We hope you had fun stocking up on Tokyo fashion when AirAsia launched their flights to Japan from Bangkok a couple of years ago. For your next trip, everyone’s favorite budget airline now wants to take you to experience Iran’s exotic blend of Persian architecture, horse-based sport, snowy mountains and hotly disputed nuclear policies (see page 14). They may not have an A.P.C. on every corner, but they do have baqleh—a delicious dish of steam-boiled fava beans.

The most exciting event you’ve got to look forward to this weekend is a gig of Beatles covers on Ladphrao. That’s it. There aren’t even any Australian bros in scooped v-necks spinning EDM at Route 66. Hence, why we’ll be doing a Netflix-and-chill with the new season of Chef’s Table, which even stars this city’s top culinary mind, Gaggan Anand.

In March, a group of protesters marched to Chatuchak District Office to show their anger at the cutting down of trees at Bon Marche Market. At the same time, TV presenter Chorpaka Viriyanond called on Bangkokians to band together to save urban trees. Since then, the Big Trees activist group has joined with some 65 organizations to form the Thailand Urban Tree Network (goo.gl/3UZH9s). BK chats with two of their team, Chanadda Damngern, 23, of Urban Tree Care (goo.gl/Kbsj8L), and Oraya Sutabutr, 47, of Big Trees, on how everyone can help make Bangkok greener. How did Thailand Urban Tree Network form? Oraya: It’s like a time bomb finally went off. In recent years, Bangkokians and people in other provinces have witnessed the hasty treatment that various government departments, including Bangkok Metropolitan Administration [BMA], have given to trees. This ranges from overzealous trimming to rapidly expanding deforestation. How does the movement work? Fang: We will stick to the Chatuchak model, which simply asks everyone to be our patrol officers. Anytime you see trees treated badly, please post a picture on social media with the hashtag # สายตรวจต้ น ไม้ [tree patrol officer] to report the incident. We will notify the relevant department or send our arborist teams from Urban Tree Care [goo. gl/Kbsj8L] to share our knowledge for free. We have carried out work in many Bangkok districts already. What’s the real problem behind Bangkok’s tree management? Fang: We have found that many of the problems stem from a lack of staff who have really limited time in

which to trim trees. They get something like 40 orders a week to trim down trees, whereas arborists like us will take a day to take care of one or two trees. By trimming trees using the right methods, the BMA could reduce the workload tremendously. If you allow a tree to heal correctly, you don’t need to bother it for another year. Oraya: The BMA’s key performance indicators are also terrible. They use the number of trucks used to carry the branches of trees to evaluate how much their staff have worked. So if they don’t fill lots of trucks with trimmed tree branches, that means they are lazy. You said Urban Tree Care offers its services for free; how does this work? Fang: We’re a tree care service run by students from Urban Tree Care School [goo.gl/gZOAy1], which was formed by Taradon Tunduan and Big Trees to specifically tackle tree problems. To make money, we work with organizations or companies to help them take care of the trees in their area; one example is Central Chidlom. It seems that demand

for arborists is now rising as people have started thinking about the right ways to treat urban trees. Though I had already studied Conservation Biology, the school made me realize our knowledge of urban trees is still just developing. Apart from posts, likes and shares, how else can we help protect trees? Oraya: It’s all about education. We regularly organize courses at Urban Tree Care School to create more arborists. The main reason we formed the company was to educate people on how we can make the city better by taking care of trees. When a tree falls, people are quick to blame the tree but they don’t realize that improper care can lead to a tree’s roots shrinking. There was a successful case in the Taladnoi neighborhood where people were afraid that a giant banyan tree was making the area too dark and that it would fall when a storm hit. Our school helped them trim the branches and now the community is cery happy with it. Interview by Monruedee Jansuttipan

It’s not all work for the booming neighborhood, though. In Bangkok’s fastest growing neighborhood, balance is everything, with healthy cafes and quirky gyms popping up in the shadows of soaring office buildings. Bangkok’s Northern neighborhood of Ratchada is undergoing a deep transformation set to position it as Bangkok’s newest business district. Free from the permanent gridlock that ensnares the traditional Sathorn/Sukhumvit axes, Ratchada is where upwardly-mobile professionals are redefining the balance of work and play in the capital.

Ratchada’s big boom is being spearheaded by key projects G-Land and the Super Tower. The latter is a 615-meter-tall, 125-story high-rise that will single-handedly reshape the city’s skyline, becoming its tallest structure. With 24-hour office facilities, LEED platinum energy efficiency and a sweeping observation deck, Super Tower would be right at home in Tokyo or Singapore. The tower is also part of a wider development which includes the G-Land office building, and totals 1.2 million sq meters of constructed space, effectively making Ratchada a regional business center for ASEAN.

Speaking of drinks, Ratchada is a neighborhood that believes in playing as hard as it works. At Mustache Bar, you can end your workweek to thumping electronic dance music (think Glow and BEAM) with enough space for you to actually get your moves on (there are two floors, and a rooftop soon to turn into a dining venue). And by “play hard,” we mean the place stays open till very late hours.

Balance is everything. So after your Friday night excesses, Ratchada will also lure you into a bit of healthy activity with fun, new offerings like Bounce, which claims to be the biggest trampoline park in Asia (5,600 sq meters). The play zones in Bounce vary from different activities to levels of difficulty such as Free Jump (for newbies and kids), Slam Dunk (where you can channel your inner Michael Jordan), and Wall Run (for pros who have mastered trampoline jumping).

An exploration of ramen culture in Bangkok. By Natcha Sanguankiattichai

The heavy blend of springy noodles, rolls of fatty meat and rich, salty broth make a good bowl of ramen something close to comfort food Nirvana. And thanks to Bangkok’s massive Japanese community, we’re blessed with pretty much every ramen style out there. Here’s what you need to know about the major ramen regions of Japan, and where you can taste each style without leaving town.

Tokyo Ramen

RAMEN INGREDIENTs

Broth

Broth is the core of ramen. The base defines a ramen’s flavors well before seasoning. Typical broth bases range from animal bones like tonkotsu (pork bones), tori (chicken bones) and gyokotsu (beef bones) to gyokai (seafood) and lighter variations made from sea kelp and dried seafood. Ramen is also defined by its heaviness: either kotteri (rich) or assari (light). The heavy, opaque kotteri broth, also known as paitan, results from long-boiled bones while the clear, thin assari broth is made of vegetables, seafood or brieflycooked bones.

Traditional Tokyo ramen typically features curly noodles in a dark, clear shoyu broth made of pork and chicken bones. This broth is sometimes based on seafood and dried fish. Hakata Ramen The much-loved tonkotsu broth originated in Fukuoka prefecture in the southernmost Kyushu island. The result of cooking pork bones over a rolling boil for extensive hours, the thick creamy broth is packed with fatty goodness and deep flavors. Sitting atop firm, thin noodles, you’ll usually find roast pork, scallions, seaweed, pickled ginger, garlic and pickled mustard greens. Tare

Tare (seasoning essence) adds flavors and character to the bowl, and can be mixed into the base or added later. Though all three of the main essences sound like they only account for saltiness, there are subtle differences. Shoyu (soy sauce) is the most common type and it benefits from round flavors and umami. Shio (salt) makes for a clearer and lighter soup both in terms of taste and color. Miso (soybean paste) adds body and pungency to the soup, resulting in bolder texture and flavors.

Noodles

Noodles are made from wheat flour, water, salt and alkaline water, and vary in details—from thin to thick, straight or curly, texture and chewiness—to go perfectly with different soups. Some shops also let you pick the firmness of your noodles.

Sapporo Ramen Located in the Northern Hokkaido island, Sapporo is home to one of the newer styles of ramen. Characterized by a thick miso-based broth, the ramen is topped with ground pork, bean sprouts, cabbage and corn, which are fried in the miso beforehand. Hakodate Ramen It’s believed that Hakodate’s shio ramen is the oldest type of ramen there is, arriving in the northern port town by boat from China in the 1950s. Slowly boiled over a low flame, the mild yellow chicken and pork (or sometimes seafood) broth is the lightest of all thanks to the clear seasoning. The bowl features medium-sized noodles and comes with standard toppings like roast pork, scallions, bamboo shoot and seaweed. Chashu (roast pork) is one topping you can find on almost every bowl of ramen, usually prepared by simmering pork in sweet soy and mirin (sweet rice wine) until tender. Ajitama (short for ajitsuke tamago, [seasoned egg]) sees a golden half-boiled egg marinated in soy sauce and mirin, which comes out slightly salty and sweet. Nori (dried seaweed sheet) is there to add a subtle seaside aroma and a little crunch between bites. Scallions are chopped and sprinkled over a bowl of ramen to power it with pungency. They're also the most typical topping in every bowl of ramen.Menma (pickled bamboo shoot) combines a crunchy texture with a slightly sweet flavor.

A

way from the tourist bustle of Bali’s beaches, Ubud has forged a reputation as the island’s cultural heart. Here, nature and tradition meet modern art and dining. Take note of this whistle-stop tour.

Day 1: Nature Adventures Trade the waves for some white-water rafting on Ubud’s Ayung River, the longest in Bali. Several companies operate rafting services; we tried Bali Toekad Rafting (balitoekadrafting.com) who offer all the necessary gear, meals, lockers and showering facilities. The river winds its way through scenic rice fields and offers class II rapids so all you need are basic paddling skills (though beware they can rise to class IV during the reainy season from Nov-Mar). Along the route, you will witness beautiful waterfalls, dense forests and giant rocks carved with the Ramayana epic. The white water rafting trip starts at US$75 (B2,682), including lunch, or you can go tubing for US$69 (B2,467). Try both adventures for US$95 (B3,397). Afterwards, enjoy the more peaceful views of the nearby Tegallalang Rice Terraces. These iconic rice paddies are a result of subak, a Balinese irrigation system dating to the 9th century. This system is even heritage-listed by a UNESCO, though this officially refers to the original subak system at the 18th-century Royal Water Temple of Pura Taman Ayun to the southwest of Ubud. If you still have energy, spend your afternoon at The Sacred Monkey Forest Sanctuary (monkeyforestubud.com). This large, garden-like sanctuary aims to conserve the area based on the Balinese philosophy of Tri Hita Karana (“three reasons for prosperity,” which refers to harmony among people, nature or environment, and God). Though the sanctuary offers a tranquil escape, just be aware the monkeys can get aggressive if they see you carrying food. One of the greatest dinners on the island can be found at nearby Laka Leke Restaurant (www.lakaleke.com), which serves the likes of bebek putu (roasted duck with sauteed vegetables served with rice at a well-priced IDR 105.500 [B276]) alongside a variety of superb Balinese dance performances. The fire dance is stunning, in particular.

Day 2: Art Exploration Start your art wanderings at The Neka Art Museum. Founded by Balinese teacher Suteja Neka, the museum is the place to go to trace the origins of Balinese painting, with one piece even dating back to the 19th century. Next stop is Don Antonio Blanco Museum (blancomuseum.com), whose founder, Spanish painter Antonio Blanco, was dubbed the Salvador Dali of Bali. Known for sexually-charged, often-controversial depictions of Balinese women, the painter used to live in this giant mansion with his Balinese wife and four children. Take lunch at Rondji Restaurant (rondjirestaurantubud.com), which is situated at the entrance of Don Antonio Blanco Museum. They serve fine modern Balinese and European dishes with wonderful terrace views of the rice fields. If you head there on Sunday, you can enjoy a barbecue brunch, too. Just 10 minutes’ walk away is Museum Puri Lukisan (museumpurilukisan.com). Opened in 1956 by Dutch artist Rudolf Bonnet, Tjokorda Gde Agung Sukawati, the former Prince of Ubud (1910-1978), and his brother, Tjokorda Gde Raka Sukawati, the museum hosts a one-of-a-kind collection of Balinese paintings and woodcarvings. Now, it’s also active in hosting exhibitions for emerging artists. The museum’s cafe and bookshop are well worth a look too. Another art-centric venue nearby is Agung Rai Museum (www.armabali.com/museum), which gathers works from Balinese, Indonesian and foreign artists amid exquisite botanical gardens. After all that browsing, spend some money wisely at Ubud Market. Recently in the headlines for the wrong reasons (one section caught fire in March), the market is packed full of arty souvenirs and real-deal artworks. From there, you can easily head to Ubud Palace to witness its gorgeous Balinese architecture. For dinner, make your way to Bridge (bridgesbali.com), one of the most reputed restaurants in Ubud. Serving mostly modern Balinese cuisine, the restaurant’s highlights include the mixed vegetables and marinated tempe with green curry and lontong (pressed rice) at IDR125.000 (B327). They also have a gluten-free menu.

The vibe: From locally-brewed craft beers to crumbling walls, this new Chinatown shop-house-turned-bar ticks plenty of boxes. The quirky name comes from a Game of Thrones quote—“Kill the boy and let the man be born”—that’s meant to symbolize the bar’s position operating on the fringes of legality. Let the Boy Die was the first bar in Bangkok serving Thai craft beer and it’s run by architect-turnbrewer Pieak Pipattanaphon, founder of Golden Coins brewery, and Avi Yashaya, the guy behind the Brewtopia beer meetups.

The vibe: Craft n’ Roll began as a lifestyle website featuring stories about cute cafes, crafty local brands and beer. Then they developed their own weekend festival in Kanchanaburi featuring a long list of local brewers including My Beer Friend and Chit Beer. Now, the same team has found a permanent spot by the Chao Phraya River (where To-Sit Pier 92 used to be) to pour craft brews on tap alongside burgers in the cafe zone, as well as handmade products in shop zone.

What’s on tap: Since the bar is also Golden Coins’ first distribution point, you can expect to see at least one or two of the brand’s beers on the rotating six taps—just check the board. Other regular guest beers include X Beer, Triple Pearl, Serious Panda, Mahanakorn and Soi Beer. Prices start from B160/pint.

The vibe: Colorful and casual, mixing the style of a fast food joint with a beer bar. The owner, Ted Ahn, is a former engineer from Korea who left the industry to pursue his passions for craft beer and Korean food, and now dishes out Korean-Mexican fusion dishes alongside craft beer on taps and in bottles.

The vibe: This oddly named bar is kind of like the younger brother of Craft n’ Roll. Its founders are part of the same team, but have switched from the riverside to the trending streets of Ladphrao. Where Do We Go is a tiny, loft-style bare cement room that’s decked out with huge wooden furniture and hanging bulbs.

What’s on tap: From two taps pouring Brew Dog and Evil Twin, Ted’s selection has grown by a further six dedicated to Thai beers. Check out Sandport’s Too Much Coffee porter and Roselle Red ale, Outlaw’s Belgian Blondie ale, and Happy New Beer’s Hardcore IPA and Thai Wit. Prices start from B180/pint.

What’s on tap: Four taps are available here and, again, beers rotate after each barrel runs out, so check their Facebook page or chalkboard on every visit. On their first week of opening, they had Sandport Summer Pine and Happy New Beer Thai Wit on the taps.

Chit Beer has been sitting on the island of Ko Kret in the Chao Phraya River since 2012. Its owner, brewer Wichit Saiklao, was one of the very first people to kick-start the homebrew scene in Thailand. Originally a bar selling all his brews on tap, the place has since evolved into the Home Brewing Academy, after many people came to learn from him. Now Wichit is also gearing up to open the Mitrsampan Brew House as an academy and brewery for other brewers, too.

Founded by Sukij Thipatima, who has over 10 years’ experience in the booze industry, Full Moon Brew Work opened its doors in 2010 as probably the hippest microbrewery on Phuket. Decked out like an American beer bar with big wooden furniture and exposed cement, it offers rotating taps serving the likes of Phuket lager and Andaman dark ale. Now Sukij has expanded to produce bottled beer, too, and is behind the legally recognized Chalawan Pale Ale.

Namton is a cute wooden house and garden that combines plants, vintage decor, nitro cold brew coffee and craft beer. The bar offers Western beer-friendly dishes from pizzas and burgers to barbecue to go with 15 craft beers on tap and over 50 labels by the bottle. The on-tap selection is mixed between imports like Brewdog Dead Pony pale ale, Rogue Brutal IPA and Stone Go To IPA, and local brews from My Beer Friend wheat beer and Happy New Beer double IPA.

We were surprised to learn that the Thai craft beer scene had spread out from Bangkok and Chiang Mai to reach Ayutthaya, too. Brown Ale is a tiny but solid bar that reminds us of Banglampu’s Adhere the 13th blues bar thanks to its soundtrack of blues, folk and jazz. They offer 16 taps of local craft brews from Happy New Beer, X Beer, Soi Beer, Eleventh Fort, Sandport, Silom Beer, Triple Pearl and Cup G plus many more available in bottles.

Cocotte Steaks and juicy rotisserie chickens in a modern bistro setting. The buzz: The former head chef at D'Ark, Jeriko Van Der Wolf, has moved on to become the chef-partner at this new rusticated steak and roast specialist on Sukhumvit Soi 49. The decor: For somewhere with food so rustic, the dining room is surprisingly dynamic, with a flashy red bar and chrome Philippe Starck stools contrasting with farmhouse knickknacks from canvas bread baskets to cockerel weather vanes. An open-plan kitchen stands at the back of the dining room, dominated by a French rotisserie oven. On one side, there’s a deli kiosk dedicated to more than 15 selections of European cheese and cold cuts. There are also a few seats on the front terrace. The food: You’ll want to visit Cocotte with a big group of friends, or at least a big appetite, as the star dishes here revolve around

hefty portions of meat and poultry, be it a rotisserie-roasted half chicken (B380), 1.4-kg Australian wagyu tomahawk (B2,990) or Sloane's pork chop (B380), for which the chef adds wood chips to the grill for a heady aroma. If you’re not in the mood for slabs of meat, go for the Crispy Pig (B440), tender-roasted pork belly with honey-beer glaze and caramelized apple, or the barbecued camembert with truffle (B530), served hot with chargrilled bread and a green salad. We’re also impressed by chef Van Der Wolf’s veggie dishes. The yummy Happy Vegetables salad (B360) features 12-15 kinds of Royal Project vegetables, all cooked differently with cabbage vinaigrette. The dessert list covers easy treats like lemon-mint meringue tart (B220) and 70-percent dark chocolate lava with pineapple confit and vanilla ice cream (B220).

The drinks: To go with the meat, there’s a large selection of red and white wine (starting at B190 by the glass) as well as Champagne (B490/ a glass of Moet & Chandon) and sparklings. Aside from classic cocktails (B200-220), the bar team can mix up signatures like Cocotte Fuel (B290) which comprises paprika margarita with grapefruit, tequila, magueyes, triple sec, syrup and lime juice served in a mini fuel tank. Why you should care: With no shortage of Bangkok places offering massive juicy tomahawks on their menu, Cocotte flies right up there with the best of them. Located behind Central Silom, on the ground floor of Silom Terrace, this sushi restaurant feels like it strayed from its buddies on Soi Thaniya. The whole place just feels geared towards a non-Japanese audience, in marked contrast with its nearby competition, while the carefully prepared, fresh raw fish they claim is sourced from Osaka, rather than Tsukiji, Tokyo. The menu is Englishonly; there are only three booze options (Asahi B100, sparkling sake jelly B300, nama sake B480); they do five Thai-fusion salads, dubbed “yumthai”; and judging by social media posts, their best-seller seems to be an “XL” platter of sliced salmon (B540). The decor, too, seems to be trying something new, although the white farmhouse chairs and wispy illustrations on massive blackboards aren’t exactly

daring. Still, we wouldn’t call Teru inauthentic. Unlike its sister venue in Asoke, the menu here is clearly focused on sushi and sashimi—sans breaded pork cutlets, diced wagyu steak or bowls of ramen noodles. And the beautifully presented “Fish, Fish, Fish” (B1,500) is a generous display of fatty tuna, raw shrimps, salmon (both blow-torched and raw), plump scallops and other such sashimi favorites. It all tastes on par with similarly priced competitors, and the execution just feels cleaner and more precise than in heaving joints like Sushi Masa. We also recommend the raw squid (B80), mushroom broth (B30) and “isumedai usu” (B120), a carpaccio of red snapper with a tasty ponzu sauce on the side. As for the more complex and fusion-y avocado roll (B250), the results are a bit on the mushy and sweet side of things, showing the limits of the small counter’s two sushi-ya. Their rice is good, but the texture could be firmer; and their tamago is a tad too sweet. Given the drinking menu (or lack thereof), Teru is a rather sad and quiet experience in the evening. But with beautiful lunch sets from B180-280, this is the kind of place everyone wants at the foot of their office building.

The Glasshouse @ Sindhorn is a glitzy pavilion of soaring, angular glass units populated by high-end restaurants and cafes. Cafe Milano, the development’s Italian offering, trades in satisfying bistro-style dishes that don’t try to rewrite any rules. They call it “home-style” food, but really there’s nothing too domestic about elegant portions of prettily swirled linguine and neatly plated prime-cut proteins. Most of it though is perfectly well-executed, with the o cc a s i o n a l d i s h t h a t exce e d s expectations. The crabmeat linguine comes in a beautifully balanced saffron sauce that’s also packed with shellfish flavors—delicious. There are other highlights, too: a veal Milanese (B850) with two tender and perfectly fried slabs of meat sitting beside a richly flavored fettuccine arrabiata; a thickly-set, vanilla-forward raspberry

panna cotta (B220) paired with a sharp and refreshing lemon sorbet; a bistro-end-of-the-scale wine list that’s all offered by the glass and never goes above B1,400/bottle. When things aren’t so successful they’re still never truly bad, just nothing to get excited about. The pizza (B350-490) is a wafer-thin, slightly cardboardy affair that would never make anyone’s delivery speeddial. The burrata (B350) lacks any spilling, gooey butteriness but comes dressed in a rich lemon-and-basil vinaigrette to make it a perfectly pleasant eat . Enough with the complaining, though. The service is efficient and unobtrusive, the dining room polished to an immaculate shine and the seating comfortable, intimate and not overlooked by any other tables. The crisp, red lacquer panels, sculptural contemporary chandeliers and fastidiously kept open kitchen conjure a high-end bistro ambience that fits well with the location—surrounded by the kind of offices where the workers can afford a decent lunch. That’s also when you’ll find Cafe Milano at its most lively thanks to B490 threecourse lunch sets. This might not be a restaurant pushing any boundaries, but well-cooked food at the right price in a space that feels kind of special suit us just fine.

WHY NOT Make a Creative Impact This Jun 4, the Stock Exchange of Thailand hosts Creative Citizen Talk 2016: Creative Impact, an event inviting individuals and businesses who want to make a creative difference in society but aren’t sure where to get started for an afternoon of talks and discussions with 10 of the city’s creative leaders. The event will also feature an Impact Market, where visitors can shop from 26 social enterprises and support their goals. The 10 speakers who will share stories about their experiences and provide first-hand advice from their journeys to success are: Wongtanong Chainarongsingh, founder of A Day Foundation; Maythawee Tasanasatiankit, founder of The Guidelight (a foundation to provide education for visually impaired students); Chanchalard Ganchonwongse, founder of Grey Ray Stationary (an eco-friendly stationary brand); Sanon Wungsrangboon, co-founder of Once Again Hostel (a creative, hip hostel in Bangkok’s old town); Acheeraya Tumpreepatra, co-founder of Hivesters (an online space for travelers who want to protect the environment); M.L Warut Worawun, an artist whose work supports natural disaster victims and community rebuilding; Aireel Traisarnsri, founder of Art.for.Cancer Wiriya Wijitwattakarn, co-founder of GSSE (an international program of Global Studies and Social Entrepreneurship for young adults); Unawun Tungkarnwakoon, owner of Yuna (an eco-friendly fashion brand); and Teerasit Amornsansook, manager of Insee coffee (which helps protect rainforests). SPECIAL SCREENINGS This Jun 4, The Thai Film Archive hosts a special screening of Josh Kim’s 2015 film, Pee Chai–My Hero in an event dedicated to exploring and discussing the conflict between civic duty and aspects of personal life for Thai men, such as their sexuality. The confrontational film was selected as Thailand’s entry for the Best Foreign Film category at last year’s Oscars, and follows the life of Ake who fears his upcoming military draft due to both his secret homosexuality as well as the thought of leaving behind his dependent mother and younger brother. The screening will be followed with a discussion led by Dr. Kasem Petpinant, a philosophy lecturer at Chulalongkorn University, who will cover the topic “Freedom of rights between citizenship and the military duty.” Screened in Thai. 1pm.
