Fear of Frying Welcome back to achieving your ultimate goal of wellness. By now, you may have noticed that many of your initial symptoms have eased and you are feeling much better. Within this letter we thought it important to highlight some very important facts about fats, the proteins you eat and how weak acids can help you. Fat is not essentially bad for us, but when we eat too much of the wrong types of fats, we become more prone to developing a range of health problems, including stroke, diabetes, heart attacks and clogged arteries. Many people have an unrealistic fear of fats due to lack of education. Oils are our body’s main source of EFA’s, essential fatty acids. The Human body cannot produce these EFA’s itself and relies totally on them being consumed. EFA’s are used by cell membranes for protection and stability and also for the production of certain hormones and other chemical messengers like prostaglandins.

Monounsaturated oils provide much more cell stability than polyunsaturated oils without creating heart disease or cancer risk, but do not have as many Essential Fatty Acids.

Commercially produced oil is made for long shelf life, for the convenience of consumers as well as manufacturers. The process used is able to extract 96% of the oil available from the source using heat and organic solvents. As you can imagine this also extract all of the protective agents. “When Good Oils Go Bad” One of the ways that oils can become a problem is through oxidation. As oil is exposed to heat and oxygen the cells break creating free radicals. A free radical is a molecule that has an unpaired electron in its outer orbit. Free radicals create havoc by destructively snatching electrons from other molecules around them to complete themselves, thereby turning it into a free radical and so the pattern continues. Olive oil, a monounsaturated oil, provides EFA’s as well as providing great protection for your cell membranes. In addition to this, it has the highest levels of anti-oxidants, bioflavonoids, lecithin and vitamin E of all of the oils. Extra Virgin is the best kind to purchase. Ghee is the best form of fat for the body, otherwise known as clarified butter it helps remove toxins from the organs and joints and also helps with lubrication of joints and tissues in the body. Ghee can also help to balance cholesterol and is an ideal food to help strengthen digestion. Other “good oils” include sunflower oil, soybean, walnut and pumpkin oils. They have more pronounced tastes which you may or may not enjoy, but you can definitely experiment.

As free radicals build up in your body, what you start to see over time is aging, cell dysfunction and degeneration of tissue (early rusting). This can show up in a variety of ways, from skin that becomes wrinkled, to a weak back, to cancer and numerous other symptoms. One of the most significant sources of free radicals is oxidized fats. Fats become oxidized when exposed to air or when they’re fried.

I’m sure you are aware of the funny smell that oils acquire when they’ve been left on the shelf for too long. This smells means that they’ve oxidized or become rancid. You’ll also notice this smell when you go to a restaurant that does a lot of deep fat frying, especially if their oil has been reused too often. Another problem comes from foods with partially hydrogenated oils in them. A partially hydrogenated fat is less likely to oxidize and that’s why it is added to so many products on the market. For example most potato chips, hot chips, shapes, biscuits etc. Partially hydrogenated fats will increase the level of trans fats you eat, trans fats can increase your risk of heart disease more than saturated fats so please be aware read the labels carefully and know what you’re consuming.

You can also get Essential Fatty Acids from nuts, seeds, olives, soybeans and avocados, while soybeans and egg yolks are great for Lecithin. Be sure that the nuts you choose are raw and unsalted and that egg yolks are left a little runny.

“Never Eat”…..

“It is never too late to be what you might have been.”

Anything fried. French fries, fried onion rings, fried egg rolls, fried fish, donuts, tortilla chips, potato chips or corn chips. I know they taste so good, but when you think of the damaging effects these foods will have on you over time, it’s easy to see why you should stop. Obviously it’s not going to happen over night, but eat them regularly enough and the effects will definitely show in years to come. Especially, don’t eat these foods in restaurants where they use their oil over and over again. You can smell the rancidity in the air as you walk near a fast food restaurant; perhaps use this smell as a deterrent, a reminder of the ill health it can cause. Instead if you absolutely must have French fries or a Donut, make it as a special treat that you’ve cooked yourself. When cooked at home, at least you can use fresh oil that’s high in mono-unsaturates and throw it out after one use.

“Don’t Buy”

Another important aspect of health is in the understanding of proteins. We have found over time that many people who eat protein remain deficient in total proteins. Protein are composed of amino acids and is the basic building block of cells. Animal sources of protein include meat, chicken, fish and eggs. Why is it that your body is not using the protein it gets? Before we answer this question let us help you to understand the important benefits of eating protein. Too little protein results in loss of the muscle tissue, which is needed for movement and to protect our major organs during times of stress. Loss of muscle tissue is the most important indicator of many age-related diseases and loss of vitality.

However substitutes for nearly all of them can be found in your local health food store, so it’s simply a case of finding different options. “Do Buy” Olive oil, Flaxseed oil, Coconut oil and Ghee. If you need to use shortening for recipes, there are now brands available that are non-hydrogenated and don’t contain Trans fats, available from your local health food store. You now have all the information you need to add another step to the improvement of your overall health! The hardest part may be eliminating your taste for fried foods, if you eat a lot of them, but arming yourself with the knowledge of how they can harm you should help. It will be much easier to substitute better oils for the ones you may have been using… no change in taste or habit is required.

Why does it do this? It may be because of unknown and probably unhealthy eating habits. As your pancreas senses food in your digestive system, it begins to produce the enzymes (called proteases) that will be used to break down protein into amino acids.

Amino acids are the end result of meat or proteins being broken down by eating and absorbing food. The amino acids are then put together in your body in numerous ways to form organs like your liver, muscle tissue, your hair and every cell and tissue in your body. This is why eating and absorbing proteins correctly is important. Your body will release more enzymes than the body needs, but this is normal. Excesses of enzymes are digested and absorbed into the blood. We need a certain level of these enzymes in the blood to help break down and rebuild protein structures throughout the body on a regular basis. The pancreas needs to be stimulated in order to release the enzymes when they are needed. Many people, because of the types of foods that they eat (or avoid), don't stimulate the pancreas enough to release enough of these enzymes. What types of foods will stimulate the pancreas? The answer is; weak acids.

Remember earlier, we advised you that lemon juice stimulates the pancreas to release bicarbonate, which is an alkaline buffer that helps maintain alkalinity of the intestines. Alkalinity equals health. But here is another benefit of these weak acids. They also stimulate the volume of protease enzymes. These enzymes are needed by the intestines to break proteins down into amino acids. At the same time, the alkaline buffers enhance activity of the protease enzymes by altering the pH to one that's more enzyme friendly. Most enzymes work better in a more alkaline environment. If you avoid weak acids in your diet, you will have a harder time digesting and recycling proteins because you won't have enough enzymes available, or the right environment for it to work in. So what do you do to increase these weak acids?

Stress and anger also cause acidity to develop. The best way to correct an acid condition, is to put freshly squeezed lemon in your water three times a day, eat an alkaline diet with lots of fresh vegetables and fruit and importantly if you can go for a walk in the morning is also a good idea. Also laugh often as a quote from Dr Contreras reveals how important laughter is;

Lemon or lime juice added to your water. This simple hint can improve your health and help you absorb protein efficiently. Therefore, it is recommended to have three glasses of: ½ a lemon squeezed in water daily. While these weak acids are important to good health we must also remind you that it has been found that in excessive acid conditions, bacteria, fungus or viruses can attach themselves to the inner wall of the arteries. This can cause plague to form restricting the blood flow and causing cardiovascular problems.
