Harvest Your Own Pumpkin-Spice Latte strong enough to cut them beforehand. After baking, they cut like butter. Cut your pumpkin in half, remove the seeds and pulp and set aside for snacking. Peel the skin from the flesh. Compost the skins and cut the pumpkin meat into chunks.
How To Make Pumpkin Puree Place your chunks of pumpkin in a thickbottomed pot with a few inches of water. Simmer until all the water is cooked out and the volume is about half. Stir frequently to prevent scorching. This is the time of year when just the word pumpkin makes people swoon. Everything from pumpkin lattes to pumpkin muffins to pumpkin soup invades our Facebook feeds and dominates our Pinterest boards. If you’ve found yourself pinning some of those recipes to your own boards to try someday, read on for detailed instructions on how you can process your own pumpkin instead of relying on the canned variety. It’s a great activity to enjoy with the kids and may even inspire them to bake some pumpkin cookies of their own.
Freeze your puree in quantities for your favorite recipes. It will keep in the freezer for six to eight months. You use pumpkin puree just as you would canned pumpkin in pies, muffins, cakes, cookies and soups. In fact, that pumpkin-spice latte everyone keeps raving about only takes about two tablespoons of pumpkin puree. To have the perfect portion for your afternoon indulgence, freeze the puree in ice cube trays. Once frozen, remove and store in zip-shut bags. Use in the following recipe.
Heat the milk, pumpkin, and sugar until hot but not boiling. Remove from heat and add the spice, coffee, cream and vanilla. Pour into two mugs. Top with whipped cream. Sprinkle with cinnamon.
What about Those Seeds? To roast the seeds, remove them from the pulp, wash and dry. Spread on a cookie sheet and drizzle with olive oil and sprinkle with salt, pepper, paprika, or a combination thereof. For a sweet flavor, sprinkle with sugar and cinnamon. Or try your favorite popcorn seasoning. Bake about ten minutes or until golden and crispy. Enjoy with your latte.
How to Process Pumpkin Begin with choosing a medium-sized cooking pumpkin. The overly large, jack-o-lantern varieties are more water and seeds than meat, tend to be stringy inside, and are not as sweet. Wash the pumpkin and remove the stem. Put it on a cookie sheet and place in oven so that it is centered from top to bottom. Bake at 325 degrees for about an hour; or until you can insert a fork through the skin. The length of time will vary depending on the size of the pumpkin. Remove the pumpkin from the oven and allow to cool enough to handle. I bake my pumpkins whole because I’m not

Rolling Into Family Dinner on the Crazy Train

Ask any parent about one of their worst times of day, and a good chunk of them will say the hour right before the family dinner. Between trying to figure out what to make for dinner and the boys coming out of their homework haze, family dinner chaos rolls into our household right on schedule, like Ozzy Osbourne’s “Crazy Train.” (Imagine Osbourne’s maniacal laughter---“ALL ABOARD! Hahahaha.”) With two teens in the house, I figured I would have mastered this time of day about a decade ago. Nope. Come along for a ride on the Family Dinner Crazy Train.

The doorbell rings.
As I ignore Parker’s thirst and continue my multi-tasking dinner prep, I ping-pong back and forth (with butcher knife in hand) between the refrigerator, the stove, and the sink, as our cat Shadow repeatedly darts between my feet and trips me. I think he’s secretly trying to kill me.
“Parker, can you please answer the front door?”
“Would someone please feed the cat?” I call out, hoping someone will rise to the challenge. (No one does, of course, but a mom can dream, can’t she?) 25 minutes before dinner
30 minutes before dinner It starts out quietly enough, with my younger son Parker playing video games downstairs and my older son Trevor upstairs just chilling out in his bedroom. I put on smooth jazz in the background to create a relaxing ambience for dinner. I’m up to my elbows in raw chicken when Parker texts me from 15 ft. away asking for a drink of water.Yeah, let me scrub the E. coli off my hands to serve you a drink just so you
The phone rings. With raw chicken still coating my hands like a mitten, I grab the phone with my elbows, slide it onto the counter, and press the speakerphone button with a spoon. It's my husband Kevin calling to chat during his 45-minute commute home. As I listen to Kevin vent about some guy who just cut him off, I realize I forgot to start cooking the rice. Darn.
“I can get the front door, but will I?” Parker responds in his trademark wise-guy tone. Parker answers the door and politely rejects some guy hawking pressure-washing services. Yes, 5:30 p.m. is a great time to go door-todoor promoting your small business, young entrepreneur. Let me abandon my stir fry while I come talk to you about my moldy sidewalks. Meanwhile, Shadow continues to work our kitchen like a pinball machine, ricocheting between my leg, the fridge, and the cupboard.
20 minutes before dinner “Parker, can you please feed the cat?” I ask again. “I fed him in the morning,” Parker replies with split-second timing. “No, you were supposed to feed him in the morning, but you forgot, so I fed him. Can you please handle it before I trip over Shadow and stab myself with the knife?” We verbally volley about whose turn it is to feed the cat and how it’s not fair that he has to do Trevor’s job and Shadow’s not really hungry yet and he’s so fat that it wouldn’t hurt if he skipped a meal. “FEED THE CAT NOW!” I bellow above the freakin' smooth jazz that's starting to irritate me. “O-KAAAAAAAYYYYYYY!” Parker replies, drawing it out into a five-syllable word and rolling his eyes. Don’t push my buttons, boy, or I will grab you with my E. coli hands.

It takes Parker 4 seconds to feed the cat. We argued about it for 5 minutes.
15 minutes before dinner
“TREVOR, SET THE TABLE!” I yell upstairs again.
As I start cooking the stir fry, I ask, “Hey boys, can one of you set the dinner table?”
I pour myself a glass of wine to ease the stress I feel creeping into my shoulders enjoy with dinner.
“It’s not my job,” they both reply in unison.
5 minutes before dinner
We’ve had a chore chart on our refrigerator since 2005. Apparently, it's never anyone’s job.
Trevor finally comes downstairs to set the table, which he does one-handed because he’s watching a YouTube video on his cell phone.
“Trevor, it’s your turn. Please set the table.” “Okay,” I hear in a muffled voice from upstairs, instinctively knowing that Trevor will not come downstairs anytime soon. Suddenly, I hear a small voice coming from our counter, like a page right out of Horton Hears a Who. I forgot I was still talking to Kevin on speakerphone, as I catch the tail-end of his frustrations with the no-jeans policy at work.

“Phone away, Trevor,” I tell him. He looks up at me, unplugs one earbud and asks, “What?”
Bickering ensues, insults fly and name-calling spirals out of control just as Kevin walks through the door and I greet him with, “STOP CALLING YOUR BROTHER AN IDIOT! THAT'S IT! YOU LOSE VIDEOGAMES FOR A YEAR!” "Geez, Mom, stop overreacting," Parker says. "You don't have to bite my head off." And there it is. I officially reach the Crazy Train destination of (bat)-head-biting Ozzy. I'm thinking he was probably inspired to write his song lyrics after watching Sharon try to cook the family dinner one night: “Mental wounds not healing Driving me insane I'm going off the rails on a crazy train.”
“Put your phone away.You’re down with the family now. Time to interact.”
ALL ABOARD!
Apparently, Trevor confuses “interact” with “pick a fight with your brother,” as he walks over to Parker, laughs at one of his video game moves and kicks off our daily family drama that rivals an episode of Mob Wives.

Halloween In surviving Halloween with eight of our children and now many of our grandchildren, our motto is: KISMIF – keep it safe, make it fun! Try these tips: • Masks and hoods can obscure the view of oncoming traffic, and in the midst of all the excitement your impulsive little ghosts and goblins may not be as attentive as they should be to what’s going on around them. Insist on the pack staying together. Don’t allow children to wander off on their own to various houses or rush ahead.
your child in case the costume catches fire. • Use non-toxic face paints. Pre-feed your child. Make dinnertime a special time on Halloween night. Serve your child’s favorite healthy meal, and lots of it. This way there is less room in little tummies for lots of junk food that children are likely to get during their neighborhood trick or treat rounds.

Pick ten pieces. Children’s eyes are bigger than their
stomachs (remember, a child’s tummy is the size of his fist), so they are likely to gobble up piles of candy in mindless munching only to be left with a severe case of “yuck tummy” and restless nights. As your children empty out their bags of “loot” on the table, let them choose ten pieces of treats, and that’s what they can begin eating tonight. Bag the rest and dole out a few pieces each day for several days as a substitute for dessert. Chances are your children will get bored with the candy overdose after a few days anyway. After a couple of days, when the hype wears off, you may even be able to discretely deposit the remaining stash in the trash. Trade up or buy back. If your children get a bunch of junk that you just can’t let them pollute their bodies with, trade your child the candy for a desired toy.You can have an understanding ahead of time and perhaps offer a “buy back” plan where you pay a dime for every item that gets confiscated.
• Be vigilant when crossing streets in neighborhoods. Children must travel with buddies, older friends, or parents. If you’re the designated adult trick-or-treater, why not dress up and have fun? Young trick-ortreaters may be more inclined to accept an older chaperone who’s dressed for the occasion. • Walk on sidewalks instead of the street. • Stand outside the home that your child visits. • Bring a flashlight. • Give your child a cell phone, if possible. • Use reflective tape on costumes if they’re walking along dark streets. • Wear comfortable shoes. • Costumes should not be so long that children can trip on them. • Make sure masks are easy to see and breathe through. • Teach burn protection: tell children not to touch flaming jack-o-lanterns. If possible, use flame-retardant costumes and review stop-drop-roll burn-prevention with

Encourage alternatives to door-to-door trick-or-treating. Neighborhood groups, church groups,YMCA’s and other community organizations often sponsor Halloween nights where the fun and games are confined to a hall or gymnasium to keep kids off the streets. Throw a party. As an alternative to streetroaming children, we sometimes throw a Halloween garage party. Many kids ago we learned the best way to keep our children safe and monitor what goes into their little minds and bodies on Halloween night is to throw a Halloween party at our home and invite the neighbors. We would turn our garage into a party room and let the children decorate it with lanterns, arrange pumpkins, choose music and games, as well as the treats – within reason. Other parents will be happy to drop their kids off at a house party rather than worrying about them roaming the neighborhood. It’s also a great excuse to clean out the garage. An added perk of home Halloween parties is that you can tone down the junk food feasting that occurs during and after neighborhood trick-or-treating. Offer healthier treats. As a pediatrician, I’m becoming less sympathetic to parents and children who call our office the next day
complaining of tummy aches. Children who overdose on junk food often get a case of what they call “yucky tummy” the next day. Not only are their tummies sore, but their behavior is squirrelly from the roller coaster effect of sugar overdose. This is why teachers are not fond when Halloween falls on a school night. Instead of the usual junk food, offer homemade cookies, raisins, granola bars, and fruit. To catch the holiday spirit, decorate the fruit and cookies in interesting designs and shapes. Or, try non-food treats, such as crayons, whistles, and tiny hand toys. Prepare your property: • Remove tripable items from your lawn. • Cover sprinklers. • Keep jack-o-lanterns where they cannot catch property or costumes on fire. • Keep animals secured.

Too much of these substances can result in sleepless nights and below-par performance at school the next day. A healthier alternative to those artificiallysweetened and high-sugar candies is a tasty candy sweetened with xylitol. Because xylitol is absorbed incompletely and more slowly than table sugar, it does not cause the moodaltering ups and downs that regular sugar does. Halloween is a time when parents get to wear several different hats – a security guard that has to keep your kids safe, a nutritionist hat to monitor what goes into sensitive young tummies, and a party hat to share in the fun. Become a food inspector and monitor treat intake. Always inspect the treats before your child eats them. Be especially careful about chokable foods, such as hard candies, in children under four. Be prepared for your child to say, “Ah, mom (or dad)!” as you require her to display the treats for inspection. Don’t worry, children expect parents to do this because they sense you
