Vancouver’s Downtown Christmas Trees: Giving the Invaluable Gift
A
mid the hustle and bustle of the holidays, the social engagements and the neverending hunt for the perfect gift, it’s important to remember what Christmas is really about – celebrating the season with loved ones and being grateful for what we have. For the past 29 years the lobby of the Four Seasons Hotel Vancouver (791 West Georgia Street) has been decorated with a forest of lush, beautiful trees, all in support of BC Children’s Hospital. The event takes place from November 13 to January 5 and has expanded into the main area of Pacific Centre mall. Each tree is sponsored and decorated by individuals and corporations committed to supporting children who need it most. Last year more than $147,629 was raised for British Columbia kids, making this the perfect way to get behind the spirit of giving. The Sutton Place Hotel Vancouver (845 Burrard Street) is also celebrating its 10th annual Home for the Holidays Tree Pageant, running from November 21 to January 3. This is a charitable tree pageant whereby local businesses design Christmas trees that are displayed in the lobby of the hotel. Guests can purchase a ballot for $5 and vote for their favourite tree with all proceeds benefiting a great cause, said Sutton Place Hotel general manager Navid Sariolghalam. “All proceeds from the event go directly to PALS Autism School, the only specialized and dedicated elementary and secondary school in B.C. for children and adolescents with autism. Woodward’s Window at Canada Place: A Great Place to Gaze
P
ort Metro Vancouver is also hosting its 28th annual Christmas at Canada Place showcase. The event takes place outdoors along the Canadian Trail (Canada Place West’s promenade) from December 13 to 31. The Woodward’s Windows are a long-standing part of Vancouver’s history. Originally displayed in the popular Woodward’s department store, the windows featured classic holiday scenes with animated characters and elaborate decor. Handcrafted in the 1960s, the displays included the Candlestick Factory, Santa’s Workshop and the Lamplighter. Following the closure of the Woodward’s department store, Canada Place purchased the displays in 1993 and has continued to incorporate them into the Christmas at Canada Place experience. Donations can be made on site to Strathcona Community Centre’s Food Security for Children program, and donors will receive a free Canada Place commemorative pin. Gillian Behnke, manager of community relations and communications at Port Metro Vancouver, said there’s something for everyone, all in the name of a good cause. “Similar to last year, visitors will enjoy Christmas tree displays, crafts, a holiday movie tent as well as the Woodward’s windows. Each window display contains over 100 pieces and takes over 100 hours to build; however, thankfully you can take in this special Vancouver tradition in a matter of minutes.”

In a shaker add Kahlúa, Pinnacle Pumpkin Pie Vodka, one teaspoon of pumpkin purée, three ice cubes, and 2/3 cup of unsweetened almond milk and shake until some frost appears on shaker tin. This ensures the purée is dissolved evenly in the cocktail. Pour into glass of choice rimmed with the graham cracker, garnish with a dollop of whipped cream, fresh ground nutmeg, pumpkin spice and a cinnamon stick.

Pan Pacific Hotel’s Seared Pacific Coast Scallops Sweet onion purée, pancetta, sautéed kale, seared cauliflower Ingredients 2 U-10 scallops 2 g kale 15 g white onion 5 ml cream 22 g cauliflower 12 g pancetta 1 ml canola oil 0.5 pieces lemon juice pinch salt pinch white pepper pinch sugar 1 g finely chopped shallots 2 ml white wine

1. Sweat onions and garlic until translucent. 2. Add the sugar. 3. Place in blender with cream and touch of seasoning and blend until smooth. 4. Keep warm on the side.
1. Slice cauliflower in to ½-inch pieces and grill or sear until tender (3-4 minutes). 2. S eason scallops with salt and pepper, sear both sides in very hot pan with a teaspoon of vegetable oil (cook 2 minutes each side or until cooked medium rare. Do not overcook!). 3. Sauté pancetta until golden brown, add shallots and kale, toss in fry pan, then deglaze with white wine. 4. Remove from heat – don’t overcook kale. 5. Take warm onion purée spread on plate, place sautéed kale, seared scallops and cauliflower next to onion purée. 6. Serve right away.
Wedgewood Hotel & Spa’s Cranberry & Chestnut Stuffing Ingredients
1 sourdough loaf, cubed 1 leek 2 celery sticks 2 cloves garlic 3 banana shallots 30 g chestnuts 140 g dried cranberries 10 g fresh sage 4 sprigs thyme 120 ml chicken stock 150 g butter 1/2 teaspoon nutmeg salt and pepper
Directions 1. In a large heavy-based pot over medium heat, melt half of the butter. 2. Add the shallots, celery, leek, garlic, sage, thyme, chestnuts and salt. 3. Cook until the onion is soft, 5 to 7 minutes. 4. Remove from heat. In a large bowl, toss the sautéed vegetables with the bread cubes and cranberries. 5. Season with pepper and nutmeg. 6. Melt the remaining butter. 7. Pour it over the stuffing along with the chicken broth and toss to coat. The stuffing should just hold together when mounded on a spoon.

If cooking in a turkey, put the stuffing in the bird just before roasting. Pack the stuffing loosely into the bird’s cavity. Cook the stuffing in the bird to 160º to 165º F, checking with an instant-read thermometer. If the bird is done before the stuffing is, take the bird out of the oven, spoon the stuffing into a casserole dish and continue to bake it while the turkey rests. If baking some or all of the stuffing in a casserole dish, pour a cup or two of stock over the stuffing to replace the juices the stuffing would have absorbed from the bird. Bake it covered until heated through, 45 minutes to 1 hour. For a crunchy top, uncover it for the last 15 minutes of baking.
