BM: Mary, can you tell us how you decorated this table for the harvest season? Mary: Living in North Dakota, we have the pleasure of having all four seasons to appreciate. I love using nature and bringing it into the home. You see in the table, I was inspired by fall. Using different sized pumpkins and woods, even incorporating antlers into the mix, to add depth and dimension to the table. I also think it is important to add your own family touches. At home, I use old pieces from my parents' and grandparents' dishes, and serving pieces. I love using heirlooms as a focal point, especially with family. BM: What colors are in style this year to use for decorating for the holidays? Mary: Oh well, grays are still very in this year, and believe it or not, orange is a very hot color for the season, and itâ&#x20AC;&#x2122;s always great to add a pop of color. The blues have started to come back. They pair well with the gray palette as well. BM: Mary, what is your style? How do you decorate for the holidays at your house? Mary: I keep it as natural as I can, using the seasons and nature throughout my table and home. I like bringing the outside onto our table. It is important to be relaxed and have fun with it when decorating. BISMARCK-MAGAZINE.COM

Cooking for the holidays is no easy task. Chef Tyler is about to make planning your menu just a little easier. He shares eight different side dish recipes featured by Terra Nomad and made by Chef Tyler that would make a great addition to any holiday meal.

Chef Tyler’s favorite thing to prepare and eat: “Anything roasted. I love cooking rich, roasted veggies and trying new ingredients.”

Bacon and Jam Brussels • 2# Brussels sprouts

Trim and halve Brussels sprouts

• oil, salt and pepper

Toss with oil, salt and pepper and roast, 350 degrees, for

20 minutes (or until deeply browned)

• 2 T butter

Melt butter in pan (large enough to hold Brussels), add

• 2 cloves garlic, minced

Add Brussels sprouts, bacon, orange marmalade, and

Bake on lined tray in 350 degree oven for 20 minutes (rotating

halfway through cooktime)

Bismarck Magazine wanted to feature some of the area's local butchers so that our readers could expand their holiday cooking from traditional turkeys to items like prime rib and short ribs. When we started our journey about five months ago, looking into the meat market of the Bismarck Mandan community, the carnivore lovers' market choices were pretty limited. How that meat map has changed in just a few months! We have since welcomed two more butchers to the area. Here, we introduce you to four different meat markets. They all have their own niche but traits they have in common include secret spices and making their business a family affair.

Kay realizes the day will come when the collection will be in someone else’s hands. When the time comes, she hopes the collection can stay together. “My kids ask me what am I going to do with all those pieces,” Kay says. “They tell me that I am going to have to downsize, but there really aren’t many places that are taking woodworking anymore. We’ll just have to see, I guess.” For now, Kay can embrace all the memories Frank left behind with the touch of his hands on each.

Helping Hands

Finding joy in difficulty starts with service to others. As the holiday season begins, the perfect opportunity arises to show gratitude by taking action on behalf of those in unfortunate circumstances. This truly is the time of year to focus on joy, but with the number of natural disasters wreaking havoc on many parts of the nation, the continued need for help cannot be ignored.

First to mind in the most difficult of situations, the American Red Cross of the Dakotas works to help not only those of this region--North Dakota, South Dakota, and ten counties in northwest Minnesota--but, deploys many volunteers and workers to places like Texas, Louisiana, Georgia, 48

and Florida to help aid in hurricane relief efforts. The deployed assist those affected by the hurricanes through an offering of their time and assistance. The CEO of the Dakota Region, Lynn Speral, oversees many of these efforts. “We have a team that works with the deployment,” Speral stated. “When Hurricane Harvey hit we knew that was going to be a major response and we knew that there would be a call for a lot of volunteers, so we conducted training.”

individuals (volunteers). In addition to that, we deployed six of our staff, which is roughly a third of our total staff.” Among recent volunteers was Shawn Burgad of Bismarck. Burgad had previously held a board member position for the West Dakota Chapter of the American Red Cross. With hopes of learning more about all that goes on during relief efforts, and with a calling to help in a more hands-on way, he attended a meeting. When the request came for volunteers interested in deploying for the Red Cross, Burgad made the decision right there. Despite uncertainty with his own job at home, Burgad left for Houston within a week. As a general volunteer he worked to set up and tear down shelters as well as serve food to those affected by the hurricane. Referring to them as “ERV’s” (Emergency Response Vehicles), Burgad described his opportunity with the mobile feeding units. Three different times he was able to “get out into the communities and see first hand some of the hardships and destruction.” He met a lot of people “trying to make everything out of what they’ve got left.” To make any relief effort a success requires a high number of donated resources. Donations come in the form of time for volunteering, such as the work Burgad participated in, as well as the money needed for supporting volunteers. Obtaining the resources needed for sheltering and feeding displaced or affected individuals is also dependent on

donations. Likewise, according to Speral, even the American Red Cross workforce is over 90% volunteer. “We (the Dakota Region) have five emergency ERVs and we deployed all five of ours down south. Costs associated with deployment run $1,650 per volunteer for two weeks, plus $300 a day to operate the truck providing food to neighborhoods," Speral stated.

As expected, the 6:00 am to 10:00 pm work days of the volunteers are long, but Burgard described them as well worth the effort. He believes the needs of the affected far outweigh the difficulties associated with volunteering. “[I got] to know some of the clients personally, and you can see it in their eyes. You know they have families and kids. And a lot of people didn’t have insurance for things like this,” Burgad said. "Every day for the volunteers is about trying to find additional resources for these families." Essential to the mission, Burgard and the other volunteers helped the American Red Cross work side by side with other organizations that

can provide other assistance where needed. With every intention to participate in future efforts, Burgad recommended others get involved as well. Whether it be a deployment such as his or something closer to home, the need is great for volunteers. “You hate to see that happen to any community. It’s hard to watch it on TV and just sit and watch when you feel like you could do something," says Burgard. He admited that it was hard to leave for 14 days, but found the experience life-changing and humbling. He feels this is likely true for every volunteer. Efforts such as Burgad’s volunteer deployment play an important role in the American Red Cross mission. However, a huge piece of the equation is something that everyone can do from home. “We are mandated by Congress to be the response organzation for disasters and we do not receive funding from the federal or state government for our response efforts,” Speral stated. “All of our programing for disaster response is through donations from individuals, corporations, and the United Way.” In other words, there are numerous ways to be generous. Everyone can play an instrumental part in helping others, and at the same time, find joy in the midst of a difficult time.
