Editor’s Note A NEW BEGINNING: Nearly a month ago, Chad Neuman hired me as the new editor to CITY magazine. Growing up as a Lakeland native, I have encountered Lakeland at its worst and greatest moments. I have had the pleasuure to see it emerge into a CITY of wonders. “Be the change you want to see in the world,” states Ghandi. We’ve used this statement to inspire CITY maga- * zine. Lakeland is a CITY with many country reminders. We want people to enjoy their CITY and to become passionate about where they reside. At CITY magazine we are here to bring change to you, so you can bring change to Lakeland. Our objective is to get you involved in the grand opening of new buisnesses and resturants. We want to see the community of Lakeland step out of their housing district and onto the CITY streets. You might be wondering how it’s possible to increase passion within everybody without being overpowering. Our solution: We’ll be reorganizing our columns, streamlining the articles, and taking great pains to make sure the articles and programs we publish continue to be of the highest possible quality. For example, in coming issues you’ll notice that some columns will be consolidated and new ones will be added. CITY will be the first to enlighten you on what’s new and energetic. Lakeland Pig Festival is the Florida State Barbecue Championship. What started as a small festival in 1997 has evolved into a festival with over 300 BBQ teams and over 30,000 in attendance! The Junior League of Greater Lakeland has provided volunteers to help run the event for the last decade. The pig festival has generated over $100,000 in contributions to charitable organizations within Polk County since 1997. The Lakeland Pig Festival was

anywhere. The Backyard competition follows KCBS rules and regulations. The KCBS is “the largest international organization of barbecue enthusiasts” and has sanctioned the Lakeland Pig Festival since its

first contest in 1997. Professional teams travel from all over the U.S. to compete in four categories: Ribs, Chicken, Pork and Brisket who come in great numbers to enjoy the atmosphere and the Florida sun-

shine. It is a little known fact that most of the judges travel great distances to participate in the Lakeland Pig Festival and judging for every pro contest has been 100% by KCBS trained and certified judges so far. Over 200 teams from 17 states have competed in Lakeland since the Pig Festival’s inception, and many of these well known teams return year after year whom have helped contribute over $100,000 to charitable organizations within Polk County since 1997.

How the Tigers met Lakeland In September 1965, ground was broken for what would become the Tigers new Spring Training home. Now, 2010 marks the Tigers 74th season at “Tiger Town” in Lakeland, extending the longestlasting relationship between a major league baseball team and a current Spring Training host city. The 2010 spring season also marks the club’s 45th consecutive season of exhibition play at Joker Marchant Stadium. Tiger Town is the Spring Training headquarters for the Detroit Tigers and the regular season home of its minor league farm team in the Class A Florida State League, The Lakeland Tigers.Tiger Town is owned and operated by the City of Lakeland. Joker Marchant Stadium was used by the Detroit Tigers for Spring Training for the first time in 1966 at which time it contained seating for 4,900 spectators. Expansion projects undertaken in the early 1970’s and the addition of new grandstands along the left field foul line in 1988 brought the stadium capacity to its current capacity of 7,100 seats. The Detroit Tigers began coming to Lakeland for Spring Training in 1934 and have been coming back each year ever since. The 70 year relationship between the Detroit Tigers and the City of Lakeland is the longest lasting relationship between a Major League baseball team and a Spring Training host city.

Liquid Nitrog By: Alyssa Hunt Using liquid nitrogen to make ice cream is nothing new. People have been making “instant ice cream” for years, but making liquid nitrogen ice cream has become a craze that’s sweeping the trendy cooking shows. Molecular gastronomy is the merging of scientific tools and techniques with culinary arts using tools such as centrifuges, liquid nitrogen, microscopes or lasers in the preparation of food items. So, it only makes sense that making ice cream amidst clouds of smoke and a big container of liquid nitrogen is the “in” thing to do among ice cream aficionados. So you may ask, what is liquid nitrogen and where do you get it? To the chemistry lab we go... You might remember from science class that most of the air we breathe is nitrogen (about 78%) with 20% being oxygen and the remaining 2% a mixture of other gases. Liquid nitrogen is -320°F or -196°C (in

other words, it’s cold). While liquid nitrogen is used for many temperature-related applications, it’s particularly useful for freezing foods because nitrogen is odorless, colorless and tasteless. Where do you get Liquid Nitrogen Icecream? It’s not as easy as running to the local grocery store to buy milk.

Liquid nitrogen must be stored and transported in a special container called a Dewar, otherwise it will evaporate very quickly. Your best bet is to search your local Yellow Pages for a supplier of liquid nitrogen. You can also call a pediatrician to find out where
