Warm 30 g butter in heavy-bottom pan; add celery root and pinch of salt. Sweat until tender (use a tight-fitting lid). Add milk; simmer for 10 min. PurĂŠe in food processor until smooth. Pass purĂŠe through fine sieve, season to taste and reserve until required.

5. Shape potato into cylinders. Slowly roast in 350 F oven with duck fat, thyme and garlic clove. Season to taste. Turn occasionally until golden on both sides. 6. When ready to serve, pre-heat heavybottom pan over medium to low heat. Season duck breast; place skin down in pan for 7-9 min until skin is golden and crisp. Periodically baste breast with fat

renderings. Flip to flesh side and turn heat off. The latent heat in the pan will continue to cook the duck breast to a medium temperature. 7. Wash and pick Russian kale. SautÊ until tender with ½ tsp duck fat, salt and pepper. SautÊ golden chanterelles separately, season with salt, pepper and lemon juice. Warm up celery root purÊe.

Cook green onions in boiling salted water until tender. 8. Reheat duck sauce by bringing to a quick boil. Drop fresh blackberries into the hot sauce. Bake duck legs for 10-12 min at 375 F; slice each duck breast into three pieces. Dress and present dish similar to photograph. Serves two.

DIRECTIONS: 1. Blend butter, icing sugar, vanilla, egg, salt and cardamom. 2. Add in flour and ground almonds and work into the dough until semi-hard (do not work too much). 3. Form dough into a ball and refrigerate overnight. 4. Roll out the dough on a floured surface until approximately 1/8 of an inch thick. 5. Use a flower-shaped cookie cutter, two inches in diameter, to cut out 20 cookies. Place cookies on a baking sheet lined with parchment paper.

6. Cut 20 more cookies, this time cutting an additional small “eye� from the centre of each cookie for the top. Place cookies on a baking sheet lined with parchment paper. 7. Chill cookies in fridge again for 10 minutes. 8. Pre-heat oven to 150 C (300 Fahrenheit) and bake until very lightly golden on the edges (between 10 and 15 minutes). Careful – the cookies will brown quickly! 9. Cool cookies before piping the jelly on the full cookie bottom. Top each cookie gently with an “eye� cookie and dust with remaining icing sugar. Rogers Santa Claus Parade

The holiday season at the Vancouver Aquarium means Scuba Claus will skip the chimney and make a splash instead. He dives with halibut, herring, rockfish and sturgeon. Scuba Claus kicks off lots of holiday activities, winter crafts and holiday programming. The Vancouver Aquarium is open December 25, 31 & January 1.

This year’s Parade of more than 3,500 participants, features 65 marching bands, dancers, choirs, festive floats & community groups. 12 Days of Robson Street

Carol Ships “Parade of Lights� Society began over 50 years ago with one boat decorated with Christmas lights in Coal Harbour. On peak evenings, this holiday tradition has grown to more than 50 decorated boats, with in excess of 100,000 lights and carries over 30,000 people during this celebrated festival.

The Robson Street Business Association is offering a Holiday Giveaway for shopping on the best street in the city.
