlighting the low emitting choices available. Where the lowest emitter is shown with emissions of 0 g/km it highlights the sector availability of electric models.

Source: Society of Motor Manufacturers and Traders New car CO2 emissions dropped to an average 138.1 g/km last year 27.2% lower than 15 years ago (189.8 g/km) and 4.2% down on 2010 (144.2 g/km) - according to the SMMT’s newly published ‘New Car CO2 Report 2012’. Meanwhile, motor manufacturers will continue to drive down new car emissions as they seek to meet new European Commission environmental targets. The New Car CO2 Regulation demands that pan-European average new car emissions are reduced to 130 g/km in 2012-15 and to 95 g/km by 2020 - the latter figure remains subject to review. One of the reasons behind the reduction in CO2 emissions on an annual basis is the rising new car market share of diesel cars (a record 50.6% last year) and ultra-low emission alternatively fuelled models (1.3% last year). Diesel cars have grown in popularity because emissions are lower and MPG is significantly better than petrol-engined equivalents, but unless motorists are clocking up more than 6,000 miles in a new diesel car (or 10,000 miles in a used diesel) it is likely to be a false economy as the price premium is unlikely to be recouped, according to car valuation experts at Glass’s Guide. However, choosing a low emission company car with first class fuel economy does

Emission and MPG winners So, look carefully and there are some clear emission and MPG ‘winners’ in the various marketplace sectors. For example, order books have now opened for the new Volvo V40 five-door, five-seat lower medium model where the D2 1.6 litre 115 bhp variant has emissions of 94 g/km and returns 78.5 mpg on the combined fuel cycle. The Swedish marque has adopted an emissions-busting ‘DRIVe Towards Zero’ strategy and has recently announced that from model year 2013 - cars are now available to order - almost all diesel-powered versions of its S60, V60, V70 and S80 will have emissions below 120 g/km. Late this year Volvo will also launch its V60 Plug-in Hybrid - the world’s first diesel plug-in hybrid - with CO2 emissions of 49 g/km (more than 100 mpg) and a range of up to 621 miles. With indicative pricing of between £45,000 and £50,000, the front wheels of the Plug-in Hybrid are powered by a five-cylinder 2.4 litre turbo diesel producing 215 bhp and the rear axle by an electric motor producing 70 bhp. Meanwhile, Jaguar has introduced a 2.2 litre 161 bhp diesel version of its XF model (£29,950 on the road), which emits 149 g/km of CO2 and has combined cycle fuel economy of 52.3 mpg. Stille Nacht Stamford POW Camp 106 Al Tutt happened across letters written by a German POW, which led him to unearth the history of the Stamford POW camp

“In the wooden huts of the Allied POW camps a great debate began, the debate of the disillusioned and the defeated. They were tortured by a sense of sin and guilt. Many were unable to still the nagging question: how had it come to pass that with enthusiasm and self-surrender young men had turned into unthinking instruments of force, into slaves to a perverted notion of loyalty and honour…”

hen walking past the Danish Invader, as the sun dips behind the Jelson housing, one hears the clink of glasses and laughter of patrons, and it is difficult to envisage the WWII prisoner-of-war camp that stood on this site. A compound of huts and wire, of latrines and routines and, one eye-witness says, a watchtower, manned to ensure all is in order and stays so. Hard to conjure up the faces of the Italians incarcerated in the early period of the war, especially after the North Africa campaign, only to be released and repatriated after the surrender of Italy to the Allies in September 1943. Faces to be replaced by those of captured Germans, as well as Austrians, Romanians, Hungarians and the multitude of other Europeans who found themselves fighting and

losing on the ‘wrong’ side. Little is known about Stamford POW camp number 106, then isolated in countryside out on Empingham Road, now engulfed by the Scottish estate. It is listed by English Heritage as a ‘standard’ type and thus would have consisted of guards’ compound, prisoners’ compound, garden plots, recreation ground and sewage disposal works. Also, attached to it, was a subsidiary camp at Collyweston and there is a list of the German POWs in there; a litany of trapped souls, their names consigned to the dust of history; Ernst Krockenberger, Walter V Meegdenburg, Adolf Schoenhofen … Some illumination on the Italian period has been provided by Joe Perduno, whose father was a Stamford camp inmate. Indeed, a number of Italians remained in the area

after the conflict ended, to raise families, contribute and integrate. Less is known of the German contingent within our midst. Those several hundred doughty (ex) soldiers of the Wehrmacht who fought in fronts from Europe to Africa, the Balkans to the Eastern front, who would have been traumatised by capture and surrender; undergone the process of transit and interrogation; become accustomed to the banalities of camp life and the mundanity of physical work in the fields of Lincolnshire. In six letters, written by Max Reinhold, camp number D392662, to his parents back home in occupied Germany, there is a tantalising glimpse of life in Stamford camp. They were penned as late as 1947; it took considerable time and effort, not to mention the process of de-Nazification, to repatriate the

estimated 400,000 Axis POWs incarcerated in Britain at the end of the war. In the ﬁrst kriegsgangenenpost Max addresses his father, Siegfried, who lives in Schönebeck, a town on the River Elbe, on the street of Boeltzigstrasse 16; then in the Russian zone. According to www. stalag3A.com, “in immediate proximity of the Junker aircraft factory, the largest arms factory of Schönebeck, a concentration camp was established, a branch of Buchenwald.” A chilling snap of life back home. But for Max, Stamford is, perhaps, not so bad; having, “passed through many camps”, including, it would seem, in the USA (only 7% of POWs came via American camps) in May ’47 he says, “here we have to get back down to hard work. I have already done a week’s potato planting. But this time will pass too. Slowly

I am beginning to see my way home”. In his next letter in June, he writes to a sister, Ruth, “Your sisterly accusations of amnesia and neglect of the sibling bond are mutual. I constantly feel guilty and so, full of remorse, I reach for my pen”. Sisters eh? He asks to put his Dad’s mind at rest by informing him he has become a teetotaller through “lack of opportunity” and that his Mum will have to get used to “more jazz on the record player” Swing and jitterbug rather than serious music. Disarmingly, he signs off as he has to get ready for Handballspielen. Max next says the repatriation has been accelerated and that his squad (21) will be discharged on January 15th 1948, that he should be home in mid-February and that the last of this group should have left England by 15th April. He adds “What could disturb the life of a POW? Our iron discipline has become a byword in England.” The mask slips… By August, life is sunny and he is swimming and playing table-tennis, employed on a fruit and vegetable farm so not having “to do without my regular fresh fruit.” But by September, “the harvest prospects don’t look too rosy… according to the farmer this coming winter will bring one of the severest crises ever.” He states “there are no motorways in the real sense of the word” no autobahns yet then; and that ”house-building is seen as the more urgent task… that the streets are better than in P (Potsdam?), even side streets are asphalted.” Max’s last letter is December ‘47; he wishes his parents “hearty Advent greetings”. His Mum has asked about his capture. His words speak

volumes. “I am happy to give you the date; it was the evening of the 16th of September at 7pm. You can put a mark against that day, it was the blackest of my life, although in many ways it spared me a lot worse. Let’s draw a veil over it.” In the Imperial War Museum there is a tract, hand-typed in Camp 106. It is a twelve page journal, a building-block to repatriation, with philosophical essays from camp inmates, disowning the Nazi philosophy and proclaiming a new Existential freedom of thought. Sophisticated in style, it does beg the question of who exactly inhabited Stamford camp; were they just landser, the common soldier or did some require specialist reeducation? Did Max reach home in 1948? What would have greeted him in the Russianoccupied zone? Would he warmly embrace his parents and sister again? We will probably never know. But if he did get back, there would be a sting in the tail. As POWs, they had endured many hardships, not least anxiety about family in the Reich, but they were at least isolated from the worst. It would not be till they got home that reality would bite; that they were in a defeated, vanquished country; a nation on its knees. According to Margaret Jackson’s Stamford Chronology, in July 1948 the former POW camp on Empingham Road was used for temporary housing; and a letter from Watchful on 30th July praised the town council for so using the buildings. Indeed, Stamfordians, awaiting rehousing, were living there until the 1960s. But that is another story. The words of a Stamford resident, Charles McCarthy, himself returning from war, provide a ﬁtting ﬁnale. “I came home in December 1946 after three years in the Navy and took my mother to Midnight Mass at the Catholic Church in Broad Street. The priest had invited the Camp Choir from the PoW camp to sing at the service. They were very good and, amongst the carols, all in German, they sang `Silent Night`. Very moving bearing in mind that they were still far from going home. Afterwards, they presented the Church with 14 wooden and coloured carvings depicting the `Stations of the Cross`. Well worth popping in for a look if you are passing by. I hope they are still there.” He will be delighted to know, they are. * My sincere thanks to Anna Sefton for German translation; opening quote by Heinz Hoehne.

Coda Another letter home written by Max has come to light. He writes on 5th April 1946. However, this is from Camp 21, at Cultybraggan in Perthshire. It reads, “My dear parents, I have now been over a week in Scotland. The crossing from California to here was wonderful, though we sweated a lot in Panama. We were all convinced we would be coming home but again that didn’t work out. This time will pass too.” So, Max passed through the Panama Canal and ended up in the Highlands. Camp 21 was a ‘black camp’ holding those considered the most fanatical Nazi POWs. Ringleaders of the so-called Devizes plot — to break POWs out of camps across the country in 1944 and attack Britain from within — were sent to Camp 21. These included Wolfgang Rosterg, a known anti-Nazi who was sent by mistake. He was lynched in Camp 21, and ﬁve of the POWs were executed for his murder. After this, all 2,000 ofﬁcers therein were transferred to other camps. This is, presumably, how Max came to Stamford. STAMFORD LIVING JUNE 2012

In 2012 Great Britain celebrates the Olympic Games and the festival reflects this with the theme “Dreams of Gold”. The Joint Chairman and Design Team Leader, Marilyn Williams, lives near Stamford. Originally from South Wales, she moved to Lincolnshire 30 + years ago with her husband and four sons to farm near Spalding. Her love of gardening soon developed into a keen interest in Flower Arranging and all related aspects of Floral Art. She was first involved in a Lincoln Cathedral Flower Festival when as member and past Chairman of Spalding Flower Lovers Club she was invited to co design with Jenny the “Into the Light” Festival in 1999. Since then she has moved to a farm near Stamford and joined Stamford Floral Arrangement society where she is currently Chairman. In 2005 she was again invited to co design the very successful “Stepping Through Time” flower festival at Lincoln Cathedral. Stamford Celebrates the Coronation The Borough of Stamford celebrated the Coronation in grand style with events extending throughout the month of June. Jean Orpin and Sue Lee give you a taste of the festivities Concert A Choral and Orchestral Concert in Stamford School Hall was the first event on Saturday, May 30th. The programme was carefully chosen with appropriate music. After the National Anthem and Handel’s Coronation anthem, the nationally famous pianist Phyllis Sellick was soloist in Mozart’s ‘The Coronation’. Walton’s ‘Crown Imperial’ and Parry’s ‘England’ completed the programme. Civic Procession On Sunday, undeterred by the wet weather, the Mayor’s Procession from the Town Hall to St George’s Church was led by the town’s Prize Silver Band. Representatives of the forces and town organisations followed, then the Mayor and Councillors and finally the Boy Scouts, Girl Guides and Cadets. A former Mayor, Canon Rees-Jones preached at the Civic Service. Commemoration Tea Monday was a special day for the ‘older residents’. They were invited to tea in the Assembly Rooms and 300 attended. They donned party hats and enjoyed a tea of tongue and ham with salad then cakes, jelly and ice cream. Coronation Day Tuesday, the actual Coronation Day, was the highlight of the week. The day started with church services and bells ringing in celebration. Lucky owners of televisions would have been joined by neighbours to watch the ceremony relayed on television; others listened on the radio. The Carnival procession opened the afternoon events, led once again by Stamford Prize Silver Band: the wet weather persisted but the show went on. All Saints’ Girls’ School won a prize for the best decorated float and E.H. Steele for the best decorated van. Unfortunately the cricket match had to be cancelled; however the children’s sports and other entertainments went ahead on the Recreation Ground. Three sittings of children had tea and drank from souvenir mugs. In between events there were sideshows and the Army Cadet Force gave displays while the Scouts showed their talents in bridge building. At ten o’clock, the Mayor fired a rocket showering red, green and yellow stars and lit

the beacon (near Holland Road in Northfields), one of many around the country built by the Scout movement. The Scouts looked after the beacon camping out that night. The adults completed the day by attending the Carnival Dance in the Assembly Rooms where music was played by the Chordettes Dance Band. Street Parties Many of the streets had their own parties during the week. Teas were provided, games played and the children all received gifts to mark the occasion. As the weather continued to be wet some had to be held indoors. Masterton Road held their party in Blackstone’s sports pavilion while Drift Road party used Mr Foster’s garage. Lambeth Walk managed to have their party outside. There were prizes for the best decorated pram and the child who won the children’s competition received a budgerigar. There was also a prize for the best decorated car. All the children received a Coronation sixpence and a bag of sweets. The celebrations ended with dancing on the Green. In Rutland Road, children received a bag of sweets from Bennets’ sweet factory. High Street St Martin’s held their party in the Old Theatre. The younger children were given a cup and saucer and the older ones a Queen

Elizabeth book. All received 1/-and chocolates from the Marquess of Exeter and a canister of tea for widows and OAPs. The festivities ended with a social evening. Other Events The climax of the celebrations was the Civic Ball held in the Ballroom on Friday 5th June. The Mayor and Mayoress were in attendance and music was provided by Reg Walden & his dance orchestra. During the next week, the Welland Valley Art Society had a show of paintings by their members in the Town Hall including the lino blocks made by Wilfred Wood for the town programme and also his painting of St Mary’s Hill painted for the occasion. This was followed by an Exhibition of Church Plate from Stamford and the surrounding area including precious items from Burghley House. The whole town joined the celebrations with flags and bunting and shops dressed their windows. CANON DONALD GRAY, FORMER CHAPLAIN TO THE QUEEN In the heart of Stamford, tucked away in a quiet little mews, lives a former Chaplain to the Queen. Harjit Gammon went along to discuss the time Canon Donald Gray spent ministering to the Queen’s spiritual needs over a period spanning over 20 years

s one might expect of a clergyman, it seems to me that Gray is an embodiment of what Jeremy Paxman described in his book ‘The English’ as “the virtues of the Church, its gentleness, tolerance and compassion”. When I arrive he welcomes me in warmly, and is naturally attentive. As he ushers me into the cosy house I notice a tray laid with two cups and a plate of shortbread in preparation for our chat. After a tour of the house, which is generously endowed with pictures of Gray variously meeting the Pope, Nelson Mandela or posing with numerous Speakers of the House of Commons, he busies himself making tea for us before settling me down in a comfy chair and fixing me up with a side table for my cup. This is a man content with the satisfaction of having led a life which he has clearly relished and enjoyed. In particular I sense a deep and ongoing affinity with the city and urban life. When I ask what brought his late wife Joyce and him to Stamford he lets out a deep chuckle and says “We chose it because it is only a couple of hours to London”. He goes on to tell me, with evident pleasure, that he still visits London at least once a month, if not more often not least because his

beloved wife is at rest there. Gray was appointed honorary Chaplain to the Queen in 1974-1977 whilst Rector of Liverpool, for services to the Territorial Army, before being promoted to Chaplain to the Queen in 1982. A post he held for 18 years until 2000. Gray explains that the position of Royal Chaplain is a very ancient one. The College of Chaplains consists of 36 members. There are 36 members he adds to represent the 36 weeks a year when there are services to be held in St James’s Palace. The Chaplains preach according to a Rota of Waits in the Chapels Royal. During this period Gray left Liverpool to become a Canon (the Board of Directors) at Westminster Abbey (1987-1998), or to call it by its correct name The Collegiate Church of St Peter, Westminster. Westminster is unusual amongst churches in England in being a ‘Royal Peculiar’. This means it is under the jurisdiction of the crown and not within any diocese. During this time Canon Gray, as a member of the royal household was frequently in the company of the Queen. He recalls, “She was often in and out of Westminster”. I ask him what she is really like. “She is very, very pleasant.

Very sharp, and very interested in the work of the church as a whole. She is very obviously deeply Christian”. He goes on to say, “Her concern was not how she was prayed for but that she was prayed for”. The author of the ‘Book of Prayers by Royalty for Royalty’, among other books, Canon Gray recounts receiving a telephone call in 2000 at his home in Stamford. “This is Buckingham Palace”, the voice announced. Could he bring her a copy of his book? “So I put on my coat and took it. I had a 20 minute private audience”. As a former member of the Royal Household, in his capacity as the Queen’s Chaplain, Canon Gray had frequently been in her company. He attended around 20 garden parties at the palace. One was expected to be sociable and put guests at ease at the parties he tells me. “One of the things I enjoyed enormously was the friendships I made in the House of Commons (he was Chaplain to two of the Speakers of the House). I served with Bernard Weatherill (known as Jack) and Betty Boothroyd, with whom I’m still in touch”. As I leave he reflects a little wistfully, “The job came to an end, and I enjoyed every minute of it”. STAMFORD Living JUNE 2012
