A checklist of BK Magazine’s most important discoveries this week. Beam wants to turn you into a music producer for free The Thonglor nightclub is going out of its way to help you become a music producer. In league with the Collect/Save music collective, they’ve been hosting these cool free workshops where they invite music producers to come and give lectures. We went to the second edition last Saturday with Italian producer Stefano Ritteri. It was awesome, and Bangkok’s DJ community seem to think so too—the thing filled up fast! Follow www.fb.com/collectsave if you don’t want to miss out on the next one. Daniel Thaiger is taking over Opposite’s original home Our favorite wedge of space on Sukhumvit Soi 51 will again be the site of much merriment when the folks behind our favorite burger truck open Crying Thaiger in mid-September. According to founder Mark Falcioni, “American steakhouse burgers,” steaks, cocktails, craft beers and rooftop parties await. Thailand Tobacco Monopoly park is actually happening Looks like the 10-year plan to turn the Thailand Tobacco Monopoly into a park is in order. Now that its operation has moved to Rojana Industrial Park in Ayutthaya, the prime plot in downtown Bangkok is finally getting its long-awaited green treatment. OK, so from what we can see most of the efforts have so far gone into revamping the parking lot, but some old cement buildings and an ugly metal fence have also made way for a grassy area and shady trees. Beard Papa is back! The choux-cream-bun-making fisherman from Japan is setting sail to Bangkok once again. But this time don’t expect to see his bearded, Sou’wester-wearing face at Paragon. As of Aug 13 he’ll instead be tucked away somewhere called The Mall Bangkapi. If you know where that is. Little Bao’s salted caramel ice-cream bao is divine On our first night at the much anticipated Bangkok branch of Hong Kong’s Little Bao (72 Courtyard, Soi Thonglor), the power went out for 20 minutes—not that we got a free drink or anything—and half the dishes were too salty. But dessert made it all worth it. Sandwiched between two deep-fried buns is a puck of vanilla ice cream by Guss Damn Good, the lot drizzled in salted caramel. As for the green tea version? No thank you.

HOT OR NOT

Hot: Hazing

Not: Studying

As August rears its sticky wet head once more, so does the outcry from civilized society about the ways students are willing to abuse their new peers. This term’s degradation techniques come courtesy of Ramkamhaeng university, where freshmen have had to brush their teeth with chili paste and have their nipples rubbed with what looks like a cheese grater—treatment some of these kids will be paying good money for when they’re older.

Hot: Jamie Oliver

Not: Concept restaurants

There’s still space in this town for restaurants that aren’t Latin-Korean/aged-negroni/craft churro specialists. It’s now official that Jamie Oliver is set to arrive here with a plain-old, honest-to-goodness Italian restaurant. Pizza, antipasti, carne, you get the picture. We have no idea how long you’ll have to wait till it opens, but until then you can delight in the lukewarmth of online reviews for every other Jamie’s Italian in the world.

Hot: Working for yourself

Not: Working for other people

The guy from Vogue Lounge, Hideyuki Saito, has let slip he’ll be leaving those swanky, plum leather confines and shuffling on over to Thonglor to open his own spot. Similar news comes from behind the bar at U.N.C.L.E., which Sebastian De La Cruz has announced he’ll be leaving to go do his own thing too. For advice on how to ditch your own employer, flip to page 6.

Hot: Shopping online Not: Shopping in person Bangkok moved one step closer to the rest of the world last month when Uniqlo announced the unthinkable: online shopping, with a returns policy that for once lets you actually return stuff. Then there’s all the guys in this week’s cover story, who are thinking up new and easy ways for you to over-extend your credit limit electronically (see page 6).

THAT’S WHAT SHE SAID

INTERVIEW Marathons and fun runs are all the rage in Bangkok, and 2016 marks the first year ever that Thailand will send marathon runners to the Olympics. Earlier this year, Jane Vongvorachoti, 32, and Natthaya “Fon” Thanaronnawat, 37, booked their places at the Rio 2016 Olympics starting Aug 5. Before they jetted off, BK caught up with them to discuss life on the track. What inspired you to start running? Jane: I was a footballer when studying in the US and decided to take training seriously in order to run faster on the pitch. I fell in love with running soon after as it helps me relax. After running many marathons, I contacted the Athletic Association of Thailand to join the national team last year. Fon: While playing basketball at junior high in Lamphun, I would be punished for indiscretions by being made to run laps around the basketball court! It was then I started to weigh up the pros and cons of solo versus team sports. When you play as a team, anything you do will impact your teammates. But with running, you alone must take responsibility. I joined the national team in 1995 but dropped out in 2011. I didn’t feel like I could make it, plus I needed to take care of my daughter. What made you come back? Fon: I must thank our coach, ex-Kenyan runner Peter Titi Matu, who asked me to join the team again in 2014. I was surprised. I’m old. Why did they need me? He convinced me age is no obstacle for long-distance running. That lit my fire. I finally won my first, and Thailand’s first, SEA

Games gold medal for marathon running last year. How did you qualify for the Olympics? Jane: The qualifying window was open from January 2015 to July 2016. I chose to run at the Houston Marathon in January this year, and Fon joined me, too. I ran a 2:42:19, while Fon ran a 2:44:45, which was enough to qualify [the women’s entry mark was 2:45:00]. What’s your most epic running experience? Jane: It must be my personal best run at the Chicago Marathon in 2014, where I finished with a 2:40:40. I was so happy to run a time that was good enough to qualify for the Olympics, even if it wasn’t in the qualifying window.

Jane: Marathon runners don’t get much support from sponsors here. They don’t get why we need to ask for four pairs of running shoes. We run at least 2-3 hours a day which causes a lot of wear and tear on shoes. What’s your training routine? Jane: We’re normally based in Chiang Mai. We start training at 5am. The highlight here is we get to choose from beautiful routes like Huay Tueng Thao reservoir and Doi Suthep. The different terrains and trails help prevent injuries compared to running on stiff surfaces like concrete. Chiang Mai’s high altitude also helps build lung capacity.

Fon: Mine was the Houston Marathon. I never thought I’d make it to the Olympics, but I did!

What else has marathon running taught you? Fon: Running has shaped my life from a young age. I ran to get a better chance at education and employment, and it’s certainly helped.

What are the struggles of being an athlete here? Fon: The main obstacle is you need to find a way to make a living on your own, even if you’re a national athlete. Now I work at a municipal office in Lamphun as a clerk.

Jane: The critical point of running a marathon is around the 35-37km mark. Your body will feel as heavy as a rock. But it’s a lesson for life: pass it and you will only be stronger. Running has taught me to set goals and achieve them at all costs. Interview by Monruedee Jansuttipan

Just Getting Started Why now is the time to get involved in Bangkok's startup scene. by Bonnie Sananvatananont

B

ack at the end of April, a crowd of 10,000 people filled the grounds of Queen Sirikit Convention Center for four straight days for what has so far been one of the biggest and most energetic conferences of the year: Startup Thailand. Packed in the exhibition halls were teams from over 180 budding Thai startup companies hungrily sharing their business models to investors, fellow entrepreneurs and even potential comptetitors. Organized by the Ministry of Science and Technology, the four-day exhibition was a microcosm of the entrepreneurial ecosystem that has taken over Bangkok in the past five years, a city whose number of startups funded by a venture capital firm or angel investor has grown from three in 2012 to 72 in 2016. With the success of Startup Thailand and many other startup-related events (Thailand Startup Week, TechSauce Summit, Echelon Thailand), the number of co-working spaces popping up daily and the rise of venture capital firms in the country, Thailand is becoming a regional startup hub with rising potential for investment.

Booming Investment Among the country’s most prolific startup investors is a Thai branch of the Californiabased venture fund group 500Startup, dubbed 500Tuktuks (www.500.co), whose B520 million fund size hopes to groom up to 60 local startups within the next two years. “We believe that within the next 5-10 years, Thailand can produce a ‘unicorn’ [a startup valued at over $1 billion], which means that we need to find that contender right now,” says venture partner Krating Poonpol, whose team has already funded 20 startups so far, making it the most active VC in Thailand. “One of the main things missing in Thailand’s startup scene previously was funding, but things are looking up now. Because we are merged with the Silicon Valley branch, we believe we can provide a solid runway for Thai startups to go global. Plus, the fact that local competition is so low means that there’s potential for all sectors to grow, whether that’s tech, food or ecommerce.” On top of VCs and angel investors, even the government is getting on the bandwagon, w i t h I C T m i n i ste r U tt a m a S ava n aya n a announcing back in April that he would launch a $570 million (almost B20 billion) venture fund to boost the number of startups, which

WE BELIEVE THAT WITHIN HE NEXT YEARS, THAILAND CAN PRODUCE A'UNICORN', A STARTUP VALUED AT OVER $1 BILLION, WHICH MEANS WE NEED TO FIND THAT CONTENDER RIGHT NOW Krating Poonpol, 500Tuktuks

currently sits at approximately 1,000-2,500, up to 10,000 by 2018. In July, the government also announced plans to make Thailand the startup gateway of Indochina, an initiative headed by the Information and Communication Technology Ministry with two events taking place in Chiang Mai this month (Aug 5-7 and 26-28) that aim to connect startup businesses in Thailand, Cambodia, Laos, Myanmar and Vietnam. Further support comes from communities such as Asiola (www.asiola.co.th). A startup company itself, Asiola focuses on crowdfunding creative local projects by individuals and groups. “We aim to help people at all levels— whether that’s starting level, equity level or beyond,” says CEO Jon Lor, whose business has crowdfunded projects ranging from large-scale graffiti works to a rap bootcamp with Thaitanium. “I also started this journey on the other side of the fence,” he explains. “I had a lot of ideas but I didn’t know where to start. Here, we want to try and encourage that smartly. Crowdfunding can validate ideas in a low-risk way. If you have a good idea, great! Let’s put it to the test and see if people are willing to spend money on it.”

cover story starting out So with all the factors lining up, what should entrepreneurs be doing right this second to make a move in the startup scene? Amarit Charoenphan, CEO of Bangkok’s first ever co-working space, Hubba Thailand, refers to the concept of an “entrepreneur’s journey.” “You begin by being inspired by an idea,” says Amarit, “then you learn as much as possible about the idea and all its problems, which leads to forming a team, forming a business model, scaling up to meet maximum success, and then reaching the top as the lead organization in that field,” he says. From an investor’s perspective, Krating Poonpol of 500Tuktuks suggests that the team members are the most crucial ingredient. “The first thing I do is feel the energy of the team and ask myself; would I want to join this team? Then comes their knowledge and skill to implement the startup idea. I ask myself; could I compete with these guys? Can anyone compete with them? Is there anyone better than them? If the answer is no, then it’s a startup worth investing in.” It seems, however, that the crucial first steps are often where most startup teams trip up. “Many people tend to skip the learning phase and create the product way too soon. Without enough of a foundation in the idea, how it works, what it needs, what its problems are, it’s very easy for the startup to fail,” says Amarit. Another obstacle is having to teach the market about your product, says Asiola CEO Jon Lor. By attempting to introduce new concepts to the market, whether it is crowdfunding or ordering food through a bot, a lot of it is about pitching why Thailand needs and is ready for that product. “Trust can be a problem at the beginning when it comes to startups,” he says. “Be transparent with all the success stories, communicate your growth and encourage people that they can be a part of it. As the company starts to grow and evolve, you constantly have to reinforce your idea and your story to people so that they can understand it and, more importantly, use it.” Despite the problems all startups are guaranteed to face, Krating reiterates that businesses should never call it quits. “Startups are all about pivoting, adapting and growing— constantly shifting your business model to better suit the market,” he says, referring to Instagram as an example of a product that started as one thing before getting acquired by Facebook and turning their business model around. “If you’re not willing to adapt your product along with the market, if you’re ready to call it quits, the startup scene might not be for you.”

Co-Working Spaces

Asiola

Co-working has taken off in a big way in Bangkok, representing a new, communally -minded way of doing business. "In the past, people were afraid that sharing business ideas would lead to other people stealing it," says Amarit Charoenphan, CEO of Hubba Thailand, the city's first co-working space. "For entrepreneurs, going to co-working spaces is like footballers going to football fields: you're in a community of like-minded people who can share ideas and support one another". Here are some of our favorite spots in the city:

Golden Year 2016 is looking like the golden year for Thailand’s startups, with things bound to go up from here. But is there anything still missing? There seems to be one consensual answer among Thailand’s startup community: the need for Thais to start using, working for, and relying on local startup products. “In the West, startups have a cool, excitable air about them, while Thai graduates seem to be a lot more conservative,” says Nick Morgenstern, CEO of Ginja Thailand (www.ginja.co.th), whose food delivery service boasts the first commerce application of Facebook Messenger bot technology in Southeast Asia. “Many people still want to go and work for big established companies, as it seems more secure.” This problem extends onto the consumers themselves, many of whom still feel doubtful when choosing to use products from a startup company. “We always go for the established Japanese or Western brand, we don’t support our own entrepreneurs or ideas,” says Amarit of Hubba. “What we’re left with is a digital economy that uses other people’s products, which means it’s that much more difficult for homegrown talents to find their way onto the global map.” But differing consumer behavior between the West and Thailand is exactly where startups can find fertile ground for business potential. “People transact money in a very different way here compared to the UK or Australia,” says Morgenstern, whose food delivery service Ginja is adapting an international model to the local market. “Here, people use Line to do customer service, to do e-commerce, to complete deals.

Conversion rates are so much higher than websites—not to mention storefronts. “In Thailand, people go straight onto Instagram to find a product and then use Line to negotiate and transact the deal. With a 147-percent mobile penetration rate and 38 million 3G users, it seems that technology and social media are the tools that Thais use to satisfy their demand for convenience, leading to demand for tech-based startups to be higher than ever before.” With Bangkok’s startup scene still in the early stages, the city still provides fertile ground for anyone seeking startup business opportunities.

Make sure you order the succulent 1.1kg tomahawk of Charolais beef, cut from a cow which spent the last 365 days of its life fattening up on grain and served in great slices each big enough to count for a steak in itself. Get some mac ‘n’ cheese (B500), charred bone marrow (B500) and a house salad (B350) to go with, then remind yourself you're still on Thailand’s Eastern seaboard with the killer views over Na Jomtien Beach—best enjoyed from the after-dinner deck with one of their Negroni 1919s (B350).

Brekkie

Toby’s

The acai bowl (B260) at Brekkie

The Miang Kana at (B150) Baan Phadthai

Despite the name, Brekkie goes well beyond breakfast to serve healthier options of hearty dishes all day long. Ingredients like quinoa, avocado, spirulina, flaxseed, acai berry and chia seed dominate the menu, whether it’s in their selection of Superbowl foods, their extensive breakfast menu, or their sandwiches. We recommend the acai bowl, a healthy serving of acai berry, banana, mixed berries, blended with cold-pressed apple juice and topped with homemade granola and chia seeds (B260).

Charoenkrung’s new pad Thai restaurant places a big focus on delicious phad thai, but a healthier choice on the menu is the miang kana (B150), in which they switch from the usual betel leaves to Chinese kale leaves, served with other ingredients like shallot, ginger, chili, lime and peanuts in a basket. Topped with the homemade sauce, this is a much healthier alternative to the traditional Thai snack.

The Asian quinoa slaw (starting B120) at Tonic This sit-down salad bar is perfect for health-conscious eaters thanks to its specialty pre-mixed salads featuring vegetables and grains with no granulated sugar or oils other than coconut and olive oil. Among their constantly rotating mixtures, try the Asian quinoa slaw, which puts a healthy, vegetarian-friendly twist on the coleslaw by using quinoa seeds and local vegetables. Prices start at B120 for two kinds of salad. Add a third for B20 and protein for B50. Tonic, Baan Phrompong, Sukhumvit Soi 39, 084-424-9454. Open Mon-Fri 9am-8pm; Sat 10am-4pm. www.fb.com/tonicbkk

The tomato and fig salad (B270) at Toby’s This all-day Australian breakfast joint serves breakfast staples and specialty coffee, and just recently launched a dinner menu that focuses on small plates perfect for sharing. We recommend the tomato and fig salad served with feta, goat cheese, herbs, olives and walnuts with honey balsamic dressing (B270). Pair it with any of their small meat plates—whether it’s the grilled chicken with honey mustard sauce or the baked eggplant, tomato salsa and crab meat dish—for a healthy marriage of everything you need in a balanced diet. The vegan “Zoodles” (B250) at Veganerie Concept The second branch of the well-known dessert shop is a vegan’s heaven, to say the least, thanks to their focus on delicious savory dishes free from meat or dairy. For those craving a bit of guilt-free Italian, try the vegan “Zoodles”, which use zucchini, fresh tomatoes, soy sausage, pasta tomato sauce and vegan nut parmesan. Veganerie Concept, 35/1 Soi Methi Niwet, Sukhumvit Rd., 02-2588489. Open Mon-Sat 7am-10pm; Sun 8am-10pm. www.fb.com/ VeganBakeryBangkok Tonic

You’ll find nothing but Thai design at new multi-label store Swimmy, a minimal store on Ekkamai that pulls together brands from Facebook, Instagram and Chatuchak Market, as well as fashion finds from Chiang Mai. Products are simple, sophisticated and wonderfully priced. The elegant linen tops of local brand Makers Gonna Make, for example, are just B690—every bit the vision of crisp, natural-fabric gorgeousness. And if trekking over to Ekkamai is too much of a slog, they also have a fully functioning online shop at www.swimmy-thai.com. Watch out for craft workshops coming to the store’s second floor shortly. 32 Ekkamai Soi 12, 099-183-4183. Open daily 10am-7pm

More online shopping good news. Little Hong Kong The 20-seater Little Bao in Hong Kong is always packed out. The good news is it’s branched out for the first time with a considerably bigger American-style diner in Bangkok. Drawing on her American upbringing, chef May Chow offers a playful, fast food-inspired take on traditional Chinese fare. Beyond appetizers like lamb tartare with tofu skin chips (B360) and salted-yolk orange chicken (B220), the bao burgers are the real star here, stuffed with fillings like pork belly, crispy Sichuan chicken, fish tempura and shiitake tempeh (B240 each). Also don’t miss the ice-cream bao (B120), which feature Guss Damn Good’s creamy flavors nestled between golden fried buns. G/F, 72 Courtyard, 72 Sukhumvit Soi 55 (Thonglor), 02-392-6922

After serving up burgers to gamers for almost two years, Daniel Thaiger has moved out of Game Over Lounge. As of last month, you can no longer get those sinful, buttery burgers at the Thonglor gaming bar, owing to Daniel Thaiger’s announcement that it will soon set up its own brick and mortar restaurant (more on that to follow). To compensate, Game Over has now announced a new partnership with The Commons’ ribs specialist Meat & Bones instead, meaning you can expect the likes of eight-hour-roasted beef ribs and six-hour-roasted pork ribs, both cooked in a smokehouse with their own recipe of rubs and barbecue sauce. World Gourmet Festival returns for its 17th year at Anantara Siam this Sep 19-25. Nine chefs from around the world will stop by for 17 dinners, a sake master class and a Sunday brunch. The lineup boasts some real star power, including two-Michelin-star chefs Mauro Colagreco of Mirazur in France, Anthony Genovese of Il Pagliacco in Italy, and Shinji Kanesaka of Sushi Kanesaka in Tokyo and Shinji by Kanesaka in Macau and Singapore. If you’ve had your fill of French, Italian and Japanese cuisines, you can be more adventurous by trying a meal by Ana Ros of Hisa Franko in Slovenia (also featured in David Gelb’s Chef’s Table Season 2) or Dharshan Munidasa of Ministry of Crab in Sri Lanka. Dinners are priced from B5,000. 155 Ratchadamri Rd., 02-126-8866. BTS Ratchadamri. www.worldgourmetfestivalasia.com

Now through Aug 14, The Great Kabab Factory is spotlighting Dilli (Delhi) cuisine on its daily-rotating menu as part of the Chalo Dilli Festival. Each day, chef Mahesh Thapa rolls out a different all-you-can-eat tasting menu, priced at B850 for vegetarian and B950 for non-vegetarian. Expect exotic fare like jholdar tandoori chooza (boned chicken kebab with black pepper), jholdar sarson paneer tikka (mustard-flavored cubes of cottage cheese), Dilli ki murg mirchi biryani (traditional Dilli biryani with chicken) and Dilli ka nihari gosht (slow-cooked lamb leg with bone marrow). ON THE BAR

Sugar Sugar Ladprao’s latest craft beer bar, Sugar House Cafe, goes for day-to-night vibes. By Vasachol Quadri The buzz: This earthy cafe-cum-bar in Ladprao attempts a bit of everything, thanks to six owners with backgrounds as diverse as patisserie chef, architect and beer brewer. Tuck into sweets and smoothies in the daytime, and chill dinner dishes with Thai craft beers after dark. The decor: The wood and brick venue has a quaint farmhouse feel. The tables, chairs and even pendant lamps feature reclaimed wooden planks, while indoor plants and decorative rice sacks add rustic appeal. The curved glass windows let in lots of natural light during the day and a glass plant-house outside grows vegetables that are actually used in the kitchen. The food: Lots of spicy, Thai twists on pasta and steaks, like the jumbo-size spaghetti pad khee mao (stir-fried spaghetti with basil, B499) which can serve up to four (there’s a single portion, too, at B145). Other signature dishes include black spaghetti with spicy sausage topped with mentaiko (marinated cod roe, B145) and pork

or chicken steak with mushroom or black pepper sauce (B115). For sweets, there’s a menu of waffles and toast available all day. The drinks: Local craft beers are the real highlight. One of the partners is behind Jo+ Beer, a Chiang Khan-based brew which you’ll find on four out of the six taps: Wheat 90 hitz (B160), Chocolate Stout (B160), Smells like IPA (B180) and Amber Ale (B160). Currently, the other options are Outlaw’s Blondie pale ale (B160) and Happy New Beer’s Hardcore IPA (B180), but you can expect these to rotate regularly. There’s also Asahi on tap, along with imported bottles like Hoegaarden, Hitachino, Corona and Kirin (from B80). Nonalcoholic drinks include smoothies and “mujito” (the teetotal version of the classic mojito, B85)—pick your favorite fruit, from strawberry, passionfruit, lychee or blueberry, and choose whether to mix it with yogurt or mint leaves. 298/2 Ladprao Soi 101, 095-789-6593. Open daily noon-midnight

LOCAL BEER The brewers behind Thailand’s best IPA are growing hops in Thailand for the very first time Thailand is undergoing a native craft beer boom, and now the scene has taken one giant leap forward with the arrival of the country’s very first hops farm. Deva Farm & Cafe (www.fb.com/DevaFarmCafe) sits just outside Bangkok in Nonthaburi’s Pak Kret area, where brothers Nattachai “Ob” and Teerapat “Art” Ungsriwong grow as many as 26 different varietals of hop flower—a key ingredient in brewing beer which adds bitter or citric flavors. Ob and Art are themselves the brewers behind Devamon brewery, whose beer was recently crowned Thailand’s Best IPA (India Pale Ale) at June 24’s Beer Camp: Fight Club event (bit.ly/29lTOLZ). “It has been impossible to make beer from fresh hops in Thailand as we need to use imported dry hops from abroad in tablets,” says Ob. “Now brewers are keen to make fresh-hop or wet-hop beer, which is brewed using fresh hop flowers. This farm allows us to make it right here. It will add a fresh taste in the beer.”

18

Their hops are mostly imported from the US’s Northwest Coast, a region heavily associated with America’s craft beer movement and home to the state of Oregon. However, owing to the difference in climate, don’t expect the same characteristics you’ll find from Oregon hops in beers brewed here, they say. “For example, Mt. Hood hops have a flowery profile in the US, but when grown here in hot, humid conditions they become more citrusy,” explains Nattachai. Devanom also has plans to sell its hops in the future, but the brothers say they still need time to expand the farm and wait at least three years for the best time to harvest. In the meantime, their second batch will blossom in this August, when Devanom plans to do a farm tour and beer tasting in collaboration with the enthusiasts behind Facebook page Beercyclopedia (www.fb.com/ Beercyclopedia). OPEN DOOR

Clandestino Cantina Sathorn's Revolucion Cocktail opens its upstairs as a proper Latin restaurant. The buzz: A year in the making, the restaurant above Revolucion Cocktail has finally opened its doors to welcome guests for nights of Latin soul food. The decor: Colorful Latin character covers the walls in the form of bright murals of sugar skulls, parrots and Spanish wording. It’s easygoing and casual, with a raw construction edge and open kitchen to one side, around which diners can interact thanks to some counter seats. The food: Clandestino’s Latin cuisine doesn’t only include Central and South American fare, but extends to influences from all Latin language countries like Italy, France and Spain. Mexican chef Gabriela Espinosa’s menu is compact and goes for fun interpre-

20

tations of the cuisine. Her deconstructed Spanish tortilla (potato omelet) comes in the form of potato mousse, served in a little jar with deep-fried egg yolk and caramelized onion (B190). The salmon and sea bass tartare (tartara de pescado, B360) features flavors of ginger, kaffir lime and lemongrass marinade, topped with a coconut foam. A perilla (South American-style charcoal grill) is used to cook churrasco en chimichurri (beef striploin with chimichurri sauce, B590) as well as grilled snow fish (with chorizo, eggplant ratatouille and bell pepper sauce, B690). In addition to staple desserts like churros with chocolate (B200), we really like the pina colada (B270) served as a deconstructed tart with rum-infused pineapple, pina colada mousse and coconut ice cream.

The drinks: The restaurant shares its drinks menu with the bar downstairs. Try the signature sangria-evoking aged negroni (B330), served in a stemmed glass with passion fruit, blueberry, strawberry and soda. Why you should care: It ticks the boxes for a Sathorn after-work hangout spot—good vibes, nice decor, spot-on food and plenty of booze. Natcha Sanguankiattichai 2/F, 50 Sathorn Soi 10, 02-235-4823

NEW AND NOTED

Catch of the Day

All Yellow

With more than a passing resemblance to Taipei’s uber-cool Addiction Aquatic Development fish market, this massive warehouse is Bangkok’s newest supermarket specializing in sea delicacies. Front and center at Shinsen Fish Market (163/6 Sukhumvit Soi 39, 02-260-6511) are seawater tanks where you can see imported taraba crab, lobster, scallops and sea urchin—all still alive. Inside showcases fresh seafood and meat which you can have prepared on the spot at the sashimi or grill bars. Other supermarket finds include cold cuts, cheese, frozen food, fruits, vegetables, snacks and beverages, while there are also a cafe and shabu shabu place on the second floor.

Cute, yellow-themed cafe Make Me Mango (67 Maharaj Rd., 02-622-0899) is all about—you guessed it—mango. Step inside the two-story, single-unit shop-house and you won’t believe how they make use of the space, zoning it as if there were four stories. Enjoy treats like Make Me Mango (B185) which takes mango sticky rice to new heights with mango ice cream, Thai custard and mango pudding. They also serve mango and durian sundae (B165/B185), bingsu (from B175) and savory fare like pad Thai (B135) and grilled pork with sticky rice and somtam (B135).

This mid-2015 opening is one of Bangkok’s very best brunch spots, there is little doubt. Crowds pack out the light and airy, sun-drenched spot for flat whites (B100), coldpressed juices (B180) and eggcentric fare (try the Egg Mikado, sourdough topped with two poached eggs, cured salmon and yellow hollandaise sauce, B320), all prepped with good produce and enough eye for detail that you could conceivably be in Sydney. On the dinner menu, available from 6pm onwards, you’ll find a very different selection of salads, pastas, meaty sharing plates and the odd fusion dish that, while not quite as convincing, still largely satisfies. In Groove alone, Wabi Sabi has become a fixture for its menu covering pretty much everything Japanese, from sushi and rolls to grilled fish and udon. Hiyaku follows a similar path, with less-than-impressive results. From the decor alone, you can tell Hiyaku isn’t aiming as high as its neighbor. The wood-dominated space has little else to distinguish it other than the board out front listing all the many deals on offer. Take a closer look at the menu and you’ll see several attempts at some kind of fusion, like the tom yum kung sushi roll (imitation crab, shrimps, tom yum sauce, B250),

alongside the staple offerings. While the staff are service-minded a n d g o o d at p o i n t i n g o u t t h e massive savings to be had (like 20 -percent off lunch sets and 50-percent off selected dishes), it’s not enough to make the food in any way pleasurable. The sushi set (B280) ticks the boxes of things to avoid—sad, weird-colored raw fish with not-so-healthy fatty marbling, and rice that’s all too dry. The “Hiyaku don” rice bowl (diced assorted fish on sushi rice, B220) combines decently-seasoned but mushy rice with a creamy mayo that all but smothers the real taste of the fish. The grilled snow fish (B380) comes as one flattened fillet sitting in a pool of excess oil, though it does taste slightly better than it looks. We tried to love their tofu salad (B250), which at least packs nice, crisp veggies and fresh tofu, but the bruised avocado put an end to that. All in all, there are plenty of good explanations for the thin weekend crowds and overreliance on massive promos here. It’s not like Bangkok shoppers are limited for choice when it comes to mall Japanese, and Hiyaku simply doesn’t measure up.

dressing proof that sometimes less is more. In comparison, the baked eggplant, crabmeat and salmon roe (B250) reads like a recipe for maximalist fusion disaster, but succeeds due to its well-seasoned eggplant and a zesty tomato salsa. Not everything is quite so good. Despite a tasty marinade, the beer miso pork ribs (B180) lack the te n d e r n e ss to b e p a r t i cu l a r l y memorable, though the housepickled ginger and cucumbers are delicious. As far as Bangkok bistro pasta goes, the spaghetti arrabbiata (B380) is more than serviceable, a little heavy on the chili perhaps, but piled with fresh and plump manila clams. But breakfast is where Toby’s truly shines. So it’s probably no surprise that the crispy French toast (B280) reappears as a dessert on the dinner menu. French toast doesn’t get much better than this: super-soft brioche soaked in beaten eggs and crispy cornflakes topped with vanilla ice cream, nuts and fresh berries. Crunchy yet cakelike, a close comparison might be After You’s famed honey toast, only even bigger (this portion could feed a family). What Toby’s lacks in surprises, it makes up in consistency and pretty plating, the result being a real brunch contender and a safe choice later in the day.

now ARTIST Q&A Manit Sriwanichpoom

ART HIGHLIGHT Chat Room Manit Sriwanichpoom, 55, is one of Thailand's leading contemporary photographers, best known for his "Pink Man" series critiquing Thailand's consumer culture. His latest exhibition, "Fear," runs through Sep 10 at Kathmandu Photo Gallery, H Gallery and Tang Gallery and captures the terrors of Thailand's political scene over the past five years through photographs and video clips. Here, we speak to him about the underlying climate of fear in Thailand and what art can do to help break the silence. How did this project come about? The three pillars of Thailand, as depicted on the national flag—“Nation – Religion – Monarchy”—have been passing through a tunnel of transition in an unprecedented manner. It's a tunnel that has further dimmed and lengthened after the National Council for Peace and Order [NCPO] staged a coup d’etat against elected businessmen-cum-politicians in 2014. As my artwork always deals with social, religious and political issues, I believe it is my obligation to reflect the political circumstance to the public on the question of "where are we now?" What is the reasoning behind the exhibition’s title, “Fear”? It’s how I believe Thai people feel towards the country’s current political situation, myself included. Fear is always present in Thailand when it comes to politics, not only now but back 12 years ago when there was the war on drugs. The only difference is that today’s fear is something that can’t be discussed.

In a country where so many people fear to talk about politics, what can art do to help? I use art as a way to reflect my feelings and thoughts of fear. By presenting it, I hope that other people can explore and face the feeling with me. My art may not offer any concrete solutions to problems, but I hope it encourages us to find solutions together in a peaceful manner, rather than through violence. Either way, something must be done—we must start speaking up. We can’t just let the "powers that be" terrify us forever. What impact do you hope this exhibition will have? This exhibition doesn’t aim to target or attack anyone. It aims to show how the fear came to be, in order to allow us to confront the situation together with awareness and understanding. I hope that people can be open-minded enough to see the good intentions of my work, as I share these images out of care and love for my homeland. As an artist, I use art to communicate my love and concern—I’m not scared to talk about the situation as much as I’m scared of the truth of the situation.

Chat Room is the new project of Grisana Eimeamkamol, the Khon Kaen-born contemporary designer and owner of CEO Books, which invites the public to submit their thoughts, stories, criticism and suggestions about Thailand's design scene. The text submissions will then be published as A0-size posters and displayed at Bangkok CityCity Gallery between Aug 17-Sep 11 in an anonymous showcase that aims to ignite discussion about the past, present and future of design in Thailand. Submissions for Chat Room are now open at chat-room.in.th and will be accepted through Sep 10.

OUR LIFE: A KAREN VILLAGE STUDENT PHOTOGRAPHY PROJECT

This exhibition will also run in Singapore. How do you think the reception overseas will differ from at home? I hope this can help overseas audiences to understand our crisis better. From reading and watching news reports, they may have gotten a cooked version about the story of Thailand’s political situation. Hopefully my art can give them a different perspective, one from an ordinary Thai who has no vested interest in politics. Interview by Bonnie Sananvatananont
