HOLIDAYS IN 2020 How to navigate the holidays in 2020 The holiday season can be stressful under the best of circumstances with juggling family, friends, gatherings and gifts. With a pandemic, it makes this holiday season an uncertain time we all are trying to navigate for the first time. Understand that this year will be different with smaller gatherings and that it's okay to politely decline invites! Whatever you feel comfortable with is most important and totally understandable!
How to turn down an invitation if you don’t feel comfortable The pandemic has altered our social lives and presented unprecedented social challenges. As restrictions have eased people are hosting parties and other social engagements. It's important to know that it's okay to ask the host how many people are invited, whether the gathering will be held inside or outside and other details of the plan. If you feel uncomfortable, it's best to be honest by letting the host know with the unexpected pandemic that you are unfortunately not seeing anyone in person until you feel comfortable with where we are with these things and hope they understand. Don't feel guilty about your safety!
how to cope with holiday stress The holidays are often a time when we focus on others, by sending cards, buying gifts, and cooking food, but during high stress times it is more important than ever to find time for you! If you know that the holidays are going to be stressful, make sure you are scheduling some "me" time. When you start to feel overwhelmed, try doing a workout, a few minutes of meditation, journal, or talk to a friend. It's also important to make sure you are getting enough sleep, hydrating, eating nutritious meals, and are carving out time for self-care (which can be done in the smallest ways).

With the unexpected pandemic, it's created a big challenge for all of us! Here are some tips to host a safe + small gathering! First, assess current case levels in your community and city mandated restrictions to help you best make the right call, whether that’s canceling or limiting the number of guests you’re inviting. Also consider your party’s location (indoors vs. outdoors), the party duration, and where your guests are traveling from.
guest list Be transparent about who all are going to be present at your party. Your closest friend might not be comfortable with someone who has been very social with other people. It’s better to have a get-together where everyone knows each other and is already comfortable with each other. The goal is to keep it small and intimate so that everyone feels comfortable during these times.
Invitations Make sure you give guests plenty of notice before your event. Keep in mind that nothing is how it used to be, so friends who could come over at a moment’s notice might not have the luxury of a babysitter, or many other reasons.. If it’s a celebratory event like a birthday or a more formal dinner party, you could add a special touch in the form of an e-invite using a site such as Paperless Post.

food & Drinks To limit the spread of germs, avoid buffet style for your food. I'd recommend already plating the main meal and have all appetizers on plates per each household. For drinks, consider bottled and canned beverage. Although not the chicest, but using disposable plates and cups also eleminates the spread of germs.

how to design a charcuterie board
1. Place everything on a flat wooden surface, such as a butcher block or large cutting board 2. Add meats such as prosciutto, salami, soppressata, mortadella, and capocollo. Served either flat or in loose rolls and thinly sliced 3. I recommend using at least 3 different cheeses in different shapes and sizes such as brie, smoked gouda, and Pecorino Romano 4. Fill small bowls that can be placed on the board with mustard and fig jam 5. Add fresh fruit such as grapes, strawberries, raspberries, cranberries, figs to help add color to the board 6. I like to use a variety of different crackers and breads and place them in different areas on the board 7. To help fill the board, I like to use nuts, dried fruit, and olives as filler 8. Finally, add fresh sprigs of thyme or rosemerry as accent pieces
HOLIDAY ENTERTAINING foolproof recipes Turkey + Sweet Potato Casserole! + 1 package ground turkey + 2 medium sweet potato’s + 1/2 shallot, chopped + 3 garlic cloves, minced + 1 small zucchini, chopped + 1/4 cup carrots, shredded + 1/4 cup peas + 2 tbsp tomato paste + 1/2 cup broth of choice + 2 tbsp avocado oil + spices to taste: salt, pepper, garlic, paprika Steam or boil sweet potato for about 20 min until you’re able to stick a fork through them. Peel skin and set aside to cool. In a large skillet, heat avo oil and sauté shallot + garlic for about 2 min until translucent. Add veggies and sauté for another 2-4 min, then add turkey. Using a spatula, break the meat down until the pieces are very small. Add spices, tomato paste & broth. Stir well, lower heat and cover. Let simmer for about 10 min. Transfer to a (oven safe) dish and evenly distribute with the spatula. In a separate bowl, mash sweet potato’s, season with salt and pour over the turkey. Using the spatula, make the top smooth & even. Bake for 20 min on 375. The best (& easiest) marinated mushrooms recipe! +Bella mushrooms (or whatever you prefer) +1/4 cup olive oil +3 garlic cloves, minced +Handful chives, minced +Handful dill, minced +S&P to taste +Splash of balsamic Bake for 20 min on 400

foolproof recipes Healthy chocolate chip cookies: + 1 egg + 1/4 cup almond flour + 1/4 cup rolled oats + 1/4 cup coconut sugar + 2 tbsp honey + 1/2 cup almond butter (preferably creamy) + 1 tsp vanilla extract + 1/4 cup chopped walnuts + 1/4 cup semi-sweet or dark chocolate chips + 1/2 tsp baking soda pinch of sea salt Preheat oven to 350F. In a medium bowl, whisk egg. Add the rest of the ingredients & mix well. Line a baking sheet with parchment paper and using a spoon or scooper, place evenly sized ball shaped batter 1/2-1 inch apart. The cookies will flatten out slightly when baking. Bake for 10-12 minutes. Let cool & enjoy! Pecan walnut crusted salmon recipe! Easy to prep & so delish!! + 1/4 cup olive oil + 1 tbsp dijon mustard + 2 cloves garlic (minced), + 1/2 lemon + Handful fresh parsley + Salt and pepper to taste Preheat oven to 350. Crush pecans & almonds and set aside.In a small bowl (or jar) mix the olive oil, dijon mustard, garlic, lemon, parsley, S&P. Place salmon on parchment paper and cover in mixture, then top with crushed nuts. Fold parchment paper so that salmon is fully covered. Bake for about 15 min.
HOLIDAY ENTERTAINING foolproof recipes Crispy Baby Potatoes + 1 bag of baby potatoes (could be white, red or a medley) + 2 cloves fresh garlic + A few stalks of fresh parsley, de-stemmed and chopped + 2 tbsp avocado oil + 2-3 tbsp olive oil + Salt & garlic powder to taste + Optional: 1-2 tbsp of grated Parmesan cheese In a small/medium pot, boil the baby potatoes for about 7-10 minutes until you can stick a fork through them. Drain and place on a plate or cutting board to slice the potatoes in half with a knife.In a medium skillet, heat avocado oil and transfer halved potatoes. On medium/ high heat, sautĂŠ until they become golden and crispy. (*the more oil you add, the crispier they will get)Transfer to a medium bowl and add the remainder of the ingredients. Enjoy!

Healthy hot chocolate + 1 cup DF milk (I use Malk Organics oat milk)+ 2 tbsp coconut cream (I prefer a gum-free option) + 1 big tbsp cacao powder + 1 tsp honey or maple syrup + 1 tsp vanilla extract + optional pinch of sea salt + Marshmallows... duh Heat up your milk in a small saucepan, then add the coconut cream & cacao powder and use a hand help frother to mix well. Add in the honey + vanilla and keep frothing. Add your optional sea salt, pour into your fav mug and add marshmallows! Healthy Holiday Mocktail 15 apricots (or 6 cups of pitted) 4 cups of cherries 2 cups of blueberries 1 gal of water 1/2 cup of honey or to taste A splash of club soda Bring a gal of water to boil. Wash all fruit and remove pits and carefully add fruit when water is boiling. Boil for 30 min uncovered. Remove from heat and stir in honey. Let cool and refrigerate. Serve over ice and add a splash of club soda.
