here is an art and science to most processes. Five years ago, Jordan Everaet and Peter Bopp were brewing beer in their garage as a hobby. Today, they are still brewing beer, on a much larger scale, as

THE BREWING PROCESS

Malted barley is milled to crack the husk.
The malt enters the hopper and once it is done milling is augered to the mash tun
In the mash tun, hot water is combined with the cracked, malted barley to create what is called the mash.
To simplify, starches are being converted into simple sugars, creating the enzymes from the malting process in the barley that will break down the long chain carbohydrates into different size sugars for the yeast to eat. Depending on the beer, the carbohydrate chains will be different sizes. A stout has a lot of body; therefore, you need to mash it hotter so it will favor long chain sugars. Dry beers favor short chain sugars and must be brewed at a cooler temperature. This conversion process takes around half an hour.

Mike Frohlich fell in love with making beer in 1996 working at the Rattlesnake Creek
Brewery and Grill. Not long after, he began brewing beer at home, but wanted to take it further, and open his own brewery. In 2009, while playing cards with friends and sharing his homemade brew, Frohlich developed a professional partnership with Todd Sattler. What began as a discussion and the swapping of recipes, led to the opening of Laughing Sun Brewing Co. in 2012.

We started the business as a crazy idea on how we could be a part of the craft brewing industry and the answer was literally in the backyard on the family farm as barley has been grown on the farm for years. Once we determined that malting was a viable option we starting figuring out what was needed to move from concept to reality. After about a year of planning we were able to produce our first batch of malt in June 2016.

HOW IT ALL BEGINS Malting is a three step process. After the barley is cleaned at the farm and brought up to the malting plant the first step of steeping begins.
1. Steeping - During the steeping process grain is submerged in water with the primary goal of increasing the moisture content of the grain from 12% to 42-48%. This process takes 2-3 days in which the grain is submerged, drained and repeated until the correct moisture content is achieved. Steeping starts the growth process and a visual indicator of properly steeped grain is to see the chit, or rootlets, start to emerge from the grain. Once chitting begins it is time to move the grain into the germination stage.
2. Germinating - Germination is the next stage in the malting process where chitted grain is transferred into our Germination Kiln Vessel or GKV. Germination allows for the development of malt enzymes which modify the structure of the grain’s endosperm by breaking down the cell walls and protein matrix. This process is also known as modification. The enzymes produced during germination are needed to break down the starch for the brewer or distiller during the mashing process. Germination takes 3-5 days and once the grain has reached optimal modification it is ready for the kiln.
3. Kilning - Kilning is the final step in the malting process and turns the modified grain into malt. The specific type of malt being produced will determine how long the grain is left in the kiln. The kiln is essentially a large oven that uses heat to dry out the grain. This process gives malt its flavor and color. After about 24 hours we have finished malt which is cleaned, packaged and ready to be made into your craft beer or spirits.
