WELCOME TO CONTINUING EDUCATION! As we work diligently on the Winter 2019 edition of the Continuing Education catalog, we are also hard at work event planning, managing the catalog, navigating staff changes, prepping for the holidays and so much more. It’s that time of year when everything is happening at the same time. I am reminded of a favorite saying time and time again during this period – you can do anything, but you can’t do everything! The world wide web is huge and can be a daunting place to explore if you don’t have a few ground rules to follow. In this class, we will explore how to get started online. Night one will cover how to set your computer’s web homepage, book mark favorites, clear your browser “cache”, and preview what Google has to offer. On the second night, we’ll dive deeper and explore online purchasing (Amazon, Ebay and Etsy), and what Pay Pal is. Creative Arts Acrylic Painting for Beginners

PowerPoint gives you the power to create interactive and beautiful presentations to help you deliver your message to an audience. But do you know how to get started? In this class, you will learn the basics to get started. We will talk about selecting your presentation type and size, how to view and navigate your presentation, adding slides, editing text and building a basic presentation. It’s all hands on and intended for beginning learners! Basic computer knowledge is recommended.

Acrylic paint is a great, inexpensive medium that will allow you to create a beautiful project in a minimal amount of time. In this class, you will learn to mix colors, care for brushes, apply paint using a variety of brush strokes, and more! No previous experience necessary. Nicole will demonstrate a variety of techniques to build your painting vocabulary, so you can confidently further explore painting on your own in the future! Students are encouraged to bring their own sketching materials and brushes (if you own some), or instructor will have basic materials on hand during the first class. Want to get some writing done this winter? Awardwinning novelist Tempe O’Kun is here to help! This 9-week class is packed with writing exercises and practical advice, without the pressure of a graded course. Each student will complete two full-length short stories for critique. Knitting for Beginners

If you would like to learn to knit or just need a refresher, this is the class for you. Students will be knitting a scarf and hat or fingerless mittens to match while learning to cast on, purl, knit, and bind off. This class is designed for a beginner that wants to knit but has never picked up needles! “Creativity is in the eye of the beholder” and nothing allows you more flexibility than creating with a variety of different media. Creative Crochet: Dishcloths, Potholders, and More!

With weddings and graduation around the corner, now is the perfect time to learn basic crochet stitches to make unique gifts. In this class, you will learn basic crochet stitches such as the chain stitch, slip stitch, single crochet, half double, double and triple crochet, as well as how to change yarn colors. Participants will also learn how to create their own pattern and read from an existing pattern. Introduction to Stained Glass

Learn the skills to create a stained glass panel from beginning to end. During the four 3-hour sessions, you will learn basic techniques of design, glass cutting, soldering, foiling, and finishing. You’ll choose from an assortment of panel designs for the one you will create. Your tool package will cost $150 and is payable at the time of registration. Crochet for a Cause - Baby Octopus

With just a single crochet stitch, learn to make an adorable octopus that is suitable for any age. Interested in charity? Crocheting this pattern creates an octopus which may be suitable for donation to Sanford NICU for use by the hospital staff in giving babies something to handle besides their medical tubing and other equipment. Simple and Easy: Découpage Projects for Two

Crafting with kids is fun and creates quality time that you just can’t replace. With découpage and a little paint, you will create a project as a pair that you can take home and display as something you created together. We’ll start with a simple project that takes a little creativity and patience, while you both learn techniques you can use later on. Project will be complete in one night and you can take it home! If you are like most people, time during the busy work week is precious and preparing healthy and nutritious meals can be a struggle. In this class, you will get a “taste” of how to prepare two meals, the steps you need to take and the time it takes to get everything ready. Pysanka eggs are a Ukrainian tradition you can use to add new beauty to your Easter table. Designs are “written” on the eggs using a pen that applies melted wax, resulting in intricate patterns wwhen the egg is dyed. Join us to explore this unique process and create a new tradition! Grandma Emma’s High Rise Kuchen

Everyone loves Kuchen - the North Dakota German Russian ethnic dish! Learn why kuchen is for Easter and how to create the perfect raised dough and custard, topped filled with your favorite fruit. There are traditions with this sweet German treat to delight and entertain you. We will be using Grandma Emma’s recipe for the raised version of kuchen with your favorite fruit topping. Mediterranean Cooking on the Prairie

The research continues to roll in: eating like a Mediterranean has been shown to reduce your risk for heart disease, cancer, and diabetes; aid in weight management, and protect you against dementia, depression and Alzheimer’s disease. Chef Duane Ehrens and his wife Karen Ehrens, a Registered Dietitian, share background on the diet, recipes, and meal suggestions to help you eat more like a Mediterranean here in North Dakota. Duane and Karen will share practical information about how to include more whole grains, vegetables and fruits, beans and quality fats and oils in your diet. The Art of Sourdough

Yeast is the soul of bread. Capturing wild yeast cultures and creating artisan loaves takes a little time and planning, but you can learn how to make a beautiful crusty loaf of bread with four simple ingredients - flour, water, salt and air. Baking your own bread saves money and is a much healthier alternative to purchased breads with incredible amounts of sodium. Even if you have never baked bread before you will be able to create a “Kneadless” loaf of bread in your own kitchen. You will learn a lot about bread in general and the German from Russia practice of “Ewiger Saatz” or Everlasting Yeast. Wedding Kuchen

A sister treat to Grandma Emma’s High Rise Kuchen, Wedding Kuchen is a special treat and a twist on the “usual” German-Russian dish. Traditionally served at special events, this type of kuchen is flatter, crunchier and just as delicious. A Better Choices, Better Health workshop can help you live a healthier, happier way of life. As a participant in Better Choices, Better Health, you will get the support you need, find useful ways to deal with pain and fatigue, learn about better nutrition and exercise choices, and discover other topics important to your overall health. Participants learn relaxation skills, managing symptoms and difficult emotions, effective problem-solving and decision-making, getting a good night’s sleep, weight management and weekly goal-setting. This class is recommended for people with diabetes, heart disease, arthritis, cancer, lung disease, high blood pressure, MS, depression, any chronic physical or behavioral health condition, or who are overweight. T’ai Chi is a centuries old Chinese martial art that promotes calming, centering, and self-control. A combination of meditation and physical exercise, T’ai Chi can increase energy, flexibility, balance, muscle strength and reduce stress. Want a well-behaved dog? Want to know how to train your dog “pawsitively”? Learn the basics of obedience training in this class. You and your dog will receive instruction in a detailed manner so that everyone attending will benefit, and so that the transfer of information to dogs and family members will be incorporated into everyday life. Increase your puppy’s confidence, respect, trust, and interaction skills “pawsitively.” In this class for you and any puppy 6 months and younger, learn the basics of puppy behavior and simple obedience. Each session will be divided into five segments: 1) Puppy 101; 2) behavior issues including mouthing, biting, and chewing; 3) obedience instruction such as “focus,” “sit,” and “down”; 4) a controlled confidence activity, such as tunnel play or hoops; 5) playtime for positive interaction with other dogs and people. The tasks listed above are just a sample of what will be discussed! Each week, a new concept will be introduced and previous concepts reviewed, so that you and your puppy build its skills. A behind the scenes tour of the Heritage Center will provide a look at the collections areas, labs, and work areas that are not accessible to the public. As the federal and state repository for ND, we have extensive collections in archaeology, paleontology, archives and artifacts. The tour will provide a look at some of our most interesting and important collections. What does the Society collect and why; how do we care the collections that are in storage. Series The Music of the Vietnam War

For those who lived through the years of the Vietnam War, serving or at home, it is the songs that often make the connection to that turbulent time. The music of the Vietnam War was one of the most public arenas where this division occurred. By using the songs and the messages within them, this course can take a unique and I feel an interesting look at the Vietnam War, its contradictions, its division and conflicts. The music of any generation reflect the times, but like no other time in our history, the songs that compose the soundtrack to the Vietnam War not only mirrored the times, they changed them. 2/5, 2/12, 2/19 BSC NECE, Room 101 Fee: $35

This class will cover the time period of the Great Depression including the Dust Bowl. This was a challenging time in our nation’s history. Class members will learn about the politics of the time period and will hear the personal stories of those who lived through the trying times we know as The Great Depression. What the Hell is Happening Part I

If you think today’s world seems unhinged, then you’re in good company. Not only are ordinary citizens concerned about the path the United States and the rest of the world is on but so are many historians and analysts. Events are now taking place that, to some, are eerily reminiscent of previous periods of international tumult and revolution. This course will seek to provide historical context to today’s headlines by providing political theories from various experts throughout the years that explain how we arrived at this point. Among the areas we will examine are: The polorization of American politics, the retreat of democracy, the rise of China, Islamic fundamentalism, and the future of international power. FREQUENTLY ASKED QUESTIONS Will I receive a confirmation? If you register yourself online, you will receive an email confirmation within 24 hours. If you register by mail or call in, you will receive confirmation after we process your registration. Please review your confirmation, which will detail location, special supplies or material fees. What if I cannot attend a course as planned for Enrichment? (OLLI policy, see page 14) If you need to withdraw or change your registration in a class, you must call our registration staff at (701) 224-5600 or (877) 846-9387 at least five (5) business days before the class starts. You will receive a refund according to the refund policy of that class and through the same method in which the class was paid. There are no refunds or transfers allowed if you notify us fewer than five days before the class starts. What is the refund/drop planned for Enrichment? (OLLI policy, see page 14) Refunds granted at the participants’ request will incur a $20 processing fee per class to be deducted from the amount refunded. All refunds are made by mail unless paid with a credit card; in which case the card is credited. Please allow four weeks to process refunds. If cancellation is less than five (5) business day prior to the first session no refund is available. Full refunds are guaranteed if BSC Continuing Education and TrainND cancels a course. Can a class be cancelled because of low enrollment? If we have to cancel a class due to low enrollment, we will notify you as soon as possible before the class is scheduled to begin. You will receive a full refund of your tuition or transfer to another course of your choice, space permitting. How do I know if a course is cancelled? In the event a class must be cancelled, participants will be notified prior to the start of the class. In case of inclement weather, please check local radio and television stations for class cancellation announcements.
