That You Can’t Always Trust Sacred Cows Everyone loves to love Bangkok’s old food institutions. And so did we until finally eating at Niyom, where the legendary “best-mookrob-in-town” was so oily we felt sick after just a couple of bites. See page 28.

That Supanniga Thonglor is better than the one in Sathorn. Or is it? Supanniga’s owner says he’s heard feedback that his Thonglor branch is better than the one in Sathorn. Since Two Door Cinema Club and Disclosure confirmed they’re coming here, rumors have surfaced that Radiohead and Chvrches might be too. upfront HOT OR NOT

Hot: Beers on the beach

Not: Coffee in Chiang Mai

The two weeks of the year when you can kind of pretend to yourself that Chiang Mai has hot-coffee weather are now well and truly over. With temps across the country pushing 40, there’s only one reason we’ll be traveling, and it ain’t to drink a single-origin latte in a room without Wi-Fi. Where are we headed? See page 6 to find out.

INTERVIEW

Hot: Business-based rewards

Not: Kickbacks

Remember the Thaksin-era when corruption was called “commissions”? Well the current term is now “business-based rewards.” Now that our defence minister who’s also a general has taken the word of another general on this, we can all move on.

Hot: Walking on the ARL

Not: Waiting for the BTS

Forget the BTS’s mini Bangkok shutdown last February. In March, the ARL was offering free, impromptu hour-long sauna sessions. This is the same ARL which manages its 17 million passengers on a budget of B33 billion a year. To put that in perspective, river taxis deal with 29 million people on B70 million.

Hot: Disclosure

Not: Tom Jones

The gap between how far an artist is past their creative peak and when they visit Bangkok has been brought down from four decades to just a couple of years thanks to the news that Disclosure and Two Door Cinema Club will both be coming to town—and bringing the sound of 2012 with them. But not before Tom Jones returns to excite Thai aunties everywhere (see page 30).

THAT’S WHAT SHE SAID

Every year on Apr 1-12, when Thailand’s 21-year-old men must go through military conscription, an average of 900 transgender women are also caught up in the draft. To help them through the process, the Thai Transgender Alliance has produced a guide detailing what the military requires of them to avoid conscription. Here, BK chats to ThaiTGA executive director Jetsada Taesombat, 32, about the project. When did you become involved with this issue? A decade ago in 2006, a transgender woman named Samart Meecharoen decided to sue the Ministry of Defense to force them to change the wording in the conscription certificate called Sor Dor 43, which used the phrase “permanent mental disorder” to describe how transgender people could avoid conscription. Crucially, this goes on to affect a person’s life following the draft because companies always ask to see their Sor Dor 43 before hiring them. When an HR department sees that description then the chances are they will not hire you. Samart finally won her case in 2011, when the wording was changed to “gender dysphoria”— which sounds much more positive. But transgenders still face lots of difficulties to avoid conscription. What do they need to do? They need to start preparing at the age of 17, when they get their first military notice. By the time they are 20, they need to have gone to the hospital, which should be a military hospital, in Nov-Feb, to get tested by a doctor who can endorse the fact that they are transgender and cannot serve as a soldier. That way, they will have the correct paperwork in time for the annual conscription

season from Apr 1-12. Most transgender women are afraid of what they might face. The worst case we encountered was someone contemplating suicide to avoid conscription. Has the situation improved? It was terrible about a decade ago. Most conscriptions happened in large public spaces like schools, temples or government offices. Transgender women were forced to strip down in front of guys, exposing their breats. Many of them were mocked and molested, made to do pageant contests. But the military has improved a lot since then, working together with gender identity rights groups, including us. There are no cases of indecency reported anymore. We really appreciate that effort. Have there been any cases of transgender women who were conscripted? Yes. If you’re transgender and middle class, then you have the money to transform yourself to look like a woman. But not everyone has the ability to do that. There are many poor transgender conscripts who need to work hard to take care of their parents in rural areas and who still look masculine. We had one case in which a male-looking transgender woman needed our help to

resend her papers, prove she wasn’t a man and revoke the conscription. Where can people find your guide? Apart from our office, we distribute it to government offices and military bases where they work on conscription procedures. Since we only have a limited print budget, we try to promote it on social media and our website as much as possible. We now get calls from parents, boyfriends of transgender people and even regular guys who just want advice about the conscription process. What else does ThaiTGA work on? It might seem like the transgender community now has more freedom, but in reality there is still a lot of violence against them, mostly from their families, schools and the workplace. Society still views us as an abnormality, even in Thai health education textbooks. It creates a discriminatory mindset, resigning us to second-class citizens, sexual objects or entertainers. So we’re trying to spread a more positive attitude and ensure society understands us. Interview by Monruedee Jansuttipan See more at www.thaitga.com

Koh Similan

PHANG NGA Phang Nga has long been overshadowed by neighboring Phuket, despite the undoubted majesty of Khaolak Beach and Andaman Sea hot spots the Similan and Surin islands. This year the province is emerging as a hot destination thanks in part to its “See the Unseen” campaign aiming to promote the abundant natural attractions waiting to be discovered.

Stay here: There are camping sites available at the viewpoints (contact the heads of the village, Noppadol on 089-591-0569 and Bang Nhee on 062208-1390). It’s B400 for a tent and B100 for a camping spot. But if you’re looking for a proper deep sleep, De Chom Villa (081-926-3286, www. fb.com/dechomvilla) is a good choice nearby. You can also stay at Khaolak or Koh Yao Noi: Beyond Resort Khaolak (076-592-300, goo.gl/O8FS0o) recently unveiled new villas, while Paradise Koh Yao (076-584-450, www. paradise-kohyao.com) comes with a grand sunset view of Phang Nga Bay.

Head here: There’s plenty here for adventure seekers. Dubbed “Little Amazon,” Klong Sang Nae (086-953-1789, 076-424-176) looks like something out of an Indiana Jones film, snaking its way through thick banyan tree forests in Takua Pa district, an old mining boom area. It costs B500 to rent a canoe or paddle boat and B700 for a motorboat. Other nearby must-visits are Samed Nang Chee and Toh Li viewpoints, which offer unrivaled views over Phang Nga Bay from vantage points two kilometers apart. From Hin Rom Pier you can take a cruise around Phang Nga Bay. As well as homestays and legit fisherman family-run seafood restaurants, other attractions around the bay include Tham Phung Chang (or Elephant Belly Cave), the savannah-like Koh Phra Thong and Koh Yao Noi. One particular highlight is the 2km sand spit that connects Koh Yao Noi and Koh Plong at low tide. Locals call it “San Lang Mangkorn,” which means “dragon spine.” Check tide times if you want to catch it.

How to get there: Traveling around is pretty tricky. It’s better to rent a car as local buses are really sparse. Contact TAT Phang Nga (076-481-900-2) for more tips. It takes 10 hours to drive from Bangkok but you can fly to Phuket and rent a car from there.

Thai Treasures Twenty of Thailand's most renowned artists celebrate HRH Princess Maha Chakri Sirindhorn's 61st birthday at River City Bangkok. On the auspicious occasion of HRH Princess Maha Chakri Sirindhorn’s 61st birthday, River City Bangkok is honored to host an exhibition in celebration of her lifelong contribution to the arts of Thailand and her tireless support for the Kingdom’s artistic traditions. “Arts for HRH Princess Maha Chakri Sirindhorn” is a collaborative exhibition with some of the most celebrated names in traditional and contemporary Thai art. River City will display more than 50 works of art from March 28 until April 8, 2016 at RCB Galleria (2/F). Some of the highlights include the masterpieces of Asst. Prof. Sakol Sutthimarn, a two-time winner of the Bua Luang Painting Competition, whose semi-traditional paintings transform bas-relief sculptures into bright, fragmented deconstructions of classical scenes from the Ramakien. Also on show will be a sculptor and master crayon artist, Somyot Kumsang, whose semi-traditional Thai paintings are reminiscent of Chinese and Japanese brush techniques. They will be joined by a score of artists, from the late master sculptor Toh Kumdech to the Lanna artist Duangjan Jantarat. Also on show will be priceless antiques by some of the Kingdom’s foremost artisans. Head here: A diving day trip sets off from Mu Koh Chumphon National Park. The diving spots are separated into two zones: the north, which comprises Koh Ngam Noi, Koh Ngam Yai, Koh Talu, Koh Pitak and Koh Kalok, and the more accessible south, where you'll find Koh Langka Jew and Koh Lawa. As the coral reef is in pretty good condition, you can even snorkel around some of the prime dive sites. Koh Talu is probably the top pick, an underwater world of colorful fish species and coral, while Koh Langka Jew is home to a heart-shaped coral reef. Switching to rivers, Patoh district offers whitewater rafting tours (077-539-040, 089-592-8376) through the end of April.

When people think of diving, they usually head straight for the Andaman Sea, but this gateway-to-the-South province is a hidden gem for deep-sea activities in the Gulf of Thailand. It’s home to Mu Koh Chumphon National Park, an archipelago that spans islands such as Koh Tao, Koh Samui and Koh Phangan. But there are many more islands that haven’t received the same attention due to being protected bird reserves. The limited access to the islands has actually helped preserve the surrounding marine life, too. And now some of these spots are just being opened for diving tours.

RANONG Ranong has never been this hot. Covered in dense rainforest, this mountainous province is starting to draw in tourists not afraid to get off the beaten path. Here, you’ll find plenty of natural charm in the form of untouched jungles, beautiful coastlines and natural geysers. It’s also an important port for visitors looking to take a day trip to Myanmar’s gorgeous Andaman islands.

Head here: Koh Phayam still tops the list. It’s been on the tourist trail for years, but retains its no-frills charm. Apart from the pristine beaches, the island is home to the amazing Phukhao Ya Song Si (twotone grass hill), which resembles a savannah owing to its lack of trees. The name refers to the color of the grassland, which is green in rainy season (May-Oct) and gold in dry season (Nov-Apr). For some chill beach time, head to Ao Khao Kwai, home to the island’s iconic Hippy Bar, a heavy-drinking establishment that looks just like a beached pirate ship. Further afield, Grand Andaman Travel (080-243-8888, 090-710-5555, www.fb.com/grandandamantravel) offers B3,900 tours to Myanmar’s Cocks Comb Island, whose deep azure inland lake is dubbed “The Emerald Heart.” Thais don't need a visa, while foreigners can get a day pass for a fee. Stay here: The boutique Sino-Portuguese-style Hidden Resort & Restaurant Ranong (077-821-900, www.thehidden-ranong.com) just added a new pool where guests can swim surrounded by vibrant greenery. Alternatively, consider a farm-stay at Baan Rai I Arun (096938-2981, www.fb.com/baanraiiarun) and its modishly-styled wooden house. On Koh Phayam, Blue Sky Resort Koh Phayam’s (02-2477310-11, www.theblueskyresort.com) villas dot a scenic mangrove forest. How to get there: Nok Air’s one-hour-20-minute flights start from B3,354 and offer a considerable shortcut from the eight-hour drive. Daily buses also depart from Bangkok Southern Bus Terminal. Summer Escapes

Five amazing travel plans to keep you cool this summer. 1. Hit the Beaches Our pick: Pattaya For a last-minute beach escape, taking a daytrip to Koh Larn is a popular choice. It’s 15 minutes away from Pattaya via speedboat, and the clear seawaters make it worth the ride. But that’s not the only thing that makes Pattaya a fun summer escape. The seaside town of Chonburi has changed a lot in recent years, turning itself into a spot full of trendy new openings that come with amazing views, like Veranda Pattaya and the new branch of The Chocolate Factory. Need to cool down? You’ve got fine imported Sri Lankan tea in the Tea Factory at A’ La Campagne, as well as Skoop for gelato. The best part is that it’s only a 2-hour drive away from Bangkok.

Wat Phra Mahathat

Fun fact: During the annual Songkran festival, the Eastern provinces of Thailand celebrate through until Apr 19. The real water fights don’t really start until the final day, known as Wan Lai (Flowing Day). Try hitting Lan Pho Na Kluer Park and Wat Chai Mong Kol, where you’ll find merit-making activities, the construction of sand chedi, the Kong Khao procession in appreciation of the Goddess of Rice, as well as the Nang Songkran beauty pageant. Who says Pattaya is only about water fights and foam parties? Pattaya City Call Center 1337, www.pattaya.go.th

2. Take in the Arts Our pick: Chiang Mai Chiang Mai

Phuket Old Town

The North of Thailand is as notoriously hot as Bangkok at this time of year, but we’re such big fans of the Lanna capital that we make sure to visit every year. On top of its reputation as coffee capital and slow-life centrale, Chiang Mai has more to offer beyond the hipster streets of Nimmanhaemin. There’s also a growing contemporary art community headed by the soonto-arrive new art space Mai Iam. On top of artwork organically installed across the city, some permanent art spaces include the experimental-leaning Gallery Seescape and Hern Gallery. Grab the recently published Chiang Mai Art Map to find out about all the very best galleries in town, including the likes of Vichit Studio, Lyla Gallery, C.A.P. Studio, Documentary Arts Asia, DC Collection and Thapae East Art Space.

Fun fact: Chiang Mai has long hosted the Pra We Nee Pii Mai Muang event every Apr 12-14. As well as cultural Lanna events at sacred temples such as Wat Phra Singh and Phra That Doi Suthep, the festival also includes huge water fights around the central moat. Expect a cultural parade on the first day of the festivities, with highlights like the float carrying the sacred Phra Buddha Sihing and the Nang Songkran Chiang Mai beauty pageant. Chiang Mai Metropolitan Office, 053-259-000

3. See the Unseen Our pick: Sangkhlaburi And no, it’s not just because GQ Germany decided to do a Louis Vuitton fashion shoot there. In fact, summer is the best time to visit this super quaint land of three cultures (Thai, Mon and Burmese). Its main draw is the former Wang Wiwekaram Temple, which has been submerged by the waters of Khao Laem Dam for the most part of the year since 1984—hence the name: Wat Tai Nam Muang Badan (underwater temple). Mar-May is considered drought season, when the water level drops, and is the only time of the year visitors can actually take a boat trip and walk around ruins of the old temple. Also check out Wat Somdej, another rarely visited old temple. We recommend booking a floating guesthouse to make the most of your stay. Fun fact: The Mon community here also hosts a unique Songkran festival from Apr 13-17. The festival starts with a monk almsgiving on Uttamanusorn Bridge (also known as Mon Bridge), which is the second longest wooden bridge in the world and takes in beautiful views of the lake. Other festivities include bathing the monks by pouring water into long bamboo pipes. Sangkhlaburi District Office, 034-595-120

4. Explore Thailand’s Old Town Heritage Our pick: Phuket Here you’ll find the best of both worlds. Phuket Old Town’s unique Thai-Chinese heritage feels worlds away from the private beaches at painfully beautiful luxurious resorts. The island’s baba nonya culture shines brighter than ever

now thanks to the new breed of “baba-chic” restaurants and cafes in old Sino-Portuguese buildings. Make sure you check out the likes of Kopitiam by Wilai, Tu Kab Khao, Raya and China Inn. Last month also welcomed the PeranakanNitat Museum, a 1907 building dedicated to the Strait of Malacca’s unique cultural heritage. Fun fact: Songkran festivities on Phuket are usually held at several locations including Sarasin Bridge (which connects Phuket to the mainland) and the Old Town on Thalang Road. Parties continue around Patong beach too. If you’re staying through the rest of the long break, Phuket is also gearing up to host the first Thailand Balloon Music Festival from Apr 14-17, with concerts by artists such as Singto Namchok, Musketeers and Jetset’er. TAT Phuket, 076-211-036, 076-212-213

5. Live the slow-life in Thailand’s Ancient Cities Our pick: Sukhothai The first thing that comes to mind is the striking image of the ruins in the Sukhothai Historical Park, another UNESCO World Heritage Site, and the tasty Sukhothai-style noodles with the signature kai yang matoom (medium-boiled eggs). But this often overlooked destination (why go when Ayutthaya is much closer?) is also home to some cool retro cafes and delightful homestays at Baan Na Ton Jhun, a small village in Sri Satchanalai. If you have more time on your hands, take the train from Hua Lamphong up to Phitsanulok on the way there. Fun fact: They say you can celebrate the Thai new year for half a month in Sukhothai. Festivities start from Apr 7 with the 170-year old Sukhothai Ordination Parade on Elephant Back Festival at Hadsiao Temple. Traditional Songkran fairs and food fests then continue throughout the city at various historical sites from Apr 8 onwards. The main “Khao Tok Road with Floral Cloth” Sukhothai Songran Festival takes place at Sukhothai downtown. The whole thing comes to a close with the local Bathing Chao Muen Dong Ceremony between Apr 17-19 in Sri Satchanalai. TAT Sukhothai Office, 055-616-228-9

Head here: Protected bird reserve Koh Phetra is welcoming tourists for the very first time, though activities are limited to swimming and snorkeling. It’s a similar case with Koh Lao Liang Phi and Koh Lao Liang Nong, which come under the management of Mu Ko Phetra National Park National Parks & Marine Reserves (077-558-144-5, goo.gl/V6xxj6), though here you can also camp and go rock climbing. You’ll probably have to base yourself at Koh Sukorn, a larger island where locals are able to sustain themselves with large watermelon and rice plantations, and water buffaloes are known to walk the beaches. They even have their own sand spit called "Jade Dragon Spine." Nearby Koh Hin Son is renowned for its unique landform of two rocks stacked on top of each other—a popular spot to catch sunset. Koh Lipe, Koh Ravee and Koh Adang are equally gorgeous.

TAT Trang

While this province in Thailand’s deep South is renowned for popular summer destinations Koh Lipe and Koh Adang, this year sees neighboring islands Koh Phetra and Koh Laoliang also opening their shores to tourism. Decades of restricted access has helped preserve the islands’ powdery white beaches and vibrant coral reefs teeming with sea life.

Koh Lao Liang Phi

Koh Sukorn

Stay here: Yataa Resort (075-828-594, 090-545-9614, www.yataaresort. com) is your best option on Koh Sukorn. It offers daily diving trips to Koh Phetra and Koh Lao Liang Phi at B900 per person for groups of at least six. Meanwhile, Laoliang Beach (082-790-9674 , 081-737-8176, www.fb.com/ laoliangbeach) has a three-day-two-night camping package on Koh Laoliang, inclusive of seven meals, at B6,000-B6,500 but it's only available till May 9, when the island closes for monsoon season.

Ao Khao Koh Mak

Situated between Koh Chang and Koh Kood, this small island’s limited number of rooms helps put a cap on visitor numbers. Recently local businesses have banded together to market the island as a low-carbon destination. That means lots of low-key outdoor activities like kayaking and diving, plus bicycle rental (no motorbikes). Organic food is produced on the island to cut down on transportation and many places use solar power. Head here: Diving still dominates. Koh Rang, a 10-minute boat ride away, is praised as the most beautiful spot for shallow coral reef diving in Eastern Thailand. At Koh Rad, the underwater scene is marked out by nine giant elephant statues put in place by the Department of Fisheries. You’ll have to go scuba diving to see it, though. Other top diving islands include Koh Kham, Koh Yak Yai, Koh Yak Lek and Koh Mapring. Another neighbor, Koh Kradad, is dubbed the "Sea Safari" for the herd of deer that calls it home. The island is only 1.2 kilometers at its widest and home to just one resort, Kradad Resort (www.kohkradadresorts.com), who you will need to book with to take a tour. Back on Koh Mak, the 20km ring road connecting the whole island makes for one serious cycling course. CHIANG MAI

Crossing Over Ever lusted over those super-exclusive, equally expensive X2 boutique hotels? Well, now the rest of us can have a go thanks to the brand’s new cut-price offering in Chiang Mai. With opening rates at just B1,300 net including breakfast, X2 Vibe Chiang Mai Decem Hotel (053-214828, www.x2vibe.com) combines the same designer-y sense of style as its sister properties— beds floating in the middle of rooms, industrial fixtures, glam bathrooms—only this time in a proper 72-room hotel built around a swimming pool courtyard and lofty vertical garden. It’s all just steps from Maya shopping mall—not the sexiest direct location, but right on the doorstep of the hip Nimmanhaemin neighborhood. Rooms on the higher floors also get bonus views of Doi Suthep Mountain.

After a very successful run from the Chiang Mai edition of Camp Meating (090-4049500, www.fb.com/campmeating), the chic (and little bit Wonderfruit-esque) outdoor barbecue dinner returns this Mar 31 with a summer edition, set to take place on a hidden beach in Hua Hin. The beach barbecue gathering will take place every Thu-Sun through Apr 30. A barbecue set is B1,000 per person (excluding soft drinks and alcohol) and consists of seasonal vegetables, mixed mushrooms, a small seafood platter and a bread basket. You also have the option to pay extra for a main dish: French cut pork chop, premium dry-aged Angus beef, New Zealand lamb chops or Canadian lobster. Dinners start at 5pm. It’s reservations only and there are limited slots available per day.

Akasaka Palace is like Tokyo’s answer to Versailles: a sprawling, 15,000-sq-meter pile where the country’s royal nobs of old liked to kick their feet up. Well, now the likes of you and us are allowed in, thanks to the Japanese government’s decision to open it to the public for 150 days a year instead of the usual 10, starting from the beginning of Apr through Aug. Joining it is the more classically Japanese Kyoto State Guest House, now open for visitors through till the end of this year. It’s all part of the gov’s plan to boost visitor numbers to 30 million a year before the 2020 Tokyo Olympics. Kampai!

SINGAPORE

Food and Flowers Tulips take over Singapore just in time for our Songkran break this year, with The Flower Dome at Gardens by the Bay (www.gardensbythebay.com.sg) playing host to Tulipmania this Apr 8-May 22. And it’s timed to coincide perfectly with this year’s World Gourmet Summit (www.worldgourmetsummit.com), happening now through Apr 24, with leading local chefs coming together with Michelin lights from around the world. As if that’s not enough, the island is also hosting FoodAsia 2016 (www.foodnhotelasia.com) right during Songkran, Apr 12-15, which features six exhibitions: Food Asia, Hotel Asia, Bakery & Pastry, Hospitality Style Asia, Hospitality Technology and Specialty Coffee and Tea.

Military Lady Designer Boonyanuch “Kae” Vittayasamrit reinvented her family’s longstanding shoemaking factory a few years back to start turning out modern leather bags and accessories under the brand 31 Thanwa. The sharp geometric design of the signature square and rounded cross-body bags have become an everyday choice of working women ladies with that boyish attitude. Her latest collection, Army of Hers, strengthens those boyish looks by taking inspiration from World War I. The result is bold bags in military colors like khaki, silver and military green with a femininely shiny finish. Our pick: the pretty new Bomb series in bucket shapes with gold and silver belt details. 2/F, Qurator Thai Designers Zone, The Emquartier, Sukhumvit Rd. BTS Phrom Phong. www. fb.com/31thanwashop

On the heels of Pisanu Light’s earlier offering of vintage bulbs and industrial loft-style lighting comes this minimal new collection of concrete pendant shades in earth tones. Options range from natural-color half-egg shapes (B3,250) to sandy-textured cones (B1,850) and hat-like pieces with a matte texture (B2,650). For a touch of elegance, check out the cones with copper details (B3,140). None of those prices include a bulb, so don’t forget to also pick up the perfect tungsten bulb (starts from B200) from their collection. 445/2 Sri Ayuthaya Rd., 092424-2453. www.fb.com/pisanulight

Online fast-fashion shopping center Pomelo has added a new sportswear line to its portfolio. Called Alita, it offers every basic piece you might need for the gym—sports bras, shorts, leggings— in fashionable patterns and details. Each piece is made from that perfectly stretchy, drip-dry gym material, with an antibacterial coating to make sure you feel clean as well as comfy. Most of the pieces go in for vivid colors and prints, along with woven patterns, cutout details and mixed materials. We like the Asana zipped floral bra (B1,490) with matching leggings (B1,190) for the day, while the black sports bra (B1,390) and black and white flower print leggings (B1,590) give a more sophisticated, after-hours workout look. Thonburi residents don’t need to travel across the river for their co-working needs anymore. Located right by the future Icon Siam BTS station (the nearest is currently Thonburi), Poolsub Co-Working Space rents out hot desks for B100 for three hours per person, while day passes are just B200. Or sign up for a 30-day pass (valid for a 45-day timeframe) for B4,500. The co-working space is attached to Poolsub Private Office, which opened in late 2015 and offers 32-sq-meter offices for up to 10 people at B21,500/month on six-month contracts. Expect to see these guys holding regular workshops and events over the coming months in a bid to create a creative scene for the area. 56/5 Charoennakorn Soi 8, 089-9997964. BAR

Head Upstairs Some consider the guys behind Sathorn Soi 12’s UNCLE as the makers of the very best cocktails in town. Well, they’re now in Thonglor, too, and the prices are downright cheap compared to the rest of the scene. Just as with the original location, the new branch sits above Lady Brett and Rocket (all three belong to the Sapparot Group), only this time the space is much bigger, decked out with a huge dark marble bar, big leather couches and bold blue walls. A sizable outdoor terrace offers some alfresco seating, while private egg chairs sit round the corner for a more intimate choice. Or pull up a stool at the bar to see the guys in action. Sapparot group head mixologist Philip Stefanescu created the drinks list, and we’re prepared to call it the cheapest list of classics-with-twists in town. The spirit selection sticks pretty much to the same bottles you find over at Sathorn, with the focus more on home infusions and homemade ingredients than pricey spirits. Try The Big Red (B195), which mixes Iron Balls gin with fresh watermelon, Campari, lemon and homemade cinnamon syrup. The Manhattan Latino (B195) adds a twist to the classic Manhattan by basing it on rum, to which is added Mancino Rosso, cocoa and bitters—very easy going. The Wild Southeast (B195) is a surprisingly refreshing bourbon-based drink featuring pineapple-infused Wild Turkey bourbon mixed with Mancino Rosso vermouth and Mancino Bianco vermouth. 3/F, 72 Courtyard, 72 Sukhumvit Soi 55 (Thonglor)

The industrial-chic glass box that is Thyme sits in an unlikely location on Nang Linchi Road. While maintaining a casual eatery vibe, Spanish head chef Victor Burgos doesn’t compromise on his European offerings. Expect Spanish classics like croquettes (B180), patatas bravas (fried potatoes, B180), cherry gazpacho (B190), cold cuts (B550) and delicious paella (B850-1,600). More ambitious items on the menu include shaved foie gras terrine (B290) served with crispy corn atop peach puree, Angus beef carpaccio (B500) and rack of lamb (B850-2,500). Don’t miss dipping the crispy churros (B200) in the accompanying dark chocolate and dulce de leche or the Thyme tea (B100)—an icy milkshake to which you can add your preferred amount of tea provided in glass tubes. 411/2 Nang Linchi Rd., 02-678-1333

After debuting on After You’s menu last year, the much-hyped icy treat kakigori now has its own separate shop. Maygori at The Commons provides even more choices of toppings for your delicately shaved ice, including ume (Japanese plum, B185), yuzu yogurt panna cotta (yuzu sauce, yogurt cream, panna cotta, B185), Milo/Jamba (chocolate malt, pink milk, B185/B175), hojicha (roasted green tea, tapioca pearl, shiratama dango, B225) and mont blanc (chestnut cream and roasted chestnut, B245). Like at After You, you have to pay for your order at the counter before sitting. 1/F, The Commons, Thonglor Soi 17, 02-185-2519

This brand new spot is already doing the social media rounds thanks to its dining table that sits in an all-white swimming pool. The food’s no gimmick, though. Once an online dessert shop, 3nvy has expanded to a full cafe dishing out colorful food like the 7 Sins chicken soup (B180), which comes with six oils in different colors including basil, butterfly pea and chili oil. The smoked salmon salad (B380) is served in the form of a pile of mashed avocado, mango chunks, boiled shrimps and smoked salmon in salad cream, while the fresh homemade beetroot fettuccine with cream carbonara (B320) is another vivid offering. Drop by on Sunday for brunch dishes like eggs and toasted brioche, sausages and vegetables, served on skillet (B260). Just expect some company for the pool table. 1246 Rama 4 Rd., 084459-6266

For the first time in Thailand, the most-respected magazine in the fashion industry is about to throw a summer party combining hot picks, a juice bar and a pop-up store. Keep your eyes peeled for ‘Vogue Loves’ tags on this season's must-have items and be first in line to grab limited-edition merchandise at the Vogue Pop Up Store, whose proceeds go to the Rama Foundation. CentralWorld is about to be lit up by a myriad stars and a constellation of food stalls (spoiler alert: it’s a mini-planetarium slash foodie’s night market). Whether you’re into late-night munchies or a fullblown meal, you’ll have 100 pop-up stalls to explore. The best way to wrap up your journey into the midsummer night’s Milky Way? Sakuragawa Sushi

SUSHI

Omakase 101 Bangkok’s sushi connoisseurs are now leaving it up to the chefs to decide what they eat. Here’s how the whole thing works. By Natcha Sanguankiattichai

Sushi Masato

L

iterally meaning “I’ll leave it up to you” in Japanese, omakase sees diners entrust their dinner to the chef.

The Scene The last 24 months have seen an explosion in the number of restaurants offering omakase, from imported big names like Sushi Masato, helmed by Japan-native Masato Shimizu, who became the youngest chef in NYC ever to win a Michelin star at just 29, to a host of local chefs. Thais making their name in omakase include Wacharun Iamarramsak, chef-owner of In the Mood for Love; his previous team member Charoensri Somsook, chef of Mizu by Sankyodai; Banphot Boonklom, chef of Umi (previously of Sushi Cyu); and Chaichat “Randy” Noprapa, chef of Fillets, who had a stint in the kitchen of Masaharu Morimoto, one of America’s most-praised Japanese chefs.

The Show Omakase is basically a chef’s time to shine. The man behind the counter acts as both director and performer in a culinary performance that can last two hours. It takes Japanese chefs years of learning all about hot and cold kitchens before they actually get their hands on something as delicate as sushi. “Sushi is the last step in a Japanese chef’s career,” says Charoensri, of Mizu by Sakyodai. The

Umi

experience is incredibly intimate. As Wacharun, of In the Mood for Love, says, “There’s no other form of dining in the world that brings diners so close to the chef. Throughout each course, they get to know more and more about the chef.”

The Courses An omakase set usually contains a few appetizers, a range of sushi as the main and then tamago, soup and dessert. “I like to serve seasonal fresh sashimi as appetizers,” says Ginza Sushi Ichi’s executive chef Masakazu Ishibashi, who trains all the chefs in the Sushi Ichi empire. At Fillets, chef Randy not only lets the fresh fish shine in the form of sashimi, but also plays around with the likes of fresh shiro ebi (glass shrimp) served with osetra caviar and dried fluke roe. On the other hand, Tama chef Seiji Sudo (previously head chef at Bangkok’s branch of Ginza Sushi Ichi) doesn’t stick to nigiri for the main course, offering sashimi and other funky items like mixed rice with grilled hairy crab meat and uni.

The Sushi Edomae, the most popular style of sushi, requires special handling. “At the time this style of sushi originated, more than 300 years ago, there were no refrigerators. So in order to keep fish and rice from spoiling, sushi stall chefs had to preserve them by curing, marinating, seasoning or cook-

ing,” says Shimizu, chef-owner of Sushi Masato. Techniques include curing and marinating fish in salt, vinegar, soy sauce, sake and seaweed. Sushi rice is also an important element. Most places use red vinegar to season their rice, while Ginza Sushi Ichi and Umi use both red and white vinegar to season two different kinds of rice.

The Sequence “It’s the chef’s task to create harmony throughout the whole meal,” says Sato Tomohiko, chef of Sushi Hinata. While there’s a rule of thumb that milder-tasting fish like white fish should be served earlier and stronger red-flesh fish later, some chefs decide to chart their own taste journey. “I want my diners to feel excited throughout the course,” says chef Randy of breaking with the rules. Sakuragawa Sushi’s chef-owner Takuya Komada too likes to switch between oily and less oily fish. “If every heavy piece is served toward the end of the course, you can easily feel like you have eaten too much. As a customer, I wouldn’t like it.” Some chefs also like to break the nigiri journey into two or three parts, interspersed with sashimi or cooked items.

The Rest

Ginza Sushi Ichi. Lunch from B1,300-4,000 for about 10-15 items. Tue-Sun noon-2pm; Dinner from B4,000-7,000 with 8 nigiri and 7-10 other items. Tue-Sun 6-9:30pm. kok we can see the diversity on show, from the spongy and airy tamago at Fillets to the smooth and custardy one at Mizu, with various levels of sweetness and saltiness at play. Wacharun says: “My tamago is dense and almost unsweet. My set also doesn’t include desserts as I’m personally not a dessert person. I only cook what I find tasty.” Elsewhere, the most popular desserts include ice cream and puddings.

The Diners When we asked chefs how diners can get the most out of their omakase experience, the answer was unanimous: eat whatever you’re served as soon as possible. Using your hands to eat sushi is the preferred option. Pressing too hard with chopsticks can cause the sushi rice to crumble. Some chefs, like Komada of Sakuragawa Sushi, prepare for this: “If I spot diners who prefer using chopsticks, I’ll make their sushi a bit denser so that the rice ball stays in one piece.” Also note that every piece of sushi you get from a chef is already seasoned. There’s no need to put that extra wasabi or soy sauce on it. While a chef will attempt to cater to diners’ limitations, in return they expect open-mindedness to successfully showcase their best.

After the main course, you’re likely to be served tamago, a type of Japanese omelet where a chef will often try to add his own flourishes. In Bang-

Most chefs recommend eating sushi fish-side down: you’ll get the varying flavors and temperatures of the fish first, instead of the rice, which may stay the same throughout the meal.

This year we see brass, copper, rose gold and marble outshining all other materials. Not only has Bangkok welcomed the 1950s-inspired furniture of Jonathan Adler with its heavy reliance on brass and copper details, but the city’s new cafes, bars and restaurants have all been falling back on the warm shiny materials, too.

Fashion A touch of metallic detail makes the most of the summer sunlight. Keep the total look warm and sexy with hot shades like copper, bronze and rose gold matched with earth-tone outfits. Here’s what you need to get the look.

Finish your look with metallic eyes and nails or get an all-over sexy shimmer glow this summer. This is the season for skin, not lips, so choose the perfect foundation to prepare your flawless complexion and let the eyes shine brightest with copper shades. Even on the cocktail scene, copper and shiny metals have proven themselves the bartender’s favorite accessories. From fancy coupe glasses with metallic rims to sexy copper shakers and other equipment, shiny metal seems like an essential ingredient for the perfect pour—and rightly so, since some of the world’s best spirits like Absolut Elyx are produced in copper stills.

Elyx is the super-premium line of the Absolut family. The taste is distinct from your familiar Absolut vodka because it’s made from a single estate wheat plantation in Rabelof, Sweden. This single estate can produce only a limited amount per year, making every bottle special. But the real craft comes during the distillation process. The spirit is made in a copper distillation column—a traditional process that purifies vodka to perfection and rewards its drinker with a silky texture. To highlight the bottle’s premium qualities, Absolut has also created a special copper pineapple glass that symbolizes “wealth, hospitality and wellness.” Best mix: There are two signature drinks created especially for the Absolut Elyx. The Ocean Drive mixes Absolut Elyx with passion fruit puree or fresh pulp, fresh pineapple juice, lime juice, agave syrup, cayenne pepper and kaffir lime leaves served in a copper pineapple glass. The Pink Squirrel mixes Absolut Elyx with fresh watermelon juice, lime juice and chili syrup

served in a copper pineapple glass. But that’s not all. The barmen at these outlets below create their own signature versions of Absolut Elyx, too. OPEN DOOR

Suhring Fine modern German cuisine in a peaceful house setting. The buzz: The debut restaurant of twin German chefs Thomas and Mathias Suhring follows their departure from Mezzaluna at LeBua and has been a hot topic among Bangkok’s foodie community. Not least because they’ve opened in partnership with Gaggan Anand— owner of the top restaurant in Asia's 50 Best two years in a row. The decor: The beautiful house on Yen Akart Road doesn’t mess with the building’s original floorplan, meaning that the space really maintains that dinner-at-someone’s-home vibe. Cookbooks line the shelves, scatter cushions invite you to get comfy on the banquette, and rustically landscaped gardens cocoon you from the outside world through floor-to-ceiling windows. The large open-plan kitchen sits at the back of the house, leaving some space for an intimate chef’s table. Head up to the mezzanine to sip on their spirits selection and listen to music.

26

The food: The chefs aim to introduce diners to a different perspective of German food that’s not just about hearty chunks of pork knuckle, sausages and sauerkraut—though these classics do make the occasional, playful appearance. For now, you can only opt for seven- (B1,800) or nine-course (B2,500) set menus, in which the chefs guide you on a journey through a series of small plates. German cooking methods like pickling and smoking are combined with modern gastronomic flair in dishes like the refined pork knuckle sandwich topped with Riesling sauerkraut cream and sous-vide Simmental beef, finished on a charcoal grill and served with comforting kasespatzle (German-style pasta cooked with cheese). We particularly like their simple salad of dried, grilled, pickled and raw vegetables. Brotzeit (literally, bread time) culture also plays a large part here, with homemade sourdough and soft pretzel served along-

side Oldenburger butter, schmalz (lard), obatzda cheese dip, pickle, Black Forest ham and dry-aged beef. Their take on rice pudding sees jasmine rice topped with cinnamon espuma and cherry ice cream. The drinks: Ex-L’Atelier de Joel Robuchon sommelier Thanakorn Bottorff presides over a beautiful collection of old- and new-world wines, starting at an approachable B380 by the glass. His wine-pairing package will be added to the menu soon. Why you should care: Come here and you’ll see (and enjoy) how much there is to modern German cuisine. If the names of the twin chefs don’t already grab your attention, then remember they have this city’s top culinary badass, Gaggan Anand, as an investor too. Natcha Sanguankiattichai

NEW AND NOTED

Inside Scoop One of this city’s long-standing homemade ice-cream shops has just been reborn. For over 20 years, Chula kids have known the name Chubby (69/11 Ekkamai Soi 21, 085-9136566) thanks to a stall on campus which used to sell its frozen goodness. Now, the brand has come back with this new shop in Ekkamai’s Bangchak gas station, offering more than 30 flavors including coconut, custard apple, taro, durian, Irish coffee and butterscotch at B45/scoop. The compact shop doesn’t have anywhere for guests to sit, so be prepared for takeaway.

Be My Guest Another cozy house on Ekkamai Soi 12 has opened as a coffee shop. At Ekkamai Macchiato (6/2 Ekkamai Soi 12, 083785-9090), all the drinks cost B100 including espresso-based coffee made using a Thai-Ethiopian-Brazilian blend from local

roaster Bottomless and filter coffee using rotating single origins (currently Roots). They also offer chocolate drinks, green tea latte, iced tea and fruit shakes. The second floor is open for work space rental.

Isaan Air The Thonglor crowd now has a proper restaurant for their Isaan feast. Somtam is of course the star at Tum Thonglor (2/F, The Taste, Thonglor Soi 11, 091-874-4999), where the eponymous signature dish (B485) features spicy papaya salad with salted eggs, a large grilled prawn and side of moo yor (Vietnamese pork sausage), crispy pork skin and naem. Those who fancy the taste of pla ra (fermented fish) can also opt for the tam taad (somtam platter) for an additional B245. The likes of grilled chicken (B375/whole bird), pork neck namtok (B125) and fried duck beaks (B125) are also available.

139/5 Wireless Rd. (between Japanese Embassy and Lumphini Police Station), 02-655-8995, 081-432-4050. Standout dishes include a kai palo-tom sap hybrid (Chinese-style fivespiced egg soup flavored with Isaan-style spices) and deepfried sun-dried pork. Exclusive privileges for Citi credit cardmembers. This venue from the Hyde and Seek team is named in tribute to apron-clad craftsmen and specializes in retro Western comfort food. The menu competently covers everything from cold cuts, salads and soups to pasta, sandwiches and meat and seafood mains but falls short of greatness. On the decor front, comparisons with Hyde & Seek are even crueler. While the Ruamrudee bar and restaurant brought New York-style sophistication to town with its paneled wood interior, illustrated menu of tweaked classics (by Ian Kittichai no less) and stiff classic cocktails, Scruffy Apron slips into full-on Disney territory. No amount of bricks and tacky chandeliers can really block out that you’re on the sixth floor of a mall; and what should have been

If you want to eat at this late-night ThaiChinese food institution then you best arrive early. With every Toyota Camry that drives into Silom Plaza’s carpark, another of Niyom’s tables disappears. It’s one of those restaurants which makes you feel sorry for everywhere around it as it sucks in life from the half-dozen other restaurants in the area. You can take a seat in the atmosphere-void indoor space, but the aircon is so bad that we recommend you plump with the outdoor seating instead, where you’ll find the at-first frighteningly abrasive service does loosen up once your order’s taken. The menu charts a very Bangkokcentric path through Chinese-influenced Thai seafood and Teochew cuisine, as

playful just feels fake. Of course, the signature cocktails (from B299) remain excellent, as do the smoothies (B150-170) and milkshakes (B195). The comfort food theme is best expressed by that little hot dog stand out the front, a neat idea that translates into six tasty combos ranging from a Yankee dog with caramelized onions and homemade salsa (B220) to a decadent chili cheese dog (B280). But not everything is double deck cheeseburgers (B450), chili cheese fries (B295) or smoked pork poutine on fries (B295). The kitchen demonstrates a lighter touch in its rather flavorful paella (B395) and “Nicoise salad” (B365), which comes with raw tuna with a spicy rub, perfectly poached eggs, plump capers and a pleasantly sour vinaigrette. We also recommend the sea bass (B1,250) covered in slices of fennel and lemon, all of it perfectly baked. Still, there’s so much going on in that menu, it’s hard not to compare each dish to a better version of itself—a particularly glaring issue with the cardboard pizzas (from B320). Pop in for a Secret Sour (Gold Label Reserve, Red Gluhwein, citrus, lavender, B380) or The Popsicle (Tanqueray gin, lychee liqueur, pineapple syrup, grapefruit, ginger, apple popsicle, B320); look out for the B299/399 net, 2- and 3-course set lunch; just don’t go planning some weep-worthy gourmet meal, here.

well as a whole lot of fried drinking snacks. In fact, one of its best-known dishes is the moo krob (deep-fried crispy pork , B190), which chef Thitid Tassanakajohn (of Le Du and Baa Ga Din) even called the very best in town. For our money though, Niyom’s fried dishes are so oily that they verge on inedible for all but the most-hardened stomachs. The shrimp omelet (B160) is like a sponge literally dripping with fat, while after a couple of mouthfuls the moo krob quickly turns from a sinful treat into something you’d rather not have in your field of vision. The restaurant is on much safer territory with its seafood and vegetable stir-fries. The stir-fried sugar peas (B160) are deliciously fresh and the sauce not too gloopy, while the stir-fried crabmeat in curry powder (B200) contains bountiful chunks of fresh-tasting crabmeat—though it does need a good dose of fish sauce to awaken the flavor. The stir-fried clams in chili paste (B190) are a real highlight thanks to a liberal portion and basil-rich sauce. We can kind of see why Niyom has a formidable reputation among Bangkok’s after-hours eaters, but for our money this one’s not quite worth the indigestion and sweet-salty-bitter aftertaste of too much MSG.

Tickets are B350, available at any Ripcurl store in Bangkok.

SAT Summer of Spending Trying to save money? Well, don’t go anywhere near Zaap on Sale this weekend. The market, which brings together all the big online fashion shows, is now in its sixth installment under the theme “Aloha Summer.” Expect some 400 booths and a huge (but fashionable) crowd to fill Royal Paragon Hall (5/F Siam Paragon, Rama 1 Rd. BTS Siam) this Apr 2-3. Unlike most markets in town right now, don’t expect any food stalls or much sitting space—this one’s all about shopping.

THU Up to Eleven The city’s up and coming indie bands make their big stage debut at Fung Jai Mun this Apr 7, a concert organized by the music zine that shifts the spotlight onto young talent. Taking place at Play Yard by Studio Bar (Ladphrao Soi 8), the night will introduce bands ranging from alternative punk to hip-hop going by colorful names like Vivid Dream, Shark Boy Alive, Lord Liar Boots, Telex Telexs and River Rhyme. Tickets are B250 at bit. ly/22zbDk9.

SPOTLIGHT Gin Ga Toong – Artbox Booth

Upcoming

One thing that makes Artbox better than other markets is… how every booth is set up in container. It brings a unique, artisanal touch to the market. One thing missing from Artbox is… parking! It makes traveling to and from the market quite inconvenient for both the vendors and the people. Our favorite regular Bangkok market is… Rotfai, because of its focus on classic, vintage goods. It feels very different from anything else in town right now. Our favorite place to go shopping in Bangkok is… Siam because of the variety. Siam Square and Siam Paragon, for example, are totally different but they’re so close together, so it combines into one great spot. One thing we dislike about shopping in Bangkok is… sometimes the staff in malls can be a bit reserved. Maybe it’s to do with the culture, but we wish they were more friendly and welcoming. The stalls here are an exception to that.

Gin Ga Toong sells refreshing, vibrantly colored fizzy drinks straight from the bag. They’ll be at The Glass by Artbox Market (see above) every weekend through June 19.
