n the 1960s and ’70s, Christmas in Vancouver meant

heading down to the Woodward’s Department Store with your family or sweetheart and seeing the department store’s display windows come to life.

When Woodward’s closed in 1993, Canada Place purchased the windows and carefully restored each handcrafted piece. The Woodward’s Windows feature classic holiday scenes with animated characters and elaborate décor. The Emperor’s Cigar Order this dramatic cocktail at the Shangri-La’s Xi Shi Lounge – or make it at home this holiday season. INGREDIENTS: 2 oz

cinnamon and passion fruit-infused Appleton Estate 12-year-old rum

Lichiko shochu

1 oz

Tio Pepe sherry

3 oz

fresh-squeezed blood orange Juice

1 oz

fresh yuzu juice

2 dashes

creole bitters

EQUIPMENT: Emperor penguin shaker

DIRECTIONS: 1. Infuse cinnamon sticks and passion fruit pulp into a fresh oak barrel with Appleton Estate 12-year-old rum. 2. Pour ingredients into the tin of the shaker and shake the mix. 3. Double strain into the Emperor over crushed ice. 4. Add 2 dashes of creole bitters. 5. Garnish with a dried blood orange slice and a passion fruit shell. 6. Pour a drop of Appleton Estate 12-year-old rum into the passion fruit shell. 7. Insert a cinnamon stick into the mouth of the Emperor. 8. Light the rum in the passion fruit shell under the cinnamon stick.

DIRECTIONS: In a shaker, add Kahlua, Pinnacle pumpkin pie vodka, pumpkin purée, three ice cubes and unsweetened almond milk and shake until some frost appears on shaker tin. This ensures the purée is dissolved evenly in the cocktail. Pour into glass of choice rimmed with the graham cracker, garnish with whipped cream, fresh-ground nutmeg, pumpkin spice and a cinnamon stick.

CONFIT DUCK LEG:

1. Combine all ingredients in a large Ziploc bag. Ensure that all ingredients are well incorporated and that they evenly coat the duck legs. Refrigerate for 24 hours, rotating the bag every six hours. 2. Remove duck from the bag and rinse thoroughly. Place the duck legs in an ovensafe cooking vessel. The duck legs should be completely submerged in oil. Place the duck legs in the oven and bake at 225o F for four hours or until the duck becomes fall-off-thebone tender. 3. Remove the duck from the fat and place back at 450o F until the skin becomes golden brown and crispy (10-15 minutes).

1. Cut the squash in half and remove the guts and seeds. Place the squash flesh-side down on a baking sheet and roast at 350o F for about 30-45 minutes (until the flesh becomes soft).

Wonton Noodle Soup EGG NOODLES: 500 g 1 tbsp

fresh Chinese thin egg noodles or Chinese raw fine noodles peanut oil

prawns, peeled and deveined coarse salt medium-grind (minced) pork (chicken optional) Chinese rice wine (optional) light soy sauce sesame oil sundried sole fish powder egg yolk wonton wrappers

SOUP:

chicken stock sugar sesame oil spring onion, chopped chives, chopped sundried sole fish powder choy sum (Chinese vegetable) Yunan ham

1. Bring a large pot three-quarters full of water to a boil and salt it lightly. 2. Gently pull the strands of noodles apart and drop them into the boiling water. 3. Stir to separate the noodles. 4. Drain the noodles into a colander and rinse thoroughly with cold running water. Drain well and transfer to a large bowl. Toss with oil to keep the noodles from sticking together. 5. To prepare the wontons: Rinse the shrimp with cold water. Drain, place in a bowl, add one teaspoon of the salt and toss well; set aside for 10 minutes. Rinse the shrimp in cold water again and drain thoroughly; pat dry and chop coarsely.

6. In a bowl, mix together a half teaspoon of salt, the shrimp, pork, rice wine, soy sauce, sugar, white pepper, sesame oil and egg yolk.

7. To wrap the wontons: Work with one wrapper at a time, keeping unused wrappers covered with a kitchen towel. Place one heaping teaspoon of filling in the centre of the wrapper. Moisten the wrapper edges with water and fold in half to form a triangle, enclosing the filling. Bring the two long ends up and over to meet and slightly overlap over the top of the filling. Moisten where the edges overlap with egg white and press together to seal. 8. To assemble the soup: In a saucepan, heat the chicken stock and season with the sugar, soy sauce and sesame oil. At the same time, bring a large pot three-quarters full of water to a boil, salt lightly and add the choy sum. Boil for one minute; then, using a slotted spoon or tongs, transfer to a bowl and set aside. 9. Drop wonton dumplings into the boiling water. Cook until they float to the top (about three minutes). Using the slotted spoon, scoop out the dumplings and place approximately five wonton dumplings in each bowl. Top with the choy sum and ladle over the hot stock. Garnish with chopped spring onion, chopped chives, Yunnan ham and serve hot.

DIPPING SAUCE:

¼ cup 2 tbsp 1 /8 tsp ¼ tsp

fresh lime juice chopped crystallized ginger salt, plus more to taste extra virgin olive oil

1 cup grape seed, corn or other neutral oil, plus more for deep frying ¼ cup minced shallots 2 tbsp peeled and minced fresh ginger 4 soft-shell crabs, cleaned (ask your fishmonger to do this, if you like) ½ cup rice flour 1 avocado, peeled, seeded, and thinly sliced

1. To make the tempura batter: Put the vinegar, sesame oil, salt and a half cup plus two tablespoons cold water in a bowl and mix well. Put the rice flour, baking soda and baking powder in a separate bowl and whisk to combine. Add the dry ingredients to the wet ingredients and stir gently until smooth. 2. To make the pickles: Put the chilies in a small skillet and set over high heat. Cook, turning occasionally, until lightly charred. Remove from the heat, cool completely, stem and mince.

6. Heat the remaining one-quarter cup oil in a small saucepan over medium-high heat. Add the ginger and cook, stirring constantly, until crisp and browned. Drain on paper towels, season lightly with salt and cool completely. Combine the shallots and ginger in a small mixing bowl and set aside at room temperature.

7. M eanwhile, pour oil to a depth of three inches in a heavy, deep saucepan and heat to 350o F. 8. D redge the soft-shell crab in rice flour, then dip in tempura batter. Put in the hot oil, fry until crisp and golden and drain on paper towels. 9. A rrange the avocado decoratively on a serving plate and season lightly with salt. Top with the shallot-ginger mixture. Drain the pickles, blot dry with paper towels, arrange in the centre of the plate and top with the crab. Spoon the sauce all around, and serve.

CHEF’S NOTES: When soft-shell crabs are in season, they are great prepared this way. They are even better served with the pickled cucumbers, crunchy shallot-ginger topping and dipping sauce. Out of season, you can substitute your favourite crab cake.

5. Heat three-quarters of a cup of the grape seed oil in a small saucepan over medium-high heat. Add the shallots and cook, stirring constantly, until crisp and golden brown. Drain on paper towels, season lightly with salt and set aside to cool.

4. To make the dipping sauce: Put the lime juice, ginger, salt and one-quarter cup water in a blender. Purée until smooth, then strain through a finemesh sieve, pressing on the solids to extract as much liquid as possible. Transfer to a small saucepan and warm over medium heat. When warm to the touch, but not boiling, remove from the heat and stir in the olive oil. Set the sauce aside.

4. Put the minced chilies, lime juice, sugar and salt in a medium mixing bowl and stir until the sugar is dissolved. Add the cucumber and toss well to coat. Set aside.

1. Put all ingredients except the butter into a mixer with the paddle attachment and mix briefly. 2. Add the butter and mix until pea-sized lumps are formed. 3. Bake at 320o F for approximately 12 minutes until light brown.

1. Whisk yolks with sugar. Combine goat’s milk and goat’s cheese with a hand blender, add lavender and bring to a simmer, then slowly pour into the yolk mixture while constantly whisking. 2. Strain out the lavender and return mixture to the pan and cook at a low temperature while stirring constantly with a spatula. When the mixture reaches 185o F (a consistency where it will coat the back of the spatula) remove from the heat and whisk in the gelatin. 3. Cool to room temperature and then fold into the whipped cream. Pipe into moulds.

TO SERVE: Unmold goat’s cheese mousse. Cut gel into squares and wrap around mousse. Use a pastry brush to brush the paint on the base of the plate. Add streusel and place mousse on top. Serve with ice cream.

CHEF’S NOTES: At Bacchus we garnish with a beet tuile, frozen beet mousse and dehydrated passion fruit.

Warm all ingredients together in a saucepan. Mix with hand blender until combined. Strain through a chinois. Keep warm for service.

RAISIN PURÉE:

Cook raisins and water until almost dry. Cool slightly and blend in a blender until completely smooth, adding more water if necessary. Strain through chinois and add the cinnamon powder. Place in squeeze bottle for service.

Brown butter in pan until dark. Carefully whisk in milk in stages, being aware mixture may splatter. Cover in a container and set in fridge overnight. Pierce the butter, which will have solidified and strain out the milk.

Place brown milk and milk powder in a pan and bring to a simmer. Add sugar, trimoline, glucose and boil. Whisk the above mixture into the whole eggs. Add cream and chill. Blend in a blender. Spin.

SAUTÉED APPLES: green apples, diced to ¼-inch cubes maple syrup

Heat the butter and vanilla until foamy. Add the apples and vanillla bean. Add the maple syrup and cook until the apples are tender. Remove and cool.

TO SERVE: Heat the soaked bread on a Teflon pan until browned on each side. Place in the oven until heated through. Place off-centre of the middle of a plate. Pipe a line of raisin puree along the back of the toast. Spoon about a tablesoon of apples on top, along the length of the bread. With a hand-held blender, foam the brown butter foam until light and frothy. Allow the top bubbles to set and cool slightly to give it more strength. Place on the toast with it flowing toward the raisin puree. On the other side, place a teaspoon of crushed, caramelized walnuts and position a scoop of the ice cream on top. Serve. Yields eight portions.
