KEY OF SYMBOLS Demeter-certified farms agree to a comprehensive Biodynamic and organic farming method that requires the creation and management of a closed system minimally dependent on imported materials and, instead, meets its needs from the living dynamics of the farm itself. Real Organic Project embraces centuries-old organic farming practices along with new scientific knowledge of ecological farming. Certified farms attest that crops grown in soil and livestock raised on pasture-based systems are fundamental to organic farming. Regenerative Organic certified farms aim to build soil health, ensure equity for farm workers, empower farmers and improve animal welfare through a holistic, farm-based, brand-driven certification. USDA certified organic farms, products and retailers meet standards of the U.S. Department of Agriculture’s National Organic Program. LIVE certified businesses limit the amount of pesticides, fertilizers, water, chemicals and fuel used in vineyard and winery production. Bee Friendly farms commit to providing good forage, water and habitat for pollinators while reducing or eliminating the use of chemicals; they are registered through the Pollinator Partnership.

Certified Humane farms and products meet precise, objective standards set by the nonprofit Humane Farm Animal Care, which works to ensure kinder, more responsible farm-animal practices. Salmon-Safe businesses protect riparian areas for fish habitat. TRUE Zero Waste spaces support the dramatic reduction of waste and resource consumption. Open to the public indicates producers allow visitation during designated hours. Please check before you visit. Farm stay offers on-farm, overnight lodging, from rustic tents to houses, with opportunities to learn about farm life. Please check before you stay. B Corp certified businesses meet high standards of verified performance, accountability and transparency on factors from employee benefits and charitable giving to supply chain practices and input materials. BIODYNAMIC PRINCIPLES & PRACTICES

B

iodynamics is a holistic, ecological and ethical approach to farming, gardening, food and nutrition that focuses on building healthy soil, caring for plants, animals and all living organisms — and bringing forth the highest possible quality. Biodynamics upholds a closedloop system, with fertility sourced primarily from the farm. Demeter is considered the highest certification standard, acknowledging farmers who not only regenerate the soil, but restore and nourish the environment, protect biodiversity, build up water storage capacity and provide strong, resilient ecosystems for generations to come.

Biodynamics contributes to social and economic health Most Biodynamic initiatives work toward ecological, social and economic sustainability. Community supported agriculture (CSA) was pioneered by Biodynamic farmers, many of whom work in creative partnerships with other farms, schools, medical and wellness facilities, restaurants, hotels, homes for social therapy and other organizations.

A Biodynamic farm is a living organism Biodynamics views the farm holistically as an integrated, living organism comprising many interdependent elements: fields, forests, plants, animals, soils, compost, people and the spirit of the place. Biodynamic farmers and gardeners work to nurture and harmonize these elements.

Biodynamics generates on-farm fertility Biodynamic plants are grown in the ground in living soil, which yields health and nutrition characteristics impossible with chemical fertilizers or hydroponic growing. Biodynamic farms aspire to generate their own fertility through composting, integrating animals, cover cropping and crop rotation.

Compost is enlivened with Biodynamic preparations Biodynamic compost is enhanced and enlivened through the use of six preparations, small quantities of which are added to the pile just after it is built and again after it is turned. Biodynamic preparations stabilize nitrogen and other nutrients, multiply microbial diversity and bring more sensitivity to the composting process.

Biodynamics supports integrity and diversity in seeds and breeds Biodynamic farmers and gardeners favor heirloom, openpollinated and non-GMO seeds and heritage breeds of animals. Biodynamic farms work toward generating stocks from within the farm to develop unique, locally adapted and sensitized plants and animals with excellent nutrition and flavor and resistance to pests and diseases.

Biodynamics treats animals with respect

Biodynamic farmers dedicate at least 10% of their farmland to cultivating biodiversity. Diversity in domestic animals also is important, as each animal species brings a different relationship to the land and unique quality of manure.

Biodynamic farmers care for domestic animals in ways that support their inherent health and the full expression of their nature. Animals are given feed appropriate for their digestion and are never fed animal byproducts. Calves, lambs and kids are raised on the herd’s milk, not milk replacer. Chickens keep their beaks, and cows keep their horns, which serve important natural functions. All animals have access to the outdoors, free-range forage, sunlight and plenty of space to move.

Natural ecosystems include both plants and animals — complementary roles in the web of life. Many conventional and organic farms only grow crops or only raise livestock, creating imbalances such as nutrient deficiency (if only growing plants) or pollution from excess manure (if only raising animals).

When a disease or pest presents itself, it often points to an imbalance in the farm organism — nature’s way of trying to correct the imbalance. While Biodynamics permits biological controls, a Biodynamic farmer tries to discern the underlying imbalance and adjust management practices to restore the farm organism to health.

This guide is a starting point to get to know the Demeter-certified producers near you. Because Demeter is such a high standard, you will find businesses who have a Demeter-certified farm, but not all of their products are able to be Demeter-certified. We encourage you to contact producers directly, learn about what they grow and support them in any way you can. ncorporating livestock into farm management is key to Biodynamic practices. Epitomizing this approach are Biodynamic dairies. Not only are dairy cows an integral part of providing fertility for farms, but Demeter certification requires they feed on grass for a significant portion of the year, that the herdstock’s genetic diversity be carefully cultivated and all cattle retain their horns. Horns help protect cattle, ensuring there is no overcrowding in barns, and — fun fact — cows grow a ring for every calf they bear! Keeping horns on animals is seen as respectful, kind and humane — one of the many ways Biodynamic farmers honor the health and well-being of their animals. iodynamic agriculture first began 100 years ago in Europe when farmers were worried about the new application of chemicals produced as weapons for World War I, which were being spread as fertilizer on the fields. Their concern was that it would reduce the nutritional quality of the food, and Rudolf Steiner, Austrian philosopher and scientist, agreed. He laid the foundation for Biodynamics. Food’s nutritional quality begins with the soil’s nutrients and health. Companies like White Leaf Provisions, who produce incredible baby food, knew only Demetercertified ingredients would do. A 1928 brick farmhouse dominated the heart of the property. In those early days, vineyard crews, asking where to go in the morning, were told “casa de ladrillo” — the “brick house.” It stuck. Applying for organic certification in 1990, we planted out the best sites on our 40-acre farm. Our estategrown Pinot Noir, Chardonnay and Gamay Noir — Burgundy’s great varieties — grow 440 feet above the north Willamette Valley floor. “Les Dijonnais” Pinot Noir grows on a south sloping ridge line planted in 1995. E

very fall, as the natural world begins to draw inward and the vitality of summer seems to fade, Biodynamic farmers turn their attention to making Biodynamic preparations. While the surface of the Earth may appear fallow, the soil below is alive and awake, perfect for coaxing to life the microbes and magic of Biodynamic preparations. Making preparations involves expressing gratitude for the plants and animals who will become part of the compost. Farmers think about the preparations spending time underground during winter, transforming into new substances to invigorate compost and help nourish plants. ARE BIODYMAMIC FOODS MORE NOURISHING?

W

hat do we know about the nutritional value of Biodynamic foods? We know that foods contain nutrients for our bodies to grow, repair and support our health. We also know that plant foods provide beneficial phytochemicals. Nutrient data and chemistry are complex, and with those limitations, we cannot yet prove nutritional superiority of Biodynamic foods. However, nourishment is about more than just nutrients.

What qualities do you look for when selecting fresh produce? When I buy greens, I look for leaves that seem vital or enlivened. This is hard to describe in words, even though I believe I can sense it. I invite you to explore how you notice vitality, strength or life force. How does this translate to food quality? With lettuce as an example, is it the shade of green, or the variegated tones of red and green; the watery crispness in the leaves and/or the taste? This exercise might be similar with fresh fruit, yet the qualities would be different. Smell and texture of fruit are very important to me. I encourage this topic as a family conversation at the dinner table, at the grocery store, farmers market or in the garden. As for growing practices, Biodynamic agriculture works with the rhythms and cycles of nature and the cosmos as a system to support life and vitality. At the opposite end of the range, is modern

The possibilities of establishing a relationship with one’s environment are profound, which gives one what is necessary to restore and support it to cultivate more vigor, more life. Modern-day agriculture does not value these practices. In summary, I see the terms used above to describe vitality as relevant nutrition concepts. Because scientific methods attempt to confirm truth, or find correlation, these findings are usually last, not first. The natural world is more complex than science can tease out with its current methods. We must acknowledge the limitations of science. With Biodynamics nearing 100 years of practice, science is still trying to explain how and why it works. I believe, in time, we will have more scientific evidence about nutritional quality of Biodynamic foods. KNOW YOUR FOOD What’s in a label? There are many different food labels that contain information about how food was grown or processed. However, some labels can be misleading and not all have been independently verified by a third-party organization.

Independently verified labels Biodynamic: A registered trademark of and certified by Demeter Association, Biodynamic farms adhere to a comprehensive organic farming method that requires the creation and management of a closed system minimally dependent on imported materials, instead meeting their needs from the farms’ own living dynamics. The program prohibits synthetic chemical fertilizers, pesticides, herbicides and fungicides but goes much further to promote reliance on natural cycles. demeter-usa.org Real Organic Project: This initiative embraces centuriesold organic farming practices along with new scientific knowledge of ecological farming. These criteria include feeding animals diets of quality feed, without antibiotics or growth hormones; allowing animals to be free to do what comes naturally; and never keeping animals in cages, crates, or tie stalls. Workers must receive decent wages, housing, health and safety guidelines, as well as the right to join trade unions; child or forced labor is completely prohibited. (but not independently certified) The following labels depend on farmer and processor information to support claims that the food products were raised in compliance with each set of standards. However, they are not certified by any third-party regulatory agency. Bee Friendly Farming: The Bee Friendly Farming initiative is an effort to address the issue of declining bee populations by providing adequate forage, water and habitat for nesting and mating, as well as practicing integrated pest management to reduce or eliminate the

use of chemicals. The label is a self-certification process offered through the Pollinator Partnership. pollinator.org Certified Naturally Grown: This label is a lowcost alternative to organic certification that relies on volunteer farmers to inspect participating farms. Growing standards mirror those of the U.S. Department of Agriculture’s National Organic Program. naturallygrown.org Hormone-free, rBGH-Free: Some meat and dairy products are marketed as hormone-free. In dairy products, this means the farmer has chosen not to inject the cows with the artificial growth hormone rBGH. Similarly, beef products with this label ensure the animal was raised without growth hormones or steroids. Pastured or grass-finished: Grass finished refers to meat products from cattle, bison, goats and sheep that have eaten nothing but their mother’s milk and fresh grass or grass-type hay from their birth. Many products continue to be marketed as “grass fed,” when grass is only a small part of the animals’ diets. Ask producers if animals were fed grain or confined to feed lots. eatwild.com

WHY BIODYNAMICS?

M

ost people say it’s the taste.

principle is: Put back more than you take and, as much as possible, make it be from the farm.

There is an aliveness you can taste and feel. Something is different. More official people, like doctors, talk about “nutrient density” — Biodynamic food is high in nutrients, micronutrients pulled up from a carefully tended, healthy soil. Biodynamics is grounded (literally) in a sense of place. The widely embraced term is terroir, as they say in the wine world, which is probably why vintners have been such avid adopters. Want your wine to capture what makes your place unique? Then start implementing Biodynamic practices on your land.

For that reason animals are required as part of the farm system. Cows and sheep are common, but so are bunnies and bees. In some places, wild animals such as migrating geese, deer and bear can count because, well, they all poop, and poop means nutrients. The real secret sauce for Biodynamics is in the Biodynamic preps. Some of the preps (there are nine different ones) help increase photosynthesis and strengthen plants’ immunity.

But it doesn’t stop with wine, of course. Carrots are a great way of tasting the difference. We see the wine industry, medicinals and teas as the most enthusiastic about using Biodynamic-grown ingredients because their quality so strongly comes across. Skin care products uphold this, as well. Why is this? What is it that makes Biodynamically grown wines, herbs, beef and carrots so amazing? In some ways, I’m not sure anyone can really tell you. Science is only just now catching up. Biodiversity is really important: Every farm sets aside a minimum of 10% of the land for biodiversity, but that includes biodiversity under the soil, as well. There’s the mindset of seeing the farm as a whole organism, with each part being important and the farmer serving more as an orchestra conductor to coax the music out of the land, rather than simply adding inputs in an effort to extract the maximum output as is the norm in much of the rest of agriculture. The farmer is in relationship to their land and the plants, animals and people that are growing there. That makes a big difference. Fertility is another big part of Biodynamics. Sourcing fertility from the farm is key. The idea is to create a closed-loop system, to be truly and utterly regenerative, soil carbon tests be damned. The

Biodynamics involves paying attention to the phases of the moon and alignment of the stars, according to ancient planting techniques used for thousands of years to improve the chances of a successful harvest. So why Biodynamics? Mostly because it tastes amazing. The aliveness is there in each bite or sip. You can feel it on your skin when you use products containing Biodynamic ingredients. The dedication to quality, the care the farmer gives — it’s there; you can taste it and feel it. What would happen if everyone farmed this way? Well, we would end the climate crisis. We would end the biodiversity crisis. We would end a lot of the mental health crisis tied to poor nutrition, exposure to toxins and worry about the state of our world. It would be a beautiful place. So when you can, choose Biodynamics. Look for the Demetercertification that lets you know the producer cares. They have achieved the gold standard in the best care for the land, producing the best products and caring for quality and people since before the seed goes into the ground until it reaches your table. n the culinary arts, rich and subtle flavors are brought out by blending and preparing ingredients in the most artful and skillful ways. For true nourishment of both body and soul, the quality of the ingredients is crucial. That quality comes from both the wealth of nature and the cultural richness that evolves within a cultivar of food plants.

The art of agriculture has the marvelous ability to marry culture and nature within the living realm of the plants. Traditional culture comes to unique and creative expression in different locales and environments. Food plants also develop different characteristics, qualities and flavors in different cultures and environments, becoming uniquely suited both to the climate and ecology of the locale and to the tastes, culinary and nutritional needs of the people they feed.

The cultural and natural character of cultivars is passed on through the seed. The farmer selects her seed from those plants that do well, taste good and bountifully feed her, her family and her clientele. This was how the rich diversity of the food we eat came about. But things have changed. In commercial farming’s profit margin, mechanization and mass production have largely replaced the culture and art of true “agriculture.” Flavor and nutrition have too often been sacrificed for shipping stamina, high production and uniformity. Commercial cultivars suit factory farming and the industrial food supply. But do they nourish our bodies and souls? Biodynamic farming is based on the healing of the Earth and the nourishment of the community through a direct reciprocal relationship with the natural realms that supports us. For the past 80 years, Biodynamic farmers around the world have been working together to select for flavor in wheat, oats and barley, carrots, cabbage, beets, onions, celery root, broccoli and many other crop types. These varieties are available from several seed companies focused mainly on Biodynamic seed such as Sativa in Switzerland, Bingenheim in Germany and Turtle Tree Seed, Meadowlark Hearth Seed and Siskiyou Seeds in the United States. All grow and work with growers to select seeds for locale, nutrition and flavor. But most importantly for anyone who farms or grows a garden: Join in the work, save seeds, taste and select and share. In what you grow every year, something new will come into being. You will be enriched, your farm or garden will be enriched and the people you feed will be enriched. Chefs, cooks, anybody who eats food: Taste, savor, relish and think about the plants and the Earth and the farmer. Seek out and support food from heirloom, indigenous and farm-based seed. DID YOU KNOW? Biodynamic farmers believe that cattle produce high-quality manure essential for soil health. “It is helpful to have cow dung in compost heaps, even in small amounts, to help fermentation and fertility,” says Gabriel Kaye, executive director of the Biodynamic Land Trust. The Biodynamic preparation, Cow Pat Pit (or barrel preparation) can be added to the compost heap as a starter, as well as being sprayed on the farmland and garden. It contains cow manure and the compost preparations and is recommended for those converting to Biodynamic agriculture. Add a pinch to a bucket of water, stir for about 20 minutes, then spray, preferably in the autumn.
