ARE YOU ENJOYING THE SUMMER? It’s hard not to. We’re doing our share with our Summer Fun Guide. It has lots of great information about fun things to do across the state, including hiking and biking trails, boat rentals, state parks, festivals, and so much more. With the help of our guide, there’s no excuse not to get out there!

In other news, Switchback Brewing has opened its new Beer Garden and Taphouse. Be sure to check out our feature on the amazing new space. Plus, we check in with Chris Kesler of Black Flannel Brewery/Restaurant/Distillery to hear about Black Flannels’ venture into RTDs (ready-to-drink) cocktails. Once available only in 802 stores, they are now available in over 2,000 liquor stores statewide. (I’ll take a Cool Hand Luke, please.)

1 oz Metcalfe’s Raspberry Liqueur

1 1/2 oz pineapple juice

3/4 oz cream of coconut

1/4 oz fresh squeezed lime juice

Add all ingredients to a cocktail shaker and shake with ice for 15 seconds. Double strain into a glass with cracked ice. Garnish with a lime wedge and pineapple slice with leaves!

OLD VERMONT

1 1/2 oz barrel-aged gin

1 oz Metcalfe’s Vermont Maple Liqueur

2/3 oz orange juice

1/2 oz lemon juice dash Angostura bitters

Shake ingredients with ice and strain into a chilled cocktail glass. Garnish with a twist of orange zest.

HOTT FUZZ

VERMONT DISTILLERY

1 1/2 oz mezcal

1 1/2 oz Metcalfe’s Peach Liqueur

3/4 oz lemon

3/4 oz lime

spoonful of mango habanero jam sugar for rim

Run a lime around the rim of your glass then dip in sugar. Shake all ingredients with ice and strain into your glass over fresh ice. Serve with a lime wedge to garnish.

VERMONT MAPLE MINT JULEP

SMUGGLERS' NOTCH DISTILLERY

8 fresh mint leaves

1/2 oz SND Bourbon Barrel-Aged Maple Syrup

2 oz Smugglers’ Notch Distillery Straight Bourbon crushed ice mint sprig for garnish

Place the mint leaves and maple syrup in your serving glass, muddle the mint to release its flavors into the syrup. Add the bourbon and pack the glass with crushed ice. Stir quickly until mixed, then top the glass with more crushed ice. Garnish with mint sprig and serve immediately.

Ready-to-drink cocktails are a convenient at-home option that require no mixing

WHAT ARE RTDs?

RTD stands for ready-to-drink, which means drinks that are premixed and ready for consumption. They are a convenient way to enjoy an alcoholic beverage at home or on the go. They typically have a similar alcohol content to beer.

There are three basic types of RTD beverages:

1. Malt-based  begin with a maltbased alcohol source like hard seltzers (43% of the RTD market), hard kombucha, hard tea, and other malt beverages (37% of the RTD market)

2. Wine-based includes canned wine and wine cocktails (9% of the RTD market)

3. Spirits-based include ready-todrink cocktails, shooters, and seltzers that are spiked with spirits (11% of the RTD market)

The RTD market was just under $800 million in 2021 and is expected to grow to as high as $2.5 billion by 2030. Spirits-based RTDs have experienced enormous growth since 2021.

WHY ARE RTD CANNED COCKTAILS SO POPULAR?

There has been an at-home cocktail culture emerging for years, and COVID accelerated its growth. Spirits-based RTDs make it easy to deliver high-quality drinks without the fuss of purchasing or making mixer ingredients (e.g., simple syrups, herbal infusions) that tend to be used once and then go to waste. As the market for RTDs grows, so does their variety and quality.

RTDs also meet the needs of more health-conscious consumers. Brands that have been around for

years tend to contain a lot of sugar, artificial sweeteners, and coloring. The introduction of hard seltzers gave consumers a healthier option by providing a lighter drink with minimal sugars and carbs.

Producers have stepped up their game in recent years, providing higherquality options, thus helping the RTD market expand. Customers are drawn to premium and high-quality products.

THE VERMONT RTD PROBLEM

Vermont is a “Control State,” and as a result, all spirits-based beverages

are distributed by the State. Until 2022, this included spirits-based RTD products. Although malt-based RTD beverages enjoyed shelf space near their beer brethren, spirits-based RTDs had to be sold in the liquor section of 802 stores controlled by the State. This limited the sales outlets for spirits-based RTDs to around 80 stores. By contrast, over 2,000 stores could sell beer and malt-based RTD products. This was clearly not a level playing field.

A CHANGE HAS COME

During the 2022 legislative session, Black Flannel worked with State legislators, the State Department of Liquor and Lottery, and other members of the Distilled Spirits Council of Vermont to change laws so that spirits-based RTDs would no longer be in the State’s control and could be distributed by private parties. RTDs could share shelf space with malt-based beverages at over 2,000 Vermont stores. The law passed in favor of private distribution and went into effect on July 1, 2022.

BLACK FLANNEL ENTERS THE RTD MARKET

Black Flannel looked at the range of products available in the RTD space and decided the market could benefit from a truly professional, creative cocktail version of a spirits-based RTD. They formulated their products to simulate a freshly made cocktail (as if you were sitting at our bar watching one of our professional bartenders mix your cocktail for you).

Black Flannel Distilling launched three varieties of RTD products on July 1, 2022.

Cool Hand Cuke is a London dry gin-based cocktail featuring fresh, cold-pressed cucumber, mint-infused simple syrup, fresh lime juice, and soda water.

T-Thyme is like a hard Arnold Palmer infused with our vodka and fresh thyme.

Ginger & Mary Ann is rum-based with fresh ginger, pineapple juice, lime juice, and Angostura bitters.

The spirits are the secret ingredient in all Black Flannel RTDs, which are small-batch and craft-distilled locally in the same facility where the cocktails are mixed and canned. Creating all spirits, from sugar source to glass, means the level of freshness and quality is unparalleled in the industry. It costs more to produce, but the results are worth it. Switchback Brewing’s Newest Venture

An expansive Beer Garden & Tap House is now open in Burlington

Switchback Brewing Company is best known for the “unfiltered, undefinable” and, according to the company, “unrivaled” Switchback Ale after which the company is named.

However, the list of things the company is known for could change because of Switchback’s new 3,700-square-foot Beer Garden & Tap House. The expansive new Tap House is located in a 120-year-old historic brick building attached to their current production facility at 160 Flynn Avenue in Burlington and nearly doubles the space of the company’s existing Tap Room. The Beer Garden features a large patio surrounded by an acre of lawn.

A NEW BAR AND A NEW BEER

Plant Engineer Gretchen Langfeldt, the longest-serving employee at Switchback, listed the features of the new space.

“The new bar will feature 20 taps pouring Switchback’s signature beers, including a variety of smoked and barrel-aged offerings and even housemade nonalcoholic hoppy seltzers,” Gretchen says. “Additionally, a few of the draught lines will be dedicated to the employee-owned company’s new side project, Askew Beer Co.,” which will feature products with flavors people have never encountered before.

“It’s a project where the employees can spread their wings and fly and really do whatever they want. More

creative styles and thinking outside the box,” says Digital Marketing Lead Amy Lieblein. “Between our creative drink and food offerings, knowledgeable staff, and our expansive lawn for hosting events, we’re looking forward to being a go-to community hub in the South End.”

The Beer Garden & Tap House’s opening coincides with the release of a new beer called Mansfield IPA. Made with mosaic and centennial hops, it is refreshing, somewhat hazy, and easy to drink.

COCKTAILS MADE THE SWITCHBACK WAY

The new establishment’s menu doesn’t stop at the tap list, however.

The new joint will also offer cocktails, some made with liquor distilled from Switchback’s own beer. That venture was born out of innovation, a commitment to sustainability, and necessity.

In March 2020, Switchback ramped up brewing for St. Patrick’s Day. But when the pandemic shut them down, they were left with thousands of gallons of beer in kegs that were at risk of going to waste. But Switchback turned that would-be waste into liquor by partnering with Appalachian Gap Distillery.

Switchback now offers Essential Vermont Malt Whiskey, a malt whiskey that’s been aging for over three years. Switchback describes it as having a “beautiful amber hue and delicate notes of caramel and butterscotch.”

They also make Essential Vermont Hopped Gin, “a refreshing spirit evoking notes of fresh flowers, herbs, citrus, and evergreen,” with a prominent hop flavor from the beer.

WE CAN’T FORGET THE FOOD!

Switchback’s newest hire is Executive Chef Chris Cantrell. He is spearheading what Managing Partner Josh Weber describes as a “craft-casual” approach. That means seasonal-based German-inspired American cuisine—paired, of course, with spectacular beer. But the beer won’t just be an accompaniment; the goal is to incorporate beer into the food as often as possible.

“Whether we’re steaming it, sautéing with it, or infusing it within the menu items themselves,” Josh says, “the chef is excited to utilize this beer in various recipes to enhance guests’ enjoyment.”

to eat alone are just as important as guests who come in for the heightened energy at the community table.”

Wherever you choose to relax with a good beverage or bite, Switchback promises not to lose the character it’s always maintained and that its regulars have come to cherish. They hope to be a community hub and a place where people can feel comfortable.

“I’m looking around, and it’s beautiful here,” Josh says. “We wanted to create a program where we can really play to the community, including everybody from near and far. [We wanted to] create a destination where people can travel from all over to experience.”

SWITCHBACK’S COME A LONG WAY

The new enterprise is a huge leap from Switchback Brewing Company’s roots. The company was founded in 2002, and, at the time, Master Brewer Bill Cherry focused solely on brewing Switchback Ale. For a full decade, the “reddish amber ale” was available only on draft.

The beer’s flavor is so complex that it can’t be narrowed to a single style category for submission to beer competitions. But it’s clearly been a major success. It’s now distributed throughout Vermont, New England, and parts of Virginia and New York State.

A PLACE TO HOST YOUR NEXT GATHERING

When you do visit in person, the Beer Garden & Tap House will also feature regular community events, including movie nights and special dog-friendly gatherings. The current Tap Room and patio are available for rental and to host programming like dinner experiences or community fundraisers.

Marketing Manager Abbe Carroll says the new Beer Garden will also continue the philanthropic programs Switchback supports.

“We open up the space to a lot of organizations so that they have a platform and a place to promote their mission and be able to fundraise,” she explains.

Fable Farm Fermentory creates “living” wines that salute

“Our mission really was to use our agriculture to bring people together, to develop urban-rural connections, and to make farming fun again,” Chris says.

FROM FORAGED FRUIT TO WINE

Over the next year, as every element of the farm grew, fruit fermentation and winemaking began. At present, Fable Farm Fermentory creates “living” wines from foraged and locally grown fruits like apples, pears, and grapes, along with herbs, saps, and honey.

The Piana brothers pride themselves in using no chemicals or sulfites in their products. Instead, wines and ciders are fermented with wild native yeast, then cured in a cave and left unpasteurized and unfiltered. All of their wines and ciders ferment out totally dry, though some express a fruity sensation of sweet.

BOTANICALLY CORRECT PRODUCTS

The Fermentory offers an impressive variety of products, including sparkling and still ciders, some infused with elderflower, currants, or dandelion, sparkling and still grape-apple and grape wines, and cider vinegar, among other herbal

elixirs. Recently, they’ve also begun making meads, using birch and maple saps as their base. One standout among their nonalcoholic offerings is a sumac soda, made with foraged sumac and sweetened with maple syrup.

EVENTS CELEBRATE COMMUNITY

The Fermentory’s reputation as an event venue has grown along with Fable Farm’s reputation as a venue for weddings, business meetings, retreats, and music festivals.

On Saturdays, from 1pm–6pm, they host cider and wine tastings in their Tasting Room. What’s more, every Thursday night through September 26, they host Feast & Field, a celebration of music, food, and community held in the farm’s orchard. And from October through the end of March, they continue their Thursday live music gatherings at the winery. Called Rumney Sessions, they are a scaled-down but equally spirited iteration of Feast & Field.

On Thursdays, the gates open at 5:30pm, with live music at 6pm. Bar service runs from 5:30pm–9pm, and food service runs from 5:30pm–8pm. Their dinner menu, which changes throughout the summer, features local

organic food from Fable Farm and Eastman Meats and vegetables grown across the street and harvested within 48 hours of being served.

“It’s a very raw, beautiful human experience,” Chris says of Feast & Field.

ARTISAN CHEESE, PICKLES, AND PIZZA

While at the Fermentory, Chris encourages you to mix beverages in flights to suit your tastes, then pair

them with local artisan cheeses and seasonal pickled vegetables made from the Fermentory’s own garden.

They make pizzas on-site, too, using organic Vermont-grown wheat for their sourdough crust.

“The pizzas are a great vessel to highlight our farm-grown vegetable and meat options. They can get pretty exotic, even the sauces,” Chris says. “Most of the toppings are grown on the farm. So, it’s really a farm-totable wine and eating experience.”

An Open and Welcoming Marketplace

The Brattleboro Food Co-op has been serving Vermonters for nearly 50 years

Cooperatives are a special type of institution. Rather than operating to please outside investors, they’re owned and controlled by their own producers and users. That describes the Brattleboro Food Co-op to a tee. It builds on the core values of the “Shop Local” movement, helping people in the community market their products to their neighbors. In fact, Brattleboro Food Co-op says its goal is to be “an open and welcoming

marketplace for everyone in the community and beyond.”

The Co-op carries a wide variety of products, including locally farmed produce, humanely raised local meats, and Vermont cheese. It also offers made-from-scratch meals in its deli, natural, organic, fair-trade, and sustainable grocery items, high-quality wellness products made locally, and one of the most extensive beer and wine selections in the region.

Jeff Houle has managed the beer and wine section for the past 15 years, which has given him a wealth of knowledge of local spirits. He spoke with BrewView about his job and the Co-op in general.

“Through the years, I’ve learned that I don’t pick products based on whether I like them or not,” he says. “I buy products based on what I think the consumer is looking for.”

He cites the trends in the beer

and can describe what they’re looking for, I can always point them in the right direction,” Jeff says.

He says those interactions with customers are part of what makes the work so joyful and what sets Brattleboro Co-op apart from the big box stores.

When he recommends something to a customer, and they come back to say it was a hit, “It’s very rewarding,” he says.

The Brattleboro Food Co-op also offers wines from all over the world but focuses mainly on small productions with comfortable price points.

“With wine, we have a very eclectic mindset. We try to focus on small family-owned wineries,” Jeff says. “We have organic, and we have all-natural; we run the gamut.”

In addition to the marketplace, the Brattleboro Food Co-op houses offices, a conference room, and a community room on the second floor. There is also a commissary kitchen and cooking classroom. They have a café where local musicians perform and 24 apartments that the Windham & Windsor Housing Trust owns and manages.

Plus, the Co-op is a cool place to hang out and shop. “What you get at local co-ops is face-to-face interaction,” Jeff says. “We have a great selection, and because we focus on local goods, you’re not going to find what we carry in a supermarket.”

From an economic standpoint, the Brattleboro Food Co-op shines. The money you spend there goes back into the local economy. Studies show that 43 cents out of every dollar spent in

a chain store stays within your local economy, whereas 67 cents of your dollar stays local when you shop local.

“The majority of the time, when you walk into a big box store, you’re not greeted, you’re not given any insight into the selections you make,” Jeff says. “You just walk in, pick something off the shelf, and then go to the checkout. At a local community-based market like we are, you’re going to have three or four interactions with people before you walk out the door.”

Next year will mark the Co-op’s 50th anniversary in business. Marketing and Community Relations Manager Amy Crawford says the Co-op will celebrate in style all year long. A birthday party will be held in February, but they’ll also host events and special sales all year long, starting in January 2025.

Grass Queen is the first cannabis grower in Vermont to utilize Cannatrol technology for drying and curing their flower. This technology has proven to retain more terpenes and THC. Cannatrol is a local Vermont company working to enhance the quality of perfectly dried and cured cannabis.

As with most Cannatrol products, the initial aroma of Garlic Budder was mild and to someone not familiar with Cannatrol, underwhelming. However, we knew the aromas would really come alive when we cracked open the nugget. The earthy and savory aromas overwhelmed our noses, bringing a room full of smiles and filling us all with excitement and anticipation.

The nugget itself was frosty as a Vermont snowstorm! Red

hairs protruded from this gorgeous kelly green glistening gem, captured with a tight-as-can-be trim job.

Earthy and savory notes led to complex smells and tastes. Starting off as a sweet and sour taste on the lips with a pleasant spicy pine note halfway through and finishing off with a delightful sweetness, this smooth and rich smoke allowed for an even and consistent sesh. It’s not often that we all agree that we don’t want the joint to end and savor every drop of this savory strain.

For our terpene lovers out there, the dominant terpenes are myrcene at .66%, limonene at .53%, and beta caryophyllene at .4%; linalool, last but not least, comes in at .26%.

Some strains have flavors and aromas more complex and beyond what terpene tests tell us, and Garlic Budder is just that—complex, long-lasting, and intense!

We noted a “heavy stone” and “what was I talking about” mid-sentence, as Garlic Budder (this batch testing at just over 20% THC) became unforgettable.

GROWER: Island Pond Cannabis

STRAIN: Blue Sunset Sherbert

GENETICS: Sunset Sherbet and Purple Punch cross Island Pond is premium indoor flower hand-tended and grown by three siblings in the Northeast Kingdom of Vermont. “We speak of grass in vibes.”

Packaged beautifully in a sealed plastic sleeve, we saw a lovely deep shade of green and rust-colored stigmas. On a closer look with our jeweler’s loupe (x 40 magnification), the opened sleeve revealed stigmas clinging to the extremely tight manicure job. Trichome coverage was moderate and what most would consider “industry standard.” Trichomes were found intact in the silhouette’s nooks and crannies and, after breaking

the nugget open for deeper inspection, was mostly clear, with some milky, and a few amber heads. The tight structure and visible pockets where seeds may have been gave us a feeling of nostalgia for Canada’s greens in the ’90s.

The aroma was pleasant, with a moderate spicy and sweet combination on the initial inhale. With some fruit and berry tones and earthy aromas kicking in, we dug our noses in deeper. We couldn’t help but wonder if the Northeast Kingdom (NEK) terroir was coming through.

As we ground it up for rolling, the spicy terpenes rained louder, likely terpinolene and/or limonene. Though there were no terpene tests available, knowing the plant’s lineage helps us make an educated guess as to the predominant terpenes we experienced.

Upon tactile exploration and the grind, we felt a dryer, almost Coloradan rather than Canadian-style nugget, leading us all to a long, slow smoke, taking our time between inhales, where we held our joints to the flame more than once.

The dry feel led to dry-feeling initial inhalations, with a light-bodied smoke. As the smoke went on, it smoothed out, leaving an energetic, uplifting buzz and lip-numbing sensation. Lab tests showed just over 18% THC.

The strain is helpful for making to-do lists and motivating your soul, and the snazzy packaging speaks to the cultivator’s perspective and thoughts: “Warm berries off the vine, action is medicine, barefoot on pine needles, euphoria, lake swims, seedlings of the earth, tan lines.”

Tao Labs is run by a first-generation American family with Vermont roots going back over 250 years. Tao Labs is a

100% minority-owned, small-batch, in-house cultivation and extraction company.

The initial aroma on opening was a strong, earthy wooden scent, followed by a tangy yet captivating sweetness. This winter harvest flower was provided to Grass Queen in bulk and then divvied up right at store pickup in cylindrical and colorful cardboard GQ packaging. Upon inhalation, we flashed back to our good old days of picking raspberries in the muddy brambles of an old farmhouse, with dirt clinging to the inside of our nostrils and raspberry seeds sticking in our teeth.

Though the typical coloring of this strain is usually a lighter, almost minty green upon the eyes, this phenotype had impressive dark purple coloring with orange stigmas visible throughout and clinging to the tightly trimmed nugget.

We needed our jeweler’s loupes to view the magic and the trichome heads that house the THC and terpenes. This particular strain and phenotype test at just under 20% THC and over 2.7% terpenes. Limonene, car yophyllene, and pinene terpenes create familiar and enticing aromas, followed by the all-popular myrcene, which supports Punch Breath’s relaxing effects.

A super-dense nugget, it took more than a light touch to break it apar t in preparation for rolling. Not too sticky on the fingers or in the grinder, Punch Breath was a pretty, colorful, fluffy, and sandy mix ready for us to roll and rock!

The smoke was light-bodied and dry, giving us a quick and effective full body and head high. True to many purple-colored strains, we needed to relight the joint a few times. This strain left us feeling relaxed and uplifted all at once.
