The first stop on the tour will be the waterfront Christmas district. You won’t be able to leave without humming something about a waterfront winter wonderland! A Stroll through the rustic gates into the Vancouver Christmas Market. Sip Glühwein, sample delicious German food and browse through homey artisan crafts. Look for the five bright sails. In the evenings, these sails are lit up and make for a great photo op. View the Avenue of Christmas Trees, vintage handcrafted animated Woodward’s displays and Rudolph’s Theatre. There will be a seasonal doughnut to try, but we also recommend the whiskey bacon doughnut and a glass of milk, of course. F Walk west on West Pender and take a left on Granville Street. You’ll find Holt Renfrew just a bit up the hill. Head upstairs to the second floor and peruse the curated Christmas collection of treats and gifts from around the world. G Browse your way through festively decorated Pacific Centre mall. Stop off at the Four Seasons Hotel (accessed from inside the mall) to vote for your favourite out of the 60‑plus trees on display at the Festival of Trees. H Head out the doors on West Georgia Street. Walk south along Howe Steet toward Robson Street. For a few dollars, rent skates and skate Vancouver’s only free outdoor ice rink. I Walk up Hornby (north, toward the mountains) and dip into the Fairmont Hotel Vancouver to take in its beautiful displays. Come out on the other side near Alberni Street. You’ll want to stop and take a peek at the iconic window displays by Dior, Hermès and Moncler, while walking down the Alberni luxury district to shop at stores such as Tori Burch, Burberry, Versace, Montblanc and Prada. Take a break on the Thierry patio. After all this walking you deserve a delicious pastry! J The sweetest lane in the city can be found in the lobby of the Hyatt Regency Vancouver (655 Burrard). A stunning gingerbread house created by the Hyatt staff serves as the centrepiece for gingerbread creations designed by secondary schools, professionals and amateur culinary artists. K Walk south on Burrard. Stop for a peek at the beautifully decorated Christmas tree gallery at the Sutton Place Hotel Vancouver. L Continue walking up the hill (south) on Burrard toward the St. Paul’s Lights of Hope. Every year, Vancouver’s downtown hospital is decked out in 10 kilometres (that’s seawall length) of Christmas lights. The volunteer-built display aims to inspire hospital donations. You can’t miss it but it’s best seen at night. We ho-ho-hope you enjoyed this tour!

ince 2010 the Vancouver Christmas Market has delighted Vancouverites and visitors to the city with authentic German-inspired festivities. This year – the market’s second in its new home at Jack Poole Plaza – expect the largest event to date, with more than 75 huts offering tasty treats and one-of-a-kind gifts, an added level to the famous Christmas Pyramid and Canada’s first-ever walk-in Christmas tree! We sat down with Vancouver Christmas Market president and founder Malte Kluetz, who told us about his treasured holiday memories from childhood, shared more event details and revealed his all-time favourite market experiences. What was Christmas like for you as a child? As a child growing up in Germany, the Christmas season commenced with the arrival of Advent. This is when we started decorating the house and preparing heartier meals. Most importantly, our favourite treats appeared in small baskets on the living room table! I also remember making gifts for family members, and learning a poem or song to share on Christmas Eve. Definitely the most exciting moment was when a bell rang, the door to the living room opened, and we saw the fully lit Christmas tree with all the presents piled below. Christmas music was often playing on the turntable, the room was aglow from the twinkling lights of the tree. I also vividly remember the sweet smells of the fresh tree and freshly baked gingerbread wafting through the air. It was truly a magical time! In fact, I started the Vancouver Christmas Market because I missed the Christmas markets I visited each season while growing up in Germany. I longed for the tradition of meeting with friends at the German Christmas market to share in the festive atmosphere and specialty foods offered during the holiday season.

What can visitors expect to experience at this year’s market? What’s new? It is our second year at Jack Poole Plaza (home of the Olympic Cauldron and situated next to the Vancouver Convention Centre). However, this year’s market will offer our largest festivities to date with more than 75 huts offering delicious delicacies, Old World confections and one-ofa-kind gifts. New highlights include Canada’s first-ever walk-in Christmas tree. The tree will be 30 feet high and covered with 36,000 twinkling lights that guests can enter for a spectacular light display. Our Christmas Pyramid – a new feature last year – will also grow by one level, adding the Vancouver Christmas Market’s very own flying stage perched 10 feet above the market. This new stage will feature an expanded lineup of holiday entertainment presented daily throughout the run of the market.

What has surprised you most about the growth of the market over the years? I am very excited about the growth and popularity of the Vancouver Christmas Market and the steady increase in our fan base. It is wonderful to see familiar faces each year while welcoming new visitors to the market. We are pleased to provide Vancouverites and visitors alike with a beloved annual Christmas tradition. What are your top tips for visiting the market? There is so much to experience at the Vancouver Christmas Market so I recommend purchasing a season pass so you can come back as many times as you like. I definitely think everyone should visit our new walk-in Christmas tree, shop the market for that special gift – and be sure to try glßhwein, which is a traditional hot spiced German mulled wine. The smell instantly takes me back to the Christmas markets I used to frequent every holiday season in Germany!

What’s your favourite thing to eat at the market? A delicious bowl of goulash from Das Gulasch Haus is always wonderful, especially on a cold winter’s day. I am also a fan of spätzle from Das Spätzle Haus. We have some delicious new food items at the market this year: I am really excited to try local wild salmon from E.A.T. Fish, one of our new vendors. Schnappsl Kaffe Haus is going to be offering berliner, a traditional German baked good that is like a doughnut. This delicious treat is often sprinkled with icing sugar and filled with a marmalade or jam filling. I also look forward to sampling some cannoli from Cannoli King. This new vendor is going to be offering seven different types of cannoli this year. Of course, I always enjoy a mug of glühwein! What’s your favourite thing to do at the market? I love meeting with friends and enjoying the abundance of delicious food and beverages, while taking in the sights, sounds and smells of the market. Why should people visit this year’s market? The Vancouver Christmas Market is a wonderful annual holiday tradition. Whether you are on a date night or visiting with friends and family, there is something for everyone! Finally, what is your favourite way to celebrate Christmas in downtown Vancouver? Well, of course, I am biased, but truly my favourite way to celebrate Christmas in Downtown Vancouver is to venture to the Vancouver Christmas Market. I hope to see you there this holiday season! Sablefish With Cranberries, Cashews and Cauliflower by chef Ned Bell from his LURE cookbook
Here the sablefish is seared until the skin is crispy and caramelized, and then served with a sprinkle of crunchy, buttery cashews. A trio of cauliflower preparations – roasted, pureed and shaved raw – echoes these textures and flavours, while a swipe of tart cranberry chutney brings it all to life. Serves four.
CRANBERRY CHUTNEY INGREDIENTS: 3 cups fresh or frozen cranberries (12 oz bag) 1/2 cup dried cranberries 2 cups cranberry juice (sweet) 1/4 cup honey 1/4 cup red wine vinegar, plus extra to taste 1-1/2 tsp sea salt, plus extra to taste
Directions: Combine all the ingredients in a medium saucepan over medium-low heat, and cook for 30 minutes or until the cranberries are tender and the mixture is thickened and saucy. Taste and adjust seasonings with up to a teaspoon salt or red wine vinegar, if needed. The sweet, salty and sour flavours should be balanced. Transfer the cranberry sauce to a blender or food processor, and blend until slightly chunky (or until smooth, if desired). (Chutney can be made several days ahead and refrigerated. Allow to come to room temperature before serving.)
CAULIFLOWER THREE WAYS Ingredients: 2 heads cauliflower, florets only (about 10 cups, divided) 3 tbsp plus 2 tsp olive oil or unsalted butter Sea salt 2 tsp lemon juice
Directions: For the puree, steam half the cauliflower (about 5 cups) in a steamer insert set over a few inches of boiling water for 12 to 15 minutes or until tender but not soggy and overcooked. Transfer the cauliflower to a blender, add 2 tablespoons of the olive oil (or butter) and a teaspoon of salt, and puree until smooth. For the roast-
ed cauliflower, preheat the oven to 400 F. In a large bowl, toss 3 cups of the remaining florets with 1 tablespoon of the olive oil. Season with salt and pepper and toss to coat. Arrange in a single layer on a rimmed baking sheet. Roast in the oven for 10 to 15 minutes or until florets are evenly caramelized and golden brown. Toss with a tablespoon of butter if desired. Finally, for the raw cauliflower, use a mandoline to shave the remaining florets (about 2 cups) lengthwise as thinly as possible. Transfer to a medium bowl and toss with the remaining 2 teaspoons olive oil, the lemon juice, and salt to taste.
SABLEFISH Ingredients: 4 (4 to 5 oz) skin-on sablefish fillets Sea salt and coarsely ground black pepper 1 tbsp canola oil 2 tbsp unsalted butter, softened 1 lemon, halved Chopped toasted cashews, for garnish Smoked sea salt, to sprinkle
Directions: Preheat the oven to 400 F. Use paper towels to pat the fish dry and season with salt and pepper. Heat the oil in a heavy-bottomed, ovenproof skillet over medium-high heat until almost smoking. Carefully lay the fish in the pan skin side down. (If necessary, cook the fish in batches to prevent overcrowding, which will keep the fish from caramelizing properly.) Reduce the heat to medium, and cook for 1 minute or until a golden crust forms on the skin. Flip the fillets over, skin side up, and cook for another 2 to 3 minutes or until browned. Place the pan in the oven and roast for 4 minutes or until fish is opaque in the center and flakes easily. Remove from the oven and add the butter to the pan. Allow it to melt while you squeeze the lemon over the fish. Use a spoon to baste each fillet with the buttery juices for about 1 minute. Transfer the fish to a plate and keep warm. Spread the cauliflower puree on each plate. Add the fillets and surround with roasted cauliflower. Spoon 2 tablespoons of cranberry chutney over the fish, and top with the shaved cauliflower. Garnish with a sprinkling of cashews and smoked salt.

dough Ingredients: 300 g all-purpose flour 300 g ground hazelnut 220 g sugar 1/2 tsp ground clove 1 tsp ground cinnamon Zest of 1/2 lemon 2 tbsp vanilla sugar 1 egg 1 egg yolk 300 g butter
filling Ingredients: 350 g lingonberry jam 1 egg yolk 2-3 tbsp heavy cream 40 g slivered almond Icing sugar
Directions: 1. Add all dry ingredients in a mixing bowl and start mixing. 2. Cut cold butter in small pieces and add to the dry ingredients while mixing. 3. Add egg, mix just until dough comes together (don’t over mix). 4. Rest dough 30 minutes in fridge. 5. Take 2/3 of the dough and roll out to fit a 9-inch pie shell. 6. Now spread lingonberry jam evenly on the dough leaving 1/2 inch border on the side. 7. Take the rest of the dough and roll into strings and lace the top of the pie. 8. Mix egg yolk and cream and brush on top of the lace and sprinkle with the slivered almonds. 9. Bake at 170 C for 50 minutes until golden brown. 10. Once the torte cools, dust with icing sugar.

Carrot Cake With Cream Cheese Mix and Goose IPA Sauce by chef Ryan Gauthier of Glowbal Restaurant
Ingredients: 2 cups all-purpose flour 2 tsp baking soda 1/2 tsp salt 2 grated cinnamon sticks 3 large eggs 2 cups sugar 3/4 cup grape seed oil 3/4 cup buttermilk 1 scraped vanilla bean 2 cups grated carrot 1 small diced fresh peeled pineapple 1 cup toasted and chopped pecans
Directions: Line cake pans with parchment paper, spray with oil and set aside. Stir the flour, baking soda, salt and grated cinnamon sticks together. Place eggs in a KitchenAid and beat until they have a ribbon effect. Add the sugar, oil, buttermilk and scraped vanilla bean. Mix on medium speed for 4 minutes. Add the flour (dry) mix slowly on low speed until fully incorporated. Take out of mixer and fold in grated carrots, pineapple and pecans. Pour mix in cake pans and bake at 350 F for 25 minutes. You can check with a toothpick to see if it’s cooked. If pick is dry, then cake is done.
Cream Cheese Mix Ingredients: 1/2 cup softened unsalted butter 8 oz cream cheese 4 cups confectioner’s sugar 1/2 scraped vanilla bean
Directions: In a KitchenAid whip the butter and cream cheese until incorporated. Slowly add the sugar and vanilla and mix on low speed until fully mixed.
Goose IPA Sauce Ingredients: 2 cups sugar 1/2 cup Goose Island IPA 4 fluid oz softened butter 1 cup whipping cream 1 tsp Maldon sea salt
Directions: Place the sugar and beer in a sauce pot (preferably one that is a bit higher). Bring to a simmer. Once sugar has fully dissolved do not stir anymore. Boil until the liquid is a dark red amber colour. Stir in butter and remove from heat when melted. Slowly whisk in the cream (make sure it’s at room temperature before adding). Return to heat and cook until thickened, about 3-4 minutes.

Selecting Your Cheeses Opting for cheeses with varying tastes and textures entices your guests to try something new. Sparkling wine, like Ruffino Prosecco, is a flexible wine to partner with cheese because the bubbles cleanse your palate with each sip. Not just for celebrations, Ruffino Prosecco and semi-soft cheeses like fontina, Oka and mozzarella or even a fresh goat’s cheese will be crowd favourites at any gathering you host.
Wine Matching Try to balance the intensity of the cheese with the intensity of the wine – strong cheese flavours need to be matched by strong wine flavours so they won’t overpower one another. Inniskillin’s Vidal icewine is a perfect wine to enjoy with a strong, distinctive blue cheese. It’s a saltysweet match made in heaven.

How Much is Too Much? If serving cheese at a dinner party, opt for individual plates of between three and five cheeses as a bridge before dessert. Including a small taste (15 grams) of a smoked cheese like Gouda or cheddar works well with the rich and opulent style of Robert Mondavi Private Selection bourbon barrel-aged Cabernet Sauvignon before something sweet follows.
Serving Temperature Cheeses are best served at cool room temperatures (17 to 19 C). When it’s cold outside and big reds like Jackson-Triggs Reserve Merlot are on the table, try to bring your aged cheddar or Beemster out of the fridge at least an hour before you plan to serve.
Presentation Choose cheeses with different colours, coatings and forms that will engage your guests. A soft goat’s cheese coated in cranberry or light herbs will add some colour and dimension to your cheese board and stand up to an intense and fruity red like California’s Meiomi Pinot Noir. Other accompaniments like fruits (such as pears, apples and apricots), jams and chutneys, interesting breads and crackers and nuts also create visual interest and add intriguing possibilities.
