he first stop on the tour will be the new waterfront Christmas district. You won’t be able to leave without humming something about a waterfront winter wonderland! A Stroll through the rustic gates into the Vancouver Christmas Market. Sip Glühwein, sample delicious German food and browse through homey artisan crafts. Every year, Vancouver’s downtown hospital is decked out in 10 kilometres (that’s seawall length) of Christmas lights. The volunteerbuilt display aims to inspire hospital donations. Serves 4 | Prep time: 2 hours
Ingredients

Directions
1 x12-16 oz fillet of steelhead trout
Remove skin from fillet. Butterfly lengthwise and flip skin side up. Season evenly with salt and pepper and sprinkle mixed chopped herbs. Proceed to roll (loin side in first) tightly in plastic wrap to form a uniform cylinder. Tie off ends with butcher’s twine. Poach in water bath (keeping temperature at around 52 C for 10 minutes). Remove and cool in iced water. Once cooled, cut into 2.5-inch cylinders. Reserve.

Wet 170 g 180 g 70 g 2
sour cream buttermilk canola oil eggs
Directions 1. Preheat oven at 375 F. 2. Prepare a casserole pan (6 x 10 inches with 2-inch depth, preferably) by lining the bottom with parchment paper and spraying the sides with spray oil. 3. In a pan, sweat onion and garlic in 1/2 cup of olive oil until translucent at medium low. 4. Once cooked, set aside and let cool. In one large bowl mix wet ingredients with a whisk and add the cooked onions and garlic mix. In another large bowl, mix dry ingredients thoroughly. 5. Add wet to dry and mix with a wooden spoon until mix becomes homogeneous. 6. Bake for 15 minutes at 375 F with a medium-speed fan, and then lower temperature to 325 F and bake for another 10 minutes. Allow to cool for one hour before cutting. Cut into squared portions of 3 by 3 inches. Then cut squared portion to resemble an open English muffin. Reserve.

S
1 cup white wine 1 cup white wine vinegar sprig thyme 1 tbsp black peppercorn, whole 1 shallots (roughly chopped) 2 cloves garlic (roughly chopped) 1 bay leaf Combine all ingredients in a pot and reduce by half, strain and reserve. Can be done a day ahead.

egg yolks s moked and melted clarified butter (or replace with one drop of liquid smoke) 1 tbsp aji amarillo (or replace with purée of roasted yellow pepper with a pinch of cayenne) juice of 1 lemon
Directions In a metal bowl combine 3 tbsp of vinegar reduction and 2 egg yolks and whisk vigorously under a bain-marie. Mix should become foamy and double in size. Be careful not to overcook the egg yolk. At this point whisk in slowly (like making a mayonnaise) the clarified butter. Add lemon juice, aji amarillo, salt and pepper to taste. Then, proceed to poach eggs to your desired doneness.
Plating Place poached eggs on top of open-faced toasted cornbread. Top with smoked hollandaise sauce and place trout cylinders beside them. Add fish roe on top of cylinders. Drizzle extra virgin olive oil and sprinkle smoked Maldon salt if desired. Accompany with a fresh green salad dressed with your favourite vinaigrette. Enjoy!

Combine with remainder of ingredients and then toss together with the apple cider and honey vinaigrette.
Apple cider and honey vinaigrette 200 ml olive oil 75 ml apple cider vinegar 2 tbsp wildflower honey Salt and pepper to taste Candied pecans* 200 g sugar 20 ml water Bring to a boil and simmer pecans for 3 minutes. Heat pot of vegetable oil to 350 C. Deep-fry pecans until golden and crisp. *Candied pecans may also be purchased at most grocery stores.

Cycle smart •One of the most
convenient and affordable ways to get around downtown Vancouver is by bike. The area’s extensive network of designated routes (visit vancouver. ca for a handy map) makes the trip comfortable, safer and fun for cyclists of all ages and abilities. It’s free to take your two-wheeled ride on SkyTrain, (just remember that only one to two bicycles are permitted per car, depending on the line) and, once you’ve arrived, there are hundreds of bike racks throughout the core – just be sure to bring a good lock. Bikes can also be parked downtown for free in select EasyPark parkades – just visit easypark.ca for details. No bike? No problem. Use Vancouver’s new bike-share program, Mobi, for unlimited short trips of 30 minutes to an hour – plenty of time to get around downtown. A day pass is only $7.50 and helmets are included.
Plenty of parking •Worried about finding parking downtown? You just need to know where to look. Start with the many metered spots ($1 to $7 an hour), most of which can be paid for by credit card. Or, for visits longer than three hours, pick a central location to start your activities and source a parkade where you can take advantage of an all-day rate. Valet parking is also available at the Fairmont Hotel Vancouver or on Alberni Street between Burrard and Thurlow.
