Over the years I have attended several holiday parties for different organizations. They have run the gamut from a small dinner parties with good food and conversation to several different bands playing throughout the evening, topping it off with a give-a-way of a new truck. Most holiday parties fall somewhere between these two extremes. Holiday parties are a direct reflection to your employees and others of your organization and how you conduct business. Otherwise known as your organizational culture. Based on research your organizational culture plays a significant role in the success or failure of your holiday party. Your culture is a public representation of your organization. Holiday party or not, culture can mean the difference between celebrating your company's 50-year anniversary or closing your doors before your five-year anniversary. With a healthier holiday article from a Registered Dietitian you’re probably expecting a lot of “eat this, not that” advice. Or “here’s how to make your favorites healthier” type recipes… am I right?! Here’s the reality, Thanksgiving and Christmas are only a few days out of the year and instead of over-restricting, enjoy your favorite foods. Let’s be honest, mashed cauliflower does not taste as good as my mom's mashed potatoes! As a Registered Dietitian, I do have these three tips for a healthier holiday:

Roasted Sweet Potatoes with Herbed Ricotta and Walnut Appetizer Skip the sweet potato casserole made with marshmallows and brown sugar and opt for these as an appetizer before your meal or as part of a small plates menu later in the day. The sweet potatoes will add fiber plus sweetness, the cheese will make it taste indulgent and add protein, and the walnuts add a little healthy fat and rich buttery texture.

Spinach Cheese Balls No need for chips and dip or a cheese ball with these adorable little dippers! Along with an extra dose of vitamins & nutrients, spinach adds a nice crunch and the little bits of cheese, egg, and flour to hold it all together are well worth it and serve their own nutrient purposes.

Roasted Carrot & Beet Salad This salad is so easy and delicious, it’s a no-brainer for your menu! Using canned beets and pre-cut carrots keeps prep easy. The beets and kale or spinach add antioxidants and anti-inflammatories. You can get pre-roasted pumpkin seeds and premade mustard dressing to keep prep simple - look for a short ingredient list made with real sugar on your dressing. We started our journey about three months ago, looking into the bakeries of the Bismarck Mandan community. Here, we introduce you to six different bakeries. th e b a k er y Kenny and Kendra Howard are the husband and wife power couple behind the well-known community pizzeria, Fireflour. After realizing their dream of opening Fireflour, the couple has embarked on opening a second restaurant called Anima Cucina. Kenny and Kendra have always had a passion for food, both enjoying various cuisine as well as working in the industry. “I really enjoyed the fast pace, you’re constantly going and moving and it’s different every day,” says Kenny. The North Dakota natives have spent time in Minneapolis, MN and San Francisco, CA while taking trips to Italy as well. While in San Francisco, the two found the inspiration for Fireflour. “Kenny and I loved eating out and trying new places. We would go home and try out recipes of our own. There are a lot of Neapolitan pizzerias where we lived, and we loved it. We really wanted to bring that back to Bismarck,” exclaims Kendra. After eight years in San Francisco the couple decided it was time to come home moving back to Bismarck and bringing their passion for food with them. Opening at 7am, the bakery offers breakfast and coffee, tarts, cakes and Italian style bread. Breakfast is served until 11am and rolls immediately into lunch. The deli serves sandwiches and charcuterie boards. If breakfast and lunch are not enough, Anima Cucina has a wine bar. Inspired by the Italian tradition of gathering with friends to enjoy wine, meat, Bella Cucina brings the laid-back tradition to our community. The menu offers charcuterie boards with an extensive wine list with over 40 varieties to choose from. “We loved

th e b a k er y Husband and Wife duo, Brandon and Ruzena Hayes, opened a brand-new bakery, B & R Bakes and Cakes, this past July. You can find them at the Gateway Mall (enter through door 4) making delicious cookies, cakes, and bread as well as customer favorite, cookie dough. Brandon and Ruzena met twelve years ago while attending Le Cordon Blue Culinary College for Baking in Minnesota. This dream team has had a deep passion for baking, in particular baking sweets. “We love to bake, we love to eat the sweets, and we bake to eat them,” laughs Brandon. Both Brandon and Ruzena have been in the food industry for years. Ruzena was the head baker at the University of Mary before she became the head baker of her household, stay at home mom, and entrepreneur. The Hayes’ put their hearts and souls into their pastries and leave no detail undone. “We make our own fondant out of marshmallows. Fondant on its own is not very tasty so we tried to make it taste better. If we don’t like how it tastes we

throw it out and figure out a better way to make it,” says Brandon. They make everything they can from scratch, from homemade caramel and icing, to cookies and bread.

The couple sees their current location as a stepping stone for even grander plans. “Right now, we are using the Gateway Mall to get started and for people to get to know us. We do a lot of events around the community and set up booths for people to come visit us. Just look for all the greengreen tent, green shirts, green hair,” laughs Brandon. The plan for the future is to expand and become a full-service bakery in a stand-alone location. They plan to serve sandwiches, breads, sweets, breakfast sandwiches, espresso, and even experiment with French desserts.

th e b a k er y In the mid 1990’s Jon Lee, owner of Bread Poets, started baking in his home. He created a delicious whole wheat bread recipe that became the catalyst for him. “I really wanted to move back to Bismarck. I knew that Bismarck didn’t have a specialty bread shop. I had visited many across the country and knew it was something I could do. We moved home and started Bread Poets,” Jon explains. Since opening on September 15th, 1998, a lot has changed, including at least 70 recipe updates. “People’s tastes change over the years. We do a lot more grain breads now than ever before. Our customers are looking more for that bread with substance,” says Jon. Through the years Jon has added products, taken away products, and built additions on to the building. “My recipe book started with six recipes. Wheat, cranberry walnut, raisin, a cinnamon bread, and a rye bread. Today we have over 150 different varieties of bread. On our active list we have 42 different breads that are on a rotation. Staples in the product available everyday will always be the wheat, white, cinnamon log, pecan and dinner buns, and cookies.”

Bread Poets

All the recipes are based off the original wheat and white bread recipes. Even breads like Bread Poets’ famous cinnamon log are based off the original white bread recipe, they are just rolled out and the extra goodness added. The white bread recipe was added about six months after opening day. “To me, white bread didn’t feel like a specialty bread, but people wanted it. We add some protein to it to give it some nutritional value so there is something of substance there.” Bread Poets’ business model has changed a lot. They now sell items at grocery stores in town as a convenience to their customers. “As you can imagine, when we first started, we had those six items. Everything was sold at the store and when you close it’s done,” Jon explains. “Now we have vehicles, deliveries to be made, and we added the sandwich shop. We have diversified our portfolio and we are not just relying on one thing anymore.” Jon has brought so much to our town. “I always wanted to be a small business owner with a storefront where you can connect with the community. I grew up in Bismarck

so one of the most gratifying things about all this is that I have been able to sell to my products to my friends and neighbors of 50 years.”

We only have it for a month, when you can buy eggnog,” says Jon.

We bake it for what is called “bake on the edge” so it’s done on the inside, not gooey, but very moist so when you enjoy it two days later it’s still very moist,” says Jon.

Say goodbye to leg pain Dr. Steven Hamar, vascular surgeon at Mid Dakota Clinic in Bismarck, knows what it’s like to suffer from varicose veins. “I was 16 when I had my first varicose veins and I had my first surgery at 35,” Dr. Hamar says. “I’ve had three other surgeries since then.” Vein problems develop in all age groups and affect about 25 percent of women and 15 percent of men. “Fifty percent of the population over the age of 50 have varicosities of some kind,” Dr. Hamar says. Patients may experience leg fatigue or heaviness, burning and swelling with more serious conditions or simply have an unsightly appearance. The good news is there is relief for the discomfort and appearance of most unsightly veins. The Vein Center is a one-stop center for patients where options range from conservative, non-invasive treatments to the latest minimally invasive procedures Before After that can be performed in-office. The most common vein problems Dr. Hamar treats are varicose veins and chronic venous insufficiency, which are veins that are not functioning properly and are refluxing. Reflux is the inability of a vein to stop blood from rushing back down the leg, thereby increasing venous pressure and creating symptoms of venous disease. The objective is to relieve the reflux that has created the problem. Some patients can be helped through simple, non-surgical approaches such as wearing compression stockings, while others are best helped with sclerotherapy, endovenous closure, stripping, or TRIVEX® for varicose veins. “We want to do this right,” Dr. Hamar says. “I spend about an hour with you the first time, going through your history and your symptoms. We’ll talk about venous disease, why you have it 52

and the best approach to treat it. We’ll also discuss compression stockings, as most insurance carriers require three months of use before we can do anything definitive about your veins.” If a decision is made to proceed with further treatment, most patients are scheduled on an outpatient basis. Procedures take anywhere from 15 minutes to an hour depending on the size and number of veins to be treated, and the treatment approach that is chosen. Dr. Hamar says that he uses the TRIVEX® system most often, which eliminates the need for multiple incisions in the leg and causes very little, if any, pain. Many patients return to work in one or two days. “What we do today is not like your grandma’s old vein stripping. It’s faster, easier and more thorough. Most say their leg feels good on the first visit back. They say they didn’t realize their leg was hurting that badly, and now it feels great!” Dr. Hamar has been doing vein procedures for 40 years, and has concentrated solely on veins for the past 10 years. “Usually these are not life-threatening situations, but it can make your life uncomfortable,” he says. “I really enjoy making people feel better,” he says. “We can prevent life-long uncomfortable legs. Most people ask why in the world did I wait so long?”
