Nation Agrees to Discuss Constitution Timeframe Rather Than Constitution (Bangkok) Yesterday, National Committee for Let’s Make Constitution Together member Manas Wanchaisiri declared that the panel had agreed drafting a constitution is just too complicated for now. “Honestly, we’ve tried. It’s been a year now. And it’s just way more of a headache than expected. In fact, the public has absolutely no idea what we’re doing either. So instead of drafting a constitution, I think we should all agree on when to draft it.” Polls indicate the public favors to the NCLMCT’s proposal. Seventy-five percent of respondents said they’d rather vote on when to vote on the new constitution than vote on the new constitution. We spoke to Somchai Somsak, 48, a taxi driver in Bangkok, who said he was in favor of thinking about when to think about the new constitution. “I have a lot going on right now,” he said. “I’m in the middle of a divorce because the kids have left home and my wife well, you know, it’s just not the same. You realize it was the kids holding things together all of a sudden. I just can’t think about a constitution right now. Can we talk about this in a year or two?” “We haven’t been under pressure from Dear Leader,” the NCLMCT’s Manas says. “It’s really just us being incapable of doing this. Please don’t blame him. Yes, the army picked us. And yes we really suck at this whole constitution thing. But no, I don’t think anyone was thinking this could be a way for the boys in green to stay in power. There’s no one in the government right now who can think that far ahead.” The word on the street is that Thais want to be consulted on when they’d like to be consulted. Social activist Maprang Ruankul took to Facebook to criticize the process. “We haven’t been included in talks to decide when we should meet to talk about the constitution timeframe. We feel we’re being left out of this important discussion. I can do next Wed afternoon, but after that I have a seminar in Belgium so it’s going to have to be August. Mornings are usually better for me, though.” Manas insists the ball is in the Thai public’s court. “If we get 20,000 to 30,000 signatures from the public, we can initiate a procedure to set up a panel to look into when we could hold the ‘When is a good time to have the constitution referendum’ referendum,” he said. “Honestly, we think we could have a date for when to pick the date as early as Q1 2016.” Kattiya Aekpichat, 32, a housewife in Nonthaburi said she was in no hurry. “You know with the rainy season and new farang-style semesters, everything is a mess right now. Traffic is terrible. The kids are upset. I don’t have time for this constitution stuff. I’ll try to give it some thought but could you come back this Saturday, when the kids are in cram school?”

upfront HOT OR NOT Michael Budde
Hot: Arson
Not: Our heritage
The Chumbhot-Pantip Foundation stopped renewing leases for residents of a historic community on Charoenkrung in 2008, so it could develop land surrounding the MRT station being built in that area. On Jun 1, the shop houses in question caught fire. (Locals say it’s arson.) Now, district officials say the damage is such that the shop houses must be destroyed. And who chairs the Chumbhot-Pantip foundation? Sukhumbhand Paribatra, the governor of Bangkok.
Hot: Price hikes
Not: Deflation fears
From Vesper to Lenzi (see our review, page 25), we can’t help but notice that this season’s “new” menus are also more expensive. This should come as reassuring news for Thanavath Phonvichai of the University of the Thai Chamber of Commerce, who expressed concerns about contraction of consumer prices for five months in a row. Clearly, he’s just not going to the right places.
Hot: Actual gardens
Not: Terrariums
If you bought terrariums through a local Instagram account, you might want to switch to buying clothes instead (see page 16). Sad little jars on the kitchen table have had a good run, but the trend is over. It’s time to celebrate actual plants living in the real world, not half-dead moss under a glass dome. For some inspiration, flip to page 6.
STREET TALK Artit ‘Kik’ Prasartkul, 35, served as a Thai diplomat in Kenya from 2011-2013, acting on behalf of the Thai government in 11 East African countries. His new book, Out in Africa, recounts his years as the first secretary of the Thai Embassy in Nairobi, shining light on Thai misconceptions about Africa and the life of a foreign diplomat. A passionate writer, Kik has written two other published travel books—An Unordinary Journey (2004) and Amazon Retreat (2007)—both of which came out while he was still in college. Here, he discusses how his experiences in Africa have changed him. What were your first impressions of Africa?
Does the book focus on any specific topic about your life as a diplomat?
nationalities like we have been there and done that.
Everything was new for me; I learned a lot and wanted to know more about the culture. How do the people think? What do they eat? If I was in Europe or the US, the malls and restaurants would at least be familiar, but Africa? I couldn’t have guessed anything about it. Forget preconceptions of droughts and wars. Nairobi is a big but convenient city; challenging, exciting and energetic.
I like to observe how globalization and the market economy shape societies. Changes in society will always benefit certain groups of people, but overall I think the changes in Africa are resulting in better circumstances for most people.
What did your role as a Thai diplomat in Kenya involve?
Do you find Thais often have misconceptions about African countries?
Hot: Sathorn Soi 10-12 Not: BK Magazine After Rocket opened, we banged on about that soi being Bangkok’s hottest neighborhood for about a year. Except Rocket was never joined by the legions of galleries and cafes we envisioned, leading us to declare the area a flop. Now that Revolucion Cocktail and Marcel have just opened (see page 20), soon to be joined by Daisy Matthews, we’re having to change our tune one more time. The place is hot!
When people ask me about African tribes, I tell them that there are none in the 21st century. Everything has become urbanized and modernized. Africa is changing. There are no genuine African tribes in this century. The political and economic influence is too strong.
Has living as a diplomat in such a poor country changed your outlook at all? I still agree with the world of capitalism. It drives everything. Money creates more opportunities. For example, while people in Bangkok used to travel by bus, now we have the Skytrain or metro. We pay more but the productivity is also higher and the opportunity cost is lower. I was there when KFC opened its first branch in Nairobi. Most Kenyans were really happy to have a new place to eat. There was no protest or negative commentary. We shouldn’t judge other
My main task was to educate East African nations on Thailand, as well as Thais on Africa. We introduced them to our country, and let them know we are a friendly and willing ally. On a personal level, being a diplomat is not really different from any other profession. Our skills such as negotiating and coordinating tasks are used in everyone’s daily life. How have your experiences in Africa shaped who you are today? It was a life filled with joy and challenges. Before this post in Kenya I was reluctant to become a diplomat for life, thinking I would rather join a private company. But after Africa I’m certain that I will continue this job. Tiny Gardens
Green-fingered Bangkokians turn urban living spaces into gardens. By Sam Nathapong
Pure Luck Café Chatthip ‘Tibb’ Thungtham, 34 Owner of Pure Luck Kombucha brewery, photographer, fashion designer
Tibb recently turned an old town-house in the burgeoning hipster quarter of Soi Nana (the one in Chinatown) into Bangkok’s first brewery for kombucha, a fermented and sweetened tea drink. What was once a three-story artist’s studio has been carefully renovated to retain its traditional character. “While scraping the paint off the wall, I cried out to myself when I discovered the colors left by former tenants underneath,” said Tibb, who did the entire renovated the space herself. “The building is remarkably historic and full of artistic life.” The main entrance hall leads to a vast open space filled with plant life, which she uses as a workshop. “We keep the door open so the wind can flow through the space,” Tibb explained. “We selected the plants based on durability. I have platycerium ferns hanging from the ceiling, and a small banyan tree that used to have beautifully pink-colored leaves. These guys love sunlight and heat.” The back of the house is used for storing the kombucha in glass jars—the traditional Chinese way—while a steep wooden staircase leads from the hall and up to the rooftop. A former resident of New York, Tibb has taken influence from Brooklyn-style communal living, and uses the roof to grow organic vegetables. The vast space looks out over the rooftops of Chinatown. “I intended to bring out the casual charm of the place, and mix it with my lifestyle,” Tibb explained. “I’m a vegetarian and I want to be able to grow my own vegetables up here. They’re aesthetic, sure, but more importantly, they’re edible!”

ADVERTORIAL
Return to Real Tea Phuket’s Les Diables modernizes Britain’s teatime traditions with perfect pairings and a serious dose of creativity.
Counting down to Dilmah Real High Tea Global Challenge! Last year’s Dilmah Real High Tea challenge winner, the Shangri-La, set the bar very high. Tea inspired dishes such as the First Ceylon Souchong Smoked Salmon with Koraj Cream Cheese Mille Feuille created by the hotel team, were a real delight. After defeating 14 other hotels throughout Thailand in 2014, this year our two national winners are heading to Colombo, Sri Lanka as Thailand's representatives in the Dilmah Real High Tea Global Challenge 2015, the toughest challenge in the tea industry. Let's celebrate and support our two national winners during this competition!
Thailand's winner for The Dilmah Real High Tea Challenge for Cafe/Restaurant, which is also invited to Home of Dilmah in Sri Lanka is Les Diables, Phuket, a devilishly delicious patisserie and restaurant in Phuket. Les Diables has created two highly original and very different menus to take tea pairing into the 21st century. The Thai High Tea comes with tantalizing bites that clearly reference local cuisine in thoroughly modernized formats: Passion Sorbet with Coconut Ice, Spicy Pork Curry Puffs, Larb Gai Rolls with Raita Dip, Green Tea Brulee Shots and many more dishes designed to pair perfectly with Dilmah Berry Sensation or Dilmah Rose. The English High Tea set is equally bold: Lemon Dill Pannacotta Shots with Tuna, Mini Salmon Cheese Cakes and a flurry of tea-flavored creations from Meringues with Tea-Infused Cream to Red Velvet Cupcakes with Rose and French Vanilla Tea Cream. These dishes are impeccably matched with a choice of Dilmah Earl Grey or Dilmah Peppermint & English Toffee. The Dilmah Real High Tea Challenge aims to celebrate such innovation and encourage restaurateurs who want to go beyond scones and clotted cream. and give the 'tea' in high tea its rightful place. To further Les Diables' exploration of Real High Tea, they are being presented with an all expense paid trip to Sri Lanka to meet the other Global Real High Tea Challenge winner and gain a deeper knowledge of tea.
Perfect Tea Pairings Tea is a great drink to pair with desserts, but also savory bites. Here's how to get it right—without a scone or cucumber sandwich in sight.
1. The Memory Pairing 2. The Twin Pairing A lot of our flavor expectations come from memory. So if you're drinking Dilmah English Breakfast tea, you're probably thinking croissants or toast with marmalade. Go for it! Or shake things up just a tad, such as pairing that breakfast tea with honey toast, a similar taste profile but more suited for dessert. Try it at: Chiang Mai’s De May Coffee House, which serves its signature De May Honey Toast with Dilmah Exceptional Earl Grey. 1/F Rawee Waree Residence, Nimmanhaemin Soi 15, Chiang Mai, 053-212-400. dilmah 12-06-2015_2.indd 7
You can also match food with teas that taste alike, such as berry flavored tea with a strawberry dessert. It adds a very subtle layer of depth to the flavors, but more importantly, it intensifies the food’s existing characteristics. It’s best to do this with flavors and aromas that aren’t too overpowering, though, so avoid doubling up on smokiness or acidity. Try it at: Bangkok’s Chickalicious, which serves Dilmah Exceptional Berry Sensation tea with a French vanilla tea panna cotta topped with fresh raspberries. 5/F, Central Embassy, 1031 Phloen Chit Rd., 02160-5630. Open daily 10am-9pm. BTS Phloen Chit
Bangkok’s Charlie Brown, which serves Dilmah Exceptional Berry Sensation tea with its strawberry tart. 2/F, Mega Bangna, Bangna-Trad Rd. 02-105-2076. Open daily 10am-10pm
3. The Contrast Pairing 4. The Complementary Tea has a tannic quality, so it can cut Pairing through rich, creamy food like a big puff pastry or a plate of ribs. That’s why the Chinese have been drinkng tea with food for centuries, whether it’s the highly fermented pu’erh tea to balance out a chunk of fatty pork belly or a lighter yellow tea to accompany duck.
Try it at: Bangkok’s Charlie Brown, which serves the tannic Dilmah Perfect Ceylon tea with spinach and bacon quiche. Yum! 2/F, Mega Bangna, Bangna-Trad Rd. 02-105-2076. Open daily 10am-10pm
Chiang Mai’s Wanlamun, which serves the peppery and floral Dilmah Exceptional Rose with French Vanilla tea, with a set of sweet Thai desserts. 2/F, Central Festival, 99, Chiang Mai, 053-288-662. Open daily 11:30am-9:30pm
The most superior pairing, one could argue, is when two flavors combine with each other into a perfect symphony of multi-layered tastes. For example, a vanilla tea with a chocolate mousse. Almonds, for example, are known to pair incredibly well with peaches and apricots, or mint with chocolate. But there are many more. Try it at: Bangkok’s Park Cuisine, which serves Dilmah Exceptional Peppermint and English Toffee tea with Feuille d’Automne, a chocolate and meringue pastry. 1/F, GPF Wittayu Tower, Wireless Rd., 02-689-6283. Beer’s Green Corner Pantavit “Beer” Lawaroungchok, 32 Exhibition designer for Apostrophy’S, an event, product and graphic design company
Step inside Beer’s newly decorated home in Landmark, a development of luxury townhouses just off Ramindra Road, and you’re greeted by a melange of Tibetan brown leather, brass sculptures, Chinese antiques and Russian dolls. Alongside a collection of Chinese ornaments is a vertical garden filled with lipstick vine, which is provided with plenty of natural light thanks to a skylight in the roof. “Living in the middle of a big city, it’s inevitable you will lack a connection with nature,” said Beer. “I spend so little time outdoors.” But the plants require specific conditions, and Beer admitted that maintaining the garden hasn’t always been easy. “It was like tuning an instrument. I’ve tried various plant species to find those that are strong enough to survive the severe heat and humidity. I now have an automatic plumbing system to water the garden, and UV spots for the plants on the lower shelf where they get too little sunlight. I also have artificial plants in the area in front of the air compressor.” His garden makes excellent use of various species of fern, mainly dryopteris filix-mas, as well as ornamental plants like Spanish moss, podocarpus and Austrian Rose Apple. “Normally, this kind of space is not suitable for indoors,” he says. “It’s delicate and requires a lot of work to pull off in your house.”

Mymph’s Tiny Green Haven Warapsorn ‘Mymph’ Akkhaneeyut, 35 Assistant editor-in-chief of Baanlaesuan Magazine
As a staff member of a home and garden publication for over 10 years, Mymph has seen thousands of perfect examples of how to incorporate livable green space into every area of the home. Clearly, all that exposure to gardens both indoors and outdoors has rubbed off. “It’s been six years since I decided to turn this balcony into my own garden,” Mymph said. “I love the feeling in the morning when I wake up and see flowers blooming right before my eyes. I can even smell the roses in my garden.” Her balcony is located on the fifth floor of a P. Pinklao condominium in the Taling Chan district. It has a slightly industrial air, and although she lacks any quality outdoor space, that hasn’t stopped her from innovating with what she’s got. The area is filled with a mishmash of flowers and herbs. Usable plants like rosemary and fragrant ornamentals like orange jessamine sit alongside durable tillandsia and ferns. “Unexpectedly, roses are easy for me to plant,” she said, “which has had a real emotional impact for me because I love the smell, the colors and the shape of roses.” A wire fence left by a previous tenant has been adopted by Mymph into a vertical garden, where she hangs ferns, tillandsia and other knickknacks. “I always have too many plants on my balcony. Every so often I need to give them to friends.”
Mymph’s tips for growing your own garden There is always space for plants. People who have limited space can always find some sort of solution. You can install a shelf to plant a vertical garden on your wall, hang plants from the ceiling, or place potted plants along corridors. Ferns and plants with big leaves work well indoor. They love humidity. Cacti and succulents are perfect for those who don’t have much time. Other good indoor plants include the Apocynaceae family, such as Wringhtia antidysenterica and Gerdenia Crape Jasmine. Plants will not survive without attention. You have to rise early to tend to your garden. It’s always better to water your plants in the morning rather than in the evening. Water in the evening and the plant can get root disease.

angsaen has long been known as a cheap beach destination close to Bangkok. But apart from affordable seafood and camp beds under coconut trees, there used to be practically nothing there. In recent years, though, Bangsaen has re-emerged as a hip district driven by the demand of the young generation who gather around Burapha University. It’s now packed with cool cafes and even some nice architecture thanks to help from DBALP’s Duangrit Bunnag and Pitupong Chaowakul of Super Machine. Here’s where to check out while you’re there.
Betta Cafe x Beach
Standtall Coffee Roasters
Summer Corner Cafe
The newest beach cafe is situated on Wonnapa Beach, in the south of Bangsaen. This minimal Japanese-style joint has more going for it than a cute atmosphere. The desserts are handled by Thakorn Wannawong, an alumni of Le Cordon Bleu Sydney, who uses his expertise in pastry to create mouth-watering creations which are served alongside cocktails and Corona beer. Highlights include the lemon merringue tartlette (B45) and their signature “Mum’s Cake” with matcha gelato (B70). Savory food provides some Thai options like shrimp dumpling and giant prawn tom yam soup (B170) and deep-fried pork belly with fish sauce (B90). Late afternoon is the best time to visit for a cold beer while watching the sunset. They often host beach parties with guest DJs spinning. Visit their Facebook for updates.
After running a small coffee place for two years, Pachanon Aphiworrathamon decided to go one step further and become a coffee roaster. After studying a coffee cupping class at Pacamara in Bangkok, he started Standtall with the aim of becoming the center of Bangsaen’s coffee community. Their service offers many different brews, from slow bar to cold drip and bottled cold brew at B120/bottle. Though their coffee menu is packed with mostly standard choices like espresso (B65) and long black (B70), they also come up with new drinks worth trying like Gravity Checks (drip coffee jelly with Kahlua, honey, milk and espresso, B95). The beans are selected locally as well as from Ethiopia, Indonesia, Brazil and Guatemala. Their highlight is Rider Blend, a mix of Thai-Chiangrai, Ethiopia Yirgacheffe and Nicaragua beans. Take the blended beans home at B250 per 250g. Head their early for breakfast like khai kata (sausage and eggs, B125) and all-day comfort food like pasta with shrimp eggs in cream sauce (B145).
Bangsaen native Chuleekorn Sotaiyin has used her Swiss hotel management training to create this new fusion seafood restaurant. The bare cement walls of the loft area are filled with playful drawings of New York attractions. The menu is packed with international food like New Zealand mussel hotpot (B180) as well as Thai spices like the nam prik goong sieb (shrimp paste with crispy shrimp, B120) and stirfried seabass with black pepper (B100). Don’t leave without trying the Summer Burger (B130). The dessert highlights are the Oreo cheesecake and cheesecake brownie.

Namon Nomwan Founded by a group of architects about a year ago, this ever-popular cafe wins people’s hearts with its raw concrete structure and giant shady trees behind Burapha University. The vast yard is dotted with mattresses and low-rise tables where you can sit with friends and even your pet. The concrete-glass house full of old furniture sells desserts sexed up with cute presentation, like the ice cream Aladdin (B75), vanilla ice cream served with dry ice fuming out from an old-school teapot. Also expect fried ice cream and Oreo pancakes along with finger-food like cheese balls (B95) and barbecue ribs (B190). 80/3 Maab Mayom Rd., 082-526-6651, 095-731-0395. The main alfresco dining terrace is set above the rocky coast surrounded by a lofty steel structure that’s home to another open-air terrace with seats to admire the beautiful sunset. The menu is heavy on Thai classics and fusion seafood such as hor mok pla kapong (seabass curry cake with coconut meat, B280), Chariot shrimp with wasabi (B180) and stir-fried crab curry (B450). PATTAYA
Art of Sleep Launched early last year under an art and design theme, Siam@Siam Pattaya (038-930-600, www.siamatpattaya.com) has now unveiled a series of rooms designed in collaboration with local and international artists. The first features Belgian street artist Toska (www.facebook.com/toska47), whose usually gritty work here takes a lighter and brighter direction, inspired by the sand and sea of Pattaya. Aside from the paint job, Toska also designed the pillows, couch, minibar and hammock on the terrace. The hotel is currently offering a special package for the Toska room at B4,999 per night, which includes My Club privileges like late check-out at 4pm, valid through Jun 30. The spa itself boasts seven treatment rooms and over 20 treatments, including Thai massage, Swedish massage and facials. The signature “follow the sun” concept is said to tailor treatments to the body’s different conditions throughout the day: from the rosy-scented morning massage oil to the uplifting, minty daylight treatment and relaxing sunset-themed treatment with lavender notes.

CHIANG MAI
Bunk Off
It’s hard to miss this cute little hostel tucked amid a row of shop-houses in Chiang Mai. The Bunk Boutique Hostel’s exterior gives off a cozy vibe, with wooden door frames and a sign scrawled on wood planks. Step inside and you’ll see a small front desk that looks similar to a coffee-shop counter, dressed up by a few colorful house plants and a rustic-style dining set. Here, the sleeping arrangements are mostly dormitory style with wooden bunk beds set against bare brick walls and small, minimal apartment-style furniture with a pop of color here and there — very New York (without the outside street noise). There are also private rooms with their own bathrooms, too. Prices range from B250 per bed and B350-1,200 per room. For more information, visit ow.ly/NAbtk.

Royal Regalia Jim Thompson’s latest fabric collection is titled ‘Forbidden Colours.’ Inspired by the color palette worn by aristocrats in the ancient Siamese court, it incorporates everything from medieval European blues to the elaborate silk fabrics of China’s imperial palaces. Brand creative director, Noppadol “Ou“ Baholyodhin’s work is not all tradition and royal courts, though. The Balthazar print, for example, is inspired by Chinese fretwork, but ends up looking like a bold David Hicks print. The Samsung Galaxy S6 is just out and there’s already a newer kid on the block. The LG G4 has a 5.5-inch display and a curved back meant to better fit your palm. It comes with covers in leather along with metallic grey and “ceramic” white options—none are for the minimalists. The touch screen is crazy bright and highdef, while the 16-million pixel, f/1.8 back camera could be the best low-light camera out there. Throw in a full manual mode and the ability to shoot RAW and you’ve got an amateur photographers dream. Oh and it’s cheaper than Apple and Samsung: from B20,990 for the metal-looking options (it’s not metal) and B21,990 for the genuine leather ones.
Seems like the guy behind local-shoes brand Mango Mojito never puts down his dancing shoes. After debuting his first ballet shoes for ladies earlier this year, he sidestepped into a men’s line before spinning off a collection of street-level sneakers. It’s his most casual performance yet, but it remains in keeping with the brand’s preppy look. In fact, the quarter on the Ash Grey (B3,850) is cut like a dress shoe, making it an intriguing mix of sporty (the heel counter is orange) and formal. For something even more officeready, the Metro Black comes in two variations: black and gray or black with a red heel tab (B3,850). Available at Siam Square Soi 2, Rama 1 Rd., 02-658-1435. www.fb.com/mangomjt

Prices start from B700 for a shampoo and cut while a complete styling and hair color using Aveda’s Invati technique goes for B5,000-5,500 and promises to add oodles of volume to thinning hair. New from Nippon
Kom-Ba-Wa
From classy kaiseki and premium beef to Hakata drinking food, the stream of new Japanese restaurants shows no sign of abating. By Natcha Sanguankiattichai and Dharath Hoonchamlong Kitaohji
Kom-Ba-Wa
The new project from restaurateur Fred Meyer (Issaya Siamese Club, Namsaah Bottling Trust and Pizza Massilia) resides in a cutely-decorated shop-house in the up-and-coming Suan Phlu neighborhood. Kom-Ba-Wa serves creative Japanese dishes with premium ingredients. On top of sushi like fresh scallop (B790), try chef Goro Takatsu’s creations like the aged Tajima wagyu beef steak with ponzu jelly (B1,750) and the squid ink ramen with Maine lobster and uni sauce (B1,500). The desserts, created by Issaya’s dessert chef, are equally fancy, such as the must-try mochi with red bean mousse and strawberry jelly (B250). 9/19 Soi Suan Phlu, Sathorn Rd., 02-679-3775. Open daily 6-10:30pm
Mikaku
The renowned teppanyaki restaurant from Gion district in Kyoto has just opened its first branch outside Japan, here in Bangkok. Operated by the Mita family for more than 80 years, Mikaku is known for its expert selection and preparation of premium beef teppanyaki. At this branch, Kenji, the family’s third-generation owner and chef, mans the grill himself. Selecting only A4-5 graded wagyu from Kobe, he guarantees that the handsliced tenderloin and sirloin are at the perfect thickness, cooked using the family’s signature technique. Don’t miss the meltin-your-mouth oilyaki teppanyaki (thinly sliced tenderloin, B2,800/100g). Make it a set at B4,300 with appetizer, soup, salad, garlic fried rice and dessert. 2/F, 103/1 Sukhumvit Soi 55 (Thonglor), between Sois 3-5, 02-7129080. Open daily 5-11pm; Sat-Sun noon-2pm
Yoka Yoka
Yoka Yoka is a modern Japanese restaurant specializing in the Hakata food of Fukuoka. Decorated in a loft-like mix of bricks, wooden furniture and colorful paintings, the restaurant’s first floor serves dishes like Hakata motsu nabe (entrails hot pot with three choices of miso shio and shoyu soup, B380), tori no sumibi (charcoal-grilled chicken with yuzu sauce, B185) and honeymoon oyster (oyster with ebiko, uni, ikura, quail eggs and ponzu, B280). The second-floor sake bar does cocktails and other spirits, and also offers private rooms, while the third floor is another restaurant, The Circle, which is currently in its soft opening and shares the same menu as Yoka Yoka. Here, you can also enjoy live bands every Thursday from 9pm-12am. Ruamrudee Village, 20/27-29 Soi Ruam Rudi, 02-650-8047. Open daily 11am-11pm
Sekai no Yamachan
Sekai no Yamachan
You can never have too many izakaya. The latest in town is Sekai no Yamachan (The Manor, Sukhumvit Soi 39, 02-6625541.www.goo.gl/s8wEU8), whose specialty is Nagoya deepfried chicken wings, also known as maboroshino tebasaki (B120). Other highlight dishes include miso uzura tamago (quail eggs with miso sauce, B90), yamachan salad (B210), doteni (braised pork entrails in miso sauce, B140) and aisura omiochan (Japanese sweet potato with milk ice cream, B190). There’s also plenty of beer and sake, starting from B119 and B359, respectively. The Manor, Sukhumvit Soi 39, 02-662-5541
Kitaohji
Established in Ginza more than 70 years ago, Kitaohji has opened its first branch outside of Japan, in Thonglor. The specialty is kaiseki, meticulously-presented multi-course meals made with seasonal ingredients. Unlike any of the branches in Japan, this one accepts walk-in customers and offers a few a la carte options. Outside is a beautifully-landscaped Zen garden with lots of bamboo plants. Inside the decor is predictably dominated by wood. Kaiseki follows a set order, according to dish type. First, a cold appetizer such as steamed squid and red beans is served to the table even before the diners arrive, followed by sashimi. The main course is then served, followed by a vinegar dish, deep-fried dish, rice or noodles, and dessert. The dinner is priced by the ingredients in your main dish: wagyu kakuni (braised beef, B2,000), charcoal-grilled wagyu (B2,500), wagyu steak (B3,500), steamed hair crab (B3,500) and grilled taraba king crab (B4,500). The a la carte menu covers sushi and sashimi, as well as select kaiseki dishes. Of course, there’s a wide variety of drinks, namely sake and umeshu (plum liquor).

OPEN DOOR
Indique A casual gastrobar that cooks up modern and molecular Indian food. The buzz: There’s a new face in town doing modernist Indian food and drinks. Raised in a family of restaurateurs (Maharaja in Hua Hin, India Hut in Koh Chang, Maya Vegetarian Cuisine on Sukhumvit Soi 22), owner Gurveer Sachdev has turned his back on traditional Indian restaurants and started doing whimsically presented molecular dishes for a younger crowd. The decor: Forget the moody theatrics of Maya or the neutral symmetry of Charcoal; this new player on the swanky Indian scene goes for an unabashed assault of purple and gold velvet, pastel chandeliers and glass tabletops. It’s located on the second floor of a new restaurant complex, and has the advantage of an outdoor dining terrace where you’ll find wooden bench seating upholstered in a Christmas-elf-meets-court-jester blend of red and green check.
22
The food and drinks: Indian chef Sidakpreed Singh (formerly of Hyatt Regency Delhi) goes big on modern gastronomic techniques and gimmick-laden presentation. For now, most of the menu focuses on small dishes. Spherification is acounted for in the Gaggan-evoking lassi spheres (B129), alongside equally creative inventions like dahi ke (fried yogurt curd) kabab with pomegranate caviar (B149), corn chaat in masala papadum (seasoned corn in papadum cones, B89) and chicken tikka “cornetto” (chopped chicken tikka in a fried papadum cone, served cold on dry ice, B179). The team is also working on heavier fusion dishes like butter chicken ravioli and spaghetti lamb kima. For drinks, Varun Walia (formerly of Farzi Cafe in Gurgaon, India) adds twists to classic cocktails, like in the Santa Banta (screwdriver with kaffir lime, kaffir lime leaf and California orange juice, B239) and
Chuski margarita (B249), which plays with Indians' favorite iceon-a-stick dessert. The bar also supplies Indian Kingfisher beer (B179/bottle). Why you should care: Though molecular Indian, this is miles from Gaggan’s multi-course culinary journey. And most of the dishes are priced in bar food territory—in fact, you’ll be paying more for the cocktails. Natcha Sanguankiattichai 2/F, Park 22, Sukhumvit Soi 22, 02-663-5995. Open daily 11am-1am

You'll also find other Farmers' Market favorites like bread and other pastry from Maison Jean Philippe, cheese from Heaven on Cheese, ginger ale from Raitong Organic, juices from Twist and pies from London Pies.
Long Game This new establishment in Siam Square specializes in Korean-style stews. Founded in Gangnam just three years ago,
Masizzim (430/23 Siam Square Soi 9 [opposite Chula Book Center], Rama 1 Rd., 02-658-1988. BTS Siam) now has 20 branches in South Korea. The recommended dishes are beef short rib stew (B320), pork short rib stew (B250) and chicken stew (B210). Weekday lunch sets start at B160 for chicken stew.

Lenzi Tuscan Kitchen HHHH Italian. Soi Ruamrudee 2, 02-001-0116. Open daily 11:45am-2pm, 6-10:45pm. Corkage B750. BBBB F
You might have met Francesco Lenzi during his stints at Opus or Medici (Hotel Muse). He’s friendly, he’s talented, and it was only a matter of time before he got his own Italian restaurant. Well, this is it. Ochre walls, dark wood columns, oxblood tufted leather seats—the place is as conventional as can be. The food, too, is aiming for tradition, regionalism and authenticity. But Lenzi Tuscan Kitchen is so satisfying we’d never call it boring. Meals often start with the tagliere del Lenzi, a board covered in cold cuts (B480/850/1,580), many of which are sourced from Francesco Lenzi’s uncle’s small-scale ham curing business, Antica Norcineria, founded 1945. The lardo , black pudding and mortadella with truffle are melt-in-your mouth bursts of umami—addictive. Next up, pasta comes in all kinds of mouth-watering recipes, from the rich, creamy gnocchi with
Granola HHHH International. 3/F, Central Embassy, 1031 Phloen Chit Rd., 02-160-5626. Open daily 11am-10pm. BTS Phloen Chit. No corkage. BB-BBB F
This cafe in Central Embassy belongs to the chain of Scandinavian-focused fashion stores Uncensored (more specifically, its flagship boutique for Danish menswear label Soulland). Granola is also Danish in origin, twinned with a small, namesake coffee shop on one of Copenhagen’s trendier streets. The Bangkok branch—and the only other Granola outside of Copenhagen—has made a bold effort at dressing up a cookie-cutter mall unit to look like anything but, and though the mixture of teals, wood panels and bentwood chairs is different from most new places in town, it’s a long way from the quaint standalone cafe it imitates. The menu is also a shift from the ubiquitous egg dishes and duck confit, at other Bangkok cafes favoring instead fresh,

gorgonzola, pear, walnuts and aged balsamic (B450), to the meaty wild boar ragu (B420), to the decadent homemade ravioli stuffed with French foie gras and ricotta cheese in truffle emulsion (B580). Lenzi’s pride and joy, though, is his woodfired oven. And that’s where to look for some of his signature dishes. The Norwegian cod fish cooked with capers, anchovy and tomato sauce with grilled polenta (B1,200) is an expensive but incredibly flavorful combo. For something heartier (and more affordable), you can’t go wrong with the “drunken” sausage stew with borlotti beans and tomato sauce (B650). Dessert, too, can come from il forno: we highly recommend the baked pear with chocolate ice cream and s abayon s auce (B280). We real ly appreciate the wine menu, too, which singles out a few of its wines as being “good,” “very good,” or “extraordinary”— refreshingly candid ratings that don’t necessarily follow the wines’ prices. (There’s a “very good” Conti Zecca Donna Marzia Primitivo del Salento 2012 at a mere B1,600.) That’s not to say Lenzi comes out cheap, but if you order sensibly, it’s still superb fine dining for your buck . Add a highly a capable sommelier and maître d’, a beautiful open kitchen, and a chef that works the tables (“This is my cousin’s ham” and “This is my father’s limoncello” always add a bit of flavor to the proceedings) and you’ve got a package that’s difficult to resist.
simple sounding food that makes strong use of coldwater seafood like cod, bay scallops and even caviar. The bay scallop salad (B280) has a delicious blend of sturdy European ingredients like beet, apple, carrot and walnut, and even in this part of the world manages to taste fresh. It’s all plentifully served, as are the wellpaired, sweet little scallops. Similarly, the granola-crusted cod in pea soup is unpretentious and not lacking in flavor. Its quaker-like simplicity belies a velvety texture and perfect seasoning, though the amply portioned fish verges on rubbery. But when you break from these showpiece menu staples, things start to go downhill. Our “mussels in coconut royale” (pan-seared mussels on pepper-custard with coconut and sweetened chili; on special at B290) flies in the face of the clean flavors and unfussy presentation of everything else we’ve tried here. Served in a coconut shell on a bed of rock salt, the presentation is as unappetizing as the mussels, which taste like they’ve been doused in fish sauce. A dense slice of dry and tasteless carrot cake (B145) is no great end to a meal, either. The fruit juices (all B120), which we’re told are something of a specialty in Denmark , are also completely forgettable. Stick to the dishes they’re proud enough to photograph and hang on the walls, and Granola will serve you a pretty good meal. But you’ll more likely pick up your phone for Instagram than to tell a friend about the food.

Take them to the next level of candor and synergy.

CANCER (Jun 21-Jul 22): You will soon be escaping from your trials and tribulations. In honor of this cathartic transition, I suggest you consider doing a ritual. It will be a celebration of your ability to outlast the forces of chaos and absurdity. To add an extra twist, try incorporating this quote adapted from Nietzsche: “I throw roses into the abyss and say: ‘Here is my thanks to the monster who did not devour me.’”
The Friese-Greene Club The schedule follows a daily theme. This June the FGC presents Pushing the Boundaries theme for Wednesday, Costa-Gavras Thursday, Peter Sellers Friday, Cooking Up Something Special! for Sat and Spielberg films for Sun. Films start from 8pm, visit www.fgc.in.th for the full line up and to reserve your seat. 259/6 Sukhumvit Soi 22, 087-000-0795. Open Wed-Sun 6pm-late.
VIRGO (Aug 23-Sep 22): After Walt Whitman published Leaves of Grass in 1855, he wrote anonymous reviews of his own book and submitted them to several publications, all of which printed them. “An American bard at last!” began the glowing review that appeared in one newspaper. According to my reading of the astrological omens, Virgo, you now have license to engage in similar behavior. You will incur no karma, nor will you tempt fate, if you tout your own assets in the coming weeks. LIBRA (Sep 23-Oct 22): If you carry out the assignments I recommend, you will boost your charisma and creativity. Here’s the first one: Try something impossible every day. To merely make the effort will shatter illusions that are holding you back. Here’s your second assignment: Break every meaningless rule and explore the art of benevolent mischief. Here’s the third: Clear out space in your fine mind by shedding one dogmatic belief, two unprovable theories, and three judgmental opinions. SCORPIO (Oct 23-Nov 21): In the 16th-century, roguish French author Francois Rabelais comic novel The Life of Gargantua and of Pantagruel, a learned teacher named Epistemon takes a visit to the afterlife and back. While on the other side, he finds famous dead heroes employed in humble tasks. Alexander the Great is making a meager living from mending old socks. Cleopatra is hawking onions in the streets. In accordance with your current astrological aspects, Scorpio, I invite you to meditate on the reversals you would like to see in your own life. SAGITTARIUS (Nov 22-Dec 21): There’s no better time to ask the big question. People are as receptive as they will ever be. Which door has been forever locked? Which poker face hasn’t blinked in many moons? Which heart of darkness hasn’t shown a crack of light for as long as you can remember? These are frontiers worth revisiting now.
CAPRICORN (Dec 22-Jan 19): The writer Donald Barthelme once came to see the artist Elaine de Kooning in her New York studio. Midway through the visit, loud crashes and bangs disturbed the ceiling above them. De Kooning wasn’t alarmed. “Oh, that’s Herbert thinking,” she said, referring to the metal sculptor Herbert Ferber, who worked in a studio directly above hers. This is the kind of thinking I’d love to see you unleash in the coming days, Capricorn. Now is the time for rambunctious speculations and carefree musings. Be willing to make some noise. AQUARIUS (Jan 20-Feb 18): Sidney Lumet was an American director who worked on 14 films that were nominated for Academy Awards, like Network and Dog Day Afternoon. Actors loved to work with him, even though he was a stickler for thorough rehearsals. I advocate a similar strategy for you, Aquarius. Make yourself ready, through practice and discipline, to capitalize fully on serendipitous opportunities when they arrive. PISCES (Feb 19-Mar 20): “It is not only the most difficult thing to know oneself, but the most inconvenient one, too,” said American writer Josh Billings. I agree with him. The good news is that these days it’s far less difficult and inconvenient than usual for you to deepen your self-understanding. So take advantage! To get started, why don’t you interview yourself? Go here to see some questions you could ask: http://bit.ly/interviewyourself. ARIES (Mar 21-Apr 19): “To look at a thing hard and straight and seriously—to fix it.” Aries author Henry James said he wanted to do that on a regular basis. He didn’t want to be “arbitrary” or “mechanical” in his efforts. I invite you to make this perspective one of your specialties in the coming weeks, Aries. Pick out a tweaked situation you’d like to mend or a half-spoiled arrangement you want to heal. Use all your tough and tender insight to determine what needs to be transformed, and transform it. TAURUS (Apr 20-May 20): Drug expert Jonathan P. Caulkins estimates that Americans are stoned on marijuana for more than 288 million hours every week. Among Europeans, Italians are number one and the French are fourth. But I encourage you to avoid contributing to these figures for the next twelve to fourteen days. In my astrological opinion, it’s time to be as sober and sensible and serious as you ever get in order make unprecedented progress on practical matters through the power of critical thinking.
Japan Foundation Movies are subtitled in Thai and screened at 6:30pm. Theme for May is Tora-san. June 19. Hearts and Flower for Tora (1982): Tora-san finally falls in love with a maid working for a ceramic artist. 10/F, Sermmit Tower, 159 Soi Asoke, 02260-8560. www.jfbkk.or.th

Charumporn Jotikasathira Charumporn Jotikasathira, 57, was named CEO of Thai Airways in 2014. The business suffered a net loss of 15 billion baht last year, but the former financial officer of Siam Commercial Bank (SCB) and president of SET (Stock Exchange of Thailand) believes he can turn the national carrier around. Here he evokes his geeky education, his nuanced views on risk and proffers tips to budding entrepreneurs.
I grew up in Bangkok, in the ‘60s. We’d drive two hours to get to Sri racha, Chonburi. To me, it was a completely different world there. There were three telephone lines, no electricity and no running water. We had to literally stuff our entire kitchen in the car with us, including our maids.
There was a design competition at a tech company in the United States when I was working as a design engineer. You had to draw a modem’s circuit board. The one who makes the fewest mistakes wins— you’re always going to make mistakes. But I only made one mistake and it wasn’t on the difficult part.
I was unaware, at the time, that I was being brought up in a wealthy family. And there were times when I had to fend for myself. Just like other kids, I took a part-time job cleaning pans at a restaurant, during high school break in the USA, I’d come back to my dormitory and my roommate would greet me with, “Dude! You smell like french-fries.”
I loved scuba-diving. I nearly drowned in the Komodo archipelago, in Indonesia. The site was breathtaking. I was following a friend who’s a diving instructor, assuming he would know his way around. Instead he led us right into a dangerous underwater current that nearly got us killed.
My next job was lab technician at the faculty, assisting the seniors. I learned five times more there than relying on textbooks. And my roommate finally dropped the frenchfries business.
Taking the role of president of Thai Airways International or any other world-class company is pretty risky, too. It’s uncharted territory. There are a handful of predecessors at Thai who I can learn from. But none of them have even been in the kind of situation I am facing these days.
There are obvious problems at Thai Airways. Almost every aspect of it needs to be fixed. But 55 years is a long journey. What remains is our outstanding service. We are the ones who set the standard.
at Siam Commercial Bank or at the SET. Thai is no exception. I make mistakes every day. That’s how I learn. For me, the things learned in the past twelve months are w h a t m a tter. They’re much more reliable than what you learned 20-40 years ago. Don’t rea d a b u s i ness book written 20 years ago to learn how to run a business.
It’s a never ending game —chasing after ambition.
Airlines these days promote things that can be bought, like Wi-Fi, instead of providing genuine service. It’s very different from the past when the reputation of an airline was made solely by its crew. We’re not going to follow them, though. Customer behaviors and needs have changed; but we have to evolve in the right direction. When running a business it depends on how fast you want it to grow. I drive the companies I’m the head of in fifth gear. I have to go fast because I set my goals high. I have always been this way, whether
NEEDS...
We used to remember people’s phone numbers. Now if you’re scrolling through your phone and can’t find your contact, you’re screwed. Adaptability is crucial. Today’s work day is different from the past.
You still need a strong foundation of knowledge and experience. If you lose sight of that, you’ll take unnecessary risks and end up trapped. Be patient. Young entrepreneurs, they seem to follow Nike’s “Just Do It” philosophy. They just want to take risks. It’s understandable because they’re young and there will still be time and room for them to experiment. But keep in mind that you have to settle your business down at one point. I am proud to say I have no unfulfilled ambition. If forced to think about it I would come up with many things, so instead I tend to tune out these thoughts. I have come a long way and nothing is more satisfying than the thought that I am content. I have enough. It’s a never ending game— chasing after ambition. As a part of this job, I travel a lot. Sometimes I have to be overseas for a long time. I usually order curry, an in-flight meal that never fails to remind me that I am home. Interview by Sam Nathapong
