But not before Tom Jones returns to excite Thai aunties everywhere (see page 30).

Every year on Apr 1-12, when Thailand’s 21-year-old men must go through military conscription, an average of 900 transgender women are also caught up in the draft. To help them through the process, the Thai Transgender Alliance has produced a guide detailing what the military requires of them to avoid conscription. Here, BK chats to ThaiTGA executive director Jetsada Taesombat, 32, about the project. When did you become involved with this issue? A decade ago in 2006, a transgender woman named Samart Meecharoen decided to sue the Ministry of Defense to force them to change the wording in the conscription certificate called Sor Dor 43, which used the phrase “permanent mental disorder” to describe how transgender people could avoid conscription. Crucially, this goes on to affect a person’s life following the draft because companies always ask to see their Sor Dor 43 before hiring them. When an HR department sees that description then the chances are they will not hire you. Samart finally won her case in 2011, when the wording was changed to “gender dysphoria”— which sounds much more positive. But transgenders still face lots of difficulties to avoid conscription. What do they need to do? They need to start preparing at the age of 17, when they get their first military notice. By the time they are 20, they need to have gone to the hospital, which should be a military hospital, in Nov-Feb, to get tested by a doctor who can endorse the fact that they are transgender and cannot serve as a soldier. That way, they will have the correct paperwork in time for the annual conscription

season from Apr 1-12. Most transgender women are afraid of what they might face. The worst case we encountered was someone contemplating suicide to avoid conscription. Has the situation improved? It was terrible about a decade ago. Most conscriptions happened in large public spaces like schools, temples or government offices. Transgender women were forced to strip down in front of guys, exposing their breats. Many of them were mocked and molested, made to do pageant contests. But the military has improved a lot since then, working together with gender identity rights groups, including us. There are no cases of indecency reported anymore. We really appreciate that effort. Have there been any cases of transgender women who were conscripted? Yes. If you’re transgender and middle class, then you have the money to transform yourself to look like a woman. But not everyone has the ability to do that. There are many poor transgender conscripts who need to work hard to take care of their parents in rural areas and who still look masculine. We had one case in which a male-looking transgender woman needed our help to

resend her papers, prove she wasn’t a man and revoke the conscription. Where can people find your guide? Apart from our office, we distribute it to government offices and military bases where they work on conscription procedures. Since we only have a limited print budget, we try to promote it on social media and our website as much as possible. We now get calls from parents, boyfriends of transgender people and even regular guys who just want advice about the conscription process. What else does ThaiTGA work on? It might seem like the transgender community now has more freedom, but in reality there is still a lot of violence against them, mostly from their families, schools and the workplace. Society still views us as an abnormality, even in Thai health education textbooks. It creates a discriminatory mindset, resigning us to second-class citizens, sexual objects or entertainers. PHANG NGA Phang Nga has long been overshadowed by neighboring Phuket, despite the undoubted majesty of Khaolak Beach and Andaman Sea hot spots the Similan and Surin islands. This year the province is emerging as a hot destination thanks in part to its “See the Unseen” campaign aiming to promote the abundant natural attractions waiting to be discovered.

Stay here: There are camping sites available at the viewpoints (contact the heads of the village, Noppadol on 089-591-0569 and Bang Nhee on 062208-1390). It’s B400 for a tent and B100 for a camping spot. But if you’re looking for a proper deep sleep, De Chom Villa (081-926-3286, www. fb.com/dechomvilla) is a good choice nearby. Head here: There’s plenty here for adventure seekers. Dubbed “Little Amazon,” Klong Sang Nae (086-953-1789, 076-424-176) looks like something out of an Indiana Jones film, snaking its way through thick banyan tree forests in Takua Pa district, an old mining boom area. It costs B500 to rent a canoe or paddle boat and B700 for a motorboat. Other nearby must-visits are Samed Nang Chee and Toh Li viewpoints, which offer unrivaled views over Phang Nga Bay from vantage points two kilometers apart. From Hin Rom Pier you can take a cruise around Phang Nga Bay. As well as homestays and legit fisherman family-run seafood restaurants, other attractions around the bay include Tham Phung Chang (or Elephant Belly Cave), the savannah-like Koh Phra Thong and Koh Yao Noi. One particular highlight is the 2km sand spit that connects Koh Yao Noi and Koh Plong at low tide. Locals call it “San Lang Mangkorn,” which means “dragon spine.” Check tide times if you want to catch it.

Head here: A diving day trip sets off from Mu Koh Chumphon National Park. The diving spots are separated into two zones: the north, which comprises Koh Ngam Noi, Koh Ngam Yai, Koh Talu, Koh Pitak and Koh Kalok, and the more accessible south, where you'll find Koh Langka Jew and Koh Lawa. As the coral reef is in pretty good condition, you can even snorkel around some of the prime dive sites. Koh Talu is probably the top pick, an underwater world of colorful fish species and coral, while Koh Langka Jew is home to a heart-shaped coral reef. Switching to rivers, Patoh district offers whitewater rafting tours (077-539-040, 089-592-8376) through the end of April.

When people think of diving, they usually head straight for the Andaman Sea, but this gateway-to-the-South province is a hidden gem for deep-sea activities in the Gulf of Thailand. It’s home to Mu Koh Chumphon National Park, an archipelago that spans islands such as Koh Tao, Koh Samui and Koh Phangan. But there are many more islands that haven’t received the same attention due to being protected bird reserves. The limited access to the islands has actually helped preserve the surrounding marine life, too. And now some of these spots are just being opened for diving tours.

Head here: Koh Phayam still tops the list. It’s been on the tourist trail for years, but retains its no-frills charm. Apart from the pristine beaches, the island is home to the amazing Phukhao Ya Song Si (twotone grass hill), which resembles a savannah owing to its lack of trees. The name refers to the color of the grassland, which is green in rainy season (May-Oct) and gold in dry season (Nov-Apr). For some chill beach time, head to Ao Khao Kwai, home to the island’s iconic Hippy Bar, a heavy-drinking establishment that looks just like a beached pirate ship. Five amazing travel plans to keep you cool this summer. 1. Hit the Beaches Our pick: Pattaya For a last-minute beach escape, taking a daytrip to Koh Larn is a popular choice. It’s 15 minutes away from Pattaya via speedboat, and the clear seawaters make it worth the ride. But that’s not the only thing that makes Pattaya a fun summer escape. The seaside town of Chonburi has changed a lot in recent years, turning itself into a spot full of trendy new openings that come with amazing views, like Veranda Pattaya and the new branch of The Chocolate Factory. Need to cool down? You’ve got fine imported Sri Lankan tea in the Tea Factory at A’ La Campagne, as well as Skoop for gelato. The best part is that it’s only a 2-hour drive away from Bangkok.

The real water fights don’t really start until the final day, known as Wan Lai (Flowing Day). Try hitting Lan Pho Na Kluer Park and Wat Chai Mong Kol, where you’ll find merit-making activities, the construction of sand chedi, the Kong Khao procession in appreciation of the Goddess of Rice, as well as the Nang Songkran beauty pageant. 2. Take in the Arts Our pick: Chiang Mai Chiang Mai

The North of Thailand is as notoriously hot as Bangkok at this time of year, but we’re such big fans of the Lanna capital that we make sure to visit every year. On top of its reputation as coffee capital and slow-life centrale, Chiang Mai has more to offer beyond the hipster streets of Nimmanhaemin. There’s also a growing contemporary art community headed by the soonto-arrive new art space Mai Iam. On top of artwork organically installed across the city, some permanent art spaces include the experimental-leaning Gallery Seescape and Hern Gallery. Grab the recently published Chiang Mai Art Map to find out about all the very best galleries in town, including the likes of Vichit Studio, Lyla Gallery, C.A.P. Studio, Documentary Arts Asia, DC Collection and Thapae East Art Space.

Fun fact: Chiang Mai has long hosted the Pra We Nee Pii Mai Muang event every Apr 12-14. As well as cultural Lanna events at sacred temples such as Wat Phra Singh and Phra That Doi Suthep, the festival also includes huge water fights around the central moat. Expect a cultural parade on the first day of the festivities, with highlights like the float carrying the sacred Phra Buddha Sihing and the Nang Songkran Chiang Mai beauty pageant. 3. See the Unseen Our pick: Sangkhlaburi And no, it’s not just because GQ Germany decided to do a Louis Vuitton fashion shoot there. In fact, summer is the best time to visit this super quaint land of three cultures (Thai, Mon and Burmese). Its main draw is the former Wang Wiwekaram Temple, which has been submerged by the waters of Khao Laem Dam for the most part of the year since 1984—hence the name: Wat Tai Nam Muang Badan (underwater temple). Mar-May is considered drought season, when the water level drops, and is the only time of the year visitors can actually take a boat trip and walk around ruins of the old temple. Also check out Wat Somdej, another rarely visited old temple. We recommend booking a floating guesthouse to make the most of your stay. Fun fact: The Mon community here also hosts a unique Songkran festival from Apr 13-17. The festival starts with a monk almsgiving on Uttamanusorn Bridge (also known as Mon Bridge), which is the second longest wooden bridge in the world and takes in beautiful views of the lake. 4. Explore Thailand’s Old Town Heritage Our pick: Phuket Here you’ll find the best of both worlds. Phuket Old Town’s unique Thai-Chinese heritage feels worlds away from the private beaches at painfully beautiful luxurious resorts. The island’s baba nonya culture shines brighter than ever

now thanks to the new breed of “baba-chic” restaurants and cafes in old Sino-Portuguese buildings. Make sure you check out the likes of Kopitiam by Wilai, Tu Kab Khao, Raya and China Inn. Last month also welcomed the PeranakanNitat Museum, a 1907 building dedicated to the Strait of Malacca’s unique cultural heritage. Fun fact: Songkran festivities on Phuket are usually held at several locations including Sarasin Bridge (which connects Phuket to the mainland) and the Old Town on Thalang Road. Parties continue around Patong beach too. Live the slow-life in Thailand’s Ancient Cities Our pick: Sukhothai The first thing that comes to mind is the striking image of the ruins in the Sukhothai Historical Park, another UNESCO World Heritage Site, and the tasty Sukhothai-style noodles with the signature kai yang matoom (medium-boiled eggs). But this often overlooked destination (why go when Ayutthaya is much closer?) is also home to some cool retro cafes and delightful homestays at Baan Na Ton Jhun, a small village in Sri Satchanalai. Head here: Protected bird reserve Koh Phetra is welcoming tourists for the very first time, though activities are limited to swimming and snorkeling. It’s a similar case with Koh Lao Liang Phi and Koh Lao Liang Nong, which come under the management of Mu Ko Phetra National Park National Parks & Marine Reserves (077-558-144-5, goo.gl/V6xxj6), though here you can also camp and go rock climbing. You’ll probably have to base yourself at Koh Sukorn, a larger island where locals are able to sustain themselves with large watermelon and rice plantations, and water buffaloes are known to walk the beaches. They even have their own sand spit called "Jade Dragon Spine." Nearby Koh Hin Son is renowned for its unique landform of two rocks stacked on top of each other—a popular spot to catch sunset. Koh Lipe, Koh Ravee and Koh Adang are equally gorgeous.

Situated between Koh Chang and Koh Kood, this small island’s limited number of rooms helps put a cap on visitor numbers. Recently local businesses have banded together to market the island as a low-carbon destination. That means lots of low-key outdoor activities like kayaking and diving, plus bicycle rental (no motorbikes). Organic food is produced on the island to cut down on transportation and many places use solar power. Head here: Diving still dominates. Koh Rang, a 10-minute boat ride away, is praised as the most beautiful spot for shallow coral reef diving in Eastern Thailand. At Koh Rad, the underwater scene is marked out by nine giant elephant statues put in place by the Department of Fisheries. You’ll have to go scuba diving to see it, though. Other top diving islands include Koh Kham, Koh Yak Yai, Koh Yak Lek and Koh Mapring. Another neighbor, Koh Kradad, is dubbed the "Sea Safari" for the herd of deer that calls it home. The island is only 1.2 kilometers at its widest and home to just one resort, Kradad Resort (www.kohkradadresorts.com), who you will need to book with to take a tour. Back on Koh Mak, the 20km ring road connecting the whole island makes for one serious cycling course. Be sure to stop at the 70-year-old Koh Mak Temple and Luang Prompakdi Home, whose construction dates back to the King Rama VI era in 1932. Stay here: There are around 30 resorts on the island and all of them have diving packages on offer. Head Upstairs Some consider the guys behind Sathorn Soi 12’s UNCLE as the makers of the very best cocktails in town. Well, they’re now in Thonglor, too, and the prices are downright cheap compared to the rest of the scene. Just as with the original location, the new branch sits above Lady Brett and Rocket (all three belong to the Sapparot Group), only this time the space is much bigger, decked out with a huge dark marble bar, big leather couches and bold blue walls. A sizable outdoor terrace offers some alfresco seating, while private egg chairs sit round the corner for a more intimate choice. Or pull up a stool at the bar to see the guys in action. Sapparot group head mixologist Philip Stefanescu created the drinks list, and we’re prepared to call it the cheapest list of classics-with-twists in town. The spirit selection sticks pretty much to the same bottles you find over at Sathorn, with the focus more on home infusions and homemade ingredients than pricey spirits. Try The Big Red (B195), which mixes Iron Balls gin with fresh watermelon, Campari, lemon and homemade cinnamon syrup. The Manhattan Latino (B195) adds a twist to the classic Manhattan by basing it on rum, to which is added Mancino Rosso, cocoa and bitters—very easy going. While maintaining a casual eatery vibe, Spanish head chef Victor Burgos doesn’t compromise on his European offerings. Omakase 101 Bangkok’s sushi connoisseurs are now leaving it up to the chefs to decide what they eat. Here’s how the whole thing works. By Natcha Sanguankiattichai

iterally meaning “I’ll leave it up to you” in Japanese, omakase sees diners entrust their dinner to the chef.

The Scene The last 24 months have seen an explosion in the number of restaurants offering omakase, from imported big names like Sushi Masato, helmed by Japan-native Masato Shimizu, who became the youngest chef in NYC ever to win a Michelin star at just 29, to a host of local chefs. Thais making their name in omakase include Wacharun Iamarramsak, chef-owner of In the Mood for Love; his previous team member Charoensri Somsook, chef of Mizu by Sankyodai; Banphot Boonklom, chef of Umi (previously of Sushi Cyu); and Chaichat “Randy” Noprapa, chef of Fillets, who had a stint in the kitchen of Masaharu Morimoto, one of America’s most-praised Japanese chefs.

The Show Omakase is basically a chef’s time to shine. The man behind the counter acts as both director and performer in a culinary performance that can last two hours. It takes Japanese chefs years of learning all about hot and cold kitchens before they actually get their hands on something as delicate as sushi. “Sushi is the last step in a Japanese chef’s career,” says Charoensri, of Mizu by Sakyodai. The

experience is incredibly intimate. As Wacharun, of In the Mood for Love, says, “There’s no other form of dining in the world that brings diners so close to the chef. Throughout each course, they get to know more and more about the chef.”

The Courses An omakase set usually contains a few appetizers, a range of sushi as the main and then tamago, soup and dessert. “I like to serve seasonal fresh sashimi as appetizers,” says Ginza Sushi Ichi’s executive chef Masakazu Ishibashi, who trains all the chefs in the Sushi Ichi empire. At Fillets, chef Randy not only lets the fresh fish shine in the form of sashimi, but also plays around with the likes of fresh shiro ebi (glass shrimp) served with osetra caviar and dried fluke roe. On the other hand, Tama chef Seiji Sudo (previously head chef at Bangkok’s branch of Ginza Sushi Ichi) doesn’t stick to nigiri for the main course, offering sashimi and other funky items like mixed rice with grilled hairy crab meat and uni.

The Sushi Edomae, the most popular style of sushi, requires special handling. “At the time this style of sushi originated, more than 300 years ago, there were no refrigerators. So in order to keep fish and rice from spoiling, sushi stall chefs had to preserve them by curing, marinating, seasoning or cook-

ing,” says Shimizu, chef-owner of Sushi Masato. Techniques include curing and marinating fish in salt, vinegar, soy sauce, sake and seaweed. Sushi rice is also an important element. Most places use red vinegar to season their rice, while Ginza Sushi Ichi and Umi use both red and white vinegar to season two different kinds of rice.

The Sequence “It’s the chef’s task to create harmony throughout the whole meal,” says Sato Tomohiko, chef of Sushi Hinata. While there’s a rule of thumb that milder-tasting fish like white fish should be served earlier and stronger red-flesh fish later, some chefs decide to chart their own taste journey. “I want my diners to feel excited throughout the course,” says chef Randy of breaking with the rules. Sakuragawa Sushi’s chef-owner Takuya Komada too likes to switch between oily and less oily fish. “If every heavy piece is served toward the end of the course, you can easily feel like you have eaten too much. As a customer, I wouldn’t like it.” Some chefs also like to break the nigiri journey into two or three parts, interspersed with sashimi or cooked items.

kok we can see the diversity on show, from the spongy and airy tamago at Fillets to the smooth and custardy one at Mizu, with various levels of sweetness and saltiness at play. Wacharun says: “My tamago is dense and almost unsweet. My set also doesn’t include desserts as I’m personally not a dessert person. I only cook what I find tasty.” Elsewhere, the most popular desserts include ice cream and puddings.

The Diners When we asked chefs how diners can get the most out of their omakase experience, the answer was unanimous: eat whatever you’re served as soon as possible. Using your hands to eat sushi is the preferred option. Pressing too hard with chopsticks can cause the sushi rice to crumble. Some chefs, like Komada of Sakuragawa Sushi, prepare for this: “If I spot diners who prefer using chopsticks, I’ll make their sushi a bit denser so that the rice ball stays in one piece.” Also note that every piece of sushi you get from a chef is already seasoned. There’s no need to put that extra wasabi or soy sauce on it. While a chef will attempt to cater to diners’ limitations, in return they expect open-mindedness to successfully showcase their best.

Suhring Fine modern German cuisine in a peaceful house setting. The buzz: The debut restaurant of twin German chefs Thomas and Mathias Suhring follows their departure from Mezzaluna at LeBua and has been a hot topic among Bangkok’s foodie community. Not least because they’ve opened in partnership with Gaggan Anand— owner of the top restaurant in Asia's 50 Best two years in a row. The decor: The beautiful house on Yen Akart Road doesn’t mess with the building’s original floorplan, meaning that the space really maintains that dinner-at-someone’s-home vibe. Cookbooks line the shelves, scatter cushions invite you to get comfy on the banquette, and rustically landscaped gardens cocoon you from the outside world through floor-to-ceiling windows. The large open-plan kitchen sits at the back of the house, leaving some space for an intimate chef’s table. Head up to the mezzanine to sip on their spirits selection and listen to music.

The food: The chefs aim to introduce diners to a different perspective of German food that’s not just about hearty chunks of pork knuckle, sausages and sauerkraut—though these classics do make the occasional, playful appearance. For now, you can only opt for seven- (B1,800) or nine-course (B2,500) set menus, in which the chefs guide you on a journey through a series of small plates. German cooking methods like pickling and smoking are combined with modern gastronomic flair in dishes like the refined pork knuckle sandwich topped with Riesling sauerkraut cream and sous-vide Simmental beef, finished on a charcoal grill and served with comforting kasespatzle (German-style pasta cooked with cheese). We particularly like their simple salad of dried, grilled, pickled and raw vegetables. Brotzeit (literally, bread time) culture also plays a large part here, with homemade sourdough and soft pretzel served along-

side Oldenburger butter, schmalz (lard), obatzda cheese dip, pickle, Black Forest ham and dry-aged beef. Their take on rice pudding sees jasmine rice topped with cinnamon espuma and cherry ice cream. The drinks: Ex-L’Atelier de Joel Robuchon sommelier Thanakorn Bottorff presides over a beautiful collection of old- and new-world wines, starting at an approachable B380 by the glass. His wine-pairing package will be added to the menu soon. Why you should care: Come here and you’ll see (and enjoy) how much there is to modern German cuisine. Inside Scoop One of this city’s long-standing homemade ice-cream shops has just been reborn. For over 20 years, Chula kids have known the name Chubby (69/11 Ekkamai Soi 21, 085-9136566) thanks to a stall on campus which used to sell its frozen goodness. Now, the brand has come back with this new shop in Ekkamai’s Bangchak gas station, offering more than 30 flavors including coconut, custard apple, taro, durian, Irish coffee and butterscotch at B45/scoop. If you want to eat at this late-night ThaiChinese food institution then you best arrive early. With every Toyota Camry that drives into Silom Plaza’s carpark, another of Niyom’s tables disappears. It’s one of those restaurants which makes you feel sorry for everywhere around it as it sucks in life from the half-dozen other restaurants in the area. playful just feels fake. Of course, the signature cocktails (from B299) remain excellent, as do the smoothies (B150-170) and milkshakes (B195). The comfort food theme is best expressed by that little hot dog stand out the front, a neat idea that translates into six tasty combos ranging from a Yankee dog with caramelized onions and homemade salsa (B220) to a decadent chili cheese dog (B280). But not everything is double deck cheeseburgers (B450), chili cheese fries (B295) or smoked pork poutine on fries (B295). The kitchen demonstrates a lighter touch in its rather flavorful paella (B395) and “Nicoise salad” (B365), which comes with raw tuna with a spicy rub, perfectly poached eggs, plump capers and a pleasantly sour vinaigrette. We also recommend the sea bass (B1,250) covered in slices of fennel and lemon, all of it perfectly baked. Still, there’s so much going on in that menu, it’s hard not to compare each dish to a better version of itself—a particularly glaring issue with the cardboard pizzas (from B320). Pop in for a Secret Sour (Gold Label Reserve, Red Gluhwein, citrus, lavender, B380) or The Popsicle (Tanqueray gin, lychee liqueur, pineapple syrup, grapefruit, ginger, apple popsicle, B320); look out for the B299/399 net, 2- and 3-course set lunch; just don’t go planning some weep-worthy gourmet meal, here.

well as a whole lot of fried drinking snacks. In fact, one of its best-known dishes is the moo krob (deep-fried crispy pork , B190), which chef Thitid Tassanakajohn (of Le Du and Baa Ga Din) even called the very best in town. For our money though, Niyom’s fried dishes are so oily that they verge on inedible for all but the most-hardened stomachs. The shrimp omelet (B160) is like a sponge literally dripping with fat, while after a couple of mouthfuls the moo krob quickly turns from a sinful treat into something you’d rather not have in your field of vision. The restaurant is on much safer territory with its seafood and vegetable stir-fries. The stir-fried sugar peas (B160) are deliciously fresh and the sauce not too gloopy, while the stir-fried crabmeat in curry powder (B200) contains bountiful chunks of fresh-tasting crabmeat—though it does need a good dose of fish sauce to awaken the flavor. The stir-fried clams in chili paste (B190) are a real highlight thanks to a liberal portion and basil-rich sauce. We can kind of see why Niyom has a formidable reputation among Bangkok’s after-hours eaters, but for our money this one’s not quite worth the indigestion and sweet-salty-bitter aftertaste of too much MSG.

One thing that makes Artbox better than other markets is… how every booth is set up in container. It brings a unique, artisanal touch to the market. One thing missing from Artbox is… parking! It makes traveling to and from the market quite inconvenient for both the vendors and the people. Our favorite regular Bangkok market is… Rotfai, because of its focus on classic, vintage goods. It feels very different from anything else in town right now. Our favorite place to go shopping in Bangkok is… Siam because of the variety. Siam Square and Siam Paragon, for example, are totally different but they’re so close together, so it combines into one great spot. One thing we dislike about shopping in Bangkok is… sometimes the staff in malls can be a bit reserved. Maybe it’s to do with the culture, but we wish they were more friendly and welcoming. The stalls here are an exception to that.

Gin Ga Toong sells refreshing, vibrantly colored fizzy drinks straight from the bag. They’ll be at The Glass by Artbox Market (see above) every weekend through June 19.

This Apr 2, the Jump Foundation hosts a screening of the documentary Human, a powerful collection of stories and images by French photographer and director Yann Arthus Berthan (of the acclaimed Earth from Above photo series). Human captures stories of everyday life from over 60 countries and shares poignant interviews with 2,020 people in 63 languages to ignite a discussion on what it means to be human. The filmmaker will be present at the screening to hold a post-show talk. Please note that the film is suitable for those aged 15 years or above.
